arch has crept up on us, and St. Patrick’s Day is right around the corner — March 17 to be exact. And I’m sure you know what that means. It’s time to sport your green, drink up, be merry and get ready to crave corned beef everything. An absolute must-have on this Irish holiday, corned beef is delicious and the purist of comfort foods. Yet, here’s some-
thing that may surprise you. The word “corn” in corned beef derives from Old English, which is used to describe any small, hard particles or grains. And, in the case of “corned beef,” the word refers to the coarse granular salts used to cure the beef. Just genius! That’s why this particular meat is so tasty. So, this week, I’m gearing up for St. Patty’s Day. Let’s indulge in the luck of
the Irish at the following Ono, You Know establishments and fill up on this traditional Irish fare. Pinch! You’re not dreaming, a world of melt-in-your-mouth corned beef creations awaits.

Wailana Coffee House When the rest of the world is in dreamland, there are a few night owls who flock over to Wailana Coffee House during the wee hours of the morning to satisfy their late-night cravings. And then, you have your typical breakfast, lunch and dinner crowds as well, who are devout fans of the Waikiki establishment’s ono grinds comprised of American and local classics — one of them specifically being Corned Beef and Cabbage, Killarney. Available St. Patrick’s Day from 11 a.m. to midnight, this holiday favorite is priced at $13.95 and features moist and tender slices of corned beef draped over caraway-flavored cabbage wedges, and served with boiled potatoes, carrots and corn on the cob. Finally, creamed horseradish and mustard elevate the dish to new dimensions, as these condiments are an absolute must when we’re talking corned beef. How can a dish so simple taste so good? Well, there has to be good – See page 12

OCEAN HOUSE
DINING OUT • COVER STORY
STORY BY ALANA FOLEN • PHOTOS BY LEAH FRIEL
T
here’s no place like home, and for the last decade, Ocean House in Outrigger Reef on the Beach hotel in Waikiki has been welcoming kamaaina and visitors alike to its homey oasis, where guests are encouraged to soak in picturesque oceanfront views and breathtaking sunsets while reveling in avant-garde cuisine centered around premier ingredients and immaculate presentation. Most recently, Dining Out paid a visit to the restaurant and caught up with general manager David Nagaishi, where in between bites of delicious HomeStyle Croissant Bread Pudding, we learned the contributing factors to the restaurant’s flourishing success. DO: After a full day of exploring Waikiki with sunshine and surf, a top-notch dinner awaits at Ocean House. For a first-timer, describe the ambiance and your top picks off the menu. Nagaishi: Here at Ocean House, we’re all about casual elegance within a plantation-style atmosphere. As soon as you walk through the doors, we want you to feel relaxed — have a seat, enjoy your meal and listen to the music of the waves crashing ashore, as we’re situated directly on the beach. As for my top recommendations for a first-time diner, I would say to definitely start with our Sizzling Ahi Carpaccio ($14.50), an appetizer which melts in your
2
1
mouth and is sprinkled with Hawaiian salt and togarashi, and laced with sizzling sesame and peanut oil. Maui onions, radish sprouts and a bit of Hawaiian chili sauce also accompany the dish.
4 | DINING OUT | MARCH 10-16, 2013
Then, I’d recommend our Ocean House Salad ($7.50). A namesake, this salad features organic greens with our minted guava vinaigrette. For the best part — our entrees — we’re known for
our Hawaiian Sea Salt Slow Roasted Premium Angus Prime Rib (prices vary), in addition to our Grilled Veal Chop ($39.50), a 12-ounce cut served with wild mushroom Madeira demi topped with avocado gremolata butter, tomato concasse, grilled hearts of zucchini and risotto croquette. If you’re feeling like fish, I’d recommend our Parmesan Crusted Opah ($34.50). It features Hawaiian Moonfish, pan-seared with a light lemon caper butter cream sauce, and served with grilled Kahuku corn and sun-dried tomato polenta. Save room for dessert, because you have to try Uncle Moki’s Chocolate Lava Flow Cake. DO: Ocean House is moving toward a healthier dining approach, correct? Nagaishi: Yes. People have
been gravitating toward the more healthier side of dining. Not necessarily taking away from flavor, but instead putting more emphasis on the nutritional value of a dish. As a result, we’ve been working with a lot more vegetables and healthier starches. But if you just want to eat and don’t care about your calories, we’ve got great food for that, as well. For example, if you want to indulge in seafood, go for our Seafood Linguine ($36.50), which presents sautéed lobster, shrimp, scallops, clams, fish and Pen Cove mussels in a lobster mushroom cream sauce over linguine topped with shredded Parmesan cheese. And go all out with our Home Style Croissant Bread Pudding ($9), with macadamia nuts and rum raisins served with a scoop of sweet vanilla bean ice cream.

