Thank goodness it’s Sunday because this past week was crazy busy. Between juggling work, family, caring for my dog Kea and cleaning up after my new 8-week-old puppy, Oreo, who is currently being potty trained and is chewing on everything he can get his paws on, I was about to lose my mind.

OK, maybe that’s a bit of an exaggeration, but just when things feel as if they’re falling apart, there’s always that one special (edible) thing that holds it all together. For me, that special thing is mochi. In essence, this chewy good stuff is a triedand-true life saver. Not only does it signify the act of keeping everything in place with its sticky texture, but it tastes divine!

Therefore, this week, it was my mission to devour all types of mochi, from traditional Japanese fare, to Chinese mochi rice and morsels of Korean mochi rice cake.

The stickier the better, and I found that this is the best way to keep life in tact (figuratively speaking). So without further ado, here at the following Ono, You Know establishments, you’ll find triple the treat,

grandson of the original founders Jihei and Tsuya Takayama, the majority of all the recipes here have been in the family for generations.

Sure, you gotta love the eatery’s acclaimed Miso Butterfish, Nori Chicken and Musubi, but be sure to make note that Fukuya has an assortment of mochi that is out-of-this-world onolicious!

“We make our mochi fresh every day,” Iwahira says. And they’ve got it down to a science. Available in a variety of flavors and vibrant hues of hot pink, green and orange, these morsels of mochi are pure delight.

“Priced at 60 cents each, the pink mochi and white mochi are filled with the traditional azuki bean, and the green ones are filled with shiro ahn (white sweet potato or lima beans),” Iwahira says.

If you’re a traditionalist you may prefer ohagi mochi (70 cents each) with an azuki bean exterior and a mochi rice interior.

“This particular mochi was very popular back in the day, a lot of our old-timers like it,” Iwahira adds, noting that on the contrary, the peanut butter-filled mochi is a hit with the younger generations.

Of course, we can’t forget about the classic chi chi dango, priced at 55 cents each.

“Mochi has been on our menu since 1984, and it’s an important aspect of Japanese culture and of many local families,” he says.

Fukuya’s mochi is addicting, so consider buying a dozen or more because you can't stop at just one! The eatery is open Wednesday through Sunday from 6 a.m to 2 p.m.

s Japan’s unofficial national flower, the cherry blossom, or sakura, has been appreciated for centuries and maintains a position of status in Japanese culture. In Japan, you’ll find an abundance of this exquisite flower in bloom each spring, as many celebrate a sense of grandeur with hanami (cherry blossom viewing) parties under the blossoming trees.

And while it’s definitely not springtime, a bounty of authentic Japanese fare is always in bloom at Sakura Terrace Japanese Cafe. Having opened last November, this heavenly oasis is located on South King Street, and despite its busy surroundings, it’s the most serene setting to enjoy a lunch with friends or an intimate dinner for two.

According to the restaurant’s marketing director Marilyn Cariaga, the initial dining concept of Sakura Terrace was to predominantly serve donburi dishes. However, it soon branched out and began offering grilled meats, sushi and the freshest of seafood.

“Fresh seafood is greatly consumed in Japan, which also is known for having one of the longest life expectancies,” says Sakura Terrace owner Katsue Ichikawa. “A lot of healthy vegetables are made in Hawaii, too. We decided to open Sakura Terrace so that we could provide everyone with fresh and hearty dishes. Here, you’ll find a diversity of healthy items on our menu that are low in calories.”

Topping the list of the restaurant’s most coveted dishes that entice all palates is Sakura Chirashi Don ($18). Available for both lunch and dinner, diners are presented with an exceptional array of ahi, hamachi, salmon, uni and ikura over a bed of sushi rice infused with salmon flakes and topped with wasabi sprouts and pickled ginger.

“This is definitely our No. 1 seller,” Ichikawa says, noting that Kozakura Bento is quickly gaining a following with guests as well. Priced at $13.75 for lunch and dinner, Kozakura Bento features black tiger shrimp tempura and salad, with your personalized choice of salmon and ikura (salmon roe, spicy tuna, yellow tail and tuna, or poke.

“It’s really about a local and Japanese collaboration here,” Ichikawa explains. “But it’s also very important that the authentic Japanese flavor of the food stands out. We’re fortunate that business has been doing well.”

