So, without further ado, let’s kick diets to the curb and make room in our stomachs and hearts for the new love of our lives — asparagus.

I

’m not a fan of dieting and never have been. In fact, a friend of mine recently texted me a humorous saying clearly summing up my thoughts on dieting: “Dear Diet, It's not me, it's you. I just don't think it's going to work between us. You're boring, tasteless and I can't stop cheating on you.” Yup, perfectly put — it’s over between me and diets. And as editor of Dining Out, going on a diet is nearly impossible, if you ask me. So in order to stay somewhat healthy, without having to sacrifice the food I love, I try my best to make smart decisions when it comes to what I eat. Therefore, this week I’ve decided to pay tribute to my favorite vegetable of all time — let’s give a great big round of applause for asparagus! Asparagus is one of the most nationally well-balanced vegetables in existence, and leads nearly all produce items in the array of nutrients it supplies. As one of nature’s most-perfect foods, asparagus is extremely versatile, low in calories, very low in sodium and high in potassium, fiber, vitamin B6 and thiamin, just to name a few. For today’s health-conscious consumer, asparagus is heaven-sent.

When asked if Jade Dynasty offers an asparagus dish, Lam quickly and eagerly responded, “No, we don’t have any asparagus dishes on our menu, but we can create one.” So, just like that, with a snap of a finger, Bamboo Fungus with Asparagus was born. Available starting today, Bamboo Fungus with Asparagus ($16.95) features an alluring shrimp mix and asparagus wrapped in bamboo fungus. Six pieces of asparagus complete the dish, and a sauce comprised of egg whites, chicken stock and carrots complements this new creation. hen owner Hyosook Choi opened the doors to Choi’s Garden in 2000, she was planting the seeds of her dreams. Choi, a former housewife from Korea, always hoped to one day own her own restaurant, and today, 12 years later, Choi’s Garden is flourishing — sprouting up new culinary concepts and harvesting authentic Korean cuisine.

We really want to highlight healthy cuisine and the importance of all-natural ingredients,” says host Temi Chang. Located on Rycroft Street not far from Keeaumoku Street, or “Koreamoku,” as it's affectionately called, the eatery, which seats close to 200 patrons, is a “secret garden” for those who crave a traditional Korean meal. “We’re especially known for our yakiniku, priced around $24.99. The beef that we use is top-grade and very fresh,” Chang says. “Customers have the option of cooking up meats such as Spicy Pork, Barbecue Chicken, Kal Bi or Brisket. “Graduation season is approaching, so we expect to host many graduation parties, and yakiniku is really popular, so we’re featuring a handful of appetizers to pair with yakiniku,” she adds. Appetizers include Long Rice with Pan-Fried Vegetables ($15.95), Steamed Butterfish (spicy or mild, $23.99), Spicy Rice Cake ($11.99) and Homemade Fried Mondoo ($11.99). However, here at Choi’s Garden it’s clearly impossible for yakiniku itself to take all the glory when there are a plethora of items that are equally delicious. Take, for example, Sang Kal Bi aka Seasoned Prime Short Rib ($24.99), and Healthy Stone Pot Rice, which features Stone Pot Rice with Date, Beans, Sweet Pumpkin, Kal Bi and Soup (Miso, Kim Chee or Soft Tofu) ($17.96). “With our Stone Pot Rice dishes you can choose from meats or fish,” Chang explains. “Usually in Korea you would eat it with fish, but for locals we offer kal bi, too. “Locals also enjoy a favorite appetizer of Special Shoyu Sauce Raw Crab ($34.99). The crab is always fresh.” Choi’s Garden draws in hungry diners with its shabu shabu selections as well, be it Beef Shabu Shabu ($44.90) or Seafood Shabu Shabu ($44.90). Ideally meant to be shared among a party of two or three, Choi’s Garden’s Shabu Shabu is a nutritious option for those who are health conscious. “Beef Brisket is our most-requested shabu shabu selection,” Chang says. “With all of our shabu shabu dishes we give you a lot of vegetables including Chinese cabbage, bell peppers, onions, green onions, zucchini and enoki mushrooms, and people usually order more meat because the meat is tasty — it’s very thin and tender.” And according to Chang, there is a proper way to indulge in Choi’s Shabu Shabu. It’s all in the technique. “You wait until the broth boils and then you put in the vegetables (although not at once), then you take the veggies out once they’re cooked and you add the meat to the