DO: That sounds immensely appetizing! Does the restaurant support local in regard to its seafood? Nagaishi: Of course! Most of the local seafood that we obtain is fish, such as opah, mahi mahi, snapper and monchong, which are delivered fresh every day.
DO: Executive chef Aurelio Garcia came on board late last year. What has he brought to the table since then? Nagaishi: With 34 years of culinary experience, Chef Aurelio has been improving the presentation of our dishes, and we’ve been working on a new menu
that we hope to debut this summer. Chef Aurelio has been currently showcasing his specials and perfecting some Easter specials that we’re very excited about.
4
5
DO: There are always enticing specials offered here. Tell us about these Easter specials that guests can look forward to at Ocean House. Nagaishi: For breakfast, we will offer Hukilau Fried Rice ($17.95), Hawaiian-style fried rice with lobster, scallops, shrimp, bacon and green onions served with two eggs any style. Grilled Mahi Mahi and Eggs ($16.95) also will be 6
3
available, served with white rice and your choice of buttermilk or nine-grain toast. For our dinner crowd, our featured appetizer is Kalua Lamb Ravioli ($14.50), with macadamia nut and sun-dried tomato in a pesto cream sauce. For an Easter entree, we’ll have Hukilau Stew ($37.50), with lobster, shrimp, scallops, mahi mahi, clams and mussels simmered with Kamuela tomatoes and ’Nalo herbs served with Ciabatta garlic toast. Dessert consists of Steamed Kabocha Pumpkin ($10.50) filled with lemongrass chocolate haupia custard. You can have the complete Easter dinner for $57.

olden Palace Restaurant in Chinatown introduces three new dishes for a limited time. Known for its Hong Kongand Southern China-style cuisine, the landmark eatery located next to Bank of Hawaii has been a longtime local favorite. Available for about a month, guests can enjoy Typhoon Shelter Crab ($30), Cucumber with Lup Cheong ($7.95) and Curry Chicken Pie ($1.98, three pieces) — three classic dishes commonly found in Hong Kong. “The Typhoon Shelter Crab originated in Hong Kong Harbor more than 30 years ago,” explains manager Gary Lam. “They came up with this in the typhoon shelter on one of the boats and it got passed around. There’s fried garlic, minced scallions, chili peppers, a little bit of chili oil, and the crab is also fried. The main focus of this dish is spice because during a typhoon, the

spicyness helps keep them warm and that’s maybe how it started,” he adds. Cucumber with Lup Cheong, which has never been offered before at Golden Palace, is one of those homey Chinese dishes you’d find on your family’s dining table. It’s stir-fried, and also has carrots, straw mushrooms and garlic. Curry Chicken Pie, which was recently introduced has become a popular item at the restaurant, however, only a limited quantity is made fresh daily. The restaurant, which has been around for decades, is locally-owned and operated by Howard Lam who pur-
chased it in 2001. The Lam family also owns neighboring Hoong Wun Market where they pick many of its vegetables, meat, fish and seafood. “We don't sacrifice quality for price,” adds Lam. “We try to stick to very authentic Hong Kong and Southern China cooking (which is where our chefs are from), but at the same time we will try to cater to people’s tastes and we can adapt to pretty much anyone’s special diet requests.” Golden Palace is open for breakfast, lunch and dinner, and offers an extensive
menu, including dim sum in the morning and daytime. There also is a banquet hall on the second floor that was recently renovated and can hold up to 500 people.

KITCHEN INSIDER ver wonder what goes on behind the scenes at your favorite restaurant? Well, much credit goes to the many chefs, owners and managers who work diligently day in and day out to make sure Hawaii's diners have a top-notch dining experience. This week, Dining Out gets the inside scoops from Inferno’s Wood Fire Pizza owner and pizza chef Kyle Okumoto, who gives us a little taste of Inferno’s and shares just what fuels his culinary drive.

