othing signifies summer more than a ripe, juicy and succulent mango! Regarded as an extremely versatile fruit, mangoes (ripe or unripe) are widely utilized in many world cuisines. Sour, unripe mangoes are found in chutney or used to make pickled mango (my absolute favorite). When ripe, the mango is generally sweet, fleshy and perfect. Did you say mango bread? Mango pies? Mango smoothies? I’m all over it. Cheers to mango season! I guess word of my love for mango spread, because a couple of weeks ago I was asked to judge the Mangoes at the Moana Recipe Contest held at Moana Surfrider, A Westin Resort & Spa, where many mango enthusiasts submitted mango masterpieces created from their favorite recipes. I sampled everything mango, from mango carpaccio to mango scones. Talk about a hard job — but someone’s gotta do it!

In fact, this drink was proclaimed a winner in Mangoes at the Moana’s Mango Cocktail Mix Down, where all entries comprised of mango and Kettle One Vodka. “It's almost like a blended vodka pina colada,” says Japengo restaurant manager Michael Hutton. “I came up with this drink on my own, I was inspired by the red dirt on Kauai.” It’s sweet and savory, and boasts Kettle One Vodka, Grand Marnier, fresh Hayden mango and li hing mui powder. Mango flavored boba tops it off. According to Hutton, locals fall headover-heels in love with this drink. And although I sampled a virgin Red Dirt Chi Chi, I couldn’t agree more.
So now, weeks later, thoughts of onolicious mango still dance in my head, and in order to calm this mango madness I looked to a few beloved Ono, You Know hot spots for help. Believe me, this week, I surely “mango tango’d” my way to pure bliss! I’m one happy gal!

ituated on the beautiful shores of Waikiki is Ocean House, where casual elegance, class-act customer service and world-renowned cuisine are right at your fingertips. Whether you’re out enjoying a meal with the family, or taking part in a romantic dinner for two, one thing’s for certain, each and every guest is always treated to unforgettable meals for breakfast and dinner, expertly prepared by executive chef Craig Yasaka. Dining Out recently paid a visit to this premier establishment, and while soaking up the sun and breathtaking views of Diamond Head, we caught up with general manager David Nagaishi, who eagerly shared exactly what keeps Ocean House at the top of its game for the past 10 years. DO: Ocean House, located oceanfront in Outrigger Reef on the Beach Hotel, opened its doors in April 2002, and this year marks its 10th anniversary.

You’ve been here since the beginning. How has the restaurant progressed since then? Nagaishi: It’s so neat because I’ve been able to watch the restaurant grow. We still have return customers who have dined with us since the beginning. I see a lot of people come through the doors, even celebrities such as Adam Sandler, princesses from Saudi Arabia and more. There are so many guests who travel to the Islands each year who make it a point to visit us, and that’s a huge compliment! And I love the local people who are such loyal patrons. DO: What is the concept behind Ocean House and what can diners expect? Nagaishi: Ocean House has a nice plantation feel, as if you were dining at a friend’s house. We offer a very nice and relaxed atmosphere — the ocean is just steps away and the sound of the waves crashing on shore is soothing. Our main goal is to

1 make our guests feel as if they are at home. We serve island cuisine — we have a little of everything here. Our restaurant has definitely progressed cuisine-wise, but we still kept the authentic island feel. We’re always changing with the times, the seasons and the new trends. DO: Upscale, casual dining is the main focus here. What are some signature items that diners love? Nagaishi: Our Parmesan Crusted Opah ($34.50) is a mainstay. It features Hawaiian moonfish, pan-seared with a light lemon caper butter cream sauce, and served with grilled Kahuku corn and sun-dried tomato polenta. Of course, the Ocean House specialty is Hawaiian Sea Salt Slow Roasted Premium Angus Prime Rib. Diners may choose from The Ocean Cut ($34.50), a heartier portion of juicy, tender beef; Lite Cut ($31.50), a smaller cut for a lighter appetite; The Alii Cut ($42.50), generous bone-in

