I

taly is beckoning me. It’s been a couple of years since I’ve been back to my fatherland, but I think this year is the perfect time to make that much anticipated journey back to Southern Europe. What do I not love about Italia? The moment I set foot in Rome, I feel right at home in this bustling city, and then taking in the beauty and charm of Positano, a village and commune on the Amalfi coast, is breathtaking. The sights and sounds of Italy awaken my senses, yet it’s the classic cuisine that feeds my soul. Italian fare is characterized by its extreme simplicity and ingredients that center around premier quality and freshness.

Take prosciutto, for example, a drycured ham that is usually thinly sliced and

served to your liking. Prosciutto is made from either a pig's or wild boar's hind leg or thigh, and the process of making this coveted meat can take anywhere from nine months to two years, depending on the size of the ham. It’s believed that the most renowned and expensive legs of prosciutto come from central and northern Italy.

Such a simple food boasts a supreme flavor and is often served as an antipasto, on top of pizzas or in sandwiches. This week, it was my pleasure to partake in true Italian prosciutto at the following Ono, You Know establishments. The secret to a great prosciutto lies in the delicate sweetness and buttery texture of the meat, which is said to result from the re-

strained use of salt during the curing process. Molto delizioso!

Il Lupino Trattoria & Wine Bar Italian authenticity seeps from every crevice of Il Lupino Trattoria & Wine Bar at Royal Hawaiian Center in Waikiki. Behold a menu that boasts an impressive array of delectable classics direct from Italia, including a nice selection of antipasti, soups, salads, brick oven-baked thin-crust pizza, pasta and more. Yet, what certainly woos any Il Lupino fan, in addition to the cuisine, is its atmosphere, which is relaxed and sophisticated at the same time. The restaurant features indoor and outdoor seating, an alfresco bar, open kitchen and a salumeria. As the first of its kind to bring the Italian tradition of salumeria to the Islands, Il Lupino offers prosciutto, salami and other cured meats as well as Italian cheeses carved fresh at the diner’s request.

This being said, this premier Italian restaurant opens the doors to many prosciutto possibilities. Straight from the deli, enjoy prosciutto in its purest form as its presented to you on a platter and served with olives, and dabs of whole grain and Dijon mustards for $6. Then opt for the antipasti Prosciutto di Parma ($13), in which the prosciutto is nicely complemented with slivers of sweet cantaloupe.

And you haven’t experienced the best of Il Lupino without tasting the superlative pizza, especially Prosciutto Pizza ($16) topped with melt-in-your-mouth slices of Prosciutto di Parma, rucola, fresh tomato and mozzarella shavings. Now, this is divine pizza!

Who or what inspires you as a chef/manager/owner? The fact that cooking is equal parts of science and art. I like the magic of creating a savory dish from ingredients you can pick from your own garden, then making food come to life. It just makes people happy.

This week, Dining Out gets the inside scoops from Eggs ‘n Things’ head cook and kitchen manager Tony Wallace, who gives us a little taste of Eggs ‘n Things and shares just what fuels his culinary drive.

He’s just having an MVP-type of year, and I’d love to cook for him our Egg White Veggie Omelet with Brown Rice to get him ready for the playoffs!

What is your favorite dish on the menu? Why? Strawberry Sour Cream Crepes. Some people don’t like the sourness of this dish, but I just love sweet and sour dishes.

If you could serve food to a celebrity, who would it be and why?

What dish would you serve? Adrian Peterson of the Minnesota Vikings.

Is there a dish that you create that’s not on your menu, but available upon request? Chocolate Haupia Crepes topped with Coconut Flakes.

hile there is always a place for fusion fare, mixing the best of indigents and cooking styles from vastly different locales, you will not find it at Royal Garden. No, what you will find and savor here is the Hong Kong-style of traditional Chinese dishes, such as Peking Duck.

The love of traditional Chinese cooking (and eating) is what inspired owner Calvin Wong, and his brother and head chef Johnny Wong to open the restaurant back in 1984, shortly after Johnny completed culinary training in Hong Kong.

Their concept quickly took off. It wasn’t long before their delicious, highquality food won over the general manager of Ala Moana Hotel, who after frequently dining at their former location on Keaumoku Street, offered them a space in the popular hotel.

Dining Out sat down with Wong to learn more about what makes Royal Garden unique, which dishes we should set our sights on and ways that we can celebrate Chinese New Year.

My brother, Chef Johnny Wong, was trained by a well-known, international chef from Hong Kong. The Hong Kong style is traditional and authentically Chinese — very different from the local Chinese style.

