andwiches are the standard for an easy and filling lunch option, but this week, Ono readers, I’ve upped my expectations and a good oldfashioned sandwich just won’t do the trick this time. It’s time to elevate the everyday sandwich with a little heat and the perfect combination of ingredients. The following restaurants have certainly paved the way for the beloved panini — a hot, pressed sandwich, which originated in Italy. This week, I’ve learned the many secrets to building a better sandwich — one that centers around exceptional bread, melted cheeses, tender morsels of meaty goodness, fresh and vibrant veggies, and that special sauce. Talk about paninis dressed to the nines. Stomachs will be grumbling, so let’s waste no time and begin to eat our way to panini heaven. Dig right in because paninis with pizazz are what it’s all about!
Kit n Kitchen A wave of Euro-Asian fusion sweeps you away at Kit n Kitchen on University Avenue, where owners and husband-and-wife duo Kit and May Yiu effortlessly combine the best of both culinary worlds. ade Dynasty Seafood Restaurant rings in the Year of the Snake as Chinese New Year officially kicks off today (Feb. 10). A new year means new possibilities, and it’s believed that the Year of the Snake centers around steady progress and attention to detail — focus and discipline are deemed necessary for goals to be achieved. Jade Dynasty Seafood Restaurant in Ala Moana Center’s Hookipa Terrace is looking forward to a year filled with prosperity and continued success. “Business has been good for us. We’ve been very lucky,” says general manager Gary Chan, who’s seen the restaurant expand its culinary repertoire throughout the years. “What sets us apart from other Chinese restaurants is our approach to Canton-style and Hong Kong-style cuisine. Our chefs are very creative and are on par with the latest dining trends, and our executive chef recently returned from Hong Kong with many new ideas to incorporate onto the menu,” he adds. Chinese New Year must-haves also include Steamed Whole Fish with Scallion and Soy Sauce, and New Year Good Luck Jai. “On New Year’s Day, you’re supposed to have Jai, or monk’s food,” Chan says. “It’s a vegetarian dish that is believed to cleanse you for the year and give you a fresh start. Jai is a traditional New Year’s food, which consists of black mushrooms, long rice, fungus, water chestnuts, snow peas, cabbage, ginkgo nuts and bean curd. “Our Steamed Whole Fish (uhu) with Scallion and Soy Sauce also is an important part of the Chinese New Year’s feast because the fish signifies an abundance of good fortune.” And new to the menu this year is Baby Pak Choy with Crab Meat and Carrot Sauce, which Chan describes as a unique dish featuring a bed of fresh pak choy doused with a special sauce of egg whites, crab meat and carrots. “We’re very excited about this new dish, and we must credit our chefs, their creativity is very impressive. Of course, for dessert we are serving Mochi Balls in a Sweet Ginger Broth.” Then, for a taste of royalty, indulge in Jade Dynasty’s second menu that is fit for a king. For $438, your table of 10 can feast on 10 exquisite dishes, such as Steamed Scallop in Half Shell. A recent addition to the menu, this appetizer is garnished with minced garlic, green onions and served with long rice. Then Imitation Shark’s Fin Soup with Crab Meat cleanses the palate just in time for Live Lobsters with