Sakura’s success derives from the fact that kamaaina and visitors alike fall head over heels in love with other favorites such as Sakura Bento Special ($15.75 for lunch, $18 dinner). The bento for the most indecisive of diners intrigues all your senses with a beautiful presentation of rice, miso soup, salad and your choice of two dishes, including sashimi (ahi, hamachi, salmon), shrimp and seasonal vegetable tempura, saikoro steak (cubed steak on thinly sliced potatoes), teriyaki chicken and grilled salmon.

Sakura Tendon ($15 lunch and dinner) is a tempura lover’s dream come true with two scrumptious shrimp and seasonal vegetables (bell peppers, zucchini, sweet potato) served on white steamed rice and splashed with a savory tempura sauce.

Miso soup and tsukemono also complete the meal.

And while hearty entrees usually take the spotlight on the dining scene, Scallop Carpaccio ($11.75) is a lighter dish that stands in a class of its own while bringing a blend of Japanese and Italian fusion to the table. This refreshing creation consists of a bed of mixed greens decorated with scallops, ikura (salmon roe), tobiko (flying fish roe) and black tobiko (caviar) doused with a tasty dressing comprised of balsamic, vinegar and mayonnaise.

Saving the best for last, a sweet ending lies in nothing but Sakura Parfait ($5), a layered dessert, which boasts a scoop of vanilla ice cream and is adorned with warabi mochi, strawberries, corn flakes and azuki beans drizzled with kuromitsu (Japanese sugar syrup).

The restaurant’s flowering menu also offers an array of drink options, which are made right before your eyes at the fully stocked bar. Cariaga says the sakes and Savory Sakura ($8.50) bring a whole new dimension to any meal.

“We like to feature seasonal cuisine and celebrate Japanese occasions, so you’ll always find new things on our menu. You’ll never get bored,” Ichikawa says with a smile.

ucked inside the ground floor lobby of First Hawaiian Center is a little cafe serving some of best tasting coffee you’ll want to stop in for at any time of the day.

Max and Mary Suiter opened Cafe Central last December with a goal of offering top-of-the-line, gourmet-like coffee with an amazing ambience in downtown Honolulu.

Their coffee is roasted by Max’s brother, Raymond Suiter, a master roaster and owner of Kona Coffee Purveyors in Sand Island. Some of the popular summer drinks on the menu are Blended Ice Mocha (small $3.95, medium $4.25, large $4.95), which is served with a special Guittard Chocolate genache and topped with real whipped cream, Cafe Latte (small $3.05, medium $3.75, large $4.15) served hot or iced and with fun Latte Art (patterns or designs on the surface of each drink), and the Espresso Affogato ($3.75), which is cold gelato served with hot espresso on the top ($3.75).

“Latte art is really popular and trendy in the industry now,” says Max, one of the previous owners of Honolulu Coffee Company. “We just try to focus on every cup and do special things like that. Also, our coffee is never more than one-week-old roast-

ed, so it’s super fresh coffee.”

The design of Cafe Central also is very unique, featuring beautiful tables, chairs and cabinetry made from red eucalyptus wood that came from a fallen tree in Makiki. In addition to coffee, espresso and specialty drinks, there are fresh pastries from Fendu Boulangerie, and tasty lunch items such as sandwiches, acai bowls, fresh fruit cups, homemade hummus, salads and turkey wraps. “We totally customize,” adds Mary, who manages the cafe. “So, we really try to find out and try to make it the way our customers prefer their drinks or sandwiches.”

You need to have the freshest, tastiest vegetables. And I think the panini that I ordred represents that. It’s the perfectly engineered sandwich, where each and every ingredient does something for the sandwich and there’s nothing more beyond that because that’s really all it needs.

f you are breezing through Ward Avenue’s makai-bound lanes, it’s easy to miss Asahi Grill on your left as you approach Central Pacific Bank and Sports Authority. The charming hole in the wall gets lost among the mega stores and large buildings that surround it, but that’s exactly why it’s worth stopping into — quality grinds meet unbeatable service for the kind of mom-n-pop experience that’s hard to come by nowadays.

