Kozo Sushi here’s something fishy going on this week, Ono readers, and I mean that in the best way possible. As editor of Dining Out, I’m extremely grateful for the opportunity to try a variety of foods on a weekly basis, and sometimes it makes me realize that I have to reevaluate my diet. Sure, I’m usually able to get the necessities in there such as fruits, veggies, dairy, proteins and sugars, but recently one thing that’s missing is an abundance of fish. Many believe fish to be extremely beneficial to the mind and body as it’s a lowfat, high-quality protein, and filled with omega-3 fatty acids and vitamins such as D and B2, which are essential to keeping the heart and brain healthy. Fish also is rich in calcium and phosphorus, and a great source of minerals including iron, zinc, iodine and more. Really, what more can you ask for, right? And on top of that, it’s delicious!

obe Japanese Steakhouse & Sushi Bar has been captivating Hawaii’s diners for the past 40 years. With a warm and rustic Japanese inn atmosphere, this top-notch teppanyaki-style establishment is nestled right in the heart of Waikiki and wows hungry audiences with a dinner and show like no other. Master chef Lester Nishida, who has been a teppanyaki chef here for decades, has trained more than 50 chefs throughout his career, and claims the teppanyaki table is his stage as he effortlessly prepares a mouth-watering meal complete with the finest USDA choice sirloins, tenderloins, scallops, shrimp, fried rice and more right at your very table. Dining Out recently caught up with general manager Roy Nakamura, who explained just why Kobe Japanese Steakhouse & Sushi Bar has been a family favorite for generations.
DO: For someone who has yet to dine at Kobe, how would you describe the dining concept? Nakamura: Teppanyaki is a really beautiful concept. The product is brought out in its raw state, so everything must be fresh, or the customer will know. Our chefs will then skillfully prepare your dinner right before your eyes! It also is about the only time when it is acceptable to play with your food!
DO: What makes Kobe Steakhouse & Sushi Bar stand out from other Japanese-style teppanyaki restaurants? Nakamura: There is very little you can do to vary the teppanyaki concept. I think our sauces are our strong point. We offer a mustard and a ginger sauce. Each of our sauces is made by one chef daily to keep them consistent. We have had positive feedback about them, some even suggesting we bottle them. In DO: When did Kobe open its doors and how did fact, we actually tried, but it just did not have the right taste and consistency. the idea for the restaurant come about? Nakamura: Kobe Steakhouse, here in Waikiki, DO: What are some of the restaurant’s most popopened its doors in March 1972. Nishida, was able to include two petite Tristan lobster tails to combine with a New York steak — again a complete dinner. From the sushi bar, our Rainbow Roll ($14) is a favorite. It’s a California roll topped with maguro (ahi), hamachi, salmon and avocado to give it plenty of color. Our sushi prices may change due to seafood price fluctuations and availability.

DO: With Mother’s Day soon approaching, does Kobe have anything special in store for moms? Nakamura: Yes. We are featuring our Mother’s Day special ($50), with a Petite Filet, Scallops and Shrimp combination. As with all of our dinners, it comes complete with shabu shabu soup, grilled shrimp appetizer, pickled and grilled vegetables, white rice, and hot green tea. The special also includes a starter portion of edamame (soy beans), and your choice of Red Velvet or Double Chocolate cupcake. We also have put these cupcakes on our regular menu ($5; $6 a la mode)

Some guests don’t even need to see the menu; they come in knowing what they want! For some restaurants, “staying fresh” and changing is an integral part of their concept, but our reliability factor seems to work for us. A concept that has worked for 40 years is hard to dispute!
DO: Does Kobe offer any appetizers? If so, what are your best-sellers? Nakamura: We have been tweaking our lounge pupu menu lately. In addition to our best-selling Pork Chops ($13), Fresh Ahi Poke and Fresh Ahi Poke Salad (both $10), we have added Boneless Short Ribs ($12) and Sweet Potato Fries ($7) as well. DO: What are some popular drink items? Nakamura: Lava flows and mojitos (both $7.50). Lava Flow is made with vodka, pineapple juice, milk and coconut syrup blended and poured in a glass with strawberry puree on the bottom, which flows and swirls up the glass beautifully. Our mojitos are made with fresh mint leaves, which are grown in-house, Rum (or any liquor your heart desires), club soda and a splash of simple syrup. While our hot sake (small $5.50; large $10) remains our staple, we also have a wide range of domestic and imported sakes. Nigori (an unfiltered sake) is a popular item — Sho Chiku Bai ($10) and Snow Beauty ($17).

