O
n a mission to eat as healthy as possible without relinquishing flavor and taste, I’ve been scouting out guilt-free fare that is neither bland nor boring. Yes, there is a plethora of salad options to choose from, as well as fruit medleys, but what if I’m craving something with substance? Something meaty, something that will leave me satisfied for hours on end? Where do I turn? Well, the answer is found in the portobello mushroom. This versatile, large Crimini mushroom is tender and meaty in texture, with a delicate flavor profile to match. Whether sauteed, oven roasted or grilled, portobello mushrooms can be incorporated into a myriad of fare. For a chef, portobello mushrooms are a playground for culinary artistic stylings. hings are heating up at Windward Mall, thanks to GyuKaku Japanese BBQ, a relatively new hot spot to hit Kaneohe’s dining scene since it opened its doors for business almost two years ago. Diners can’t get enough of the thrill of the grill, as you cook your desired meats and vegetables over a stone grill, which, as an added bonus, doesn’t leave you smelling like barbecue after your meal. According to general manager Jason Wong, Gyu-Kaku is the perfect place to bring people together. The possibilities are endless as far as the cuisine is concerned, and the trendy and relaxed atmosphere makes for an intimate setting. DO: Gyu-Kaku Japanese BBQ is always bustling with diners who can’t wait to sample the famous cuisine here. What makes Gyu-Kaku stand out from other yakiniku-style restaurants? Wong: Unlike other yakiniku restaurants, which are usually all-you-can-eat,
everything at Gyu-Kaku is served a la carte or in sets. We are an upscale yakiniku restaurant and we only utilize high-quality meats. There is high demand for our meats. In fact, we probably go through 100 pounds of chicken per week. DO: For someone who has yet to dine at Gyu-Kaku, how would you describe the dining concept? Wong: As a Japanese yakiniku-style restaurant, Gyu-Kaku is a great place for the whole family and to meet up with friends. We provide a very interactive dining experience here, where you can cook your own meats, enjoy a variety of dishes and talk story. GyuKaku’s vibe is laid back. We don’t put a time limit on our customers, so you can even stay for five hours, if you wish. We’re known for our lunch sets, which are complete meals for one person, and dinner sets, which are complete meals for two people. Here you can order a bunch of different things. Portions are usually around 4 ounces. We want our patrons to be able to try a little bit of everything.

This exceptional cut of meat is now prepared by the distributor exclusively for Gyu-Kaku — the only location internationally where can find this specific cut of beef. Our customers also like our Yakiniku Set ($8.95), which is only available from 11 a.m. to 4 p.m. Monday through Friday for lunch. This set features garlic chicken and yaki shabu teriyaki with salad, rice, soup and a beverage. Yaki shabu teriyaki is a tender, thin cut of beef. When looking for our barbecue beef best-seller, our No. 1 pick is Harami Miso Skirt Steak ($8.50). Besides the meats that you cook on the grill, our bi bim baps are popular. For instance, we have a Smoked Pork Bi Bim Bap ($8.95), a rice dish served in a stone bowl. This dish consists of rice, smoked pork, carrots, snap peas, onions, kimchee and egg splashed with shoyu. It’s similar to kimchee fried rice, but it cooks in the bowl and our servers will mix it together for you. DO: Delicious! Are there any new items on the menu that patrons must try? Wong: Yes. We have a new appetizer, Agedashi Tofu ($4 regular, $3.50 happy hour), which is not listed on the menu yet, but our servers will tell you about it upon your visit. Agedashi Tofu is a firm tofu, fried with a barbecue sauce, garnished with chichimi (seven spice), and topped with nori, ginger and green onions. DO: What do you think has contributed to Gyu-Kaku’s continued success? Wong: I would say our happy hour because it’s basically never-ending. Diners can take advantage of happy hour specials available all day Sunday

and Monday, as well as from 11 a.m. to 6 p.m. and again from 9 p.m. to closing Tuesday through Saturday. Additionally, Gyu-Kaku features “Super Happy Hour” deals from 9 p.m. to closing Sunday through Thursday, which is a great deal for the late-night crowd. We draw in a lot of people for happy hour. We also recently unveiled our very own beer called Aka ($2.50 glass, $10 pitcher), a red lager. It looks like a heavy beer, but it’s really light. It’s caramel-like with a hint of toffee-like nature. It has a real nice flavor to it. It’s our top-selling beer at the moment. We also have an unbeatable 10course menu, which is perfect if you’re really hungry or want to try a bit of everything. And many people would be surprised at our dessert selection. We have S’mores, Bread Pudding Bites, Deep-Fried Cheesecake and a variety of ice cream, including green tea and wasabi flavors.

