Editor’s Note Thanks for picking up the Tannins & Terpenes Issue! We began pairing wine with weed in 2012 as an educational tool for the various strains and flavors present in Cannabis, and today we continue that legacy with a new round of pairings! I’ve always been fascinated by the world of wine, the thousands of varieties, and the sommeliers who can divulge a year of production or soil type from a simple sip. WE LOOK FOR On the same note, I’ve always been SIMILARITIES amazed by the people who maintain the IN FLAVOR attitude that “all pot is the same.” PROFILES FOR So we started the pairing edition of the magazine to highlight the different flavors of OUR PAIRINGS, BUT THERE Cannabis, and draw a parallel to a world that most are familiar with. Alcohol. IS TRULY NO Marijuana is safer than alcohol. I would WRONG WAY TO love to see this country shift from bars and PAIR DELICIOUS liquor stores on every corner and grocery CANNABIS WITH store shelf towards dispensaries and A TASTY DRINK. lounges, but we’re not quite there yet. But this issue, and the concept, is a great barrier breaker for people who still have antiquated and stigmatized views of Cannabis. Share with someone an amazing pairing, whether in print or in person, and see their fear be replaced by wonder - and a little face melting if you follow our pairings. We brought the heat this year! And don’t be afraid to try your own pairing at home, whether with wine, or a tasty local soda or coffee. We look for similarities in flavor profiles for our pairings, but there is truly no wrong way to pair delicious Cannabis with a tasty drink. So please share the magazine with someone new, and enjoy our annual Tannins & Terpenes issue of the Leaf!

WASHINGTON D.c.
D.C. MMJ DISPENSARIES NOW OPEN TO PATIENTS FROM ACROSS THE COUNTRY
BUSINESS
WORLD’S LARGEST POT COMPANY LOSES $1 BILLION IN THREE MONTHS Canopy Growth Corporation, the world’s largest Cannabis company by market value, reported a quarterly loss of C$1.28 billion in August, missing analyst estimates for revenue and sending shares down 10 percent in after hours trading. The losses amounted to $3.70 per share, compared with losses of C$91 million, or 40 cents a share, in the year-ago period, reports Market Watch. This quarter’s loss of more than $1 billion was due to the company extinguishing warrants related to the Constellation Brands Inc. investment. Canopy fired co-CEO Bruce Linton soon after its previous earnings report, as Constellation was reportedly unhappy with continuing large losses. CEO Mark Zebulon, while remaining at the helm of Canopy Growth, has said he expects to exit once a new chief executive is found.

WASHINGTON STATE EXTENDS LEAF DATA SOFTWARE CONTRACT Washington state Cannabis authorities have extended the contract for Leaf Data Systems, the seed-to-sale tracking program offered by Denver-based MJ Freeway, despite past glitches with the system that have cost retailers thousands of dollars. The Washington State Liquor and Cannabis Board (LCB) amended the contract with MJ Freeway, extending it from July 31 to September 30, reports Marijuana Business Daily. But the extension requires the company to focus on stabilizing and fixing the system, after the software experienced outages in July. MJ Freeway “shall limit its efforts to performing additional stabilization of the system” and “needed corrections, if any, specific to release 1.37.5,” the contract amendment states. July’s software release and subsequent outage rendered the state’s traceability system inoperable for days. Cannabis business owners reported thousands in lost revenue.

STATES SHOULD BE CAUTIOUS WITH CANNABIS REVENUE, OR BLOW IT: REPORT
aklEAF.COM
Patients with medical marijuana authorizations from across the U.S. can now buy their medicine at dispensaries in Washington D.C., reports WAMU. Mayor Muriel Bowser announced on August 16 that patients from 27 states can now purchase Cannabis in D.C., with four more states currently under review. “This emergency rulemaking is patient-centric,” Mayor Bowser said. “It ensures medical marijuana patients from other states can obtain their needed medicine. It will also promote public safety by allowing visitors to obtain their medicine at one of the District’s six - soon to be seven - authorized dispensaries rather than forcing them to go without or patronizing the illegal market.” Under D.C.’s medical Cannabis program, patients can buy up to four ounces of marijuana every 30 days. There are 6,079 registered patients in the city. Out-of-state patients will only have to show their state-issued medical marijuana authorization to buy Cannabis at any of the city’s six operating dispensaries.
States where Cannabis has been legalized just love the plenteous new revenue pouring into state coffers. But they’d better be careful how they spend it until the market stabilizes, according to a new report. The Pew Charitable Trust report, “Forecasts hazy for state marijuana revenue” was published on August 19. “Neither price nor demand has stabilized yet,” said Alex Zhang of Pew, explaining the report’s findings. “Only time will tell when markets have matured to full capacity.” States have, at most, five years of data on recreational Cannabis sales. The report found that early adopters like Washington state did see a spike in revenue, with Washington collecting - no joke - $420 million in its 2018 budget year. But according to the report, forecasters expect that growth to “decline steeply.” While revenue from Cannabis taxes and fees grew 277 percent from 2015 to 2016, according to the report, it climbed just 17 percent from 2017 to 2018.

