ehind every great dish is that one secret ingredient that tickles your taste buds and takes you by surprise. This week, I decided why not spice things up with yuzu, the surefire ingredient that adds some zest to life. For those unfamiliar with yuzu, it’s a citrus fruit and plant originating in East Asia. The fruit (although rarely eaten as a fruit) resembles a tiny grapefruit with uneven skin, and you can’t miss its distinctly refreshing aroma. I’ve recently become a fan of yuzu and have grown fond of its tart flavor that makes you wanna say “Wow!” Here at the following Ono, You Know establishments, you’ll see exactly how yuzu is incorporated into beautiful culinary works of art. It’s an essential ingredient in ponzu, a citrus-based sauce, and is even utilized in alcoholic drinks, giving off a bit of a bite. Yuzu will take any meal to a whole new level!

It's 5:30 p.m. on a Wednesday. Yoshi Japanese Dining & Bar just opened its doors for the evening, and the place is already filling up with eager patrons who can’t wait to sink their teeth into authentically eclectic Japanese fare. “Do you have reservations?” a server asks a walk-in customer. “If not, you’ll have to sit at the bar because all the tables are reserved.” This alone tells me that this contemporary dining establishment has to be good, as it’s drawing in diners by the dozens. 2 | D I N I N G O U T | S E P T. 2 - 8 , 2 0 1 2

Originally known as Yakitori Yoshi, this Makaloa Street restaurant revamped its menu from specializing in yakitori dishes to offering sushi, sashimi and teppanyaki options, as well as a versatile full bar. And if you’re yearning for yuzu, Yoshi’s Yuzu Kosho Chicken ($10, a la carte) will make you say yum! “Out of all our chicken items this is the most popular by far. It’s a bit on the spicy
side because of the yuzu citrus, and it’s also mixed with black pepper,” says server Jarred Yuen. This masterpiece boasts boneless morsels of locally raised chicken seasoned and grilled to perfection on the teppanyaki grill. The chicken skin is cooked to a crisp, while the meat is left soft, tender and juicy. According to Yuen, the meat is flavored with a dash of yuzu sauce, but the majority of the sauce is left on the side for dipping. “It’s kind of like a lemon chicken, only more flavorful,” he explains. “Yuzu is growing in popularity and nowadays you’ll often find it used in Japanese cooking.” So, turn up the heat and bring on the tang with Yoshi’s Yuzu Kosho Chicken, also available as part of the restaurant’s teishoku set menu ($25), which comes with two items, soup, salad and rice. you’re a longtime patron of Nuuanu Okazuya, you feel right at home once you step through the door. Owner Mark Kitagawa, chef/manager Johnathan Mosley and the rest of the staff know you on a first-name basis, are familiar with your favorite dishes and treat you like family. Now, if you have yet to experience the outstanding cuisine and premier customer service at this okazuya, what are you waiting for? Located on Nuuanu Avenue, Nuuanu Okazuya is a small “hole-in-the-wall” shop that offers all the okazu (side dishes) you’ve ever dreamed of. “Okazuyas are very unique to Hawaii. Okazu means side dish and ya means shop,” Mosley explains. “Okazuyas specialize in side dishes that pair well with rice, so I’m always thinking of what goes well with rice or noodles.” And believe us, Dining Out lives for okazu goodness! Nuuanu Okazuya never disappoints as there’s a multitude of items to choose from, all exuding abundant home-cooked flavors. We recently caught up with Kitagawa and Mosley before the lunch rush arrived to get a glimpse and taste of all that is Nuuanu Okazuya. DO: Nuuanu Okazuya is thriving with business. Looking back in time, how did this favorite local eatery get its start? Kitagawa: The opportunity came around when the original owners, the Nagamine family, were looking for someone to take over the establishment because they had already been in business for more than 30 years. I saw a decline in the

number of okazuyas while growing up, so I wanted to keep the tradition alive. DO: Obviously the okazu tradition is alive and well here. What is your business philosophy? Kitagawa: We try to constantly add new items to the menu. I think we have the largest selection of okazu items in Honolulu. For a small shop like this, what comes out of the kitchen is unbelievable. Everything is made fresh in our kitchen, nothing is brought in.

