appy Mother’s Day, moms! This Mother’s Day, I’m going out on a limb and treating my fabulous mother to everything and anything ribs! First of all, my mom adores ribs and secondly, what’s not to love about “America’s favorite barbecue dish”? It’s a comfort meal that never ceases to put a smile on her face. So, with this said, this week, I ventured out to three Ono, You Know establishments best known for their tender, juicy, and oh, so delicious ribs. Hopefully these morsels of meat will tickle her fancy. It’s forbidden for all mothers to lift a finger on Mother’s Day, so leave the grill as is and let these following rockin’ restaurants do the dirty work.

sampling, if you haven’t already. “We have many Cantonese dishes on our menu, but we also feature Chinese dishes with a touch of local flair to it,” says owner Linda Chan. Honey Garlic Ribs ($9.95) is a good example of that. Doesn’t the name alone make your mouth water? Yum! This onolicious dish features eight pieces of ribs tenderized, deep-fried and then tossed in a special sweet and sour sauce. I have one word for you: amazing.
“The taste is a bit tangy,” Chan describes. “The sauce really is good. We add a hint of oyster sauce to the sweet and sour sauce. OK ... well, not quite, but if a meal with a view is what you’re after, you’ll find all of this and more at this award-winning establishment. Earning its spot as Hawaii’s only revolving restaurant, located on the 18th floor of Waikiki Business Plaza, this upscale restaurant offers diners an enchanting 360-degree view of beautiful Waikiki (the restaurant revolves one floor rotation every hour at rotates at the speed of about one mile per hour). Open daily, Top of Waikiki draws in the Happy Hour and dinner crowds with its eclectic cuisine with an emphasis on Pacific fusion. Executive chef John Neff

usband-and-wife duo Ken and Cindy Wong have brought the exotic flavors and vast culinary atmosphere from the thriving metropolis of Hong Kong to our majestic paradise here in the Islands. In 2010, the Wongs opened the doors to Anytime Cafe, an eclectic dining establishment that has it all. Conveniently located in Market City Shopping Center, Anytime Cafe caters to a diverse array of palates, presenting diners with a menu filled with more than 100 remarkable items to choose from, ranging from traditional Hong Kong favorites such as milk tea to some of the best pasta you’ve ever tasted.

You’ll find that in Hong Kong they can put it (truffle paste) on almost every dish. I wanted to create specials that showcase this paste, including Trio Shrimp Spaghettini and Cheese Ravioli. I think here in Hawaii there are not many restaurants that feature many dishes with truffle paste. Street food also is extremely popular (in Hong Kong). You’ll find street vendors selling sweet snacks such as Hong Kong-style DO: You recently traveled to waffles and mini egg pops, and Hong Kong in hope of returning we hope to have that available in with new culinary concepts for our restaurant this June. DO: Delicious! Anytime Cafe is a great place to bring the family, correct? Ken: Yes, we definitely have something on our menu that everyone will enjoy. We always aim to please, and our customers appreciate that they can find something that they love to eat, and don’t have to worry about their kids not enjoying the meal. For example, a mother might enjoy Wonton Noodle Soup and a child will be happy with pizza.
DO: There’s much for diners to look forward to. In fact, Anytime Cafe is releasing a couple of new dishes today! What can people expect? Cindy: We’re unveiling Cheese Ravioli ($12.95) in a creamy black truffle sauce, and Shrimp Spaghettini with Thai Curry Sauce ($12.95), which features tiger shrimp and fresh vegetables in a Thai red curry sauce served over spaghettini. It’s not too spicy. We have quite a lot of regular customers who give us ideas for new menu items. DO: Lastly, Anytime Cafe offers a fusion of flavors, from Chinese, Italian, local to everything in between. What makes your restaurant stand out above
9 the rest? Ken: We put emphasis on the highest-quality cuisine for an affordable price — we even import the pasta from Italy. I’ve owned so many different restaurants over the years, and I try to put all my experiences into one cafe. If you like to eat local food, Italian food, Asian food, we have it all here. DO: Very impressive. What have been the best-selling items here? Cindy: Most definitely our Baked Pork Chop with Fried Rice ($12.95) is our No. 1 entree, consisting of pork chop and onions with our own homemade tomato sauce over fried rice. Locals also really rave about Wonton Noodle ($7.95) featuring six pieces of shrimp wonton in a special broth. The broth is very delicious and the noodles really absorb the flavor. When it comes to appetizers, our Thai Style Pork Cheek ($6.95) is a hit. Ken: Our pastas are popular, too. Credit goes to our chef Sonny Laforteza.