CALIFORNIA WILL SOON HAVE CANNABIS RESTAURANTS Budtenders will assist the guests at the soon-to-open Lowell Farms Cannabis Cafe, which pairs farm-to-table meals with strains of farm-to-table marijuana. When the 220-seat space opens, reports The Washington Post, it will be the first of its kind, where diners can enjoy a high-quality meal and smoke a joint in public. But other restaurants will quickly follow. Restaurateurs who want Cannabis on the menu in famously progressive West Hollywood, which in 2017 approved an ordinance allowing business licenses for this purpose, will have to navigate a labyrinthine patchwork of rules, but Lowell Farms proved it can be done. “With Cannabis, we are building the boat as we’re on the water,” said Jackie Subeck, who plans to open a Cannabis spa, clinic and cafe, and serves as chairwoman of the Cannabis legislative subcommittee for the West Hollywood Chamber of Commerce. Legal states will be watching closely. Cannabis restaurants could eventually become as commonplace as wine bars, according to some industry experts.

MARYLAND COURT RULES CANNABIS ODOR NOT ENOUGH TO WARRANT A LEGAL SEARCH Smelling like weed is not enough of a reason for police to arrest and search a person, according to a unanimous ruling in August from the Maryland Court of Appeals. The court determined two police officers violated a man’s fourth amendment rights by conducting an unreasonable, warrantless search of his person after they found him in a vehicle that smelled like marijuana, reports NPR. “In the post-decriminalization era, the mere odor of marijuana coupled with possession of what is clearly less than ten grams of marijuana, absent other circumstances, does not grant officers the probable cause to effectuate an arrest and conduct a search,” the court ruled. According to the decision, had the officers merely searched the car due to the pot smell, they would have been within the law. But searching the suspect, Michael Pacheco himself, was going too far, making the discovery of marijuana unusable in court. Maryland decriminalized up to 10 grams of Cannabis in 2014. Possession of less than that amount is now considered a civil offense carrying a $100 fine.
Florida’s legal medical Cannabis market is second only to Oklahoma’s when it comes to growth rates, according to Marijuana Business Daily, reports the South Florida Sun Sentinel. Oklahoma, Florida, Ohio, Illinois and Maryland make up the top five for rate of medical marijuana growth, according to the Cannabis industry publication. Thirty-six states currently allow medicinal Cannabis. Oklahoma has the fastest growing medical marijuana market because of its relatively high percentage of medical Cannabis users, 4.1 percent of the state’s population. Here the state has “low barriers of entry, including the fact there’s no list of qualifying conditions for patients,” reports Marijuana Business Daily. Florida does have a list of qualifying conditions, and about 1.6 percent of the state’s population is registered with the MMJ program, according to the publication. Oklahoma gets an average of 641 new medical marijuana patients a day, according to the report, while Florida gets 609.

IDAHOANS FLOCK TO CANNABIS STORE ON OREGON BORDER A new pot shop on the Oregon-Idaho border enjoyed a spectacular first day of business, thanks to excited customers from Idaho, reports the Associated Press. When the store, Weedology, opened its doors in late July, customers from Idaho had been waiting in line for more than three hours, reports the Idaho Statesman. The parking lot had a large number of cars with Idaho license plates. The shop’s location near the state line, right off Interstate 84, means some Idaho residents now have to travel 15 minutes or less to buy legal weed. Legal that is, until they get back into Idaho. Nearly 200 customers were served in the first three hours of business, said Weedology GM Eric Lantz.

LEGALIZATION
WHY CANADIANS ARE STILL BUYING ILLEGAL POT Nearly half of Canadian Cannabis consumers still buy their weed illegally, according to Canada’s National Cannabis Survey, released August 15. Ten months after the Great White North legalized recreational marijuana, 42 percent of those who use it admitted buying at least some of their supply from an illegal source, reports Quartz. Part of the issue is that the number of legal shops is rising slowly. Onerous registration procedures imposed by the federal government are largely to blame. Officials have recently reassessed the rules, hoping to ease the licensing bottleneck. Other prospective shop owners bemoan the unfairness of an existing license lottery system. Meanwhile, the licensed shops currently existing have consistently failed to meet consumer demand, according to the report.

