H

appy Sunday, Ono readers! Steve Jobs wasn’t the only one to think up creative Apple products. In fact, bakers for centuries have been baking up a storm producing apple turnovers, apple pies, apple tarts and more. Mott’s is the leading producer of healthy apple sauce and fruit juices, and apples in general have been the highlight of many other culinary creations. With this said, you really can’t go wrong with apples, which is why they’re one of my most favorite fruits. And although it’s believed that “one bad apple spoils the bunch,” that’s definitely not the case when it comes to these following Ono, You Know establishments, as they are one of a kind and the apple of my eye! Go ahead, read on, and let the exquisite apple fare captivate your taste buds.

years ago, and four locations later, BCD, as I affectionately call it, has risen to the top in the world of diners. On my most recent visit to the Pearlridge eatery this past week, it was raining cats and dogs, keeping to the rhythm of booming thunder. Cold and soaking wet (silly me, forgot my umbrella), all I wanted at this point was warm and gooey apple delights. While in the midst of this cold and gray weather, my adoration for a good old fashioned apple pie surmounted everything else in sight. Thank goodness, BCD’s Rustic Apple Pie a la Mode ($6.99) came to my rescue. This tried and true favorite of mine can best be described as a deconstructed apple pie, complete with pieces

of puff pastry, a sinfully sweet apple filling, morsels of raisins and last but not least, a scoop of Bubbie’s vanilla bean ice cream and whipped cream! Can we say amazing?! Now, if that doesn’t win you over, Chef Dennis Franks knows what will. How about BCD’s Murphy’s Apple Pancakes ($9.99) and Apple French Toast ($7.99)? Trust me, no matter how bad the storm, these breakfast favorites are bound to sprinkle a little bit of sunshine into your life. Murphy’s Apple Pancakes features three gigantic, fluffy pancakes adorned with a homemade apple topping, whipped cream and a dash of cinnamon zest. Apple French Toast wows early risers with its warm and savory apple filling as well, and as a new special on the menu, it’s definitely worth trying. Although it's supposedly only available on certain days, Chef Dennis let me in on a little secret. “Guests can request Apple French Toast as an off-the-menu option and we’ll gladly prepare it for them,” he says with a smile. “The homemade apple filling is what makes the dish — it’s comprised of Granny Smith apples, cinnamon and a hint of lemon zest. Fendu Boulangerie Continuing on my wet and dreary jour-

ney, the skies may have been gloomy, but my spirits weren’t dampened as I headed into my hometown of Manoa Valley where the temperature is always noticeably cooler. Fendu Boulangerie in Manoa Marketplace never ceases to put a smile on my face with its array of fresh breads, pizzas, sandwiches, pastries and more, and owner and chef Niel Koep whips up quite a few “applelicious” favorites. My top pick? Most definitely Fendu’s Fuji Apple Danish ($2.25 each), filled to the brim with Koep’s remarkable apple filling and topped with sweet powdered sugar. – See page 12

Your traditional all-youcan-eat buffet concept soared to elite status when Five Star International Buffet was first conceived in Hokkaido, Japan, in 2003. Today, you’ll find three additional locations in Hokkaido and one tucked away on the third level of Building C at Royal Hawaiian Center in Waikiki. As the first location outside of Japan, the company’s founder Noriyuki Kato couldn’t imagine a better place to share his revolutionary buffet concept. Without a doubt it was the perfect fit: Take Kato’s devout love for the islands, Hawaii’s diverse melting pot of cultures, and add to that Kato’s five-star cuisine and you get the pinnacle of perfection. Dining Out recently paid a visit to Hawaii’s own Five Star International Buffet, where we met with manager Tina Giessman and sous chef Lock Beth Eguchi amid an

inviting atmosphere, brilliant décor and an impressive buffet line complete with lavish works of edible art — a full bar and Happy Hour are just icing on the cake. So with that, take in and savor everything that is Five Star International Buffet.