5 broth. Finally, once the meat is cooked, you dip the veggies and meat in the sauce that you like. With the leftover broth, you add udon to it, and that in itself is a second meal,” she explains. Here at Choi’s Garden you have it all — home-style Korean favorites that are delicious and nutritious, but it

gets even better. Choi’s Garden goes above and beyond by providing an assortment of banchan (side dishes) with every meal and boasts the best in customer service as well. Planning for a special occasion? Choi's Garden has three private dining rooms available to meet your needs. Each room can seat close to 15 people comfortably, and the rooms can be expanded for larger parties. Rooms must be reserved ahead of time and there is no additional cost. “I think we’ve been so successful over the years because we are committed to serving healthy food and providing the best customer service,” Chang says with a smile. “We have many loyal customers, which we are grateful for.”

Freshen up at Pho My Lien By Ali Resich

usband-and-wife dream team Tommy and Lien Dang serve up a fresh batch of Vietnamese fare every day at Pho My Lien, their Westridge Shopping Center restaurant. If there’s one person who can vouch for the authenticity of their cuisine, it’s longtime friend and business partner, Walter James. “I’ve known Tommy for

almost 30 years,” says James. “(Lien) was cooking for us and wanted to open a restaurant, and I said, ‘Fantastic idea.’ The food is good and it’s consistent,” he adds. “We’ve been at this for 10 years.” James, along with a loyal base of customers, loves to indulge in Crispy Spring Rolls ($7.50), filled with pork, chicken, shrimp, shredded carrot, long rice and mushroom. “They’re very habitforming,” says James. “If you eat

one, you gotta have another.” The crisp, golden rolls are served with lettuce, mint leaves, rice noodles and Lien’s special sauce. Regulars at the bustling eatery also love Hot Spicy Lemongrass Stir Fry ($7.95), with a choice of chicken, pork, beef, shrimp or tofu coated in a spicy, curry-like sauce. And for a burst of freshness, James recommends Green Papaya Salad ($7.50), featuring shredded green papaya and shrimp mixed with mint leaves, peanuts and that unforgettable special sauce. “It’s good home cooking, always has a good look and it’s fresh,” describes James. Dive into Sushi King’s eats

W

atching chef Edgar San Juan work behind the counter at Sushi King is a pleasure. He is quick without being rushed and the flavorful, artistic creations he serves are a reminder of why the restaurant has been an area staple since 1992. The best thing about dining at a sushi restaurant is that there are no rules when it comes to appetizers, main courses and even desserts. OK, maybe not desserts, but almost the entire menu at the King Street restaurant is pupu compatible. Fresh Oysters are a good way to start, and priced at $7.25 it’s a delicacy you can afford. The fresh shucked oysters are cleaned and served with green onion, grated daikon that is mixed with Japanese chili peppers and a ponzu dipping sauce. Equally satisfying is Ika Maruyaki, or whole squid. The tender squid ($11.95) is grilled and served with either a teriyaki or shiyoyaki sauce. As with everything on the menu, it looks as good as it

tastes. Soft Shell Crab ($9.50) is a crispy appetizer option that is a definite pairing favorite with any number of menu items, including Ahi Poke ($9.50). The buttery fish is served with green onion, tobiko, yamaimo (mountain potato), ogonori, radish sprouts and tossed with a sesame oil seasoning with a few ingredients San Juan isn’t ready to identify. They are not appetizers, but the Early Bird Dinner ($15.96) and the Late Night Special ($11.45) are crowd pleasers, with options including chicken teriyaki, shrimp and vegetables, salmon katsu and ahi cutlets, just to name a few. ou know the old saying about books and their covers. It also can pertain to restaurants. When an eatery has the word “barbecue” in its name, a non-meat-eater may not even bother to enter its doors. But don’t be too quick to judge, because when it comes to Korean cuisine, for those who choose not to eat meat or fish, it’s all about those fabulous little side dishes called banchan. And lucky for veggie lovers, at 808 Yong’s BBQ, owners Yong and Bennett Tom had a brilliant idea. “We have the Veggie Plate as a daily special right now,” says Bennett. And at only