WHEN DID CANNABIS FIRST COME INTO YOUR LIFE? Cannabis has always been around me. My dad has been consuming my entire life, but I do remember the first time I smoked. A hot girl pulled up in a sports car and asked if I smoked weed—I of course said YES. How did you become a budtender? Before everything went legal, I offered a service close to that of our shop over at Catalyst. Everything was in jars and had labels, so it was only natural to take a craft I was already familiar with and make that my legal career. What is your favorite part of the job? New Product. I absolutely melt when we get in a sample from a brand new company or we get in something I saw posted on Instagram. I like being up-to-date on all products so I can provide the best high to my customers. Catalyst is all about being on the leading edge of new products and is willing to take a chance on fresh merchandise. I like that.

What’s your favorite way to use cannabis? It’s gotta be a fresh-rolled joint. I’ve always had a knack for rolling extremely even and well burning joints, and nothing says “SHARE ME” quite like a fatty. You gotta pass it to someone while you’re coughing up a lung, right? I’ve gotten so good that I roll super-size blunts (5g to 20g) for Catalyst on a weekly basis. favorite strains and cannabis producers? This is perfect, on my radio show we do a segment called “Strain of the Week.” Here are my favorites: Royal Gorilla by Worner Bros Horticulture, Quantum Kush and Platinum Girl Scout Cookies by B.A.M., Agent Carter by Catalyst, Honey Banana by Bob’s Morning Bear, Purple Phantom Cookies by RedRun,
CATALYST CANNABIS CO.
Fruity Pebbles by Emerald City Organics,
9900 OLD SEWARD HWY #4, ANCHORAGE CATALYSTCANNABISCO.COM (907) 344-0668
OG Kush by AKO Farms, LA Jesus Kush and Oaxacan Querkle by Mercy Tree, and finally, Durban Poison by Good AK.
HOW DO YOU FIND THE RIGHT CANNABIS FOR A CUSTOMER? I start the interaction by asking ‘what are you trying to do with your high?’ I have spent a long time figuring out what the difference in each strain is, mostly with the help of Leafly and genetics tracking websites, so I am able more accurately tailor the chronic to the individual customer. Sativa and indica are a thing of the past, and I wish the industry would switch to a feeling versus intensity scale. WHY DO YOU LIKE WORKING AT CATALYST CANNABIS? I love Catalyst because of one main reason - how much we care about the environment. Most every shop uses plastic galore and don’t have recycling programs. Catalyst uses glass jars and cardboard exit packaging. They even use living soil when they grow their Cannabis, yet another way to help protect the environment. In this day in age we could really use more shops like this. WHAT ARE YOUR HOBBIES WHEN YOU AREN’T WORKING AT THE DISPENSARY? I host a radio show with my best friend Payton McCann called Best Budz. I like to roll around on my longboard downtown and randomly get friends and strangers super stoned, I enjoy a good round of frisbee golf, and I host a monthly stand-up comedy show at The Writers Block. I’m a YES man, which means I say yes to nearly every opportunity. So if you see me out and about, ask me to do something! I’ll probably say, “YES!”

HOUSTON GRASS
STATION Houston Grass Station is the newest shop to open up in Houston, Alaska. Opening this last spring, the shop has delivered a unique experience for all of its customers. From the large personality of owner Ron Bass to the campground offered just behind the shop, this location does more than deliver a product, they work hard to deliver an experience. ENVIRONMENT & VIBE
5/5
22
The store itself has a very clean cut look. The exterior fits in with the wilderness around perfectly. Inside of the building, space is ample. Feeling crowded will not happen at this location as there is plenty of space to move around. With the employees regularly playing their music of choice, you will often find the store has a laid back vibe, which should ease the tensions of any first time consumers. Not to mention the newly formed campground out back, which will help complete the full Alaskan experience.
PRODUCTS
5/5
You will find no shortage of flower here. On my visit, there was a wide selection of 20 strains that were well-balanced with indicas, sativas and hybrids. You will find a wide variety of cultivators in the store as well, including Calm ‘N Collective, the vertical garden of the retail shop. Among the selection, you will find the strain Matanuska Thunder Fuck, certainly a local favorite. On the concentrates side, you will have an ample selection from Good Titrations, Frog Mountain and Refine Alaska.
HISTORY & VALUES

aklEAF.COM
Owner Ron Bass has been involved with Cannabis for a long time. Often found riding around in his bright green Hummer limo, his passion for the plant is deeply rooted and it shows in his business. With the establishment of both Houston Grass Station and Calm ‘N Collective, they are building toward a strong future in the valley.
BUDTENDERS
5/5
The budtenders at this location are some of the best. They all share their knowledge with each other, which helps everyone have a very well-rounded knowledge of Cannabis and its capabilities. Often found enjoying their time behind the counter, the staff has all been very approachable, which is a must for the position. More than willing to take their time to help each customer decide what they are looking for, it is a very welcoming experience.

