Just like a vineyard, the creation of tapa requires passion and craft, and the finished product is popular both for everyday use and for royalty. New Zealand wine, too, garners recognition and praise at every level.

On behalf of Ashley’s Angels, a fundraising initiative in support of transplant research, education and innovation at the Hospital for Sick Children (SickKids), I thank you for supporting our charity in your Toronto and Ottawa New Zealand Wine Fairs. Ashley was a very healthy two year old when she suddenly became yellow (jaundiced). She was brought to SickKids and, after a number of tests, Ashley was diagnosed with Pediatric Acute Liver Failure (PALF), a rare and frequently fatal diagnosis in children. As Ashley’s condition deteriorated rapidly in front of her parents’ eyes, we became so aware of how long wait times are for available (and appropriate) donor organs in Canada. Fortunately, liver transplantation with a living related donor organ is an option in Toronto, and Ashley’s aunt was determined to donate a portion of her liver for Ashley to undergo a life-saving liver transplant. Because of this precious gift, Ashley is now a thriving six-year-old girl who amazes everyone she meets each and every day. Ashley’s Angels Fund was established in 2009 after Ashley’s liver transplant at SickKids. Our mission is two-fold: 1. Raise funds in support of research, education and innovation targeted at enhancing both the quantity and quality of life years restored by transplantation; and 2. Raise awareness for organ and tissue donation. Thank you for supporting Ashley’s Angels! Together we can help transplant recipients have a healthier future and provide a second chance to people on the transplant waiting list by registering to become organ and tissue donors. With gratitude, Sherrie Logan Founder & Director, Ashley’s Angels www.ashleysangels.ca

“For a small country with a relatively young wine industry (at least on the international level), New Zealand really has made a name for themselves over recent years. The wines retain an air of mystery that is somewhat unique in this ever-shrinking modern world of ours.” Gregory Dal Piaz, Snooth.com

New Zealand is one of the world’s youngest nations. Maori created its traditional cultural expression, and just as Maori artists today are reinterpreting ancient craftworks — such as kahu (cloaks, typically of feather, pictured) in new forms and materials — so our grape growers and winemakers are innovating in the vineyard and winery.

What does “sustainable” mean for New Zealand wine? For us, sustainability means delivering excellent wine to consumers in a way that enables the natural environment, and the businesses and communities involved, to thrive. Under our Sustainability Policy, wine must be made from 100% certified grapes in fully certified winemaking facilities, and certification must be through an independently audited programme. Central to our sustainability policies is a

PILLARS OF SUSTAINABILITY

Biodiversity

Without the wealth we’re able to harvest from animals, plants and microorganisms, humans couldn’t survive. New Zealand wine producers cultivate and nurture diversity in the vineyard.

Soil, Water, Air

Blessed with an array of distinctive soils, abundant fresh water and famously clear air,  our wine producers go to great lengths to take care of these treasures. Even though New Zealand draws most of its

ENERGY

electricity from renewable sources, the energy demands of wine production sees the industry employing reduction strategies in all activities.

CHEMICALS

The world expects a certain quality from New Zealand wine; to maintain standards we need to mitigate against disease and pests. Chemical use on the vineyard, however, is the last resort.

BYPRODUCTS

Reduce, reuse and recycle are the watchwords in New Zealand vineyards and wineries. Many byproducts are routinely diverted from the waste stream and turned to beneficial use.

PEOPLE

A sustainable wine industry is for the benefit of people, and its success depends on delivery by people. New Zealand wine producers take their community responsibilities seriously.

BUSINESS

Sustainable practices enable wine producers to add value in a number of meaningful ways, while also making long-term cost savings and are therefore critical to the legacy of our wine industry.

Soil, Water, Air: Soil Central Otago

For a winery with vineyards on flash flood-prone slopes, soil health is vital. To sustain their fragile soils they’re increasing organic matter by allowing maximum sward growth before mowing; judiciously applying compostenriched bio-char, and balancing soil nutrient levels to preserve the low fertility that gives essential character to their wines. 6

New Zealand in a glass I toronto 2014

commitment to keep improving, as new research is undertaken and new technologies are developed. We have an ongoing leadership role in industry research and development projects and, as a result, we’re helping to raise the global bar for sustainability. Seven “pillars” represent our key areas of focus, and we provide guidance and support around each to our members. Sustainable Winegrowing New Zealand is integral to the ongoing success of New Zealand wine. Members are committed to protecting the unique places that make our famous wines by reducing the use of chemicals, energy, water and packaging, and by reusing and recycling materials and waste.

Energy Auckland

One large wine operation finds energy efficiencies offer significant savings, so the winery employs heat recovery systems to store waste heat from refrigeration for use in winemaking. Night air cooling, and daytime illumination by natural light are two other successful initiatives.