DO: With all the different Chinese restaurants here in Hawaii, what makes Royal Garden stand out from others?

Wong: Royal Garden offers authentic Chinese food prepared Hong Kong style.

DO: Speaking of tradition, in what ways is Royal Garden celebrating Chinese New Year?

Wong: There are many traditional dishes for Chinese New Year, and gau, a mochi rice cake and jai, a

vegetarian dish, are the most popular ones. All of these dishes will be available during Chinese New Year at Royal Garden.

DO: Please tell us a little about the menu. What dishes would you recommend to your customers?

Wong: First I would recommend the Baked Stuffed Top Shell with Seafood ($6.95 per piece).

But for a different flavor I would suggest, the Crispy Tofu Stuffed with Shrimp Paste ($11.95). We also

have a wide selection of dim sum ($3.10 to $3.50) if you want a variety of flavors. Those looking to enjoy a special feast should order the Peking Duck ($50 usually, but 50 percent off with coupon good until the end of Feb). For traditional New Year’s offerings go for gau and jai.

DO: Sounds like you have quite a variety of dishes to choose from. For someone who has yet to dine at Royal Garden, how would you describe the dining concept?

Wong: A lot of the dishes we serve are unique to Royal Garden and different from most of the other Chinese restaurants — dishes like Baked Stuffed Top Shell and Crispy Tofu Stuffed with Shrimp Paste. Another specialty unique to our restaurant is Live Maine

DO: We’d like to know a little bit about the history of your restaurant. When did Royal Garden open its doors and how did the idea for the restaurant come about?

Wong: Royal Garden opened almost 30 years ago, in 1984. We first opened on Keeaumoku Street with my brother Johnny, shortly after he completed training with his teacher. The reason we opened the restaurant is because cooking is my brother’s passion, and he wanted to have his own restaurant. I also am passionate about food, both eating and cooking it, too. We quickly built up our reputation as soon as we opened our doors. A lot of well-known local people would come to our restaurant and have very good compliments for us, including the general manager of Ala Moana Hotel. He was a regular who enjoyed our food so much that he asked if I was interested in opening a Chinese restaurant in his hotel. He had moved Plantation Cafe from the third floor to the ground floor so there was an available space. We took his offer and here we are.

DO: What are some of

the restaurant's most popular dishes?

Wong: Peking Duck ($50, whole) is by far the favorite. Other special favorites are Baked Rock Salt Ranch Chicken ($45) and Live Maine Lobster Royal Garden Style.

DO: These favorites all sound wonderful, but if we are looking for something new to try, what items would you point us to?

Wong: The new items we have on the menu are Short Rib with choice of black pepper sauce or bell pepper with black bean sauce. We also have a new Vegetable Stir Fry with minced garlic, which is a very famous and popular dish from Taiwan. This is a special dish that no other restaurant serves because we have a special request with our local supplier.

DO: Besides your delicious traditional offerings and new menu items, what is the common thing that people love about Royal Garden?

Wong: We always keep up our standard and quality.

We order only good quality food, which we know drives food cost up, but the satisfaction of our customers is more important.

DO: What kind of a crowd does your restaurant draw?

Wong: We have both locals and tourists, but most of our business is from our local repeat clients.

DO: Who is the main

chef at Royal Garden?

Wong: Johnny Wong is the chef and my brother.

Both of us have been working together for more than 30 years. One thing I would like to mention is Johnny enjoys his work, so he is always coming up with new dishes. I think this is very important for a professional chef and something that shows he is very dedicated to his craft and pleasing customers.

DO: Besides your entrees, do you offer any appetizers?

Wong: Yes, we do. Our famous appetizers are Crispy Tofu Stuffed with Shrimp Paste ($11.95), Baked Stuffed Top Shell ($6.95 per piece), Deep Fried Butterfly Shrimp ($19.95) and Drunken Ranch Chicken with Jellyfish ($16.95).

DO: What can we look forward to from Royal Garden in the future?

Wong: We will try our best to serve our customers, and we have confidence that they will keep coming back as long as we can give them good quality food and service.

DO: How would you describe the atmosphere and dining environment at Royal Garden?

Wong: We have five private rooms, which can accommodate anywhere from 10 to 50 people. The atmosphere is relaxed and comfortable. There are orchids around, and the place is clean and spacious.

yle Okumoto loves pizza, so much so that he quit his sheet metal construction job to open Inferno’s Wood Fire Pizza at Ward Centre.

