C

oo coo for coconuts? Well, given that coconuts are the current rage, I can honestly say that, yes, I am coco-crazy! Let us count the ways in which we love coconuts, shall we? First off, there’s the all-natural, super-hydrating and nutrient-packed coconut water that I’m addicted to. Second, for those who abstain from dairy completely, coconut products make a great replacement for creams and butters. And, of course, we have J-Lo’s absolutely adorable 3-year old twins Max and Emme, which she refers to as “The Coconuts.” OK, so that last one may have been somewhat of a stretch, but come on, coconuts just make everything better!

With that said, this week, nuts for coconuts, I did everything in my power to sink my teeth into this fatty pseudonut — all but climb the coconut tree in my backyard. Instead, I opted to take my appetite to the following Ono, You Know hot spots, which provided a safe haven for all of my coconut cravings!

this time was no different. As soon as I entered this heavenly eatery, located at Ala Moana Center, I was greeted by the sight of extravagant treats and refreshingly tempting drinks. Where was I to even begin? La Maccha, Kona Chocolate Cake, Framboise Fromage — the list goes on. Difficult decision, but someone’s got to do it. Finally, after much thought, I decided to venture off into the crazy world of coconuts. “We have two very special items that highlight coconut, Tropical Fromage and Coconut Cake,” says owner Hiromi Tanaka. A favorite among coconut lovers, Tropical Fromage ($4.20 a piece or $40-$128 for an entire cake) wows your palate with a layer of coconut sponge cake that features a smooth and savory blend of coconut puree and cream cheese mousse. Head pastry chef Akiko Kimura then completes the masterpiece with a layer of tropical fruit mousse (lilikoi flavored) and fresh, vibrant pieces of mango or papaya. Trust me, with the first bite, it really is a taste to behold, encompassing the many exotic flavors of our island home. Then, Tanaka was thrilled to share with me her personal favorite: Coconut Cake ($2.10 a piece). This onolicious treat is the epitome of perfection as it showcases the exquisite harmonization of French flavor and Japanese craftsmanship. Individually wrapped, this miniature cake tickled my taste buds, no doubt about it. The recipe, you may ask? Well, that’s

kept under wraps, but I can tell you that this irresistible butter cake pays tribute to all things coconut with a special mix of coconut liquor and shredded coconut adorned with a dash of powdered sugar to top it off. It’s a coconut frenzy at Patisserie La Palme D’or — even Coco Chanel would be proud of these exquisitely upscale coconut creations. Hee Hing Restaurant There’s the saying, “never judge a book by its cover.” Well, the same holds true in terms of international cuisine: Never judge a restaurant strictly based on its cultural specialties alone. Sure, Hee Hing Restaurant on Kapahulu Avenue serves up the finest in Chinese fare, but believe it or not, this award-winning restaurant also has a few tricks up its sleeves. For instance, on my most recent visit, restaurant director Michael Lee intrigued my senses with Curry Seafood with Fried Haupia. Instantly, I thought, Thai cuisine at a Chinese restaurant? Interesting. But, of course, there was no second guessing once this sweet and zestful curry hit my palate. “Craving curry?” Lee asks. “Well, you’ll be happy to know that Curry Seafood with Fried Haupia ($18) is now being offered on our regular menu. Typically, we serve it only for banquets, but because of its popularity we decided to change that. It’s a yellow curry with a

coconut milk base.” Served family style, this alluring entree presents diners with a variety of critters from the sea, including shrimp, scallop, calamari and fish filet doused in a flavorful curry sauce and mixed with a medley of vegetables consisting of potatoes, peas, carrots, mushrooms and bell peppers. Now, only one word can sum up this dish: Deeelicious! And the pieces of fried haupia simply take this culinary favorite to the next level. “With the addition of the coconut milk the curry is on the sweeter side, and is more mild in terms of spice,” Lee says. So, don’t sweat the small stuff: If you can't handle the heat, you won’t have to worry. – See page 12

