We’ve all heard the ever-popular saying, “Good things come to those who wait.” So this week, we’re taking our time and kickin’ it with risotto! As a girl who’s part Italian and a total rice fanatic at that, risotto could quite possibly be the best starch creation on the planet! It’s not hard to make this Italian rice dish that goes well with just about everything, but you must devote the time in preparing it. Trust me, there are no shortcuts here. I’ve always wondered, what is it about risotto that gives it that perfect consistency? In fact, even when drowned in the richest sauce, it doesn’t become mushy. I guess you could say the secret lies in the grain. The grains of Arborio rice are short and stubby and absorb liquid without becoming gluey — instead, creamy is what we aim for when it comes to risotto. During this 20minute procedure, the rice is stirred constantly, until it has reached the perfect point of softness. In this day and age, time is of the essence, and sometimes we just don’t have the time to whip up an excellent risotto for the entire family. That’s why we lift our hats off to the following Ono, You Know establishments who do the work for us. Lucky for us, all we have to do is sit back, relax and enjoy each and every bite of this rockin’ risotto! Ahhh … comfort food at its best.

Stage Restaurant Taking front and center, the spotlight shines on Stage Restaurant, a contemporary dining establishment located on the second floor of Honolulu Design Center. Stage Restaurant captivates patrons with its state-of-the-art interior complete with statement lighting, stylish hues, eclectic furnishings and remarkable artwork. And executive chef Ron de Guzman is a pro when it comes to perfecting the craft of contemporary Asian-

American cuisine. “We like to put a spin on things, and we like to utilize local ingredients when we can,” he says. And to emphasize this fact, de Guzman puts a unique twist on your typical beef curry and rice. Enter Hayashi Rice. Served at dinnertime only, Hayashi Rice ($28 full-size, $18 half-size) showcases mouth-watering risotto and beef short ribs garnished with crispy shallots and caramelized onions submerged in a special sauce and green onion puree. “Usually, with beef curry and rice, white rice is used, but to differentiate our dish from the rest, we incorporate risotto,” de Guzman explains. “It’s a popular dish and it’s not spicy.” The meat is melt-in-your-mouth tender and the risotto soaks in all the flavors of the Hayashi Rice, making it absolutely divine! Stage Restaurant is open for lunch Monday through Friday from 11:30 a.m. to 1:30 p.m., and Monday through Saturday from 6 to 8:30 p.m. for dinner. Closed Sundays. JUST WHEN YOU THOUGHT saimin was simple, think again. Shiro’s Saimin Haven is a thriving saimin monopoly that has put a spin on your local legendary noodle dish. With its restaurant headquarters in Waimalu Shopping Center in Aiea, Shiro’s has been serving generation after generation the ultimate best in comfort food — everything from its more than 60 noodle combinations to hamburgers, sandwiches, plate lunches and more — Shiro’s has it all.

The man behind the magic, owner and founder Franz Shiro Matsuo, otherwise known as “Mistah Saimin,” died this past May, and although his infectious spirit and bubbly persona may not grace the restaurant each day, his love for saimin and his customers continues to live on through his ohana. Shiro’s Saimin Haven is a family-run business that prides itself on its quality cuisine and customer service. Dining Out recently paid a visit to the eatery where we caught up with Shiro’s vice president Aaron Lee and catering manager Bryce Fujimoto, who were eager to share Mistah Saimin’s legacy over heaping bowls of delicious, slurp-worthy saimin and other tasty local grinds.

DO: How did Shiro’s Saimin Haven come to be? Lee: Shiro’s was founded in the early 1970s at the Aiea Bowling Alley by my father-in-law Franz Shiro Matsuo. The restaurant has been in business for more than 40 years and we now have three locations — Waimalu Shopping Center is where our main branch is located, and we also have other locations in Ewa Beach and Waipahu.

was an instructor at Kapiolani Community College and he always had the yearning to have his own business. At the time, he realized that there wasn’t a restaurant out there that was specializing in saimin and he thought why not go for it.

DO: What is the concept of Shiro’s Saimin Haven? Is there a particular type of saimin that Shiro’s is famous for? Lee: Shiro’s is based on homestyle DO: What made Shiro want to open a cooking, everything your Grandma and saimin restaurant? Lee: It was always a dream of his to Grandpa used to make. We’re known for have his own restaurant. Years ago, Shiro having a number of different varieties of

takeout) is our most popular breakfast dish by far. We recently brought in a soft serve machine as well, so now we can make things such as Coke Floats ($2.95) and Tropical Orange Shakes ($3.95).

