hen planning a vacation destination, Italy always tops my list. Why? It’s simple: Italia is immaculate in every sense of the word, from its amazing history and architecture to its majestic scenery, pristine beaches, passionate people, beautiful language, and out-of-this-world culinary masterpieces. Indeed, Italia is molto bella! And don’t even get me started on the pasta! First and foremost, I’m addicted to pasta. Call me carb crazy — because I am. Everyone knows that Italy is the pasta capital of the world. Pasta reigns here, and for good reason. Pasta is Italy’s pride and joy, and some of the best you’ll ever find on the planet. Yet, when I can’t be whisked away to Italy (a girl can dream, right?), being the pasta fool that I am, I’ll devour any plate of pasta that is placed before me. And boy, was I craving oodles of noodles this week! So, in pursuit of the perfect pasta, my appetite and I were ready to tackle some of the best Ono, You Know pasta entrees right here at home. Be it rich and creamy, or meaty and savory, pasta is the definite, sure fire way to my heart! It was love at

It’s evident that Italians are masters at transforming simple, everyday ingredients into dishes that are quick, healthy and undoubtedly delicious. And here at Il Lupino Trattoria & Wine Bar at Royal Hawaiian Center in Waikiki, globally revered executive chef Nicola Sayada prepares a plethora of dishes all made from scratch, thus bringing about a culinary landscape revolution that ultimately turns Italian classics on their heads, while utilizing essential elements

found in Italian cuisine. With five-star ambitions at affordable prices, this sleek and modern eatery sits in a relaxing, sophisticated environment, featuring indoor and alfresco bar and dining, an open kitchen and a salumeria. And as the first to bring the Italian tradition of salumeria to Hawaii, Il Lupino offers prosciutto, salami, and other cured meats and Italian cheeses carved fresh at the diner’s request. The menu here is diverse, offering antipasti, soups, salads, brick oven-baked thin crust pizza, pasta, and chicken, beef, fish and pork entrees, to name a few. Sayada also effortlessly creates hauntingly beautiful renditions of traditional and delectable pasta, be it Penne all’Arrabbiata, which for $16 features penne with spicy tomato and garlic sauce served with basil and pecorino, or Linguine alle Vongole ($19), offering seafood lovers linguine with fresh clams served in your choice of garlic (bianco) or tomato (rosso) sauce. And while all are remarkably delicious, my premier pick of the bunch has to be Il Lupino's Tagliatelle ai Tartufi ($18). This edible work of art features al dente Tagliatelle imported from Italy doused in a citrus cream sauce made with shallots and a dash of white wine and lemon zest. It’s then garnished with fresh asparagus spears, a special black truffle puree and a hint of white truffle oil. What I love most about this pasta dish is that it gives off a rich, creamy flavor that is intense, but not overpowering in the least. Perfect for springtime, Tagliatelle ai Tartufi is a musttry and I guarantee that it’ll leave you craving more. Island-inspired cuisine.” The buffet offers something for everyone, including stations for omelets and eggs, waffles and soups. And breakfast entrees run the gamut, spotlighting morning favorites such as Eggs Benedict, Canadian Bacon and Hollandaise, Crispy Bacon, Banger Sausage and Bacon Onion Rosti. “I really think the abundance of Executive chef Hans Stierli has created an alluring brunch buffet, and the seafood is really impressive, plans to captivate taste buds with an array of upscale cuisine. “The Easter Brunch is all about the freshest cuisine,” Stierli says. “The buffet is reflective of the diversity of our kitchen and different cultures here in Hawaii. We try to use local ingredients whenever possible.” Carboni adds, “This is the first year that our Easter Brunch is being held at Surf Lanai Restaurant, and we really want to give that oceanview experience. The fun kicks off at 9:30 a.m. as keiki of all ages are invited to participate in one of the largest Easter egg hunts in the heart of Waikiki, with more than 2,000 treatfilled eggs scattered throughout the resort’s Coconut Grove area.