With no culinary background, Okumoto would make pizza from scratch at home for his friends to try, and eventually bought a wood oven which cooks the pizza in just 90 seconds and gives a hint of kiawe wood-smoked flavor to it.

People seemed to like it, and about two years ago he set up a pizza truck along with a portable oven and tent in a parking lot in Kalihi. The response was overwhelmingly positive, and Okumoto could hardly keep up with

the orders.

Last July, the mobile pizzeria found a permanent home in Ward Centre. Each pizza is hand-crafted and prepared with the finest, fresh toppings, and baked in an 800degree kiawe wood fire oven.

The menu features 16 different types of pizza guaranteed to satisfy any appetite.

“We use flour from Italy, and the dough is made fresh every day,” says Okumoto, a 1994 graduate of Roosevelt High School.

“We also try to use as many fresh, local ingredients as we can.

And we have our own brewery with eight orginal beers on tap.”

he way things are going, it’s getting nearly impossible to get an ordinary burger from a food truck. That’s not a criticism. The evolution of mobile restaurants and the menus they feature has turned once basic fare into gourmet food to go. Blue Water Shrimp & Seafood is such an example.

Located on Kapahulu Avenue, a block mauka from Leonard’s Bakery, the simple looking vehicle is turning out food that seems to run counter to its outside appearance. A good example of this is Garlic Shrimp ($6.95).

Lightly floured, the shrimps are sauteed with Blue Water’s famous, and secret, garlic butter sauce, roasted garlic, white wine, seafood stock, cream and lemon juice until they are perfectly done, creamy and wonderfully juicy. Butterflying the shrimp with the shell remaining maintains moisture while providing pukas for the flavorful ingredients to mingle and hide.

is the simpleness of its preparation. It all comes down to salt, pepper, fresh caught fish and the correct serving temperature.

Blue Water serves its salmon medium rare, which is just how it should be done. The fish has a light crisp on the exterior, is fall apart tender and has a fresh, mild flavor that is a result of its simple and quick cooking technique.

Keeping with the fish, Furikake Ahi ($6.95) is another tender and appealing appetizer. Sashimi-grade ahi is lightly marinated in a shoyu/wasabi bath, coated on one side with the furikake mixture and quickly seared to a buttery medium

rare. The exterior is nearly blackened, while the interior remains untouched. Not only does this combination make for great flavor, but also adds an important textural change that is the hallmark of most great recipes.

Unlike many restaurants that bake or boil its lobster, Blue Water coats its 8 ounce lobster tails with salt, pepper and paprika before searing it in white wine, garlic butter, seafood stock and lemon. s its name implies, Five Star International Buffet presents diners with la creme de la creme of all-you-can-eat dining experiences on Oahu. Diners also are encouraged to dive into a bounty of grilled Lobster Tail, which is slathered with lemon butter sauce before it is grilled to perfection.

Occasionally the chef will switch things up by serving it with a smooth French bearnaise sauce as well.

hat’s great about Korean cuisine is … well, just about everything. But what turns on veggie lovers is the healthy variety of chilled pickled vegetables called ban chan that accompanies each meal.

At Korean Hibiscus BBQ in Kaimuki, you can just remove the meat from the meal, making life for vegetarians a whole lot easier.

"We can eliminate the meat from the dish and we can substitute tofu," assures owner Raymond Kodani.

That opens up the menu quite a bit, with mouthwatering results (although Kodani recommends that those who don’t eat meat avoid the soups, since they are all prepared with beef broth).

estled in downtown Honolulu across from the historic Hawaii Theatre, Brasserie Du Vin offers a casual, rustic environment modeled after the inviting cafes and bistros found throughout the French countryside.

In addition to a full indoor bar and seating area, the restaurant features a quiet outdoor patio decorated to resemble a quaint French setting, in which diners can escape the hustle and bustle of the city just steps away.

“It’s very comfortable and quaint, and diners can get lots of small plates to share,” says manager Miki Lee. “We do everything from appetizers, soups, salads to full on entrees and desserts. We tend to be French, but not strictly. We want our food and wine to be accessible — you don’t have to speak another language to

order from the menu.”

Wine also takes center stage at the eatery, as diners can enjoy one of more than 225 selections at Brasserie Du Vin either by the glass or bottle. The restaurant was recognized with Wine Spectator’s magazine’s Award of Excellence in each of the six years it’s been open, and every Tuesday night from 6 p.m. to closing, customers enjoy 50 percent off all wine bottles except for French Champagnes.