saimin — we have more than 60 saimin options to choose from on our menu. Shiro liked to say we have more saimin variations than Baskin Robbins has flavors. Our signature saimin would have to be No. 58, Dodonpa ($9.60 dine-in, $8.65 takeout). Dodonpa is the ultimate king of saimins, bombarded with shrimp, roast beef, char siu, Chinese roast pork, luncheon meat, mushrooms, wun tun, green onions and vegetables. This is one of Shiro’s first creations, and till this day we still have a lot of customers gravitating to this one dish in particular. Hula Burga Saimin ($7.95 dine-in, $7.45 takeout) is another saimin favorite. It features our home-cooked hamburger and a bowl of wun tun min. We’ll be changing the name to The Ron

Mizutani, since this is his favorite and he comes here all the time and orders it. DO: Besides saimin, what else does Shiro’s offer? Lee: We also serve a lot of local foods, including Succulent Pork Cutlet with Gravy ($8.95 dine-in, $7.95 takeout). It comes with two choices of starch, be it mashed potatoes, rice or french fries. Our Crispy Pork Belly with Ponzu Sauce ($8.45 dine-in) is a bestseller. It started off as a daily special and people kept requesting it. Now, we can’t even keep up with the orders. People also come here for our sandwiches and breakfast items. We have a great Club House sandwich with onion rings ($9.90), and Fried Rice Omelette with Pork Adobo ($8.30 dine-in, $7.55

DO: Shiro passed away in May at the age of 93, but up until then he was still very active in the restaurant. Correct? Lee: Yes, he would come to the restaurant basically every day. He was a very colorful man — he had a lot of energy. He was always thinking about things to do — even at 93 he had projects that he wanted to accomplish; he wrote poetry as well. Shiro was a real people person, that’s part of the reason he came to the restaurant every day. He loved to mingle with the customers, and many customers got to know him personally and they really miss having him around. DO: Who runs the business today? Lee: Shiro’s is a family business, so my wife, Linda Matsuo, and I are taking over. We do have a lot of help, my brother-in-law, who is Shiro’s son, also helps and he runs our noodle factory in Kalihi, where we make all the saimin

for our restaurants. Bryce Fujimoto, our eldest son, also helps with catering. DO: Shiro’s also takes care of all of your catering needs, correct? Lee: Yes. Many people don’t know that we cater, but recently we’ve been taking in a lot of orders and catering has been picking up. DO: What has contributed to the success of the restaurant all these years? Lee: I think it’s definitely the variety of foods that we offer and the quality of our food. We do have a lot of personal recipes of Shiro’s, including the soup base for the saimin. Shiro always had a love for food and learned how to cook while he was in the Army. Our customer service also is outstanding. We have some servers who have been with us for more than 30 years. DO: What are your hopes and dreams for the future of Shiro’s Saimin Haven? Fujimoto: We want to be here for a long time. There’s a small community who comes here regularly, and we just want to provide a place for them to take a break from the hustle of the daily grind. According to owner Cindy Suihisa, all you have to do is let your server know that you are vegetarian, and New Violet’s Grill will ensure there is no meat or fish in your dish. It’s that easy. The eatery also offers Vegetable Tempura ($6.95 a la carte; $11.95 for complete meal), with a dozen of the crisp, deep-fried delights: four pieces each of eggplant, string beans and carrots. Again, there’s no meat or fish involved in the recipe, so feel free to chow down. New Violet’s Grill is an affordable, local-style Japanese and Okinawan restaurant that’s vegetarian friendly to boot. With its crisp, clean atmosphere, Kissaten is a fitting spot for those business or power lunches with co-workers, partners and clients. And as it is open 24 hours a day, it’s a comfortable restaurant to bring family or a date for lunch or dinner. “Our menu is basically contemporary American, but we like to bring in influences from other countries like Japanese, Italian, French and Greek,” says Taba. Two noteworthy options include Tomato Watermelon Salad and French Onion Soup, both priced at $7 each. A refreshing, light option, Tomato Watermelon Salad includes halved cherry tomatoes, cubed watermelon, sliced onion, basil and feta cheese, topped with Kissaten’s house-made red wine vinaigrette dressing. Kissaten’s version of the classic French onion soup adds a little flair as the restaurant chooses to top the soup with gouda cheese and a touch of truffle oil. “We started off serving just coffee and simple foods like soups and sandwiches. As our food started getting more popular we expanded the menu, adding more appetizers and entrees,” Taba states. Kissaten also is BYOB-friendly, welcoming those who would like to have wine or beer with their meal.

KITCHEN INSIDER ver wonder what goes on behind the scenes at your favorite restaurant? Well, much credit goes to the many chefs, owners and managers who work diligently day in and day out to make sure Hawaii’s diners have a top-notch dining experience. This week, Dining Out got the inside scoops from Canton Seafood’s executive chef Sou Keung Wong, who gave us a little taste of Canton Seafood and shared just what fuels his culinary drive.

