ow that it’s officially football season, many are rooting for their favorite teams, and while I admit that I’m lying low on the football frenzy this year, I am amped up in regard to the food! Big City Diner Bring on the local favorites and American classics at Big City Diner. One of my top picks when I’m craving comfort food, BCD opened its first location in 1998 in Kaimuki. Over the years, the restaurant also popped up in Kailua, Ward and Waipio, in addition to its most recent Pearlridge establishment in 2007. “Big City Diner originally focused on burgers, but we wanted to add a healthy aspect to the menu that offered much more than that. Salads, sandwiches and entrees soon became available as well,”

ax’s of Manila is celebrating 67 years of serving pure, authentic Filipino cuisine, and is a restaurant steeped in history. Nowadays, you’ll find this acclaimed restaurant chain across the globe, with more than 100 branches throughout the Philippines, two in Dubai, one in Abu Dhabi, two in Canada and eight branches in the U.S. Here at home, we’re fortunate to have two Max’s locations to call our own. The first restaurant opened in Waipahu in 2006 followed by the Dillingham branch in 2010. Journey back in time to the year 1945: Max’s of Manila’s continued success traces back to its founder Maximo Gimenez, a Stanford-educated teacher, who after World War II, befriended American occupation troops stationed at Quezon City, Philippines. The soldiers would oftentimes enjoy meals at Gimenez’s home and soon insisted that they
pay for the delicious fare. “Max’s food became so popular and loved by the American soldiers that they encouraged him to open a restaurant. That’s when Max’s Restaurant came to be,” says Maly San Luis, general manager of the Dillingham and Waipahu locations. “Max’s started off as a chicken cafe that served chicken, steak and drinks, but then, of course, Filipino staples began to emerge as well.” Gimenez’s wife, Mercedes, sister-in-law Felipa and niece Ruby helped to manage the cafe, and it was Ruby who concocted a special recipe for chicken, which stands as the best-selling dish among patrons to this day. “Our chicken is unique because we don’t batter our chicken, it’s not breaded — it’s 100 percent pure chicken,” San Luis explains. “What you get is meat that is tender and moist on the inside, and a skin that is so crispy and delicious.” Priced at $7.95 for a half chicken and $13.50 for a whole chicken, San Luis says Max’s Fried Chicken has been a household name with Filipino families for decades. In fact, Max’s of Manila also is affec-

tionately known as “the house that fried chicken built.” Currently, the restaurant is gearing up for its Anniversary Chicken Blow Out set for Oct. 16. “From 11 a.m. to 9 p.m. Max’s Whole Fried Chicken will be offered at 50 percent off for dine-in and takeout customers at both locations,” San Luis says. And to extend the anniversary festivities, Max’s of Manila will continue to give thanks to its loyal customers by distributing $3 off coupons Oct. 16 as well. These coupons are valid Monday through Friday throughout the month at your next dine-in visit to the restaurant with a minimum food purchase of $30. This coupon cannot be combined with other discounts or promotions. “This is our way of giving back to our customers and saying thank you for their continued support throughout the years,” San Luis says with a smile. “We cater to a lot of Filipinos from the Mainland or the Philippines in search of Filipino food, and we also cater to many Hawaii-based Filipinos who miss the food in the Philippines.” According to San Luis, however, Max’s has been reaching out to a a diverse array of other ethnic groups as well. “Our restaurant is a good place for first-timers to get an introduction to Filipino food. We’re one of the few Filipino restaurants that cook-to-order and we feature more Central Filipinostyle cuisine, which you would find in Metro Manila,” she adds. In addition to Max’s Fried Chicken, signature items off the menu include Lumpiang Shanghai ($7.25), Pancit Canton ($8.50), Kare-Kare ($12.50/$18.95) and Crispy Pata ($12.95/$16.95). Lumpiang Shanghai is a popular Filipino-style egg roll
appetizer that features a tasty mix of ground pork and vegetables deep-fried and wrapped in a pastry wrapper, served with a sweet and sour sauce. A staple in Filipino dining is Pancit Canton, fresh egg noodle stir-fried and served with vegetables, pork, chicken and shrimp, and topped with green onions. Kare-Kare and Crispy Pata are considered house specialties, and for good reason. Kare-Kare presents diners with tender stewed oxtail and beef shank simmered in a rich peanut sauce. This native delicacy also is served with shrimp paste for additional zest. And meat lovers can’t seem to get enough of Crispy Pata, pork knuckles simmered in a special marinade and deep-fried to perfection. “Our food is home-cooked Filipino food and people really appreciate that. Nowadays, people are short on time, so it can be difficult to cook a meal from scratch, so that’s what we provide,” San Luis states. And with the holiday season fast approaching, Max’s of Manila is ready to take on the many holiday parties with its function rooms, which are ideal for private parties and inhouse catering. Both branches have recently expanded their seating to accommodate larger parties. Dillingham can host parties of up to 170 individuals, and Waipahu can seat parties of up to 200. “We do catering by the pan as well,” San Luis adds. “Of course, for those who choose not to dine-in, you can take your meal to go at any time.” So, whether you choose to dine-in or takeout, it’s always a Filipino fiesta at Max’s of Manila, where everything is “sarap (delicious) to the bone!”