Diners can indulge in the restaurant’s full lunch menu, which is available from 11:30 a.m. to 4 p.m. Lee notes that the majority of other restaurants tend to scale down the menu or stop service during the break between the lunch and dinner rushes, but that is not the case at Brasserie Du Vin. Customers also may uti-

lize the complimentary WiFi internet — the perfect tool when getting work done and enjoying a bite to eat.

“If you find yourself out later, and want to come in for a bite to eat after getting some work done, you can come here so you don’t have to settle for fast food,” Lee explains. “It’s comfortable, people come here and hook up to the internet to get some work done while still enjoying a nice lunch.”

Customers rave about Brasserie Du Vin’s Baked Brie ($16), a rich combination of the tasty cheese served warm, stuffed with pecans and dried cranberries, wrapped in golden puff pastry and topped with Dr. Kliks’ Manoa honey. Those searching for seafood can dig into Baked Scallops on the Half Shell ($12) as the mouth-watering morsels are bathed in a roasted red pep-

are topped with basil, olive tapenade and extra virgin olive oil to tie all the flavors together.

A wide flavor profile resides in PanRoasted Jidori Chicken Breast ($19), which is served with ratatouille and a lavender balsamic reduction that also makes a perfect dipping sauce for the freshly-made French bread. For those looking for a vegetarian lunch option, Brasserie Du Vin’s Grilled Portobello ($11) does the trick as the large, tender mushroom is stacked with caramelized onions, melted mozzarella, tomato, arugula, avocado and sauce vert on a freshly-baked croissant. Every Monday, additional vegetarian lunch and dinner specials are available.

And, after indulging in the flavorful lunch lineup, many diners choose to complete the meal by indulging in the restaurant’s Chocolate Soufflé ($10, $13 a la mode). The rich, airy creation is sure to steal the attention of diners as they jostle for each light and fluffy bite.

“A lot of my inspirations include earthy, darker and richer flavor profiles,” explains chef Marco Elder, who worked his way up through a small fine-dining restaurant in Maine before supplementing his repertoire with culinary training from the Art Institute of Colorado. “I do bring a lot of Latin American flavor profiles and I use multiple French cooking techniques and meld those together.”

Elder has been a part of Brasserie Du Vin’s heart of the house staff for five years and was elevated to lead the kitchen roughly a year and a half ago. The skilled culinary artist tantalizes diners’ taste buds with a wide array of French-style soups made fresh daily, including Clam Saffron Chowder ($4 for a cup, $6 for a bowl).

“We have a great Happy hour, and it’s a great way to check us out,” Elder says. “One of our signature items, Baked Brie, is also on our Happy Hour menu, and it’s a good way to get introduced to what we do here.

And, our soups are always winners here.”

ne of the best things about family-style restaurants is being able to sample a little bit of everything. Such is the case with Lobster King, where the open dining room and circular tables with ample seating welcome anyone looking to fix their seafood cravings.

For the next two weeks, or while supplies last, Lobster King will offer a Dungeness Crab Special for only $25.95 (usually priced at $31.95; must present coupon). The restaurant has a variety of sauces it can be prepared with, including black bean, and butter and garlic.

Kim, however, recommends ask-

ing for it to be prepared the way she enjoys it: deep-fried with salt and pepper.

“It’s my favorite, and it’s good because it’s not as messy,” she shares.

Something else the entire family can enjoy: Fresh Live Mussels from Seattle ($19.95). Like many of the restaurant’s other dishes, the mussels can be prepared in any sauce.

“The meat is really tender and sweet,” says Kim. If you’re in the mood for something with a kick, ask for it to be prepared with a Korean-style spicy soup, which Kim says is definitely on the spicy side.

Another favorite Kim recommends: Oyster Sashimi ($16.95 for eight-10 pieces).

You won’t have to worry about not having enough for anyone either, as these oysters are bigger than the average ones served.

Stop in for lunch and enjoy a variety of lunch specials with prices starting at $5.99, or head in for the restaurant’s happy hour, 10 a.m.-3 p.m. daily.

efore opening a restaurant that would soon spawn a successful chain, Wolfgang Zwiener, the founder of Wolfgang’s Steakhouse, was set to retire. After 40 years as head waiter at the famed Peter Luger Steakhouse in New York, Zwiener almost left the restaurant industry. But people began encouraging him to open his own restaurant instead of retiring. Taking with him Peter Luger’s tradition of high-quality meats, Zwiener opened up the first Wolfgang’s Steakhouse on Park Avenue.

