t’s never a good thing to “go belly up,” but there are always exceptions to the rule, especially when it comes to pork belly! In this case, to “go belly up” insinuates nothing but goodness! Pork belly is a boneless cut of fatty meat derived from the belly of a pig. Over time it has grown in popularity, and is a cut of meat that stands at the forefront of Asian cuisine and is found in many traditional European dishes as well. And while some may be “piggy” about their pork belly, have peace of mind knowing that the following Ono, You Know hot spots provide you with varieties of this savory dish. So, without further ado, just call me Miss Piggy as I dig right in!

When you’re always on the go and in need of a break, why not escape to The Mandalay? And, no, I’m not referring to Mandalay Bay Hotel and Casino on the Las Vegas Strip. Instead it’s The Mandalay located
on Alakea Street that will provide some much-needed R&R for your appetite. Owned and operated by husband-andwife team of Larry and Linda Chan, this downtown Honolulu establishment boasts quite a repertoire of Cantonese cuisine, including Pot Roast Pork ($12.95) “Pork belly is so delicious because it has a layer of fat over the meat, and you have to have that fat for the meat to be juicy,” Linda explains, adding, “A lot of people order pork belly for parties, and we can prepare it with vegetables or taro, but people must order it a day in advance. The party size costs $38 and can feed a table of 10.” Yet, if you’re just craving pork belly on any given day, The Mandalay serves up quite a masterpiece. “It’s a long cooking process,” Linda says. “Our chefs first season the pork belly with shoyu and five spice, then they deep-fry it and then finally roast it.” Lastly, it’s drenched in a sauce comprised of five spice, shoyu and bean curd. This traditional Chinese dish is a winner in my book, and you haven’t experienced all that is pork until you’ve set your taste buds on pork belly at The Mandalay. he golden opportunity came in 1982 when Colin and Darlene Fong migrated to Hawaii from Canton, China. Now, 30 years later, this husband-and-wife team is busier than ever as part-owners and managers of Golden Duck Chinese Restaurant in Kahala. A family affair, Darlene’s brother Aaron Fang manages the original South King Street establishment.

Pay a visit to either location on any given day, and you’ll notice the place bustling with new and loyal patrons with an appetite for authentic Cantonese fare. “It’s hard to believe that our South King Street restaurant has been open for 10 years already, and this year we will celebrate our second anniversary at the Kahala location,” says Darlene Fong, who you’ll often find at Golden Duck Kahala happily greeting customers who now seem like longtime friends. “Since we opened the Kahala location we’ve seen a lot of new faces and it makes me very happy. New customers soon become regulars, and we start to know them by name and build relationships with them,” Fong explains. Customer loyalty could

Here at Golden Duck Chinese Restaurant, more than 150 items grace the menu, with the most popular dishes being Beef Stew Casserole ($9.95), Black Mushroom with Tofu and Choy Sum ($7.95), Shrimp with Honey Glazed Walnut ($11.95) and Peking Duck with Buns ($18 for a half duck, $35 for a whole duck) — that’s just the tip of the iceberg. “Everything is cooked fresh daily,” Fong says. “We specialize in Cantonese food, but do offer Szechuan-style cuisine as well, which is known to be a bit spicier,” she adds. “People also can request for no MSG.” Beef Stew Casserole is a traditional Cantonese-style dish cooked in a ceramic bowl and features tender, melt-in-your-mouth morsels of beef, bean curd and mushrooms, seasoned with five spice, and garnished with ginger and onion. Shrimp with Honey Glazed Walnut is a local Chinese classic, and vegetarians relish Black Mushroom with Tofu and
Choy Sum, which is stirfried and generously splashed with oyster sauce and garlic. “Currently, our Live Maine Lobster ($13.99) and Dungeness Crab ($25.99) is in high demand,” Fong states, noting that customers can request to have it prepared with salt and pepper seasoning, ginger and onion sauce, black bean sauce or have it steamed. “All crab and lobster are brought in fresh every day.” And as a way to give back to its patrons, Golden Duck is offering three of its classic dishes — Oyster Sauce Chicken Cake Noodle, Chinese Chicken Salad and Crispy Gau Gee (10 pieces) — for a special price of $5.99 per dish. “We cater to families and encourage them to dine here, and it’s specials like these that we are happy to offer,” Fong says with a smile. For dinner parties of 10 to 12 individuals, Fong recommends taking advantage of the set menus. With six set menus to choose from, ranging in price from $168 to $288,