Who or what inspires you as a chef/manager/owner? I started as a kitchen helper at Dynasty Chinese Restaurant in Waikiki almost 30 years ago. The talented executive chef at the restaurant taught me an enormous amount of skill and influenced me to enjoy cooking so much, and that was how I became a chef. Cooking is interesting to me because it combines knowledge from a lot of different fields — you have to know about ingredients, but also about the chemistry or science of food. I love being the head chef here because I receive so many compliments from our customers, and it means a lot especially when they say the food is authentic or just like home. I take pride in every dish that goes out and want everything to taste perfect. What is your favorite dish on the menu? Why? I love all kinds of seafood, especially crab. My absolute favorite dish is our Hong Kong-style live, whole Dungeness crab, which is

served with crispy golden garlic on top. We can prepare crab many different ways, with ginger and green onion, salt and pepper, black bean sauce, or garlic butter sauce. Our deepfried flounder with seasoning herbs is another item I enjoy, and it’s become one of our most popular dishes. It’s currently on special for $9.99.

What is your favorite ingredient to work with? Why? My favorite ingredient surely is fresh ginger because ginger has a unique ability to rid poultries and meats of any bad smell. Chinese consider ginger an antidote to shellfish poisoning, which is why Chinese fish and seafood dishes are often seasoned with the herb. Some popular dishes that we have are Beef with Ginger, Seafood with Ginger, and Ginger Chicken. Is there a dish that you create that’s not on your menu, but available upon request? Certainly there is. We strive to bring in fresh, local produce as much as possible by including Hawaii-grown ingredients. For example, our steamed, live Kona Abalone with fresh garlic sauce is

available upon request for $6.99. Another one is Seafood with XO sauce. We make our own XO sauce in-house, so it’s very special. You can choose your favorite seafood such as shrimp or scallop, or do a mixed seafood. You can choose to have it with other meats too, but seafood is the best! What are your culinary goals? What do you hope to improve on? Since most people are more health conscious nowadays, my goal is to keep creating new dishes, and to feature them in the contemporary trends and concepts by infusing more healthy and fresh local ingredients. I am working on some dishes now that we should be adding to the menu soon.

eeing the line of beautifully prepared pupus exit the kitchen at Hoku’s in The Kahala Hotel & Resort makes you understand just how appropriate the term “culinary arts” is. Each item, from the Seared Foie Gras to the upscale local favorites created by executive chef Wayne Hirabayashi and recently arrived chef de cuisine Jeremy Shigekane, combines the bold flavors of locally grown products with a presentation that matches the interior décor and stunning ocean views just beyond your table. Hoku’s Ahi Musubi ($18) is a softball-sized crunchy pocket of everything you like in a musubi, only better. Cut into fourths, fresh ahi is stuffed into a ball of sushi rice, coated with furikake and quickly deep-fried. The result is a creamy, crunchy and somehow, slightly sweet creation that matches perfectly with the Asian remoulade dipping sauce, namasu and sea salad that accompanies the main attraction. In what can only be described as eye-closing good, Seared Foie Gras ($22) is exactly as it should be — light, creamy and artfully displayed. The foie gras is served on a crunchy slice of Hawaiian sweet bread with a balsamic reduction sauce and chopped mango that has been sauteed in fresh lemon grass. “People go crazy for our short ribs,” says Hirabayashi. That’s no surprise. One bite into the tender Short Rib Tempura ($16) makes it obvious why it has been a favorite for years. The ribs are braised in a concoction of shoyu,

sesame oil, red onion, green onion, garlic, ginger and other good stuff, topped with a kalbi jus and served with an avocado tempura. It’s awesome. At first glance, Big Island Hearts of Palm ($17) looks more like dessert than the beginning of a satisfying

meal. The julian-shaved hearts of palm, watermelon radish, orange and grapefruit with ahi and hamachi, and topped with yuzu-vinaigrette, looks almost too good to eat. Not for long though. Hunger and the delicate pile of fresh, crunchy ingredients guarantee a short table life, and I was more than happy to oblige. 4 EXPIRES 9/13/12

he lost city of Atlantis may be, well, lost. But Atlantis Seafood & Steak can be found right in the heart of Waikiki. “We serve the best of continental fare,” restaurant manager Andy Ancog explains. “We have the the finest steaks and seafood. “Being in Hawaii, a lot of people associate the ocean with the Islands — so we wanted to blend the best of Mediterranean and seafood cuisine,” Ancog says. “The food is recognizable — and comforting.” Although many of the menu items may be recognizable, that certainly doesn’t mean that you won’t find more creative items as well. “We do put a lot of our own twists on our dishes,” Ancog adds. To check out some of the amazing seafood that the restaurant offers, Ocean Seafood Pasta ($28.95) is a great place to start. The dish features clams, shrimps, scallops, mussels and fresh fish — all bathed in a light tomato cream sauce and served over pasta. Ancog says the dish is a favorite for visitors and locals alike. “Everybody likes noodles,