ust listing Sarah Espino’s many achievements is a bit overwhelming: She’s the president of IHOP (International House of Pancakes) Hawaii and oversees five booming IHOP establishments including one location on the Big Island, two in Waikiki, one in Windward Mall and another in Pearl City. She’s also a stepmother to five and has a daughter with husband Vince, who is responsible for IHOP Hawaii’s business development. “Time has flown by! We took over the IHOP Hawaii franchise in June 2006,” Espino says. “The journey has been tough, it’s been a lot of work, but it’s also been very fun. I think we opened the restaurants at the right time. When I say I have six kids, it includes the restaurants,” she says with a laugh. As a family-friendly restaurant chain, IHOP does not discriminate when it comes to big appetites and even bigger flavor. In fact, it’s safe to say that the eatery stands in a league of its own, serving up famous delicious entrees and hearty American classics that span way beyond the realm of breakfast. “We feature new specials almost every two months, and offering our patrons what they want is the secret to our success,” Espino says. “It’s really about listening to our customers. We’re consistently changing with the times.” Most recently, IHOP Hawaii unveiled its new 7 for $7 promotion, offering seven great meals all priced at $7 each. During the economic downturn, Espino says, IHOP wanted to offer its guests affordable meals that are available all day, every day until April 1. The lucky seven value options are Bacon-Wrapped Sirloin Steak & Eggs, Chicken & Waffles, Cheesy Western Omelette, Bacon & Cheddar Hash Brown Stack, Hash Brown Crusted Chicken & Biscuit, Nutella Crepes & Eggs and a Simple & Fit Veggie Omelette (under 600 calories). “The most popular choices are Bacon-Wrapped Sirloin Steak & Eggs and Hash Brown Crusted Chicken & Biscuit. hickory-smoked bacon, served with two eggs and golden hash browns. Espino’s personal favorite is Hash Brown Crusted Chicken & Biscuit, a tender, juicy chicken breast coated with IHOP’s crispy signature hash browns. The meal also is accompanied by two eggs and one buttermilk biscuit smothered with country or sausage gravy, where available. “We’ve been receiving a very positive response from this promotion since it’s launched,” Espino says. “Everybody loves it and says they will come back to try the rest of the seven items.” Espino is the woman behind the magic at IHOP Hawaii, and it’s no wonder IHOP is flourishing in every way possible. As an entrepreneur and mother, her superpowers are infinite. On the day of our Dining Out cover shoot (we made it an IHOP day), Espino graciously shared her business philosophy with us, but didn’t let her maternal duties fall to the wayside either. Vince dropped off their 13-yearold daughter Annika to the photo shoot at IHOP Ala Moana after a busy day of school at Punahou. Like all loving moms, Espino greeted her daughter with a kiss and that one famous question all children have become accustomed to: “How was your day?” The interaction between mother and daughter was heartwarming, and Espino says being a mother is her No. 1 priority. After observing the way Espino runs her business, and the short time we spent with her and her daughter, it was quite apparent that Espino is a pro when it comes to balancing motherhood and a demanding career. She instills the same core values of persistence, dedication and hard work into her daughter and into her business. For Espino, these values are the underlying foundation from which success is born. “Annika and I are very, very close. She loves golf and thrives in it. She’s also been competing and has been doing really well. I think the values that we’ve taught her over the years have allowed her to succeed.” Espino also uses her position as president of IHOP Hawaii as a platform to give back to the community. Not only is she committed to providing excellent customer service and serving delicious all-American comfort food, but Espino proves that she’s just as dedicated to bettering the future of Hawaii’s keiki as well. “With IHOP giving back to the community, I hope I’m teaching my daughter how important it is to help others,” she says. And IHOP Hawaii soon will be flipping pancakes galore come Feb. 28 in honor of National Pancake Day. From 7 a.m. to 10 p.m. at IHOP restaurants across the nation (including all four Oahu locations), hungry diners can enjoy a free short stack of IHOP’s famous buttermilk pancakes, and in turn, make a monetary donation to IHOP’s national charity partner, Children’s Miracle Network Hospitals, which helps improve the lives of children at the 170 Network hospitals nationwide. “All of the funds raised here will stay in our state and