On the second day, you visit your extended family and then on the third day you’re not to visit anyone. They say if you do, you will get into a big argument or conflict that will last throughout the year. From there, you can go and visit more family and friends in the days to come,” he advises. Jade Dynasty Seafood Restaurant is the epitome of avant-garde Chinese cuisine. And while its Chinese New Year menus are in the limelight this month, the restaurant also boasts a special Valentine’s Day menu that’s
perfect for a night out with your special someone. Priced at $79.95, this dinner for two includes Steamed Scallop in Half Shell, Abalone Siu Mai, Golden Pumpkin and Seafood Soup, Live Lobsters with Garlic and Butter Sauce, Roasted Crispy Beef Tenderloin, Fried Rice — Young Chow Style, and Mango Pudding for the sweetest of endings. And while all this is enough to leave you full for days, a Jade Dynasty experience isn’t complete without setting your appetite on its unique dim sum options, available from 10:30 a.m. to 5 p.m. daily. “Baked Snow Mountain Char Siu Buns ($3.50) are always a hit with our patrons, and we’re constantly unveiling contemporary dim sum choices,” Chan states. For example, for a twist on your usual dim sum, sink your teeth into Jade Dynasty’s newest creations of Imperial Roll with Taro and Preserved Meat ($4.50), Abalone Siu Mai ($4.50), Fish and Crab Meat Dumplings ($4.50), and Fried Mochi with Lotus Paste ($3.50). “We're always thinking of new items to add to the menu,” Chan adds. “Dim sum is a big draw with locals and tourists, and customers are always excited to try new things. We have a lot of dim sum that you won’t find anywhere else. We use all-natural and local ingredients as much as possible, such as Kona abalone. “We’re excited for this new year — Year of the Snake,” he says. “Our customers are like family to us, so we hope to see many new and familiar faces this year. At 7 p.m. Feb. 10, we will scare away evil spirits with a lion dance as we usher in the new year. ’m not a morning person at all. So, if there’s ever a chance I can sleep in, maybe on the weekend or even a vacation, you can bet I’m doing just that. were introduced about a month ago, and according to Chen, it’s clear there is a demand for it, which means more breakfast foods will soon be added to the menu. “It was something we knew our guests wanted, but we didn’t really know what sort of appeal it would have,” he says. “But since we’ve been doing it, we’ve been running out. It’s so surprising how many people are drawn to it.” Of course, for those who aren’t craving a late breakfast, The Veranda’s regular lunch menu and famous afternoon tea with traditional scones, finger sandwiches and sweet pastries also can be enjoyed oceanside with a picturesque view of Waikiki Beach and the beautiful surroundings of the iconic Moana Surfrider. tep through the doors of Chinpei Ramen and indulge in a bowl of homestyle Japanese cooking. Plus, you won’t have to worry about any additives in your meal. “Our soup is natural; there is no MSG,� says owner Yoshi Hashigami. The restaurant has been in business at its South King Street location for five years. Prior to that, Hashigami’s father had a similar business in Japan that was open for 55 years. With 27 ramen options to choose from, the best place to start might be with one of Hashigami’s personal favorites: Shoyu-Ramen ($8.80, small; $9.60, medium; $10.80, large). However, Hashigami is quick to point out that miso-based ramen dishes are a favorite among Chinpei’s customers. After choosing the soup
base of the dish, diners get to choose between an egg noddle that is thicker and a thin noodle. “For miso-based ramen, thicker noodles are better; for shoyu-based ramen, skinny noodles are better,� shares Hashigami For an additional $1, diners also can choose from three

ood to Grill fires things up with its plethora of savory meats and seafood. Here, it’s all about fine-dining fare at plate lunch prices. As the restaurant’s most popular chicken dish, Misoyaki Chicken is a play off of your typical misoyaki salmon. Director of restaurant operations, Patrick Comer, describes this favorite chicken fare as deliciously unique. “We took the American staple of chicken and incorporated an Asian flair to it with our very own misoyaki sauce,” he says. Good to Grill plays up the local accents associated with the dish, and prides itself on the fact that no sugar, additives or preservatives are included in the mix.
Your choice of two sides is an extra bonus. Here you have a Mixed Garden Salad packed with vitamins, which features a blend of red leaf lettuce, green leaf lettuce, carrots, fresh tomatoes, and red and white cabbage topped with a balsamic dressing; and Potato Salad made with French red potatoes, a special mayonnaise blend, a bit of bacon, and salt and pepper.
The basis of the dish begins with tender chicken thighs (two for lunch, three for dinner). “Mixing misoyaki flavors with something such as chicken is not a traditional thing to do. There are many chicken dishes out there, but I haven’t seen anything like this,” Comer says. To say that the chicken is ever so juicy and flavorful would be an understatement.
Local entertainer and Ambassador of Aloha Danny Kaleikini is a No. 1 fan of this dish. “Danny is a regular here, and he loves our Misoyaki Chicken,” Comer exclaims. “Danny always alooks for something filling, but healthy, and this really fits the bill.”
A fusion of Asian and local ingredients creates the perfect misoyaki sauce composed of water, miso paste, locally grown green onion, garlic, a zest of locally grown lemon and mirin. Mirin is a sweet sake and is known to be Japan’s version of cooking oil. According to Comer, it’s mirin that gives the dish that zip and kicks it up a notch.
Chicken thighs are marinated for 24 hours in the famed misoyaki sauce, then kiawe-grilled and doused with more sauce, before it’s finally finished off in the oven and immaculately coated with a misoyaki glaze. With each bite, you’ll appreciate the smoky flavors from the kiawe grill, along with hints of sweet and tangy from the sauce.