Chemicals Gisborne

Each year, local ladybird populations boom in response to the numbers of the damaging pest mealy bug. “It takes some fortitude not to jump in and spray,” says one viticulturist, “but we endeavor to use no insecticides.” Planting cover crops to encourage ladybirds and other predators has significantly reduced use of chemical controls.

Biodiversity: Wetlands Marlborough

Rich in indigenous biodiversity, wetlands have high conservation value. One winery began restoring 50 hectares of wetland in 2004 and has since planted over 3000 native plants — with the help of staff and local communities. Along with positive ecological outcomes, the project has yielded wide-ranging business benefits. #nzwine

PREMIUM, SUSTAINABLE, DIVERSE As an isolated, cool-climate island nation, New Zealand enjoys an undeniable advantage when it comes to producing distinctive, ultra high quality wines. No place is more than 130km, or 80 miles, inland and the proximity of our vineyards to the ocean has a pronounced effect on the character of our wines. Mild, sunny summers and marked differences between day and night time temperatures in many regions slow the ripening of the grapes and allow them to develop pure,

intense varietal flavours. This is the foundation of New Zealand wines’ elegance and power, and helps explain their famed balance, structure and food friendliness. And with growing regions extending 1,600km (1,000 miles) — from latitude 36° in the subtropical north to latitude 46° in the mountainous south (the most southerly vineyards in the world) — regional diversity is dramatic, enabling a striking array of wine varieties and styles to flourish.

Akarua Located in Central Otago, the world’s southernmost winemaking region, Akarua was established in 1996. Austere, arid hills and valleys characterise the Bannockburn sub region where Akarua has its 50 hectare vineyard and winery. Intensely hot dry summers are born from a close leeward proximity to the Southern Alps, stifling much of the inclement weather arising from the west. Soil condition is perverse, a combination of fragmented schist rock and light sand. Yet it is these extremes that extract the best from our vines and give rise to an amazing array of flavours and other qualities in Akarua’s range of stunning wines. Astrolabe Wines When winemaker Simon Waghorn decided to create his own brand he chose the name “Astrolabe” because of the historic ties with Marlborough and the connotations of exploration and discovery. All Simon’s skill and experience are combined to capture the essence of Marlborough in wines of purity, focus and elegance. Of special interest to Simon are the unique qualities of sub regionality as expressed in the Valleys wines, and how the sub regions can combine as Marlborough classics in the Province wines. Craggy Range Craggy Range began with the desire to create a legacy. In 1997 Terry Peabody was introduced to MW, Steve Smith. Terry sensed an exciting possibility in New Zealand, the climate and spirit of the people aligned with his own philosophy and desire to cut a new path. He wanted to create wines that would become internationally regarded as New World classics. The two made an important decision from the beginning - select and source the best land in the country, and plant vines perfectly suited to that soil and climate. pinot noir masterchef pairing

TRADE ONLY Pinot Noir Masterchef Pairing Native to Burgundy and notoriously fickle (it is world class only in cool-climate regions), the Pinot Noir grape has found in New Zealand a home away from home. Our winemakers tease a tantalising array of distinctive regional and terroir-driven styles from the land. Common to all, however, are Old World structure and elegance overlaying New World power and fruit-driven intensity. The supple richness of New Zealand Pinot Noir complements a range of savoury dishes. Try it alongside game birds such as quail, turkey, and duck; with a fillet of New Zealand salmon; or equally with pork, veal, lamb or venison. Guests at our trade session of New Zealand in a Glass in Toronto have the opportunity to see four top New Zealand Pinot Noirs, all from the South Island, perfectly paired with four flavoursome dishes prepared by Chef Matthew Sullivan of ‘Boxed’ dinner series fame and formerly head chef at Skin & Bones. Gunn’s Hill Artisan Cheese Woodstock, Ontario gunnshillcheese.ca Five Brothers is a cow’s milk cheese that combines traits from Gouda and a Swiss variety called Appenzeller. At eight months old it has a firm yet creamy texture and rich diverse flavours with sweeter overtones. Distinctive eyes are scattered throughout the body of the cheese. All of the milk to produce this unique cheese comes from the family’s dairy farm. It is named after the five Ysselstein brothers, one of whom is the owner and cheese maker at Gunn’s Hill. Winner, Firm Category, 2013 Canadian Cheese Grand Prix.

Avonlea Clothbound Cheddar COWS Inc. Prince Edward Island cows.ca

Originally Cheddar was made in wheel shapes wrapped in cheesecloth. Armand Bernard is reviving this tradition, following the style of great English farmstead Cheddars. Made from raw Holstein cow milk, which is then thermalized and aged for 14 months in carefully monitored temperature and humidity conditions. The aroma and flavour is uniquely PEI, reminiscent of fresh unwashed potatoes, grassy yet both sweet and tangy on the finish. Winner, Aged Cheddar (1-3 years) category, 2013 Canadian Cheese Grand Prix.
