’ve been trying to increase my fruit intake lately, but really, there’s only so many oranges, bananas, strawberries, melons, apples and grapes that I can take without having a craving for something more, something substantially filling. So, as I racked my brain for new and fruity ideas, I recalled a longtime favorite of mine that seemed to escape my diet for a while … drum roll, please ... guava! A fruit relished by just about everyone (even animals), and cultivated in many tropical and subtropical regions, guava has a pronounced fragrance that just seems to lure you in to greatness. Cut through its rough outer skin and bare witness to its sweet, juicy flesh. Totally irresistible! As this week’s scene-stealer, guava is a prominent ingredient in many of the over-the-top onolicious creations at the following Ono, You Know establishments. Ono readers, it's time to relish in the sweet and savory, and finally declare our love for guava!

ents possible. Second, all pizzas are baked at 800 degrees in a dome-shaped, woodfire oven. “All of our pizzas are made fresh every day, and the flour that we use for our pizza dough is imported from Italy,” says owner

Kyle Okumoto. And the local girl in me is obsessed with guava, therefore even with all the pizza options to choose from, I automatically gravitate toward Inferno’s Guava Smoked Pork Pizza ($16). Served spicy or mild, this thin-crust pizza is topped with fresh mozzarella cheese and barbecue sauce, and generously garnished with mushrooms, Maui onions and smoked pork, which Okumoto says is smoked to perfection with guava wood. Trust me, this pizza is in a league of its own! Don’t even get me started on the guava-smoked pork. It’s so good, I found myself picking these meaty morsels right off the pizza. Oops! According to Okumoto, Inferno’s pizzas are based on what patrons enjoy, and he makes it point to really let the local ingredients shine through. ntertwining flavors of Laotian and French cuisine ... that’s what chef and owner JJ Luangkhot of JJ Bistro & French Pastry does every day, always striving to achieve absolute perfection. Luangkhot made Hawaii his home almost two decades ago and first opened JJ Bistro & French Pastry in Aiea in 1995, prior to relocating his

restaurant in 1999 to its current home in Kaimuki. Highly regarded for its unique assortment of entrees and pastries, this pastry shop exudes an elegance all its own. Luangkhot never ceases to amaze his patrons with brand new delights and insightful restaurant concepts, so it’s no wonder that on our most recent visit to JJ Bistro & French

Pastry, Luangkhot amazed us with his newly created Fishermen Feast additional menu that will be available to customers starting today. “This is a play off of my other restaurant, Crab City. Now we have a menu here that’s dedicated to seafood on a more upscale level,” Luangkhot says. “Lobster is our specialty.” This enticing menu is offered during lunch and

dinner, and as we sat down with Luangkhot to reel in this catch, he shared with us a “tail” that we won’t soon forget. DO: The new year is off to an impressive start here at JJ Bistro & French Pastry. Tell us about this new Fishermen Feast menu that you’re debuting today. Luangkhot: We wanted

to start the new year with something different at JJ Bistro & French Pastry. We figured that since we’re doing well at Crab City next door, we decided to bring about a seafood concept/menu here as well. However, instead of focusing on crab, we wanted the main draw to be lobster. The presentation of the dishes also is more elegant compared to Crab City. I

have had many customers who don’t want to make a mess when they eat seafood. DO: The restaurant’s Fishermen Feast menu offers a healthier aspect as well, correct? Luangkhot: Yes, we’re staying away from deepfried dishes, therefore our seafood dishes all will be fresh and baked.

DO: Please give us a glimpse of the menu. What would you highly recommend to customers? Luangkhot: If you love oysters, you must try our Bake Oyster ($2.95 per piece, $14.95 for halfdozen), a side dish, which features oysters complemented with an avocado puree and chili mayonnaise. Melted mozzarella cheese also sits atop each

oyster. Bake Oyster is a good choice for those who don’t like raw seafood. Another must-try side dish is Oyster Classic ($2.50 per piece, $12.95 for half-dozen, $24 for one dozen). These oysters are very fresh and topped with masago and a hint of ponzu sauce. The ponzu sauce brings a citrus taste to the dish and pairs well with the natural sweetness

of the oyster. We have two types of oysters to choose from, New Zealand oysters, which are small, juicy and sweet, or Pacific oysters, which are larger and come from Seattle. DO: Lobster fanatics obviously can’t wait to devour the delicious lobster tail ($14.95 per tail). Tell us about this.