cut fir a king-size appetite; Pulehu Prime Rib ($36.50), grilled with garlic and fresh herbs; and Blackened Prime Rib ($36.50), pan-seared on an iron skillet with Cajun spices served with a sweet Creole sauce. All prime rib entrees are accompanied with traditional English peas, creamy horseradish and Maui onion mashed potatoes. People really love our Sizzling Ahi Carpaccio ($14.50) as well. DO: In honor of its 10th anniversary, Ocean House is celebrating with some changes to its menu concept. Is that correct? Nagaishi: Yes. As far as our anniversary, we have some new menu items, which are geared toward healthier trends. These new dishes offer a lot more vegetables and healthy grains, such as quinoa, polenta and others. Guests have been loving our Roasted Beets and Island Papaya Salad ($11.50). We also have nice gluten-free menu options that a lot of people are taking advantage of, as well as vegetarian and vegan options. A popular gluten-free creation is Vegetables and Saffron Quinoa Saute ($24.50), which consists of broccoli, snap peas, carrots, onions, squash, zucchini, mushrooms and asparagus sauteed in a light lemon, garlic and olive oil. It’s very tasty. For our 10th anniversary we wanted to do something special, so we’ve added various new items to our menu, such as Hawaiian Sweet Bread Stuffed French Toast. Priced at $14, this favorite is filled with guava jam and topped with toasted coconut. Macadamia nut cream syrup completes this dish. DO: Ocean House originally was known for its predominant seafood selection, but since then many hearty dishes have been brought to the table, especially for meat eaters. What are
some relatively new entrees that carnivores can look forward to? Nagaishi: Definitely our Grilled Veal Chop ($39.50). Veal is a filet with an attitude. We present you with a 12ounce cut served with wild mushroom, Madeira demi, topped with avocado gremolata butter, tomato concasse, grilled hearts of zucchini and served with a risotto croquette. However, our seafood selection continues to be strong. In fact, our Ginger Green Onion Steamed Monchong ($32.50) is a hit. This island favorite is delicious, and served with yuzu chinoise sauce and a medley of stir-fried vegetables. DO: Does the restaurant obtain any of its products locally? Nagaishi: Yes, executive chef Craig Yasaka uses as much local produce as possible. We use a lot of local, line-caught seafood, and a lot of our vegetables are all

grown here in the Islands. DO: Are there any promotions or specials diners should be on the lookout for? Nagaishi: Yes, for the entire month of August we have two specials going on. First, with the purchase of a breakfast entree you’ll receive a glass of fresh-squeezed grapefruit or orange juice on the house. Secondly, patrons will be treated with a complimentary Uncle Moki’s Chocolate Lava Flow Cake with the purchase of two entrees when you bring in the Dining Out ad on Page 23. This dessert is big enough to share and is one of our best-sellers. DO: What are your hopes and dreams for Ocean House in the next 10 years? Nagaishi: Simply put, we hope that the cuisine will keep improving, along with our service, and we hope our customers keep returning for more!

uch has changed in Waikiki since Odoriko opened its doors 34 years ago. Hotels have come and gone, and shopping centers have opened, closed and changed names. But the tasty Kyotostyle menu at the King’s Village Shopping Center restaurant has remained. The Takei family opened the eatery in 1978 as a companion to their Ilikai Hotel restaurant, Maiko, which they opened six years prior. Today, the family is still in charge and outdoing its signature pupus in a fast and friendly style. Believe it or not, the six course SushiKaiseki ($47.50) is designated as a one-person appetizer/main-course menu item. Whether it’s a pupu or something more is up to the diner. The adventure begins with pickled vegetables, soup and rice. After that comes the sashimi, shrimp and vegetable

tempura, nigiri and ahi sushi, beef teriyaki and butterfish misoyaki. If you’re still hungry, desserts are on the menu as well. A particular favorite was Garlic Shrimp ($12.95). Six pieces of moist shrimp are de-shelled and sauteed in a garlic, butter broth. The result is a sweet dish of shrimp served on a dainty dish and with just enough garlic to ward off vampires, but not dinner guests. In that same vein — but different — is Garlic Buttered Clams ($10.95). The clams are simmered in a seaweed and bonita soup, and mixed with garlic and butter. Light, flavorful and sweet, it’s
what clams should be. If you’re a fan of Kalbi (And who isn’t?), Barbecue Combo ($13.50) may just be what you’re looking for. The beef is sweet and smoky with just the right amount of char. The tanginess of the teriyaki chicken is a nice complement to the beef, and both go well with an icecold mug of Asahi or Sapporo beer. One more chicken appetizer to mention is Chicken Karaage ($10.50). Deep-fried, tender and tasty, the chicken is coated in a flour, egg and garlic mixture that just goes with everything. You may want to schedule more than one visit to test the theory.

