utter me up with decadence, because this week I’m celebrating America’s love affair with none other than eggs Benedict. Because seriously, Ono readers, what’s not to love about the classic, killer combination of an English muffin, paired with a carnivore’s meaty delicacies (yes, I consider bacon to be a delicacy), and poached eggs dripping with hollandaise sauce? Now that’s pure and idealistic luxury for the palate, if I must say so myself! Eggs for breakfast, brunch, lunch and dinner? You betcha! I hope you’re hungry! You're coming along with me to the following Ono, You Know establishments for a quick fix of Benedicts! Whether we're talking eggs Benedicts made from a classic recipe or one of myriad variations, one thing’s for sure, you’ll experience this culinary creation in all its glory like you’ve never before. When it comes to this particular object of affection, it has to be done right! Decadence, decadence, decadence!
Il Lupino Trattoria & Wine Bar Flavors of Italy dance on the tip of your taste buds at Il Lupino Trattoria & Wine Bar at Royal Hawaiian Center in the heart of Waikiki. Dine amid an exquisite garden setting or take your dining experience indoors and be enthralled by pizzas, pastas and freshly carved cured meats along with Italian cheeses that have withstood the test of time. And since it’s always fun to splurge on 2 | DINING OUT | FEB. 17-23, 2013
eggs Benedict, why not start at 7 a.m. when the restaurant begins serving its morning fare? The early bird gets the Benedict here at Il Lupino. “We have a lot of tourists and locals who come through the restaurant every day,” says restaurant manager Heela Mottus. “People like to start their day early, which is why we’ve decided to open earlier.” Il Lupino’s Bacon & Eggs Benedict ($16) and Salmon Benedict ($18) guarantee a perfect start to your day, so be ready to dive into some fabulous fare. According to Mottus, both of the aforementioned breakfast options easily wow diners, yet she admits that Bacon & Eggs Benedict is a classic that remains at the top of the list. Maybe it’s the warm English crumpets beckoning diners with flaky and soft morsels. Or, how about the strips of pure crispy bacon paired with grilled tomatoes and poached eggs drizzled with hollandaise sauce, which is made from scratch and garnished with freshly ground chili powder? Whatever it is, this Benedict is a piece of perfection.

Eggs ‘n Things Waikiki Beach Eggspress managers Jonathan Redman and Lance Oshima
ithout question, breakfast is the meal that makes champions, which is why Eggs ‘n Things has a winning recipe for success. This hot spot for both kamaaina and tourists has gained a cult-like following since its inception in 1974, when founders Jan and Jerry Fukunaga opened the initial restaurant on Ena Road in Waikiki. Fast-forward almost 39 years later and the premise of the restaurant hasn’t changed a bit. The goal of Eggs ‘n Things remains the same: to incorporate the use of the freshest ingredients into all its dishes, keep prices reasonable and treat everyone like ohana. The fact that breakfast is served well into the evening is just an added perk for breakfast enthusiasts. Located throughout Waikiki, you’ll currently find three Eggs ‘n Things establishments available for your dining pleasure — one conveniently located on Saratoga Road, Waikiki Beach Eggspress on Kalakaua Avenue, and the most recent hatching on Piikoi Street next to Ala Moana Center. “The Fukunagas did an excellent job in creating a brand that is recognizable,” says Jonathan Redman, manager of Eggs ‘n Things Waikiki Beach Eggspress. “Our basic culture focuses on providing fresh food and fresh produce to our guests. We want to give our customers the best dining experience possible, from the moment they step foot through the doors to when they leave. Customer interaction is very important to us,” adds Eggspress manager Lance Oshima. More often than not there’s a line of hungry diners waiting to be seated at Eggs ‘n Things on any given day, but that doesn’t deter people from wanting to dine here — a good indication that what you’re about to experience is worth the wait. Servers sporting aloha wear and aprons (designed by Jan and her mother many years ago) greet customers with a smile and are ready to serve you what will hopefully be the best breakfast you’ve ever had, as the restaurant is renowned for its award-winning pancakes, omelets, crepes and more. Eggs ‘n Things boasts a menu that suits all palates, and according to Redman and Oshima, Strawberry Whip Cream with Nuts Pancakes ($12.75) holds the spot as the restaurant’s No. 1 best-seller. The intoxicating aroma of fresh pancake batter is enough to hook you in, yet once you bite into the tall stack of light and fluffy pancakes topped with a tower of fresh whipped cream, morsels of sweet strawberries and a sprinkle of nuts, you’ll be quick to call this your favorite. Macadamia Nut Pancakes ($10.25) also have created quite a buzz among the international breakfast circuit. “We have a special machine that whips the whipped cream fresh for us,” Oshima explains. “You can’t imagine how much whipped cream we go through on a daily