ith such a wide array of Korean yakiniku-style eateries to choose from on the Island, how do you know which one to go to? The first thing to pay attention to is the foundational quality of every great table-top grilling establishment — its meats! The restaurant’s secret marinade doesn’t hurt either. As Ha describes, the short ribs are marinated for 24 hours before they are ready to grill, which allows them to absorb every drop of flavor. “We’ve been around for 30 years and have used the same sauce the whole time. People know about it and love it,” she says. Camellia’s newest item — pork belly — adds flair to the menu as well. ith Americanized Chinese cuisine chains popping up all over the island, it is becoming increasingly difficult to find an authentic restaurant, right? Wrong. You must not have dined at Canton Seafood Restaurant. Not only does the restaurant boast an extensive selection of seafood eats (there are nearly 180 selections on its regular menu), it’s also serving it with an authentic flair. “Chinese people love the restaurant,” shares assistant manager Helen He. The restaurant, which will have been open for two years in April, benefits from a chef originally from China. “The chef concentrates on quality,” says He.
The Live Lobster ($18.99 each or $12.99 when ordered with an entree) is housed in tanks in the restaurant, and can be served with one of four sauces: ginger and green onion, pepper and salt (no gravy),
black bean, or butter and garlic. Unlike other Chinese restaurants on the island, He says that Canton Seafood serves the best type of lobster: Maine lobsters. Another popular item is Clam

Who or what inspires you as a chef/manager/owner? Seasonal and readily available products inspire me to create certain dishes. The customers we serve also inspire me to create food they want to enjoy. We would like them to eat what they want, but we also want to expose them to things they haven’t had before or normally wouldn’t try. What's your most popular dish? Our most popular dish is our Ahi Katsu. This appetizer has been on our menu since day one. It is simply made starting with sashimi grade ahi, wrapped with fresh spinach and nori, then crusted with panko and quickly cooked rare. he menu at Pho My Lien was brought to Hawaii by Tommy (My) Dang and his wife Lien, who decided to share their family recipes to the hungry diners of Honolulu. Good thing they did. Pho My Lien is simply an outstanding and affordable Vietnamese restaurant centered around fresh ingredients and friendly service. What more could you ask for? A great example is Crispy Calamari ($7.95). Itâ&#x20AC;&#x2122;s outstanding and unique. Cut into strips more than standard rings, the tender and crispy pieces of squid look more like french fries than battered and fried rings of seafood. Texturally, itâ&#x20AC;&#x2122;s a lot like fried potatoes, and thatâ&#x20AC;&#x2122;s not a criticism. The calamari is deep brown and crunchy, yet tender. Itâ&#x20AC;&#x2122;s lightly spicy, has a tasty dipping sauce and is flavorful without being overwhelming. My Lien is clearly better than most. The summer rolls are a mixture of aromatic flavors that includes fresh mint, bean sprouts, rice vermicelli, a choice of shrimp, pork, beef, chicken or tofu, and served with a slightly spicy peanut sauce. The spring rolls are similar, but deep-fried to a crispy golden brown and stuffed with pork, chicken or shrimp, shredded carrot, long rice and mushrooms. Broccoli Sauteed ($7.95) may seem oddly named, but it makes sense when you realize the tangy and crunchy broccoli comes with a choice of either chicken, pork, beef, shrimp or tofu. Most importantly, it's delicious. Donâ&#x20AC;&#x2122;t let the name confuse you. If youâ&#x20AC;&#x2122;re looking for something light and refreshing on a warm day, Lemon Beef Salad ($9.95) might be your choice. Tender sliced beef is mixed with romaine lettuce, cucumber, tomato, toasted peanuts, fried onion flakes, parsley and topped with a sweet lemon sauce. Who knew a beef dish could be so refreshing?