“The Easter egg hunt is a very exciting tradition that we have here,” says Camilla Carboni, sales/on-line marketing coordinator for the resort. “Everyone runs out and searches for eggs. We have two Easter bunnies that will greet our guests and take photos with them. “There also will be opportunities to win prizes, because in some of the eggs are little tags to win different offerings such as gift baskets and night stays at the resort — there’s a huge selection of prizes,” she adds. “We’re expecting close to 250 people to show up for the Easter egg hunt.” Once all the eggs are accounted for, guests will continue to celebrate the joy of Easter at Surf Lanai Restaurant. Easter brunch will be served from 10 a.m. to 2 p.m. and is priced at $88 for adults and $53 for children ages 6 to 12. (Children ages 5 and under eat for free with a paying adult.)

Kit’s unique pupus revealed

ome of the best dishes at Kit n Kitchen are not even found on the menu. The good news is that you don’t have to be a FOK (friend of Kit) to get the special treatment, you just have to ask. That’s pretty much how Volcano Stone Grilled Garlic Seafood Butter Rice ($14.95) came about. A long time diner was looking

for something different and Kit Yiu, the talented owner and chef, created the dish on the spot. Three years later it remains a popular dish even though it does not appear on the menu. Good thing too, because the pile of crispy rice, shrimp and mussels is outstanding. Served on a sizzling 500-degree stone and mixed with a butter tomato sauce

and a touch of garlic, the creamy appetizer is as tasty as it is visually appealing. Another guest-created option is Stone Grilled Ribeye Steak ($20.95). The steak plate has been on the menu for quite some time, but guests have found the tender cuts of steak, onion, green bell peppers and enoki mushrooms are perfect for sharing. The sides of garlic shoyu and chimichurri-dipping sauces provide an additional depth of flavor, which adds to the enjoyment without covering the natural flavors of the steak. Regular diners at the University Avenue eatery would likely riot if Calamari Stuffed Risotto ($9.95) was taken off the menu. Don’t worry, it’s not going anywhere. The large calamari pocket is stuffed with a fresh and light tomato rice sauce that somehow seems to get better with each bite. Need more options? Try

Garlic Butter Shrimp ($9.95). Sweet shrimp is fried in a garlic butter sauce and served on top of French bread garlic toast. Yum! If you can’t make it into Kit n Kitchen during regular lunch and dinner hours, the Owls menu may be a good option. And just in time for Easter, he’ll be making some bunny and egg-shaped treats. “We do not add any chemicals, and no hydrogenated shortening,” adds Koep, who is from New Jersey and moved to Hawaii in 1990. “Everything is all natural. We use olive oil, vegetable oil or butter only.”

Baking up a storm at Fendu

I

love bread and pastries, and have been told that Fendu Boulangerie has the best croissants on this Island. So, I finally made the visit to the European-style bakery in Manoa Marketplace, and concur — it’s just perfect and totally worth the drive from any part of the Island. But Fendu Boulangerie offers more than just tasty croissants. There’s a great assortment of breakfast pastries, breads, tea pastries, cookies, muffins, biscuits, a line of desserts, pizza, as well as panini and deli-style sandwiches. Chocolate croissant is one of the most popular items, but you also have to try Lemon Meringue Pie ($5.25) featuring an almond sugar dough base, and a filling that is a cross between sabayon sauce and lemon curd. “We blend sabayon with it, so it gives it a nice texture,” explains chef/owner Niel Koep. “And we’re using Sicilian lemons.” Chocolate lovers will want to try the signature Valrhona Bittersweet Chocolate Dome ($5.75) with Grand Marnier creme brulee in the middle, a layer of chocolate chunk and macadamia nut sponge cake on the bottom, and mousse made with Valrhona Chocolate on the outside. Gushing over IHOP’s fruit medley pring is in the air, and I’m not talking hopping bunnies or the delicious scent of tropical flowers intoxicating the sidewalks. I’m talking about the bountiful yield of perfectly ripe fruit in my Fruit Bowl ($7.30) at IHOP on

Kuhio Avenue. It’s a voluptuous, eye-catching medley of juicy orange, red and yellow hunks — cantaloupe, watermelon, pineapple, red grapes — each mouthful gushing with flavor. “The fruit is seasonal,” says general manager David Bagood. “We tend to switch between watermelon and honeydew.” Though stacks of pancakes

on neighboring plates catch my eye, I’m on a hunt for menu items IHOP offers that are meatless, fish-less and eggless. The treats I find also happen to be among the restaurant’s “SIMPLE & FIT” selection, which features dishes that are under 600 calories. I notice Bagood’s not cringing at my finicky request for ingredient checks on various dishes. He says he eats just

