We all know I always eat like there’s no tomorrow! Yes, I have no discipline. Well, guess what, folks? The battle of the bulge has crept up on me — my clothes aren’t fitting! So therefore, I must reactivate my gym membership and cut down on my portion sizes. And while you may tempt me with onolicious cuisine, I am being smart with my decisions. So, while I may crave with all my might the greasiest pizzas or cartons full of ice cream, I must go with my gut and pick the healthier — albeit delicious — options. This week, it’s all about hummus. For those of you who don’t know, hummus is a Middle Eastern and Arabic dip or spread usually made from cooked, mashed chickpeas blended with tahini, olive oil, lemon juice, salt and garlic. Served with crackers, pita bread or veggies, hummus makes for a simple, low-fat meal that will leave your taste buds happy. Therefore, if you’re a health nut or not, it doesn’t matter, come along with me and let’s get “thinspired” by hummus at the following Ono, You Know establishments!

Kissaten was founded in December 2010 by distant cousins Neysa Taba, Jon Ishimi and Sean Ishizaki. All three now serve as senior partners of the establishment, which centers around comfort food with a gourmet twist, featuring
Japanese, French and Italian culinary influences. “A Mediterranean favorite would have to be our Roasted Red Pepper Hummus Platter ($7),” Taba says. A great choice for those who are health conscious, this dish is found on the salad portion of the menu and features fresh pita bread and homemade red pepper hummus. “The hummus is zesty and tangy; comprised of garbanzo beans, garlic, roasted red bell peppers, lemon juice, chickpeas and olive oil,” Taba explains, adding that sliced cucumbers, olives, red onions and feta cheese also adorn the plate and pair well with the hummus. Recently, hummus has been growing in popularity, and it’s perfect to eat on your own as a meal in itself or share with a group of friends as an appetizer. No matter how you choose to polish off this dish, there will be no regrets. Located at Safeway Center on Kapahulu Avenue, this award-winning establishment opened its doors in September 2008, and is a carnivore’s idea of absolute perfection. at Dean’s he Windward town of Kaneohe is known for its popular Chinese restaurants as well as its many places to grab a plate lunch. But we all know that the typical plate lunch consists of meat, rice, mac or potato salad and maybe a green salad, which leaves much to be desired for those who choose not to eat meat or fish. And even if they have an offering that appears vegetarian, it often is prepared with oyster sauce or chicken broth. But you can just cruise past the rest and make a stop at Adon Plaza, where Dean’s Drive Inn is cooking up a variety of vegetarian specialties. “We have a whole line of vegetarian items here,” says chef and owner Dean Mishima. “It’s all vegetarian — burgers, grillers — no fish sauce, no shrimp, no chicken base or stock.” That’s because Mishima and his family are Seventh-day Adventists, who keep a vegetarian diet. “Church members come for lunch,” he says, “so we have to have vegetarian food for them.” But you don’t have to join the church to enjoy Dean’s Drive Inn’s healthy fare with flair. or many would-be diners, the thought of venturing into Waikiki for appetizers or a full menu of carefully prepared dishes conjures up images of traffic difficulties and parking nightmares. I’m not sure this was ever the truth because it surely isn’t now. he people of Pearl City have spoken, and the masterminds behind the increasingly popular Blue Hawaii Sushi Bar and Restaurant continue to listen.

Emerson Ribao, Blue Hawaii Sushi’s co-owner along with Walden and Jasmin Butay, helped craft what the “face” of the restaurant would look like since the restaurant opened in May 2011, and also designed the menu, from sushi bar selections to a wide range of other menu items. Ribao brings a host of experience to Blue Hawaii Sushi after serving as general manager for 26 years at Kobe Steak House and Sushi Bar, and owning a restaurant in Japan. In the heart of the house, executive chef Albert Geronimo and sushi chef Raymond Dizor bring to life Ribao’s culinary concept of Pacific Rim cuisine with Japanese flair. “I crafted the menu as something that I thought would be good for the community in this area,” says Ribao of the eatery, which is situated in Pearl City Gateway shopping center. “It was safe to say that I was welcomed by the community and the surrounding neighborhood. They often say that ‘we need a restaurant like this in Pearl City, something unique.’ We have traditional Japanese items, but also feature continental items such as steak and
shrimp, and some touches of Italian as well.” Dynamite ($8.95) is an explosive starter that features mushrooms and zucchini served in a casserole with a layer of scallops and shrimp, and is baked to perfection until golden brown. The dish also features the signature creamy Dynamite sauce, which includes mayonnaise, tobiko, shoyu and lemon. For those looking for a healthy meal or vegetarian option, Blue Hawaii Salad ($7.95) offers fresh spring greens, raw corn and potato chips mixed with a balsamic vinaigrette dressing. Ribao notes that the dish serves as his best-selling salad, and that the raw corn provides a unique touch, as the kernels absorb the dressing and burst with flavor. Chicken Katsu Curry ($11.95) puts a zesty spin on the local favorite, as Blue Hawaii Sushi adds a Thai curry sauce that provides a sweet kick to the tender, breaded chicken. Ribao mentions that customers can look forward to a host of new menu items, including a sushi roll that incorporates spicy tuna and shrimp tempura, and a tangy teriyaki sauce, that are scheduled to be revealed “in time for the holidays.” He says that input from customers plays a big role in determining and shaping the menu. “Given the chance, I’ll go around to the tables and ask what they would like to see on the menu,” Ribao says.

