ast week it was papaya, this week it’s lilikoi! As an island girl, born and raised, I have a soft spot for this tropical fruit. Remember picking lilikoi from Grandma’s backyard? But when you are as crazy about food as I am, a mere slice of lilikoi isn’t gonna cut it, especially when you’re a slave for sweets (and a bit of tartness). Lilikoi is a tart tropical fruit — a unique type of passion fruit — that grows in climates similar to Hawaii’s, which is why you’ll find a multitude of this fruit in the Pacific Islands, and parts of South and Central America. Rich in vitamin A and C, riboflavin and niacin, lilikoi can be considered an “overachiever” in the fruit category. Can we say perfection? That’s a big, fat “yes” in my book! Yellow in color, lilikoi always brightens up my day and is a passion fruit that I’m … well ... passionate about. So, without further ado, it’s time to follow my lead as we share our love for lilikoi at the following Ono, You Know establishments!

like sugar? What about these two sweetest words “Chocolate Lilikoi”? Delicious! “Chocolate Lilikoi is one of our bestsellers,” Lunagkhot says with great pride in his homemade dessert. “In fact, it’s second to the Chocolate Pyramid, and we sell

JJ Bistro & French Pastry Topping my list of lilikoi goodness is JJ Bistro & French Pastry on Waialae Avenue. Executive chef and owner JJ Luangkhot has been luring in those with a sweet tooth for quite some time with his EuroAsian fare that is complete decadence. Do the words “Chocolate Pyramid” make your heart melt 2 | D I N I N G O U T | S E P T. 3 0 - O CT. 6 , 2 0 1 2

close to 30 to 40 pieces of Chocolate Lilikoi per day.” A perfect reflection of the Islands, this sinful delight with a bit of Parisian influence is priced at $4.75 per piece or $30 for an 8-inch cake, and features a solid foundation composed of moist chocolate cake topped with a lilikoi mousse made with the freshest of fruit, richest of cream and egg whites. Lastly, Luangkhot adds an essence of flair to it with fresh fruits such as blackberry, strawberry and orange, and a hint of chocolate ganache. “Interestingly enough, when I first started selling this dessert I had named it Chocolate Passion Fruit, then when I found out that lilikoi was the popular term in Hawaii, I changed the name and then Chocolate Lilikoi began selling like crazy,” Luangkhot recalls. “It’s very refreshing and that’s what people really love about it.” One bite and you will be in the best of moods for days. Chocolate Lilikoi has got me lovin’ life to the extreme! JJ Bistro & French Pastry 3447 Waialae Ave. 739.0993

ome home again to Kenny’s Restaurant, where homecooked comfort food and a friendly staff of longtime employees warm the heart and soul. With the welcoming of fall also comes cravings for classics just like Mom used to make, and favorites that remind us of family gatherings around the table. Here at Kenny’s, you can have all of this and more, but without the hassle of standing at the stove for hours on end. Located at Kamehameha Shopping Center in Kalihi, Kenny’s has been an iconic landmark since 1966 when founders John Fujieki, Kenny Kaneshiro and Herbert Souza opened the doors. Nowadays, Fujieki’s son, John Fujieki, serves as president and owner of the establishment. He believes that while continuity is key, it’s also important to change with the times. “We have a lot of employees who have been with us for decades, such as our senior assistant manager, Erlene Hutchinson, who has been with us for 32 years, but we also just recently hired a new sous chef, Peter Alarcon, about two weeks ago,” Fujieki says. “With every new chef comes new ideas; our menu is everevolving,” Hutchinson adds. Kenny’s offers a vast array of cuisine, specializing in local, Japanese and American fare, and Alarcon brings his own unique twist to the menu with the addition of Poke with Walnuts, and Snapper with Lemon Caper Butter Sauce (prices yet to be determined). “Poke with Walnuts is something that you won’t find at very many places,” Alarcon says, describing this alluring dish as the freshest of poke marinated in soy sauce and seasoned with Hawaiian salt, red onions, green onions and chopped walnuts. “The walnuts bring a texture to the dish, which complements the softness of the ahi.” As for the mouthwatering snapper, Alarcon lightly coats the fish with flour and sautés it to perfection before taking it to the

next level with fresh butter, capers and a zest of lemon, not to mention the sides of rice and stirfried mixed vegetables that accompany the meal. “I hope the customers are happy with these dishes. I really want to bring more local dishes to the menu,” he adds. Open daily for breakfast, lunch and dinner, Kenny’s entire menu is available at any time of the day or night. So, if you’re aching for Kenny’s Specialty Full Stack Pancakes with chocolate chips and almonds ($10.85) for dinner — yes, Kenny’s can make it happen. “Currently, with the purchase of any breakfast entree, you receive two free hotcakes until noon,” Hutchinson confirms.

