more than enough french fries to spare. “Every day is a different story; we know that we will always have fresh fish,” says Chef Geoffrey Arakawa of Uncle’s, which captured the 2010 Hale Aina Award for “Best Seafood” restaurant. “But the catch of the day or the best-selling item is always unknown.” In many ways, Uncle’s radiates the atmosphere of a coastal hangout more so than a formal seafood restaurant. And while the food speaks for itself, the décor of Uncle’s takes the dining experience to an entirely different level. Designed like a fishing museum, the restaurant sports an aqua fishing theme. Framed photos of old fishing boats line the walls with fish-painted pipes along the ceiling. Meanwhile, videos of owner Bruce Johnson’s fishing trips are played for patrons on large TV screens. Creating a casual restaurant that conjures up images of meaningful family relationships was important when it came to choosing a name for the establishment. “It’s a tribute to all the

uncles who have touched our lives,” explained Arakawa of the inspiration behind the restaurant’s name. Although there have been changes since its opening in June 2008, Uncles has remained a place to simply unwind and enjoy good food. “Yes, there are changes, and there will be more to come,” said floor manager Shelley Supnet. “But we try to keep things to what our customers are used to.” That includes the absence of any waiters, as customers are invited to walk in and find a seat. Once they’re ready, patrons head for the bar and place their order.

An Even Better Bali

Boasting a fresh decor, Bali Steak and Seafood gets ready to unveil a new, compact menu

H

ilton Hawaiian Village’s signature restaurant, Bali Steak and Seafood, has long been considered one of Hawaii’s finest dining establishments. But even with perennial AAA, Four-Diamond award status, an enviable beachside location, and dozens of accolades for both food and service, it came as something of a surprise earlier this year when the restaurant changed its image entirely. Gone are the aqua-marine décor, the French-inspired dining room style and the slightly stuffy menu. In its place, the steak and seafood restaurant now has a contemporary menu, an earthy, subtle color scheme and a quiet new confidence that allow patrons to enjoy a stunning ocean view while feasting on one of the dining room’s best accessories — local produce. I sat down with executive chef Jeffrey Vigilla to eat and chat about changing a restaurant culture.

JM: Bali Steak and Seafood Restaurant has a nice ring to it. Did you even think of changing the name?

JV: I tell you, the biggest decision of all was about the name. The tradition of Bali by the Sea, and the pride of the team that’s brought the dining room to the AAA, Four-Diamond status is huge. So we didn’t want to take anything away from that — including the name. So we’re staying with Bali. It isn’t about taking anything away, it’s more about giving customers what they want. The top restaurants in America right now are steak houses and seafood restaurants.

JM: So where do you start with recreating, because it’s really like opening a new restaurant, isn’t it?

JV: Yes, it really is. You have to start at the center of the plate. Do you want to be complicated or simple? Do you want guests to order quickly and easily, or not ? We started by doing specials and introducing them to the Bali menu. Then we put in a grilling station and changed the way we cooked the steaks. Now, we have these great cuts of fish — 8-9 ounces each — chicken, steaks, all coming off the grill.

I’ve been playing around with that. It’s going to be local style and very good. You can look for that on the menu sometime soon. JM: What I like about the restaurant is that you’re not trying to compete with traditional steak houses. You’re – See page 4

JM: What’s the reaction so far? JV: So refreshing and positive. Even long-term guests are enjoying the change. When the food is this good, people are going to enjoy the experience. JM: I like the menu size. It’s compact and uncomplicated. JV: Yes, but there’s a lot on it that’s not typical. We’re introducing a seafood tower with Kona abalone, ahi poke, shrimp, lobster tails, if people want them … not a traditional tower. We’ve created a pokestyle Kona abalone, and instead of a usual shrimp cocktail, we have a grilled, chilled shrimp. It’s so much more flavorful. And we have this incredible, loaded Yukon gold potato soup. It’s dressed with aged Cheddar cheese, homemade fresh bacon, scallions, sour cream. It’s a stunning, simple dish.

offering classic steaks, but there’s a Hawaii influence and an Asian influence to almost all the dishes.