According to William Nickerson, general manager of the Waikiki restaurant, things at the Park Avenue location went well from the start. But when The New York Times published an article about the restaurant’s origins — and how the waiter is the boss — things really took off.

“And pretty much from that day on, the restaurant was doing 400 dinners a night,” Nickerson says.

Zwiener soon expanded his venture to include additional locations in New York, as well as Beverly Hills — and then opened the Waikiki restaurant. More recently, Wolfgang’s has opened up a couple more restaurants in New York.

“What separates us from other William Nickerson restaurants here in Hawaii is how often we do our dry aging,” Nickerson says. “Once a week, I order prime beef from Master Purveyors … And they buy the best meat from the Midwest.”

Nickerson explains that the meat will be dry aged for 28 days once it reaches the restaurant.

“What is so unique about the dry-aging process is that it creates condensed marbling because of the evaporation,” Nickerson says.

“Also … it makes for a nice, palatable, soft meat, and it imparts a nice, earthy flavor to the meat as well.”

To get a taste of what Wolfgang’s has to offer, try the Porterhouse For Two ($104.95), which is one menu item that has been particularly popular with customers.

“It offers the best of both worlds,” general manager William Nickerson says. “It offers the sirloin, as well as the

filet. It comes to the table sizzling at 1,600 degrees.”

The sizzling 32-ounce Porterhouse certainly is an impressive sight, and smell — and the flavor of the juicy, tender steak lives up to its appearance.

It is prime, dry-aged beef that has been aged for 28 days.

Wolfgang’s currently is offering one special not on the menu that you don’t want to miss out on: the Seafood Platter ($29.95 for two; price goes up per person after that), which features colossal shrimp, lobster and jumbo lump crab meat.

“It’s a great way to start off any dinner,” Nickerson says.

While Wolfgang’s certainly offers a fine-dining experience, customers on a budget will be happy to know that the restaurant also serves up lunch specials for $10, which were introduced last year.

“These lunch specials allow people to come down to Wolfgang’s and get introduced to the restaurant,” Nickerson says.

One of these is the Lunch Special Burger ($10), a half-pound hamburger with french fries and onion rings.

Lunch specials also include the Tropical Chopped Salad ($10), which is an artful blend of peas, carrots, hearts of palm, avocado, feta cheese, red and green bell peppers mangoes and strawberries — all served over

The special costs $99.95 for two, and will include a choice of appetizer (Caesar salad, mixed greens or lobster bisque, entree (Porterhouse for Two), a choice of sides (creamed spinach or mashed potatoes), and a chocolate cake with vanilla ice cream and raspberry sauce for dessert. The special will be offered Feb. 14 only.

ebruary is creeping up on us and that means its time to welcome in the new year once again — Chinese New Year, that is. Chinese New Year is Feb. 10, and Hee Hing Restaurant in Kapahulu already is raising the bar as far as its menu is concerned.

According to restaurant owner James Lee, patrons can look forward to a slew of contemporary additions (which are now available) to the eatery’s already diverse menu.

“We have incorporated Taiwanese and Shanghainese dishes that we’re very excited about. A few of these dishes took much experimentation until we perfected it,” says Lee. Shanghai Juicy Pork Buns (eight pieces for $6.95) is one of those must-try items that Lee speaks of. Traditionally from Shanghai and Wuxi, Shanghai Juicy Pork Buns feature minced pork wrapped with a thin, smooth flour wrapper, which is pinched at the top prior to steaming.

“The outer skin of the bun has a circular cascade of ripples around the crown,” Lee explains. “After steaming, the bun becomes filled with soup, which is released from the pork filling.”

Presented in a basket, these buns are served with vinegar and ginger for dipping.

Red Braised Beef Noodle ($8.95) is a Taiwanese-inspired entree that also is new to the menu, A delicious noodle soup, this entree consists of red braised beef, bok choy and thin noodles swimming in a rich beef broth topped with Chinese sauerkraut and green onions. Delicious in every sense of the word, Lee says the beef shank and beef brisket are braised in their own stock and sim-

mered for six hours until tender.

“These dishes are perfect for Chinese New Year, and Hee Hing will be celebrating from Feb. 7 to 14,” he states.

Diners can ring in the new year

with the restaurant’s Special Year of the Snake Dinner Menu ($299, feeds 10 people), which presents a bounty of dishes including Salt Baked Roast Chicken, Roast Pork Belly with Steamed Buns, New Year’s “Bounty of the Sea” Soup, Traditional Stuffed Duck, Maine Lobster, Jai and more.