RumFire Things are heating up at one of Sheraton Waikiki’s most-coveted restaurants, RumFire. Executive chef Brett Villarmia describes the restaurant’s exceptional fare as “social comfort food,” which goes hand-in-hand with the picturesque setting overlooking Diamond Head crater. Locals and tourists alike frequent the establishment to grab a quick bite to eat or to spend an entire afternoon taking in the tempting flavors of RumFire’s Yukon French Fries, Sticky Chicken Wings and Market Fresh Fish Tacos, to name a few. While everything on the menu is divine, this time I opted for the healthy alternative, Crisps and Dip. Available on RumFire’s lunch menu. Crisps and Dip features garlic and kalamata olive crispy flatbread paired with Villarmia’s own edamame hummus. I was excited to sample this new take on hummus, and boy, oh boy, was I pleased.
“Edamame hummus is my local-style version of the traditional garbanzo bean hummus. It features fresh edamame, cumin, garlic, lemon juice and olive oil,” Villarmia says. Although it seems like a no-brainer, I would have never thought of substituting garbanzo beans for edamame, which makes Villarmia a true genius. “I grew up eating a lot of edamame as a kid, so I thought it would be a nice to incorporate it into the hummus for everyone to enjoy,” he adds. Crisps and Dip is a very light and refreshing lunch option, and fortunately won’t give you that kanak attack if you have to get back to work. ince 1984, Royal Garden has allowed locals and tourists alike to escape to a world of traditional Hong Kongstyle Cantonese food. Upon entering the pristine, spacious and ornate interior of the restaurant, patrons are often surprised to learn that it has been situated within Ala Moana Hotel for 28 years. It’s as simple as good eats. “I want to tell you about one of our specialties,” says owner Calvin Wong, when describing Live Maine Lobster Royal Garden Style (seasonal pricing), one of the most popular dishes. “It’s really special compared to how other Chinese restaurants prepare it. We call it Royal Garden style because our way of cooking it is with minced garlic, shallots, butter and a very rich chicken broth.” Such a velvety garlic sauce pairs beautifully with the highquality lobster. Another dish you truly won’t see anywhere else is Baked Conch Shell ($6.95), overflowing with a savory
mixture of scallop, shrimp and pork. What makes this opulent platter so unique is its beautiful curry sauce accented with Parmesan cheese for a surprisingly delicious flavor. “It’s one of our signature dishes,” adds manager Ian Tam. When it comes to starters, Deep Fried Stuffed Tofu ($11.95) is great to pass around the table. “It’s simple, but really elegant,” explains Wong. “The tofu is soft on the inside, but we
make the outside crispy.” These delicate bites are filled with baby shrimp and served with a spicy green onion sauce. And for an absolute classic, try Shrimp with Honey Glazed Walnuts ($20.95). Puffy shrimp are doused in a creamy sauce and garnished with honey-glazed walnuts bejeweled with sesame seeds. Retreating to an oasis of Chinese cuisine has never been so easy.

to choose from, embark on a gastronomical adventure that will make you forget what city you’re in. According to marketing director Miki Lee, customers should expect “to be taken away on a journey right here in the heart of Honolulu.� Baked Brie ($16) is a favorite among
the selection of appetizer indulgences offered. Pecans and dried cranberries are added to the Brie before it is wrapped in a puff pastry that is baked until golden brown. With Manoa honey drizzled over the top, it also includes grapes and endless baskets of French bread. For wine lovers, take solace and look forward to knowing that your wine palate is in good hands. “We have also won an award of excellence for our wine program from Wine Spectator for all six years,� says Lee. ocated in Manoa Marketplace for the last 20-plus years, Paesano has served generations of loyal customers. “Paesano has been here so long that we have seen kids grow up and get married, and then they bring the kids in,” says Nila Rattanasamay, who co-owns the restaurant with husband Billy. The couple had long been involved in the restaurant industry — Nila had grown up in the business, and Billy previously worked at Michel’s. Ten years ago, they finally got their chance to set out on their own when the former owner sold Paesano’s Manoa location. Then, a few years ago, the Rattanasamays opened a second location in Waimalu.

