Sansei Style

A

t Sansei Seafood Restaurant And Sushi Bar, cutting edge sushi, food-friendly wines and signature dishes like Mango Crab Salad Rolls and Crab Ramen with Asian Truffle Broth keep customers coming back for more. But it’s the service as much as the sushi that has kept Sansei top among the city’s best-loved local restaurants. I caught up with managing partner Ivy Nagayama, in a rare, quiet moment, to chat about the Sansei style.

Jo McGarry: Is it really six years since you opened here in Waikiki?

Ivy Nagayama: (Laughs) Yes! And this past April we celebrated 10 years on Oahu. We opened our first location on this island at Restaurant Row in 2000.

JM: I remember when you moved here, everyone wondered if you’d be able to entice locals out to Waikiki. Seems like you’ve done that fairly successfully.

IN: Well, everybody knew Sansei from our years at Restaurant Row, so our goal was always to keep those kama‘aina customers. And they did follow us to Waikiki.

JM: I want you to talk a little about the “thank you” that you regularly run for your customers.

IN: On Sundays and Monday evenings we give 50 percent off the entire food check at Sansei, between 5 and 6 p.m. And on Fridays and Saturdays, we do the same deal – late night – during our karaoke evenings. JM: I’ve seen the lines outside the restaurant on Saturday nights and on Sunday evenings, with people waiting to take advantage of the “thank you” deal – it’s crazy! IN: (Laughs). It does get a little busy, but we always manage to take care of everyone, and the atmosphere is always great. Customers love it – and they love our weekend karaoke, too. JM: You know, I think that’s a huge part of your success – the fact that you know what local people like. Whether it’s food, entertainment, accessible wines or just creating a comfortable place to eat. IN: I think it’s just about giving people what they want. We had a great role model in Sandy Kodama, she was “Mom” to all of us. I spent every working day with her when she was alive, and she really did try to give everyone what they wanted. She taught us so much about understanding our guests. She was a mom to everyone. JM: Do you think that is her legacy? That the way she treated people is being

carried on through different generations? IN: Yes, yes. Within our company culture we always ask, “What would Mom do?” She tried to make everything work. She turned things around with everyone, and she taught us so much about how to make people happy when they come into a restaurant. JM: Of course, the food has to be good, too. IN: Fortunately we have a really talented group of chefs. They’re working right now with a lot of new, local produce and incorporating that into sushi rolls. And we’re sourcing excellent fresh fish from Japan that’s in season. JM: What are some of your favorites on the menu right now? IN: The white tuna sashimi is wonderful. The escolar is marinated in olive oil and Cajun spices, and then served with a delicate Korean-style sauce that’s familiar to local palates – but at the same time is really refined – and it’s topped with fresh, island-grown jalapenos. It is a fabulous dish. And right now, on Wednesday evenings, we’re offering steak and lobster complete meals at both of our restaurants – d.k’s Steak House and Sansei. For $39, there’s a lot of food!

JM: You’re known for your wine list, which always has so many “foodfriendly” wine finds.

IN: Yes, a great example right now is this beautiful sushi wine – Oroya – that is a blend of three Spanish grape varieties. It’s made by a Japanese sake master, a woman named Yoko Sata. We try to look for wines that go well with Asian foods. Nothing with too much oak, good acidity, good fruit. When you taste this wine, you see immediately that it’s made to go perfectly with sushi and seafood. It’s delicate, but it has enough citrus to clear your palate and let you enjoy the next bite of food. It’s really beautiful.

JM: And now there are foodfriendly cocktails too.

IN: We wanted to have a program, like our wine program, where we could offer

cocktails that paired well with our food. We worked with Christian Self – a mixologist who’s the spirit version of a master sommelier. So now we have drinks that are amazing and pair well with the flavors of our food. For example, we have a Mui Tai, which looks like a mai tai but is Asian-inspired and incorporates Bacardi aged rum, Bols orange curacao and a homemade lemon grass syrup topped off with a candied ginger lemon grass foam. JM: One of the things that I always tell people about the restaurant is that you’re able to do all this, and still create an atmosphere that is sophisticated, but welcoming to families. IN: Absolutely. That’s another thing we learned from “Mom.” Through her, we’ve found a way to treat the whole family well. We celebrate when children come into our restaurants. ost people know that Valentine’s Day is the busiest dining night of the year, but Father’s Day at a steak house runs a very close second. “It even beats out Mother’s Day in terms of how busy we are,” says Ruth’s Chris general manager at Restaurant Row, Don Assam. “We have more than 100 reservations on the books right now, so we really encourage people to make a reservation for Father’s Day before it’s too late.” But if there’s one thing that the staff at Ruth’s Chris can handle, it’s a busy evening of fine dining. The national restaurant chain celebrates 45 years in business this year, with Hawaii’s Ruth’s Chris celebrating 21 years. “We’re very blessed to have been in business all these years in Hawaii,” says Assam, who admits that adaptability has been key to the restaurant’s success. “You have to make changes when it’s necessary, and because it’s all about the guest, we listen to what our guests say, and we act upon that.” A special Father’s Day menu, priced at $64.95, includes soup or salad, a choice of bone- in rib-eye, surf and turf, New York strip or grilled lamb chops, with sides of creamed spinach, roasted garlic mashed potatoes or sautéed mushrooms, and dessert. And while Father’s Day is undoubtedly a great time to taste what’s new at one of the city’s oldest steak