benefit Kapiolani Medical Center, Hawaii’s Children’s Miracle Network hospital,” Espino says. “We hope to raise at least $10,000 to support Kapiolani Children’s Miracle Network, and we’re currently accepting donations and will continue to do so until Feb. 28. “Having my daughter exposed to all we do with Children’s Miracle Network, and having her realize how lucky she is to be healthy and not have any medical needs is very important to me. I’m happy to be able to share that with her — to open her eyes and have her realize that you have to be thankful for what you have. And at the same time I hope to instill in my daughter the value of helping other kids in need,” she adds. In addition to IHOP Hawaii’s collaborative effort with Children’s Miracle Network, Espino has founded a program of her own, which she’s named Students Achievement Award Program. The goal? To work with Hawaii’s public schools to acknowledge academic and personal achievements across the board. “The Students Achievement Award program is my ongoing project that I launched this month,” Espino explains, noting that the initial participating schools include Ali’Iolani, Gustav Webling, Pearl Harbor, Waialua, Laie and Maunawili elementary schools. “Schools right now have very limited budgets, so now I present student achievement awards to teachers at their discretion. For example, the awards can be awarded to the student (kindergarten through eighth grade) who scored the highest on a test or had complete attendance. The award equates to a free kid’s meal at IHOP — we have a variety of kid’s meals, from chicken strips to an omelette, mac and cheese and more. “Education is very, very important,” Espino adds. “I think it’s the only thing that I can give to my children that can’t be taken away. I can buy my daughter a car, but someone can take that away from her. Unlike education, that’s something ingrained in her, and she'll always have it. Education is top priority for me.” According to Espino, Annika already has her eyes set on college and may perhaps follow in her mother’s footsteps and pursue business one day. “I would love for someone to take over IHOP Hawaii when I retire, and there’s always hope that one of your children will, but I’m not going to force Annika. One thing I always tell her is that you have to choose a career you absolutely love.” As for Espino, she’s witnessed the ups and downs of running a business firsthand, but through it all she’s maintained a vivacious appetite for success. “We have 250 employees total, and knowing that I can provide jobs to a great number of people is very rewarding, along with providing good service and excellent food,” she says. “However, along with the good times also comes the tough times, and you just have to bear it and stick with it.”

escribing the appetizers at Bangkok Chef is not easy. It’s difficult to dawdle over slight flavor profiles when you are inhaling food at a rate that would make Joey Chestnut proud. Call it an occupational hazard. But if you’ve tried them you know what I mean. Chicken Sateh ($7.90) is served with lettuce, sliced cucumbers and one of the greatest dips in culinary history, a creamy and very slightly spicy peanut sauce. By the time the bowl of brown heaven was empty, I had eaten every barbecued skewer, the veggies and two or three napkins.

that just seems necessary in any good Thai restaurant, and Bangkok Chef is a very good restaurant. This family-run eatery has many menu items that let you mix sweet with salty or sour with spicy — combine all four and you have Mango Salad ($8.20). Made with shredded mango, carrots, shallot, Chinese parsley, chili peppers and cashews in the eatery’s house-special sauce, the dish is both satisfying and refreshing. It’s listed as “spicy” on the menu, but the fresh ingredients reduce the kick and allow the flavors to blossom.