DO: Five Star International Buffet recently opened its doors to Hawaii’s dining scene this past December, and has already gained a dynamic following of both locals and tourists. What is it exactly that has been drawing in packs of hungry diners? Giessman: We’re not your typical, standard buffet. Sometimes with buffets, people tend to assume that you get mediocre food and neglected service, but we wanted to be way above that and stand out on our own. The big focus for us is quality of food, and with that several of our products are locally grown or locally raised. Also, with our front-of-thehouse service, we wanted it to be as if our guests were eating at a full-service restaurant, so as soon as they’re seated we want to make sure we’re conversing with them — whether our guests are locals or tourists, we want them to feel as if they are at home. Eguchi: Presentation is what definitely sets us apart from other buffets. We’re constantly putting out fresh new dishes.

DO: The buffet line is superb and offers 40 to 50 dishes on a regular basis. What can guests expect from this one-of-a-kind international buffet? Giessman: When diners walk in to the buffet line, it’s not your typical setup

As far as discounts, we do offer 15 percent off during dinner only for kamaaina, seniors 60 and over and military. Just recently we also began serving our dinner buffet all day on the weekends.

Giessman: Our all-you-can-eat lunch buffet costs $19 for adults,

DO: What has the response been like from customers? Does it differ between locals and tourists? Giessman: No, not at all. The response has been excellent! We’ve had Australian visitors say that we need to open an establishment in Australia. Then we have Japanese clientele who are already familiar with Five Star and they love it! The locals love the food here as well. Our restaurant (which seats 145 people) can get extremely packed, so it’s good to make reservations. DO: Five Star International Buffet is open for lunch and dinner. What are some standout items in the buffet line? Eguchi: The eclectic dishes that we have here definitely stand out — a lighter fare for lunch and heartier dishes for dinner. We have a washoku section to our buffet, which features Japanese dishes that

were created and brought in from Hokkaido, Japan. Then we have an American-International aspect to our buffet, which presents many other dishes such as mac and cheese, loco moco, Thai curry, Japanese curry, pastas and more. Top items off our buffet include Chawanmushi, Ribeye Teppan, Bacon-Wrapped Filet Mignon, Kakuni Pork Belly and Bouillabaisse. DO: Fantastic! Please elaborate on some of these dishes. Eguchi: Yes. Bouillabaisse is served as part of our dinner buffet. It is a seafood medley with mussels, clams, fish and sometimes crab doused in a soup marseille (seafood stock). Kakuni Pork Belly also is offered during dinner and showcases tender pork belly dressed with a flavorful sauce comprised of soy, honey and brown sugar, and accompanied by fresh spears of asparagus. However, Bacon-wrapped Filet Mignon with a red wine reduction sauce and garnished with red and green bell peppers, onions and Hamakua Alii mushrooms is one of our dinner favorites. Chawanmushi is a popular Japanese dish that we serve in our lunch buffet. It’s a savory egg custard and there’s always a special chestnut added to the dish, which gives a hint of sweetness and another level of complexity. There’s soy in the dish as well, resulting in a perfect blend of sweet and salty.

DO: When it comes to Five Star International Buffet, what are your hopes for the future? Giessman: We hope to offer more decadent seafood options, such as all-you-can-eat lobster tails and crab legs because that’s what locals have been requesting. Besides that, we also hope to expand in the future.

Hong Kong-style cafe concept is one that has generated much success for husband-and-wife team Ken and Cindy Wong. As owners of Anytime Cafe in Market City Shopping Center, this dynamic duo has cultivated the impeccable tastes of Eurasian cuisine, melding an enticing blend of East meets West. Having opened its doors in February 2010, this wellestablished eatery has gained quite a following in a short span of two years. “There are so many popular things on our menu,” Cindy says, “but Shrimp Risotto and

