I

n the eyes of a devout food enthusiast, nothing says “Hawaii” more than a festive spread of “ono kine grindz,” including a bowl of sticky poi with a lot of texture, lomi salmon bursting with refreshing flavor, hearty kalua pig and, of course, you gotta have the lau lau! Imagine earthy and rich luau leaves wrapped snugly around morsels of savory pork (on some occasions, seafood) and then steamed to perfection. Lau lau is the most precise definition of “ono, you know.” And when you have good lau lau, you really don’t need all the bells and whistles of certain side dishes to go along with it. But hey, I’m not complaining — bring on another helping of squid luau, chicken long rice and haupia — that’s all just icing on the cake. So, because I’m in deep love with lau lau, this week, it was time to satisfy this craving of mine and delve in to these luscious local creations at the following Ono, You Know establishments. Oh, wow, lau lau … This is the perfect time to unwrap layers of goodness!

cated directly in the heart of Waikiki. The restaurant, which offers breathtaking views of Diamond Head, exudes a casual elegance that is all its own. The staff treats all patrons like guests in their own home, and executive chef Aurelio Garcia takes charge in the kitchen. As I perused the menu during my most

recent visit to Ocean House, general manager David Nagaishi pointed out an entree on the menu that I had never set sights on before. For a unique taste of Hawaii, he highly recommended Seafood Lau Lau. Priced at $33.50, Ocean House’s Seafood Lau Lau is a true testament to the eclectic flavors of the sea — an evolution of lau lau is how I would best describe it. “Lau lau is typically served with pork, but our Seafood Lau Lau is unique, as it consists of fresh mahi mahi, shrimp, seared scallops, purple sweet potato grown on Molokai and authentic luau leaf,” Nagaishi explains. “We sautee our lau lau in a soy sake garlic butter sauce, and this sauce is so tasty — it really brings the dish together.” For the experimentalist, Seafood Lau Lau receives top honor. Finally, the main entree is wrapped nicely in ti leaf and served on a bed of jasmine rice. “Both locals and tourists love this dish,” Nagaishi exclaims. “You have to try it. It’s really good. A

s it continues to live up to its reputation as the ultimate special occasion restaurant, Azure Restaurant at The Royal Hawaiian, A Luxury Collection Resort, serves as the ideal destination for celebrating Valentine’s Day Feb. 14. With the iconic pink palace and picturesque view of Diamond Head serving as backdrops and gentle breezes passing through the open-air setting, diners take in the sights and sounds emanating from the glittering ocean and golden sands of Waikiki Beach while enjoying a host of tantalizing creations prepared by executive chef Jon Matsubara. Visitors from around the world continue to flock to the renowned locale, and local residents are encouraged to make the short trip into Waikiki to enjoy the flavorful foray. “When you come to eat here, you’re sitting in King Kamehameha’s kapu vacation spot, which he cherry-picked back in the day,” explains Matsubara. “You can just sit and relax, and enjoy the sights, sounds and smells. You can’t beat the overall ambiance, especially if the sun is setting and you’re with your loved one, there’s so much to look forward to. We also offer impeccable service to complete the experience.” Matsubara crafted the special fourcourse Valentine’s Day menu ($125 per person, $160 with wine pairing) and coupled the offerings with wines selected by general manager and sommelier Mike Swerdloff with the goal of presenting “really good food and special items” that complement the luxurious setting. Diners start the evening with Chilled Hamachi served with marinated ikura opal shiso,

The entrée course allows diners the option of selecting from one of three tantalizing dishes. The Grilled Prime Rib Steak is served with smoked bacon and sweet corn, Japanese horseradish and crème fraiche potatoes along with a sauce Bordelaise, and is paired with L’aventure Optimus 2010. Those craving seafood are invited to reel in Kona Lobster Linguine with a spiced and roasted lobster sauce, brandy and saffron Thai basil, abalone mushrooms, baby spinach and marinated tomato, which pairs with Qupe Bien Nacido Cuvee 2010. Hawaiian Fresh Fish with Chinese flowering cabbage, Hamakua Coast shiitake mushrooms, Alaskan crab potatoes and an

