PAIRING GUIDE Try out 12 pairings of Cannabis & alcohol
Photo by Daniel Berman/Northwest Leaf Styling by Malina Lopez
editor’s note
We invite you to f ind what intrigues you and tempts your taste buds! Thanks for picking up this special edition magazine Tannins and Terpenes!
My name is Wes Abney, editor of the local magazine Oregon Leaf and Washington’s Northwest Leaf. We have published Cannabis journalism for more than five years, including an annual edition with the same name as this magazine, which focuses on pairing quality Cannabis with wine or beer. This year we decided to branch out and throw an event based on the pairings we put together, and invite newly legal Portland to enjoy Cannabis and alcohol together responsibly. I have always preached the concept that marijuana is safer than alcohol, but I have also enjoyed the two together with fun and safe results. The key concept is safety and awareness, both of your own body and how those of your companions react to mixing the two. The purpose of this tabletop magazine is to help educate people about the similarities in flavors between the two and ultimately open new users to the huge world of Cannabis flavors. Everyone who has ever walked into a wine bar or store has felt the overwhelming presence of thousands of types and styles of wines from all over the world, and the vast amount of knowledge a qualified sommelier can bring to an experience in choosing a wine. Yet many of those same people have the idea in their minds that weed is just weed. Nothing could be further from the truth! There are thousands of strains of Cannabis, ranging in flavors from sweet and fruity to earthy and pungent with notes of rotting fruit. Just like with wine, people have flavors that they love, and occasionally styles or flavors that they don’t. But the only way to find out what you like (or don’t) is to get out and try a pairing! I cordially invite you to flip through this magazine, and if what you see intrigues you and tempts your taste buds, then come out to our free event Sept. 12. Visit TanninsandTerpenes.com for more information about pairings and how to join our Leaf Nation club, which will get you access to this event and more in the coming months. Above all, thank you for reading and opening your mind about a plant that is finally being freed for the people. If you want to learn more about Cannabis, medical or recreational, check out Oregon Leaf at your local dispensary.

An introduction to
TANNINS& TERPENES In celebration of the legalization of Cannabis in Oregon with the passing of Measure 91, Oregon Leaf brings its Tannins & Terpenes pairings series to life with a once-in-alifetime event
Tannins & Terpenes began in 2012 as a special edition of the Northwest Leaf magazine. The goal of publishing a special edition was to call attention to the similarities and complimentary nature that exists between Cannabis strains and varieties of alcohol. This was important for two main reasons. The first being the contradictory nature of how American society views Cannabis. Propaganda from the War on Drugs has led to misconceptions about Cannabis, with groups like D.A.R.E. claiming that Cannabis causes cancer instead of curing it. Our goal was and is to break down the stigma about Cannabis, which has caused zero deaths in history,

and is much safer than alcohol. The second reason was education about the varieties in strains of Cannabis that include unique and beautiful smells, flavors and effects. The average person knows that thousands of types of wine exist, but many still think “weed is all the same. By educating consumers about the flavors and strains of Cannabis, they become more aware of the plant and how special it really is. Ultimately, we want people choosing Cannabis over alcohol, but if they are going to choose both, it should be done with taste and class. The original pairings in the first edition made waves in the Washington Cannabis community, en-

TANNINS
are naturally occurring molecules found in grape skins and oak barrels that add color, complexity, bitterness and a dry-mouth feel to each sip of many types of alcohol. Tannins are influenced by weather, natural setting and cross-selection. Red wine has more tannins because the grapes used are fermented with the seeds, skins and stems, while white wine is frequently fermented from just the crushed juice of white grapes or skinless red grapes. Foods such as meat or cheese that are high in protein or fat go well with tanninrich wines.
TERPENES
are produced by the trichomes of the plant: the same place where THC is produced. They provide powerfully beneficial circulatory and muscular effects. Much of Cannabis’ smell results from terpene content. More than 120 types of terpenes can be produced in Cannabis. The terpene Limonene is also found in citrus fruits like oranges and tangerines. Limonene is a potent anti-fungal and anti-cancer agent, helping naturally reduce the presence of carcinogens in the body.