ccording to The Kahala Hotel & Resort’s general manager Roseann Grippo, when it comes to Plumeria Beach House — the hotel’s oceanside restaurant — there’s one question on resort executive chef Wayne Hirabayashi’s mind: How do you infuse Maui lavender into a dish from Spain? This makes sense, actually, as Hirabayashi recently returned from another yearly, hotel-sponsored trip, which allowed the culinarian to pursue exotic flavors, then bring them home to meld gorgeously with local ingredients. This year’s inspiring destinations were Spain and Morocco, making it easy for Hirabayashi to answer the question. “We’ve done it,” explains Grippo, “We’ve done an amazing paella with an infusion of beautiful, beautiful lavender.” Such an innovative culinary feat is just one of many that have been previously featured in Plumeria’s new Bounty of the Seven Seas buffet ($55 Adults; $27.50 Children 4-12), available every Friday and Saturday from 5:30 to 9:30 p.m.
Why previously featured, you may ask? In addition to a consistent array of family-friendly entrees, seafood and desserts, a special portion of the truly unique seafood buffet is reserved for exclusive dishes created by Hirabayashi and his team of chefs. This exciting collection of eats is based on a different port of call from around the world each week. “Every time that you come in, there is a different cultural blend,” says Grippo. “We did the Seychelle Islands a couple weeks ago; we’ve done Japan, St. Maarten, Barbados.
We’ve done some really different and exciting places.” Just as important as bringing new tastes to the table is the restaurant’s longstanding dedication to supporting Hawaii’s farmers and using locally sourced ingredients. A farm-to-table establishment for years, the eatery expands upon this practice by “finding ways to infuse local flavors, and the ingredients we buy locally, into different ports and different countries’ flavors,” says Grippo. While Dining Out agrees it’s 3
heartbreaking that the paella was a fleeting bite, the future delicious possibilities are endless. May 18 and 19, you’ll feel as though you’ve landed in Italy as the buffet celebrates tastes from the Amalfi Coast. Revel in the way local ingredients showcase international flavors in Amalfi Seafood Soup, prepared with Hawaiian Seafood and served with Focaccia and Roasted Garlic Aioli. Experience a Caprese Salad seasoned with Molokai Sea Salt or Hawaiian Octopus grilled with sun-dried tomatoes, roasted potatoes and lemon vinaigrette. Then try the Garlic and Maui Onion Braised Lamb Shanks and Porcini Mushroom Potato Stew. As Grippo describes, “It’s really been a labor of love in the sense that our chefs have become inspired to find out about the foods from different places. Spain, Morocco — wherever it is, they have to adapt and learn that cooking style.” With so many new dishes to try, she emphasizes the educational dining experience that both the chefs and customers take part in. After ending your enticing journey with the buffet’s Amalfitan creamy custard and cherry tart, you’ll want to bring the whole family to try the seafood haven’s renowned breakfast as well, which is the only Hawaii-based menu to have earned a spot as one of Open Table’s 2012 Diners Choice Award winners for Best 100 Restaurants for Brunch in the U.S. With undoubtedly the most original seafood buffet in town, Plumeria Beach House’s menu continues to flower new culinary blossoms, and you’ll want to be there to taste them.

The Straleys aren’t the first customers to marvel at the tasty and cheap treats on the menu. A good starting point for newcomers is Stuffed Aburage ($1.25). That’s right, $1.25. Mosely stuffs the tofu with pork hash to create a moist and tasty way to begin your meal. Mosely’s current favorite — it
changes constantly — is the Barbecue Spare Ribs ($2.25). Yes, $2.25. The chunky ribs are boiled until tender and then panfried with Sweet Baby Ray’s barbecue sauce. From there it flies out the door nearly as fast as Mosely can cook it up. In fact, a week ago, a customer ordered half a pan of ribs. The second guy in line ordered the other half. Don’t worry, Mosely will make more.

