H

appy Sunday, Ono readers! I just returned from a fun-filled vacation in Southern California and Las Vegas. Every single moment was a blast, from Disneyland and Disney California Adventure to Universal Studios Hollywood, Los Angeles and cashing out in Sin City — I made the most of my time there. And, boy oh boy, did I eat! Duh! Let’s see, there was gigantic turkey legs from Disneyland, Roscoe’s House of Chicken ‘n Waffles, numerous stops to In-N-Out, Cajun Corner, Korean barbecue and home-cooked Filipino food prepared by my dear friends. I’m pretty sure my stomach expanded tremendously! And while I’m already having West Coast withdrawals, it’s time to snap back to reality and get back to the daily grind. This past week, I’ve been catching up on sleep and work, and trying to get myself on a healthy diet once again. Of course, that’s where papaya comes in! As my favorite fruit, papaya makes healthy eating seem not so much of a chore, but rather something I can look forward to. Papaya is rich in vitamins and beneficial to your skin and hair, just what I need after spending hours in the hot sun and functioning on very little sleep. Ripe papaya is usually eaten raw, while the unripe green fruit is typically cooked and incorporated into various dishes. Either way it’s delicious! So, without further ado,

I combined green papaya salad with the Bahn Mi chicken sandwich, so you get the best of both worlds,” he says. This delightful sandwich consists of wok-tossed tamarind chicken, green papaya slaw, roasted peanuts and Sriracha aioli nestled between two pieces of fresh French bread. What exactly does papaya bring to the dish? Well, chef Villarmia has all the answers. “The green papaya is raw, so it brings a freshness to the sandwich. Following a multi million-dollar renovation, the new eatery at 53 Ahui St. features a picturesque setting that treat guests like royalty as they enter through ceiling-high double doors, walk by the grand staircase and are surrounded by columns and arches that create a feel of elegance and luxury. The awe-inspiring building includes two wedding chapels, multi-purpose rooms on the second floor for special events and parties, a private dining room flanked by an exquisite Italian-made Fazioli piano, a full bar and lounge area, a wine collection featuring more than 160 choices from around the world and room

for more than 200 guests. And, while the floor-toceiling windows and sliding glass doors offer guests unparalleled views of the South shore and Diamond Head, 53 By the Sea’s cuisine brings the experience to a whole new level. Executive chef Hiroshi Hayakawa showcases skills gleaned while training in Southern Italy, and infuses flavors from Hawaii and Japan while utilizing the freshest meats and produce in every dish. “The restaurant focuses on fresh, locally grown produce and sustainability with the local resources here in Hawaii,” explains assistant manager and wine

DINING OUT // COVER // 53 BY THE SEA director Connor Barbaree. “Also, since we’re in Kakaako, fresh seafood is key and chef Hayakawa hand-selects all the fish that he wants to use for the day. Our fresh meats are only chilled, never frozen, which makes a huge difference as far as the quality, in terms of the texture and flavor profiles. We offer steak, lamb, free-range chicken, a few dishes incorporating homemade pasta and, of course, seafood and fresh salads.” While 53 By the Sea was named partly for its address, Barbaree and general manager Shige Kikuchi explain that the moniker also represents the restaurant’s dedication to exceptional service and providing a memorable experience for its guests. The “5” is meant to encompass the five senses, and while taste is obviously clear when the cuisine is

enjoyed, the open-air atmosphere allows the sea breeze and surrounding sounds of waves crashing against the rocks below to waft through the dining room while comfortable, sophisticated furnishings and a presence of natural light complete the overall experience. The “3” represents three core values of customer service, including warm, welcoming hospitality, a sense of professionalism by the skilled staff on the restaurant floor, and proper preparation that leads to perfection every day with the goal of providing a consistent, memorable guest experience. Similarly, Sliced Fresh Buffalo Mozzarella and Hauula Tomato ($20) offers prosciutto along with a swath of flavors created by roasted red bell peppers, sun-dried tomatoes and capers. Shrimp Scampi ($26) is just one of Hayakawa’s

freshly made pasta offerings, and includes a fresh basil pesto, while seafood enthusiasts also will appreciate Pan-Seared Hawaiian Mahimahi with Lemon Butter and Marinara Sauce ($28) as the dish infuses flavors of papaya, Hauula tomatoes, asparagus and bacon. “Chef Hayakawa wants to keep everything fresh,”