CALMING FRUIT
CBD KUSH
by The CO2 Company with
pinot grigio
pinot grigio
is a light- to medium-bodied white wine known for crisp, dry and refreshing flavors full of fruitiness. Oregon produces world-class Pinots, known for their fuller and more aromatic flavors. The Pinot variety is very similar to Cannabis in terms of quality vs. price. The more you spend, the more flavor you get from this complex wine. This pairing features the renowned CBD Kush strain processed into CO2 oil by The CO2 Company. Using an extraction system fueled by CO2, the end result is a truly beautiful oil. In more mainstream application, CO2 is used to extract essential oils from roses, lemons or a multitude of other flavorful plants or herbs. The same technology is applied to Cannabis, which leads to an essential Cannabis oil that is both medicinal and flavorful. The CBD Kush is a 1:1 ratio of THC and CBD, the two main chemicals in Cannabis, known as cannabinoids. CBD has hundreds of documented medicinal benefits that range from anti-inflammation to killing cancer cells. An interesting side effect of CBD is calming and reducing the psychoactive effects of THC, which makes this product great for those who don’t want to get too high. A few puffs on the easy-touse portable vaporizer (it works just like an e-cigarette) is all it takes to relax at any time of the day and enjoy a warm and sweet cherry-flavored vapor.

RELAXING BERRIES
SHISHKABERRY by Eco Firma Farms with
syrah/shiraz
the most popular styles
of Syrah are known for intense berry fruit flavors and easy drinkability, which makes pairing the style with Shishkaberry a perfect match. The strain leads with notes of fresh concord grapes and a mixed berry aroma, finishing with light lemon and citrus notes. This blends perfectly with the notes of cherry, blackberry, plum and raisin that are dominant in the wine. A paired glass of Syrah should be bright and fresh with bold fruit flavors that finish easily on the palate. What makes the strain unique is the difference between the bag appeal and smell of the strain and how it tastes when smoked. All the pre-smoke fruitiness is replaced with an earthy and mildly sweet smoke with hints of spice, earth and tobacco. The smoke is mild in flavor but expansive in the lungs, leaving a full and satisfied feeling after a good toke. Effects set in quickly with the Shishkaberry, which draws its indica genetics from a Blueberry and Afghani parentage. Immediate relaxation sets in once smoking, with the brain slowing down pleasantly and unnecessary thinking ceasing. This is a great strain for the end of a busy workday. As an hour or two passes and the glass is filled for a second time, relaxation will turn into a pleasant euphoria and happiness, soon followed by a calm sleepiness. Bedtime can be avoided with a few more hits, but the end result will be a pleasant and grounded night’s sleep.

CRISP
CITRUS
BRUCE BANNER #3
by Goochy Gardens
with
sauvignon blanc
This dry white wine
blends sharp flavors of citrus fruit, melon, fig and zesty, grassy herbs. As a variety, Sauvignon Blanc has three different main flavor profiles: fruity style, grassiness and oak-barreled with hints of smoke and vanilla. All three styles pair well with the Bruce Banner #3, which has elements of each style in a complex and beautiful flavor profile. Cracking a nugget of Bruce Banner #3 releases a creamy and warm vanilla with light pine and a fresh grassiness, with a seductive strawberry fruit finish. Unlike some strains of Cannabis that are onehit wonders in flavor, Bruce Banner #3 is layered in sensual tastes and flavors. The nugs are rich and the smoke produced is clean but heavy on the lungs. This strain grabs the body instantly and fills it with energy and euphoria. The best part of this strain is the overwhelming headiness that comes with a big toke. Stress and anxiety are gone, and everything becomes crisper and sharper in real time. This is a great strain to enjoy out in nature, or even sitting on the grass in your backyard. Enjoy this strain throughout day or night, but we recommend this pairing for an early dinner this fall with fresh vegetable dishes. Salads and sautĂŠed or roasted veggies mix well with flaky fish styles or chicken.