JV: Exactly. There’s a sense of place here that’s important. We’re right on the beach, and the culture — the food culture — is highly motivating for us. We’re serving exactly the kind of food you’d expect from a fine-dining restaurant on the beach in Hawaii. So there’s fresh fish, island-grown ingredients and Asian influences in the seasonings, and the simple presentations.

JM: Can you give us some of your recommendations from the menu?

JV: The loaded baked potato soup, for sure. The Kona abalone poke; the cowboy bone-in rib-eye is always exceptional. The sides are interesting, too — local green beans sautéed with Portuguese sausage, jasmine rice, roasted Hamakua mushrooms, thin, crisp, truffled french fries. And with the fish, we’re talking to the fish market every day, so we have whatever is freshest and best including opah, ahi and onaga. Our seafood medley, which is done with a light coconut curry sauce, has mahimahi, scallops, lobster tails, shrimp.

JM: One of the things I liked when I came to dinner recently was the option to have a smaller steak. The 6-ounce filet, for example, costs $32.

The growing pains are over, the cooks are happy and the restaurant staff is excited and everything, right down to the plates and the silverware, has been pretty much taken care of. Now it’s time to enjoy the fruits of our labor, and welcome new guests to come and see what we’ve accomplished.

JV: We’re offering people a number of choices. Not just a smaller size if they want it, but also different cuts of meat — the culotte steak, for example. It’s the re-

ummertime, and the livin’ is easy. Time for consumption that is carefree, refreshing and flavorful. Of course, nothing fills the bill more quickly than a nourishing, satisfying smoothie. The blended, chilled beverage is made from fresh fruit or vegetables, has the consistency of thick malt and definitely requires a bambucha straw. It’s a great way to get your daily requirement of five fruits if you aren’t getting them from a farm or the corner produce stand. Once the quirky choice of bodybuilders and health-kick fanatics, smoothies have become trendy and sophisticated fare. We scouted smoothie counters in the downtown business district — where the beautiful, busy and buffed make their living — and ranked the top seven.

We felt instantly nourished with vitamins and beta carotene while sipping a Kale Smoothie of grape juice, banana, kale and honey. It was a meal in a cup, and while it looked a bit too greenish at first, my taste buds overruled my vision with delightful surprise. recipe Ingredients: • 4 strips of fresh ahi, about 10 inches long • 4 pieces 12-inch Thai rice paper • Cajun spice (to be sprinkled on the fish before cooking) • 16 mint leaves

• 1 ounce shredded carrots • 1 ounce shredded green mango • 1 ounce shredded beets • 4 ounces baby lettuce • radish sprouts and enoki mushrooms for garnish

Preparation: • Evenly sprinkle Cajun spice on fish. • In a hot, non-stick pan, quickly sear the fish for about 30 seconds, then put aside. • Soften each piece of Thai rice paper by spraying it with water or covering it with a damp cloth. (It will take about 30 seconds to soften) Lay it on a flat surface. • Divide all the ingredients to be wrapped into four portions. First, put the enoki mushroom, and radish sprouts on each end of the paper. Next, evenly layer the shredded carrots, shredded beets, shredded green mango, four pieces of mint leaves, one piece of fresh ahi and some baby lettuce. • Roll the rice paper from one end to the other; roll the rice paper over to form a tube with all the ingredients wrapped inside. • Repeat for remaining rice paper and then cut each roll into bite-sized pieces.

Ingredients: • 1/2 cup Aloha Shoyu (can be reduced, if preferred) • 1/2 cup cooking mirin (Japanese sweet rice wine) • 1 tablespoon sesame oil • 1 cup water Preparation: • Place all the ingredients except butter into a pot. Bring to a boil, then reduce heat and simmer for about 20-30 minutes. • Just before serving, strain out the vegetables. Slowly whip but-