The most expensive singleperson item on the menu is the plate lunch, and that comes in at whopping $7.85. For those with a smaller appetite, Mosely has created a new mini plate option for $5, which includes rice, mac salad and a stir-fry mix of vegetables and either beef, chicken or tofu. In addition to the apparently unending menu, Nuuanu Okazuya offers five types of dip-

“Mistah Saimin’s” lasting legacy By Alana Folen
T
he man behind the magic of Shiro’s Saimin restaurants, owner and founder Franz Shiro Matsuo, lived life to the fullest and did not look back. Matsuo, otherwise known as “Mistah Saimin,” died May 3. He was 93. Although his smiling face and bubbly personality that would always grace the Waimalu restaurant will be dearly missed, his legacy will live on forever through the restaurant’s tasty offerings (60 different saimin noodle combinations), his witty poetry and those whose lives he deeply touched. “Shiro would come to the restaurant almost every day just to sit and chat with customers,” says Shiro’s Saimin Haven’s vice president Aaron Lee. “He was a man who did it all. He was even driving on his own until this past January. “Our loyal customers have come by to offer their condolences, and we’re grateful for their support,” he adds. Matsuo is survived by daughter Linda, son Alan, six grandchildren and three great-grandchildren. Funeral services are set for 5:30 p.m. May 30 at Mililani Mortuary-Waipio, mauka chapel.

he pure philosophy driving Shor American Seafood Grill’s island-inspired culinary creations is sustainability — at no expense to the cuisine’s flavor. In fact, it’s the local ingredients used throughout the Hyatt Regency Waikiki restaurant’s menu that contribute to an irresistibly fresh and appetizing dining experience.

“We are an American grill, so we focus on fresh seafood and simply great meats,” says executive chef Sven Ullrich. “But we stay with the sustainable aspect, which means doing the right thing. That’s what Shor is really all about — it’s about local cuisine, and having sustainable and local vendors.” The breezy restaurant, which features an expansive lanai with stunning views of Waikiki beach, presents Big Island Kulana striploin ($36), made with 100 percent grassfed beef. The proof is in the lean steak’s fuller, richer and slightly gamey flavor. Deliciously prepared peppercorn sauce accompanies the tender meat perfectly, along with Parmesan asparagus and mashed potatoes.”This is the healthiest kind of beef you can have,” says Ullrich. Another locally sourced meat sensation that absolutely bursts with flavor is Baby Back Ribs ($14), made with Shinsato Farms pork.

These must-have ribs are prepared with theb tenderest of small-rib cut meat. The succulent wonders have a smokey flair and are finished with a divine guava and hoisin glaze. In true American-grill fashion, the establishment focuses on serving the best in seafood as well. Plump, Garden-Isle shrimp give Kauai Shrimp Scampi ($36) a flavor only possible from a fresh catch. The seafood is combined with a marvelous marinara sauce, made the Italian way, where Kahuku tomatoes are slowly roasted to bring out their intense flavor. Herb linguini, chopped garlic, onion, a touch of cream and fresh basil harmoniously bring the meal together. For a starter, or simply a lighter bite, try Pear Salad ($13), which presents young greens, cucumber, macadamia nuts and Maytag blue cheese, which contrasts wonderfully with the fruity pop of mango dressing. ‘Nalo greens. “Why use lettuce brought in from somewhere else twhen you could eat locally?” adds Ullrich. The executive chef, originally from Germany, brings his experience and talents to 1-year-old Shor after having worked as executive chef at Grand Hyatt Tampa Bay and Park Hyatt Hamburg in Germany. He also worked as chef de cuisine-tournant at the Grand Hyatt Melbourne in Australia, and chef de cuisine at Hyatt aRegency Sanctuary Cove in Australia. For the past seven months, he’s brightened the Waikiki eatery with his culinary expertise. “Hawaii has a wealth of flavors that are not available anywhere else in the world, and I am ready to be a part of this exceptional community,” adds Ullrich.
The restaurant is taking food sustainability one step further as well. To Ullrich, doing the right thing not only means using the best our local waters have to offer, but also ensuring that it is the appropriate time of year to utilize each fish. Additionally, supporting as many local vendors as possible remains an ongoing goal at Shor. End your locally made meal with delightful House-made ice cream ($8). The creamiest of coconut sorbetto dazzles, while the ginger lychee flavor refreshes. And a uniquely yummy taste of the buttered popcorn option is an absolute must. The dish gives off a sweet flavor with a little bit of spice. “Actually, this dish came about because Kalani is one of my sous chefs and he likes braised meats, so we collaborated to put this dish together,” he says. Tony Roma’s Lastly, Tony Roma’s must make its mark on the ultimate rib frenzy. With one location on Kalakaua Avenue in Waikiki and another on Kaonohi Street in Aiea, this favorite eatery is a renowned go-to spot for ribs. The Waikiki eatery opened its doors to hungry diners in 1980, and regional chef JP Choy has been cooking up a storm in the kitchen, catering to a plethora of palates. “Our menu is so diverse — we have ribs, seafood and steak,” says Waikiki general manager Grace Villagracia. “However, people still come here primarily for the ribs.” And that's no surprise, because Tony Roma’s makes finger-licking good ribs that are out-of-this-world. 1 2 | D I N I N G O U T | M AY 1 3 - 1 9 , 2 0 1 2
According to Choy, the Waikiki eatery sells close to 300 slabs of ribs per day, in fact. Tantalizing Tacos