basis as well as pancake batter and eggs!” Speaking of eggs, the possibilities are endless. For a big old slice of Americana, dig into the Spinach, Bacon and Cheese Omelet ($11.95). Made with three fresh eggs, this omelet features fresh spinach, bacon (or turkey bacon) and your choice of cheese, whether it be Cheddar, mozzarella or pepper jack. The meal also is served with pancakes, rice or potatoes. And for a classic taste of Hawaii, a local delight is found in Eggs ‘n Things Hawaiian Loco Moco ($12.25). This dish of mouth-watering goodness offers up everything your typical loco moco would bring to the table and more. In addition to the traditional hamburger patty and egg of choice on a bed of rice, sauteed mushrooms, onions and diced Portuguese sausage are added to the mix and drowned in a beef-based gravy. “The Portuguese sausage adds a nice kick of flavor. There’s a little bit of spice and a little bit of sweetness,” Oshima says. Island-Style Fried Rice and Eggs ($11.45) also has been reeling in the masses, grabbing hold of appetites with its myriad of flavors. There’s ham, Portuguese sausage, bacon, kamaboko and an array of vegetables thrown into the fried rice, and it’s finished off with two eggs of your choice. Then, delve into dinner options with the famous Fresh Ahi Steak (market price), a generous serving of fresh tuna steak served to your liking, whether sauteed, Cajun-style or Furikake-Macadamia Nut-style, and accompanied by potatoes, pancakes or rice, and your choice of potato or tossed salad. “We support local as much as possible. Our eggs are locally sourced from Ka Lei Eggs,” Redman says. “And
here at Waikiki Beach Eggspress, we are environmentally conscious and use compostable packaging. Waikiki Beach Eggspress has the same quality food, but it’s proudly served with earth-friendly takeout-ware. “At our Eggspress location, you take a look at the menu and place your order at the top of the stairs with our host, pay at the cashier area and a pager will indicate when your order is ready. We gladly accommodate dine-in and takeout,” he adds, noting that Waikiki Beach Eggspress seats about 65 people comfortably. Make sure to take a bit of Eggs ‘n Things home with you. When you dine at the restaurant on Saratoga Road, visit the retail shop while you’re at it. The establishment’s very own buttermilk pancake mix, plus syrups, Waialua coffee, eco-bags, T-shirts and more are available for purchase. “There’s a long-lasting legacy here at Eggs ‘n Things, and we can only hope for further success and expansion,” Redman exclaims.

Say ‘Hello’ to good grinds BY JAIMIE KIM

ans of Pho Five-O can credit their feedback and encouragement as inspiration for Kim Nguyen to open Hi Sandwich & Drink. “I receive a lot of support from Five-O customers, so I want to say ‘thank you,’ shares owner Kim Nguyen who opened Hi Sandwich & Drink in December 2012. The restaurant has 20 listed sandwich items on its menu, but that doesn’t mean there aren’t more. Served with French bread or a croissant, sandwiches can have up to three different meats in them ($6 for one choice, $6.50 for two choices and $6.75 for three choices). One that Nguyen recom-
mends is the Pastrami Sandwich ($6), which she recently added to the menu because it is leaner and has approximately 95 percent less fat. Another is the Hi Special ($6.75), which includes three meats: steamed pork, pate and char siu pork. Both sandwiches, like all that are offered, are served with cucumber and parsley, and carrots and white onion that Nguyen seasons daily with sugar and vinegar. If you’re a fan of the added crunch the veggies provide, and want more, all you have to do is ask; additional veg-
etables are free of charge. As a dessert, try the Crazy Drink ($4.75), which is a combination of six items on the dessert menu. It features colored tapioca, mung bean, coconut milk, red bean, white bean, black bean, mixed fruit, color jellies, basil seed and jellies with coconut milk. In addition to that, Hi Sandwich & Drink also offers an extensive selection of smoothies and bubble tea drinks, all made with fresh fruit versus powders, which are commonly used elsewhere, and tea that Nguyen brews daily.

