appy Sunday, Ono readers! This week I have the best assignment ever … as in ever! Those who know me well, know my fascination with peanut butter. Put this ooey, gooey, chunky, creamy stuff on anything and I’m all over it. So now, to be able to devote myself to a plethora of peanut butter masterpieces is a dream come true from a foodie standpoint. My, oh my, am I in heaven or what? Yet, it’s time to bypass the traditional peanut butter and jelly, and peanut butter and banana — I’ve decided to kick it up a notch and revel in peanut butter glory that is extraordinary, and will leave you wanting more. OK, enough of the gushing, let’s get to it and dive right in to all things peanut butter at the following Ono, You Know establishments. Truly, if you adore peanut butter just as much as I do, you’re in luck. Welcome to a peanut butter paradise!
RumFire Decadence awaits at Sheraton Waikiki’s RumFire as executive chef Brett Villarmia turns the tables and puts his own spin on “social comfort food,” which the restaurant is renowned. And, in my opinion, peanut butter just screams comfort food. It’s a staple in my diet, and when a peanut butter craving comes on, it needs to be satisfied pronto! Well, much to my delight, on my most recent visit to RumFire, chef Brett tickled my taste buds with

Elvis Fudge. Priced at $8, Villarmia describes this luscious dessert as RumFire’s take on the classic Elvis combination, which usually incorporates peanut butter and bananas. “What we do here at RumFire is we roast island bananas and pair them with chocolate ganache and roasted peanut butter. Our Elvis Fudge has a crust, which resembles a peanut butter crunch, and it’s served with homemade guava jam,” he
explains. Of course, the majority of the dessert features utterly delicious roasted peanut butter and Valrhona chocolate, thus equating to ooey, gooey goodness! I took one bite, and I seriously just died and went to heaven. Of course, it was that good! Yet, to really understand this level of prestigious taste, you have to experience it for yourself. Trust me, you’ll see peanut butter in a whole new light. Patrons are presented with three pieces of Elvis Fudge, and Villarmia does his best to keep up with the lunch and dinner demand as there’s no sweeter way to end your meal. “This dessert is really popular,” he says. “When it comes to our peanut butter, we take the time to roast our own peanuts and then grind them, so you get that pop of peanut. The texture is similar to a Nestle’s Crunch Bar, being that it’s both crunchy and creamy.” Wow, RumFire has done it again. t’s the holidays again, and Mr. C aka Santa Claus isn’t the only one who’s up to his ears in work this time of year. Sure, he’s making his list and checking it twice, and his elves are wrapping an endless amount of gifts for eager boys and girls. However, right here at home, thousands of miles from the North Pole, Zippy’s Restaurants is giving Santa a run for his money. Like a welloiled engine, this iconic local eatery is gearing up for the many feasts that come along with this joyous season.

pound barrel) and Chicken Nishime ($12.95 2-pound Zip Meal, $38.95 7-pound barrel) — are definite New Year must-haves. Konbu Maki features pork, carrot and gobo perfectly wrapped in konbu and kanpyo. Namasu is a tasty array of Japanese pickled vegetables (cucumber, carrots and daikon), and, of course, New Year’s isn’t complete without the classic dish Chicken Nishime, a Japanese stew, which includes chicken, konyaku, carrots, sataimo (taro balls), renken (lotus root), gobo, bamboo shoots and shiitake mushrooms. Payment is required to place an order, and the last day to pre-order Zippy’s New Year’s Specials is Dec. 26 (on Oahu). Order online by clicking on the New Year’s Specials link at zippys.com, but keep in mind, online ordering is available for Oahu pickups only. Pick-up dates are scheduled for Dec. 31 and Jan. 1 at Zippy’s Kapolei, Vineyard, Makiki, Waiau, Ala Moana, Pearlridge, Kaneohe, Kahala, Koko Marina, Ewa and Mililani locations. “These locations will be open at 10 a.m. on New Year’s Day with the exception of Ala Moana and Pearlridge, which will open at 8 a.m. All other Zippy’s locations will be closed on New Year’s Day,” Mamiya-Kalahiki explains. Looking ahead to 2013, Zippy’s Restaurants is excited to announce the opening of a brand new location in Hilo next summer. Bring The Willows home this New Year