DO: Known for its variety of traditional Japanese, Okinawan and local fare, there's something for just about everyone at Nuuanu Okazuya. Correct? Kitagawa: Yes, we offer 70 to 100 different items a day. Popular ones include Furikake Chicken Katsu, Nishime, Kinpira Gobo, Chow Fun, Fried Saimin and Shoyu Chicken. What makes our Furikake Chicken ($3.50 per piece) so special is the secret sauce that we use. Other best-selling items include Konbu Maki ($2.25 each), which features pork and gobo wrapped in konbu (seaweed) and tied together with kanpyo. Another popular dish is Stuffed Bittermelon ($2.25 each), stuffed with pork hash and boiled in
a special flavored sauce. Squash with Chicken and Tofu ($1.80 per serving) is quite popular with our longtime customers. We use a long squash or Chinese squash, and stuff it with chicken and tofu cubes. DO: You folks also specialize in an assortment of fishcakes. What is the No. 1 choice among customers? Kitagawa: Our most popular fishcake is Boiled Egg Fishcake ($1.35 each). It features a boiled egg wrapped with fishcake, coated with panko and then deep-fried.

DO: Is there a particular item you offer here that not too many patrons are aware of? Kitagawa: Yes, that would be our Daily Bento ($5.73). It’s one of those things that not everyone knows about, but for those who know we have it, it sells out rather quickly. You can’t go wrong with this bento. itting inside JJ Bistro & French Pastry on Waialae Avenue, one gets a glimpse of owner JJ Luangkhot’s vision of a New York-style French/Laotian eatery — just in a better climate. The brightly lit bistro is open and comfortable, and provides a continuous view of the always active Kaimuki neighborhood that has grown to become one of the Island’s hot spots for dining and slightly out of the ordinary shopping. JJ’s fits right in to the eclectic mix. From pupus to deserts, JJ’s specializes in light fare that mixes Asian flavors with French techniques and plating to create dishes that look as good as they taste. Such is the brand new Shrimp Kataife ($7.95). Fresh shrimp is lightly sauteed with sweet chili and served on beds of baked phyllo dough, which provides a crunchy base for the sweet shrimp. The colorful dish is then accented with a sweet chili and an avocado dipping sauce to provide even more flaA vor options. Another new option is Baked Scallops on the Half Shell ($7.95). Tender raw scallops are topped with a JJ’s special mayo, chili and mozzarella cheese sauce, and baked until the edges are golden brown. Few things are more French than pate and JJ’s Parisian ($7.95) would satisfy any Francophile. The duck mousse is mixed with truffles and port wine to create a creamy spread that goes, oh, so well with the fresh French bread and small side salad that comes with the dish. A port-wine gelatin adds extra flavor and texture when dropped on top. Baked Lobster Avocado ($7.95) has been a longtime customer favorite. avocado dipping sauce with Granny Smith apples provides a sweet and sour element to the naturally rich dish. For all its tasty pleasure, few really experiment with escargot. That’s too bad because the salty/sweet mollusk is delicious with nearly everything. Thankfully, JJ steps away from the typical ramekin baking/serving dish in favor of a French Baguette cradle that mixes things up in just the right way. The baguette is stuffed with escargot, a garlicinfused ranch dressing, mozzarella cheese and baked until the bread absorbs all those wonderful juices that before you had to spoon out. Why dip for juices when the bread has already done the work?

This week, Dining Out got the inside scoops from Asian Mix owner Daniel Leung, who gave us a little taste of Asian Mix and shared just what fuels his culinary drive.

Who or what inspires you as a chef/manager/owner? In the beginning, it was more like I needed a job to support myself through high school and college. My brother asked me to help out with a project on Kauai, so that was how I opened my first restaurant. We were so busy we barely had time to take a day off for a year-and-a-half! I knew I wanted to work with food and be in the restaurant industry, and I always knew I wanted to come back to Oahu, but first I went to California to experience more types of cuisine, especially Northern Chinese cooking. With Asian Mix, I thought it would be nice to open a place that was fast and affordable, but offered quality cooking. I like seeing my regular customers who come in a few times a week. It’s important to me to be able to provide them with a nice dinner that is convenient and quick with the best prices in town.