It’s in our blood, definitely. My Cinamon Twist mom, Irene, still comes in every ($1.65 each) day. And we kept our dad (who has since passed) with us. We have his picture here, so he still overlooks the bakery.” Larry’s Bakery opened 52 years ago in Waimalu Shopping Center before relocating to Salt Lake 14 years ago and adding a storefront three years ago. About a month ago, they joined the Momilani Farmers Market in Pearl City on Fridays and have reconnected with many customers from its early days. Well, much credit goes to the many chefs, owners and managers who work diligently day in and day out to make sure Hawaii’s diners have a top-notch dining experience. This week, Dining Out got the inside scoops from Kenny’s Restaurant sous chef James Drewery, who gave us a little taste of Kenny’s and shared just what fuels his culinary drive.

Who or what inspires you as a Chef? There are three people in my life who have shaped my career. First my Mother, she constantly told me I can do anything if I set my mind to it. When I was growing up it wasn’t acceptable for a male to

I love it when people tell me that I’m an awesome cook, but the highest compliment I can receive here at Kenny’s is from my staff. Since I’ve been working at Kenny’s, the staff has embraced me and though we are from different cultures and backgrounds we have become one big family. Cooking at Kenny’s isn’t about one person, it’s a team. And although I’ve created some new dishes, Kenny’s Restaurant is known for its classic entrees, for example, Korean Fried Chicken and Chinese Chicken Salad. I learned to prepare those classics from the longtime kitchen staff of the Restaurant. There are a lot of people behind the scenes preparing, cooking, serving, making sure that the customer enjoys a favorable dining experience, and they also deserve recognition.

If you could serve food to a celebrity, who would it be and why? What dish would you serve? I would love to cook for G. Garvins. He’s an AfroAmerican Chef that gained notoriety for his simplistic approach to cooking. Whether you are an experienced chef or a person who wants to learn the basics, his book can teach you. I also admire him because of his desire to work with under privileged kids. He started the foundation called, “One Bite at a Time” for kids ages 16–19, and it gives them the ultimate culinary experience. A quick fix at Asian Mix still find some faves here. Tofu and Eggplant with Garlic Sauce ($7.95), for instance, contains absolutely no meat products, according to owner Daniel Leung. The sauteed tofu and eggplant are served in a rich, dark garlic sauce. But that’s not all. “We can do vegetable fried rice and vegetable noodles, the way vegetarians like it," Leung says. He also recommends Vegetables with Garlic ($7.95), in which veggies including carrots, broccoli, choi sum and mushrooms are stir-fried with savory garlic, as well as the Vegetarian Bento ($5.45), which, along with a healthy helping of vegetables, comes with nishime, pickled vegetables and rice (for brown rice, add 50 cents). And, as you can see, it’s all quite affordable. Ready to mix it up?

ithin the perimeter of Hilton Hawaiian Village, there are many hidden wonders, but Tropics Bar & Grill in the Alii Tower probably tops them all (yes, even the penguins). Head chef Kapo Kealoha serves up great meals for all your breakfast, lunch and dinner needs, and with an extensive menu of classic and local favorites you’re sure to find something to satisfy your appetite. “From beginning to end, this is our three-a-day restaurant on property,” Kealoha says. “We roll anywhere from 1,100 to 1,300 people through here a day for breakfast, lunch and dinner.” It’s obvious that the dishes at Tropics, along with the friendly wait staff and beautiful ocean view, bring in customers in droves, and diners can be sure they’re getting good food for a great price. “We’re in a hotel, so the first thing customers need to be absolutely positive about is that it’s going to be worth every penny. Looks, taste, from top to bottom it has to be worth the money. That’s what we’re shooting for,” adds Kealoha. And in a time of healthconscious eating and counting calories, patrons can be sure that their food will not only be tasty, but