VO about everything, but when he has no qualms admitting he’s enjoyed eating vegan food, I feel immediately at ease. Next comes the House Salad ($4.85): just what you’d expect, with chunks of iceberg lettuce, slices of tomato and onion, topped with croutons and reduced-fat Italian dressing. Bagood notes that customers generally order the salad or the fruit bowl with an entree. But I’m at the pleasantly satisfied stage and I even opt to take half of the fruit salad to-go. The best part is that between the fruit (130 calories) and the salad (50), I’ve enjoyed a filling meal with no guilt. What’s life without a little guilt? I look out the window at

vacationers streaming by on this sunny afternoon and then back at the enticing photos on the menu’s drink selection page, and decide to enjoy a little vacation of my own. Out comes an Iced Mocha ($4.25) from the freshly brewed coffee selection, which also offers Vanilla or Original. “It comes with free refills,” points out Bagood. t’s no secret that Kenny’s is everybody’s favorite local-style diner, serving up the best in American classics and local creations. You may not know, however, that popular demand inspired Kenny’s to take some of its most requested daily specials and make them available multiple days a week. Prime Rib Au Jus ($16.99, regular cut; $20.99 Kenny’s cut), for example, is an unbeatable meal consisting of succulently juicy prime rib served au jus with a side of horseradish. The eatery’s newest sous chef, James Drewery, says the secret to the dish’s success is a slow cooking process that does justice to the premium cut of meat. s two customers walk into Shochan one late afternoon last week, they are immediately greeted by the restaurant’s friendly staff — and after they place their order, owner and head chef Shinji Yamamoto gets to work. He pours batter onto the stove and seasons it with bonito powder while it cooks. Next, he fries up a mixture of noodles, bean sprouts, pork and cabbage before briskly cracking and frying an egg. In one fluid motion, he expertly joins all of the ingredients together, then adds a sweet brown sauce on top of the egg. Yamamoto is making Shochan’s signature dish — Okonomiyaki Hiroshima Style ($7.80). This healthy dish is popular in Japan, but seems to be hard to find here in the Islands. With Shochan, okonomiyaki enthusiasts are in luck. The restaurant offers authentic, tasty okonomiyaki, as well as a number of other flavorful dishes. In addition to Hiroshima-style, the restaurant also offers Kansai-style okonomiyaki — with Pork ($7.80), Squid ($10.80) or Shrimp ($10.80). Shochan opened its Kapahulu eatery in February for lunch, and started serving dinner as well last month. Previously, Shochan had been located on University Avenue since 2007. Fans of the previous location can still find their old favorites at the new location, along with a number of added menu items. New menu items include two categories of tasty treats: Teppanyaki and Kushiage. Teppanyaki dishes include Pork ($9), Beef ($10), Chicken ($8) and Scallop

f you’ve never tried okonomiyaki, there is no better place to start than Shochan. After all, the restaurant brings the authentic tastes of the Japanese dish right to its kitchen. Owner and head chef Shinji Yamamoto grew up cooking okonomiyaki. Yamamoto explains that in Hiroshima, there are hundreds, maybe even thousands of okonomiyaki restaurants. Among those eateries is one owned by his grandmother-in-law. When he came to the Islands, Yamamoto noticed there weren’t any restaurants serving okonomiyaki the way his grandmother-in-law makes it. “There are many Kansai-style okonomiyaki restaurants in the United States, but there are no Hiroshima-style okonomiyaki restaurants,” Yamamoto says. “So I wanted to be the first one. “We pretty much took the store from Hiroshima and brought it here,” Yamamoto says. “It’s the same atmosphere — you will feel like you’re in Hiroshima.” Many of Shochan's ingrediServer/cook ents are imported from Japan Nathan Yoshii with — including the tasty Okonomiyaki okonomiyaki sauce. Hiroshima Style Plus, Yamamoto says that with all of its vegetables — such as bean sprouts and a heaping pile of cabbage — Hiroshima-style okonomiyaki is very healthy. “We just want everybody to know about okonomiyaki and enjoy it,” Yamamoto says.