The steak selections include fresh seasonal vegetables, and diners

may choose from five steak sauces, including bleu cheese and spinach, Marsala wine and shallot, and crispy sage and garlic. “We invite everyone to come and enjoy the experience, as a lot of people don’t know what we’re all about and we’re slowly getting the word out,” Barbaree says. “Come down and check us out.”

or tourists, it’s the perfect escape. For locals, it’s the perfect place to soak up a view we often take for granted. And for everyone involved, it’s the perfect way to start the day. Ocean House, located beachfront at Outrigger Reef Hotel, has brought casually elegant Island cuisine ashore for the past decade. With unforgettable customer service, tables that face the ocean and a Plantation-style decor theme that makes you feel as though you’ve entered yesteryear, patrons will do

the most important meal of the day justice with a visit to this unique eatery. “It’s a beautiful, relaxed setting,” says general manager David Nagaishi. “Nice Hawaiian music in the background, with the real Hawaiian music playing with the crashing waves.” What better place, then, to welcome the day with the restaurant’s newest breakfast addition, Hawaiian Sweet Bread Stuffed French Toast ($14)? This indulgent masterpiece starts with puffy

slices of sweet bread that are filled with guava jam, battered and rolled in coconut before being seared to golden perfection. As warm guava oozes out of each piece, a wonderfully nutty, custardy macadamia nut cream syrup puts a rich and creamy spin on your syrup experience, taking french toast to an entirely new level. “After that, you need to go on one of these beach chairs and relax a little while,” Nagaishi says with a laugh. If you prefer a savory bite in the morning, try Blue Crab Cake Benedict ($16). Thick Artisan brioche toast is topped with crab patties, poached egg and a bright burst of lemon-filled hollandaise sauce. On top of that, the fresh flavor of Ocean House’s seafood shines in this dish. “It’s really nice blue crab made into thick

cakes,” describes Nagaishi. On the healthier side of breakfast options, Fresh Fruit Sunrise ($13) keeps it light without sacrificing an ounce of flavor. Seasonal fresh fruits are topped with the fluffiest of greek yogurts Ali Carte has ever tasted, only to be polished with the addition of granola and honey. Now, make sure at least one person at the table — if not everyone — orders the “award-winning” Ocean House Loco Moco ($15). It wasn’t named Waikiki’s Best Loco Moco in the 2010 Ultimate Loco Moco

Smack Down for nothing, and it earns every bit of that title. “The Loco Moco’s the one,” confirms Nagaishi. “A generous portion of white rice is topped with our house-made beef patty and we add our homemade gravy.” The beauty of this dish is two-fold. First, you have incredible hamburger patties that taste more like gourmet steak. “We use the trimmings from our New York steak, filet mignon, rib eye and we ground our beef to make your burger.” To add to that indescrib-

able flavor, executive chef Craig Yasaka makes a divine gravy using drippings from the beef as well as his own demi glace. When you load your fork with a touch of rice, egg, a chunk of beefy goodness and douse it all in gravy, you’ve just reached loco moco heaven. And Yasaka’s sprinkling of crispy onions doesn’t hurt either. Ocean House’s breakfast is served daily from 7 to 11 a.m. and with a menu like that, it’s no surprise tourists and locals alike frequent these shores. “How are you going to beat this?” adds Nagaishi. “Ocean, nice surf, great food. You can’t be any closer to the beach unless you’re actually on the beach. It’s a great place to have breakfast.”