Asian Mix caters to on-the-go lifestyles
O
ne of my favorite Chinese restaurants growing up was Panda Cuisine near Ala Moana, so when I found out former owner Daniel Leung, along with its longtime chef opened up a new eatery called Asian Mix located in the same complex as the new Safeway on Beretania Street, I was excited to try it out. “People are getting busier and busier, especially families, so we wanted to offer good quality, takeout food,” says Leung. “Also, the location is good and there’s plenty of parking. It’s

restaurant-quality food, but with the convenience of a fast-food, takeout restaurant.” Asian Mix opened in May, and according to Leung, about 75 percent of its customers order takeout. However, there are tables and chairs available outside for those who prefer to eat at the establishment. The menu is extensive and features many traditional Chinese dishes and local favorites. Among the popular dishes are Ma Po Tofu with Ground Pork ($7.95) made with fresh soft tofu, minced ground pork and a brown Ma Po Tofu sauce that is mildly spicy; House Fried Rice ($9.50), which has shrimp, Virginia Ham, eggs and green

There’s more to M than meets the eye

reating a new standard in entertainment and dining, M Nightclub goes beyond music and mingling. “We’d like people to understand that M is more than just a nightclub. You can come here for dinners. We’re more of an eatery during the week,” says general manager Dan Punch, who worked here when it was formerly Ocean Club. As for those pupu and dinner options, let’s just say there is a multitude to choose from. One of the newest favorites is M’s Ribeye Steak and Mashed Potatoes ($28). A hearty portion of cooked-to-order quality beef is dressed with a flavorful sweet sauce mixed Ribeye Steak and Mashed Potatoes with sweet sake. The ribChris Fleck photo eye is then laid over a bed of sautéed and caramelized onions, and topped with sautéed mushrooms. Dancing to the side of the tender steak is M’s homemade mashed potatoes and fresh steamed vegetables. As for lighter fare, M has a host of pupu options including its Blue Crab Cakes ($12) and Seared Togarashi Ahi Tuna Tacos (small portion $5, large portion $10). shrimp or dynamite sauce. I didn’t — but then again, I’m a wimp with the heat tolerance of a newborn. I like Fried Rice, and not just because it’s big enough for three and only costs $5. The mixture of oyster sauce and other secret ingredients makes for a moist and rich rice dish that is just a bit different — and being different makes a difference. Finally, for the sharing and caring type, there is the Emperor Appetizer ($23.95). The combo sushi platter is a chef’s choice of nigiri and tuna roll. While the pieces change, the mainstays are magaru, hamachi, shiromi and sake. Regardless of the combinations, the ahi, salmon, snapper, clam and shrimp are delicious and the rice is just right.

s kaiten sushi, which refers to the popular Japanese offerings that are served on a revolving conveyor belt, keeps gaining popularity worldwide, Genki Sushi continues to spread the Japanese sushi culture across the globe. With 14 locations in Hawaii, as well as eateries in Washington State, California, Japan and Hong Kong, Genki Sushi serves up flavorful sushi creations in a fun, family-friendly atmosphere. “Genki has always remained affordable and family-oriented,” says director of purchasing David Moon. “We try to keep our sushi within the budgets of our customers, and they know that they get a pretty good deal when they come here.” Diners choose from different colored plates as they go by on the conveyor belt, and the colors correspond to set prices. In addition to ordering choices from the menu such as rice bowls topped with flavorful toppings, sushi