Japanese horseradish and yuzu, and may pair the appetizer with Taittinger la Francaise champagne. The appetizer is followed by Tiger Prawns served alongside Hamakua Springs tomato, fresh mozzarella, sea beans, Nashi pear and Japanese pickled plum. “The starters offer very familiar flavors, but with a different presentation and a new take on some of the flavor profiles,” Matsubara explains. “We grill the prawns with a garlic marinade and top them with a white wine and butter sauce.”

The flavors are so good that I wanted to showcase it for Valentine’s Day. You can’t go wrong with the steak, and we also offer something lighter with the fresh fish.” And, to complete the evening, the Valentine’s Day feast is capped with a trio of delectable desserts. The sweet sensations include: Mini Pavlovas with Tahitian vanilla-infused whipped cream, marinated Kula strawberries and strawberry sorbet; Waialua Estate chocolate mousse dome with crushed Chambord-marinated raspberries; and Lilikoi Chocolate Tart with passion fruit pearls. The final course is paired with Peter Lehmann Botrytis Semillon 2010. “Azure is a special event restaurant, and this Valentine’s Day menu was created to satisfy the local palate — it’s not complicated, but it’s well-executed food that I really like to eat, and local customers will enjoy,” Matsubara says. Guests are encouraged to reserve their tables for the special Valentine’s Day experience as soon as possible, as the event will undoubtedly sell out.

In addition to the special Valentine’s Day menu, Matsubara dazzles guests at Azure Restaurant with his culinary wizardry on a nightly basis. The acclaimed chef has crafted a menu that features local flavors and ingredients while also incorporating The Royal Hawaiian and Starwood Hotels & Resorts’ mission of incorporating sustainable practices. The dinner menu includes savory seafood selections, such as Smoked Swordfish poached in aromatic duck fat and served with Kahuku Sea Asparagus and Hamakua Tomato ($36) and Kona Lobster ($20), which is paired with Big Island avocado and sauce carotene. Diners also may delve into other chef-recommended entrees, including Crispy Breast of Duck ($36) served with a taro brandy puree, duck fat-charred Brussels sprouts and a port wine gastrique, and Hawaii Ranchers Butter Poached Filet & Foie Gras ($29), which is served alongside Hamakua mushrooms and a black truffle Madeira sauce. “We’re right on the beach, and you are able to watch Waikiki unfold before you,” says Swerdloff. “It’s very romantic, and as beautiful a setting as you can get when the sun is setting. The atmosphere allows you to relax at the end of the day.” Customers are encouraged to take advantage of free validated valet parking at the Royal Hawaiian while dining at Azure.

I

f you’re in search of an exciting new late-night spot, look no further than Don Day Yakiniku, which has been heating up Honolulu’s night crowds with irresistible Korean cuisine since August 2011. Open from 5 p.m. to 2 a.m. daily, the eatery caters to everyone from casual diners looking for a relaxing dinner to those who want to hang out all night. With so many yakiniku restaurants to choose from, Don Day sizzles with unique features 3 that keep it a notch above the rest. Even though it’s situated off the beaten path behind storefronts on 4