tlantis Seafood & Steak is your mecca for all things surf and turf. Conveniently located in what was once the former Waikiki No. 3 Theater, this eatery is frequented by locals and tourists alike, who live for the delicacies of juicy steaks, live crab or island-caught fish. Choose to dine outside on the lanai or indoors under a ship’s majestic frame. The locally sourced, globally inspired menu at Atlantis Seafood & Steak is sure to have something to please every palate, including Ocean Seafood Pasta, which creator and executive chef Almario Betiong says is the restaurant’s best-selling dinner entree. If you’re in the mood for something savory, Betiong infuses the culinary stylings of Pacific Rim and French cuisines into this alluring dish.
A homemade marinara cream sauce soaks into every crevice of this dish. In fact, secret ingredients of roasted garlic and a blend of ’Nalo Farms tomatoes, basil and balsamic vinegar accent the sauce perfectly. However, Betiong makes sure the sauce isn’t too overpowering as not to mask the authentic flavors of the seafood. “I also blended the marinara sauce with a cream base to expose a richer taste while also cutting down on the tartness of the tomato.”
The catch of the day is always highlighted as the fish of choice, be it snapper (as pictured), opah, onaga, monchong, etc. According to Betiong, the fish is locally caught and distributed daily by Tropic Fish Hawaii.
Nothing says “fresh” more than ’Nalo Farms’ locally grown white mushrooms, spinach and Roma tomatoes, which also add a bit of nutritional value and a burst of color.
A favorite on the menu since the restaurant’s humble beginnings, Betiong whipped up Ocean Seafood Pasta with the hope of impressing locals and visitors alike. “The texture of the seafood, the variety and the spices bring this dish to life. If you love pasta and seafood, you’ll love this dish,” he says.
ATLANTIS SEAFOOD & STEAK It’s all in the technique, and chef Betiong deserves praise for a top-notch al dente linguine.
11 a.m.-10 p.m. daily 2284 Kalakaua Ave. Suite 201 922-6868
This seafood sanctuary of sorts also features an array of the freshest Manila clams, black tiger shrimp and scallops. “Seafood lovers go crazy for this dish. There’s so much to it that it’s perfect for sharing,” Betiong says.

fter two years of serving satisfied customers, Kissaten Coffee Bar continues to provide its eclectic collection of must-have food and beverage selections anytime the heart (or stomach) desires. The 24-hour eatery draws its name from the Japanese term for “coffee shop,” and was brought to fruition by co-owners Neysa Tada, Jon Ishimi and Sean Ishizaki. While amid the spacious, relaxing atmosphere, customers can grab a freshly made coffee or tea concoction, or simply unwind after a long day — regardless of what time the clock reads. “The concept of being open 24 hours is to create an intrinsic feel that being here is automatic — you don’t have to think about it or wonder; we’re al-
ways open,” explains Ishizaki. “Plus, we all stay up late anyway, so why go home?” As Kissaten celebrates its second anniversary, the coffee shop is offering a special threecourse menu to thank its loyal customers. For the next two weeks, Kissaten presents an Anniversary Special Set-Course Menu, which features three delectable favorites. With the $20 complete meal, Cream of Spinach Soup ($6)

The set also includes an exclusive gift: a limited edition Kissaten coffee mug only available with the anniversary special while supplies last. “We basically offer café fare, but we want customers to come and enjoy it all the time,” says Ishizaki of the diverse menu, which incorporates tastes and influences from Japanese, Italian, French and Greek cooking, just to name a few. “As far as genres, it’s all across the board. We offer specials as well, so you can come here every day and not