Escape to a perfect world at Odoriko Japanese Restaurant

W

ith more than 100 menu items to choose from, there’s definitely something for everyone at Odoriko Japanese Restaurant in Waikiki. Known for its izakaya style of dining (a popular tradition in Japan where people end their day by going to a restaurant to unwind and enjoy good food, usually appetizer-style, and drinks), Odoriko serves authentic Japanese food in a comfortable, family-friendly setting. “It’s a feeling of relaxation,” explains Hiro Takei, general manager. “You’re here with your buddies or your family, away from your job and away from your worries or you’re here because of your worries, and you can just hang out, clear your mind, and eat and drink.” At Odoriko, customers usually order a la carte and share, however, there are teishoku (Japanese set dinners) available as well. Some popular dishes are Garlic Buttered Clams ($10.95),

Opened in 1978 by Nobuteru Takei, Odoriko is the sister restaurant to the former Maiko Restaurant at Ilikai Hotel. The company celebrates its 40th anniversary this year, and continues to provide locals and visitors an authentic Japanese restaurant in both taste and service. “My father’s values are around family and friends, and food and drinking, and working hard and relaxing afterwards,” adds Hiro. “When he started the business and years after, he always told me that the restaurant business was the perfect job for him because when customers come here and they're having a good time, enjoying themselves and laughing, and then they thank him at the door, there’s always that feeling of warmth.”

Who or what inspires you as a chef/manager/owner? My family has always been an inspiration to me. We grew up in a family business, so now running one of our own, my sister/partner and I strive to grow our business and run the operation as a team/family. I think our employees notice the difference working for a family-run operation versus a larger corporation. What is your favorite dish on the menu? Why? The Outer-Reef Burrito wet with the Green Sauce! Our green sauce is so yummy and delicious … and surprisingly it’s fat free! I also always sub out the white “ahee” rice for our brown rice option, which makes the meal even more healthy! What is your favorite ingredient to work with? Why? Our fish is extremely high quality. I am really proud of the flavor and consistency we are able to maintain in the product, even in our higher volume store. We always serve Pacific caught Ono as our fish — it’s delicious!

VO hat makes buffets so popular is obvious: There’s so much to choose from, so everyone is happy. But if you don’t eat meat or fish, your choices can narrow considerably on most buffet lines. hile Il Lupino means “little wolf” in Italian, all the dishes here have a presence that exudes a big and bold essence. And with breakfast being one of the most important meals of the day, you can be sure that this “little wolf” restaurant has delightful morning meals that will fill you up and leave you wondering how the talented chefs in the back blend all those flavors into one beautifully crafted dish. Chef Lawrence Nakamoto cooked up some great breakfast creations off the menu to share with Dining Out readers. The pancakes are made with sour cream and egg whites that make each flapjack lighter, and Nakamoto says they’re some of the best he’s ever had. Diners can choose from the classic Short Stack ($12), which comes with two pancakes, two eggs in any style you choose and maple syrup. If you’re craving a richer flavor, then Buttermilk Pancakes ($12) served with fresh, in-season fruit are for you. Of course, there are readers out there with a sweet tooth that’s out of this world, and Il Lupino Trattoria and Wine Bar has a pancake breakfast just for you — Macadamia Nut Pancakes ($12). To top it all off, chef Nakamoto prepared Bacon &

Eggs Benedict ($14) — and we all know that everything tastes better with bacon. Each ingredient from the perfectly poached eggs and Boar’s Head bacon to the grilled tomatoes and hollandaise sauce complements each other so well that you might even consider ordering another plate. Scottish Smoked Salmon Bagel ($15) takes the concept of a bagel sandwich to a whole new level. The Scottish smoked salmon and cream cheese sit happily between the toasted bagel halves, and if you wish, there are red onions and capers on the side for your enjoyment. Local papayas are the ringleader of Half Papaya & Fresh Berries ($10),

and sit in the center of an assortment of sweet, fresh berries. And all that great-tasting fruit also can be found in Il Lupino’s Acai Bowl ($14). “We talked to the Il Gelato company, and they made a special acai blend just for us,” Nakamoto says. “So that’s pretty special for our restaurant.” And this acai blend is to die for. Normally, people have a love-it-orhate-it relationship with acai, but the taste of Il Lupino’s acai and berries topped with granola will make a lover out of everyone. It’s always noon somewhere in the world, and this establishment serves up great beverages (alcoholic and