pecializing in freshly made bentos, Mamaya’s new Pearl Kai location offers tasty, local Japanese fare that is perfect for those on the go. The eatery’s conveniently packed meals, which include the Miso Butterfish Combo Bento, are prepared in advance and always ready to be enjoyed. Mamaya also offers an impressive deli station, which allows patrons to customize bentos to their specific tastes. Operations manager Monette Lastino calls the Miso Butterfish Combo Bento “a best-seller” and takes pride in the authenticity of the product. Not your ordinary rice found in a typical bento, this multi-grain rice contains many vitamins, minerals, fibers and other nutrients, which are often lacking in a regular diet. The multi-grain rice includes whole oats, red rice, rye berries, short grain brown rice, hulless barley, bamboo rice and more.
Tamago (sweet egg), Kiriboshi Daikon, Tsubosuke and Hijiki are sumptuous sides that accompany the bento. Tsubosuke features pickled daikon and Kiriboshi Daikon is a shredded daikon paired with slivers of carrot. Hijiki evokes flavors of the sea, as its seaweed is laced with shredded soy beans and green peas. The majority of these side dishes are shipped in directly from Japan.
Mamaya obtains its butterfish from a local vendor, and it’s nothing short of amazing. The tender fish is marinated overnight in a housemade miso recipe prior to being grilled and broiled to perfection.

ollowing two months of feverish preparation and menu creation, diners will be pleased to know that Chef Chai Chaowasaree is back in business. Chaowasaree is now serving his iconic award-winning island fusion cuisine at the aptly named Chef Chai on the ground level of Pacifica Honolulu Building on Kapiolani Boulevard across from Neal Blaisdell Arena. The restaurateur and heralded chef closed Chai’s Island Bistro at Aloha Tower Marketplace on New Year’s Eve after 14 years, and following two months of preparation, opened the doors to Chef Chai at Pacifica Feb. 28. The culinary wizard remained busy through the two-month respite by continuing to operate Singha Thai Cuisine, jetting around the world as executive chef for Hawaiian Airlines, and hosting charity events such as a recent fundraiser for Ballet Hawaii. “You know, with the last two months, even though we weren’t open yet, there was no layoff at all,” Chaowasaree says. “There was planning for the new menu, catering — we do a lot of catering, that business is doing really well — helping Hawaiian Airlines with their menu changes and training our staff. It’s a lot of work, but I’m excited that we’re finally open because people have been calling … we couldn’t have opened soon enough!” The new restaurant was designed by Sukamorn Chuen Yee with a contemporary look and feel, while also reflecting Chaowasaree’s personality and food. Light and glass accents are

used to create an “upscale but down-to-earth” feel, and the restaurant features fine Swarovski crystal pendants and glass bubbles, chandeliers and textured stone. A private dining room is available, as is seating at the spacious full bar as well as on the outside patio area, which features eyecatching fire towers fronting Kapiolani Boulevard. While Chef Chai’s menu boasts a wide variety of Asian-influenced choices for all tastes, it is noticeably missing one ingredient: butter. “Hawaiian Airlines is very focused on serving fresh and

healthy food, and I’ve taken that concept to the restaurant by not serving anything with butter,” Chaowasaree explains. “I want people to be healthy. To me, if you have a good-quality product, you don’t have to do a whole lot to it. The ingredients are so fresh and flavorful by themselves, why would you want to ruin the experience by covering them in butter? I let the ingredients speak for themselves.” Chef Chai serves up a host of healthy starters, including Fresh Ahi Tartar in Mini Waffle Cones ($15). Customers also enjoy Hauula Tomato Caprese Salad ($12), which features the juicy tomatoes and mozzarella cheese stacked atop a bed of aged balsamic vinegar and extra virgin olive oil, and includes fresh micro
basil and crispy bacon bits. Chaowasaree also offers a salad that plays to all senses, as the Poached Pear and Rainbow Vegetable Salad ($12) includes brightly colored cauliflower from the Big Island paired with tomato, cucumber, goat cheese and candied walnuts “The pear salad looks so beautiful; it’s very stunning and colorful,” Chaowasaree says. “It’s local and new, not many people are doing anything like this. About half our menu, including our signature items, is the same as the Island Bistro, while the other half features new items like this one.” Entrees at Chef Chai, such as Vegetable Terrine with Green Curry Sauce ($25), are accompanied by a choice of steamed

white rice, steamed brown rice with coconut milk and fresh ginger or mashed potatoes. Customers also have the option of mashed Okinawan purple potatoes or zucchini linguini for an additional $2. For dessert, Chaowasaree recommends Chocolate Crunch Bar ($9), a treat that resembles a decadent candy bar complete with a crispy, crunchy layer. The
dessert is served with fresh berries that pair perfectly with the chocolate, as well as a raspberry guava puree that ties all the flavors together. “At the old restaurant, a lot of customers focused on the entertainment, but here, we want them to focus on the food, service and ambience,” says Chaowasaree, who grew up helping at his family’s restaurant in
Thailand from the age of 10. “Each restaurant has its own uniqueness, and we want customers to experience that. We want to excite the younger generation of diners.” Chef Chai at Pacifica is open nightly for dinner, and customers can look forward to a special late-night (after 9 p.m.) menu in the near future, as well as the integration of lunch service.