ith three locations on Oahu — Ward, Kahala and a lunch wagon parked at Sandy Beach — Wahoo’s Fish Taco brings the flavors of California-style Mexican cuisine to the Islands. Plus, Wahoo’s utilizes fresh ingredients, offering a healthy take on its flavorful fusion food. “We make all of our sauces, and we marinate all of our meats,” says Noel Pietsch Shaw, who co-owns the Oahu locations with her sister, Stephanie Gambetta. “It is really a pure, healthy product, and that’s kind of what our large following of regulars appreciates.” Among Wahoo’s most popular items is Seven Layer Salad ($7.75), which includes brown rice, black or spicy Cajun white beans, cheese, guacamole, shredded lettuce and cabbage, salsa, and a choice among fish, chicken, tofu or pork (add $3) or steak or shrimp (add $5). It also is served with a roasted pepper cilantro sauce. Another customer favorite is Wahoo Bowl ($10.75), which features flamegrilled fish, blackened or teriyaki. The bowls can be served with ahee rice or brown rice, and also include black beans or spicy Cajun white beans. And if you’re coming to a place with the words “fish” and “taco” in the name, chances are you’re going to want to try the fish tacos. And when you do, you’re going to want more than one. You can get two flame-broiled or blackened Soft Tacos with fish for $7.30. The tacos are filled with cheese, lettuce or cabbage and salsa

or a restaurant chain that has more than 50 locations spread throughout several states across the country, Wahoo’s Fish Taco has modest beginnings. It was created in Newport, Calif., by Co-owner three brothers who had grown up Noel Pietsch helping out in their parents’ Chinese Shaw with Wahoo Bowl restaurants, first in Brazil and later in California. In their spare time, they often travelled to Mexico on surf trips. They were inspired by the type of cuisine they encountered on their trips — simple, light tacos made with fresh grilled fish. The brothers started up just one taco shop, and its popularity quickly spread throughout Southern California — and soon, throughout the country. And although Wahoo’s is now a bona fide chain restaurant, it has still stayed true to its origins by utilizing fresh, healthy ingredients. “That is originally what got my sister and me interested in bringing the restaurant to Hawaii,” says Noel Pietsch Shaw, who co-owns the island’s three Wahoo’s locations with her sister, Stephanie Gambetta. The two were inspired to bring Wahoo’s tasty tacos to the Islands when they were living in Los Angeles. “We got to know the company when we were living in L.A.,” says Pietsch Shaw, “and we thought it would be a good fit for Hawaii.” They opened up Wahoo’s at Ward in 2006, and the Kahala location launched in 2010. In addition, there also is a lunch wagon based at Sandy Beach Park. “I think there is a market for people with busy lifestyles — for families where both parents have careers — to get a quick product at a reasonable price that is healthy for you,” she says. “We really value what we put in our bodies, and we’d only want to be involved in a business that we can stand by completely. And Wahoo’s is definitely that.”

— all on top of a local corn tortilla. “We make a huge effort to do local,” Pietsch Shaw says. “Our tortillas are local, our cabbage is local, our tomatoes are local, the green onions. So a large portion of what you get in a taco or a salad is actually from Hawaii … That is important to us — to make things as fresh as possible.” Wahoo’s also is the perfect place to find some pau hana fun — especially during its crowd-pleasing Taco Tuesdays, which takes place weekly at the Kahala location, starting at 5:30 p.m. On Tuesdays, tacos are just $2, and Primo beer is $2. Live music, which features a rotating set of various bands, begins at 6:30. The same deals also are available during Wahoo’s Wednesdays at Ward, while Wednesdays at the Kahala store are for Family Night. On Family Night, a child can eat for free per every adult meal purchase. Please note that all of these deals are for dine-in customers only. If you are stopping by the Kahala loca-
tion for a drink after work, be sure to try this month’s drink special — Black Raspberry Paloma ($5), which is a layered cocktail with tequila, fresh lime juice, grapefruit juice, black raspberry liquor and soda water. Each month, Wahoo’s at Kahala (which has a full bar) mixes up a new $5 drink special. For those who just can’t get enough of Wahoo’s, you can take it home with you. The restaurant offers party platters, a taco bar and even a full-service catering option. Catering starts for as little as $8 per person.