In a fun spin on a local plate lunch favorite, Kalbi Bowl ($2.80) offers up fresh short rib meat topped with green onions that are all placed upon a bed of rice. Another customer favorite is Deep Fried Spicy Roll ($2.80), which contains spicy tuna and a zesty sauce in a traditional roll that is coated in tempura batter and fried until a crispy, golden-brown crust ensues. “We try to get suggestions for menu items from our customers, and a lot of the new items actually come from the ideas of our workers,” says Moon when asked about the inspiration behind some of the creative sushi selections. “We’re actually trying to trim our menu down a bit to give the customers what they want and go back to basics. We evolve, and try our best to keep the customers happy.” For those who prefer vegetables, Fried Eggplant ($2.20) features a tower of flavor as the crispy eggplant is topped with red and white onions and drizzled with unagi sauce. Kabocha Tempura ($2.20) boasts sweet, crispy squash and is served with tempura sauce to bring all the flavors together. “The concept was always affordable family dining, and we continue striving to serve that local niche as the local taste is different than Japan (sushi) taste,”
Moon explains. “With the cross-cultural flavors, it works well here. For example, with the spicy tuna, that is very rare in Japan — our menu features a lot of variety, while Japanese sushi menus offer mostly traditional sushi.” Genki Sushi offers a wide variety of nigiri, gunkan and roll sushi dishes, from the simple favorites to extravagant creations. Korean restaurant. For nearly a year, the Keeaumoku Street hot spot has excited the local dining scene with its hip vibe. “This style is a really popular cafe style in Korea,” says owner and chef Justin Chun, who in addition to giving his eatery a contemporary

The owner’s take on “new-generation Korean food” involves a captivating blend of classic dishes mixed with international flavors — everything from Chinese and Japanese twists to Italian and Mexican nuances. Some of the best examples of these modern eats are featured on Red House’s New Menu and Lunch Combo Special. Try tasty creations such as Black Pasta ($12.99) with a creamy black bean sauce or Kimchi Katsu Don ($9.99), which presents pork cutlet with kimchi and egg on rice. he lunch hours are winding down at Kit n Kitchen on a recent weekday, and the co-owners, husband-and-wife team Kit and May Yiu, are going about their usual afternoon business. Kit roams the dining room, making sure that his customers have everything they need, while May is in the kitchen, cooking up some of the restaurant’s Euro-Asian cuisine. Kit n Kitchen’s menu features a range of options — everything from seafood pastas to Japanese-style rib eye steaks, as well as savory breakfast and brunch items. Although the restaurant’s menu is already extensive, it seems that May just can’t stop getting inspired to cook up more Euro-Asian dishes. “I love food — a lot,” May says. She also loves creating new menu items, and draws inspiration from foods she grew up with, as well as from her travels. Recently, Kit n Kitchen unveiled a number of new dishes,

including the Szechuan Spicy Shrimp Won Ton (six pieces for $8.95). “I went to Hong Kong for three months, and I stayed in my friend’s shop. I told him, ‘I want to learn won ton,’” May says about the origins of the dish. “This is a very traditional Chinese plate, and Hong Kong’s is the best because they have big shrimp inside. I learned this won ton and I brought it back.” May was learning from the best: Her friend recently won a won ton contest in Hong Kong.

it n Kitchen has been cooking up Euro-Asian delights for the past 11 years. Co-owners Kit and May Yiu are a true culinary power couple. The two have combined their individual influences to create the perfect marriage of European and Asian flavors, and styles. “He grew up in an Japanese-Italian restaurant, and I grew up in Montreal, Canada,” May says. “Basically, we just combined all of the food that we love together and
put it all in the menu.” The result has been an expansive, impressive menu that features anything you might be craving. “In the beginning, it was a smaller menu,” May says. “But then I travelled a lot. Every time I travel I bring back some new dishes.” And it seems that their creative combinations provide diners with the best of both worlds. “A lot of times, European food is a little bit more heavy, but we just try to keep the taste, but use some light ingredients,” May says. For instance, she explains, Kit n Kitchen offers lighter approaches to pasta dishes. “It’s more like a Japanese influence in the pasta dishes,” she says, noting that this is something that Kit brought to the restaurant. May's contributions include Osso Bucco Milanese ($16.95), which is one of her favorites. In addition to using lighter ingredients, the restaurant also strives to offer a number of healthier items, including a wide selection of tasty salads. And to go along with those salads, Kit n Kitchen makes most of its salad dressings in-house, as well as a number of its sauces.