non-alcoholic) all hours of the day. For those who need their coffee fix, Macchiato ($4), Cappuccino Cafe Au Lait ($5), and Lavazza Coffee ($3) will satisfy that need. And Mimosa ($9) and Sangria ($7 happy hour; $13 regular) are tasty and refreshing. Breakfast is served from 8 to 11 a.m., and happy hour runs from 3 to 6:30 p.m. daily. Everything is made fresh, and nothing is ever precooked at Il Lupino. he early bird gets the worm, and Eggs ‘n Things just keeps getting better with its wide spread of breakfast delights, dinner favorites and more. With the restaurant’s original establishment located on Saratoga Road and a second location, Eggs ‘n Things Waikiki Beach Eggspress, on Kalakaua Avenue, general manager Michael Skedeleski is happy to announce a third location slated to open in mid-October at 451 Piikoi St. “We’re very excited about the opening of our Ala Moana restaurant. Our grand opening will be Nov. 8 while the soft opening will be next month,” he says. “We received a lot of requests for a place with parking, and we believe this new location will draw in a lot of locals and tourists who are shopping at the mall.” Currently, Eggs ‘n Things is preparing for its new move by experimenting with a variety of dinner options and other specials. estled in the heart of Chinatown, Brasserie Du Vin is a tranquil getaway that transports diners to a French cafe, both in its authentic fare and its comfortable, rustic environment. Executive chef Marco Elder says that the menu is designed to be accessible to diners, while taking them a little out of their comfort zone at the same time. So kick back and let Du Vin take you on a tasty tour. To begin your foray into Du Vin’s French cuisine, start with appetizer Oysters on the Half Shell ($16.50 for a half dozen). Currently, the restaurant has mirada oysters from Penn Cove, Wash. “They have a full meatiness to them, and a light, almost grapefruit sweet finish,” Elder says. If you’re a fan of the oysters, you can try more great fish selections for your entree with Du Vin Bouillabaisse ($20), which features fresh fish, shrimp, clams, and Penn Cove mussels in a lobster saffron broth. The dish, which is one of the restaurant’s most popular, is hearty — perfect for the oncoming fall days.

And while the fish at Du Vin is fresh and tasty, vegetarians dining at the restaurant certainly won’t go hungry. Vegetarian Risotto ($16) is a perfect medley of red bell peppers, spinach and cauliflower, sprinkled with a bit of Parmesan cheese and fresh herbs. “I get a lot of people who aren’t vegetarians come in to get that, and they rave about it,” Elder says. To finish off a great meal, Du Vin offers an ever-changing selection of decadent desserts to choose from. Last week, for example, the pastry chef whipped up several desserts, including Peach Strawberry Amaretto Tiramisu. “I sampled one earlier today, and it was tough to stop eating,” Elder says. “It is light, very refreshing, and the peaches come through nicely.” Other desserts that were on the menu last week were Chocolate Ganache Cake and Mango Cheesecake with Macadamia Nut Crust. Desserts range from $7 to $9. Du Vin also sells whole cakes — a perfect addition to an in-