s many will remember, Shiro’s Saimin Haven has been in the same spot in Waimalu Shopping Center since the 1970s. And the restaurant, which opened its first location in Aiea in the 1960s, has been serving up many of the same goods since then. Throughout the years, Shiro’s has remained a go-to spot for saimin and other local favorites. “We have kept a lot of the same recipes that have worked over time,” says Shiro’s manager and catering manager Bryce Fujimoto, who is founder Shiro Matsuo’s grandson. “These are original recipes, and we have just added upon them. “It is meant to be home-style cooking,” Fujimoto adds. “We don’t cut corners. We make things from scratch whenever possible.” Whether you have been a longtime fan of Shiro’s or are just discovering the eatery, you can rest assured that its newer items will have the same quality as the restaurant’s classic

s the grandson of the late, famed Shiro Matsuo, Bryce Fujimoto grew up in the restaurant industry. “My mom always took me around wherever she went,” he recalls. As Fujimoto got older, he started serving water to customers, then worked as a dishwasher. Eventually, he worked his way up to saimin cook, fry cook and server. These days, Fujimoto is the restaurant’s manager and catering manager. “I like the restaurant industry,” he says. “I like the fast pace of it.” Matsuo founded Shiro’s Saimin in the 1960s, after gathering culinary training in a lot of different restaurants. “He worked for all different kinds of chefs,” Fujimoto explains. “He worked for a Chinese chef, at a lot of hotels. He also got some training in the Army. He worked for Gov. Burns … It is pretty exhausting looking at the list.” All of those different influences culminated in a creative style that is distinctly Shiro’s. “He always had a dream of opening up his own restaurant,” Fujimoto says, “and finally, in 1969, he overcame a lot of odds and opened up Shiro’s Hula Hula Drive-In in Aiea Shopping Center.” In the 1970s, the restaurant relocated to Waimalu Shopping Center, where it stands today. One of the main reasons that Fujimoto is so fond of the restaurant industry is because of the people, both customers and coworkers, with whom he has worked over the years. “I consider them family now,” he says.

dishes that have made it a local favorite. One that it has added recently is Clam Saimin ($9.95), which features clams, won ton and Shiro’s garnish, which is comprised of char siu, luncheon meat, green onion and an egg roll.

Another newer item is Calamari Saimin ($8.75), which features won ton noodles, garnish and a side of calamari. “The clam flavor is cooked into the base, and a little bit of miso is added in there, too,” Fujimoto explains.

A sticky treat unveiled at Larry’s Clam Saimin and Calamari Saimin both debuted on the menu last week. If classic Shiro’s is more your speed, try Local Boy Stew ($8.50), which is a tomato-based stew filled with potatoes, carrots — and plenty of beef. “We say that if you don’t see the meat, you don’t pay for the meal,” Fujimoto says of the dish. “This is one of Shiro’s recipes, and it is one of the old favorites that we have not changed.” By popular demand, another dish you can now enjoy at any of Shiro’s locations is Bento A ($9.50), which features fried noodles, chicken katsu, Spam, teriyaki beef, one cone sushi, one maki sushi and rice. “We have been serving this at the takeout window for a long time, and customers have been wanting to eat it in the restaurant for a really long time,” he says. For those who just can’t get enough of Shiro’s, you will be delighted to know that the eatery serves breakfast. It also offers catering for parties. Call in advance to place an order. In addition to the Waimalu location, Shiro’s has a second shop in Ewa Beach and a saimin stand in Waipahu.

You’re going to glance over at it, making sure it’s still there, while devising schemes on how to overcome the taped flaps and wondering if anyone will notice the crumb trail if you do open it. They are the most amazing things I’ve ever put in my mouth,” your coworkers will sing. “Outstanding,” your boss will declare. You will be the office star of the morning. So what are these things worthy of such desire and praise? Butter Roll Sticky Buns — simply explained by Lance Yafuso, president of Larry’s Bakery: “They are butter rolls that we’ve turned into sticky buns.” A “honey-bee topping” of honey, brown sugar and butter goes into the bottom of a muffin pan, then butter rolls are put in, left to raise and baked. “So when you flip them over you get the topping on top.”