Who or what inspires you as a chef/manager/owner? I owe all of my inspiration to my friends. I used to make pizzas for parties to share with everyone, and got really great responses from them. My friends encouraged me to use my skills and recipes to open up the Inferno’s Pizza mobile business that I actually started with, and the rest is history. They still inspire me to create new pizzas and try new things all the time. If you could serve food to a celebrity, who would it be and why? What dish would you serve? I really enjoy watching Diners, Drive-ins and Dives on Food Network, so I would be pretty thrilled to serve pizza to Guy Fieri. I’d want to serve him our signature Guava Smoked Pork Pizza. I know how much the guy loves barbecue, and the local guava woodsmoked Shinsato pork, locally made Kilauea barbecue sauce and sweet Maui onions
AT ALA MOANA HOTEL s 410 ATKINSON DRIVE s 942-7788
are a pizza combination I’m sure he’d be pretty happy with. What is your favorite dish on the menu? Why? I’m a simple guy when it comes down to it, so my favorite has to be the Sopressata Pizza. It’s basically a pepperoni pizza, but with Italian sopressata sausage instead.

Is there a dish that you create that’s not on your menu, but available upon request? Technically no, but whenever my friends and I see a really awesome-looking pizza on TV or in magazines, I use the kitchen to try them out right here at Inferno’s. Recently I made one for fun, which consisted of pepperoni with a pile of tater tots, homemade chili and nacho cheese in the center. It went pretty fast.

look around the thirdfloor terrace at Hyatt Regency Waikiki and it becomes clear what the $13 million renovation has done. The open-air hotel, already visually appealing, is fresh and more modern. So are the restaurants that inhabit the area. “The whole concept of Shor is an American seafood restaurant using locally-produced and organically-grown items,” says Kyle Higa, chef de tournant. He’s exactly right. Shor opened last April, and the American seafood restaurant has been a hit ever since. Why is no mystery. The food is outstanding and the view of Waikiki Beach is the stuff postcards are made of. If there is a star on the appetizer menu it may be Seafood Tower ($60). with lobster, oysters, mussels, shrimp, king crab, poke, seafood salad, crab salad and Big Island abalone that is baked with inamona (a flavoring made from kukui nut and Hawaiian salt) garlic butter and served on a bed of Hawaiian Sea Salt. It’s a tasty way to begin, or finish, your meal. Something else of note: Shor features a rotation of three types of oysters that includes Kumamoto, Miyagi, Fanny Bay and Penn Cove oyster. Most eateries stick with one. Who doesn’t like Baby Back Ribs ($14)? Tender pork is braised for three to four hours, cut, topped with a guava hoisin glaze and grilled until the outside caramelizes with the tangy sugars of the glaze. The result is a smoky, sticky, delicious rib that
makes a perfect compliment to the next suggestion, Warm Watermelon and Tomato Salad ($12). Made of caramelized locallygrown watermelon, yellow tomatoes seasoned with guava garlic salt, ’Nalo Farms microgreens, a syrup made from a balsamic vinegar reduction, and pistachio, the salad is wonderfully clean and refreshing, and serves as an excellent palate cleanser when dining on the ribs or other bold-flavored dishes. It’s also an excellent option as part of a light meal or snack in the midst of a busy and warm Hawaii day. Another light choice, one of many, is Caesar Salad ($11). The talented Shor staff combines Waipoli hydroponic baby Romaine lettuce, house-made garlic
croutons, shaved Parmesan and a classic Caesar dressing. The result is superb. The lettuce is soft, the croutons are fresh, the cheese has a firm flavor profile without being overpowering and the dressing ties it all together. Check it out and bring the kids. Shor has them covered as well. The hotel features its “Hyatt for kids, by kids” menu created by an 11 year-old chef and features nothing fried, no desserts just fun, flavorful and fresh food that has kids clamoring for salad. Go figure.