DO: What is the common denominator behind people’s love for Kobe? Nakamura: I feel people like our reliability. Change comes hard at Kobe. We have had virtually

s a working mother of two young children, dinners are often picked up on the way home. Then there are the numerous potlucks and family gatherings where everyone brings their own specialty dish. For me, my specialty usually ends up being a la takeout. But thanks to restaurants such as Shiro’s Saimin Haven, I can still bring a home-style cooked menu item, but without the time-consuming prepping, cooking and cleaning. Founded in 1969 by Shiro Matsuo, Shiro’s is known for its long list of saimin combinations, including a new Asian Vegetarian Saimin ($7.50) with aburage, shiitake mushrooms and vegetables. But the family-friendly restaurant (and a perfect place to take Mom for Mother’s Day) also offers a wide variety of breakfast, lunch and dinner options, including burgers, sandwiches and Hawaiian food. Add great prices and a friendly staff to the mix, and it’s no surprise that the eatery continues to be a local favorite. As for its personalized catering service, the selections are endless as well. There are different types of chicken, beef, pork and

seafood dishes, including barbecue short ribs, pork adobo, shoyu pork, garlic shrimp, fried noodles, sushi platters, bentos and more. A popular choice, especially for “soccer moms” or any sports event, is the Hot Dog & Spam Musubi Platter ($20), which includes 16 small Spam musubi and 10 small hot dog musubi made with an original in-house teriyaki sauce. During my most recent visit to the Waimalu restaurant, I was pleasantly surprised to see Shiro himself sitting at a booth enjoying breakfast. “He still makes it a point to come every morning,” explains Fujimoto, noting that his grandpa just turned 93. While Shiro is no longer involved in the day-to-day operations of the business, his
heart remains at the core of everything, including the walls, where you’ll find inspirational poems he’s composed for more than 30 years.

he best thing on Keo’s menu isn’t really on the menu. Yes, the curry is award-winning, its vegetarian options are impressive and the peanut sauce can turn a paper napkin into a satisfying meal, but all that takes second place to the real star of the show — freshness. Admittedly, it sounds like a cliché. Which restaurant doesn’t boast of preparing dishes straight from the farm or field? But chef and owner Keo Sananikone took it a step further by starting his own farm. What appears on the menu one night was likely in the ground that same morning. You’ll notice the difference right away. Roast Duck Salad ($13.95), as an appetizer to share or a meal on to itself, is made with roasted boneless duck and a field of ingredients including mint, celery, cashews, onion, kaffir lime and roasted chilies. And if you’re familiar with Thai food, you know that vegetables usually rule in the exotic, fragrant and sometimes fiery hot dishes, and Thai Village strives to use fresh, local produce as much as possible. Not only is the menu extensive, but there are numerous additions listed alongside many dishes. And if you don’t eat meat or fish, there’s a plethora of delicious alternatives. For example, Eggplant ($8.95) with bell peppers and basil leaves is sauteed with Thai seasoning and can be prepared with tofu for non-meat eaters (or carnivores can choose chicken, pork, beef, shrimp, scallops and more for an additional cost). This a la carte dish does contain oyster sauce, so when ordering just ask them to omit it. And although omitting the oyster sauce will alter the taste a bit, the chef will kick it up vegetarian-style. here are many choices to satisfy your Chinese food cravings at the buffet line of Royal Palace Restaurant in Stadium Mall. Indeed, this prized eatery serves up fantastic options for lunch ($10.50) and dinner ($10.95, weekdays). Dining Out caught up with Adrian, Winona and Landon Hedge for lunch earlier this week. While Landon is still young, he’s already developed a taste for the Salt and Pepper Shrimp and Jin Doi. According to Winona, the child devoured four pieces of shrimp over the course of the meal. A breakfast staple in Waikiki since the mid-’70s, this specialty breakfast nook has the right combination of menu medley and shining staff to get your day off to a fantastic start. Host Eddie Cavett, who played a small role in the former ABC network series LOST, greets guests on some mornings with a tasteful energy that is as delightful as your morning coffee. And then the fun really begins as you gaze through the menu filled with options of omelets, pancakes, crepes, waffles and a variety of specialty choices, including Maui Pineapple Porkchop ($11.95). Maui Pineapple Porkchop is a bone-
in pork chop, smoked and topped with a light pineapple syrup glaze as well as a ring of fresh pineapple. Accompanying your meal are two eggs cooked to order and your choice of rice, potatoes or buttermilk pancakes. “It is very similar to ham. The brown sugar and butter complement the saltiness of the pork. I think pineapple and pork go very well together,” says regional manager Michael Skedeleski. Another Eggs ‘n Things specialty is its Pineapple Cheesecake Crepe, offered on the specials menu for $12.95. For those interested in dinner, Eggs ‘n Things does offer a dinner menu (at its Saratoga Road location), which features Fresh Ahi Steak, Paniolo Loco Moco and a handful of specialty pancakes and waffles for dessert.