also healthy and locally grown. “You either get on board or shut down and get out of the way,” he says. Kealoha commented that Tropics likes to get as many things locally as possible in order to promote local farmers. According to the head chef, the fish and tomatoes are local, and most of the veggies that Tropics brings in are locally grown, as well. “It just makes sense,” Kealoha says with a smile. “If we can get it fresher here, why not get it?” His attention to detail and desire to create dishes that will please every customer shine through in every meal. Furikake Beerbattered Fish & hips C ($18) puts a local spin on a classic dish. “We make our own tempura batter with beer and furikake flakes, and the fish in the dish is usually the fish of the day,” Kealoha says. “Most of the time we change it up, so don’t be surprised if you ask your server what the fish is and they tell you hebi, or opah or mahi.” And Kealoha never uses frozen fish. “I don’t like it at all,” he says adamantly. “So we don’t bring it in for any fish dish on our menu. Everything is brought in fresh.” One of the most popular dishes at Tropics is Pepper Seared Rare Ahi Tuna Salad ($18), and according to Kealoha, it’s the closest thing to a signature dish at the restaurant. The salad comes with an amazing (and addicting) wasabi ponzu vinaigrette, and you just might find yourself struggling to get every last drop. Also, the ahi is flown in fresh daily and seared and sliced by the well-equipped
chefs in the kitchen. If you want a pizza that’s a break from the norm, Tropics’ Grilled Chicken and Mushroom Pizza ($16; $14 during happy hour from 3 to 5 p.m.) is a must-try. “As far as our pizzas go, this is one of our most popular pizzas,” Kealoha says. And it’s no wonder why it’s so popular. The dough is handrolled, covered in a basil pesto sauce and topped with fresh goat cheese, grilled chicken and mushrooms from the Hamakua Coast on the Big Island. For a heartier meal, there also is a 10-ounce hand-cut New York Steak ($34), and the Citrus Crusted Island Fish ($28) will definitely fill you up. While the previous three dishes are served on the lunch and dinner menus, the steak and island fish are available only on the dinner menu. Upon ordering the Citrus Crusted Island Fish, you’ll notice the array of colors and different ingredients all masterfully and beautifully placed on the plate. “Our citrus fish is basically our fish of the day for the restaurant,” Kealoha explains. “It can be ono, it can be mahi, it can be anything.” The fish of the day sits atop a sweet potato puree sauce with a touch of honey, and the best and healthiest part of all? There’s no cream in it. The dish also comes with cut fingerling potatoes and a medley tomato ragu. With so many restaurant choices on the island today, you want to make sure you’re eating healthy food that tastes delicious, and Dining Out thinks that Tropics at Hilton Hawaiian Village is doing things right and tasty.

s a food enthusiast, the only question I have about Dean’s Drive Inn is, why didn’t I know about this place for the last six years? It has the best in fresh, localstyle plate lunch with a gourmet touch. Just recently, I joined the throngs of diners ready to get their lunch on at this popular Kaneohe eatery, and I have to say, my taste buds are thanking me. It makes sense that Dean’s is the kind of place with a loyal following, seeing as you can’t help but fall in love with this cozy little spot when you meet the wonderfully warm Mishima family, who owns and operates it. And did I mention the food is amazing too? Owner/chef Dean Mishima brings three decades of experience in the restaurant business to his drive inn, serving up fresh local fare from behind the counter. One thing you’ve got to try is the Ahi Cake Sandwich topped with sweet chili aioli sauce ($9.95), as it takes the chef’s famous ahi cakes to a whole new level. These light, moist patties are topped with lettuce, onion, tomato and a delicious sauce, then served with a choice of homemade soup, tossed salad or french fries.

The restaurant’s inviting atmosphere is reflected in its menu as well with some delectable grinds for vegetarian palates. Tofu Steak topped with ogo lomi tomato ($9.95) presents an exciting array of fresh flavors. “We top it with a little teri sauce,” says Dean. “You get a little sweet taste, and then the crunch from the ogo (seaweed).” Regulars also can’t get enough of the chef’s fresh catches. “People, especially in this area, they love fish, fresh fish,” he explains. “All my fish is all-local, Island fish.” The menu currently features a mouth-watering bite of Fresh Island Ahi Belly topped with shoyu ginger sauce ($11.45). “We fried it so it’s crispy, then we top on the shoyu ginger sauce.” You won’t be able to
leave the drive-inn without devouring something from the display case, which features deliciously addicting cornbread and a selection of desserts made by Dean’s wife, Doreen. One of her new creations, Baked Butter Mochi with haupia pudding ($2), is gaining quite a following. The beautiful combination of rich, gooey, buttery mochi topped with the creamiest of haupia puddings truly lends to an “aha moment” in dessert clarity. “We just recently started making that, and I couldn’t fill (the case) fast enough,” says Doreen. “She makes all kinds of desserts here,” adds Dean. With that, I wish you a happy journey to Dean’s Drive Inn, and I’ll probably see you in line.