Luangkhot: Yes, our lobster tails are fantastic. Lobster is one of the most popular seafood choices, and we have a great deal: You can purchase three tails for only $34.95. We also have a new special that we’re excited to promote, and that’s Lobster Pad Thai ($18.95). Pad Thai is a well-known international dish, but we want to make ours stand

Like Crab City, are there any combo deals that patrons can take advantage of? Luangkhot: We have one seafood combo titled De Sea World. It’s priced at $48 and feeds two to three people. Served in a big bowl (resembling a coffee cup), it includes king, snow and Dungeness crabs, in addition to lobster, mussel, clam and shrimp. DO: The variety of sauces to pair with your seafood is a main draw at Crab City. Can customers expect the same type of sauces here at JJ Bistro & French Pastry? Luangkhot: Yes, but unlike Crab City, where the seafood is swimming in the sauce in a plastic bag, here all sauces are served on the side for dipping, and the seafood is presented on a plate. We have four sauces to choose from: World Classic (melted butter), Garlic Butter, Lemon Pepper and J’Jun Sauce (Cajun sauce made with chili, garlic and basil). D

uring a conversation with some wine representatives who were admiring her collection of rare and unique beverages at HASR Wine Co., Terry Kakazu was inspired to use their comments in naming a new restaurant project, which is now flourishing. “Of the wines we get, many of them are allocated — you can’t find them anywhere else,” explains Kakazu. “We have 18 lots of one-of-a-kind wines that we’ve purchased from around the world. The wine distributors told me that I’m ‘spoiled rotten’ because I can get wines that you can’t get unless you know somebody.” The wine purveyor and restaurateur turned the phrase into an acronym, and “Highly Allocated, Spoiled Rotten” became HASR Bistro. The restaurant offers a country-style European-American bistro experience with a menu crafted by executive chef and co-owner Rodney Uyehara. While the bistro opened its doors Oct. 3 and has served a growing wordof-mouth following, it will celebrate its official grand opening Jan. 20. “The general public wanted a place where they can experience quality food and the fine-dining atmosphere without having to pay so much for it,” says Kakazu. “That’s why we came up with the countrystyle aspect, where there are

no limitations.” Located in downtown Honolulu, HASR Bistro is flanked by two public parking lots and plenty of street parking, so getting there is a breeze. In addition to the indoor dining tables and spacious bar area, the bistro also offers seating in an

The key to what we do here is that we use a lot of fresh herbs, many of which come from our garden out front and from my typical shopping in Chinatown.” HASR Bistro offers French Onion Soup ($7 for a cup, $9 for a bowl) with double beef broth and a four-cheese gratin that is served throughout the day. Chef’s Cioppino ($27) headlines the dinner selections, and serves up scallops, prawns, calamari, mussels, clams, crab and fish in a zesty saffron tomato clam broth. Grilled Colorado Lamb Chops ($28) are cooked to perfection, and are accompanied by roasted eggplant and goat cheese moussaka and surrounded by a pomegranate sauce. Diners may complement their meals with wine purchased from HASR Wine Co., located just steps away from the bistro. And customers may bring their own wine for a $15 corkage fee. T

he difference between a steakhouse steak and one from a restaurant that serves steak is often most evidenced by portion size. Steakhouses don’t do tiny and neither does Ruth’s Chris when it comes to appetizers. Yes, Honolulu, pupus can be both hearty and tasty. Starters at the famed Restaurant Row eatery are not just ample in the key ingredi-

ents, but also in the side items that in some places serve as mere decoration. Not here. The salads, starches, breads and leafy green sides are enough to push the starters nearly into the realm of main course mainstays. These are appetizers to share. A perfect example is Barbecued Shrimp ($19). Beyond being one of the best shrimp dishes I’ve ever eaten, the large shrimp, sauce and side