With its elegant atmosphere — including outdoor seating on an idyllic garden terrace — Il Lupino is the perfect place to enjoy a leisurely meal. The ambience is so encapsulating that you might even forget that you’re in Waikiki at all and instead have been transported to Italy — a feeling that Il Lupino’s authentic Italian cuisine will solidify. “It’s traditional Italian cuisine, and it’s a little rustic because Chef (Nick Sayada) does everything in-house,” explains general manager Adriana Nickerson. “It’s classic Italian that some people might not be used to. But it is something that I would like people to venture out and experience what Il Lupino has to offer.” Should you choose to venture to Il Lupino, a pleasant surprise of flavors for breakfast, lunch and dinner awaits. Other delightful dishes include Prosciutto, Mozzarella & Tomatoes panini ($12) and Zucchini e Melanzane pizza ($14), with oven-roasted zucchini and eggplant, tri-color peppers and Parmesan cheese. Il Lupino also features the only Salumeria in Honolulu. Salumeria options include an array of meats and cheeses — all imported from Italy. The Salumeria is open from 3 p.m. to closing. In addition to importing some ingredients from Italy, Il Lupino also makes use of fresh, local produce. “The chef incorporates a lot of local

l Lupino Trattoria & Wine Bar is the brainchild of father and son restauranteur duo Wolfgang and Peter Zwiener. Wolfgang, who cultivated his love and knowledge of Italian food while traveling through Italy as a young man, was a longtime waiter in New York. One day, Peter proposed the idea that his father start his own restaurant. Today, the two own a number of eateries on the Mainland, as well as Wolfgang's Steakhouse, which is located directly upstairs from Il Lupino. The restaurant combines the Zwieners’ vision with the expertise of Chef Nick Sayada. “Our chef makes everything in house — from the stocks to all of our sauces to our fresh gnocchi,” Nickerson says. Sayada has years of experience in the restaurant industry, formerly working as a chef in well-known restaurants such as Black Orchid and Nick’s Fishmarket in addition to owning his own restaurant in San Francisco. Nickerson credits much of Il Lupino’s tasty cuisine to Sayada’s creativity. One example of such creativity, Nickerson says, is a colorful salad, Insalata Farfalla ($14), which includes papaya, avocado, marinated mushrooms, chopped tomatoes and cured onions all bathed in a black truffle vinaigrette. Nickerson explains that Sayada thought up the salad after seeing all of the vibrant colors of the ocean when he was snorkeling one day. “He is just great at what he does and coming up with dishes,” Nickerson says. “He's brilliant.” General manager Adriana Nickerson

f you’re looking for a restaurant where you can get affordable Japanese food that will satisfy your hunger pangs, look no further than Katsu, located at 3008 Waialae Ave., previously occupied by Richo Korean Cuisine. The establishment celebrated its grand opening April 3 with about 300 people in attendance. Owner Masaru Hashiguchi’s mission is to provide the people of Hawaii with a bigger sense of Japanese food while giving value to the customer. “There are so many second- and thirdgeneration Japanese in Hawaii who would understand the culture and the restaurant,” he explains. Hashiguchi just wants people to eat a lot (at a reasonable price) and enjoy themselves. This is Hashiguchi’s first restaurant in Hawaii, but he owns nine other establishments (ramen restaurants and bars) in Japan. He hopes Katsu will be a friendly and accessible restaurant where patrons can “pop in” for a good meal. This is not your ordinary Japanese dining experience. While it is not meant to be a high-end eating estab-