TAYA NORTHROP
aklEAF.COM
Taya Northrop, an East Coast transplant, moved to Oregon with her family to improve her health and wellbeing. Nothrop deals with Hashimoto thyroiditis and hypermobility spectrum disorder - along with a list of other health conditions - and has found that Cannabis helps effectively treat her spectrum of issues holistically. After obtaining her card in 2014, she has been an OMMP patient ever since. Northrop is a Virginia native who began using Cannabis with caution, due to the risky nature of potentially being persecuted for possession. Despite the legal obstacles, what began as pure recreation evolved into conscious medication. “I am from one of those states where it was always seriously risky to medicate, but I have done so off and on since about 1996,” Taya recalled. “As a younger person, I leaned in harder on recreating, but as I aged it became straight up medicating in about 2006.” As someone who deals with a slew of issues, treating everything with pharmaceuticals gets exhausting because pills add up and often produce unwanted side effects. Cannabis provides a spectrum of treatment which helps consolidate chronic pain management. “I treat chronic pain, insomnia, and anxiety associated with hypermobility spectrum disorder, Sjogren’s syndrome, Hashimoto’s thyroiditis, Tietze syndrome, osteoarthritis, and sacroiliac joint dysfunction,” said Taya. “My first card arrived in April of 2014. I was new to Oregon, dispensary licensing was new, and I could finally get everything I needed to start improving my health situation.” After more and more Cannabis research was made available to the public, Taya was able to concisely pinpoint what types of cannabinoids
SEPT. 2019
helped for what she was specifically dealing with. Before moving to Oregon, Taya was mostly limited to consuming flower without knowing what strain she was using, and had to accept what her dealer gave her. “For complex medical reasons (targeting the CB2 receptor for possible immunomodulation), I look for strains that are heavy on caryophyllene and a-humulene, which helps my all over inflammation,” she stated. “Well known strains that I like are Platinum GSC, a well done Dog Walker, Sour Diesel, White Widow, and maybe even a little Green Crack for its heavy myrcene.” Taya has found that decarbed oil tinctures work best when experiencing a painful flare-up. Edibles provide patients with durational potency that isn’t possible with the combustion of either flower or extracts. After five years of trial and error, Taya has successfully stabilized her health and primarily consumes flower for day-to-day pain management. As Taya said, “When I’m in a great deal of pain, I like decarbed oil tinctures because they are strong and they don’t burn, so you can take a large dose. I use those in conjunction with 2:1 CBD and THC topicals. For everyday maintenance, I’m thankful to be in a good place after five years in Oregon, and I only consume flower at this time. It feel more secure in WHAT’S my life to know that I can access other products at WORKED medicinal doses whenever the need arises.” FOR HER Although Taya has managed to successfully treat > STRAINS HIGH IN herself, there are still additional hurdles of being an CARYOPHYLLENE AND A-HUMULENE TO HELP OMMP patient. WITH INFLAMMATION. “I’m sure other people have said it before, but > 2:1 CBD AND THC it’s not easy to travel to prohibition states. Leaving TOPICALS FOR Oregon isn’t the issue, but being able to medicate at PAIN MAINTENANCE your destination without fear of prosecution makes travel to places like Virginia (my home state) unappealing, since Cannabis is my primary pain reliever. I am privileged to have my doctor sign my recommendation.” As it stands today, Taya is a patient for one of the last OMMP growers in the state, but her access is limited due to plant limits for growers. “Plant limits for medical growers combined with fierce competition with the recreational market have all but crippled the supply for patients in Oregon,” she explained. “My grower has to work a day job.”

Margaret Mead was a cultural anthropologist. This branch of anthropology is concerned with studying human society, its unique cultures, and the development of those cultures over time. In her groundbreaking work, Mead made great strides in the area of ethnological field observations - or observing a culture while immersing oneself inside of it. In the 1920s and 30s, Mead began an ethnographic study that would become the launching pad for her career and celebrity. In studying the attitudes toward sex in the cultures of Southeast Asia and the South Pacific, Mead produced a landmark study that would later influence the sexual revolution of the 1960s. These studies made it clear that the cultures and attitudes towards sex in the societies she studied were in many ways quite different from the ideals of the western world. She also found in many of the societies that women played a more dominant role than men. These studies became foundational in the burgeoning feminist movement of the 1960s. Mead was a deft communicator of her ideas and findings in cultural anthropology. So much so, that she was often featured as an expert in mass media. This attention ultimately resulted in her being promoted to become the President of the American Association for the Advancement of Science. In