tep into Red House for a unique dining experience. Recently opened about seven months ago, this hip and modern restaurant, located on Keeaumoku Street in Honolulu, is hard to miss. And once you dine here, it’ll be even harder to forget. Taking pride in Korean fusion, the interior of Red House is very modern, and 1 Kimchi Noodle full of red and white décor. Dining Out caught up with Elaine Brewster, and Ann and Michael Mezzacappa visiting from out of town. While it was Ann’s first time in Waikiki, Elaine and Michael had visited 10 years prior, and said they had to come back to Wailana Coffee House.
Elaine Brewster: “I ordered the teri burger special (Tokyo Burger, $6.75) with the salad bar ($4.35) and curly fries. They have good food, good service and the price is right.”
Ann Mezzacappa: “My teri burger (Tokyo Burger, $6.75) came with a salad bar, and the girl at the salad bar really impressed me, she was very helpful. Everything so far has been delicious, and you can’t beat the price.”
Michael Mezzacappa: “I actually just got a regular hamburger (Wailana Burger, $8.50). We came here for the first time 10 years ago, and it was good enough for us to remember and come back.”

this week, Chef Wayne kicked this popular appetizer up a notch. “Here I’m featuring three different types of local mango, including Hayden mango sauteed with lemon grass and Chinese parsley, puree mango combined with rice vinegar, and a mango bread twill baked to a crisp,” he explains. “Other garnishes are grilled coconut chutney, Molokai red sea salt, herb oil, and balsamic and lehua honey reduction. “Traditionally, when you eat foie gras, you like to have something sweet and savory to counteract the richness of the liver, and that’s where the mango comes in. Mango is a very versatile fruit, it’s sweet and savory,” he adds, noting that mango season continues through the end of August. Foie Gras with roasted mango and grilled coconut chutney also will be served as one of the Julia Child’s special dishes featured at Hoku’s. any Chinese food enthusiasts probably have been to Panda Cuisine on Keeaumoku Street over the years, but what they might not know is that as of earlier this year, the restaurant is under new ownership. Longtime chef and restaurateur John Liang took over Panda Cuisine several months ago, and with Liang’s leadership, Panda Cuisine has revamped itself. Panda offers fine Chinese dining in an upscale atmosphere, and now is dedicated to providing its customers with fresh, live seafood. While Panda no longer serves dim sum, it more than makes up for it with its quality seafood and affordable prices. “When people come to Panda, they can eat all kinds of different seafood in

Other dishes include Chinese Broccoli with Beef ($11.95) and Roast Duck ($14.50 for half a duck). One thing that hasn’t changed with the new ownership is Panda’s late-night hours. The restaurant is still open until 1 a.m. every day. And Panda has the perfect fuel for those afterhours: It recently launched its “under 10 after 10” menu. Starting at 10 p.m. every night, a wide selection of menu items will be available for under $10. Prices range from $6.99 to $9.99. Also during these hours, beer will be on sale for $2.50 per bottle. Panda also offers lunch specials for $7.99. The lunch menu includes about 80 selections — and all are served with rice and soup.

ccording to International House of Pancakes (IHOP) Hawaii director of operations Jason Aldaba, they’re “light and fluffy and definitely meltin-your-mouth with syrup and butter.” That’s just the flavor description Dining Out looks for when in search of the perfect pancakes, and it’s no surprise that IHOP delivers with its famous traditional and topping-filled varieties. “We sell thousands of pancakes each day at our stores,” he says. Original Buttermilk Pancakes ($8.99) continues to be a customer favorite and presents a sumptuous stack of five golden hot cakes for anyone in need of a nice ’n fluffy American breakfast. “I love the pancakes,” says sales and marketing coordinator Miwa Ogletree. “It’s a flavor you never get tired of.” In addition to the sweeter things in life — namely pancakes, waffles and crepes — the national chain also dishes