Prosciutto Salad Pizza ($12.95), which features mixed greens and a poached egg on top of a thin pizza, also joins the list. Loyal customers — of which there are many — can still enjoy their longtime favorite dishes like Volcano Stone Grilled ($20.95), which features tender cuts of steak that are grilled to perfection right at the table on a hot plate. The chimichurri dipping sauce is a perfect complement to the dish, which also features enoki mushrooms. Another tasty favorite that isn’t going anywhere is Seared Scallop Spinach Risotto ($14.95), which features seared-to-perfection scallops on a bed of fresh spinach

and risotto that is bathed in a creamy white sauce. Another great thing about Kit n Kitchen is its reasonable prices. One of its most cost-effective offerings for customers is the 99 cents menu: With the purchase of two entrees, customers can get a third dish for just 99 cents. “These are appetizer dishes that normally cost about $7, but now we have just made it 99 cents,” May explains. A Revolutionary Dining Experience at
TOP WAIKIKI OF

I
n the hour it takes for Top of Waikiki to make a complete revolution, one can enjoy a wide range of delectable dishes that pair perfectly with the breathtaking panoramic views from atop the rotating restaurant and bar. Executive chef John Neff brings more than 15 years of experience to the table as his eclectic menu features a blend of “world fusion” tastes that feature Asian influences and a host of locally grown produce. “We try to include, as much as possible, local produce and ingredients,” Neff says. “It’s good for the economy, it’s good for Hawaii and I think it’s something the customers appreciate. When they see Kamuela tomatoes and Maui onions, they know that we’re trying to use local ingredients, and they’re in Hawaii for a reason.” Day Boat Scallops ($17) offer diners an appetizing pair of rich and buttery scallops on a bed of Ewa sweet corn pudding and topped with braised pancetta and a tangy Kamuela tomato and Maui onion relish. “We’re using high quality scallops that are fresh, not frozen,” explains Neff. “Scallops and bacon go really well together, so we use the pancetta as our play on that idea. With the relish, we’re using fresh, local ingredients again to top off the dish.” Neff features Kula butter lettuce in the Crab Louie
Salad ($15), which also includes blue crab meat mixed with a spicy sriracha aioli that provides some “spice and creaminess,” grape tomatoes, avocado, asparagus and hard-boiled quail eggs. The refreshing salad is topped with a lemon herb vinaigrette that ties all the flavors together. “I worked for a chef in San Francisco, and that’s a traditional dish from that area,” explains Neff when asked about the inspiration for the salad. “I changed the ingredients around to put a local take on what I’ve seen. Coming back to Hawaii where I grew up and incorporating what I’ve seen while working on the Mainland, that’s kind of my outlook on the menu and my style of cooking.” Neff’s San Francisco influences also shine through in Cioppino with Linguine ($38), a hodgepodge of flavorful seafood enveloped in a roasted pepper and tomato broth, and served with garlic crostini. The dish, which got its inspiration from fishermen who would return home and make seafood stew composed of their fresh catches, features seared day boat scallops, shrimp, fresh island fish, calamari, mussels and crab.
Blue Moon Braised Pork Osso Buco ($33) features a hearty pork shank that is braised for two hours in Blue Moon beer until the moist and tender meat absorbs all the flavors. Neff utilizes the citrus accents in the beer, as he explains that pork and citrus flavors pair very well together, and serves the succulent meat with smoked bacon, lentils, apple confit, roasted baby carrots and an orange gremolata and pork jus sauce. “I try and offer a different variety of menu items so customers can look forward to a variety of choices,” says Neff. “That’s my style. I don’t want to stick to just Italian or French food. I want to take everything I’ve seen and learned and bring it all together. I include a lot of Asian influences on the menu, so both local diners and visitors from all walks of life can find something they want and are familiar with.”