If you could serve food to a celebrity, who would it be and why? What dish would you serve? Clint Eastwood. He is one of my favorite actors. I would serve him tofu and vegetables with bok choy, choi sum, and carrots, cooked in a light oyster sauce, plus a little steamed rice. It’s very healthy. What is your favorite dish on the menu? Why? My favorites are House Fried Rice and Shrimp with Walnuts. We don’t put soy sauce in the fried rice — its flavor comes from shrimp and chopped up Virginia ham, a salty ham that gives it a lot of taste. Shrimp with Walnuts
has a sauce made from mayonnaise, balanced with some lemon and a little sweetness. The walnuts are deepfried and honey glazed, so they’re really crunchy and sweet. Is there a dish that you create that’s not on your menu, but available upon request? We like to be flexible and make our customers happy by taking special requests. Since we can make dishes to order, if we have the ingredients and the customer can describe what they want, we’ll make it. It’s all about building relationships with new and regular customers, and we’re happy when they keep visiting us!

iners at Ichiriki Japanese Nabe Restaurant need not worry about being scolded for sharing food with fellow diners. In fact, to the delight of the many soup seekers who flock to the eatery, they’re encouraged to do so.

Ichiriki specializes in the interactive eating adventure known as hot pot cooking, and it’s based centrally in both Aiea and Honolulu. Nabe is a Japanese term for hot pot cooking, referring to all sorts of dishes cooked in “one pot.” According to East Asian cultural beliefs, eating from one pot allows diners to grow closer and form long-lasting relationships. “The hot pot itself is meant for families,” says managing partner Masaki Sasada. “In Japan, it brings people together — sticking chopsticks in and sharing the broth brings families, friends and guests closer. It’s a very family-friendly restaurant. We cater to everyone from kids to seniors, all ranges of ages.” Mushroom Medley ($6.95) is a popular pupu offering, as the dish
features a butter shoyu flavor that envelopes seasonal mushrooms that deliver both taste and freshness. Additionally, Ahi Katsu ($6.95) has drawn rave reviews from customers who come back for the fresh fish that is prepared daily and is never frozen. Curry Nabe ($21.95) serves as one of Ichiriki’s flagship entrees, as the flavorful broth is served with a platter of fresh vegetables, chicken and pork. Like other main courses on the menu, diners also receive a bowl of rice and noodles — which also are perfect complements to the delicious broth. “We have many different types of soups, ranging from shoyu to miso, and mild to spicy,” says Sasada. “Depending on what diners prefer, we can cater to that. don’t really like things too spicy, so I prefer the miso. The best thing about our restaurant is that after you’re done eating the ingredients in the soup, you get to drink it afterward. Our soups are original, too — some of the flavors we feature, you can’t find them anywhere else on the island.” For those looking to spice it up, Angry Goma ($22.95) has it all. “It’s really good if you like spicy food,” says Sasada of the sesame-flavored broth that also includes a platter full of beef, pork, seafood and vegetables — not to mention extra jalapeno or habanero peppers if one is so inclined to add them. Another specialty available at Ichiriki is Kobe Beef Shabu Shabu ($28.95 for 5 ounces, $37.95 for 9 ounces). Diners are greeted by a hearty platter of the thinly sliced Rib-Eye steak that can be cooked to their liking in the hot pot, and dipped in the included ponzu or goma “sesame” sauces. And after the meal, Sasada recommends Ujikintoki ($4.95), a green tea shave ice on a bed of mochi balls or ice cream and topped with azuki beans. The refreshing dessert provides a nice counter to the hot pot cooking, and blends flavor and sweetness without overpowering eaters’ taste buds. Ichiriki also offers a host of special deals, including “Early Bird” specials available from 4 to 6 p.m., Monday

ew flames are rising at Hy’s Steak House, where the smoky scent of Kiawe wood flows from the restaurant’s custom broiler onto each plate of beautifully grilled meat and seafood, giving patrons a taste of something truly extraordinary. The establishment has been at the forefront of fine dining in Waikiki for the past 35 years, and its ability to reinvent itself while remaining a traditional steak house has kept it in a league of its own. Executive chef Erwin Manzano joined the team in early August, but he’s no stranger to the eatery. “I was here back in 1988. I started as a dishwasher and our previous chef promoted me to sous chef. I was here for 15 years,” he says. In 2003, Manzano left the restaurant to pursue other culinary endeavors before returning to Hy’s last month. “I’m happy to come back. It’s like coming back home to where I came from — where it all started.” According to vice president and general manager Bob Panter, Manzano’s cooking offers a breath of fresh air with its body of sophisticated
flavors that keep unraveling. “It’s been great so far; he made an ossobuco special that was really popular and sold out last week,” says Panter. The chef will continue to roll out enticing specials, starting with his latest debut — Filet Mignon with Chimichurri Sauce ($44.95). Your knees will go weak for Manzano’s fantastically fresh chimichurri sauce, which complements any piece of meat.