this capacity and others, she was called before varied branches of government many times to testify using her unique expertise on a number of issues. In 1969, she appeared before a senate committee hearing on Cannabis and advocated for its legalization: “It is my considered opinion that at present that marihuana is not harmful unless it is taken in enormous and excessive amounts. I believe that we are damaging this country, damaging our law, our whole law enforcement situation, damaging the trust between the older people and younger people by its prohibition, and this is far more serious than any damage that might be done to a few over-users, because you can get damage from any kind of overuse.” When she passed away in 1978, Margaret Mead was the most famous anthropologist in the world. Through her work, many people learned about anthropology and its holistic view of the human race while also learning about tolerance. When it came to the legalization of Cannabis, it seems that’s all she was asking for.

Having not been all that familiar with Stoned Salmon Farms, I didn’t know what to expect when I received my sample. Packaging was in a nice pop top, and being eager to see what I had been brought, I went ahead and popped that top getting myself inundated with sweet floral and piney musk that permeated the room. The flower was properly manicured to tightly formed flowers at near perfect portion size for bowls. Your first inhale grabs you and takes you for a ride, with that sweet funk at the wheel and the piney aromatics following closely behind. At almost 22% THC, I found the high very cerebral and a little spacey, great for relaxing away an afternoon. Overall, a fantastic cultivar grown and treated properly. SEPT. 2019
Terpenes are produced by the trichomes of the plant - the same place where THC is produced, as a way of producing resins and protecting the plant from pests. These aromatic compounds are found all over nature and the plant world, and are the source of essential oils and many naturopathic medicines. Luckily for us, they provide powerfully beneficial effects on the mind and body when combined with cannabinoids. There are more than 120 types of terpenes that have been found in Cannabis, and they are largely responsible for what we view as expressions of strains, the taste and flavor, and the highs we associate and enjoy with our favorite Cannabis. The Entourage Effect
Beyond great flavor, terpenes actually assist cannabinoids in entering the bloodbrain barrier, and providing the high that we love. This is a synergistic relationship on a chemical level, and is why the plant has the effects we associate with strains. As you’ll see below, the common terpenes found in Cannabis have diverse effects and flavors. These terpenes exist in nature through fruits and herbs, and have been used therapeutically in natural medicines for thousands of years. This is where the science of natural terpenes meets Cannabis, all in a beneficial form known as the entourage effect. Every time you use Cannabis, the entourage effect is responsible for delivering your high.
Why terps matter and why THC percentages don’t. Simply put, without terpenes, Cannabis would be very boring. This is why asking for high THC is a useless way to purchase Cannabis. A strain with 15% THC and high terpene levels will certainly provide a stronger, more dynamic high than a basic 25-30% THC strain that has been cultivated only for the chemical - not the effects. This is most evident when comparing concentrates, like distillate versus solventless, hydrocarbon or CO2 concentrate.
For patients and connoisseurs alike, terpenes and flavor are what define purchasing at the dispensary. Luckily Alaska allows for deli style Cannabis sales, which means consumers can and should get their noses into jars! Smelling different strains is the best way to tell what your body is needing, and what meets your personal taste preferences. When smelling five to ten strains, usually one or two will smell or feel better, and often one or two will not. This is more than simply smelling a flower though! When your body smells Cannabis, the terpenes take effect aromatically, much like essential oils, and deliver signals to your body before you ever smoke the bud. Listen to your body, follow your nose, and ask for terpene tests and strain genetics/ legacy before worrying about the THC percentages. Chances are, it really doesn’t matter.
Common Terpenes & Powerful Effects Myrcene The most common terpene found in Cannabis, this terpene has earthy, musky and kush notes, and is known for sedative effects. Also found in mangos that enhance its effect, Myrcene offers anti-inflammatory benefits and is helpful for chronic pain and helping with cancer treatments as a supplement.
Limonene The terpene limonene is also found in citrus fruits like oranges and tangerines. Limonene is a potent anti-fungal and anti-cancer agent, helping naturally reduce the presence of carcinogens in the body. It’s also a mood-elevating terpene that relieves anxiety, along with a signature lemony fuel flavor.
Linalool Kushy, spicy and floral, Linalool brings a lot of flavor to different strains. Also found in lavender, mint, cinnamon and coriander, linalool is a powerful sedative and great for pain, depression, arthritis, seizures and insomnia.
Caryophyllene Spicy and peppery, this terpene is found in black pepper, cloves, and other natural spices like basil or oregano. The only terpene that bonds to CB2 receptors, which is how the body takes in cannabinoids, this anti-inflammatory and pain-relieving terpene has also been noted as a potential helper in reducing alcohol dependency.
Alpha/Beta-Pinene Responsible for the piney flavored strains we love, these twin terpenes are bronchodilators and can help with respiratory function and oxygen circulation, and have great promise for asthma. They also have anti-inflammatory effects, and have shown benefits for arthritis, Crohn’s disease and in cancer treatments.
Humulene The most common terpene found in hops, a sister plant to Cannabis, its woodsy and citrus flavors are found in lemongrass, jasmine and tea tree oil. This unique terpene also has antiparasitic properties, is an antioxidant, and brings antimicrobial and antifungal properties that also directly counteract cancer growth.
Terpineol Blame this terpene for the couch lock effects. This relaxing terpene is floral with notes of anise and mint. In addition to relaxing effects, it’s also an antibiotic!
Others... As mentioned above, there are over 100 other terpenes commonly found in Cannabis, and all have medicinal effects! When looking at a test result that contains terpenes, look for these common elements, and remember that a small amount goes a long way. While the percentages will never be as high as THC - and we wouldn’t want them to be - the effects of terpenes are truly the best part of consuming Cannabis!