each menu presents you with a spread highlighting some of the best in Golden Duck cuisine. The bestselling menu is priced at $198, and includes a feast of Seafood Tofu or Scallop Soup; Chinese Chicken Salad; Barbecue Pork and Roast Duck Platter or Peking Duck; Crispy Chicken or Hot Ginger Chicken; Steam Sea Bass Filet or Sweetand-Sour Sea Bass Filet; Salt and Pepper Shrimp or Shrimp Canton; Tenderloin Beef with Twin Mushroom or Black Pepper Tenderloin Beef; House Special Chow Mein; Steam Rice; and dessert. Speaking of dessert, make it a sweet ending at Golden Duck with an assortment of treats handmade at Fong’s Sing Cheong Yuan Bakery on Maunakea Street. Almond cookies, mini moon cakes, Chinese pretzels, peanut candy and macadamia nut candy round out the fare that will satisfy every sweet tooth. “Business has been good, and we couldn’t be more thankful,” Fong says.

And what, you may ask, makes Hinone Mizunone so different from all other restaurants of its kind? The rice. The restaurant uses the same California rice like everybody else, but it’s cooked in a special pot — kamadaki gohan style, which is a traditional way of cooking rice. “Before you walk in there’s a window to the left and you can see us cooking the rice,” says operations manager Eiki Tamaki. “We have a rice warmer, but we don’t have a rice cooker. We have to time it ourselves to get the rice exactly how we want it, and we have to constantly watch it so it doesn’t burn.” And the Hinoki wood makes a big different in the taste. “This is the way they used to cook the rice all the time before, and that’s what we’re known for,” Tamaki adds. “When you taste it, you can taste more of the sweetness,” he says. “And even when they have leftovers, a lot of our customers take it home because they microwave it and it still tastes the same.”

According to Tamaki, Hinone Mizunone makes anywhere from 15 to 20 orders of rice at a time. “We want our customers to eat fresh-cooked rice all the time, and we just keep making the rice.” And excellent rice, coupled with tasty entrees, makes for one delicious
teishoku meal. Teishoku sets are served with rice, miso soup, two side dishes and pickles. Broiled Salmon ($10) is delivered fresh every other day and cut at the restaurant. “It’s regular broiled salmon, but this cut is taken from the salmon we take sashimi from, so it’s pretty fatty

and it’s good,” Tamaki says. Two types of saba are available at Hinone Mizunone: Broiled Saba ($8.50) and Saba Nitsuke ($8.50). The sauce for the Saba Nitsuke is shoyu-based. “It’s rare to find Nitsuke Saba in Hawaii,” Tamaki says. “Many restaurants have miso

saba, but not shoyu-based saba. Our restaurant in Japan serves the shoyubased saba, so we serve it here, too.” Just like the saba, there are two types of pork tonkatsu. There’s one with homemade sauce similar to regular tonkatsu sauce but with wonderful additions of mayonnaise and a bit
of spicy mustard. Tonkatsu with Homemade Sauce and Tonkatsu with Oroshi-Ponzu are both priced at $10.50, so you can take your pick. Oroshi ponzu sauce is a mixture of soy sauce, citrus juices, ground daikon radish and a little oil. And yes, the Japanese have their own version of fried chicken — Karaage Chicken, which costs $9.50 at Hinone Mizunone, and offers the perfect blend of flavor and texture. Customers can rest assured the chicken is fresh all the time, never frozen. Curry and udon also are available at the eatery, and both are made with a beef base, which means excellent flavor! You can choose from local favorites such as Chicken Katsu Curry ($9.50) and Deluxe Udon ($9.50). Or, if you want the best of both worlds, there also is a Deluxe Udon & Curry Set ($15.50). The restaurant, which opened in May 2011, offers a variety of items from the expected to the surprising. Bacon Wrapped Asparagus ($7.95) is a good example of the later. Fresh asparagus is wrapped in thinly sliced bacon, fried and served with a parsley garnish. Another simple crowd favorite is Cheese Bread ($5.95). St. Germain extra-thick cut white bread is topped with butter, and mozzarella, Swiss and Cheddar cheeses to make a hot, gooey and crunchy meal starter for a main course of sushi, tempura, spicy ahi or whatever is to your liking. According to co-owner Emerson Ribao, the topping of mayonnaise, tobiko, shoyu and lemon results in a creamy texture that is as tasty as it is attractive. Mussels a la “M” ($7.95), the “M” stands for Emerson, is the
restaurant’s unique take on traditional escargot. Instead of snails, mussels are baked with garlic, tomato, fresh parsley, brandy and butter. After removing the shells, the muscles are placed on a fresh baguette and rebaked to maintain the crispy texture of the dish. Stuffed Chicken Wings ($7.95) is a Thai-inspired dish served with a sweet chili sauce. After the wings are deboned, the pieces are stuffed with ground pork and Vietnamese-style vermicelli noodles, and seasoned with minced carrots, garlic, pepper, bay leafs and sea salt. The wings are then deep-fried, and served hot and crispy.