“It’s an Argentinian kind of sauce,” says Panter when describing the bright green burst of parsley, mint, cilantro, garlic, olive oil, red wine vinegar and more. “It’s such a versatile sauce because you can top anything with it,” adds Manzano. On nights when the chef has prepared it, patrons may request his chimichurri sauce with any of the restaurant’s prime cuts. Manzano also is excited to present his Arugula Prosciutto Salad ($12.95), made with fresh greens, cherry toma-
toes and radishes that add to each wonderfully salted bite of prosciutto. The delicate salad is drizzled with a fresh white wine vinaigrette. “(Bob and I) had some ideas for a salad,” says Manzano. “I tweaked it here and there. It was actually Bobby’s idea to add the arugula, he loves it. So I made it just for him,” he says with a laugh. While regulars will undoubtedly fall in love with the chef’s new creations, they also will continue to return to their favorite steak house for those recipes they’ve always adored. Diners may still enjoy such classics as Lobster Bisque, and New England Clam Chowder is making a brilliant comeback after being on a menu hiatus. One bite of Hy’s distinguished flavors and this steak house will most certainly be your new flame.

Dining Out caught up with Paul Martin and Lorren Loo for lunch one afternoon at the newly opened Crab City on Waialae Avenue. ed House in Honolulu is known for its seemingly endless ability to create bold, new menu items. Servers can often be seen roaming the restaurant with trays of their newest creations to give out as samples before they are officially added to the menu. When asked where he gets his ideas, chef and owner Justin Chun simply points to his head and smiles. Apparently the source of the restaurant’s roving menu is Chun’s own ingenuity.

In each of these places, he worked in various restaurants, learning how to make different types of food and perfecting his cross-cultural cuisine. “I am trying to make a fusion of all of these foods, and make something out of the ordinary,” Chun explains. “I try to make food that people might not try anywhere else.” Right now, Chun is in the process of cooking up something special. It’s still in the works, but he hinted that a Koreaninspired pasta dish may be making an appearance soon. 1

rom the moment you walk into Red House in Honolulu on Keeaumoku Street, it’s clear that you are in for something different. From the hip décor to the walllength screen playing K-pop music videos, Red House certainly has a one-of-a-kind look and feel — a quality that extends to the food itself, too. With its cuisine, the restaurant seems to transcend any concrete label. “It’s like a new generation of Korean food — more like a fusion,” owner and chef Justin Chun says. “It's Korean food, but not in the traditional way … We try to make it different here.” To taste that difference, Pizza

Tonkatsu ($14.99) is a good place to start. The dish features a pork cutlet with vegetable toppings — all bathed in gravy — and is served with rice. “People love the Pizza Tonkatsu,” Chun says. “One thing that they really like is that it’s so big. It is one of our most popular dishes.” Another popular option is Red House’s selection of Topokki dishes, such as Red House Topokki ($11.99), which has a rice cake with spicy sauce. You also can add cheese, egg, mandoo or Korean sausage for an additional cost. Another tasty dish is Korean Spicy Tofu Jjige ($11.99), which comes with shrimp and a variety of other seafood. ool happenings are taking place in downtown Honolulu with the addition of Ice Forest to Hawaii’s dining scene. Owner Andrew Huang opened the doors to this winter wonderland on Merchant Street earlier this year, and has been serving up an assortment of Taiwanese-style shave ice with a local flair. “What sets us apart is that we make everything fresh, from the mochi balls to the azuki beans; we even use local taro,” says Huang, noting that highly requested menu items are Original Custard with Mochi Balls Shave Ice ($5) and Rainbow Shave Ice with Mochi Balls, Ice Cream and Condensed Double-Custard (original and coffee flavored), Milk ($5), among others. And there is another important thing that customers will notice upon entering the restaurant: The customer service is impeccable. “We serve our customers with extra care,” Chun states. In accordance with its customer care, customer feedback is crucial to the restaurant’s menu. “Before we put 4 in a new menu item, when people come in to eat, we give them a sample of the dish to try,” Chun says. “We ask them to critique how it tastes, and we get their opinion on how we can change it around if we need to.”