Graduation is a milestone that deserves a special celebration, and A Catered Experience (ACE) has a “create your own graduation menu” available that will make your graduation celebration a big hit (and yes, they deliver). Worrying about preparing food for that memorable party can be stressful, but ACE has you covered.

rders must be placed at least two weeks in advance, and menus (minimum of 25 people) are available for booking until Aug. 31 and are taken on a first-come, first-served basis. The graduation menu ($10.95/person) comes with steamed white rice and allows you to pick a starch, salad, chicken dish, meat dish and seafood/fish dish, as well as disposable paper plates, napkins and eating utensils. Not only does ACE provide customers with excellent meal choices, they also go the extra mile. According to catering manager Ron Hattori, ACE can staff events for an additional cost. “Sometimes they (customers) have parties at a recreation center, so we do offer staffing and we can set up the buffet,” he explains. Choices of starch are fried
noodles, chicken chow mein, pancit, garlic mashed potatoes, herb-roasted potatoes, yakisoba or assorted sushi (maki, teppo maki or inari). Salad options include tossed salad (with choice of dressing), macaroni salad, potato salad, potato macaroni salad, somen salad or Chinese chicken salad (with Oriental dressing). Fried chicken thighs, chicken katsu (with sauce), chicken piccata, chicken adobo, mochiko chicken Parmesan, boneless korean chicken, boneless teri chicken and herb-roasted chicken round out the chicken dish selections. But wait, there’s still more. Teriyaki beef, honey glazed ham, shoyu pork, meat jun (with sauce), roast pork with mushrooms and gravy, pork adobo, roast beef with mushrooms and gravy, beef apritada, pork guisantes or baked ham with
pineapple raisin sauce are the choices for your meat entree. Fish dishes include shrimp tempura, sautéed fish (with choice of sauce), Chinatown steamed fish, fish almondine, baked fish, imitation crab cake, head-on salt and pepper shrimp or fish tempura. A sheet cake also can be added to your graduation menu for 75 cents a person. You can choose to add a platter to your menu as well. The Grilled Vegetable Platter with Asian Aioli Sauce ($60) or Assorted (ham, turkey and vegetarian) Deli Wraps ($70, 100 pieces per order). Hot and cold hors d’oeuvres also are available as a la carte items. ACE also has a Light Menu ($8.95/person), which includes teri beef, mochiko chicken, sauteed fish (with tartar or wasabi caper sauce), steamed white rice and tossed green salad.