t may be called New Violet’s Grill, but the dining spot tucked away in Kalihi’s Kapalama Shopping Center has actually been part of the community for more than 60 years. With a menu full of local comfort foods as well as Japanese and Okinawan specialties, generation after generation have made it a regular haunt. “It’s good home cooking,” says co-owner Cindy Suehisa with a laugh. “Everything’s from scratch.” Cindy and her sister Joey recently took over the eatery in May, but it has been in the family since their Aunty bought the

In Addition To Great Food, Ichiriki Offers A Rich Dining Experience

chiriki general manager Min Kim says there is a quote that often goes around the restaurant’s kitchen: “Sharing from one pot makes for closer relationships.” For Kim, that quote sums up the family-like atmosphere of the Piikoi Street restaurant. “It’s more like a living room,” she says. “Everyone gathers and they cook food together in the pots. It’s a totally different experience. It is very interactive, very engaging.” The restaurant, which also has a second location in Aiea, specializes in three different types of food: nabe, sukiyaki and shabu shabu. Customers can select various broth and vegetable, meat or seafood combinations and cook it all up right there at their table. “I like to think of Ichiriki as a dining experience,” Kim says. “We are teaching a type of dining and culture that our customers get to experience.” To kick off your Ichiriki experience, a good place to start is with one of the restaurant’s most popular appetizers — Ahi Katsu ($5.95), which features fresh ahi marinated in a tasty sauce, and wrapped in a shiso leaf and lightly fried to reach a perfect golden brown. One of Ichiriki’s most popular nabe dishes is Miso Nabe ($21.95 for dinner;

“They wanted to show what can happen when people come together,” general manager Min Kim says. “They are friends and they always wanted to open their own restaurant together.” The cuisine served at Ichiriki reflects each of the owners’ food experiences. Kazama grew up eating his mother’s home-cooked nabe, and Kobayashi studied this type of dining in Japan. Kim says that the meaning “one power” is extremely fitting for the restaurant. “It really brings people together,” she says. Cooking nabe, shabu shabu and sukiyaki certainly is a bonding experience for customers — and Kim says that it creates great relationships between the staff and guests as well. “If you are eating here, our servers are going to help you out,” Kim says, adding that they can walk customers through the cooking process and even identify which flavors will pair well together. “Our servers are trained to always guide the customers to understand how to best enjoy the food.”

And for those who think they know miso, they are in for a surprise when they try Ichiriki’s special concoction. “We get (the miso) direct from Japan, and it’s a blend of two very high quality misos, so the flavor in it is going to be a lot thicker and richer,” Kim explains. Another popular pairing is Kami Pirikara Nabe (serves two for $45.95), served with a seafood sampling, vegetables, homemade meatballs and a choice of pork, beef or chicken. Kim explains that the pirikara is a shoyubased broth that has been slow-cooked