of garlic mashed potatoes are as flavorful as they are hearty. Perfectly moist and full of flavor, the shrimp is sauteed New Orleans style in a reduced white wine sauce with barbecue Cajun Beef Carpaccio ($19) butter, garlic and spices. Slightly crispy, the shrimp snaps when you bite into it, mixing the carefully combined flavors from the sauté with the natural sweet juices from the shrimp’s interior. Outstanding. Another appetizer is Veal Osso Bucco Ravioli ($17). Saffron-fused pasta filled with veal and fresh mozzarella, and served with sauteed baby spinach with a white wine demiglace. Slow braised veal makes for a rich ravioli, and the pronounced cheese flavor is perfectly offset by the Cajun Oysters Rockefeller ($17.95) spices that coat and surround the tender pockets. Serving a much greater role than simple colorful adornment, the spinach is a crispy palate cleanser that makes the next bite as special as the first. onions are deglazed with a Pernod and placed upon the five large oysters on the half shell. Topped with a Hollandaise, the dish is baked at 450 degrees for eight minutes and served on a flaming plate. Yes, they flambé the Oysters Rockefeller which not only ensures jealous looks from neighboring diners, but keeps the oysters at a suitable temperature. More surprising than the presentation is the range of flavors executive chef Eli Low infuses into each bite. The oysters are creamy, buttery, tangy, crunchy, peppery, salty and smoky. Anything more would be too much. The hardest appetizer to describe may be the best one. Beef Carpaccio ($19) is a thinly-sliced rare filet served with caesar dressing, Parmesan cheese and fresh ground pepper. Garnished with a mixed green salad and garlic crostini, the well-marbled beef is so buttery soft it nearly melts in your mouth. Placed upon the crostini, maybe even add some of the greens, and the carpaccio is, well, delicious. What else is there to say? Try it. Seriously. It’s that good!

puree is served with crisp tofu cakes, making this a yummy protein source for non-meat eaters, but even carnivores can’t get enough, so sharing is inevitable. “For our only vegetarian appetizer, it’s very popular,” says general manager David Nagaishi.

s 2013 shifts into full gear, Adega Portuguesa Restaurant & Bar is rolling out a full slate of fun — and tasty — events and promotions through which customers can enjoy authentic Portuguese and Brazilian experiences that have influenced the eatery from day one.

Conveniently located in downtown Honolulu at 1138 Smith St., Adega provides fantastic food, fun and entertainment for those stopping by for a business lunch, late-night beverage and everything in between. Owner Trigo da Silva is featuring a “Taste of Brazil” every third Sunday — including tonight — from 5 to 7 p.m. The $15per-person dinner sampling includes five delicious selections of Brazilian fare prepared specially for the event. A special guest chef skilled in the art of Brazilian cuisine will be on hand to prepare the unique menu offerings. Food fanatics also are invited to experience a “Taste of Portugal” at the restaurant every first Saturday from 5 to 7 p.m. The event includes a sampling of five dishes for just $15. For the upcoming edition of the sampling menu, special guest Chef John M. Peru, who has honed his craft at the prestigious Mid Pacific Country Club in Lanikai, will bring his

Portuguese culinary expertise to Adega’s kitchen. “Adega wants to open the doors for aspiring chefs and home cooks skilled in preparing Brazilian or Portuguese cuisine,” explains da Silva, who encourages such culinary creators to contact him if interested in cooking for one of the special “Taste” events. Adega also is helping Hawaii celebrate the Brazilian Mardi Gras festival known around the world as Carnival — a traditional party during which music, dancing and outlandish costumes take center stage. On Friday, Feb. 8, Adega hosts a Mardi Gras Grand Opening party, during which Samba Surf will perform starting at 10 p.m. The group plays pagote, a Brazilian country-style folk music described by da Silva as “slow samba.” Come Feb. 9, customers are invited to Jimmy Buffett’s in Waikiki at 10 p.m. for a special Masquerade Ball experience. The event will feature three live bands and a DJ, lively