SEKIYA’S RESTAURANT AND DELICATESSEN
ON
ekiya’s Restaurant and Delicatessen dates back to the 1930s when current owner Joy Morihara’s grandparents, the Sekiya’s, founded the restaurant’s first location on School Street. “They started it as just a small saimin stand,” Morihara says, “and they were just selling saimin, barbecue sticks and plate lunches.” The restaurant then moved to Kapahulu Avenue, where it began to expand its menu to include full meals and sukiyaki. In the 1950s, Sekiya’s relocated to its current location in Kaimuki. Throughout the years, Sekiya’s has been a family-run establishment. In addition to her grandparents, Morihara’s mother and aunties also have worked in the restaurant.
Oyako Donburi ($9.95) | Nathalie Walker photos
Morihara, who grew up on Maui, began working in the restaurant when she moved to Oahu for college. Sekiya’s has come a long way from its saimin-stand roots, and now features a full menu, but it hasn’t strayed too far from those days. The restaurant still features many of the same dishes and is even attracting many of the same families. “We have generations of people coming in,” Morihara says. “We have customers where their grandparents brought them in as children, or their parents did.”

W
ith a menu that has retained many of the same items since the 1930s, Sekiya’s Restaurant and Delicatessen is like a portal into the past. Serving what owner Joy Morihara calls a blend of local favorites and Japanese food, the restaurant has long been a go-to locale for plate lunches and saimin.
“A lot of people say it is the same since back in the old days,” Morihara says.

Now with an extensive menu that has grown throughout the years, Sekiya’s includes tasty items such as Pork Tofu ($11.95), which features pork, tofu and onions all in a homemade broth and served over rice. “That is kind of a traditional, everyday Japanese cooking that you might make for lunch or dinner at home,” Morihara says. “It is a light dish, but it is very full and tasty. “We make our broth from scratch

every day,” she adds. “It has shrimp and chicken and vegetables in it.” For a simple, yet filling dish, try Oyako Donburi ($9.95). “Aiyoko means ‘parent and child,’” Morihara explains. “So we have the chicken and egg over rice.” The dish also features mushrooms and long rice. Another popular dish is Sekiya’s flavorful take on local favorite Oxtail Soup ($14.95). The dish, which is flavored with ginger and Chinese parsley, is made from scratch and is served with rice. “We cook (the oxtail) for several hours until it is very tender,” she says. One of the restaurant’s reigning items when it comes to customer favorites is Marinated Fried Chicken ($13.95), which features boneless chicken that is marinated in a light teriyaki sauce and then deepfried. Since Sekiya’s initially began as a small saimin stand, saimin is one thing you better try on your next visit here. One tasty noodle dish is Karai Saimin ($8.95), topped with charsui and green onion. “We serve it with karai sauce, which is a spicy sauce. So if you like a little bit of heat in your meal, you will like it,” Morihara says.
anya Bistro’s got great buns. Panya started as a bakery before evolving into a bistro, so it’s no wonder that baking pastries, sandwich bread and burger buns is still one of its strengths. The burger buns are sprinkled with sesame seeds and made fresh daily. They are generously portioned, soft, chewy and never dry. You could call them voluptuous. It only makes sense that a great burger bun would be the vehicle for a great burger, such as the signature Panya Burger ($15.95). “This is one of our very popular items under our burger category,” says Kiana Huang, operations manager at Panya. Huang also explains that customers are surprised to see how well Panya’s owners, originally from Hong Kong, are able to succeed in making a real American burger. Panya Burger is the go-to if you are craving a hearty burger with all the fixings: grilled Angus beef patty, Portobello mushroom, American cheese, bacon, lettuce, tomato, onion, ketchup and mayo. Despite all the ingredients, the burger is straightforward. “We try to make it
simple and not too out of the box,” Huang explains. The Portobello, an entire cap that is the size of the patty, is grilled with salt and pepper. With regular mayo, regular ketchup and a slice from a ripe tomato, it’s simply a juicy, flavorful burger. But back to the bun, the foundation of the burger. It’s light fluffiness well complements the substantial ingredients, yet it has enough texture to soak up the burger’s juices and deliver the payload from plate to mouth. The sesame seeds add a tiny crunch and subtle flavor. After a cheeseburger, a cheesecake is the logical choice for dessert. While it may seem overindulgent, Huang assures, Japanese Cheesecake ($5.25) is lighter both in texture and in calories. “It’s not heavy at all, even if you have the entire piece,” says Huang. The Japanese recipe yields a cloudlike texture held aloft by sponge cake and a coconut crust. The slice is accompanied by crème anglaise, which can be drizzled over to add a touch of deca-
dent moisture. As with the burger, there is nothing overly fancy about the ingredients in the cheesecake. They are fresh, simple, with no preservatives, and adroitly combined in-house to produce an extraordinary product. At Panya, you can have your cheeseburger and cheesecake, and eat them too.