Who or what inspires you as a chef/manager/owner? My biggest inspiration in life is my father. It’s hard to explain how important he is in my life in a few words. Since I was a kid I saw how much he sacrificed for our family, but I never saw him taking the easy way out. He is a man who worked hard and succeeded, but I never heard him bragging about it. His words are wise, in fact, he is the wisest person I’ve ever known, but more than just words, he is a man of action, who set a good example with his life. I always rely on him when I need good advice. He is an inspiration not only for me, but for the people who know him. If you could serve food to a celebrity, who would it be and why? What dish would you serve? I always watch the TV shows Kitchen Nightmares and Hotel Hell with Gordon Ramsay. I would love to serve my Acai Bowl to him.

What is your favorite dish on the menu? Why? The Tropical Tribe bowl. The acai berry pulp and guarana berry juice mixed together create a perfect combination of health and flavor. That amazing combination was created by the tropical tribes in the Amazon rain forest, where acai originates from. The mix is topped with granola, banana, strawberry, blueberries and honey. Is there a dish that you create that’s not on your menu, but available upon request? We have a bowl mixed with protein powder. This was created because my costumers who frequent 24-Hour Fitness wanted to have extra protein. It was on our menu for a while, but it was never a popular item, so I removed it. The special offering of velvety Miso Butterfish is broiled to tender perfection as well, while fried Soft-shell Crab boasts a satisfying crunch. “The Order Menu is all you can eat as well,” points out Makino, “so customers can eat as much King Crab, Miso Butterfish, and Soft-shell
Crab as they want.” When you add the value of the Order Menu’s selection to everything that’s already included in the dinner buffet — such as prime pieces of uni and ikura that you’ll be hard-pressed to find for a better price anywhere else — it’s impossible to resist the quality and quantity of the meal you’ll dive in to at Makino Chaya. agoda’s recent renovation includes more than new carpet, paint, tables, and most noticeably, a bar. The classic dining establishment also has committed itself to stuffing the menu with locally grown produce to go along with Hawaii-raised beef. In the food game, local is always better. A good example of this is the Big Island brisket executive chef and owner Jason Takemura uses to create the restaurant’s house-made pastrami. It's a 10-day process that involves brining, smoking and tons of flavor. But this is an appetizer column so lets get going. Pot Stickers ($7/$6 Happy Hour) are incredibly crispy pockets of shiitake mushrooms and shrimp with a miso-yuzu butter sauce. As good as the pot stickers are, it is the sauce that really differentiates it from its many, many rivals. The sauce is slightly sweet and creamy with a hint of teriyaki. It may sound weird, but the Spring Rolls ($7/$6 Happy Hour) have a distinctly Asian flavor. Made with kalua pork, shrimp, carrots, cabbage, mushrooms and cellophane noodles, the rolls are wonderfully fresh, crispy, and as stated 20 words ago, very Asian in flavor. That may sound funny, an Asian flavored spring roll, but many places put ingredients together without any identifiable origin of flavor. A big reason for Pagoda's success is the Mandarin Chili Sauce, which pro-

vides the tanginess a bit similar to a light takoyaki sauce. There is not a lot to say to say about the Sizzling 10-ounce New York Steak ($14/$12 Happy Hour), but that it’s a 10-ounce New York Steak! How can that not be good? Simply prepared and presented with sauteed mushrooms and onions, it’s a steaming, sizzling, smoking platter of “look at me” goodness. One final item up for consideration is Shrimp and Vegetable Tempura ($14/$12 Happy Hour). Three pieces of shrimp are joined with zucchini, eggplant, sweet potato and shiitake mushrooms to make an appetizer that is golden brown, tasty, sweet, earthy and crunchy — just as tempura should be. Starting March 4, Pagoda will begin an a la carte menu that will be offered daily. Its famed buffet will remain as a weekend attraction, but now diners have a better choice of menu options to enjoy within the sealed garden sanctuary that makes Pagoda a refuge from the hustle and bustle just outside the door.