eady or not, 2012 is coming to an end. It can be a stressful time of year, but there are many wonderful things about the holiday season, such as family, food, friends and more food. But if you’re like me, cooking (along with the prepping and cleaning) is the last thing you want to do. This year, The Willows in Moiliili is offering a special takeout menu on New Year’s Day. “It’s the first time we’re doing this,” explains Garret Kamei, administrative director, noting that the restaurant is open on New Year’s Day for those who prefer to dine out. “I think a lot of local families want to spend time at home resting after New Year’s Eve. We’re hoping to allow customers to bring The Willows into their home instead of getting out of the house to come here.” There are nearly 20 items available on the special New Year’s Day takeout menu, consisting of the most popular items from The Willows buffet, plus Karai Chicken Wings from The Willows’ sister restaurant Karai Crab. Each dish is ordered by
half-pans with a serving size to feed 10 to 12 people. Karai Chicken Wings ($46) are made with a cajun butter seasoning that has a medium level of spicyness, or you can ask for it to be mild or spicy hot. “A lot of customers say it’s the best chicken wings they’ve ever had,” notes Kamei. Also popular are Chicken Karaage ($38), which has at least 40 pieces of deep-fried tender chicken nuggets with black sesame seeds tossed in a teriyaki

Tranquil treats at Pagoda Restaurant By Jaimie Kim
F
or many locals, Pagoda Restaurant is practically an institution. Its peaceful surroundings of lush greenery, a waterfall and colorful koi make it irresistible. With an updated interior and exterior, and a new menu, there’s really no excuse not to go back. “It’s a completely different ambience when you walk in,” says executive chef Jason Takemura. “But it still has the Pagoda feel; we still do a lot of comfort food.” One menu item that will have your taste buds dancing in anticipation: Baked Apple Pancakes ($10.50). Caramelized Granny Smith apples are coated with sugar and cinnamon, folded into pancake batter and baked in the oven, making it fluffy. It is served with a breakfast version of creme anglaise sauce that is made without eggs to make it lighter and perfect for early
morning hours. If you’re heading in for lunch, thank the inspiration behind Mr. Park’s Oxtail Ramen ($12). The story goes, that Mr. Park went to Pagoda to dine one day in an extremely hungry state and asked that his oxtail soup be served with ramen noodles, and a new menu item was born. And according to Takemura, “It’s actually huge, it’s a very big portion.” The ramen noodles are fresh from local company, Sun Noodle. Also included in the soup are vegetables, and a couple of shrimp and shiitake mushroom dumplings. If you’re really hungry, Takemura says that

Sticking with the tasty garden offerings, Roasted Fig Salad ($16) is served with gorgonzola dolce, baby arugula, chopped walnuts and drizzled with a balsamic vinaigrette. The figs are naturally sweet and the gorgonzola provides a creamy texture and a bit of saltiness that balances nicely with the slightly bitter greens. Who or what inspires you as a chef/manager/owner? Shiro “Mistah” Saimin. He had humble beginnings, overcame insurmountable odds, but never gave up. “Mistah” had a great work ethic and an even better personality. His words of wisdom and business philosophies are things that I admire. What’s your most popular dish? One of our most popular dishes is Kalua Pork/Pig. It started off as a Thursday/Friday Special, but we kept running out of it after the first day. Recently we made it a permanent menu option. We feature it in our plate lunches, saimin combinations and catering. Making kalua pork takes the most time and effort to prepare, but customers can tell that we put a lot of TLC in cooking it right. Is there a dish that you create that’s not on your menu, but available upon request? Kalgarete, a Spanish/Filipino stew with my own twist. It features beef, chicken and pork that’s marinated overnight in a garlic, vinegar, shoyu and spice

Lung Fung also features Salt and Pepper Lobster ($18), and also is offering an ongoing special: Customers may purchase a whole lobster prepared to their liking for just $12.95 with the purchase of a regular menu item. “These seafood dishes are perfect for holiday gatherings,” Ma says, adding that the eatery can accommodate approximately 150 patrons in its roomy dining area.
Customers continue to enjoy a host of traditional favorites, including the iconic Peking Duck ($19 for a half order, $38 for a whole duck). The savory duck is served with 12 buns and a flavorful dipping sauce. Ma also suggests that customers try Stir-Fry String Beans with Ground Pork ($10.95), which includes a hearty portion of the fresh, crispy string beans surrounded by tender pieces of pork and a spicy chili pepper sauce.