aesano Ristorante Italiano has been a go-to hot spot for Italian fare, and although more than 20 years have passed since it opened its doors, the restaurant’s popularity has not wavered. Paesano serves up traditional Italian fare, while adding a local flair by utilizing local ingredients.
The menu includes an impressive array of pasta, steak and fish dishes. Filled with more than 70 items, Paesano’s menu is sure to have something for everybody. Plus, as Nila Rattanasamay, who co-owns the restaurant with husband Billy, explains everything is made inhouse. For starters, Paesano Salad ($7.90) is a tasty way to whet your appetite. The dish features shrimp, grape tomatoes, black olives and fontina cheese — all over mixed Nalo greens and romaine lettuce, and bathed in a house-made creamy Italian vinaigrette. Paesano regularly features a nightly special — the most popular of which may be added to the menu. “The chef is constantly updating himself on Italian cuisine, trying to find out what is the next thing, the newest thing,” Nila says. “We will keep trying to add more and more dishes.”

Another popular entrée is Sicilian Chicken ($21.90 for a regular portion), which features a chicken thigh (with the skin sautéed to crispy perfection) and is complemented with oven-roasted potatoes, mushrooms, caramelized onions and tri-colored bell peppers. To top it all off, Tiramisu ($6) is a must-eat and is a customer favorite. “It is made in-house daily, and it sells pretty fast,” Nila says. Always looking out for its customers, Paesano makes sure that it dishes out only the highest

quality ingredients. “We use a lot of local ingredients,” Nila explains. These include Hamakua mushrooms, Hamakua tomatoes and Kahuku prawns. xtreme appetites can do some serious damage when it comes to Makino Chaya’s all-you-can-eat buffet. With more than 100 delicious items to indulge in at this Aiea restaurant, it’s hard to imagine anything better than this. President Jo Makino founded the establishment in 2005 and says patrons come in droves for the seafood, and Japanese and local favorites, among others. And while the buffet may be the main draw at the eatery, that’s not to dismiss its other attractive options. Take Makino Chaya’s bentos, for example. “We prepare between 150 and 200 bentos per day, and they always sell out,” Makino says. If not, we begin serving the bentos at 11 a.m. each day and it’s first-come, firstserve until we run out.” Makino Chaya’s bentos are made fresh daily and are popular among everyone, especially large organizations or those who want to grab a quick lunch or an after-school snack for the keiki. “You can’t beat our prices; it’s a great deal,” Makino says.

ince opening its doors 35 years ago, Hy’s Steak House in Waikiki has become an award-winning fine dining landmark known for its USDA Prime-grade steaks broiled over native Hawaiian kiawe wood, and enjoyed in an intimate setting of what feels like an old English mansion. The restaurant recently changed ownership, and also welcomed executive chef Erwin Manzano to the team. With these changes, general manager and vice president Bob Panter says they are working on some upgrades, adding to the menu, and ultimately taking Hy’s to new heights. “We’re working on a new decor and small private room in our upper dining room (now called the Green Room),” he explains. “I think it’s going to be great. Until recently, when Hy’s was sold (to two brothers from Kobe, Japan), Hy’s has had only two owners in 35 years. This stability tends to add a certain consistency to many things, including the food.”

Chefs also cook all USDA Prime steaks over kiawe wood using a display broiler, and guests in certain rooms even have a view of the broiler room. Among the customer favorites is Porterhouse T-Bone Steak — King of T-Bones (34 ounces, $79.95), which is served with brown or white rice, your choice of potatoes (baked potato, garlic mashed potatoes, french fried potatoes, or pan-fried O’Brien potatoes cut in cubes and sauteed with diced onion and diced bell pepper), and vegetables du jour. But, after enjoying Hawaii and “falling in love” with the weather, ocean and surroundings, the budding entrepreneur decided to apply his business acumen and opened Tropical Tribe — a brightly colored food truck located on Kapiolani Boulevard (across from Papa John’s and 24 Hour Fitness) that serves high quality acai bowls, shakes and tea. “I’ve been everywhere, and have eaten acai bowls. In Brazil they are extremely popular,” Alves de Moraes says. “This berry is so popular in terms of protein and vitamins, it can’t be beat. There is more protein in the acai berries than in tuna fish.” After coming to Oahu, the owner of Tropical Tribe scoured the island looking for a quality acai bowl, and realized that recipes he was finding used a low-grade acai, far inferior to what he was used to enjoying in Brazil. Alves de Morales explains that ancient tribes in the Amazon discovered the acai and guarana berries, and relied on their potent properties for energy and strength throughout everyday life. What I decided to do was import the high quality acai directly from Brazil because I wanted people to