lishment, with servers who cater to your every whim, Katsu puts great emphasis on the quality of its food. With only 10 employees, this place is largely self-serve. There are seven entrees to choose from for now, and Hashiguchi plans to include more dishes on the menu in the future. You must order an entrée, and the buffet comes as part of the deal. Entrees include: Chicken Katsu ($9.75 lunch mini, $12.98 lunch regular, $14.95 dinner mini, $17.98 dinner regular), Pork Katsu ($10.98 lunch mini, $13.98 lunch regular, $15.98 dinner mini, $18.98 dinner regular), Assorted Tempura ($12.98 lunch, $17.98 dinner), Assorted Vegetable Tempura ($10.98 lunch, $15.98, dinner), Chicken Karaage ($9.75 lunch mini, $12.98 lunch regular, $14.95 dinner mini, $17.98 dinner regular), and Spicy Chicken Karaage ($10.98 lunch mini, $13.98 lunch regular, $15.98 dinner mini, $18.98 dinner regular). There also is a Mega Plate ($24.98 lunch, $28.98 dinner), which comes with Chicken Katsu, Pork Katsu, Karaage, Assorted Tempura, Roast Beef, Zucchini Katsu and Tomato Rice Katsu.

The dinner buffet includes a bottomless drink, but during lunch the drink option costs $1.99. Hashiguchi recommends hojicha (a dark-colored roasted Japanese green tea). According to Hashiguchi, many people have been raving about the curry, which is part of the buffet. Other items available at the buffet are rice, miso soup, udon and salad bar. Sides that you can choose from include Curry Flavored Long Rice with Soybeans, Garlic Pasta Salad, Freshcut fruit and Mango Pudding. The benefit of having all these choices is that you can play around with it and make your own combinations. If inspiration doesn’t hit you but your stomach is calling for food, Katsu has a list of combinations you can try such as Curry Udon or Curry Rice. Katsu is a great place for families to enjoy a nice meal. Two children age 4 and under can eat for free with every paying adult. There is also a 10 percent senior discount for those age 65 and older. Head down to Katsu and you’ll leave with a full tummy and a not-soempty wallet.

bout 20 years ago, an Island institution known for making the best plate lunches and local dishes decided to add a plateful of breakfast classics to its menu. Rainbow Drive-In hasn’t looked back since. “Although we’re basically known as the plate lunch place, we do have a breakfast crowd and people who come specifically for breakfast,” says vice president Jim Gusukuma. A pillar of the 51-yearold eatery’s success has been the longevity of its original recipes still offered today. Breakfast sensations are no exception, with favorites such as Fried Rice ($5.50) becoming a staple of the drivein’s very own “breakfast club.” This comforting shoyu-based fry-up features a beloved combina-

tion of white onions, Portuguese sausage and celery. “Breakfast runs from 7 to 10:30 a.m.,” Gusukuma explains, “but most of the time the Fried Rice runs out before 10:30.” On a sweeter note, the iconic spot also serves large, fluffy buttermilk Pancakes ($4.60, three pieces), which are available in short stacks as well. And no breakfast is complete without Sweet Bread French Toast ($5.50, five pieces), made voluptuously delicious from thick-cut sweet bread. But for some breakfastgoers, the thought of stopping by Rainbow’s without getting a plate lunch is simply unbearable. “A lot of people wanted to eat breakfast — they wanted eggs, but they wanted plate lunch too, so we decided to com-

bine it,” says Gusukuma of coming up with Breakfast Specials ($5.50). etermining whether or not a certain food is “delicious” is subjective based on differing taste buds and opinions. However, here at Hinone Mizunone on South King Street, there’s a mutual understanding by loyal diners that Hinone’s cuisine is some of the best. This family-friendly establishment is owned by Japanese restaurant giant Fujio Food Systems, and opened its first U.S. location here in the islands in 1998. Specializing in traditional Japanese entrees, the restaurant features a little bit of everything, from Teishoku sets to bentos, udon, miso butterfish, and Honone’s ever-popular rice, cooked in an old-fashioned pot. “Our Saba Mitsuke

($8.50), Chicken Katsu Curry ($9.50) and Karaage Curry ($8.50) are standout dishes,” says operations manager Eiki Tamaki. Hinone’s curries are prepared in the Japanese style, and are beef-based and mixed with pieces of potatoes, carrots and your choice of meat, be it chicken katsu or karaage (Japanese-style fried chicken). Not much of a meat eater? Then sink your teeth into the succulent Saba Mitsuke, which features a sweet, shoyu-based simmered mackerel. As a teishoku set, Saba Mituske is served with rice, miso soup, two side dishes and pickles. “What’s special about our saba is that it’s cooked in a shoyu mirin sauce, which really brings about a sweet sake taste. A lot of people like it,” Tamaki states. Hinone Mizunone lives by its philosophy to consistently serve premier food and provide exeptional customer service on a daily basis.