Those craving noodles need to look no further than Bat Jan Fried Noodle ($10.95). The dish includes a bed of fresh chow mein noodles, which can be substituted with cake noodles for an additional $1. In addition to being topped with fresh carrots, mushrooms and snap peas, the noodles are smothered with large morsels of seafood, chicken and pork that bring a wide range of flavors and textures to the

“This one is a favorite, especially for kids,� Sasade says. “We use it a lot for anniversaries, too. It’s like our romantic, sweet dessert. A lot of couples love it, and it goes really well after the nabe.� Many of the soups are very flavorful, and if you’ve had one of the saltier soups, Brownie Ala Mode is the ideal counterbalance of flavor to make sure your meal ends on a sweeter note. If you’re an adventurous eater, Warabi Mochi with Ice Cream ($4.95) is the way to go. “Warabi mochi is a special kind of mochi,� Sasade explains. “It’s like a gelantin mochi, so it’s really soft. Mochi tends to be
chewy, but this one melts in your mouth.� The green tea warabi mochi is served with vanilla ice cream and is topped off with kuromitsu, a maple syrup-like concoction, and the three flavors go well together. And Ichiriki has a special treat for Dining Out readers that’s not on the menu — Fuji Uji ($9.90). Named for the Mount Fujilike amount of dessert, Fuji Uji is the Ujikintoki on steroids. n 2007, Adega Portuguesa owner Trigo da Silva moved to Hawaii and by the next year he began to take notice of the Portuguese culture in the Islands. While he found a vibrant community of people with Portuguese heritage, he also noticed that many local Portuguese people didn’t know how to speak the native language. “I noticed that the Portuguese culture is dying,” he says. “The new generations are not very interested in keeping the culture alive. “The reason that I opened this place is to make our culture strong,” he says. “With the restaurant, I can share with everyone our food, and our culture.” Determined to reach these goals, da Silva saved up money for years, opening the restaurant about 10 months ago. “We brought our chef all the way from New York City, who also is Portuguese, to make authentic food,” da Silva says.

hen asked what some of the most popular dishes at his restaurant Adega Portuguesa are, owner Trigo da Silva has trouble picking just one. He says that customers really like all of the dishes at this Chinatown eatery, which serves up traditional, authentic Portuguese cuisine. Adega’s many tasty menu items include Caldo Verde ($5), a soup filled