“The food that we have, we really put love into it,” says manager Victoria Sayno, who’s been with the eatery since it opened in February 2007. “It’s not

just about running a business for us, it’s about providing the best we can for all of our customers.”

If you’re a first timer, just take a look at the servers’ T-shirts and you’ll know what to order. They feature an image of a license plate that reads one tell-tale word: OXTAIL. Yes, what could easily be nicknamed our state soup is the restaurant’s signature dish. “It’s a Chinese-style recipe with a lot of fresh ingredients inside,” says Sayno. The grill’s Oxtail Soup ($13.95 regular, $11.95 small, $22.95, extra-large) is prepared fresh daily and presents oxtail that is boiled for two hours in a broth with

“We added these sandwiches to our menu about two weeks ago and we’ve been receiving a very good response from customers,” Koep states. “These breakfast sandwiches are affordable, but still upscale.”

Kenny’s kicks it up a notch with appetizers

know what you’re thinking, Kenny’s doesn’t do pupus.

Correction: Kenny’s didn’t do pupus, but thanks to the skill of sous chef James Drewery, and the tasting talents of 32-year veteran employee Erlene Hutchinson, diners at the popular family restaurant can get a little nosh with their oxtail soup.

Can an appetizer be a dessert?

Oh, yes, it can. Candied Sweet Potato Fries ($5.95) is so simply smart that it’s shocking the option isn’t available everywhere. Tossed with sugar, butter, cinnamon and nut meg, the shoe string-cut fries are emptying the basket quick good. Add to that the Maple Cream Dipping Sauce that comes with each order and you’re in tater heaven.

If dipping is more your thing, Hot and Cool Seven Layer Dip ($9.95) could be right up your alley. The traditional tortilla shoveling compound begins with a base of hot refried beans and Cheddar cheese, and is topped with sour cream, homemade salsa, fresh avocado, olives, green onion, more Cheddar

The mixture of fresh ingredients is both creamy and tangy, and, as mentioned earlier, has met Hutchinson's seal of approval.

“I’m his guinea pig.

Everything you eat he has tried out on me first,” says Hutchinson with her trademark smile. So you know it's good.

Bangin’ Shrimp ($11.95) is another example of Drewery’s ability to think on his feet. I’m not kidding about that, Drewery had a single day 3 to complete the new appetizer menu. The spicy shrimp is seasoned with garlic and onion powder, battered in panko then deep-fried and served with a garlic, chili aioli.

Naturally sweet, the shrimp has just the right amount of spice to satisfy those with a taste for excitement, but not enough to frighten away those of us who have a less developed tolerance for heat.

top-notch dining experience consists of these essential factors: good food, an unforgettable ambiance, premier service and, most importantly, the best company. Therefore, we couldn’t ask for more this week when Dining with the Stars shone the spotlight on Brasserie Du Vin and professional singer, emcee, actor and recording artist Al Waterson.

“This is my first time trying the food here at Du Vin and I’d definitely come here again for a number of reasons: The food is delicious and the service is really great,” Waterson says. “I do a lot of performances across the street at Hawaii Theatre, so this place is very convenient.”

Brasserie Du Vin has made a name for itself with an exceptional French cuisine full of of refreshing local flair, not to mention the quick service perfect for the downtown business crowd that’s always on the go.

Restaurant manager Dominick Pisciotta catered to our every need and sous chef Sean Congdon gladly presented us with a grand array of exquisite French fare, which whisked us away to Southern France in no time. On the menu was an appetizer of Baked Brie ($16), magnificent entrees of Bouillabaisse ($18 lunch, $20 dinner), Grilled Portobello Sandwich ($11), Grilled Big Island Rib Eye ($24), Roasted Pork Chop ($20) and the sweetest of endings with Chocolate Souffle ($10) and Vanilla Bean Crème Brulee ($8).

“The Brie is tasty and has a bit of a bite,” says Waterson of the appetizer featuring Camembert-style Brie stuffed with cranberries and pecans, wrapped in a puff pastry and served with Manoa honey from a local beehive in Manoa Valley.

A self-proclaimed gourmet chef, Waterson is a pro when it comes to deciphering flavors. In fact, he used

to run his very own food service called The Singing Chef Munch Wagon, where he made everything from scratch.