The food is fine-dining quality but in a more relaxed setting.” The establishment also is available for private parties and can accommodate 20 to 200 people for lunch or dinner. The awardwinning restaurant is a popular choice for special occasions, such as Easter Sunday and Mother’s Day brunch buffet, as well as everyday dining. Lovin’ Larry’s Bakery By Alana Folen

T

he simple moments in life are sometimes the sweetest, and that definitely holds true when devouring some of Larry’s Bakery’s sugary delights. This one-stop bakery on Lawehana Street has everything you need to satisfy your sweet tooth. Brother-and-sister team of Lance and Iris Yafuso oversee this family-run business and work day in and day out to whip up favorites such as doughnuts, cookies, brownies, cakes and more. “We’ve been really busy, but we can’t complain,� Iris says with a smile. “Right now we’re ready for the Super Bowl. Our baked goods even pay tribute to the different teams!� Yet, she took time out of her hectic schedule to share with Dining Out a few of Larry’s classics that seem to fly off the shelves on a daily basis: Chocolate Fudge Cake ($12.50), Apple Stick ($1.40) and Coconut Stick ($1.40). Chocolate Fudge Cake is simply divine and features an original chocolate cake smothered with an old-fashioned fudge frosting. Chocolate lovers rejoice! “This cake is actually derived from my dad’s recipe,� Iris recalls. “It’s a non-refrigerated cake and it has a little crust over the edge — it’s just really delicious! The cake also is available in different sizes. Just call beforehand to place an order.� On the go? Apple and Coconut Sticks are the answer when time is of the essence, but you still need that quick sugar rush. “Apple and Coconut sticks are very popular.

They’re similar to a turnover and always baked fresh,� Iris says. “Both sticks have a puffpastry exterior, and one is filled with a sweet Fuji apple filling and has a hint of cinnamon, while the other is filled with coconut and sprinkled with sugar,� she adds. n his 26 years working in the Hawaii restaurant industry, Armando Bauzon has done it all. From fast food to fine dining, the 51-year-old has accumulated a wealth of experience that he brings to the table as manager of Ho Ho Chinese Cuisine, a buffet-style eatery in Kapolei. Bauzon’s presence can be felt immediately as one enters the dining room, as he and his friendly staff greet and assist diners. Customer service is key, and is one of the major factors behind the restaurant’s strong following of loyal customers. In addition to its popular buffet, Ho Ho also offers a vast Party Tray menu for those planning a special event or get together and can accommodate parties of up to 200 in the dining room. Bauzon encourages customers

to call ahead for large party reservations as special group discounts are available for the buffet and individual dishes. Ho Ho’s buffet makes it easy for groups, as the food stays hot and fresh as diners arrive. “We can do anything,” says Bauzon when describing the options afforded customers when planning a private party or special event. “Customers can call and ask for me, and I can help them through the process. We’re very flexible, and can accommodate a wide variety of budgets and customer needs.” When catering a party, customers can choose from Ho Ho’s vast selection of party trays that serve anywhere from eight to 10 people with a small tray up to 50-75 via the jumbo size dish. Gon Lo Mein ($18.95 for a small tray) is a very popular noodle dish

while Beef with Broccoli ($27.95 for a small tray) has customers clamoring for more. Ho Ho also is offering free delivery for catering orders of $125 or more to those residing in Kapolei, Ewa and Waipahu (those in other areas will be charged a nominal delivery fee). At Ho Ho’s Chinese Cuisine in Kapolei, authentic Chinese food is merged with local-style preparation, and customers can choose from numerous selections served up on the allyou-can-eat buffet, or order specific favorites a la carte. The eatery, which gets its name from the Cantonese phrase for “very good” or “nice,” is well known for its Salt and Pepper Shrimp. According to owner Crystal Chan, the recipe consists of a signature blend of spices and seasonings that are infused with the succulent seafood as it

is deep-fried to crispy perfection. “It’s been the most popular since we opened in 2004,” says Chan of the salt-and-pepper style that also incorporates garlic and other flavorful accents surrounding the deep-fried delicacies. “The customers like it very much. They don’t want us to change!” Shrimp and snow crab headline Ho Ho’s dinner buffet, which gets under way nightly at 5 p.m. The spread features a wide range of selections including the extremely popular Fried Chicken Wings, Honey Walnut Shrimp and Stir Fry Steak, and is priced at an economical $15.95 Monday through Thursday nights, and $17.95 Friday through Sunday evenings. Additionally, selected items are available on Ho Ho’s lunch buffet served from 10 a.m. to 2:30 p.m.