KOREAN HIBISCUS BBQ WHERE Kaimuki Shopping Center, Lower Level (next to Times Supermarket) 3221 Waialae Ave. A4 CALL 734-8232 HOURS Monday-Saturday, 10 a.m.-8:30 p.m.; Sunday, 10 a.m.-7 p.m.

he best news I’ve heard recently is that Korean Hibiscus BBQ is back in business. You see, my brothers and I grew up frequenting the homey takeout window in Aina Haina Shopping Center before it closed in 2010. With a wide range of authentic dishes, the best in Korean-style vegetables and kim chee as well as gorgeously succulent meats that are good enough to dream about, this mom-and-pop shop was my family’s go-to spot. After taking time off to travel and spend time with their grandchildren, husband-and-wife owners Raymond and Shirley Kodani re-emerged on the dining scene a little more than a year ago to re-open their eatery in Kaimuki Shopping Center next to Times Supermarket on the lower level. Though the new location is somewhat hidden from the main drag, returning regulars — including yours truly — are rediscovering the flavors they missed, while a whole new set of patrons are catching on. So on that most important of days, when I finally had the chance to eat what I’ve been longing for since 2010, an overwhelmingly vital question came to mind: What was I going to have? With so many classics to choose from, I wondered what would satisfy my craving? Would it taste as good as I remembered? Given that the weather has been chilly lately, I knew taking solace in an old favorite, one of 4

the eatery’s warm Soup Snacks, was the perfect way to reacquaint myself with Hibiscus. Each Soup Snack features a 32 ounce bowl of a wonderful homemade, slow-simmered beef bone and brisket broth that’s filled with egg, beef strips and green onion, and served with a side of kim chee. If you choose Mandoo Soup ($8), you’ll also receive 10 pieces of beef and vegetable mandoo in the soup, while Hot Kooksoo Soup ($8) presents a separate bowl of thin kooksoo noodles and bulgogi (marinated beef ribeye), bean sprouts, head cabbage and choi sum.
I settled on Mandoo Kooksoo Soup ($8), which gives you the best of both worlds with five pieces of mandoo and a separate container of kooksoo noodles. Since the establishment is primarily takeout, serving the noodles separately ensures they will not get soggy or absorb too much broth. With the utmost anticipation, I took my first sip. As soon as the comforting, flavorful and pure blend of ingredients hit my taste buds, I knew everything would be all right. The dish was even better than I remembered!
As Raymond and Shirley do with all their customers, they encouraged me to discover which flavors I like the best in the soup, so I can customize my experience every time I come in. As a result, I added some Korean hot sauce (available upon request) to spice my dish up to perfection. The owners also suggest sharing Soup Snacks as an accompaniment to any meal. With a happy belly and my love of Korean food fully reinstated, I hope you’ll soon experience the joy of Korean Hibiscus BBQ, too.

hen it comes to food, nothing seems to faze JJ Luangkhot, aka Chef JJ. That’s the beauty of loving what you do, and the highly creative and innovative chef epitomizes that sentiment. When asked what he’d like to showcase this week, the owner of JJ Bistro and French Pastry ponders a bit, throws out a couple of recommendations and then pauses. "I can make a Vegan Lasagna ($11.95)," he announces. It’s how his mind works. When you love to cook, any challenge becomes a pleasure — and that goes for modifying your menu to meet people’s dietary requirements and/or preferences.
"We can make most of our pastas vegetarian," he notes. All you have to do is ask. And to make things even easier, you don’t even have to do that. Some of the menu’s pasta offerings are listed with (Veggie) options, such as Southeast a la Maison (Veggie $7.95), a mouthwatering mix of flavors and textures with eggplant, bamboo shoots, red bell peppers and zucchini in a green curry sauce. According to Chef JJ, if you see something enticing on the menu but would like it altered to fit your taste — whether it’s an appetizer, entree, pizza, salad or sandwich — he’ll try his best to make it your way (within reason, of course).