BOLD
EARTHINESS
GRAPE APE
by Panda Farms
with
cabernet sauvignon
the grape ape
by Panda Farms is the boldest-smelling strain in our grouping, so naturally we went to a bold red wine to compliment the intense fruity flavors of the flower. Known as the king of red wines, Cabernet Sauvignon can range from easy drinking to full-bodied, dense and tannic. The choice depends on the user’s taste, but we recommend a light- to medium-bodied version that emphasizes fruit flavors. Once you have a glass of a local Cab, it is time to pull out the Grape Ape. Expect your room to fill with heavenly scents of berry and grape, along with an enticing earthy note that tickles the nose in anticipation of an epic high. From the first toke, this strain pulls hard behind the eyes, flooding the brain with overwhelming sensations of medicated bliss. This strain ranks high for relaxation and happiness, which will be followed within 1-2 hours by hunger and sleepiness. Because of the indica dominance of this strain, we recommend consumption in the afternoon or evening, preferably as a meal is being prepared or is about to be served. We recommend pairing this with red meat, lamb, venison or light cheeses and even a dessert. The important thing to remember is that if it tastes good, drink it, and if it smells good, smoke it. You can’t go wrong with this strong and bold Grape Ape.
20/TANNINS & TERPENES
CEREBRAL HIPSTER
ELVIS BHO by Proper Oil with
pbr
in the last decade, Pabst Blue Ribbon has transformed from a common bottom-shelf beer into a hipster icon served at quality restaurants and happy hours. The irony of this is that PBR has always been a good beer, but it is trapped in the same category as the other cans born before the craft beer generation. Though it is a cost-effective beer, it does have a mild hoppy bitterness that finishes easy and is light on the body. PBR is the perfect picnic/beach/insert-outing-here beer, and if one spills, it’s not a big deal to grab another. Proper Oil has presented their Elvis strain concentrate to pair with this cult classic beer. Honestly, we want to eat peanut butter and banana sandwiches and drink PBR as much as the King did, and the savory dabs of this strain only make the experience better. Elvis is a hybrid created from AK-47 and Skunk #1, and it brings an earthy sweet taste that finishes with a deep, pungent finish. Deep and complex, this strain is a sour skunk delight that packs solid effects. We recommend pairing these two at any time that makes sense to you. The BHO (Butane Hash Oil) extract blends a positive cerebral energy with a calming body high, which is perfect for coming up with ideas that you will want to tackle later.

UPLIFTING SPARKLES
JILLYBEAN by Hug Farms with
sparkling wine or champagne
whether dry or sweet,
rich or acidic, most wine experts agree that the best way to compliment a sparkling wine or Champagne is with sweet citrus flavors. This can be hard to accomplish with food outside of desserts or fresh fruits, which makes a pairing with Cannabis perfect! The Jillybean from Hug Farms comes out of the jar with heavy and in-your-face notes of sweet orange and citrus. Imagine standing in a Florida orange grove drinking fresh lemonade, and that is what it is like to experience the essence of Jillybean. Smoking the flower is even better, with a light and smooth smoke that dances on the tongue with sweet and tangy flavors. Inhaling deeply brings a centered and warm feeling of euphoric energy without any couch-lock or overwhelming body highs. Champagne is definitely a celebratory drink, often associated with happiness and accomplishment, and this happy and uplifting sativa matches the festive nature of the wine. The uplifting nature of the strain makes this pairing perfect for a brunch mimosa or a toast at midnight, and anywhere in between. When choosing your own pairing at home, the biggest question is the type of sparkling wine to add with the Cannabis. Choosing a sweet strain like Jillybean ensures your Cannabis pairing will be solid, but you should clarify the level of sugar or dryness and tannic nature of the wine before purchasing. Don’t be afraid to tell your local wine expert what type of Cannabis flavors you are matching with! It will ensure you have a fun experience, and learn more about wine in the process!