Chicken Parmesan are two that really stand out.” Shrimp Risotto is priced at $12.95 and presents seafood enthusiasts with morsels of shrimp and bay shrimp simmered in a pink tomato broth atop a bed of creamy risotto, and finished off with a hint of fresh basil and garlic. “What’s special about our risotto is that it’s imported directly from Italy, and a lot of customers notice a difference in taste,” she adds. Cindy and her husband previously owned Banana Leaf Italian Bistro and Hong Kong Orchid Cafe. The same goes for the restaurant’s fresh spaghettini, Shrimp Risotto ($12.95)

which also finds its origins in Italy and is featured in Anytime Cafe’s Chicken Parmesan ($10.50). This highly requested dish wins over diners every time with its lightly breaded boneless chicken breast doused with tomato sauce, and topped with melted mozzarella and Parmesan cheese served over a helping of homemade spaghettini. “It’s surprising, but a lot of kids really like this dish too,” Cindy states. “It’s even my son’s favorite.” Besides crafting their skill in Italian cuisine, Anytime Cafe’s talented chefs knows a thing or two about Hong Know-style favorites and local dishes as well. And although the wide assortment of dishes here can be a bit mind-boggling to some, Cindy says, patrons can be on the lookout for new items in the near future. “I’m planning a trip to Hong Kong soon, and I hope to return with some new ideas and concepts.”

ortunately, Hawaii doesn’t experience Mainland-style winters, and local weather patterns aren’t usually as dramatic as they were this past week. But when giant blessings do fall, there is nothing like cozying up with a cup of soup and a sandwich as the water continues to trickle down. To take shelter from the rain, Dining Out stopped by Kissaten Coffee Bar, where a delicious menu of upscale comfort food boasts wonderfully warm soup and sandwich combos. Raindrop-covered windows let evening blue light into the cozy cafe while bluesy sounds streamed from the radio. This was the perfect corner of the Island to escape stormy weather and indulge in a Grilled Cheese

and Tomato Bisque Soup Combo ($9). Perhaps the most comforting sandwich of all time, the 24-hour eatery’s version is made with smoked Gouda, Cheddar, bacon and refreshing slices of fresh apple nestled between crispy pieces of white bread. “The grilled cheese pairs really well with the Tomato Bisque,” says senior partner Neysa Taba, who loves the creamy and subtly sweet soup drizzled with housemade basil oil and sprinkled with Parmesan. Another velvety combination is Turkey Pesto Melt and Potato Leek Soup ($10). When it comes to the traditionally French soup, “We add a poached egg inside for richness,” explains Taba. garnish the rustic blend, but also tie into the flavors of the melt, filled with homemade pesto aioli, turkey, bacon and fresh mozzarel-

While the soup is magnificently rich and filling on its own, you owe it to yourself to include the bread bowl ($2 extra) for a crispy, baked-toorder shell. In an effort to promote sustainability in Hawaii and become a responsible business that takes steps to “go green,” Zippy’s has a great promotion where customers can enter to win a home solar system valued at $15,000 or one of three bicycles valued up to $700. Receive an entry form with any purchase including the delicious Sweet & Sour Boneless Chicken ($7.25 takeout, $8.35 restaurant). The promotion runs until March 31. (Note: prices in Kahului, Maui are slightly higher.) According to Zippy’s marketing manager Jeanine MamiyaKalahiki, this initiative will help support and take care of the community, as well as the environment. Zippy’s also uses earth-friendly materials for packaging. Last year, the eatery also made some changes to the takeout containers. Now, takeout containers are made from Type 5 recyclable and microwaveable plastic, so you can reuse it over and over again. Locally grown beef is becoming a desired trait in restaurant dishes, and Zippy’s has a great Hamburger Steak plate ($7.95 takeout, $9.15

restaurant) that will leave you satisfied and happy. As one of the Zippy’s favorites, Hamburger Steak is made with local beef, and served with grilled onions and gravy on the side. This local establishment does all it can to cater to those in the community. Lent is upon us, and Zippy’s has Lent-friendly menu options on Fridays. Spaghetti alla Verdura ($6.95 takeout, $7.95 restaurant) is made with a vegetarian “meat” sauce that includes quinoa, okara and lentils. There is also Tempura Cod Plate ($11.95 restaurant only) served with white or brown rice, mashed potatoes or french fries. Lent specials are available from 10:30 a.m. while supplies last and run until Good Friday, April 6. “It’s just something different to add to our menu,” says Mamiya-Kalahiki. “We felt that they were healthier options, and it adds variety.” If you’re craving a healthy meal, Zippy’s also has a fresh Calamari & Shrimp Salad ($10.95 restaurant only) made with Nalo greens, saimin noodles, carrots,