Keeaumoku Street, the restaurant stands out as an oasis in a congested area with its spacious outdoor dining lanai in a pleasant garden-like setting. The tables feature durable curved grill tops, which were traditionally used in Korea to soak up flavor from meats and vegetables, while letting any fat drip down the sides. What’s more is that Don Day is the only establishment on the island to offer yakiniku dining outdoors, which alleviates the smokey indoor environment commonly associated with these types of restaurants. Patrons can fire up meat or combination platters at the table and enjoy salad, rice and up to eight side dishes with their meal. Owner Charlene Miura, along with daughter Yuri, who helps out at the restaurant, suggest grilling fermented kim chee as well, a healthy Korean staple. If you’re a grilling pro, you can take hold of the tongs, while a friendly wait staff is ready to help any first-timers. “A lot of people are not familiar with Korean yakiniku style,” says Yuri, “so we’ll go to the table and tell them about each meat. Then we’ll cut it and cook it for them.” In addition to each grilled sensation, Don Day offers a host of delectable a la carte items. Among the most popular dishes are fried or steamed Mandoo ($10.95 for eight pieces), which are filled with minced pork, ground beef, a variety of vegetables, tofu and long rice. Regulars have come to know them as “fat mandoo” because of their notable size — and tastiness. Another must-have is the traditional Kalbichim ($22.95), or double-cooked braised short rib, served with potatoes, carrots and daikon. The meat initially gains flavor when it is slowly cooked for hours. Then, once a customer orders the dish, it’s cooked again for an incredibly rich short rib that falls off the bone. The eatery also is known for its unique selection of soju cocktails in flavors such as cucumber, lemon, yogurt and strawberry. These fun and flavorful sips are the perfect accompaniment to any meal. f you haven’t been to MitsuKen, you’ve been to MitsuKen. By that I mean the longtime Kalihi okazu is like others of the same style, no tables, street-front ordering, good prices and long lines. At least the good ones have long lines, and Mitsu-Ken can have some very long lines. Brad Kaneshiro opened MitsuKen 20 years ago and borrowed the best recipes from friends and family to create a comfortable menu that is as simple as it is tasty. The adobo came from his aunt on Maui, the Maki Sushi from his mother-in-law and the garlic chicken, oh my, the garlic chicken, from a good friend. Evidently a very good friend because the garlic chicken is why people keep coming. Yes, there are other things to try, in fact, many things to try. But to quote an online commentator, “Get the fried garlic chicken. Did you hear that? FRIED GARLIC CHICKEN!” Not convinced? “OH, GARLIC CHICKEN, how I LOVE you!”

Three Bears meal and Goldilocks is the throng of customers who make this a daily habit. It’s not too salty, not too sour and not too sweet. It’s just right. And? My own visit began with the chicken and included the Green Bean and Chicken Stir Fry ($2.15) — yum; Chow Fun ($1.40) — outstanding; and the Maki Sushi ($3.60 for an eight-slice roll or 95 cents each) — huge! Other options may include Stuffed Ahi ($5.50), Teriyaki Meatballs ($1.75), Chicken Katsu ($2) or Nishime ($2). Many of these can be turned into a plate lunch for just a few dollars more. If there is a downside to Mitsu-Ken it is that it closes early. But that’s not really a bad thing. Mitsu-Ken is a family-run restaurant and its hours reflect the availability of the wives and cousins who man the stations. Sherrie Kaneshiro, the bookkeeper, head of human resources, and over all do-it-all, says they have thought about expanding its hours, but the family controls of the family restaurant are too important. But change is coming. Mitsu-Ken is scheduled to open in its new location, 2300 N. King St., across from New City Nissan, Feb. 15. Everything will remain the same except the parking — they’ll have plenty.

A CLOSER LOOK AT THIS WEEK’S HOUSE SPECIAL: TOMATO AND MOZZARELLA SALAD ($12)

T

here’s more to the Tomato and Mozzarella Salad at 3660 on the Rise than meets the eye. This relatively new starter made its debut on the restaurant’s menu about four months ago, and according to chef de cuisine Lydell Leong, this healthy salad has been a hit among dinner patrons, boasting an impressive culmination of flavor profiles that are pleasing to the palate. As the dish’s sole creator, Leong believes it’s essential to highlight local ingredients, which he exquisitely intertwines into the salad with simple elegance.

Color is key when it comes to presentation, so, of course, vibrant red tomatoes are a focal point of the salad. Leong keeps it local utilizing fresh tomatoes from Wow Farm in Waimea on the Big Island.