TANNINS & TERPENES ISSUE
The Tale of Two Crafts The truth whoops and wails, writ large on the walls of former family farms in the form of financial spreadsheets and pitch decks. The Craft Cannabis industry has moved out of the cottage. Producers and consumers stand in stark relief on the global stage, whether they’ve been dragged out of the shadows or strut proudly into the spotlight, finally able to slang and smoke in public view. Well, not literally - yet. As with any new multi-billion dollar industry, no one knows where it’s going to go. But we can look at one place for clues: Craft beer. Once maligned and bound by prohibition, beer spent nearly 90 years growing from a stylistically homogenous, commerce-over-creativity revenue machine into a diversified, rich landscape with a robust craft scene. It took time. The Federal Prohibition of alcohol in 1933 didn’t lay an easy path to a true craft scene. Due to various economic and social factors - as well as cunning moves on the part of the emerging major players, particularly Anheuser-Busch - the immediate and lasting response to freedom was, “Let’s build it big, efficient and consistent!” Beer became beer. It was light, it was yellow, it was easy to drink after a hard day. And it was nearly half a century before anything truly unique came along. In the same way the repeal of Prohibition didn’t lead to a craft beer scene, the federal legalization of Cannabis won’t help the craft producer as much as it will help the well financed, global players already entering the industry. That game is going to be about scale, distribution logistics, and out-positioning the other guys. But, just like in beer, there will be room for big Cannabis and craft Cannabis alike.
History Lesson
To see how that will work, we don’t need to look to 1933. We need to look at 1978. That’s when homebrewing was legalized. Here, average citizens started legally brewing in their garages. Homebrew shops sold ingredients and equipment

