appy New Year, Ono readers! I don’t know about you, but I feel as if 2013 is filled with possibility and opportunities for greatness. Now, I’m not one to make new year’s resolutions every year, but 2013 is different. This year, I have made a promise to myself that I will work hard to get into the best shape of my life — for both my health and my happiness. In fact, my fitness journey started three months ago. Since October, I’ve been hitting the gym on a regular basis and making it a point to eat right. As a result, I’m feeling better than ever, physically and mentally. So, I must continue to make progress — like it’s been said, to be fit requires a complete change of lifestyle. Yet, “eating right” doesn’t have to be a chore, nor do you have to sacrifice on flavor. This week, I’m taking a break from the decadent holiday treats of cakes, pies and cookies. The holidays are over, so it’s time to get back on track with salads. Here at the following Ono, You Know hot spots, I stumbled upon a variety of salads that are sure to spice up my life. Here’s to new beginnings!

the amazing spring and summer rolls at that. But since I’m salivating for salad this week, Pho My Lien’s Green Papaya Salad ($7.50) tops my list of musthaves. And that’s really no surprise, as this dish is comprised of shredded green papaya, shrimp, mint leaves, peanuts and splashed with a house special salad dressing that really ups the ante. Here we have the best of both worlds — Green Papaya Salad offers a flavorfully filling meal without the guilt. What more could you ask for, right? Pho My Lien puts a bit of “phobulous” into each and every one of its dishes. Go ahead, take a bite out of awesome! Well, much credit goes to the many chefs, owners and managers who work diligently day in and day out to make sure Hawaii’s diners have a top-notch dining experience. This week, Dining Out gets the inside scoops from Lung Fung Chinese Restaurant’s manager Eddie Ma, who gives us a little taste of Lung Fung and shares just what fuels his culinary drive.
A
Who or what inspires you as a chef/manager/owner? I wanted to open Lung Fung because I love to eat and enjoy serving people good food. We have been in this Niu Valley location for 10 years and it’s a neighborhood restaurant with loyal customers. Over the years I have tried to offer Chinese dishes that will appeal to local tastes. Creating new dishes is something I like to do, so it’s nice to be able to share that with our customers. What is your favorite dish on the menu? Why? Crispy Garlic Shrimp is my favorite. The idea comes from salt and pepper shrimp, which is, of course, a very popular Chinese dish. However, a lot of people really hate to peel the shells of the shrimp, especially when they are dining out. So, we created a dish in a similar style that incorporates the same flavors but is easier to eat. The shrimp is peeled, fried and topped with our crispy garlic. It’s become even more popular than salt and pepper shrimp. What is your favorite ingredient to work with? Why? Crispy garlic. We fry it until it’s golden brown

and mix it with salt and pepper (and some secret ingredients), so it has a lot of flavor. We use it in Crispy Garlic Shrimp and a lot of other dishes such as Crab with Garlic Chili and Spicy Wontons. Is there a dish that you create that’s not on your menu, but available upon request? Fried Egg with Crispy Garlic and Chili. It’s not on the menu, but it’s one of our new dishes that we created. We deep-fry the whole egg and mix it with my favorite ingredient, crispy garlic, so you know it tastes good! It’s very hard to make at home, so it’s a perfect dish to order out.
People really seem to like it and it’s become very popular. What are your culinary goals? What do you hope to improve on? We really want to follow our customers’ recommendations and continue to serve our loyal customers in the neighborhood. We also want to make our dishes healthier. For example, six months ago we stopped adding MSG to our cooking because our customers had requested it. I also want to keep creating new dishes and improving on our old recipes so our restaurant is always moving forward.

Dining Out recently paid a visit to one of our favorite eateries and caught up with owners Ken and Cindy Wong. This husband-and-wife team wasted no time, as they were eager to share a handful of new and savory dishes that grace the menu starting today. We were lucky enough to catch a sneak peek, and can wholeheartedly agree that great things are in store this year at Anytime Cafe!

The concept here at Anytime Cafe is similar to a cafe you would come across in Hong Kong, where Ken and I are from. DO: Taking a glimpse at the menu, there’s so much to choose from, and it all depends on what you’re craving most. What are a couple of the restaurant’s most popular dishes? Cindy: Two of our most requested dishes are Wonton Noodle ($7.95) and Thai Style Pork Cheek ($6.95).