A best-seller for years is Kenny’s Famous Chinese Chicken Salad ($11.45), spotlighting shoyu chicken, char siu, wonton chips, Chinese parsley and peanuts on a bed of crisp lettuce doused with the restaurant’s special sesame seed dressing (sugar-free dressing also available upon request). “We had a customer from Hong Kong come in and say this is the best Chinese Chicken Salad he’s ever had in his life,” senior assistant manager Duck Sheldon recalls. “We have a lot of loyal customers who know us on a firstname basis. Some visit regularly and we know their orders — Prime Rib Au Jus is a popular one.”

Priced at $25.99 for a regular cut and $30.99 for Kenny’s Cut, this former special is now available daily and features a slowroasted cut of succulent prime rib served with au jus and a side of horseradish, mashed potatoes and a vegetable medley of baby corn, broccoli, green beans, bell peppers, water chestnuts and carrots. Kenny’s also serves up an array of fruit of the sea, including Menpachi ($20.99) steamed in Kenny’s house-made regular or sugar-free sauce, or grilled with lemon shoyu and suri daikon. “James Drewery was our former sous chef and he brought a lot of Southern items to the menu, such as barbecue ribs and homemade cornbread, which we have kept on the menu as well,” Hutchinson explains. “Business has been steady and we couldn’t be happier, although with the holiday season coming up we’re expecting an increase in customers coming in for our holiday packages to-go.” Kenny’s is already taking orders for its holiday packages: Freshly Roasted Turkey, Complete Turkey Package, Holiday Ham, Holiday Prime Rib and Special Turkey Plates. “This year, we decided to offer cornbread stuffing or lup cheong stuffing for an additional price. We hope it will be a great holiday season for us and it’s never too early to get started,” Sheldon says, adding that patrons may call 841.0931 for more information and to place orders. “Some may not know that we also cater, and with football season here, that’s picking up a lot.” With a variety of tray sizes to choose from, from half to extralarge, tailgaters and party-goers have been gravitating toward top catering entrees, including BBQ Beef Tri-Tip, Korean Chicken, Chow Mein Noodles and more. “Kenny's is a friendly place to enjoy a meal with family or friends,” Fujieki says. “The secret to our success all of these years lies in our employees and our customers, they have been extremely loyal to us.”

ometimes life just gives you lemonade. That’s the feeling one gets while dining at Chai’s Island Bistro. Chef Chai Chaowasaree’s take on Asian fusion has made him a culinary star whose growing empire includes two restaurants, a TV show and being the person responsible for bringing flavor back to flying as the executive chef for Hawaiian Airlines. He’s got a third restaurant in the making and is one of 10 chefs across the country chosen to take part in a culinary contest, but more on that later. Chai’s main menu talent is expertly expressed in the appetizer section that features Asian, Pacific and European flavors that combined, or alone, provides a perfect introduction to the rest of

the menu. Confused about which of the 17 pupu items to pick? Let Chai do the choosing and go with the appetizer platter. The Sampler Platter is $10 per person and can be ordered for up to four people. Diners wishing to focus on each individual item can do so as well. Chai recommends starting off with ahi, so we will too. Fresh Ahi Katsu with Wasabi Curry comes in large, bite-sized servings on individual spoons. Ordering it solo as an eight-piece dish costs $16. The sashimigrade ahi is wrapped in nori, coated in panko and deep-fried until the outside is crispy, but the interior remains cool and buttery. The nori combines with the panko to make a protective shell that keeps the ahi at the proper