If you’re craving that Island flavor, the Hawaiian Menu ($11.50/person) has all your local favorites: kalua pig, laulau, chicken long rice, lomi salmon, macaroni salad, steamed white rice, and haupia squares for dessert. There also is a Prime Rib Special ($21.95, minimum order of 10), which consists of whole roasted prime rib (with au jus and horseradish), barbecue teriyaki chicken, shrimp tempura (with tempura sauce), assorted sushi (maki, teppo maki and inari), steamed white rice, tossed salad (with choice of dressing), potato salad and assorted fresh fruits. With all these menu choices, the possibilities are endless. The revolving restaurant, located at the top of Waikiki Business Plaza, is ready to seize the day as well, with its Mother’s Day lunch menu available from noon to 3 p.m. May 13. illion Restaurant has become an island favorite — and something of a late night dining icon — for quality homestyle Korean food during its 25 years on Sheridan Street. After all, the Park family brings authentic Korean dishes and favorite family recipes to the table. The Park family consists of four sisters, one brother and their mother. “My mom, she’s a good cook,” says Diana Paik, one of the co-owners. “So we just followed her lead. “And my youngest sister, she went to Korea to learn how to make sauces and everything,” she adds. For example, the meat jun, which is one of the restaurant's most popular dishes, is a recipe that has been in the family for years. Paik says the sauce that they add to the dish is one thing that makes the meat jun stand out. Paik started making the meat jun three decades ago and has been perfecting it ever since. “Most of the dishes we have here are family recipes,” Paik says. “We don’t use MSG and we get our vegetables delivered fresh every day.” Paik explains that the family gets a lot of their inspiration from trips to Korea, where they learn about new dishes. Currently, the Parks are working on another new menu. Two of the co-owners recently went to Korea to find more new ideas.

ven if you have never been to Million Restaurant before, you’re sure to feel right at home from your very first meal here — a notion that certainly is drawing customers in. On one recent afternoon, a few various parties gathered together for a late lunch. And when one pair of clients walked in — a mother and son — they were immediately greeted by Diana Paik, who coowns Million with her mother and siblings. Paik later explained that the mother and son come into Million every day. And it’s easy to see why. Visiting Million Restaurant is almost like stepping into the Park’s own kitchen — the homey décor makes you feel instantly at ease, and the menu is comprised mainly of Park family recipes. Paik describes the restaurant’s cuisine as traditional, homestyle Korean food.

Customer favorites include Mool Naeng Myun + Kal Bi ($21), which is buckwheat noodles chilled in soup with barbecue short ribs, and Chicken Dol Sot Bi Bim Bab ($13), which is mixed rice with vegetables and chicken in a hot stone pot. Million is perhaps best known for its meat jun, which customers can feast on in a number of dishes, including Meat Jun and Mahi Mahi Fish Jun Plate ($11.95). Also joining the extensive menu are new items that have been added within the last few months, including the kim cheefilled Mung Bean Pancake ($5). “I soak the beans for two hours and then I make the sauce,” says Paik, explaining how she achieves the pancake’s flavor. Other new items include Kalbi Seaweed Soup ($13.95) and Dried Pollack Soup ($7.95 from 11 a.m. to 2 p.m. and $10.95 from 2 p.m. to closing),