they slated to hit the menu? Cindy: There are four new items that we’re excited to feature and we will offer them starting today. DO: How exciting! Tell us about these dishes. Cindy: Yes, we’re very excited, too. First of all, we have Vegetable Lasagna ($15.95), which features a fresh spinach pasta sheet layered with eggplant, mushrooms and ricotta cheese. Then we’re eager to offer Squid Ink Linguine with Calamari. Priced at $16.95, fresh squid ink pasta is tossed with calamari rings and our house marinara sauce. Seafood fans also will enjoy Spinach Linguine with Swai Fish ($16.95). This is a delicious entree that comes with fresh spinach pasta tossed in our house marinara sauce and topped with baked swai fish seasoned with a special sauce with onions, olives and capers. Finally, we have our new dish of Spinach Linguine with Shrimp and Scallop ($16.95), which consists of fresh spinach pasta with pesto cream sauce, and topped with flavorful pieces of shrimp and scallop. Basically, the big draw is that we’re now using fresh pasta, and we believe not many restaurants carry fresh pasta. DO: Fresh pasta dramatically adds to any dish.

What are you hoping the response will be to these new dishes? Cindy: Of course, we’re hoping that these dishes will be a hit with everyone. We’ve been giving samples to our regular customers and they seem to love it. DO: What brought about the addition of these new items to the menu? Cindy: Many customers asked us about fresh pasta, so we got some from our pasta supplier on Christmas, and we tried it and we loved it very much. During our last visit to Hong Kong, we noticed that many restaurants carry fresh pasta, the most popular being squid ink pasta. DO: What else will the new year hold for Anytime Cafe? Cindy: Well, we would like to further promote Green Monday at Anytime Cafe. It’s all about going meatless on Mondays — an easy and effective way to reduce your carbon footprint and improve your health. According to a recent study, the meat industry is responsible for nearly one-fifth of the greenhouse gas emissions in the world. That’s more than all the cars, trains and planes combined. alking pupus with chef de cuisine Lydell Leong of 3660 on the Rise is always an entertaining and informative way to better understand the art and science of fine food preparation. Leong is an expert at pulling off the flavorful and visually-appealing dishes customers have come to expect. He’s even smart enough to listen to diners who suffer from flavor withdrawals over a long-time menu favorite that’s been retired in favor of new culinary challenges. For the record, that would be Crispy Garlic Scallion Prawns ($12.95). Off the menu for about two years, Leong reintroduced the dish at the constant urging of customers. The dish offers a good introduction to the organization and culinary skills necessary for pulling off tasty and seemingly simple dishes. Prawns are floured and quick fried by one member of the kitchen staff, while another sautes a mixture of vegetable oil, garlic, scallions, gin and a touch of salt. After 40 seconds of cooking time, the prawns are tossed with the sauce, served on a bed of crispy spinach and drizzled with a honey chili aioli. The result is incredibly

crunchy prawns that maintain their moisture and sweetness. The aioli provides creaminess and a bit of heat to each bite, while the spinach and fried garlic add just another texture and
ingredients. Though the scallops and the fresh toppings get the headline, and rightfully so, the miso is perhaps most interesting. Imported from Japan’s oldest miso factory, the organic
flavor profile. Sticking with the ocean-born appetizers, Pan Seared Hatcho Miso Glazed Scallops ($11) is a must-try. Scallops are seared, topped with a relish of Kahuku corn, shiitake mushrooms, Kizami wasabi and red bell peppers, drizzled with a yuzu butter sauce and served on a bed of stir-fried Dry Land Nursery pea shoots. Naturally sweet, scallops need to be handled with a light hand and Leong's staff do this even while including so many
miso paste is sweeter and less salty than most types and works perfectly with the subtle scallops. One more gift from the sea is Porcini Seared Ahi Tataki ($14.25). A four-and-a-half ounce portion of sashimi-grade ahi is dusted in a porchini mushroom powder and seared with a blowtorch. Sliced thin, the fish is served on a bed of pea shoots mixed with truffle oil, lemon and salt and drizzled with a yuzu butter sauce. The torch creates a
thin outer crust without compromising the buttery texture of traditional sashimi. Enjoyed with the yuzu and salad, each bite combines the acidity of the yuzu, the natural sweetness of the ahi and the earthiness of the truffle oil and porcini. Not everything on the pupu menu is created so quickly. Garlic-Lemongrass Braised Veal Cheek ($12.95) takes about three hours from preparation to presentation. Veal is seared then braised with cherry, veal stock, orange, star anise, lemongrass, and kafir lime. The result is a tender, almost buttery piece of meat that slightly resembles a well-prepared beef tongue. The side of scallion rice provides a fresh counterbalance of flavors and is great after being dragged through the jus reduction. Finally, an appetizer that’s not necessarily an appetizer, but is often ordered as one. Everything is better with basil and pork products, and Tomato and Mozzarella Salad ($12) is no exception. Prosciutto, housemade truffled mozzarella, Dry Land Nursery micro basil and Wow Farms tomatoes are tossed with truffle oil, Kona sea salt and a smoked balsamic reduction to create a light, fruity pupu that is a perfect cleansing agent for the more bold flavors on the menu.