and flavored with peppers and garlic — giving it a little kick without being overpowering. As seen in the photo, this dish comes with a special type of paper. “The paper absorbs the natural oils in the meats, so it’s known to be very healthy,” Kim explains. Another must-try dish includes Mushroom Yuzu Nabe ($24.95), which features an assortment of four different types of mushrooms — shiitake, enoki, shimeji and eryngii — all swimming in the delightfully peppered citrus yuzu broth. “I really love the way the mushrooms and the yuzu broth complement each other,” Kim adds. “It’s a perfect pairing.” All of the nabe dishes also are served with a choice of rice, udon or zosui to finish off your meal. Kim explains that the rice, udon or zosui is mixed with the broth at the end of the meal, when it is at its most flavorful. And if all of this doesn’t already have your mouth watering, Ichiriki currently is in the process of creating new menu items. The new items should be unveiled sometime this fall. Although the restaurant isn’t revealing any of these dishes yet, Kim does say that many of the new dishes will be based on customer feedback — a kind of interactivity that is manifested in the philosophy of Ichiriki. “One thing (the founders) always teach us is that when making any kind of decision — even something simple — we need to wonder how it is going to affect our customers,” Kim says. “The first question we ask is, ‘is this going to make our customers happy?’” And it seems that for all of Ichiriki’s menu decisions, the answer is a resounding “yes!”

The Moon Festival, noted in the Chinese culture as the lunar harvest festival, is one such celebration that features a signature dish: mooncake, which symbolize the gathering of friends and family. Royal Garden Chinese Restaurant in Ala Moana Hotel is home to some of Hawaii’s freshest and tastiest mooncake varieties, and will continue serving the rich, flavorful morsels through this year’s festival celebration Sept. 30. According to Royal Garden owner Calvin Wong, one would be hard-pressed to find a better mooncake. In contrast to some other establishments that ship in the cakes from China, Royal Garden makes batches of fresh cakes daily in the eatery’s kitchen. Wong explains that the secret behind the cakes involves “Top, A-grade lotus seed paste made special for us in Hong Kong, not too much sugar and cottonseed oil. No preservatives added!” Royal Garden offers the moist mooncake in artistic gift sets, which feature eight different varieties of the sweet treat.

Ranging in price from $16.95 to $33.95, the gift sets include four cakes apiece, and incorporate flavors such as White Lotus Seed Paste with Double Egg Yolk; Red Bean Paste with Single Egg Yolk; and the Mixed Nuts Mooncake. Wong estimates that Royal Garden sells around 7,000 gift sets every year — a sign that customers appreciate the quality and craftsmanship that goes into creating each cake from scratch in continuation of the restaurant’s tradition that dates back 10 years. “Our mooncake is made fresh daily,
fresh from the oven,” Wong says. “We like to offer the best. Other places have to add preservatives because they ship the cakes in from Hong Kong. Sometimes it takes several months for those to get here.” Before stocking up on the mouth-watering mooncake, diners also can look forward to enjoying some of Royal Garden’s excellent dim sum selections available daily for lunch only. Shrimp Gau, Pork Hash and Seafood Gau ($3.50 each for most of the dim sum selections that usually include three to four pieces) are just a few of the most-requested choices from the dim sum carts brought directly to tables by the restaurant’s friendly and helpful staff. Egg Tart ($3.10) is one of the numerous sweet delights also available on the dim sum menu that features more than 50 items. Royal Garden also serves up stellar entrees at daily lunch and dinner services. The “Live” Dungeness Crab and Maine Lobster (market price) are prepared fresh on the spot as the crustaceans make their way from the in-house tank to the kitchen, where they are prepared in what Wong calls “Royal Garden style.” Wong explained that the crab or lobster is cooked in minced garlic, shallots, butter and chicken broth in order to bring out a wide
range of flavors and aromas. “I travel all the way from here to Hong Kong, and nobody cooks it the same way,” says Wong with a smile. “It may have the same name, but you can’t touch our recipe!” Wong also recommends the Big Rock Salt Chicken ($39.95 for a whole, fourpound chicken) that features a ranch-raised bird flown in from the Mainland. Diners are advised to call ahead at least one day in advance when ordering this dish. Shrimp with Honey Glazed Walnuts ($17.95) still serves as one of the restaurant’s top-sellers, as the traditional dish combines the two unique flavors and envelopes them in a sweet, creamy sauce. Stop in for lunch or dinner daily, and see what other culinary creations are sprouting up at Royal Garden.