“The Bouillabaisse is great!”

Waterson exclaims. “It’s a very nice combination of ingredients with local fish, clams, mussels and shrimp in a nice, rich sauce that has just the right touch of spices.” (Note: Bouillabaisse is an off-the-menuitem, but available upon request.)

“Grilled Big Island Rib Eye is very good when combined with the pepper corn sauce. The meat is tender and cooked just right. The pork chops also are juicy; it’s not easy to find a pork chop that’s cooked just right,” he adds.

We were in foodie heaven, and when you have a schedule as busy as Waterson’s it’s easy to work up an appetite. Considered to be Hawaii’s top master of ceremonies in all phases of public speaking, from corporate convention functions to beauty pageants, weddings and more, Waterson’s quick-wit is unsurpassed. In fact, come Sept. 8 and 9 at 12:30 p.m. you can catch him emceeing Celebrities and Their Pets Fashion Show at The Hawaii Woman Expo at Blaisdell Exhibition Hall.

“I emcee this event every year.

It’s great,” he says. “And as an animal lover, I am very pleased and happy to know that Du Vin is petfriendly. You don’t find many petfriendly restaurants these days.”

Originally from the Islands, but raised in the Midwest, Waterson is a man of many talents having done a plethora of voice-over work for television and radio. He’s also appeared on 12 seasons of the original Hawaii Five-0, Magnum P.I. and North Shore. And boy, can he sing!

Waterson’s rich baritone voice lends itself to many different genres of music and is showcased every Thursday from 7 to 10 p.m. as he entertains at Hale Koa Hotel Warriors Lounge. Waterson’s also released a CD of love songs, titled Songs in the Key of Love.

“I really enjoy what I do. It’s always a lot of fun,” he says with a smile.

ven if you have dined at 3660 On The Rise within the last few months, you’re about due for a repeat visit. Not only does the Kaimuki restaurant offer the best in Pacific Rim cuisine and an intimate, relaxing setting, but it also is constantly creating new dishes.

Its newest batch of menu items are as delectable as ever. The list of new dishes includes two tasty appetizers — the perfect way to start your foray into the new menu. Try Garlic-Lemongrass Braised Veal Cheek ($12.95), which features a slowly simmered veal served with scallion rice. For another great new starter, try WOW Tomato Salad ($12). While the salad gets its name from WOW Farms, where its fresh tomatoes are from, the dish certainly will have cus-

tomers saying, “WOW!” It is the perfect marriage of an array of flavors — prosciutto ham, house-made truffled mozzarella and micro basil salad tossed with truffle oil, all topped with Kona Sea Salt and smoked balsamic reduction.

One new entree is Kurobuta Pork Two Ways ($28.50), which was unveiled just a couple weeks ago. On one side of the plate, there is Crispy Garlic Scallion Pork Loin Chop, which is quickly fried, flavored with sauteed garlic and chopped scallions and served with scallion rice. On the other side is the Braised Pork Belly, served over butter spinach and sauteed garlic and comes with flatbread.

We utilize somewhat familiar flavors,” 3660 On The Rise chef de cuisine Lydell Leong explains of the restaurant’s fare.

“I always describe it as using a little bit of the flavors that my grandma would cook, but a little elevated, and a little bit more refined. It definitely is stuff that we grew up eating, flavors that we grew up tasting, but maybe combined in a different way.”

Leong adds that French influences also play a big role in the restaurant. Produce including basil, asparagus, tomato and lettuce are all procured from local farms. Ahi, mahi mahi and snapper also are sourced locally when available. “We like to support the local farmers and the local producers as much as possible,” Leong says. “If they can do it here, it’s got to be that much better.”

Just like the restaurant manages to seamlessly combine European cuisine with Island flavors and products, it also brings a quality combination of the old and new to the table.

Next month marks 20 years of the restaurant’s Pacific Rim perfection. And while many of the dishes that have been around since the beginning still remain customer favorites, 3660 also continues to churn out new dishes with a fervent creativity.

Leong explains that 3660 changes its menu pretty frequently — about every couple of months, in part depending on what ingredients are available. The restaurant’s kitchen staff is constantly thinking up new items.