menu, with favorites from the buffet as well as a host of other dishes including everything from Roasted Duck ($9.95 for half, $19.95 whole) to an assortment of noodle plates such as Mixed Seafood Chow Min with Vegetables ($8.95) and Oyster Sauce Chicken Chow Mein ($7.50). And, for those looking for a quick bite in the morning, Ho Ho’s opens at 6 Monday through Saturday, and 8 Sundays, and offers an assortment of freshly-made Manapua. “Coconut is pretty influential in Chinese cuisine, but I wouldn’t say it’s a main ingredient — it’s typically used as a type of garnish,” he adds. “Here in Hawaii we use the addition of coconut to incorporate an island flair into Chinese cuisine.” Now, if you choose to end your meal on a sweet note, I would recommend opting for a traditional Chinese dessert of Coconut Jin Dui. ($2.60 for three pieces). Coconut Jin Dui can best be described as a deep-fried sesame ball doughnut, and is a longtime favorite of mine. “When it comes to jin dui, the exterior is crispy and garnished with sesame seeds, while the interior is soft, airy and hollow,” Lee says. “The coconut is found in the skin itself, and we make this dessert fresh every day.” Want more? Executive chef and owner JJ Luangkhot’s award-winning cuisine, decked out in a sweet Euro-Asian flair, is enough to make any heart melt. Though Genki Sushi made Kapahulu its original home in 1992, the franchise was actually founded by a Japanese company, Genroku Sushi, which had opened the first kaiten-style shop. Genki’s director of purchasing, David Moon, says the initial concept grew from the desire to provide affordable sushi to everybody, in a convenient and fun way. She explains that Saigon Pearl puts a little spin on the dish by using minced chicken instead of pork. For a tasty meal, try Spring Rolls & BBQ Chicken Noodle Salad ($9.50). Foodies who can’t get enough pho have to try Saigon Pearl’s. Pho is beef noodle soup that comes with a variety of meat and vegetables. All of the establishment’s pho dishes are served with white rice noodles with beef broth, sliced onions, green onions, cilantro, bean sprouts, basil, lemon wedges and green chili peppers. Options include Chicken Breast ($7.50 for a medium, $8.50 for a large) and Combination ($7.95 for a medium, $8.95 for a large), which comes with beef, meatball 1 brisket, tendon and tripe. “Pho is very popular right now,” McDowell says, “and people love our pho dishes.” While former customers of Annam House certainly can find all of their past favorites at Saigon Pearl, the new location also brings some new dishes with it. “We have created some new dishes for Saigon Pearl,” McDowell says. “We noticed that local people like oxtail a lot. So we created Spicy Oxtail Noodle Soup ($11.95). It has become very popular.” Vietnamese Crepe ($10.95), an appetizer, is another new dish. “It’s really good,” McDowell says. “It’s a thin layer of flour, and it’s crispy. or those of you who are wondering what ever happened to Vietnamese eatery Annam House, your search is over. The same folks who ran the old place — owner Mai McDowell and her brothers — have opened up shop again at a new location and under a new name. The new Saigon Pearl can be found near Ala Moana Center on Kona Street. Fans of Annam, don’t worry — Saigon Pearl still offers the same quality traditional homestyle Vietnamese cuisine. McDowell says popular dishes include Won Ton Mein ($8.95), Green Papaya Salad ($.8.95) and BBQ Combo ($12.95), which is a rice plate served with barbecue chicken, pork chop and lemongrass short ribs. aigon Pearl may have just opened at its Kona Street location in August, but this place certainly has a long history. When owner Mai McDowell and her brothers, who are the chefs, opened Annam House in 1982, it was one of the first Vietnamese restaurants on the island. Operating under the name Annam House for years, the restaurateurs earned quite a following of loyal customers. McDowell decided to rename the restaurant Saigon Pearl when the restaurant changed locations last year. “Saigon is the place in Vietnam where people love to eat out at restaurants,” McDowell explains. “There is so much different food there. And people call Saigon ‘The Pearl of East Asia.’” Offering homestyle cooking, Saigon Pearl chefs learned their craft from their family's home cooking. Owner Mai McDowell “My grandmother is with a couple of Saigon the one who taught us Pearl’s appetizing to cook,” McDowell entrees. says. “My brother learned all the recipes and everything from her.” McDowell adds that many customers who used to frequent Annam might not know about Saigon Pearl. “We have a lot of followers. When people come in here just by chance and they remember us from Annam, they get so excited. They are so happy that we have reopened in a new location.”