with potatoes, onions, kale and sausage. “It’s a nice soup, and it’s different,” he says. “In Portugal, we call this the Portuguese National Soup.” For another taste of a traditional Portuguese dish, try Carne de Porco Adega ($18), a perfect combination of pork and clams with fried potatoes, cilantro and meat sauce. Another offering includes Vinho D’alhos ($19), which features a marinated pork loin, fried potatoes and mixed vegetables. This month, diners can take advantage a holiday special: Bacalhau Marinated with Champagne ($20), which is available Dec. 14-24 for both lunch and dinner. This dish features a flavorful codfish fillet with potatoes and vegetables. No coupons will be accepted for this special. The restaurant also has a little bakery up front that sells malasadas — and more pastries are on the way soon. Anyone who brings this article in to Adega will receive four free malasadas. The restaurant also hosts live music regularly, including every Sunday from 7 to 9:30 p.m. Call for reservations. This Friday (Dec. 14) from 9 p.m. to closing, there also will be live samba and funk music. Two tasting events also take place each month: Every first Saturday, there is Taste of Portugal, and every third Sunday, there is Taste of Brazil. Each tasting event features the culinary treats of a different guest chef, who prepares a variety of dishes. For each of these events, customers will have the opportunity to rate each dish they try. Customer votes will be taken into consideration when Adega makes its next menu revision. The next Taste of Brazil will be Dec. 16 from 5 to 7 p.m. This month’s guest chef will prepare food from an area called Baia in northern Brazil. The event costs $15. Coming up, Adega also is offering a new promotion for those who have Portuguese last names. For the month of January, those who have the last name Gomes or Silva will receive 30 percent off their bill. In February, the same deal applies to anybody with the last names Ferreira or Santos. oliday party planning is in full swing, and Sekiya’s Restaurant & Delicatessen in Kaimuki has all of your local Japanese favorites to woo your friends and family at your next potluck. This family-owned establishment made famous for its Marinated Fried Chicken and tempting bowls of saimin also serves up beef sukiyaki, beef teriyaki oxtail soup and more. Yet, it’s Sekiya’s okazuya that’s the life of the party. Open daily from 8 a.m. to 4:30 p.m., the okazuya features longtime kamaaina classics such as inari sushi, nori maki, musubi, fried noodles and chow fun noodles, among others. “Our customers like to order things from the okazuya to take to parties,” says owner Joy Morihara. “Everything is served a la carte, and you also can order trays of
food. When it comes to the trays, we charge by the pound.” According to Morihara, patrons go crazy for Sekiya’s Shoyu Hot Dog (55 cents each), Fried Chicken (starts at $1.50), Potato Mac Salad ($5 per pound) and, of course, Noodles ($1.95 per serving). “This time of year, our Nishime does very well, and Hash Tempura is always a year-round favorite,” she adds, noting that okazu items sell out rather quickly. “I recommend you come early to get what you’re looking for. There’s something here for everyone. “We’re open on Christmas Eve and closed Christmas Day,” Morihara states, adding that Sekiya’s dine-in, 88-seat restaurant is open from 8 a.m. to 10 p.m. Sunday through Thursday, and from 8 a.m. to 11 p.m. Fridays and Saturdays. And during these cooler months Sekiya’s signature saimin just hits the spot any time of day or night. “Home-cooked saimin is hard to
come by these days, and our saimin is prepared the old-fashioned way,” she says. Sekiya’s saimin presents a soup base made from scratch with dried shrimp base, konbu and chicken, a mound of saimin noodles, and char siu and green onions for garnish. And for those with a hearty appetite, feel free to add on a barbecue stick, or upgrade to a Saimin/Hamburger Combo. “We are very consistent here. The food hasn’t changed much, and our quality and high standards remain the same,” Morihara says.

JJ Bistro & French Pastry JJ Luangkhot, owner of JJ Bistro & French Pastry, always butters me up with his award-winning desserts, and this week was no exception. The peanut butter fanatic in me went absolutely crazy for Peanut Butter Opera Cake ($3.95 to go, $5.50 dine-in). Exquisite in every sense of the word, from presentation to taste, Peanut Butter Opera Cake is a true testament of love at first bite. Each slice of this three-layered cake presents you with layer upon layer of almond cake, chocolate ganache and peanut butter cream. “Peanut Butter Opera Cake has been on the menu for more than a decade and has been doing extremely well,” Luangkhot says. Well, that’s of no surprise really, being that the sinful peanut butter cream is made in-house. “The peanut butter cream is as creamy
as you can get,” he adds. “I roast the peanuts, grind them with peanut oil and mix everything with butter cream and add some salt for taste.” Traditional European opera cake is known for its almond cake and chocolate ganache base, and according to Luangkhot, mocha is the common go-to ingredient. “For our opera cake I decided to substitute peanut butter for mocha — just to be different.” Brilliant, JJ, absolutely brilliant. ew things excite Ali Carte as much as a fresh pie of pizza, yet as many locals can attest, there haven’t always been a lot of options in Hawaii for brick oven, artesian slices. For years it seemed as though our only choice 2 was to resort to a chain establishment. But with a burgeoning boom in foodie-culture here at home, we can all be thankful that a niche has been carved out for some serious pies. One restaurant in particular — Inferno’s Wood Fire Pizza — has a flame that burns brighter than the rest. What started as a hobby for owner Kyle Okumoto has grown into one of the most popular slices on the island. “I always made pizzas at home or for parties,” says Okumoto. “Then I got a brick oven. I was just going to do it at home, but everyone liked it, so we put it on a trailer.” You may remember the owner’s pizza wagon, which first operated out of a small parking lot in Kalihi a few years ago, right as the food-truck craze began to take off. Before long, the lines got
longer and longer, and Inferno’s pies became a staple at food truck gatherings such as Eat The Street. This growing success led Okumoto to open a permanent location at Ward Center this past summer.