Butter rolls start with a bread dough (Larry’s original recipe used as a base for all the breads) that is rolled out, topped with butter, and then folded on top of itself. “Anytime you fold dough like that, you get layers and flakiness,” says Yafuso. The tender, flaky layers coupled with the caramel-like topping result in a melt-in-your-mouth, boss-approved “outstanding” experience. And lucky for you, this different twist on the butter roll is now avail-
able for sale. “We would make them just for us to eat, but we never sold them,” says Yafuso. “And then we tried the recipe with the butter rolls, and it was just so good.” Butter Roll Sticky Buns are just $1.35 a pop, but be prepared to buy more than one. “I could eat like four or five of those if I were left alone with them,” says an anonymous source. Another new item to consider: Pig in a Blanket ($1.95), not to be mistaken for Pig in a Roll, which is Portuguese sausage in a butter roll. Hukilau Having your way with portobello comes easy at Hukilau in Executive Centre in the heart of downtown Honolulu. Categorized as an upscale Hawaiian plate lunch-style eatery, Hukilau always finds a way to put its own spin on its mouth-watering fare. Take the restaurant’s lunch favorite KatsuStyle Portobello Mushroom Sandwich ($12). As a popular vegetarian option, beloved by carnivores as well, this sand-
wich is extraordinary and guilt-free. According to Hukilau executive chef Jason Takemura, the foundation of the sandwich lies in a meaty portobello mushroom roasted in a balsamic marinade with olive oil and rosemary, and then breaded panko-style. Brie cheese, caramelized onions, roasted peppers, butter lettuce and tomatoes complete the fillings, which are nestled between two Kaiser rolls with a sun-dried tomato aioli spread. Finally, your choice of a side of fries, sweet potato fries, garlic fries or ’Nalo green salad take this sandwich over the top. “We actually had this item on the menu from the beginning,” Takemura says. “Every time I tried to take it off the menu I’d end up having to put it back on. “Everyone has their regular balsamic or grilled portobello mushrooms, so I wanted to do something different and put a local twist on it, so I made it katsu-style.” Hukilau Executive Centre 1088 Bishop St. 523-3460

or many people, desserts are the best ending to a delicious meal, and Beachhouse at the Moana Surfrider, a Westin Resort & Spa, knows exactly how to top off a beachside meal with island flavors adorning each dish. Hawaiian Chocolate Pot de
Crème ($10) features a ginger biscotti and Hawaiian chocolate. “We put our own spin to it,” explains sous chef Celeste Pasag. “The ginger biscotti is something that accompanies it, and the idea behind the biscotti is to dip it and have it soak up the chocolate.”
At first, the dessert was featured only during the evening as an a la carte item, but because it gained popularity the restaurant included a smaller version of it to its tea service. Cheesecake lovers need not fear, though, as Beachhouse also features a Lemon Cheesecake ($10) with guava crust served with roasted
pineapple and caramel. Pasag says this dessert is by far the most requested, and the light texture makes it perfect to share or eat all by yourself. “Everybody is so health conscious now and carb conscious that we wanted to offer an alternative aside from our fruit plate, which is the default for everyone,” she says, noting that this dessert has a tangy flavor. The crust is made from Kauai Kookie Kompany’s cookies, and is not the typical

heavy New York cheesecake everyone expects. Chocolaholics will love Chocolate Decadence ($12) with a lilikoi ganache made with Hawaiian chocolate. “We tried to omit it from our menu, but the next day everyone was asking for it, and we couldn’t just leave it off the menu,” Pasag says. And it’s a good thing they didn’t. This molten lava cake exudes a warm and gooey inside that will warm you down to your toes. These three desserts are made in-house and incorporate many local ingredients. Pasag explains that the restaurant also changes the menu about every three months in order to incorporate seasonal fruits, whether it be mango, lilikoi or guava. “We try to utilize everything that we have here in the Islands to promote the indigenous surroundings,” she says. “And that’s what Westin’s all about. It’s about renewing and refreshing.”

Every Tuesday, Thursday, Saturday and Sunday between 6 and 8 p.m. customers can find Im preparing and passing out complimentary homemade buttermilk biscuits straight from the oven to all patrons. “It is a joy for me to step into the kitchen, prepare the flour mixture and start kneading away,” she says. “People have grown to love the biscuits so much that oftentimes they will come in specifically because of them.” In the end, New Eagle Café offers a place where diners can truly enjoy being part of an international ohana with employees who care about their customers. “I firmly believe that in order for a restaurant to succeed, all those involved have to put their heart in what they do,” says Im. “The staff’s genuine love for the food and customers is an essential part of the business.” New Eagle Café also boasts an impressive variety of early bird specials and daily specials as well as a takeout menu.