Micro basil is a prominent component to the dish. Locally sourced, micro basil is basically tiny seedlings of herbs and greens, which provide the perfect taste. According to Leong, micro basil differs from mature basil because it doesn’t give off a strong, pungent aroma. “The taste of micro basil is perfect and sweet, which is why I can add a nice handful of it to the dish. It doesn’t outshine the other delicate flavors in the dish.”

While micro basil is delicious on its own, Leong has decided to toss it with a blend of Kona sea salt and truffle oil. Interesting fact about Kona sea salt is that it's not your average table salt. In fact, it originates from sea water and has a pure and unadulterated taste. It also adds a bit of crunch and texture to the dish, as the granules are of various sizes.

A nice international twist to the salad is found in the proscuitto (salted and drycured ham leg) from Spain.

Cheese, please! Yet, this cheese is nothing like you’ve ever tasted before. It’s housemade truffled mozzarella — something that Leong created on his own. “I used to use plain mozzarella in a lot of my salads, but one day I was thinking why can’t we add things to it? So, I now add diced truffles to this cheese and it is a great enhancement to the salad.”

YAKINIKU MILLION makes it a point to welcome customers as if they are coming home to enjoy a freshly prepared meal with family and friends. As it turns out, the eatery is adept at treating its guest like kin because the restaurant is run by multiple generations of extended family members. Yakiniku Million has been serving up popular traditional Korean dishes out of its convenient Sheridan Street locale since 1989, and offers a wide variety of cuisine. Diners may choose from yakiniku sets, which are prepared on the gas grills located at each table, as well as a slew of side orders, soups, noodle dishes, grilled and fried entrée selections in addition to mixed rice and special plates. “This is a family restaurant, and we’re all involved,” explains manager Diana Paik, one of five siblings that have kept Yakiniku Million going strong for nearly 25 years. “Customers will notice the friendly atmosphere. They are encouraged to order their favorite dishes and share them family-style at the table.” Yakiniku Million features a special lunch menu avail-

able daily from 11 a.m. to 2 p.m. that includes more than 30 popular selections starting at $5 each. Paik recommends Mool Naeng Myun ($7.95 lunch special, $8.95 regular price), a hearty portion of buckwheat black noodles in a chilled special soup. Book A Kook ($8.95 lunch special) is a dried pollock soup with plenty of tasty pieces of fish in an egg broth. “The lunch specials have been very popular, and you receive large portions at reasonable prices,” says Paik. “The buckwheat black noodle soups and dried pollock soup go perfectly with people’s favorite beverages.” Customers also are raving about Yakiniku Million’s Bi Bim Bab ($8.95 lunch special, $10.95 regular price), which features a bowl of mixed rice topped with fresh vegetables and savory barbecue beef. Diners may choose to enjoy the Kal Bi on a sizzling platter with a bed of onions ($23.95), or as a combo with the aforementioned chilled special buckwheat noodle soup ($21 for the combo). Additionally, the short ribs are available in a variety of entrees, including the Kal Bi Plate ($11.95 lunch special, $13.95 regular price) and the hearty Kal Bi, Barbeque Beef and Chicken Plate ($14.95 lunch special, $15.95 regular price). For those looking to get grillin’ yakiniku style, the restaurant offers menu “sets,” which include ample

portions of meat, and also include rice, seaweed soup and a variety of Korean side dishes. The sets are available for $49.95 apiece, and feed two people with a variety of meat options including seasoned short ribs, marinated and seasoned beef, beef brisket, barbecue chicken and shrimp. Diners may also choose from additional meat selections to prepare on the tabletop grills, including Shoyu Marinated Chicken ($23.95), Shrimp ($23.95), Sliced Beef Tongue ($23.95) and Beef Outside Skirts ($25.95). Diners may opt to forego the sets and instead order the individual meat selections to prepare on the grill, and in this case, a minimum of two such orders is required when cooking at the table. “We have a lot of regular customers, and when people come to try our food, they leave happy and keep coming back again,” Paik says. “We’re very thankful to our loyal customers.” Diners can find convenient free parking behind the restaurant, and may park at the metered stalls fronting the eatery as well. Customers are encouraged to call ahead and order their favorite selections to go for the same prices offered on the dine-in menu.