The restaurant has become a hotspot for international travelers. Ancog says that visitors from China, Japan, Korea and Australia, as well as the Mainland, can constantly be found dining at Atlantis. Hawaii residents, too, have been finding their way to Atlantis lately. “We have seen a lot of locals come in to visit the new stores,” manager Andy Ancog says. “And in rediscovering Waikiki, it’s a great chance to visit us.” The restaurant’s outside seating is the perfect place to spend an evening by relaxing on the porch, which overlooks Waikiki’s main drag. “I just think Waikiki is still the star of Hawaii,” Ancog says. “There are great shops, and it’s a great environment. This isn’t your grandfather’s Waikiki. So come check it out if you happen to be in the area for a stay-cation or shopping. We’re right in the middle of all the action on Kalakaua Avenue.”

any locals have a soft spot in their heart for all the times they’ve gathered around the table for dim sum, sharing an assortment of Chinese delights with family and friends. According to The Mandalay owner Linda Chan, there’s a whole lot of sentiment wrapped up in each little dumpling, and it all starts with the love that goes into preparing the traditional Chinese meal. “Dim sum actually means ‘touch of heart’ in Chinese,” says Chan. “It’s because everything is made by hand and it takes a lot of workmanship.” The Alakea street restaurant offers an array of Hong Kongstyle dim sum, all made with individual attention to detail. “Our dim sum is cooked to order, so we are always working hard to bring you the freshest dish possible,” adds Chan.

Dining Out caught up with Sabrina Zander (who moved to Oahu in 2000) and her aunt, Karen Zander, and uncle, Bernie Metzger, for lunch one afternoon. Tropics, an eating establishment that proudly supports fresh, local ingredients, also has nightly entertainment by top local artists such as Henry Kapono, and also features NFL games on the tube.

hen Dean Mishima had the opportunity to open a restaurant in his hometown of Kaneohe, the culinary craftsman wasn’t sure how the community would receive his cooking style. However, more than six years after Dean’s Drive Inn opened its doors, customers still flock to the eatery, some even coming from as far away as the Leeward coast in pursuit of the gourmet offerings served plate lunch-style. Mishima has spent more than 30 years in the food service industry, including nearly 20 years as executive chef for Liberty House before the popular department store transitioned into Macy’s. When he moved on to open Dean’s, Mishima strived to provide great-tasting food while also including fresh, local ingredients. “I was born and raised in Kaneohe, but when I decided to open up my own place, I never thought it would be here,” says Mishima, chef and owner at Dean’s. “So far, it’s worked out pretty good. We decided to offer a different style of cooking; Kaneohe was always about offering a lot of food at a cheap price. So, I thought about going for quality and presentation, and while the prices may be a bit higher, it worked.” Mishima also has experience in the distribution of produce and meat, and he makes an effort to bring in fresh, locally grown items — including his meats, which are never frozen — when creating his stellar menu offerings. And while Mishima is capable of offering complex culinary creations, he has learned

that simply seasoned dishes cooked perfectly resonate with the local clientele. “In this area, most local people want their food plain and tasty,” Mishima explains. “For example, the first time I served lamb, I prepared it with a marinade and rosemary, but customers would eat it and say, ‘What am I tasting?’ So, I decided to do it local, pulehu style, seasoned with Hawaiian salt and cooked over the charcoal. You don’t want the meat to be overpowered.” Dean’s continues to add new dishes and daily specials, including Broiled Salmon ($10.95), which is served atop a bed of somen salad. Mishima and his wife, Doreen, who greets customers behind the counter, also are glad to announce that the popular Vegetarian Maui Taro Burger ($7.95) is back on the menu after nearly a year. “Customers have been asking for it, and we can serve it again now that the taro patties are back in stock,” says Mishima of the dish, which is served with soup, tossed salad or french fries. Chopped Steak ($8.50 for a mini, $9.75 for a regular plate) is another mainstay on the menu, while Fresh Island Shutome ($9.50 for a mini, $11.50 for a regular plate) features light, buttery fish prepared in the customers’ choice of three savory sauces, including lemon, butter and capers. All offerings are MSG-free, and plates come with either white or brown rice, and a choice of soup, tossed or macaroni salad. Dean’s also offers a wide range of burgers and sandwiches, not to mention a host of freshly made dessert creations available at the counter.