Kushiage (which many people order as appetizers) options include Pumpkin ($1), Enoki Mushroom with Bacon ($1.50), Okra with Cheese ($1.50), Pork Loin ($2), Shrimp with Shiso ($2) and Tarako ($2.50). Shochan also offers pupu options such as Yaki Edamame ($3) and Fried Chicken ($6). Yamamoto says that in addition to okonomiyaki, oden is another popular menu item. Oden contains various ingredients bathed in a flavorful broth, and diners can pick the items they want.

Shochan’s oden offerings include Ito Konnyaku ($1), Konnyaku ($1), Egg ($1), Rice Cake ($2), Fried Tofu ($2) and Tendon ($2). Another added feature at the new location is an open stove top at the back of the dining room — where customers can watch in awe as Yamamoto works. “We wanted customers to be able to see and enjoy how we cook our food,” Yamamoto explains. Yet, the fact that I simply adore pasta makes narrowing down my choices all the easier. Carmela’s Chicken Rigatoni ($16) is a classic, according to Longworth, who says it’s been on the menu since the very beginning. “We can never take Carmela’s Chicken off the menu, or I think we’ll be in trouble. This dish features pieces of roasted chicken, fresh rigatoni imported from Italy, sweet caramelized onions and mushrooms, and it’s topped with a marsala cream sauce,” he explains. tlantis Seafood & Steak, located in the heart of Waikiki, serves up more than exceptional and fresh food for its customers. All those employed at the restaurant take customer service seriously and aim to provide each patron with the best dining experience possible. Dining Out recently found Australia natives Ella Reid, and Annie and Debra Geaney spending part of their Hawaiian vacation enjoying dinner at the restaurant. They were all impressed with the decor, service and, of course, the food. “Our waiter was outstanding. He was very attentive, but not overbearing,” Ella said. “We were very happy. I would give them four-and-a-half out of five stars.” Annie agreed and added that the chairs were extremely comfy. And, appropriately, Chef Gem Bautista is behind the alluring array of dishes available at Willoughby’s Restaurant in the OHANA Honolulu Airport Hotel. The eatery serves up hearty American comfort food with breakfast served daily (6:30 to 10 a.m.) and dinner available Tuesday through Thursday (5 to 9 p.m.). Willoughby’s is a perfect spot where one can enjoy a meal prior to boarding or after completing a rigorous flight. Also, the convenient location just off Nimitz Highway makes Willoughby’s an ideal kamaaina destination. General manager Simeon Miranda explains that the hotel’s target market is the “one-nighters” in reference to travelers stopping over for a brief visit while on business or waiting to complete the next leg of their flight. “Most of our customers are usu-

ally staying here for a day. It’s their transition between when they get off the plane and when they leave,” Miranda says. Those diners who may remember visiting the eatery are invited to rediscover what Willoughby’s has to offer. For nearly 50 years, the restaurant has served locals and visitors alike, although the hotel in which it sits has changed names along with various owners and management groups that have headed the property. “It’s always been Willoughby’s Restaurant, but the name of the hotel has changed,” says Miranda of the restaurant that was built in 1965. “It’s a great opportunity for those who have dined here before to reconnect.” Croissant Scramble ($10.95) serves as Willoughby’s most popular breakfast item, and the dish resembles a hearty omelet served between two flaky croissant halves. The three scrambled eggs envelope onions, bell peppers, mushrooms and tomatoes, and are served with a choice of hash browns or fresh fruit. As a precursor to dinner, Bautista recommends Kalua Pulled Pork Sliders ($10.95). The

pupu features juicy kalua pork topped with cole slaw served on buttery taro rolls alongside a tangy barbecue sauce and lomi lomi tomatoes. Willoughby’s dinner selections also have drawn rave reviews, including Baby Back Ribs ($23.95). These fall-off-the-bone ribs are prepared in a special dry rub and then are smothered in a chili barbecue sauce. Crispy onion rings, cooked vegetables and a choice of steamed white rice, mashed potatoes or fries also accompany the ample portion of meat. Shrimp Scampi ($18.95) features juicy sautéed shrimp in a garlic and tomato sauce on a bed of linguine and comes with garlic bread — perfect for dipping in the mouth-watering sauce. As a special scoop for loyal Dining Out readers, Miranda is pleased to announce that the lounge area adjacent to Willoughby’s and the hotel lobby will reopen later this month following extensive renovations. The relaxing locale will allow guests and diners an opportunity to grab a pau hana beverage or pupu in a calm, relaxing atmosphere. Shrimp Scampi ($18.95)