ost mornings, the crew at Larry’s Bakery gets up at 3 a.m. in order to prepare all of the fresh baked goods for the day. Brother-and-sister team of Iris and Lance Yafuso co-own the bakery, and a large part of their dedication comes from the desire to keep their father’s legacy alive. Their father, Larry, opened the bakery in the 1960s. The shop was a huge success then, and has continued to attract new generations of customers. When Larry passed away, the Yafusos’ mother took over the company. The Yafusos have fond memories of working in the bakery after school and during summer breaks as kids. Although Iris went on to attend college and baking school before returning to help out with the family business, her most valuable lessons were learned right here in the bakery.

n many ways, Larry’s Bakery represents an era of bake shops that has gone by. While mom-and-pop shops may have carried similar baked goods in the past, those types of bakeries are hard to come by these days. But luckily for nostalgic dessert enthusiasts, Larry’s Bakery still carries a number of menu items that it had when it opened back in the 1960s. “A lot of the things that we have in the showcase daily are things that we had before,” co-owner Iris Yafuso says. “And a lot of times you don’t see it in other bakeries because these are all my dad’s recipes.” Yafuso’s father is the famed Larry himself — and she says that he was

“We are still using my dad’s old recipes, giving it a flair,” she explains. “But really, a lot of the stuff is just bringing back his old stuff. “A lot of the things that we do bring back tend to attract people who used to come here.” As a family-run establishment, Larry’s Bakery has a tight-knit staff. “We are lucky to have our crew with us. A lot of the crew consists of family or friends, classmates of ours from high school and college,” she states. While Larry’s maintains its foundations, it also embraces change — another trick of the trade that Larry passed down. “I remember one thing that my dad said was, ‘you have to change with the times,’ ” Yafuso says.

The Jelly Roll ($5), which features strawberry jelly rolled with shredded coconut on the outside, is another tasty blast from the past. “The Jelly Roll is really an old recipe,” Yafuso explains. “That was done in the 1960s, and it was so popular.” Today, the treat is especially popular with people who remember it from that era. “People from that generation …

Yafuso says that people have been “going crazy” for Loaf Cake ($6), which includes Pineapple Macadamia Nut, Chocolate and Lilikoi flavors. Yafuso adds that these items also can be purchased for fundraising. Larry’s Bakery has plenty of new items, too. While keeping true to its roots, Larry’s also is up-to-date with current trends, such as decorated cookies and what cartoon character to put on your child’s birthday cake. 3 And when special occasions roll around, Larry’s is always rolling out new items. In honor of Chinese New Year, Larry’s puts an innovative spin on the classic almond cookie with offerings that include the Large Almond Cookie ($3.95), Almond Cookie Takeout Box ($6.95), Almond Chinese Cookie Chinese Envelope ($5.95). 4

Shiro’s Saimin Haven A saimin sanctuary of sorts, Shiro’s Saimin Haven holds the secret to some of

the tastiest noodles I’ve ever tasted, which makes the quality of life just that much better. With more than 60 saimin options to select from, the noodles are made from scratch and the broth is, of course, a secret recipe. Yet, do realize that there are actually close to 200 local creations on the menu, meaning there’s a whole lot more than simply saimin at this Aiea dining establishment. Yes, even lau lau is a given here, and according to manager Bryce Fujimoto, it ranks high among the list of diners’ favorites. “Lau lau started off only as a special, but customers loved it so much that now we make it a point to have it available every day,” he says. Lau Lau with Beef Stew ($9.25) seems to be the most highly requested item, yet Lau Lau with Lomi Salmon ($8.50) and Lau Lau with Kalua Pork ($9.65) don’t fall far behind, and they all are served with hot vegetables and your choice of starch, be it white/brown rice, french fries or mashed potatoes.

