The Ky to healthy dining

W
hen Thomas Ky decided to open a Japanese-style restaurant on the site of a former Chinese restaurant in Kapolei, he changed the business pattern he’s employed for more than 20 years. Best known for his chain, Assaggio, where a valuedriven menu of AmericanItalian food has inspired a strong, loyal following, Ky chose to open Yellow Fin Sushi last March. What first impresses when you enter YFS is the décor. Contemporary, sleek and in a bold color scheme of yellow ochre, purple and burnt sienna that projects a confident air, the restaurant has an appealing ambience. I recently sat down with Ky to chat about his 20 years of restaurant experience, why the economy inspired his decision to open YFS, and the business philosophy that keeps him — and his staff — opening new restaurants, even during tough economic times.
JM: I have to ask you first about the color scheme and the design of the restaurant. It’s unrecognizable as its former Chinese restaurant space. Who did the design?
Thomas Ky: I did. I love color and design. I’ m a cook, so I enjoy putting different colors together. I like the flow of the restaurant. I enjoy design. I’ m glad you think the colors match well. It’s contemporary, a little Asian, I think …
JM: Tell me about your decision to change your Assaggio model — which is reasonably priced, American-Italian food — to this, a
contemporary Japanese restaurant. TK: Well, the Chinese restaurant that was here wasn’t doing well, but I didn’t want to close the restaurant and put all of the staff out on the street. So many people are losing jobs right now. I just didn’t want to do that. By creating a new restaurant, I can hopefully keep this staff working and, hopefully, the economy will turn around sometime soon. JM: You have a very unusual approach to your staff, as you encourage them all to own restaurants. TK: Yes, all of the Assaggios — there are six of them now — are partly owned by our employees. When they have been with us for five years, and when they know the business, we open a new restaurant and offer them a partnership. Of course, many times they don’t have any money, but we believe in them and we want them to do well. JM: OK, so why a Japanese restaurant this time around? TK: Well, I like Japanese food. It’s the only kind of food I eat when I go out. And I also believe that people are concerned more with their health and more with eating well nowadays. The menu here at Yellow Fin Sushi offers a lot of smaller portions if you want them, and fresh, healthy ingredients that are grown locally. The fish is fresh daily; – See page 4

JM: What are some of the things on the menu that you’d recommend to people coming for the first time to Yellow Fin Sushi?

TK: Yes, we change the oil every day, of course, so it always has that fresh, clean taste. The idea is that I want to make healthy food and I want to make food that people can afford. Yellow Fin Sushi is reasonable and it carries the Assaggio style of good value with hopefully a good atmosphere. JM: What’s the signature dish at Yellow Fin Sushi? TK: I think the cooks would tell you that the steak is very good. It’s a New York strip that’s really different. There are mushrooms on top with a creamy wasabi sauce, and it’s one of the dishes that our guests really like. After the first bite, you sense the wasabi. Wasabi and grilled steak — it’s a very good combination.

TK: Well, I wanted to keep the menu simple, to make it healthy and to keep it popular and contemporary. And to also make sure that for lunch there were a lot of quick options. There are a lot of combo plates at lunch, which are good. The butterfish is good. It’s marinated for four to five hours, and it’s tender and moist. People seem to really like it. And we have sushi rolls and the kind of Japanese dishes that people will recognize and expect from a casual restaurant of this kind: chawanmushi, teriyaki chicken, udon noodles.
JM: I really enjoyed the tempura. It’s light, clean, crisp and with good flavor.

By Chad Pata ushi Izakaya Gaku is one of those eateries everyone seems to want to experience. Patrons — which include many of the island’s top chefs — flock to its cozy confines on a nightly basis, basking in the warmth of the South King Street restaurant. Upon entering the establishment with the oversized front door, customers immediately notice the jazz notes and lights, which are muted — lending to the intimacy of the location’s six tables and 13-seat sushi bar.

The ambiance created by chef/owner Manabu Kikuchi is admirable, but it’s the savory delights that keep everyone coming back for more. Oysters ($18.50) are a hot ticket, served up in a ponzu sauce and topped with spicy radish. Their freshness is readily apparent and the radish gives just the right tinge to marry it to the citrus notes of the ponzu. For sushi, there are Kinmedai and Golden Eye Snapper ($8.50), as well as the highly sought-after
popular choice. The crab is steamed, then mixed with mayonnaise, tobiko and green onions before it’s finally baked in its shell. When served, the dish comes in three pieces and is utilitarian in presentation. Finally, there is the Spicy Negihamachi Tartar ($9.50), served in Gaku’s original spicy sauce and topped with a raw quail egg. Mix it yourself, ladle it onto the nori provided, and experience the flavor of the hamachi as it bursts through.
Seared Toro with garlic. The latter is prepared with a delicate touch and just a hint of garlic so that the tenderness of the fatty tuna isn’t overwhelmed. For those interested in a “salad” course, there is Rock Fish Carpaccio ($14.50). Served with fresh chopped red onion in a garlic ponzu sauce and topped with tobiko and the thinnest of slices of jalapeno to give it a bit of a kick, this dish is simple, yet delightful. The flavorful Baked King Crab ($12.50) is another

At Ola restaurant on the North Shore, owners Fred and Cheryl DeAngelo have created an amazing ambiance for fine dining. Feasting on restaurants’ Far-East flavors
Good Indian food, plate lunch-style
Jiva Sagaran grew up in Waianae, and it was always his desire to introduce Indian food to the local dining market. Taking a plate lunch-style approach to spiced meats and fragrant vegetables has worked well for the young entrepreneur, who opened a second location in Kailua last month, and who also has a busy lunch wagon in the Kaheka Street parking lot outside of Don Quijote. “The great thing about being on wheels is that you can move locations,” says Sagaran, who hopes his plans to broaden the reach of Indian food will encourage the growth of other quality Indian restaurants in Hawaii. “Some people

have no idea what this food is, so we present it in an atmosphere that’s affordable and let them try the flavors.” And if you still think of Indian food as spicy, then you’re missing out on some incredible dishes. “A lot of our dishes are curries,” says Sagaran, “but not the Japanese kind that many people are used to. Our curries have many different flavors, and they can be extremely mild with almost no spiciness at all.”
On the lunch wagon at Don Quijote are dozens of dishes that have proven to be best sellers at the original India Café at Kilohana Square. Among the most popular is a South Indian chicken curry served with jasmine rice and sides of vegetables, salad and a raita (yogurt and cucumber) dressing. “The chicken is cooked for hours until it falls off the bone,” says Sagaran. “We serve it with a choice of vegetables so people can see what we have.”