im sum can be so delectable, and it’s so much fun to eat. But going out for dim sum can be somewhat of a guessing game. Unless the restaurant proclaims itself vegetarian, you don’t really know what’s inside those mysterious little parcels. You can ask your server for information, but they may rely on what they’ve been told by the kitchen and might not be aware if a bit of meat or fish finds its way into the recipe. Sure, spinach dumplings may sound harmless, but who knows what’s lurking inside? And, if you’ve never dined at the establishment before,

2011. “There’s no place like this in Kaneohe,” notes Wong. “It’s a fun atmosphere for families to eat and talk story.” Also happening at the restaurant is the En-Kai party festival going on through Jan. 14. fter spending 2012 growing its loyal customer base, Tropical Tribe will transition to a new location from which it will continue serving a host of quality acai in 2013. “Jan. 31 will be the last day in this parking lot location,” says Andre Alves de Moraes of the Tropical Tribe food truck’s current locale in a lot at 1637 Kapiolani Blvd. across from Papa Johns and 24 Hour Fitness. “I’ll be moving the truck soon to a better location. I’m also planning on opening a storefront location in the future.” Alves de Moraes came to Hawaii from Brazil with the goal of studying English before eventually moving to England to earn a master’s degree in economics. But, after enjoying Hawaii and “falling in love” with the weather, ocean and surroundings, the budding entrepreneur decided to apply his business acumen and opened Tropical Tribe — a brightly colored food truck serving high quality acai bowls, shakes and teas. “I’ve been everywhere and have eaten acai bowls; in Brazil they are extremely popular,” Alves de Moraes says. “Most people in Hawaii really don’t know what the acai berry tastes like, so I didn’t know if they’d like it — but our

customers are loving it. This berry is so popular in terms of protein and vitamins, it can’t be beat. There is more protein in the acai berries than in tuna fish.” After coming to Oahu, the owner of Tropical Tribe scoured the island looking for a quality acai bowl and realized that recipes he was finding used a low grade acai, far inferior to what he was used to enjoying in Brazil. Alves de Moraes explains that ancient tribes in the Amazon discovered the acai and guarana berries and relied on

And now the third generation ― his daughter ― works here as well.”

Serving up a mix of foods from a variety of influences, Kenny’s, located in Kamehameha Shopping Center, has something for everyone. Senior assistant manager Erlene Hutchinson describes Kenny’s cuisine as “local comfort food.” “It is kind of a little bit of everything ― mostly local favorites, but we also have American and Japanese dishes,” adds Leihulu Irvine, also a senior assistant manager. Classic favorites include Kenny’s Famous Chinese Chicken Salad ($11.45), which features shoyu chicken, char siu, won ton chips, Chinese parsley and peanuts all over a bed of lettuce and bathed in a sesame seed sauce. Many remember Kenny’s from their youth, but now with a new year underway, the restaurant is looking toward the future. There is no set date yet, but a revamped menu will make an appearance early this year. “We are just kind of looking at what the locals like, what the customers like and bringing out something new,” Irvine says. “The chef really responds to customer feedback,” he explains. “If we try something and it’s not really something that takes off, we will try something else. And if it’s a really popular item, we will keep it around. We value customer opinions a lot.” Just like the restaurant is now in its second generation of ownership, there are a lot of customers who grew up coming to the restaurant and now bring their children. “We have a lot of customers and a lot of employees who have been here for years,” Irvine says. “We are really appreciative … We just want to thank the customers for coming in,” adds senior assistant manager and longtime Kenny’s employee Erlene Hutchinson, “because without the customers … we wouldn’t be here and we wouldn't have been open this long. We have a lot of good employees as well.”

top.” The result is a tasty combination. Another special is Fresh Opakapaka Lanai Style ($19.95), which is topped with a delectable pineapple macadamia nut butter and is served with a tossed salad. Another new item currently gracing the menu is Spaghetti with Meat Sauce ($12.95), which is served with garlic bread.

ith the cold weather persisting, revisit the warmth of a steaming bowl of saimin at Shiro’s Saimin Haven — you have 65 options to choose from. Not to mention, you’ll feel right at home. “The one thing that patrons will notice are the poems on the wall, and those were all written by Shiro himself,” shares vice president Aaron Lee. With words of wisdom like: “If you cannot say nice things about others, keep your mouth shut and button your lips,” the personality of the restaurant’s namesake continues to warm the walls of the restaurant. And when it comes to saimin, Shiro’s knows what it’s doing.