CBD-infused beer It
came out of nowhere, as it must have for so many Portland craft beer drinkers. There I stood, craning up at the chalkboard at a north Portland pub, scoping the selections in search of the evening’s first pint. The pub had a stellar list, I’m sure. There was probably a pilsner on draft. Two or three hazy milkshake IPAs. Maybe even an imperial bourbon barrel-aged stout and a sour. But I can’t remember what was on tap that night, because I forgot about the other taps as soon as the beertender suggested something new: “Try the Coalition Two Flowers IPA,” she said. “It has CBD in it!” It was early 2017. I was about to decide to leave the beer industry for a career in Cannabis, but at that point, I still had reservations of a regulatory nature. That pint helped tip the scale. I deplaned from the beer industry and boarded rocketship Cannabis. All because Phil Boyle and the crew at Coalition Brewing decided to brew a new beer.
“I think bridging the gap is an important thing,” Boyle said. “Especially in Oregon. I think the identity of Oregon is craft Cannabis and craft beer. There really is a natural synergy to the overlap.” He worked with his team to carve out a new niche in the competitive Portland beer market, while at the same time helping destigmatize the concept of Cannabis for the average consumer. “The response was really phenomenal,” he said. Since the initial launch of Two Flowers IPA, Boyle says the beer has become the runaway sales leader of the Coalition lineup. It has gone well beyond a few niche taps at Cannabis friendly brewpubs, and now comes in bottles that claim real estate on the shelves at New Seasons Markets and retailers around the state - riding the CBD wave headfirst into the mainstream. FINDING CONFIDENCE IN NUMBERS
Common wisdom in the market suggests that one of the biggest hurdles standing in the way of the growing Cannabis landscape is a lack of knowledge and PLANTING THE SEED awareness about the plant, its compounds, and its benefits. In the process of extracting for distillate, all flavor or “terpenes” are more or less lost from the original starting material. “In our opinion, Cannabis derived terpenes have flavor and psychotropic properties not found by reconstructing profiles sourced from botanical derived terpenes. Overall, the flavor & effect are drastically different.” WHAT ARE TERPENES? Aromatic organic compounds that enhance your high, affect taste, and hold countless medicinal benefits. They can be found on every plant on earth. With over 20,000 in existence, there are about 100 different terpenes produced by the Cannabis plant. Terpenes can be sour, spicy, bitter or sweet, and are further broken down into an array of aromas and flavors including berry, citrus, pine, fuel and more. HOW DO TERPENES AND CANNABINOIDS WORK IN SYNERGY?
Terpenes working together with other cannabinoids can result in a more enhanced effect. At the same time, they can also counterbalance one another resulting in a decreased effect. Terpenes can allow for strains to have more antidepressant, more anti-anxiety, or more anti-inflammatory effects than another. For example, the terpene linalool is known for creating feelings of ease and relaxation, while limonene can create more of an energetic experience.
WHAT DIFFERENTIATES CANNABIS DERIVED TERPENES FROM BOTANICALLY DERIVED?
Ultimately it comes down to your starting material, with Cannabis terpenes being derived from Cannabis and botanical terpenes being derived from legal plants like citrus, pine needles, cloves and lavender. All terpenes start from the same molecular structure. In our opinion, Cannabis derived terpenes have flavor and psychotropic properties not found by reconstructing profiles sourced from botanical derived terpenes. Overall, the flavor and effect are drastically different. WHEN I’M AT THE DISPENSARY, WHAT CAN I LOOK FOR TO INDICATE CANNABIS DERIVED, TERPENE INFUSED PRODUCTS?
It’s hard for consumers to know right now. There has been new guidance as far as packaging Cannabis derived terpenes versus botanical derived/food additives. The biggest indicator you have is if Cannabis derived terpenes are not listed at all, then you will know it’s composed of botanical terpenes. OLCC requires that we list all ingredients, and you’ll find that the only ingredient listed in ours is Cannabis concentrate.
49 WHAT IS THE OPTIMAL WAY TO CONSUME CANNABIS DERIVED TERPENES? Diluted, as
terpenes are very strong. We blend our Cannabis derived terpenes into high potency distillate to carry the characteristics of the plants into a tasteless and odorless distillate. We also use a higher than normal concentration of terpenes to create a specific effect, rather than flavor. WHAT ARE SOME OF THE MOST COMMON TERPENES FOUND IN CANNABIS? Myrcene,
a-pinene, limonene, caryophyllene, linalool, humulene, terpinolene, ocimene, eucalyptol, and geraniol to name a few. WHAT DOES YOUR TYPICAL STARTING MATERIAL CONSIST OF? Cured Cannabis. We
are currently experimenting with new methods and technology to capture a broader range of terpenes from fresh and frozen material. WHAT SOLVENTS ARE USED IN YOUR TERPENE EXTRACTION PROCESS? Primarily, we use only
water to steam distill the terpenes. For further refinement, we use a state-of-the-art Biotage Liquid Chromatography Separator that utilizes a blend of hexane and acetone. HOW DO YOUR EXTRACTION PROCESSES DIFFER FROM WHAT OTHERS ARE DOING IN THE INDUSTRY? We are using different sources
of technology to take our processes a step further. Using chromatography, we are able to separate specific terpenes for specific medicinal uses.

ROASTED CAULIFLOWER WITH COUSCOUS Serves 6
THESE EARTHY VEGETARIAN RECIPES have been made with the strain Wesley’s Wish from East Fork Cultivars, our CBD kitchen mates. This strain is great for relaxation and a mild to moderate head high, which at times is just what the doctor ordered. With a rustic and fruity flavor profile, I love how this strain meshes with the ingredients of these dishes.

STORY by JONAH TACOMA for ALASKA LEAF | PHOTOS by DABSTARS
At 8:00 in the morning, the sun shone brightly through the haze of smoke in the cab. I cracked the window slightly, letting the sweet smell of Tangie float out into the morning traffic. It was Hempfest weekend and we had struck out early to raise the booth while you could still get a vehicle through the throngs of people massing near the entrance to Myrtle Edwards Park. sizes lined up and down the two bike paths, each acting as arterials, funneling the more than 100,000 attendees in and out with rhythmic regularity. I moved to Washington state sight unseen in 1999, fueled by stories of good weed and rampant prosperity. Arriving unemployed and penniless, the tales of a massive and free Cannabis event quickly caught my ear. I smiled recalling those early years. Weed was still illegal but the people of Seattle didn’t seem to think so, and once a year since 1991 they had proved it - throwing the world’s largest protestival, a literal smoke-in, complete with bands, stages and all manner of infrastructure. Expedia had recently purchased the access roads north of the park and promptly denied access to the Hempfest team. The result was chaos as the procession of vendors were forced to funnel in from the downtown side. I leaned out the window near the entrance shouting to a Hempfester as an overzealous volunteer tried to shake me down for a vendor packet. Kat Vohnshack appeared out of nowhere, saving the day.