chicken, olives and a spicy bite of jalapeno, all of which are perfectly rounded out with a bed of ranch dressing in lieu of pizza sauce. Ali Carte recommends the Pepperoni Bacon Onion pie ($14) as well, with its gorgeous pieces of pepperoni and bacon that not only crisp up beautifully in the oven, but taste explosive in combination with a blanket of melted fresh mozzarella. The restaurant boasts a number of vegetarian options such as a Veggie ($14.75) pie filled with mushrooms, olives, tomatoes
and onions. Okumoto notes that vegan diners may request that their selection be cheese-free. And pizza’s best friend — a nice, cold brewski — also can be found at the Ward Center venue. Hawaiian Islands Brewing Co. shares the commercial space and offers seven locally brewed beers to accompany your meal. In addition to a great lunch spot, Inferno’s is the perfect place to enjoy happy hour daily from 4 to 7 p.m. It’s as easy as pizza pie!

So what is it about Inferno’s that ignites any pizza lover’s passion? According to Okumoto, “It’s the oven. s proof of the saying that good things come in small packages, some of Hawaii’s award-winning Chinese cuisine can be found tucked away in downtown Honolulu at Little Village Noodle House.
From its home in the heart of Chinatown, Little Village has been honored with a multitude of awards recognizing its stellar Chinese cuisine. The restaurant has garnered numerous Hale Aina Gold Awards as Hawaii’s Best Chinese Restaurant, and also was rated by worldrenowned restaurant guide Zagat Survey — which ranks a wide variety of dining destinations based on food, décor, service and cost — for the third time. “We want customers to rediscover the restaurant because we offer a lot of value, quality ingredients, great service, all within a casual, friendly atmosphere,” says vice president David Chang. “We cook everything to order, so every item is fresh. We also get our fresh vegetables daily from the markets here in Chinatown.” To begin one’s Little Village experience, Chang recommends Pot Stickers ($4.95 for four pieces, $7.75 for eight pieces), which are available with chicken, pork or tofu fillings and are pan-fried or steamed to perfection. The tasty appetizer is a signature dish created by the restaurant’s founder and executive chef Kenneth Chan, who has blended the major styles of Chinese cooking — Northern, Hong Kong and Szechuan — for more than 30 years at an array of popular local eateries. “They have more than 33 years of history with running restaurants in Hawaii,” says Chang of Kenneth and Jennifer Chan. “They bring a lot to this restaurant, and 36 | DINING OUT | DECEMBER 9-15, 2012
when they first started, this pot sticker was one of the top sellers. To this day, it’s still amazing.” Chan uses his secret sweet and sour sauce in creating Orange Chicken ($9.95), a popular dish that includes real orange juice — not the artificial substitutes that some competitors use. Honey Walnut Shrimp ($16.50) serves as one of the restaurant’s iconic favorites. “We have so many customers say that this is a ‘must-have dish’ when you come

to eat at Little Village,” Chang says. The dish features large, juicy shrimp tossed in a garlic and green onion cream sauce that brings out the sweetness of the honeyglazed walnuts. Chang also recommends Steamed Basa Fillet ($14.50) as another popular seafood selection. The flaky white fish is infused with a ginger onion soy sauce, and topped with fresh pieces of ginger and onion that soak up all the flavors while adding to the dish’s sweet aroma. “We make the soy sauce fresh in house every day,” Chang explains. “It’s very fresh, and the taste is out of this world. Some of the other ingredients in the sauce, I can’t tell you because it’s a secret, but there are some spices as well.” Little Village also offers a wide selection of vegetarian options, and can accommodate requests to replace meat with tofu or extra vegetables for most of the additional menu offerings. Chang encourages diners to keep an eye out for new menu specials just in time for the holiday season, and a loyalty card program that will be introduced very soon as a way to reward his customers. “Kenneth is working on creating some specials in time for the New Year and Chinese New Year celebrations,” Chang says. “I’ll also be offering the loyalty cards during this period so we can cater to the returning customers.” Little Village gives diners a big reason to make the trip into downtown Honolulu, as lunch and dinner are served daily, and the restaurant’s friendly staff is ready to make the experience a memorable one.