“There is a lot of banter back and forth between Chef Russell Siu and myself, as well as our banquet chef Tony,” Leong explains, adding that the three of them derive inspiration from everyday life. “Not only do we like to cook, but we also like to eat.”

“We fire roast the duck breast skin side down, so it comes out nice and crispy. And then we sear the backside to finish it off,” chef de cuisine Lydell Leong says, adding that the finished product is served medium-rare to medium. “On the other side is a crispy confit of duck leg. We take the whole duck leg and thigh, and marinate it in some seasoning — salt, thyme and pepper — for about 24 hours.” Once it’s cooked, it’s quickly fried to create a perfectly crispy skin, while keeping the meat inside soft.

The dish also is served with Yukon Potato Risotto, which features diced Yukon Gold potatoes that are sauteed in the same style as risotto, seasoned with diced ham, caramelized onion and a hint of Romano cheese.

And it might not be new, but Mile High Waialae Pie ($8.50) is the perfect way to finish off a meal.

If you have other longtime favorites at 3660, don’t worry — there’s a whole slew of dishes that have been on the menu for years and aren’t going anywhere. A lot of these will be showcased during the restaurant’s 20th anniversary celebration, which will run from Sept.

1-15. The anniversary special features an “all-time favorites” menu with dishes that have been a hit since 3660 opened in September 1992. It’s a three course meal for $36.60 with a choice of Caesar Salad or Clam & Corn Chowder; a choice of New York Steak Alaea, Tempura Catfish with Ponzu Sauce, or Chinese Steamed Fresh Snapper; and Harlequin Crème Brulee and Warm Chocolate Souffle Cake.

s any loyal reader will tell you, Dining Out has a serious sweet tooth, and this week it was out in full force, searching for a bite of Jade Dynasty Seafood Restaurant’s new dessert menu.

While the eatery is known for its expansive menu of Hong Kong-style cuisine and delectable selection of dim sum, its sweetest endeavors are bringing something completely crave-worthy to the table.

According to general manager Gary Chan, many of the desserts are inspired by retired Chef Hoi, who moved to Hawaii after working at one of Hong Kong’s most elite jockey clubs for 30 years. He’s now sharing his plethora of knowledge with the bright-eyed chefs at Jade Dynasty, just for fun!

“Whenever he talks about desserts, his eyes light up,” describes Chan. Some of his creations (available after 1 p.m.), which incorporate Eastern and Western flavors and are priced at $2.95, include Golden Drops, Panfried Chinese pancake, Steamed coconut custard, Creme Brulee, Steamed custard with yellow bean and Banana Cake.

For a dessert that will make

you smile, try Deep-Fried Sesame Balls ($2.95), better known as “smiling donuts” for the way they burst into a biscuit-like ball of happiness.

Chilled Yellow Bean Pudding ($2.95) is another must, as its refreshing flavor and mochilike consistency are addicting.

And then there’s the smooth and satiny Baked Caramel Custard ($3.50) to delve into, as well as yummy Walnut Crisp ($2.95) cookies.

Be sure to save room for Tofu Pudding ($2.95 individual, $30 serves up to 15), an absolute dessert knockout. Tofu may not be the first thing you think of when you fancy something sweet, but Jade’s warm silken tofu is here to change that.

“The tofu is made in-house from scratch every day,” says Chan. Truly dreamy slivers

of the softest of tofu forms are delicately drizzled with a gorgeous ginger syrup. Not only does this dish taste divine with its creamy tofu flavor blending so beautifully with the pop of real ginger, but its surprisingly healthy ingredients will leave you feeling more svelte than you ever have post-dessert.

If all those sweets leave you in need of something salty, look no further than Fisherman Style Stir Fry Shrimp ($18.95). “We leave the shell on the shrimp because it seals in the flavor,” says Chan. A wonderfully crispy mix of stir-fried ground pork, onion, egg, black beans and a heap of garlic combines with the plump and oh-so-savory shrimp.

After that, there’s always room for more dessert.

on North King Street sizzles with baskets upon baskets of pork hash, shrimp dumplings and none other than Mochi Rice wrapped in Lotus Leaf ($1.98 for two pieces). As my favorite dim sum of the bunch, there’s much to love about the inviting aroma and flavors. Once the lotus leaf is unwrapped, you’ll find a mound of sticky mochi rice intermixed with diced chicken, lup cheong (Chinese sausage), dried mushrooms and dried shrimp marinated to perfection.