March is National Red Cross Month and Zippy’s is supporting the American Red Cross Hawaii chapter. At Seafood Village, the titles of the dishes on its extensive menu are in English, but the descriptions are all in Chinese characters. But whether or not you can read Chinese, the friendly, professional staff is more than happy to help you seek out a meal that meets your dietary preferences. Steve Matsuno, executive general manager of the enterprise located in Hyatt Regency Waikiki, knows that the stars shine on everyone, not just carnivores.

t can be comforting to think of a fresh warm pastry, muffin or doughnut to complement your coffee or tea in the morning. There was a time when those delicious breakfast treats were all made by the baker’s hands. The baker was up and at ’em by 3 a.m. to make sure

you and your family were greeted with your morning favorites. Iris Yafuso, vice president of Larry’s Bakery, and her family carry on the wholesome baking tradition in the name of their father, Larry. After Larry’s passing, the retail side of the bakery, which was located in Waimalu, closed, 1 but it wasn’t long before daughter Iris and brother Lance Yafuso took it upon themselves to start that side of the family business once again. “We were closed as far as retail for almost 14 years, but have been able to reconnect with all our old customers and friends

The long, flat noodles are complemented by crisp-tender mung bean sprouts and earthy shiitakes stir-fried in a very light shoyu sauce, which leaves the noodles pleasingly al dente. This is a dry-fried, not saucy dish, allowing the individual flavors to shine through. So don’t space out on the name. Just set a course for Seafood Village.

Ramen Keeps Customers Coming Back

ith all this cold, stormy weather we’ve been having, nothing sounds better than warming up with a hot bowl of ramen. After opening last month, Nagoya Ramen in Mililani is just in time 2 to provide some muchneeded warmth on these cold days. “Everybody says the food is good,” Nagoya Ramen secretary Sue Chen says. “We have so many regular customers right now. After they come eat, they keep coming back.” It’s easy to see what keeps customers returning. Nagoya Ramen offers a wide selection of udon, fried noodles, fried rice, curry and of course, ramen. Chen says that one of

the most popular dishes is the house special, Nagoya Ramen ($8.75). “It has everything,” Chen explains. “It has chicken katsu, char siu, egg, fishcake

and seaweed.” Other ramen options include Char Siu Ramen ($6.50 regular; $4.25 mini), Wonton Ramen ($6.50) and Seafood Ramen ($7.75). While the restaurant’s ramen certainly is one of its main draws, it would be a mistake to overlook the rest of the menu. “So many people like the curry,” Chen says. “Everybody says the curry is very delicious.” Curry dishes include Beef Stew Curry Rice ($7.25 regular; $5.25

And as restaurant secretary Sue Chen explains, many customers already seem to be making Nagoya Ramen their new second with Nagoya home. Owner Steven Lin Ramen. Chen attributes much of Nagoya Ramen’s success to the creativity that owner and head chef Steven Lin puts into his cuisine. One thing that sets the restaurant apart is its broth, which is Lin’s original creation. Lin explains that he has concocted a special Paitan-based sauce that he includes in the ramen broth. The Paitan sauce is the one that Nagoya uses in most of its ramen dishes, but diners also can opt to substitute the broth for other flavors, including miso, shoyu or shio. Lin has been cooking ramen for more than 10 years. He says that during that time he cultivated a knowledge of customer tastes and preferences. “We know what the customers like, and we wanted to open a (restaurant) for the customers that has food that is good and prices that are reasonable,” Lin says. If customers want to share Nagoya Ramen’s tasty cuisine with their family and friends, the restaurant also offers party platters available for takeout. Party Platters cost $19.99 per order, and Chen says that each can feed about eight to 10 people. t Panda Cuisine, it’s all about seafood. Ever since new owner John Liang took over Panda Cuisine this past year, the restaurant has been emphasizing its plethora of seafood entrées.