un and Ryo Tsuchiya co-own Sakura Restaurant on Waialae Avenue, and the brothers continue to please Hawaii’s diners after initially gaining culinary experience by working for their father at his restaurant in Japan. The duo operated the eatery at Olomana Golf Course for several years, but moved to their current locale last September. In addition to a change of scenery, the restaurant’s new incarnation has included more traditional Japanese dishes on the menu. Ryo brings a wealth of experience to the kitchen, and in addition to traditional Japanese cuisine, the chef also incorporates French, Italian, American and local influences in the vast array of dishes. “We feature traditional Japanese food, but not only that, we also have a lot of pupu-style selections,” says Jun. “Before we came to Hawaii, we worked separately. Now, we’re able to continue working together at this new location.” Sakura serves up a host of popular lunch items, which include salads and burgers, local-style plate lunches and teishoku “complete meal” sets. Jun recommends Ahi Tataki Ponzu ($10.95), as the seared fish is accompanied by ponzu dipping sauce along with the Teishoku set, which includes rice, miso soup, tossed salad and cold tofu. Plate

lunch varieties include: Loco Moco ($9.95), Kalbi and Mochiko Chicken ($9.95), Pork or Chicken Katsu Curry ($9.50) and Kalua Pig Fried Rice ($9.50). Special items are available daily at Sakura, including Motsu Nikomi ($5.95), a miso-based soup with pork giblets, tofu, gobo root and green onions. “This soup is very popular with our Japanese customers,” says Jun of the traditional favorite. Dinner selections at Sakura can

I really love to eat,” says Lung Fung manager Eddie Ma, “and I eat all kinds of food.” A true foodie, Ma is the genius behind many of Lung Fung’s dishes. The restaurant frequently introduces new items to its menu, and Ma works closely with the restaurant’s chefs to bring his ideas to life. In creating new items, he incorporates his own preferences, as well as customer suggestions.

“The people (in Hawaii) have so many food choices,” he says, “and there are all kinds of people in Hawaii. So you have to learn something from the people here. Everybody’s tastes are different.” The menu, as a result, is large and varied. “Every day I learn something new from the customers,” Ma says. Ma, who is originally from China, has been managing the restaurant for more than a decade. “So far, so good,” he says with a smile.

oday marks the beginning of the Year of the Snake, and to make sure you get the new year started off right, you’d better stop into Lung Fung Chinese Restaurant for a serving of its Jai ($10.95). Jai is a dish that traditionally is shared with family and friends on Chinese New Year, and Lung Fung’s

tasty take on the dish features bean curd, tofu, mushrooms, cabbage and long rice. And if you don’t get your fill of Jai this new year, stop by Lung Fung anytime the dish is a permanent fixture on the menu. While Jai, with its many vegetables, is considered a good way to cleanse your body for the new year, Lung Fung also has some tasty meat dishes to treat yourself with after today. Chinese Sausage (Lap Cheong) with Shanghai Cabbage ($11.95), for example, is a popular dish. Also try Young Ginger with Pineapple Beef ($11.95), which is a combination of crispy ginger and tender beef, all bathed in a sweet and sour honey sauce that has a hint of spice.

“This one is so tasty,” restaurant manager Eddie Ma says. “After you try it, you will want to eat more.” If you haven’t visited Lung Fung in a while, there are some new items waiting for you. Ma says Lung Fung creates at least one or two new menu items every month. One recent creation is the Chef’s Chow Fun ($10.95) with thin rice noodles, tomato, spinach, asparagus and shrimp accented with garlic. “These are all healthy, high-quality vegetables mixed together,” Ma says. “We like to offer dishes that are healthy.” This concoction was inspired by an Italian pasta dish that Ma and his family enjoy. And the dish has passed the inspection of very important critics: Ma’s children. “I made this and then I brought it home for my kids, and they really liked it,” he says. “They ate it all!” In addition to healthy dishes such as this, Lung Fung also strives to bring a healthy quality to its other menu items. Ma says that everything is cooked fresh, and Lung Fung never adds MSG. “We are trying to provide a better quality food to the customers,” Ma says. sian Mix owner Daniel Leung’s goal is to make it easy: Easy for you to enjoy a restaurant-quality meal on the go or on the spot, and easy for his staff, who previously worked together in a more taxing restaurant setting. Does a more relaxed staff cook better food? “You can say that,” Leung says. Leung also strives to make the food you want to eat. Overheard at the tables outside the eatery, “You’re making that seem so tasty,” a son says to his mom eating ramen. Leung listens to his customers and in turn dishes up new menu items to please everyone. “We have been really successful with the Chinese food. And now we are trying to add the local Hawaiian barbecue flavors. Those are what the people are looking for every day,” Leung says. And, voila! — new menu items as of last week, by customer request. For some local flair, Leung has a combo perfect for you. Aptly falling on the Local Flavors Plate Lunch menu is the B.B.Q. Chicken & Shortribs ($9.95). “The meal comes with two nice pieces of chicken and two pieces of short ribs on a bed of shredded vegetables, a big scoop of mac salad, two scoops of steamed rice with the option for brown rice,” Leung says. Ginger, shoyu, a touch of sweetness plus the smoky char of the grill are the flavors you will taste and even smell. “Before you open