interior temperature while the slightly spicy curry provides just the right bite that is balanced with fresh mango. Next comes Graulax Salmon Roulade with Crab Meat and Cream Cheese Mousse ($16 as a single order). Thinly sliced salmon is cured overnight in salt, fresh dill and lemon zest, and wrapped over crab and cream cheese, topped with tobiko and fresh dill, and served on a cucumber chip. The stuffed salmon is very light while the cucumber provides a cool freshness to the tasty bite-sized appetizer. The third stop about the platter is Sun-Dried Tomato and Puna Goat Cheese Wonton with Fresh Tomato and Mango Salsa ($12 by itself). Goat cheese can be pungent and offputting to some, but Chai reduces the cheese’s natural flavor by adding mozzarella to the mix. The result is a mixture that is only mildly sharp in flavor and balanced with the sweet acidity from the mango. Chai entered these tasty

wontons into the Alouette Cheese Master Holiday Chef Challenge. Fans can vote for their favorite recipe online, starting Oct. 15, at masterholidaychef.com. No. 4 on the hit parade is Kataifi and Macadamia Nut Crusted Black Tiger Prawns ($13 solo). The prawns are cut into bite-sized portions, coated in macadamia nuts, wrapped in the shredded filo dough, fried, drizzled with a pineapple vinaigrette and served on a pineapple wedge. Sweet, crunchy and moist, the delicate prawns are handled perfectly, absorbing the surrounding flavors without losing their own succulent identity. Finally, Chai recommends Roasted Butternut Squash and Lobster Bisque ($10 for an individual bowl). The thick, rich and creamy bisque is gluten free and uses no flour or butter as a thickening agent, just squash, a lobster stock and more squash. What comes to the table is a thick, hot soup that has a wonderful texture and a light flavor.

ou may be familiar with the taste and flavor of common mushrooms, such as shiitake, reishi or the typical white mushroom. These ‘shrooms are year round delicacies, which add nutritional and health benefits to many dishes. Yet, each autumn, usually from September through November, the matsutake mushroom finds its place in many restaurants. The matsutake mushroom could be considered the black sheep of the mushroom fungi family. A prized commodity in Japan for centuries, matsutake mushrooms hide themselves far and away from the others, typically found under canopies of pine trees, bonding and forming to its roots. Sushi King, open for 20 years in Honolulu, is usually the first in Hawaii to serve the matsutake seasonal mushrooms. Starting last week and through fall, the restaurant will feature its Matsutake Dobin Mushi, a hot soup, which combines a variety of ingredients all served in a tea pot. Priced at $9.50, Sushi King’s, Matustake Dobin Mushi starts with a clear broth. Added ingredients include shrimp, chicken, carrot, fish cake, ginkgo nuts and, of course, matutake mushrooms. The broth is typically poured into tea cups and then the ingredients are added to the broth using chopsticks. Matsutake mushrooms can go far beyond its role in soup. Sushi King is getting creative, adapting the seasonal mushroom to traditional Japanese cooking as well. Sushi King now offers Matsutake Tempura ($12.50). Given the nature of matsutake mushroom harvesting and being imported from Japan, this unique mushroom will not be around for long, so explore the tastes of mushroom season.

uch like a pristine forest, Andrew Huang set out to represent Mother Nature by “getting back to the basics” by way of the delectable shave ice offerings and other sweet treats available at Ice Forest. Located at the corner of Alakea and Merchant streets, across from First Hawaiian Center in the heart of downtown Honolulu, Ice Forest serves up Taiwanese-style shave ice treats, as well as coldpressed ice coffee, granitas, fruit smoothies and Italian sodas. Huang takes pride in the fact that his menu selections are free of chemicals, preservatives and shortcuts. Huang, the owner of the establishment which opened earlier this year, explains that his shave ice stands out thanks to the availability of fresh azuki beans, taro, custard and mochi balls, which are in many of Ice Forest’s signature shave ice choices.