Special ($20), as Chef Ruben Oliveira has created a beautiful plate featuring salmon stuffed with crab and topped with a seafood cream sauce that is served atop a bed of mashed potatoes and mixed vegetables. Diners are encouraged to make reservations soon, as this special dining experience should not be missed. Customers are encouraged to keep an eye out in March as well, as Adega will offer Brazilian Rodizio — barbecued meats including beef, chicken and pork prepared rotisserie-style and carved fresh for customers tableside. The special dining experience will be offered by da Silva as a way to thank customers as he celebrates the restaurant’s first anniversary. “It’s like traditional barbecue that they serve in Brazil. We bring the meat right to

your table and carve it just for you,” explains da Silva. “Adega is celebrating one year in Hawaii this March, so we’re going to add more dishes to our menu in the process.” The eatery’s lunch buffet still offers a host of flavorful cuisine daily from 11:30 a.m. to 2:30 p.m. for just $12.95. Even though Hawaii diners have only been exposed to owner Yoshi Hashigami’s flavor-packed recipes since 2008, many of his dishes are more than half a century old, spanning back to his father’s restaurant in Osaka, Japan, which remained open for 55 years. Lamb and Onion ($9.50), for example, features a shoyu-based Japanese sauce that the cooked meat and vegetables soak right up. “It’s my father’s recipe,” explains Hashigami when describing this old-favorite. Newer items also spice up the menu such as Chicken Tofu Salad ($10, regular; $9, small), which consists of a revitalizing

blend of baby greens, chicken thigh, tofu, onion, corn, cucumber and tomato on a bed of spring greens. A creamy shoyu dressing tops it off, making it the perfect get-healthy dish for the new year. Hashigami also suggests trying his take on Sweet and Sour Chicken ($9.95, side order). “The dish is Chinese, but the taste is Japanese,” he explains. “The sauce is more Japanese-style because it’s made with sake.” When it comes to good eats, Hashigami has had a lifetime of practice to ensure you’ll enjoy these tasty dishes. “They are the most popular items with our returning customers,” he says. “And they taste so good!”

t’s been about six months now since longtime Chinese restaurant On On at McCully has been under new ownership, and customers old and new are enjoying the changes. New owner Qiao Chen has revamped its menu to one of a contemporary Chinese restaurant with a mix of traditional dishes, local flavors and healthier options. For example, there’s Pork

Chop with Red Onion ($12.99), which is similar to the familiar local favorite salt and pepper pork chop, however, this signature menu item is made with red onion, green onion and a tasty original seasoning. Also popular is Deep Fried Tofu Mixed with Shrimp on Spinach ($11.99) served with an oyster sauce. Take a bite and it’ll just melt in your mouth. For

vegetarians, it also can be ordered without shrimp. A traditional dish is Stir Fried Pork with Pressed Dried Tofu ($10.99), which also has chives, red peppers, a hint of Szechuan sauce, and is served with wheat flour tortillas. Other customer favorites incude Curry Seafood Hot Pot, Honey Shrimp with Walnut or Macadamia Nut and Steamed

Fish Fillet with Ginger and Green Onion. There are already about 100 items on the menu with many being original recipes, but Chen plans to continue to add to it, including more modern-style Chinese dishes with a Northern China influence, such as dumplings and manapua. Good to Grill

onsidering the large selection of dishes that Good to Grill offers, the restaurant’s motto is surprisingly simple: “We want fine-dining quality without the fine-dining prices,” says director of restaurant operations Patrick Comer. From its ingredients to food preparation to customer service, Good to Grill goes for quality. Comer credits many of the tasty dishes to the restaurant’s kiawe grill, where a majority of its menu items are cooked. “It is a very unique open-pit kiawe-wood grill,” he explains, adding that there are no additives or fuels used. Up next, Good to Grill is looking to add an even faster dining option for the busy lunch crowd by introducing what Comer calls “scoop and go” items. “We are looking forward to that, and we are hoping to get that implemented very quickly.” He estimates that it will be introduced at the beginning of February. And what some diners might not know — Good to Grill also serves breakfast on Saturday and Sunday. Another thing that Comer feels sets the restaurant apart is its welcoming, friendly staff. “We are very personable; you can walk in and talk to any of us at any time,” he says. Comer has been involved in the restaurant industry for years — and his resume includes some of the Island’s most popular eateries Joe Pagaduan with Prime Rib such as Sam Choy’s and Michels. He joined the Good To Grill team about a year ago. And within that last year, Good to Grill has seen a number of changes. “In the last year, we have really evolved. It’s been a big, big change,” he says. “And we would love to get more people in here to try it out.”

ith its open-pit kiawe grill, Good to Grill has become a hot spot for local favorites since opening its doors about four years ago. And within the last year, there have been a lot of changes in the Kapahulu restaurant. “We recently revamped the menu,” says director of restaurant operations Patrick Comer. “If people haven’t been here for a while, it’s a good time to come back and take a look at the restaurant.” One recent change is for its fish dishes: “We only use fresh fish, we never use frozen fish,” Comer says.