hen asked what makes Nuuanu Okazuya unique from other local okazuyas, owner Mark Kitagawa mentions the food … along with other characteristics of the homey eatery. “We’re open seven days a week and we take plastic — Visa, Mastercard and debit cards,” Kitagawa says. “We also specialize in fishcakes.” Established by the Nagamine family about 30 years ago, Nuuanu Okazuya is well known for its local and Japanese “comfort food,” according to Kitagawa, who was born and raised in Hawaii and has been in the food and beverage industry for more than 20 years. “I noticed a decline in okazuyas (Japanese delicatessens) in Honolulu that I grew up with and I wanted to keep that tradition going,” he says of his motivation to partner with the Nagamines in 2007. “We feature food that I grew up with.” Nuuanu Okazuya provides customers with a wide-ranging menu, which can be found on the eatery’s website, nuuanuokazuya.com. However, manager Johnathan Mosley notes that not all items listed are made daily. “Our menu gives you an idea of the extent of what we cook,” he says. “On any given day, you’ll see some of that, but it’s not necessarily the same

day after day.” In addition to its variety of fishcakes — available with ingredients such as salmon ($1.25), shrimp and onion ($1.25) and vegetable ($1) — Nuuanu Okazuya also is known for its Furikake Chicken Katsu ($3.50), Kobu Maki ($2.15) and Andagi (prices vary). “I have 80-plus flavors of andagi that I make,” says Mosley, referring to choices such as German Chocolate, Macadamia Nut and Li Hing Mui. “Johnathan constantly makes new flavors of andagi,” adds Kitagawa. Andadog ($1) — similar to a corn dog — is another customer favorite. “Andadog comes in three options: spicy, sweet mustard or traditional,” Mosley says. Musubis also are ordered frequently at the eatery, which provides traditional Spam ($1.50) and nori (80 cents) musubis, as well as more unique creations, including the ever-popular Shrimp Tempura Musubi ($2.15) and Fried Rice Musubi ($1.25). “Right now, we have three flavors (for our Shrimp Tempura Musubis) — sweet chili, sweet mustard and teri miso,” Kitagawa says. Other customer favorites are the eatery’s saimin — available in small ($4) and large ($4.75) sizes — as well as Kimpira Gobo ($2.50).

The majority of items on Nuuanu Okazuya’s menu are a la carte, with the exception of Daily Bento ($6), which comes with rice, an omelet, Spam, Big Island Portuguese sausage, fish, furikake chicken and Kabocha pumpkin slice or Kimpira Gobo. Kitagawa says that individuals also have the option of ordering custom bentos. Plate specials ($7.85) — featuring mac salad, two scoops of rice and a choice of entrées such as Curry Chicken Katsu, Hamburger Steak and Teriyaki Beef — are available as well. No meal is complete without dessert, and Kitagawa notes that the eatery provides unique choices for its customers. “We have Lilikoi Bars, Lemon Bars, Carrot Cupcakes, Energy Bars and Assorted Cookies,” he states. “They all come from my cousin on the Big Island, so you won’t be able to find these here in Honolulu. Energy Bars are extremely popular.” These desserts, which aren’t listed on the eatery’s menu, cost about $5. Most of the orders at Nuuanu Okazuya are takeout, according to Kitagawa, who says that catering orders are available. “We have a small catering menu listed on our website, but if customers want to do a small catering function, we work with them, as far as what they want on the menu,” he says.