Customers can choose to add more ice or syrup depending on their varying tastes.” For those who enjoy azuki beans, Huang recommends Azuki, Mochi Balls, Ice Cream ($5.75), and pairs the assortment of flavors with watermelon syrup (diners may choose from other flavors as well) and condensed milk (75 cents extra). “Taro lovers” will appreciate the Taro, Mochi Balls, Condensed Milk ($5.75), and when coupled with lychee syrup, diners are treated to a unique

assortment of intriguing textures and flavors. Double-Custard, Mochi Balls ($6) provides customers with an opportunity to enjoy the homemade custard, which is available in both original and coffee flavors, while also having the option of adding condensed milk (75 cents extra) and a flavor selection. For those aspiring to try something new, Ice Forest offers “Snow Ice,” a light and fluffy form of shave ice that is whipped with the desired flavor already mixed with water, so all the tastes are incorporated as the treat becomes ice. The Custard and Mochi Balls, Condensed Milk ($6.50) is one of the popular Snow Ice selections available. Ice Forest also offers com-

he spotlight shines on Mary Gutzi, a renowned singer and actress who’s made her mark in musical theater and has shared her talents with audiences across the globe for the past four decades. With an appetite for the performing arts, she also has a real taste for premier cuisine, which led us to Pipi’s Burgers in McCully Shopping Center for this week’s Dining with the Stars. “Guess what? I’m not a red meat eater, so it’s pretty ironic that I’m at a burger joint,” Gutzi says with a laugh. Pipi’s Burgers is a recent addition to the McCully Shopping Center ohana, and opened its doors this past July serving up melt-in-your-mouth gourmet burgers and sandwiches that are well worth your buck. While Pipi’s Burger reigns supreme,

PIPI’S BURGERS

the restaurant’s friendly and accommodating staff was more than happy to forgo the Angus beef, and instead whipped up a Furikake Ahi Burger and Garden Burger complete with sweet potato fries and french fries for Gutzi to indulge in. Pipi’s Garden Burger features organic mixed greens, a veggie patty and a spread of onions, carrots, tomatoes and mustard on a brioche bun, while Furikake Ahi Burger presents a fresh slab of ahi coated with panko and furikake, teri glaze and wasabi aioli along with lettuce, tomato and onion, also served on a brioche bun. “Everything is so fresh and tasty,” says Gutzi, who was born and raised in Detroit, but spent most of her life in The Big Apple and is a self-proclaimed New Yorker at heart. “The

Furikake Ahi Burger is so good and you can really taste the freshness of the fish. The seasonings and the veggies are a great complement. The Garden Burger also is very flavorful — it’s fabulous! “I’ll definitely be back for more. Pipi’s puts a lot of time into everything here. Here’s a place that you can come to with people who eat red meat and not feel left out,” she adds. Gutzi’s many accomplishments deserve a standing ovation as she starred in the award-winning musical Les Miserables on Broadway from 1990 to 1992, was part of the national tour of CATS in the mid-’90s (which brought her to the Islands) and sang her heart out in Ragtime. Now, this Broadway veteran can be seen in living rooms across the nation as she’s landed a role

in ABC’s new military drama series Last Resort, which airs Thursdays at 7 p.m. “I’ve done theater all my life since I was a child, and I’m always looking for new avenues to express my creativity, so being involved in television has been very exciting,” states Gutzi, who plays Dodds, a mysterious interrogator. “We see Dodds lurking in the background in a few scenes and then we see her interrogating the wife of the submarine commander. “I’m very proud to be a part of a wonderful company, and we’re hoping that everyone tunes in. Last Resort is one of the real promising shows for the fall season. The cast and crew have been wonderful, and the shooting locations on the island have been gorgeous.”

Gutzi, who was once a backup singer for Cher, also will now lend her voice to March of Dimes 2012 Governors’ Ball honoring Dennis Francis, president and publisher of the Honolulu StarAdvertiser. The event will be held Nov. 3 at Sheraton Waikiki, and promises to impress with fabulous food, local flair and top-notch entertainment. “I’m honored to be a part of this event and I want to encourage everyone to attend,” Gutzi says, noting tickets are still available by calling 973.2155. Despite her many appearances on stage and on screen, Gutzi also makes time to privately coach current and aspiring local talent. “I try to take every opportunity and really present myself fully. You never know what you’re going to learn and who you’re going to meet,” Gutzi says.

hen you mention Asahi Grill to the many local folks familiar with the popular restaurant, you can almost guarantee that the first thing to pop out of their mouth will be “oxtail soup.” Long renowned for the local staple, Asahi Grill serves up bowl after bowl of its signature dish to its to pho r loyal customers — lke Wa ie hal Nat | Korean Salad ($8.50) and tourists, too. But that story is the only kind of tale vegetarians are interested in, since non-meat eaters would rather save the ox than savor it. So, if vegetari-