“Fresh is always the best,” he adds. Garlic Ahi ($10.99 for lunch; $12.99 for dinner) is the perfect testament to that. The dish features fresh ahi marinated in garlic sauce and kiawe grilled. “Another thing that we’ve changed is that we are very selective of what meats we use,” Comer explains. “Now, we cut all our New York steaks, we cut all our ribeyes. Everything starts from fresh meat.”

However, Dining Out is here to tell you about a great little place on Pali Highway. People’s Café has been in Honolulu for 80 years, according to co-owner Conrad Valdriz, and the restaurant currently serves up great local Hawaiian and Filipino favorites. Each dish, from the entrees to the a la carte items and desserts, acts as comfort food that leaves customers full, happy and satisfied. The homey atmosphere of the restaurant is supplemented with the beautiful fresh-cut flowers on each table, and the service is always friendly and professional. A new paint job adorns the walls with earth-toned colors. It’s the perfect place to eat comfort food. Crispy Pata ($14.60) is served with tomatoes, onions and chili pepper water on the side, and is the restaurant’s most-popular Filipino dish. And it’s no wonder. The pig leg is boiled until soft, dried overnight and fried the next day, which makes for a long process. But head chef Tomas Ventura understands that the hard work he puts in makes for some

tasty dishes. The soft meat is enclosed in the crispy flavorful skin that pairs well for that juicy flavor one would expect. Another Filipino favorite is Salt Meat with Watercress soup ($7.50), which is served with an onion and salt combination, as well as chili pepper water. Nestled in the house-made special broth are pieces of bone-in short rib, which are soaked for two nights in Hawaiian salt. This brings out the flavor of the meat, and when mixed with the “secret recipe” broth, it makes for a savory meal. While the appearance looks plain and simple, this is one soup that you have to try for yourself. The experience is almost life-changing as the taste of short ribs is usually found in yakiniku places or served with rice. And if you’re fancying a “traditional” Hawaiian plate, then People’s Café is the place for you. Its Hawaiian Plate ($12.50) features homemade lau lau, kalua pig, chicken long rice, lomi salmon, poi and a helping of haupia. Ventura says the Hawaiian Plate is the most popular dish with the establishment’s local clientele. The homemade lau lau might be hard to imagine for some people, who choose to buy their Hawaiian specialty at the grocery store, but one taste will have you in Hawaiian Plate heaven. Other Hawaiian combination plates include

Kalua Plate ($10.50), Lau Lau Plate ($11.50), Tripe Stew Plate ($11.50), Kalua Pig with Cabbage Plate ($12.50), Teriyaki Shortrib Plate ($11.50), Beef Stew Plate ($11.50) and Raw Fish Plate (market price). Smaller plates also are available: Lava Rock Plate ($8.50), Bento #1 ($6.90) and Bento #2 ($7.55). A la carte items include favorites such as Steak and Shrimp ($10.50), Garlic Shrimp ($9.50), Corned Beef with Cabbage ($7.50), Loco Moco ($7.50), Squid Luau ($6.50) and Beef Stew ($8.50). Each amazing Filipino dessert is made by Celi Urbina and costs only $5! You’ll fall in love with the Royal Bibinka, Ube Mochi Rice (PetchePetche), Cassava Cake, Sinuman, Dudol, Tupig Cassava and Tupig Mochi. These individually wrapped desserts are perfect when you’re on the go and need a sweet pick-meup, or just to share around the table after eating your fill of Hawaiian and Filipino goodness. The prices at People’s Café are hard to beat, and with the quality of home-style cooking this will be one of your go-to spots to chow down in no time.