“We don’t use any preservatives or artificial flavoring; our custards are made from scratch every day. This is a twist on your typical shave ice,” Huang explains of this decadent treat. Shave Ice with Taro, Mochi Balls and Condensed Milk has made fans out of taro lovers as it’s melt-in-your-mouth delicious. Choose to top it off with milk or up to two shave ice flavors. “You also can design your own shave ice, which a lot of people like to do,” he adds. Street parking is available on Merchant Street and at the open lot near the U.S. Post Office a block away. Now open daily, Ice Forest is the perfect place to chill out.
“We make new dishes all the time for people to try,” he adds. These sample periods are never announced, however, so you’ll just have to keep frequenting Red House and hope to get lucky. “We go on what the customers want, and we always want new ideas from people,” Chun says. Hukilau Oh yes, we’re going to a hukilau where the yuzu reigns supreme! Hukilau, located in Executive Centre in downtown Honolulu, knows how to bring the yuzu to the party. Known for its upscale local grinds, this restaurant is overflowing with immaculate flavors. Take Hukilau’s Shrimp and Shiitake Mushroom Potstickers ($7 during happy hour, $9 for dinner) for instance, which presents you with the tastiest potstickers filled to the brim with none other than shrimp and shiitake mushrooms blended nicely with oyster sauce, garlic, onion, cilantro and green onions. Executive chef Jason Takemura also stirs up a killer dipping sauce to go with it. “Yuzu has always been incorporated into our menu from the beginning,” Takemura says. “Yuzu is served in all kinds of forms now — as pastes, concentrates, juices, etc. We use yuzu juice and blend it into our sauces. The potsticker
sauce combines yuzu with oyster sauce, Maui onions, sake and miso. “Yuzu helps to bring out the original flavors of the dish, but still has its own unique citrus flavor,” he adds. And for the complete yuzu experience, sip on Hukilau’s Raspberry Yuzu Martini ($7), which melds together Raspberry Stoli, Chambord and yuzu to create one unforgettable cocktail. “Yuzu is a Japanese citrus fruit,” Takemura explains. “The flavor profile is a cross between a lemon and a tangerine. It’s very aromatic and will enhance anything it touches.”

Fresco’s Taste of Italia U nique flavors and tastes spring forth at Fresco, a recently opened eatery in Waikiki that is quickly becoming known for its masterful incorporation of Italian dishes and local
flavors. Perched atop Hilton Hawaiian Village’s Rainbow Bazaar, Fresco features an airy, open dining space with views of the resort’s lagoon and vibrant outdoor landscaping. Diners will appreciate the contemporary décor as large windows allow cool breezes to pass through the restaurant, which seats up to 172 individuals. Fresco’s menu features traditional Italian recipes infused with fresh, local ingredients. Award-winning chef Kentaro Torii inspired the menu, incorporating dishes from the northern, central and southern regions of Italy, and executive chef Rodhel Ibay added a fresh local touch by including Hawaii grown and produced ingredients. “Their concept includes the use of locally grown vegetables and herbs from local farms, such as Nalo Farms,” says sales and marketing manager Eileen Furuya of the chefs’ inspiration. “We use fresh fruits, too, and our steaks are grass-fed on the Big Island. All of our menu items have local flavors included in them.” Insalata Caprese ($12.95) provides a fresh start to a meal, as the salad includes varieties of Kamuela tomatoes, mozzarella cheese, macadamia pesto and Hawaiian black salt. A succulent 8-ounce cut of Big Island beef tenderloin is featured in the Filetto di Manzo ($35.95), as the perfectly cooked meat is prepared in a Marsala wine sauce, topped with a Gorgonzola fondue and served with a kukui nut potato puree. For those seeking fresh seafood,

Linguine all’Aragosta e Granchino ($38.95) has it all. The dish features a bed of fresh linguine covered with a tomato cream sauce and chock-full of Maine lobster and crab meat. “That’s part of what makes us unique,” says Furuya of the intriguing mix of Italian styles and local flavors. For dessert, Tiramisu Hawaiano ($9.95) offers a local take on the traditional Italian dish. Layers of Tiramisu Hawaiano ($9.95) macadamia mascarpone cream hold the airy treat together, while a light layer of fresh Kona coffee is sprinkled atop the decadent dish. Viva Fresco ($10) is one of Fresco’s signature cocktails and features Effen Cucumber Vodka, Royal Combier Liquer D’Orange, lime juice, ginger ale and fresh cucumber slices. For wine connoisseurs, Fresco has a wine cellar stocked with more than 100 varieties of vino from around the world. Fresco also offers a popular happy hour available from 5 to 7 and 9 to 11 p.m. daily. Cocktails on the special menu, including the Hawaii Three-0, are just $6 each, while specially priced beers ($4) and wines ($5 per glass, $24 for the bottle) also are available.