DOING THE IMPOSSIBLE
aklEAF.COM
62
For years the mantra has been “Hemp: food, fuel and fiber.” In the last few years “medicine” has been added to that refrain, thanks to CBD. I sincerely believe that in the not too distant future food will take center stage. As a vegetarian (fin and feather, no mammals) for the last 48 years, I’m a firm believer in the multiple benefits of a plant-based diet. Back then being vegetarian was extremely rare, especially if it wasn’t for religious reasons.
THERE ARE several trends that point to hemp taking its rightful place at the dinner table. Sure, only about 5% of Americans self identify as vegetarians, but the Impossible Burger is about to change that. While there have been plant-based meat alternatives before, nothing has grabbed America’s attention like the Impossible Food’s animal-free burger. Vegetarian burgers aren’t new. In fact, they turn up on restaurant menus with increasing regularity. None have become truly mainstream, but they aren’t odd or rare or cause for finger pointing anymore. Remember the last episode of Seinfeld in 1998? Probably. But do you remember the ad Gardenburger ran for 1.5 million dollars? In the end it didn’t work out so well and Gardenburger is now owned by Kellogg’s. What makes the Impossible Burger different? Heme, the chemical that gives red blood its color. Impossible Foods developed a technology based on leghemoglobin, which is found naturally in the roots of soy plants. They created a genetically engineered yeast WHILE THERE HAVE BEEN and used a fermentation PLANT-BASED MEAT process to make it in bulk. ALTERNATIVES BEFORE, Animal fat is replaced by coconut fat, textured wheat NOTHING HAS GRABBED AMERICA’S ATTENTION LIKE and potato protein. But the real question: THE IMPOSSIBLE FOOD’S How good is the Impossible ANIMAL-FREE BU RGER. Burger? Delicious!
SEPT. 2019
How do I know? Because this vegetarian was in Wisconsin on a hemp-related business trip and ordered an Impossible Burger. I was taken aback by the color when it arrived. It was gray like lamb and after I bit into it, I was sure it was meat. No big deal - it wasn’t going to kill me and truth be told I really, really enjoyed it. I went home convinced I’d eaten my first mammal burger in decades. It wasn’t until I shared the story with my son Bryan, and he laughed and told me it really WAS vegetarian, and that my track record was intact. The scientific research is overwhelming that red meat isn’t necessarily the best food source, especially in large quantities. Research states “...long-term consumption of increasing amounts of red meat and particularly of processed meat is associated with an increased risk of total mortality, cardiovascular disease, colorectal cancer and type 2 diabetes, in both men and women.” The American Heart Association’s website recommends “trimmed lean meats, no more than 5.5 ounces, cooked, per day”. They also suggest “meat substitutes such as beans, peas, lentils or tofu in entrees, salads or soups”. They go on to highlight foods high in Omega-3 fatty acids. Sounds like hemp to me.
Asking someone to change their diet isn’t easy.
It often means changing lifelong habits and learning new ways to cook. Americans love red meat and nothing exemplifies that more than a burger. The fact that the Impossible Burger will soon be available nationwide at Burger King is potentially a huge cultural shift. Think about it - pull up to the drive-thru window and order a plant-based burger with fries and a Coke. And Burger King isn’t the only mainstream chain embracing a plant-based burger. Red Robin, White Castle, Qdoba, Cheesecake Factory, Applebee’s There are numerous reasons and even Little Caesars Pizza why this is the right product have joined in. Sounds like the at the right time. . . ad lineup for a televised sports - plant-based diets are healthier for you event, doesn’t it? Soy milk is on the menu - plant-based diets are environmentally of every coffee house in the sound compared to meat country, including Starbucks. - plant-based diets can feed more people Dehulled hemp seeds are sold because they’re less expensive in grocery stores and Costco - not everyone has to be vegetarian, let not that anyone knows how to alone vegan, to make an impact cook with it. Tofu shows up in crossword puzzles. Whether you want to decrease your chance of heart disease, lose weight, or reduce your carbon footprint, hemp is part of the answer. While I joke about ordering an Impossible Burger with fries and a high fructose laden soft drink, the fact of the matter is that we need to address agriculture, renewable resources and our impact on Planet Earth immediately. We have long said that “hemp will save the planet,” and that may very well start on your plate.