the box, you smell it,” Leung points out. On that note, beware if you have to pack it to go: The tempting aromas may influence an impromptu pit stop. And why does the closed Styrofoam box begged to be untucked
and tucked into? Because Leung knows that higher quality ingredients translate to better flavor. “We stick to the best products we can.” Even the mac salad is made with extra effort: Best Foods mayonnaise, tuna and fresh, chopped onion. Other new items include Char Siu Ramen ($8.50) and Garlic Shrimp plate lunch ($8.95 for a regular). The ramen is straight from Japan. Literally. All the ingredients, save the noodles, are imported from Japan. “We are not trying to make it locally; we are bringing over the best taste from Japan,” says Leung. The Garlic Shrimp includes 10 shrimps pan-sautéed with butter and garlic to order. They’re moist and peel easily. “There’s plenty of shrimp here. Look at it!” exclaims a first-time customer.

Fendu Boulangerie Did you wake up on the wrong side of the bed this morning? Then make the trip to Fendu Boulangerie in Manoa Marketplace and make your tummy happy with the freshest of breads, pastries, desserts and sandwiches. This neighborhood bak-
ery opened its doors in March 2009, and owner and chef Niel Koep makes mouths water with his handcrafted fare. Equal parts fat and flour always result in pure bliss. Enter Fendu’s Grilled Cheese Panini ($7.25), which will make you melt with its hearty taste and gourmet cheesy decadence. “We start with four different cheeses — Parmesan Reggiano, Vermont White Cheddar, fresh mozzarella and Gouda cheese on top of our French bread sandwich loaf,” says Koep of this premier panini. “We put generous amounts of cheese in this sandwich and grill it on our panini press until the cheese is thoroughly melted and the bread is toasted with a crunchy exterior.” If you’re crazy about cheese, you’ll absolutely adore this panini. The Parmesan and white Cheddar cheeses are prominent and have a sharp bite, and the mozzarella and Gouda cheeses melt with flavor and provide that signature consistency of a
grilled cheese sandwich that we’ve grown to know and love. When you’ve had your fill of cheese, bite into Fendu’s Chicken Cordon Bleu Panini ($8.50), which features a rustic bun layered with morsels of sauteed chicken tenderloins, Black Forest ham, Swiss and Gouda cheeses, caramelized sweet onions and fresh Hamakua Farm tomatoes. You’ll find a little of everything in this panini and it’s definitely one that'll you'll gravitate toward again and again. “A cold deli sandwich is good, but nothing beats a nice, warm sandwich like a panini,” Koep says. It is no surprise, then, when 678 Hawaii opened last November, the community embraced the Korean yakiniku restaurant with open arms, chopsticks in hand. With more than 250 locations in Korea, the successful barbecue franchise has expanded to the United States. In addition to Hawaii, customers also can enjoy the restaurant’s tasty Korean barbecue dishes in New York City, Los Angeles and Atlanta. “The Mainland locations have been very successful,” says Daniel Yi, head server at 678 Hawaii. “When those customers come to Oahu and try 678 Hawaii, they all say the quality is exactly the same or even better because the service here

The popular Mixed Combo (starting at $52.99) comes with Premium Seared Pork Belly, Prime Rib Eye and a choice between Boneless Short Rib or Outside Skirt. “The combination meals are popular because you can try a bit of everything and a stew is included,” says Yi. “We have traditional Korean stews, such as the soybean paste stew, kimchi stew and seafood soft tofu stew.” Additionally, the grills come with side compartments, which allow diners to simultaneously cook their vegetables and steamed egg. “You end up with a lot of food on the table,” says Yi. “Everyone enjoys the family style-oriented atmosphere of the meal.” The restaurant also offers many other innovative amenities. Rather than having to call out for a server, oftentimes having to shout because of the loud atmosphere, diners can simply press a button conveniently located at their table. When pressed, the button causes the assigned server’s watch to vibrate. Each server is assigned only four tables to ensure a prompt response time.