And the specials for which lau lau first made a name for itself are still on the menu. If you dine here on Fridays or Saturdays, treat yourself to the Hawaiian Plate with Rice ($9.30) or the Hawaiian Plate with Poi ($10.40). Both Hawaiian Plates boast a slew of local classics, including pork lau lau, chicken long rice, lomi salmon and two scoops of rice or one scoop of rice and poi. I asked Fujimoto what exactly makes Shiro’s lau lau unique and oh, so flavorful, and he eagerly dished the specifics about the top-notch lau lau flair. “What really brings a great taste to our lau lau is the combination of pork butt, pork belly and butterfish. Not many people serve butterfish in their lau lau. Also, the wetland taro brings a nice flavor to the luau leaf,” he shares. he first day of the Chinese New Year (falling on Feb. 10 this year, ushering in the Year of the Snake), is celebrated with rich traditions, festivities and best of all, special menus. Jai, or monk’s food, for example, is eaten on the first day of the new

year to cleanse the body and to honor the Buddhist tradition that nothing living should be killed on that day, ensuring good luck and fortune in the coming year. At Golden Palace Seafood Restaurant in Chinatown, you can enjoy traditional jai any day of the

year (whether or not you think your body needs cleansing) — and for those who don’t eat meat or fish, that’s something to celebrate. “We keep it completely vegetarian,” says manager Gary Lam of Golden Palace’s quite affordable Jai ($6.95), a bowlful of symbolism containing long rice, tofu, mushrooms, snow peas, baby corn, bok choy and carrots among many more savory flavors and textures. Jai isn’t the only “completely vegetarian” dish you’ll discover on the Golden Palace menu. Black Mushrooms with Oyster Sauce ($6.95) is self-explanatory, with those meaty, moist ’shrooms taking the spotlight and served simply on a bed of lettuce. Hmmm, oyster sauce? “Our oyster sauce doesn’t contain any oyster," notes Lam, who

adds that one of his favorite dishes is Garlic Sauce Stir-Fried Chinese Broccoli ($5.95). It’s easy to see (or rather, taste) why, since the garlic adds just the right pungent kick to the crisp-tender broccoli, a cruciferous vegetable that tops the list of super-good-for-you foods. Braised Tofu with Vegetables ($6.75) is a favorite among customers, in which the fried tofu cubes are combined with choi sum, carrots, mushrooms and more. It’s a regular on most Chinese restaurant menus and Golden Palace does it just right. Chinese New Year’s Day comes around only once a year, but you can celebrate a new day every day at Golden Palace.

fter the success of Mamaya’s first location at Ala Moana Center’s Shirokiya food court, it was only a matter of time before owners of the tasty Japanese eatery would expand the business. The time finally came last December when Mamaya launched its second location at Pearl Kai Shopping Center. Loyal customers quickly expressed their appreciation. “Many of our customers would commute to Shirokiya from the west side of the island to eat lunch at Mamaya,” says Kayo Noguchi, Mamaya’s store manager. “Now they can experience the same great meal without traveling far.” The new Mamaya offers the same delicious, local Japanese

dishes as the original location with a few particularly inviting enhancements. Now located within the walls of its own store, the Pearl Kai Mamaya establishment offers significantly more dining space for patrons to sit and enjoy their meal. One of the main features of the new restaurant is its fullblown deli station, which allows customers to create custom bentos. “Our deli items are freshly made each day from the highest quality ingredients,” says division manager Monette Guevarra-Lastino. Side dishes available on the deli line include local favorites such as

Mamaya’s dedication to continually improving the flavor and quality of its menu items has resulted in the creation of several signature ingredients. “We offer a special multi-grain rice chockfull of ingredients such as whole oats, red rice, rye berries for customers who want a healthier rice option without compromising on taste,” says GuevarraLastino.