Add gau into the mix for $12 more.

Come Feb. 9 and 10 from 5 to 8:30 p.m. Hee Hing will showcase its Chinese New Year’s Dinner Buffet ($28.95 for adults, $27.95 for seniors and $14.95 for keiki ages 4-12), complete with an international salad station, appetizer station, Black Pepper Prime Rib, Roast Pork, crab legs and more. A lion dance is set to take place at 6:30 p.m. on both days.

In addition, Chinese New Year’s Dim Sum Brunch Buffet ($23.95 for adults, $22.95 for seniors and $11.95 for keiki ages 4-12) will be held from 10 a.m. to 2 p.m. Feb. 10, with a lion dance at noon. However, being that I simply fall headover-heels for every aspect of Italian cuisine makes this task rather simple.

Fully aware of my pursuit for prosciutto, chef Nawai Kekoolani created one of Macaroni Grill’s most popular salads — Warm Spinach and Shrimp Salad ($22). While the name doesn’t give much away, this refreshing salad features fresh spinach sauteed with fennel and roasted garlic, and chef Nawai adds a hint of lemon juice and fresh sea salt for some added flavor.

Prosciutto crisps, a slice of prosciutto, seared scallops and black tiger shrimp round out the dish, which is finally topped off with pine nuts and a sprinkle of Parmesan cheese. Notice that this salad is sans dressing, and for good reason.

“There are so many flavors to this dish that there’s really no need for any dressing,” Kekoolani says. “Prosciutto is cured, so the naturally sweet and salty flavor of

the meat helps to enhance the dish.”

Kit n Kitchen Once again I find myself back at one of my most beloved eateries — Kit n Kitchen.

I just can’t get enough of this place, as Kit n Kitchen owners and husband-and-wife team of Kit and May Yiu have perfected the art of blending European fare with Asian cuisine — both of which are very well respected in the culinary world. May serves as executive chef here and possesses such a talent in the kitchen. Everything she whips up from scratch is beyond

appealing and makes me want to devour everything in sight. Topping my list, in fact, is Kit n Kitchen’s Prosciutto Salad Pizza ($12.95), which features the restaurant’s famous prosciutto salad nestled on a hand-rolled, thin and crispy crust with a creamy sauce. This pizza is obviously a step up from the Prosciutto Salad, but it’s this salad that brings the pizza’s robust flavors to life. Priced at $9.95, Prosciutto Salad spotlights tender pieces of prosciutto and a poached egg atop crisp baby mixed greens tossed with just the right amount of balsamic vinegar. Deliciously healthy!

ith a slew of tasty, aromatic dishes at its disposal, Thai Issan Cuisine has customers clamoring for the authentic Thai and Laotian cuisine. The restaurant has resided in its Market City Shopping Center location for nearly a year, and customers continue coming back for more.

The vast assortment of dishes draws inspiration from the cooking of Issan — the northeast region of Thailand for which the eatery is named — and neighboring Laos.

“It’s the same thing as if you were cooking and eating at home with your family,” says Dokkeo Phommachanh, owner of Thai Issan Cuisine. “The family-style atmosphere really brings out the cooking of Thailand and Laos.”

While Thai food is known for the heat created by a wealth of peppers and spices, Phommachanh explains that diners can choose to order favorite dishes to their

liking, whether it be mild or extremely hot and spicy. She also recommends a host of noodle dishes, and options with yellow curry, which she explains is prepared differently from most restaurants in that it is thicker and more flavorful.

“Most of the people that come in to eat ask for the Laotian-style dishes,” Phommachanh says. “Laotian style dishes are very spicy and tasty. You can really tell the difference.”

One iconic dish available at Thai Issan Cuisine is known appropriately as “King of Chili.” Pad Gar Pao ($8.95) is best described as a “Thai Loco Moco,” and includes a choice of chicken, pork or beef stir-fried with sweet basil, bell peppers and onions served over a bed of rice and topped with an over-easy egg.

Seafood also takes center stage at Thai Issan Cuisine, including Kahuku Shrimp ($11.25). The dish features a plateful of jumbo island shrimp prepared in a sizzling wok with bell peppers, onions and basil, which are then sautéed in a chili and oyster sauce. Similarly, Pad Ped Hoi ($10.95), also known as “Spicy

Clams,” serves up fresh Manila clams tossed with bell peppers, onions and basil in a wok with zesty chili oyster sauce.