The eatery, which first opened in 1992, offers customers a variety of items on its menu, including barbecue specialties, Cantonese-style dishes, and poultry and meat dishes. However, according to manager Daniel Kung, many customers come to the restaurant because of the fresh seafood. “We try to serve the best seafood (in Hawaii),” he says of the eatery, located on Keeaumoku Street across from Walmart and Sam’s Club. “The most popular (dishes) is seafood … we have fresh lobster, crab, king crab and fresh, live abalone (shellfish).” Live seafood entrees featured at Panda Cuisine include Steamed Fresh Shrimp (seasonal price), Steamed Fresh Fish (seasonal price), Baked Lobster with Cheese and Butter (seasonal price) and Crab with Ginger and Scallions (seasonal price). Currently, Panda Cuisine is offering a Live Lobster special ($9.99), which is specially prepared with e-mein noodles. The special is available

for dine-in orders only, with the purchase of another entrée (customers must present the coupon found on Page 22, which expires March 15). “It’s a small lobster (featured in the special), and we put noodles under it,” Kung says. Besides the current Live Lobster special, Panda Cuisine features lunch specials daily from 11 a.m. to 5 p.m., which contribute to large lunch crowds. “(The eatery’s) most crowded time right now is lunchtime,” Kung says. “The lunch special is $7.99 for one entrée and it comes with soup and rice. There’s about 70 items to choose from.” The most popular item on the lunch special menu is Deep Fried Whole Fish. Customers can opt for a wide-ranging selection of entrées, including Kung Pao Beef, Chinese Broccoli with Oyster Sauce, Mushroom with Ginger and Green Onions, and House Special Pork Rib. On the eatery’s regular menu, favorites vary among locals and Chinese who frequent Panda Cuisine, Kung states. For example, a favorite among Chinese customers is Fish Head Casserole Clay Pot in Zhongshan Style, or Homemade Style ($16.80). This dish — along with others such as House Special Royal Chicken ($14.80 half, $28 whole) and Diced Steak in Fukinnawa Sauce ($16.80) — is considered one of the best 10 dishes of the kitchen. For locals, though — who might not want to try unfamiliar Hong Kongstyle cuisine — a multitude of options are

available. “For locals, we recommend our Peking Live Lobster special $9.99 Duck ($38 for whole duck with skin, buns and duck meat; $45 for whole duck, skin, buns, lettuce wraps and minced duck meat),” says Kung. “If they (customers) want half (a duck), we can do half. The most popular (dish) among locals is Prawns with Honey Glazed Walnuts ($16.80). A lot of local people also like Sauteed Scallops with Macadamia Nuts ($16.80) and Salt and Pepper Prawns with Honey Glazed Walnuts ($16.80) Asparagus Prawns ($15).” Stir-Fry Other dishes available for locals Diced Rib who want more “traditional” dishes Eye Steak include Stir-Fry Sliced Rib Eye Steak with with Mushrooms ($16.80), Stir-Fry Pepper Sauce Chicken with Mushrooms ($13.80), ($16 .80) Stuffed Chinese Eggplants ($13), Stir-Fry Diced Rib Eye Steak with Pepper Sauce ($16.80) and Sweet & Sour Pork ($12.80). Although the eatery tends to attract more Chinese customers than locals, Kung states that Panda Cuisine is featuring seafood specials, in hope of attracting more local customers. “We did the ad (on the lobster special) to encourage local people to come and try,” he says. Changes might be on the horizon for Panda Cuisine, such as the inclusion of dim sum on the menu and a Macademia Nuts Sauteed scallops with ) website for the eatery. However, for ($16.80 now, customers are encouraged to give the restaurant a try and enjoy the multitude of seafood and other Hong Kong-style delicacies.