Asahi Grill serves up an eclectic mix of ethnic and island faves for breakfast, lunch and dinner, which includes local-style JapaneseChinese- and Korean-influenced dishes. And speaking of Korean, the friendly Kakaako neighborhood eatery offers Korean Salad ($8.50), a cool, light dish that will spice up anyone’s life, and if you don’t eat meat or fish, it’s just right for a light meal with its generous portion of crisp romaine

Sekiya’s serving saimin and okazu favorites By Jaimie Kim

A

fter being in business for more than 50 years, Sekiya’s Restaurant and Delicatessen continues to find its success in serving customers what they want: familiar favorites that the entire family can enjoy. “We’re one of the few family-owned okazuyas. Our customers like the tradition of that,” says owner Joy Morihara. Founded by Morihara’s grandparents in 1934, Sekiya’s continues to make its dishes from scratch. Saimin — the restaurant’s staple — is served in three different sizes ($4.95 for a small bowl, $6.95 for a large bowl and $8.95 for an extra-large bowl).

SEKIYA’S RESTAURANT & DELICATESSEN WHERE 2746 Kaimuki Ave., Honolulu CALL 732.1656 HOURS 8 a.m.-10 p.m. Sunday-Thursday, 8 a.m.11 p.m. Friday-Saturday. Okazuya open 8 a.m.-4:30 p.m., full-course meal service begins at 9 a.m.

Topped with sweet-andsalty char siu, its flavors blend with a traditional dashi broth that is served over noodles. “Saimin is always popular.

It’s great with the older people and kids, and everyone in between,” Morihara states. Hash Tempura ($5.70 for six pieces, 95 cents per additional piece), deepfried corned beef hash balls are tempura battered and fried until golden brown. A favorite among customers, it is one of the eatery’s most popular okazu dishes. If you’re still craving more or looking to try something different, Sekiya’s Oxtail Soup ($13.95) consists of whole oxtails, which are boiled until tender, giving flavor to the broth. The soup is garnished with mustard cabbage and served with ginger and Chinese parsley, which give it an extra tang. The dish also is served with rice, tsukemono and hot tea.

Above all else, Sekiya’s continues to provide its customers with the homestyle, local cooking they know and love.

Three generations of the hard-working bunch are often under one roof as founder Howard Lam greets customers, his son Gary manages the floor and Gary’s three-year-old daughter Bianca pays frequent visits, spreading her joyful spirit about the 11-year-old dining spot. Golden Palace’s expansive menu of dim sum classics as well as a la carte items also fill the spacious interior with happiness, and there’s one dish in particular that gives an extra dose of comfort. green onion, straw mushrooms, Chinese broccoli, lap cheong and minced garlic. “It’s more of a family-style dish,” explains Gary. “You wouldn’t find it in most big restaurants, but I do know a lot of people who grew up with it, where their moms made it at home, and they are looking for it when they go out to eat.” In addition to childhood favorites, regulars also enjoy Beef with Malaysian Sauce ($8.95), which is served on a sizzling platter that lets off the enticing aroma of tangy black bean sauce when it is brought out of the kitchen. Shredded onion, green onion, bell pepper and beef tenderloin soak in all that flavor to complete the dish. And Gary suggests trying Cashew Chicken Taro Basket ($7.95), literally filled with straw mushroom, carrot, green onion, broccoli, cashews and chicken that have been prepared in a savory brown sauce. “The chef shreds the taro, then deep fries it to cook and set the shape of the basket,” he says when describing this entree’s edible outerwear. So the next time you are weaving your way through Chinatown’s vibrant streets, stop in to Golden Palace and feel part of the royal family.

et’s get one thing out of the way first: If you’re going to name your restaurant after one dish, that dish better be among the best — and Loco Moco Drive Inn’s Loco Moco ($7.95) really is. Owner and chef Sheng Zhu says that it is one of the restaurant’s most popular dishes. “The beef patties and the gravy are homemade,” Zhu says, explaining what makes their Loco Moco stand out. “And we use fresh eggs and fresh rice.” In addition to its namesake, the restaurant serves up other tasty local favorites at a reasonable price. Another must-try item is Mushroom Chicken ($8.25), which features fried chicken bathed in a creamy mushroom sauce. Steak With Garlic Shrimp ($10.25), which features New York steak, also is a popular item. Just a couple weeks ago, Loco Moco

oco Moco Drive Inn is a family-owned venture: While chef and owner Sheng Zhu works in the kitchen, his wife works at the front counter, and his brother helps out with the business aspect. “We all immigrated from China,” Zhu explains. Zhu moved to Oahu more than 10 years ago and got started in the restaurant industry right away. “Right when I moved here, all I was doing was restaurant work.”