“Most people are fans of Mochi Rice wrapped in Lotus Leaf because it has a little bit of everything,” says restaurant manager Gary Lam. “Jung is another popular Chinese dish that consists of mochi rice, but it’s not categorized as dim sum.”

Found on Golden Palace’s regular menu, Jung ($3) features mochi rice infused with Chinese red beans and salted duck egg yolk. Although it may be an

acquired taste for some, it’s something that you must try at some point in your life. It’s a meal wrapped nicely together in a tea leaf cone — simply convenient and satisfying.

“What we do is we fill the tea leaf cone with the many ingredients and, of course, mochi rice, wrap the tea leaf ever so tightly and then boil it,” Lam explains.

“The mochi rice is naturally sticky and it tastes very good.”

Red House in Honolulu With traditional Japanese mochi and Chinese mochi rice filling up my stomach, I had just enough room for one more serving of mochi madness. My final stop led me to Red House in Honolulu.

Having recently opened its doors this past December, Red House is a top pick for Korean cuisine. Owner Justin Chun describes the dining experience as Korean and American fusion. And if the trendy and modern atmosphere is any indication of the cuisine, then it’s bound to be delicious. And indeed it is!

On my most recent venture to the eatery, Chun presented me with three mouth-watering entrees showcasing topokki or Korean-style rice cake.

“Topokki are pieces of chewy rice cake, so I guess you could say in our topokki dishes, we supplement pasta for topokki,” Chun explains.

White Topokki ($13.99) was first on the list featuring topokki rice cake doused in a cream pasta sauce with bacon, bell peppers and broccoli, and sprinkled with a dash of black pepper.

White Topokki is not spicy in the least, so if you would like to heat things up, I would highly recommend Red Cream

Priced at $15.99, you’ll be seeing red as this dish consisting of topokki and ramen is swimming in a spicy, but flavorful sauce topped with egg and green onions. Trust me, the temperature is already rising.

“Red House Top and Noodle is a must-have for Koreans. Topokki is an authentic Korean dish, our version of mochi,” Chun adds.

hile burgers still reign as one of the all-time great comfort foods, some eateries don’t quite deliver on the ideal combination of taste and quality.

Pipi’s Burgers, a new sandwich spot that opened its doors July 26 at McCully Shopping Center, comes through for hungry patrons by offering gourmet burgers and sandwiches at prices that won’t break the bank. Pipi’s got its name from the Hawaiian word for beef, but in addition to the Angus beef creations, the restaurant also offers ahi, salmon, pork, shrimp and chicken on its simple yet robust menu that head cook Sonny Mauga spent more than three months creating.

“I tried to combine some Asian influences with American cuisine, and just fused those together,” says Mauga, who brings more than 16 years of culinary experience to Pipi’s kitchen. “Down the road, we’ll continue to add new specials and menu items as we continue to experiment with different tastes.”

All sandwiches and burgers at Pipi’s are priced below $10, and for $2.75 more, diners can make a combo meal with the addition of a large order of fries or onion rings and a medium drink. Through the remainder of August, Dining Out readers receive a complimentary small order of fries with every burger or sandwich. And, through September and October, Dining Out readers may enjoy Pipi’s birthday celebration specials, including a free cake for parties of 10 or more, or a free piece of cheesecake for individuals celebrating a birthday who purchase a regular Pipi's Burger ($8.55)

“I haven’t seen anything like that around, with the sake, mirin and fried onions,” Mauga says of the Pork Ginger Burger.

Mauga also recommends Pipi’s Burger ($8.55), the restaurant’s namesake that features Angus beef topped with smoked bacon, cheese, red onions, a Hawaiian barbecue sauce and wasabi mayonnaise.

Pipi’s also offers a keiki menu, and for $5.99, children can choose from Teri Burger, Cheese Burger or Hot Dog while also receiving a small order of fries and a small drink.

For those diners in search of a meal on Servers Linda Pham and Kailey Nomura with Pork Ginger Burge and Pipi's Burger the go, or who don’t want to deal with parking, Pipi’s offers a convenient curbside pickup service.