Lee recommends Spicy Beef Saimin with Won Ton ($8.45), which comes with vegetables and garnishes. Shiro’s also owns Five Star Noodle Factory where they make their own noodles, and the won ton is made in-house, something they just started doing last
year. The spiciness of the dish is from the beef that is marinated and cooked in a special spicy sauce. “It gives the saimin a different kind of flavor; the spicy sauce seeps into the broth,” says Lee. Aside from its extensive saimin variations, Shiro’s also features a list of other entrees and local favorites. Lau Lau with Beef Stew ($9.25) was previously only offered as part of a special menu on Fridays, but is now made and offered daily because of its popularity. It is served with hot vegetables and your choice of rice, brown rice, french fries or mashed potatoes. Another treat you’ll be in for: a jukebox that sits in the back of the restaurant where you can play three songs for a dollar.

“(These specials) actually started out as a one-week thing, but now they have been on for a month-and-ahalf,” Irvine says, citing the dishes’ popularity as the reason behind their longevity. All specials are available only as long as supplies last ― which for many of the tasty dishes might not be much longer. Additional changes are currently in the works for Kenny’s. “Moving into the beginning of this new year, we are actually looking into revamping the menu,” Irvine says. “We will be updating the menu and possibly abringing back some classics.” But regular customers need not worry about their afavorites going anywhere when the revamp does happen; Irvine assures that the restaurant will keep customer favorites around. s its name suggests, Don Day Yakiniku makes everyday the perfect time to enjoy fresh meat selections cooked to perfection, including the eatery’s signature pork belly. The eatery offers an interactive cooking experience as diners grill fresh meat selections on the gas-powered cooking surfaces at each table. Additionally, customers may choose from a variety of hot pot dishes, as well as other entrees and side dishes prepared to order in the kitchen. Unlike other yakiniku-style restaurants, where the smoke and aromas tend to linger in the air and leave diners smelling like the food they’ve eaten well after the meal is finished, Don Day Yakiniku features an openair outdoor setting under large awnings and the shade of a big tree. Light breezes keep customers cool, while also wafting away the various scents. Owner Charlene Miura opened the popular dining spot

in August 2011, and utilizes the culinary skills of her mother— known affectionately as “Grandma Han”—who brings more than 30 years of restaurant experience to the kitchen. “My Mom used to own a very good restaurant in Korea, and ever since we moved here, she always wanted to open a restaurant, but never had the right opportunity,” says Miura. “So actually, my Mom does all the behind the scenes work, she

has her own secret, original recipes. She has her own way, and taught me everything about the food and how it should taste. I just run the business side and manage the restaurant.” Don Day Yakiniku offers a wide range of fresh meat platters from which to choose, including Fresh Pork Belly ($23.95), Kalbi Fresh Beef Short Rib ($24.95), Prime Beef Sirloin Steak ($25.95), Pork Bulgogi ($19.95) and Chicken Bulgogi ($19.95). The tender pork belly, one of the restaurant’s specialties, pairs perfectly with fermented kim chee, which is best served hot off the grill. “My Mom believed that in ancient Korea, when they ate pork belly, you eat it along with cooked fermented kim chee to help you digest everything — it’s better for your health,” Miura explains. “The fresh pork belly is our specialty and we fly it in: it’s not frozen.” Each meat or combo platter is accompanied by salad, rice
and up to eight side dishes, which vary daily depending on what has been prepared fresh. The Combo B platter ($79.95) is designed to feed four people, and includes a variety of popular meat and accompanying choices such as Fresh Kalbi or Marinated Beef Short Ribs, Beef Brisket, Beef Tongue, Fried Dumpling or Seafood Soybean Pot, Rice Wrap and Casserole. Hot pot dishes also are available, and are brought to the table where diners proceed to prepare the flavorful combinations on the burner. For two or more diners, Spicy Sausage Hot Pot ($28.95) is an ideal option, and includes ham, Spam, sausage, Portuguese sausage, Korean sesame seed leaves and Korean mochi in a flavorful broth. Diners also may select from a host of entrée options, including Seafood and Vegetable Pancake ($16.95), a popular dish incorporating an egg and flour batter with pieces of shrimp, clams, squid and green onion along with an assortment of other vegetables. Spicy Stir-Fried Squid ($15.95) is a perfect choice for those longing to heat up their dining experience, and not to worry, the cool breezes passing through the dining area will make the heat easier to bear. “This is an authentic Korean restaurant, and the one and only outdoors,” Miura says. “You can enjoy the outdoor environment that is our specialty. It’s family-style dining and a very enjoyable atmosphere.” Don Day Yakiniku also offers a full selection of domestic and imported beers and wines, in addition to cocktail soju available in cucumber, lemon, yogurt and strawberry varieties.
