bowl bonanza

4 servings WATERMELON WAYS

¼ cup lime juice 1 garlic clove, minced 1 teaspoon honey or agave Salt and pepper to taste 1/8 cup olive oil 1/8 cup infused oil 3 cups watermelon cut in chunks 1 large tomato, cut in chunks 1 avocado, peeled and cut in chunks 1 small bunch arugula, rinsed and dried 6 strips bacon, cooked till crisp, then chopped 1/3 cup crumbled feta

1. In a medium bowl whisk the lime juice, garlic, sweetener, salt and pepper, olive and infused oil. 2. In a large bowl combine the watermelon, tomato, avocado, arugula and bacon. Toss well and divide salad among four bowls. Top with the feta and serve. as we continue to melt our way through the summer, my kitchen time has decreased exponentially. Too hot to have the oven on, I’m always looking for foods that require little to no heat. These bowls come together in minutes and require minimal cooking. Top of the stove or microwave for the bacon, a couple of minutes in a sauté pan for the infused croutons, and waffles in the toaster. Then it’s pretty much toss and go. These recipes were made with infused coconut oil and are intended to be 5mg of THC per person. If you know the potency of your infusion, you can adjust the recipes to reach your desired dose. Regardless of the infusion method, be it infused oil or distillate, starting at 5mg is a safe place. Start low and go high when you’re ready. Less is more.

4 servings CANNA CAPRESE BOWL

2 tablespoons olive oil 2 tablespoons infused oil 6 tablespoons balsamic vinegar 1 cup bread cubes 1 cup mozzarella balls or chunks 1 cup cherry or grape tomatoes 3 cups baby spinach, tough stems removed ¼ cup basil, shredded Salt and pepper to taste

1. In a medium saucepan, heat the oils. Sauté the croutons until golden brown. 2. Remove the croutons to a plate. In a large bowl, combine the cheese, tomatoes, spinach and basil. Toss to combine. 3. Add the balsamic to the pan and whisk well. Turn the oil mixture over the salad and toss. 4. Add salt and pepper, toss again. Top with the croutons.

4 servings BERRY BOWL BONANZA

2 waffles, toasted and cut in wedges 1 cup sliced strawberries 1 cup raspberries ½ cup mango, peeled and cut in chunks 1-2 tablespoons honey ½ cup pecans ¼ cup shredded coconut 1 cup strawberry or raspberry yogurt 4 teaspoons infused coconut oil, 20mg THC 1. In a large bowl combine the waffles, fruit, honey and pecans. 2. Top with the coconut. 3. In a small bowl combine the yogurt with the infused oil or other infusion method. 4. Drizzle the yogurt sauce over the bowl.