which includes daikon and egg. Another new item is Yellow Corbina ($17.95), which Paik describes as a fish so good that it is usually is reserved for special occasions in Korea. Paik says that these newer items are among the best that Million has to offer and are some of her personal favorites. Million Restaurant also offers an array of Yakiniku options for the do-it-yourself diner. Options include Bul Go Gi ($22.95) or marinated sliced beef and Seh Woo
Goo-E ($22.95) or shrimp. “People can choose which ones they want and cook it themselves,” Paik explains. And customers who come by for lunch can take advantage of Million’s lunch specials, which include meals at discounted prices such as Kal Bi, Beef and Chicken Plate ($12.95) and Meat Jun Plate ($9.95). llow your taste buds to transcend great distances at Odoriko Japanese Restaurant, located in King’s Village Shopping Center in Waikiki, where locals and tourists alike enjoy the true concept of izakaya dining. “Odoriko is not just a dining establishment, it’s a place for socializing over drinks,” says general manager Hiro Takei. “We have a full izakaya menu, but we offer a much more comprehensive menu as well. We also have a full sushi bar and, of course, we have our hot pot entrees and full-set meals.” Odoriko’s Nabemono, or hot-pot dishes, are offered for lunch and dinner, and according to Takei, are quite popular. Dinner nabemono options include Shabu Shabu ($35 per order), Sukiyaki ($35 per order), Chanko-nabe ($38 per order) and Live Lobster-nabe ($45 per order).
A minimum of two orders is required and come complete with an appetizer, pickled vegetables, miso soup and rice. “Traditional nabemono are Shabu Shabu and Sukiyaki,” Takei explains. “With shabu shabu, you cook the assorted vegetables and New York steak in hot water, and there’s ponzu and sesame dipping sauces for additional flavor.” For a quick on-the-go nabemono lunch option, Odoriko also features Chanko Nabe ($16.50), Shabu Shabu ($16.50) and Sukiyaki ($16.50) to satisfy your appetite. All come with a bowl of rice. “Chanko Nabe is popular and is derived from the sumo wrestler days when sumo wrestlers would throw the whole kitchen sink into the hot pot,” Takei explains. “If you want a little bit of everything, this is a great choice. It consists of assorted vegetables, crab legs, clams, shrimp, fish, chicken meatballs and more.” Odoriko Japanese Restaurant celebrates its 40th anniversary this year, and Takei says Happy Hour is scheduled to start sometime next month featuring discounted prices. menu. In the mood for fish? Chef Chai never disappoints, always catering to the customer’s needs. In fact, he highly recommends diners sample a few of his edible works of art and hook into Ahi Katsu with Wasabi Curry Sauce and Fresh Tomato Mango Salsa ($16), and Gravlax Salmon Roulade with Cream Cheese and Crab Meat on Cucumber Chips ($14). While both incredibly onolicious — and healthy, I might add — the one dish that continuously works up my appetite is Crispy Whole Snapper with Sundried Tomato Citrus Buerre Blanc ($39). The meat is fall-off-the-bone tender and the taste is the epitome of brilliant. There’s no need to school you on the best cuisine because when it comes to fantastically prepared fish entrees, I think we’ve caught the prize at Chai's Island Bistro.

Wahoo’s Fish Taco With a name like Wahoo’s Fish Taco, you can only assume that you’ve hit the jackpot when it comes to fishy finds. Yes, this week, crazy about these sea creatures, I made my way to Wahoo’s Fish Taco in Kahala to savor the flavors found at this vibrantly refreshing establishment. With two locations at Ward Gateway Center and Kahala Corner, this California-based chain first made its way to the islands in 2006, when sisters Stephanie Gambetta and Noel Pietsch believed it was time for Hawaii to experience the finest in “California-Mex” cuisine.

The restaurant gives off a beachy vibe, welcoming to patrons just off the beach or business professionals wanting to grab a quick bite to eat. Wahoo’s specializes in tasty cuisine that is so healthy it’s ultimately guilt-free, and if you ask me, that’s the best kind of dining experience. Two of my faithful favorites are Wahoo’s Seven Layer Salad ($10.75 with fish) and Nachos with fish ($8.99). Who can resist these Nachos? Seriously, no one, because how can you when this pupu features crisp chips topped with gooey cheese served with fresh salsa, guacamole and sour cream? And to take this dish over the edge is the choice of spicy Cajun fish or grilled fish. I prefer spicy Cajun fish, which adds a bit of a kick to the already flavorful nachos. And if you opt for the more healthy option of the two, Wahoo’s Seven Layer Salad with brown rice, black or spicy
Cajun white beans, cheese, guacamole, shredded lettuce and cabbage, and salsa with your choice of fish, chicken, tofu, pork, steak or shrimp is sure to put a smile on your face as well. What I love most about Wahoo’s is the fact that you can always expect the freshest of fish — ono is the restaurant’s go-to fish of choice. Then, in celebration of Cinco de Mayo, Wahoo’s is celebrating with all-day specials including $2 tacos, $3 Coronas and $5 Margaritas. Live music plays on from 7 to 9:30 p.m. with a performance by The Deadbeats at Wahoo’s Kahala and Mike Love at Wahoo’s Ward.