rasserie Du Vin executive chef Marco Elder has been cooking since he can remember. By age 4, he already was serving up pancakes and eggs for his family. “People would be surprised, and a little nervous, seeing me push a stool up against the stove,” Elder recalls. These days, diners simply are excited to know that Elder is at the stove — it means that they are in for creative, tasty cuisine. He began working in the restaurant industry as a teenager in Maine before attending culinary school in Colorado. After honing his skills on the Mainland for several years, Elder moved to the Islands and started at Du Vin as the sous chef more than a year ago before taking the helm as executive chef. Du Vin, which recently celebrated its sixth anniversary, started out as a wine bar, but it has slowly progressed into a thriving restaurant with a versatile menu that includes appetizers, lunch, dinner and desserts — as well as an impressive wine selection. Du Vin and Elder have a strong commitment to utilizing fresh, local ingredients. Du Vin features produce from Nalo Farms, vine-ripened tomatoes from Kauai, Manoa honey and local fish. It also is set to partner with Naked Cow Diary for a new cheese selection, which will launch next month. “One of the things that is really key for me is the fact that I can actually go down to the farm,” Elder says, explaining why he uses local ingredients. “I can touch the animals, and I can see where the product is coming from. I can see how they are treating it at each step of the process. “It's really about doing something properly — having some good food, good cuts of meat, starting with good ingredients,” Elder says. “We like to showcase the natural Executive Chef Marco Elder with Du Vin Bouillabaisse flavors of the food whenever and Oysters on the Half Shell possible.”

Du Vin strives to use fresh, local ingredients whenever possible, and changes its menu seasonally according to what is available. The next menu change is coming up in mid to late October. With the holidays approaching, Du Vin is the perfect place to host your holiday get-together. Tucked away

behind the back patio, the Cask Room, with its cozy, rustic Parisian feel, is ideal for private parties. A Positive Spin on the Daily Grind

s corporate coffee chain locations continue to pop up seemingly on every corner, a husband-andwife team is bucking the trend with a java jewel nestled in the heart of downtown Honolulu. Mary and Max Suiter opened Café Central late last year in the First Hawaiian Center lobby, and have been serving gourmet coffee to a wide range of customers looking to escape, albeit briefly, from the hustle and bustle of the work grind. “This opportunity came up here, and we had been talking to First Hawaiian Center for about five years because the space was just an empty broom closet,” Mary says of the café’s central location. “We decided to do something unique, and it’s a great building. We thought it would be a nice venue for a coffee shop.” The coffee business is nothing new to the Suiters, as Max and his brother Raymond started Honolulu Coffee Co. in 1990. While both eventually sold

their interests in that company, Raymond now operates his own roasting operation called Kona Coffee Purveyors, and provides the coffee for Café Central. In addition to the Café Central and Kona blends, the café also features regional coffees that rotate monthly. The gourmet coffee offerings are prepared fresh in a stunning $15,000 La Marzocco coffee machine, that, in stark contrast to many similar shops with automatic machines, is operated manually. Baristas need to time the process perfectly and “pull good shots” to make sure the coffee drinks are made and mixed properly. “We wanted the business to be all about the coffee,” says Mary, who manages the operation. “The food has really come about since we opened as people have asked for it. We just focus on good quality food, excellent gourmet coffee and we’ll let the customers decide what they like.” Café Mocha ($3.55 for 12 ounces, $4.25 for 16 ounces and $4.65 for 20 ounces) is just one of the café’s espresso selections featuring the rich, flavorful coffee. In addition to the gourmet coffee, French Press and Pour Over offerings, Café Central also serves up lattes, espresso, macchiato and hot chocolate. For those who prefer an alternative to java, Café Central also offers Smith Tea, a high-end selection that is served hot or cold, depending on the diner’s preference. Café Central brings in fresh pastries daily from Fendu Boulangerie, and also features fresh bagels, banana bread, cookies and croissants from other local vendors. Asian Chicken Salad ($5.95) and Israeli Salad ($5.95, add 50 cents for chicken and 50 cents for egg) provide diners with fresh accompaniments to their favorite coffee or tea choices. Turkey Wrap ($6.95) is another popular item, as the whole grain wrap featuring homemade hummus, avocado and pepperoni makes a great grab-and-go alternative to heavy, greasy offerings often

Acai Bowls ($6.25) and Smoothies ($4.25) also are popular, especially for breakfast, as diners enjoy the energyproducing, nutrient-rich offerings served with fresh seasonal berries. “People in the building like to get their day started with Café Central and a good cup of coffee,” Mary says. “They’ll also pick up one of our breakfast sandwiches or a great yogurt parfait with fresh fruit and granola.”