sn’t it amazing how the familiar taste of a meal you haven’t had in a while can conjure up a world of memories with one simple bite? It’s a sensation Kenny’s Restaurant assistant manager Erlene Hutchinson recently experienced when sampling the diner-style eatery’s reincarnation of an old-time favorite: Suzy Q ($10.35, special price) burger with fries. “Ohhh, brought back so many memories when I first had it again!” she nostalgically exclaims when describing what it was like to eat the teri beef burger topped with American cheese and drizzling teriyaki sauce for the first time in years. “I used to always order it with a slush float.” Suzy Q is part of a slew of signature sandwiches the establishment is bringing back to life. Sharing in Hutchinson’s excitement are countless locals who grew up enjoying these dishes they were offered at Kenny’s original location on North School Street, Kenny’s Burger House, from 1960 until
3
its closing in 2002. While the current eatery — which opened right next to the burger house in 1965 — brilliantly continues the tradition of serving American classics with a local twist, the memory of the initial drive-in’s beloved sandwiches still lingers in local patrons’ growling tummies. “They were all really popular,” says Hutchinson, who’s been with Kenny’s Restaurant for 32
years. “Customers always come in and say, ‘Oh, what happened to the sandwiches you used to sell at the Burger House?’ So that’s why we wanted to bring them back, for those who remember them from long ago.” In addition to Suzy Q, old timers will rediscover Teri King ($13.45, special price), which features “double the teri beef,” and Porky Boy ($8.95, special price) prepared with house-
made Kalua pig and teriyaki sauce. Kenny’s throwback menu doesn’t come without a new twist, however. Bringing 30 years of experience to the table, the diner’s newest chef, Lester Omuro, has found a way to bring an upscale touch to the good ol’ classics. “We’re using thinly sliced ribeye for the teri beef,” he says when describing one of the improvements. “It’s a better-quality beef.” Omuro also recommends refreshing your memory of the Beefy Boy ($11.65, special price) made with two hamburger patties, or the Cheesy Gal ($12.55, special price), which features two patties and double the American cheese. Each item is served on a sesame bun with lettuce, tomato, onion and a pickle with fries on the side. Now a whole new generation of customers can embrace these adored eats, just as their parents and grandparents did. In addition to meat-free menu offerings such as Veggie Madras ($14.95) — a coconut milk-based curry with cauliflower, zucchini … nine different vegetables in all, which is accompanied by a choice of basmati rice or curried mashed potatoes — customers can pretty much create their own meal. “We can change it, twist it around and cook it just the way they want it,” assures Basnet, who adds that in nearly every dish diners can control the chili level, coconut milk can replace dairy milk or cream, and tofu can be substituted for cheese. For veggie lovers, it’s a peak experience.

HI Sandwich & Drink Vietnamese fusion foods are what it’s all about at HI Sandwich & Drink in Waimalu Shopping Center. Owner Kim Nguyen opened the eatery last December, and according to Nguyen, the restaurant serves as an outlet to share her passion for good eats. The name alone says it all — the best in Vietnamese sandwiches and drinks are all right here.

All sandwiches are served on your choice of French bread or croissant and filled with fresh vegetables, including cucumber, carrots, white onions and Chinese parsley dressed with a special blend of seasonings. Select from sandwich options such as Barbecue Pork, Tuna, Chicken Breast or Pate. And I was as lucky as a four-leaf clover when Nguyen presented me with a Pastrami Sandwich ($6). Like corned beef, pastrami was originally created to preserve meat prior to modern refrigeration. The secret to pastrami is this: The meat is brined, partly dried, seasoned with herbs and spices, then smoked and steamed. Voila! HI Sandwich & Drink’s Pastrami Sandwich is something you’ll want to sink your teeth into this St. Patrick’s Day. “Customers can request for more veggies in their sandwich free of charge,” Nguyen says, adding that smoothies,

bubble tea and other drinks are available as well. “Our smoothies are made with real fruit. Taro smoothie is the most popular, followed by jackfruit, pineapple and strawberry. Bubble teas also sell well,” she explains. So, if you're on the go this St. Patty’s Day, make a quick visit to HI Sandwich & Drink and make it a festive meal with a pastrami sandwich. corned beef specialties. This St. Patrick’s Day, feast on People Cafe’s Corned Beef with Cabbage ($7.50) or Corned Beef with Onions ($7.50). Served brisket style, People's Cafe’s homemade corned beef is seasoned with three simple ingredients — coriander, salt and pepper, making for one ono entree. Corned Beef with Cabbage is the most requested out of the two of the aforementioned dishes, and comes complete with carrots, cabbage and red potatoes. As for Corned Beef with Onions, this tasty dish is presented with your choice of rice or poi. Even the leprechauns know what’s good at People’s Cafe — top hats off for corned beef. rothers Junichiro and Ryojiro Tsuchiya have brought Sakura Restaurant from Waimanalo on Olomana Golf Course to Waialae Avenue, and fans of the establishment will be happy to know that the food is still just as good and the desserts are even better! Ryojiro makes his own version of whipped cheesecake, and that makes for a tasty Chocolate Cheesecake ($6). The cheesecake also comes in Berry ($7) and Caramel ($6). The house-made cheesecake sits atop a bed of cheesecake crust that Ryojiro also makes inhouse. According to Junichiro, who serves as general manager, the cheesecake has been a popular item on the menu for many years. Because the whipped cheesecake is so popular, Ryojiro decided to add it between two slices of French toast to make Strawberry Cheesecake French Toast ($9.95). Slices of fresh strawberries sit