LIGHT
SEDUCTION
BLUE DREAM PHO
by Lunchbox Alchemy with
pinot noir
pinot noir is a light-bodied red wine that is considered the most sensual red wine with a wide range of spicy, earthy and red fruit flavors. No wonder it originated in France, a country known for a seductive love of wine and good food. The City of Light has nothing on our pairing though, which will light up an evening with Blue Dream and your favorite easy-drinking Pinot noir. The Willamette Valley produces arguably the best Pinot noir in the country, with soils and temperatures perfect for Cannabis as well, so choose local with this pairing. Lunchbox PHO or Propane Hash Oil is a Cannabis concentrate made using medical-grade propane as a solvent to extract flavors and cannabinoids from the plant. The end result is beautiful golden oil with the consistency of light and flaky pastries. Seemingly lighter than air, this PHO is perfect for vaporizing, dabbing or adding on top of a bowl of traditional flower. This is a truly artisanal extraction, capturing the essence of Blue Dream in a light and fragrant vapor that leaves a fresh and floral taste on exhale. Blue Dream has exploded on the West Coast Cannabis market over the last decade, quickly becoming a favorite of new users and connoisseurs alike. The strain blends tempting flavors of fruit, berries and sweet sugar in a well-balanced form that is impossible to resist. The genetics of this hybrid bring a relaxing body high with a creative and energetic cerebral high, making it perfect for daytime use, especially when paired with a fun and festive afternoon picnic. Pair with simple hors-d’oeuvres, cheese and bread, white pizza or poultry dishes.

SUGARY
FARMHOUSE
SWEET TOOTH
by sofresh farms with
cider
an ancient drink, ciders have been around for hundreds of years and with varying styles all over the world. A resurgence of demand for cider in the US market has led to new and exciting flavors and brands hitting the market. Unlike wine or beer, there aren’t any preset styles or categories for cider, which has led to constant innovation. Still, you can choose from dry to sweet, earthy to fruity, and wherever in between that makes sense for your palate. For the aptly named Sweet Tooth strain, we recommend a farmhouse-style cider, which are known for a dry and light-bodied pour and complex fruit and earth notes. These are easy to drink, and the lower sugar content actually helps accentuate the apples and tannins that make up the true flavor. The Sweet Tooth strain has won Cannabis Cups since 2001, and once you crack open a nug, it’s easy to see why. This potent hybrid is covered in frosty trichomes and fills any room with the sweet sugary smell of berries and floral notes. Out of all the strains we paired with, the Sweet Tooth has the best-tasting smoke. Deep puffs of dry sugary smoke are a delight for the taste buds, and coat the mouth in a lingering warm-sweet feeling. Perfect for daytime use and pairings, the Sweet Tooth imparts happiness and euphoria immediately on the user. The high has great lasting power, with a relaxed uplifting high that is still around two hours after partaking. Enjoy the cider and Cannabis in the sun at an outside bar or backyard while the weather is still permitting as we head into harvest season.

HEADY
SUMMER
LEMON SKUNK by Cultivated Industries with
hefeweizen
nothing says summer like a freshly poured pint of Hefeweizen with a slice of lemon. In German “Hefe” means yeast and “Weizen” means wheat, with many traditionalists referring to the style as Weissbiers or “White Beers.” How ever you want to label them, Hefes are known for a sweet and fruity taste and easy drinkability. Common flavors produced by the yeast in the beer include bubble gum, banana, and vanilla flavors. However, this style is not without controversy. The biggest argument in the beer world over drinking Hefeweizen is whether or not to add lemon, which is considered an American trait. We want the world to know that we have settled the debate! Skip the lemon in the beer and chase it down with a delicious toke of Lemon Skunk from Cultivated Industries! The strain is bursting with bright notes of floral lemons with a light grassy creaminess on the finish. The effects of the Lemon Skunk are quick and hard-hitting, with starbursts of energy popping with intense, heady pleasure. The smoke is sweet and dances lightly on the tongue and into the lungs, leaving one craving another toke. This is a great daytime strain, and it pairs well with the easy-drinking Hefe. Nothing is better than enjoying the last sun of summer with these two to compliment your day and your vibe.