Those vegetables include eggplant, zucchini and shiitake mushrooms, and the lasagna is finished with a tomato-based sauce. Who or what inspires you as a chef/manager/owner? I love to eat, I love to cook and love to see people happy. It’s great that I am able to accomplish all of this at work.
Country Style Crab
What is your favorite dish on the menu? Why? I like our Country Style Crab. We started making this dish with other seafood items for our staff meals. We decided to offer it for guests as well, and when we combined it with our live crab, it was a hit! What is your favorite ingredient to work with? Why? Shrimp! We carry several varieties and make so many dishes with shrimp. Wherever you’re from, everyone loves some kind of shrimp.
Is there a dish that you create that's not on your menu, but available upon request? Just about anything. We get a lot of people with special diets or food allergies and receive many questions about all kinds of foods. Dishes with a certain kind of oil, sesame seeds, gluten-free, vegan, you name it, we’ve probably already done it. What are your culinary goals? What do you hope to improve on? Keep making people happy!

ith a successful first year of business behind her, Yong Tom, owner and cook of the popular Korean restaurant 808 Yong’s BBQ in Waipahu, could have easily kept the same menu. However, when she overheard some diners inquiring if the restaurant offered breakfast, she began to think. “I found more and more customers looking for breakfast options,” says Tom. “So right away I wanted to start a breakfast menu, one with lots of options.” Such dedication to meeting the desires of its customers is just one characteristic out of many that makes 808 Yong’s BBQ a true culinary gem. The eatery now offers an all-day breakfast menu as well as localstyle dishes in addition to its beloved Korean menu. To help with the expanded menu, which

has almost tripled in size, Tom has hired chef Glenn Salvador, previously a chef at Joe’s Grill Express downtown. Although customers may order from the breakfast menu at any time, early risers will be happy to learn the restaurant now opens at 6 a.m. daily. Breakfast options include a variety of omelettes including the Denver Omelette ($5) as well as the Spinach Omelette ($5). Other morning meals include Pork Adobo and Eggs ($5) and Joe Moco ($5.75), a popular dish consisting of corned beef hash, two strips of bacon, two eggs and rice with gravy. “Even though our menu is bigger, our prices are still very reasonable,” says Tom. “At the same time, we make sure to still give big portions and spend enough time, so everything tastes homemade.”
Along with breakfast, 808 Yong’s BBQ patrons also will find more local-style dishes on the menu. Favorites include New York Steak with Onions and Mushrooms ($7.50) and New York Steak and Garlic Shrimp ($8.50). “Now people who enjoy localstyle food as well as Korean food can get both from one place,” says Tom. Diners also can choose from a plethora of island-style plate lunches ranging from Spicy Sweet Chili Katsu (starting at $5.75) and Teriyaki Beef (starting at $5.75). All plate lunches come with rice and a choice between macaroni salad or tossed salad. Additionally, regular plate lunches now come with a free drink.

The restaurant features a variety of daily specials, allowing customers to choose from a multitude of local staples such as Top Sirloin Steak and Eggs ($6.50) and Garlic Shrimp and Eggs ($6.50). Among the Korean dishes, the Mini Family Pack ($22.99) is one of the restaurant’s most popular options. The meal, which feeds approximately two or three people, includes three pieces of kalbi, barbecue chicken and barbecue beef; five pieces of fried mandoo, four pieces of meat jun, four vegetable sides and rice. Spinach “Once customers taste the Omelette ($5) pack they always come back for more,” says Tom. “It has a bit of everything and is a great deal.” Tom is friendly with every customer, starting conversa808 YONG’S BBQ tions with them as soon as they enter the door. “My WHERE goal is to provide the 94-216 Farrington Hwy, Waipahu best service and create a family-friendly enviCALL ronment.” 678-8058 In addition to the HOURS dine-in menu, 808 Open Monday–Saturday, Yong’s BBQ also offers 6 a.m.-8 p.m. takeout and catering opand Sunday, tions as well. 6 a.m.-3 p.m.