He worked his way up quickly in his early days in the restaurant business — going from prep work to one of the main chefs in a matter of months. Prior to opening Loco Moco, Zhu and his brother owned a restaurant in Waikiki where Zhu further sharpened his culinary skills. He opened Loco Moco Drive Inn about a year and a half ago. While the service at Loco Moco Drive Inn is quick and convenient, owner and chef Sheng Zhu’s description of the restaurant as “fast” should not be mistaken for fast food. Rather, the restaurant uses quality ingredients, and the menu also includes healthy alternatives. “Sometimes a lot of people think that local food is fatty or junk food,” Zhu says. “But in here, we also carry healthy items. “We prepare all of the food daily, so it’s fresh,” Zhu says. “And most of the items are homemade.”

And for a true breakfast of champions, try the Super Special Breakfast ($6.25), which includes two pieces of bacon, two slices of Spam, two sausage links, two Portuguese sausages, two eggs and two scoops of rice. Loco Moco is constantly creating new deals for its customers, including the recently added House Specials. A couple of the new specials put an emphasis on healthy eating, such as Health Plate with Garlic Ahi ($7.95). This dish features a variety of vegetables along with the tasty, seasoned ahi and is served with brown rice. And for seafood lovers, a similar new offering is Health Plate with Mahi Mahi ($7.95). “We always change and update (dishes) based on what is requested by customers,” Zhu explains. “Sometimes we ask customers what they are looking for.” Loco Moco found in their chats with customers that a lot of diners are looking for healthier options. “They are health conscious,” he says.

You want it all? Now you have it. Whether you’re dining with family, friends or business partners, Sakura Terrace has items specifically made for sharing among guests. Take Matsuri Chirashi, for example. Presented in an oke bowl with rice, shrimp, ikura, unagi, egg

and more, this entree feeds two people during lunch ($13.75) and four to five individuals during dinner ($30). “Sharing food brings people closer together,” says Sakura Terrace marketing director Marilyn Cariaga. “In addition to Matsuri Chirashi, people also can order other dishes to share along with it, such as Saikoro Steak ($10.75), Garlic Shrimp with Burnt Rice ($19.75) or Vegetable Nimono ($6.25).” Everything’s coming up roses — or rather sakura — at this South King Street establishment, as there’s always something new to entertain your taste buds.

Patisserie La Palme D’or

Enter into a land of simple elegance at Patisserie La Palme D’or in Ala Moana Center. White marble floors, pristine glass countertops and beautifully sweet arrangements greet you as you enter through the doors. Friendly staff are eager to share their recommendations, and from time to time you’ll see head pastry chef Akiko Kimura making sure all the pastries, cakes, drinks and more are exactly as they should be. On my most recent visit to the patisserie, owner Hiromi Tanaka quickly identified two lilikoi indulgences that will make you say, “Wow!” First is Tropical Fromage ($4.20 each) — a La Palme D’or classic — a masterpiece of layered cheesecake and coconut sponge cake topped with the most tempting lilikoi and mango mousse. A tropical par-

adise on earth, wouldn’t you agree? Next is a fairly new item, which chef Akiko created earlier this year. Affectionately named Passion Delight ($4.95 each), this one is almost too striking to devour. With such precision, chef Akiko hand-crafts layer upon layer of vanilla sponge cake intertwined with bits of fresh raspberry topped with strawberry and lilikoi cream, and finally savory banana and white chocolate mousse. Passion Delight then seduces your palate even more as a raspberry macaroon and a strawberry morsel sit atop this slice of heaven, encompassing a marriage of French flavor and Japanese craftsmanship.