houses, there’s a menu promotion running until the end of July that should appeal on any night to anyone who appreciates good food and wine. “We have a special anniversary menu to celebrate the 45 years of Ruth’s Chris,” says Assam. There’s also an exciting opportunity to win something very special. “Ruth’s Chris Steak House, which opened originally in Restaurant Row in 1999, partnered with Langtry Estate & Vineyards to create their special 20th anniversary wine,” says CEO Randy Schoch. “We’ve decided to give someone the opportunity to spend two nights at the Langtry Estate on the ultimate food and wine trip.” The prize, which includes round-trip air fare to San Francisco, two nights’ accommodation at the Langtry Estate and VIP dinner with a tour of the winery, will be awarded at the end of the promotion. “Anyone is welcome to enter,” says Don Assam. “There are entry forms at the restaurants.”

By Diana Nomura f you’re a fan of everything the island life has to offer, you’ll feel right at home at Honuz Restaurant and Lounge, where a friendly local staff and lifesized sea turtles painted on ocean-blue walls greet you as soon as you enter. According to Vali Vell, general manager of Honuz, the restaurant’s name is derived from owner Dee Pelekai’s love of “honu” — the Hawaiian word for green sea turtles. Pelekai's obsession with turtles, coupled with husband Lou Jr.’s love for cooking, are what led this couple to open their Kailua eatery last August. Popular entrees include the Pesto Pork Chop ($15.95), Honuz Freshly Roasted Homestyle Chicken ($15.95), a seasoned 12ounce chicken breast served with homemade veloute mushroom gravy; Homemade Meat Loaf ($13.95), which is covered in

homemade gravy; and Beer Battered Mahimahi Fish and Chips (market price). After establishing its topseller, Chef’s 5-Star Prime Rib Roast (ranging from $18.95 to $26.95), Honuz set its sights on developing a breakfast menu — the lure for many of its weekend patrons. Crab Cake Benedict (full order $15.95; half order $8.95); Honuz Mac Stack ($7.25), two fluffy pancakes with “ono” macadamia nut syrup; and Prime Rib Hash and Eggs ($9.95) are among the restaurant’s hottest breakfast items. On top of being reasonably priced, the Crab Cake Benedict is absolutely divine! Hosting a full-scale sports bar complete with wide-screen TVs, the Honuz staff — including many members, like head chef Brian Goinges, who could not stay out of the kitchen after their former employer, Brent’s Restaurant and Deli,

closed its Kailua doors at the end of last year — also casually “plays with” various recipes. The results are daily specials, such as the Deli Shred Salad, comprised of turkey, Italian salami, provolone, tomatoes, cucumbers, olives and red cabbage mixed with a homemade spicy lemon dressing. The specials are a fitting selection for those who simply desire a light meal to satisfy their hunger. For those who believe there’s always a second stomach for dessert, Honuz offers its Famous Bread Pudding ($4.95), drizzled in caramel sauce and garnished with fruit; Red Velvet Cake ($5.95); and Peanut Butter Cream Cheese Chocolate Chip Brownie ($5.95). recipe Ingredients List A • 2 oz. ground shrimp • 2 oz. chopped lobster meat • 2 oz. ground pork • 1 oz. chopped Fresh Shiitake mushroom • 1 oz. chopped green onion • 1/2 oz. chopped Chinese parsley

• 1 tablespoon toasted sesame seed • 2/3 tablespoon Aloha Shoyu • 1/2 tablespoon unsalted granulated garlic • pinch of ground pepper • 1 whole egg

List B • 1 package of wonton pi • vegetable oil enough to fry the wonton • 1/2 cup sweet and sour sauce

Preparation • In a bowl, combine all the ingredients in list A and use as a filling. • On a flat surface put 1/4 tablespoon of filling, fold the wonton skin in half-moon and brush the edge with water or egg wash, then connect the left and right sides together and seal with water or egg wash. • Preheat the oil to 325-350 degrees and fry the wonton until they turn golden brown, about two minutes or so. Remove from oil and serve with sweet and sour dipping sauce.

Preparation • In a pot, combine all ingredients together, bring it to a boil and simmer for a few minutes. Serve at room temperature.