Who or what inspires you as a chef? I fell in love with Italian culture and history. I lived in Florence and Sicily, Italy, for a combined four years, and being around that style of cuisine just made me fall in love with it all.

To name a few, Jeffrey Rush, cast member of Pirates of the Caribbean; Michael Cain and the cast of Hawaii Five-0, including Daniel Dae Kim. I like to serve everyone any dish that catches their eye … the best I can possibly create it.

t Fine Dining Burgundy, it’s all about the details in the food, wine and service. The eatery — which had its grand opening April 12 — features French cuisine in a comfortable, casual setting. Customers are encouraged to try the new eatery in order to experience French food and an excellent dining experience for a reasonable price. “The food and service makes our restaurant unique,” says chef Victor Straley. “We’re on the more upscale side, but our prices are going to be more on the bistro side — portions won’t be extremely large, but they will be extremely large in flavor. (Our target audience is) anyone with a fine palate who appreciates good food and wine. You have to not only appreciate the taste, but through the taste, know the process and the effort.” So far, the eatery has been the most crowded on Saturday nights, so general manager Jon Bransford recommends that customers make reservations before coming to Fine Dining Burgundy.
“On the second Saturday (after we opened), we started with 26 reservations and once they started coming in, by 6:30 p.m., the whole place was full,” he recalls. A lot of French cuisine involves lengthy preparation; some of the dishes and sauces on the eatery’s menu take two to three days to make. The eatery’s menu is divided into several categories — Amuse Bouche (small appetizers), Hors d’oeuvres, Salades (salads), Poissons/Seafood (seafood), Viandes (meats), Garniture (side dishes) and Desserts. Several dishes on the menu will be prepared tableside, but others will have had numerous hours of preparation done beforehand. A variety of wines also are recommended to complement the different entrees. “The wines are priced appropriately to pair with our menu prices,” says Bransford. “We’re moderately priced and the wines are designed in the same way. The price per customer — for a bottle of wine, an appetizer,

entrée and dessert — is $50 to $55 per person.” When it comes to popular dishes on the menu, Bransford names Homard rôti a la Nage “Pamplemousse” ($27) — a lobster roast with grapefruit nage — Cotelette d’agneau rôti au Roquefort ($25/$48), or a roasted rack of lamb, and Crème Caramel a la soupe de fruits ($8.50). All menu items are in French with English descriptions below. Menus in Japanese also are available.
“Nage is the sauce of the lobster,” Bransford explains. “It’s lobster with a touch of butter, white wine and a fresh, red grapefruit, so it’s more citrusy and summery instead of the traditional buttery and heavy. (For the lamb) we have a full rack and half rack of New Zealand lamb; it’s seared and then roasted with blue cheese and has a panko breadcrumb topping. Our featured dessert is called Crème Caramel et soupe de fruits,

which is basically flan.” Straley also mentions Pâté de campagne au Foie gras ($12.50) and the in-house, fresh Boeuf (Beef) Bourguignon ($23). The Pâté de campagne au Foie gras embodies a traditional French countryside dish, while Boeuf Bourguignon was designed to be the house special. The menu at Fine Dining Burgundy boasts other flavorful and unique dishes — such as Salad Tomate ($9.50), a tomato salad in the shape of a rose — that Straley encourages clientele to come and try. “Passion is extremely prevalent here,” Straley says. “We have the potential to make this place something Hawaii hasn’t seen.” While innovative ideas always seem to be churning in regard to the menu, Bransford says that more dishes will eventually be added to the menu, but not right away. “We will build up some other things that are really going to make the menu shine,” he says, “but for now, we’re running with these until things are solidified and smooth.”