Stage Restaurant Bravo to Stage Restaurant, a modernly chic dining establishment located on the second floor of Honolulu Design Center. First impressions are always crucial, so Stage awes its guests with its state-of-theart interior complete with statement lighting, stylish hues, eclectic furnishings and remarkable artwork. And while Stage’s Asian-Americaninspired cuisine receives rave reviews, the desserts are immaculate as well. Pastry chef, Cainan Sabey, brings lilikoi to life with his Lilikoi Creamsicle creation ($10). Available Monday through Friday, during dinner only (5:30 to 9 p.m.), this morsel of love is meant to give a light and refreshing end to your meal. “The inspiration for this dish was orangevanilla ice cream popsicles,” Sabey says. “The tartness and acidity of the lilikoi sorbet together with the rich, creamy vanilla ice cream brings a perfect balance of flavor.

“For a unique crunchy texture, I ground up freshly baked vanilla shortbread cookies with a premium organic extra virgin olive oil that has been infused with Kalamata olives. This process is called deconstructing and then reconstructing the cuts, to get the same flavor of shortbread cookies, but creating a whole new texture,” he adds, noting that the lilikoi is processed and shipped from Hilo and the vanilla beans are Tahitian. What’s more is the sauce! Sure, Lilikoi Creamsicle is simply amazing as is, but add to that a sauce made from fresh strawberries and a pomegranate-flavored balsamic vinegarette, along with fresh fruits and berries ... and oh, my days, it’s Christmas in September!

Award-Winning Cuisine Jade Dynasty Story by Kyle Galdeira Photos by Nathalie Walker

hile local awards serve as attractive feathers in the caps of eateries, the honors bestowed by international organizations carry much more weight and prestige. Jade Dynasty Seafood Restaurant, located at Hookipa Terrace on Ala Moana Center’s fourth floor, recently experienced the pride and acclaim that comes with earning such an award as the Escoffier Society’s Asia Pacific Region named the restaurant as “Best A Chinese Restaurant in Hawaii.” The Five-Star Diamond Award of Excellence was presented to Jade Dynasty in August, and comes from the prestigious culinary group that boasts a history dating back to 1936. “It’s a great honor for us,” says general manager Gary Chan. “One of the gentlemen from the Escoffier Society flew here all the way from the Asia Pacific headquarters to test out our food.” Jade Dynasty is constantly adding new menu items, many of which are influenced by the cuisine in both China and Hong Kong, including Braised Shanghai Pak Choy with Carrot and Crab Meat Sauce ($17.95, advance order required). The dish features fresh, flavorful vegetables in a savory sauce, and for those who do not prefer meat, Chan explains that the crab meat can be excluded to create a vegetarian option. “This is a very healthy option, as the sauce contains a little egg white and carrots, and crab meat that goes on top of the pak choy, which is arranged turned up-style on the

plate,” Chan says. “The presentation is beautiful, and the taste is very good as well.” Yin & Yang Seafood Soup ($22.95, serves five people, advance order is required) pleases both the taste buds and the eyes, as the dish is presented beautifully with the broth crafted to feature elements of spinach and pumpkin. “The top of the dish contains two layers, as the spinach and pumpkin are on top, and the seafood is below,” Chan says. “It’s a brand-new item, and it’s very hard to prepare this dish with the different layers.” Another popular seafood selection served up at Jade Dynasty is Steamed Crab and Mochi Rice in a Lotus Wrap (market price, advance order required). Chan explains that the mochi rice is steamed in the lotus leaf with the Dungeness crab and stir-fried with a Chinese white wine sauce to allow the starch to soak up all the flavors. Chan also is proud of another new dish to grace the Jade Dynasty menu in the DeepB Fried Golden Rolls ($4.50 for two). The pupu-style dish features taro, Chinese bacon and sausage wrapped in special spring roll wrappers that are shipped to the restaurant from China. The tasty starter features a light and flaky outer layer that won’t weigh down diners. Another scintillating starter drawing rave reviews is Snow Mountain Char Siu Bun ($3.50 for three), which features three meat-filled buns that are light and fluffy, not doughy. The buns, which resemble little snow-capped mountains, are cooked in a special oven from China. “We try to add new items every couple of weeks, so you will constantly see something new on the menu,” Chan says of the eatery that is capable of hosting up to 300 people, and encourages customers to celebrate birthdays and special events in either the main dining room or one of the private dining areas.