W

ith its comfortable atmosphere and warm, welcoming staff, Kapa Café is a place where it really does “feel like family.” The eatery, which opened last November, is distinct from others because of its specific purpose, according to owner Shelly Seleni. “I want Kapa Café to be a platform for Polynesian and local entrepreneurs,” she explains. “I want to create a safe place for them to come and know they have the freedom to share what

they’re doing.” Although the eatery usually doesn’t open on Sundays, to officially “launch” the restaurant, Kapa Café is open today (April 15). “As an introduction to Kapa Café, we will be open today and invite everyone to become a part of our family,” Seleni confirms. Seleni, who started a social network group for Polynesian and local entrepreneurs in 2009 called the Tapa Network, realized that she needed to build a home for the network.

“My whole vision behind what I’m trying to accomplish is very unique to the process of making tapa (Polynesian cloth),” Seleni says. “The process of making tapa takes more than one person; it actually takes a village. Tapa is unique and significant to the Polynesian culture as a whole. When I opened Kapa Café, it just made sense because I’m Hawaiian and Samoan — the tapa represents my Samoan and ‘kapa’ (‘cloth’ in Hawaiian) is my Hawaiian.”

While Kapa Café hasn’t even been open for a year yet, businesses are already utilizing the eatery as a network spot and meeting place. Seleni notes that, while Kapa Café usually closes at 6 p.m. Monday through Friday, many different networking groups utilize the space for their private meetings. The café provides a private room businesses can rent to hold their meetings, which fits close to 30 people. “It’s become a very safe place for them (businesses) to network, share their dreams and share opportunities,” Seleni says. “What I really see for the café is that people come in with a heart of cooperation, not competition — they come in to collaborate versus compete.” At Kapa Café, one will find traditional café fare with a unique, Polynesian twist and a variety of flavors. All sandwiches, for example, are made with either Guava bread — the Café’s signature “pink sandwiches” — taro rolls or spinach bread. A special Guava aioli also is used for

the sandwiches. Customer favorites include Hot Pastrami Grill on Spinach Bread ($9), Guava Melt ($7.50) — a turkey, ham and twocheese panini with Guava aioli — and Turkey Swiss on Guava Bread ($5.50). Also popular among customers is Chicken Salad Mix on Taro Roll ($5.50) and Taegu Tofu Salad ($8.50). Customers also have the option of making their sandwiches combo meals for an additional $2 (comes with chips and a can drink). Kapa Café also offers daily specials. Previous specials have included a steak sandwich with a lilikoi horseradish ($9), kalua pig on taro roll ($9) and an Angus burger on taro with a mango ketchup relish ($7.50). Smoothies are one-of-akind at Kapa Café, with eye-catching names such as the popular Samocha ($5.25) — an Almond Roca mocha — and Poly Punch ($3.95), a mango, lychee and passionfruit blend with a bit of li hing. Another signature smoothie is Supahfruit ($3.95 plain) — made with acai, blueberries, gogi and pomegranate — and the “upgraded” version, Supah

Supahfruit ($5.25), which includes granola and ice cream. Also noteworthy are the unique Kava blends at Kapa Café. Regular Kava ($3) is available, as well as flavors including macadamia nut, melon and cappuccino ($5 per cup). “Most people associate kava with dirt water, but the Kava blends we’ve created here are so delicious that people have to stop and try them,” Seleni says. “We also feature a lot of Polynesian desserts that are (currently) part of the specials and they will be incorporated into the menu.”