ENERGETIC INTENSITY
SOUR DIESEL SHATTER by White Label Extracts with
farmer tom’s super dank ipa
in the world of beer, IPAs or India Pale Ales are known for intense flavor profiles and very high alcohol content. Farmer Tom’s Super Dank IPA delivers in both departments. At 9.3% ABU and made with five different styles of hops, this is one powerful beer. Produced by Heathen Brewing out of Vancouver, Wash., this beer is sure to make waves with its release this fall. Farmer Tom is a local legendary organic Cannabis farmer, and his Super Dank doesn’t disappoint. We paired the Super Dank IPA with a beautiful BHO shatter from White Label Extracts. Sour Diesel is a famed strain that originated on the East Coast and has quickly become a favorite of connoisseurs the world over. Known for an intense diesel and pine flavor, the Sour D is a fast-acting strain that delivers major potency. Mixed with such a powerful beer, this is one pairing that has a lot of intoxicating qualities and should be used in moderation. The first effects when dabbing this perfect shatter go straight to the head. After a few minutes the headiness settles into the body, imparting energy and happiness from the head to the toes. This is a great get-outand-go strain if you can manage to get off the couch. It is a heavy high, but in a good way. The shatter is purged perfectly, and has a sweet and mild vapor that makes taking big hits a breeze. Open up your mind and try this strain and beer pairing, and prepare for a fun time no matter what you are doing.

HAPPY MAGIC
GIRL SCOUT COOKIES
by True North Extracts with mead
mead is thought to be the oldest alcoholic beverage known to man, and was believed to have magical and spiritual qualities until the 18th century. While there are different styles of mead, all rely on honey for the base ingredient and flavor, which can explain the benefits the ancients perceived. Natural and wild honey is useful as a medicine for many different ailments, and when mixed into a delicious beverage, it is a truly heavenly experience. We paired the True North Extracts with the beloved Girl Scout Cookies and found that they are a match made in heaven. The beautiful CO2 oil from True North is extracted and filled into a portable cartridge, making for easy and discrete use without compromising flavors or potency. The first pull on a cartridge brings sweet and earthy flavors that linger on the palate long after exhale. After a few tokes, the vapor begins to settle in, as does the pleasant happiness associated with this strain. The best type of mead to pair this with is a dry or small mead, which is lower on sugar content but boasts more body and flavor. These are great to enjoy with dinner, where a sack mead (highest in honey/sugar content) works well as a dessert wine supplement. Known as the drink of kings, nothing is better to have with mead than a big toke of Girl Scout Cookies.

DECADENT TREAT
OREGON HAZELNUT & BLUEBERRY (CHOCOLATE) by Blaze Bars with
iced chai tea latte
what do you get when you combine Oregon hazelnuts, blueberries, delicious milk chocolate and the perfect amount of premium Cannabis THC? A delicious treat that is sure to delight at any time of day. New to the Portland market is the line of Blaze Bars chocolates! Rich, luxurious chocolate blends together with local ingredients and inspired flavors to make medicating a fun and delicious treat. New flavors include Caramel & Maple bacon (dark chocolate), Cookies n Mint (milk chocolate), Dark Chocolate & Toffee, Dark chocolate with Blood Orange and Candied Orange Peels, and the classic Milk Chocolate bar. Each bar comes in a classy and compliant package with full information including test results to back up the 100mg+ potency. Pieces are scored for easy dosing, although the hardest part about this pairing is not eating the whole bar instantly. For users with lower potency, we recommend starting with one or two scored pieces and building up over the course of a few hours. Edibles take up to three hours for effects to be felt, meaning caution should be used before potentially having a larger dose than desired. We paired this with an iced chai tea latte because the complex nature of the drink highlights the sweet and subtle nature of the hazelnut and blueberry bar. The latte is a great choice on a hot day, refreshing and full of flavors of cinnamon, ginger, cardamom and clovers. Not too sweet and very cold, this is a delightful way to wash down a piece of medicated chocolate.