among the whipped cheesecake, and the French toast slices make it easy to eat. With four heaping helpings on each plate, this is one dessert you’ll definitely want to share with friends. In fact, Ju-
nichiro says that young adults especially enjoy this dish. “We have a happy hour, and during happy hour they drink and then they eat this.” It’s not hard to see why patrons find this dish so appealing. You really do get the best of both worlds: warm freshly-
made French toast with cooled whipped cheesecake. Matcha Green Tea Tiramisu ($7) is served with four pieces of sweet potato tempura and azuki bean cream. “It’s very different,” Junichiro says. “It’s a tiramisu style, but with a green tea base. The azuki beans go well with the green tea.” He also says to dip the sweet potato tempura into the tiramisu and azuki bean cream. The ensemble is topped with a traditional Kyoto-style brown sugar syrup. Each dessert is a hearty helping of sweetness, which makes all of it great for sharing. And in a world where food is the foundation for great conversations, we wouldn’t have it any other way.

SELECTIONS DELIGHT DINERS Roughly 10 years later, the aptly named Hot & Fresh menu is still available at 10 locations across Oahu and Maui, and customers continue to clamor for the made-to-order desserts. “Jason Higa wanted to offer items for customers that are hot and freshly made. He wanted to make the hot items available at the counter, not just the traditional favorites in our bakery cases,” says Kris Campbell, retail bakery manager for Zippy’s. Everything is made to order, and, for example, malasadas only take three or four minutes to prepare, and they’re ready to go. You’re guaranteed to have the items served hot, if you wish.” The Hot & Fresh menu was offered initially at the Ala Moana Zippy’s, and since has expanded to Ewa, Kapolei, Kailua, Koko Marina, Makiki, Mililani, Pearlridge, Wahiawa and Kahului, Maui. “We’ve had our Hot & Fresh menu for a while now, I would say at least 10 years, but a lot of customers still don’t know about the items,” says Campbell of the menu, which includes

So, we broke it down to the best-sellers, which are currently favorites on the menu.” Malasadas (75 cents each, $7.95 for a dozen — prices may vary by location) remain the top seller, and are available with the traditional sugar or cinnamon coating. Customers also rave about Filled Malasadas ($1.05 each, $11.65 for a dozen), which offer the same delicious doughy treats with an infusion of custard, chocolate or haupia fillings. Campbell explains that the malasadas are perfect for any occasion, including holidays and special occasions such as Fat Tuesday, or family parties and get-togethers. The Portuguese doughnuts are deep-fried until golden brown, and rolled in sugar or cinnamon to sweeten each warm, doughy bite. “I have to say that our malasadas are some of the best I’ve ever had on the island,” Campbell says. “I encourage customers to try them and be the judge! And, they’re good the next day, too. Just pop them in the microwave for 10 seconds or so, and they taste like they were just made.” Andagi (75 cents each, $7.95 for a dozen), sweet, deep-fried balls of dough, also are avail-

Jin Dui ($1.25 for three, $4.45 for a dozen) are madeto-order, and the Chinese pastries composed of rice flour coated with sesame seeds continually roll out of the kitchen as well. While the Hot & Fresh items each offer distinct flavors to please a variety of tastes, they all include basic ingredients — flour, eggs, milk and sugar — without the need for preservatives. “It’s almost like enjoying items that you baked fresh in your own kitchen at home,” says Campbell of the fresh offerings. “The ingredients are basic, and the fillings are made fresh daily from scratch at our bakery plant. Customers are familiar with those tastes, such as the custard, which is also used to fill the Long Johns.” The Hot & Fresh items are offered in addition to Napoleon’s Bakery’s well-established selec-
tion of desserts and treats, including cakes, pies, cookies, rolls, brownies, doughnuts and doughnut holes, and of course, Napples — the flaky pastries made with apple, chocolate, coconut, blueberry cream cheese or cherry fillings. Whether one stops in to enjoy a fresh malasada with a cup of morning coffee, or picks up a dozen to go, the friendly staff at Zippy’s is poised and ready to help.

C CHINPEI RAMEN
ON
hinpei Ramen opened its doors just about five years ago, but owner and chef Yoshi Hashigami is a lifelong veteran of the restaurant industry. His family owned a restaurant for 55 years in Japan, where he hails from originally. As a child, Hashigami grew up helping out around the kitchen. Hashigami worked in the restaurant for 15 years, but wanted to venture out on his own. Chinpei is Hashigami's first solo venture, and it’s so far so good for the Moiliili eatery. And although Hashigami finally has his own place, he also has incorporated a number of dishes from his family’s restaurant onto the menu at Chinpei. In fact, he says, that’s where many of his influences come from. Since opening, he has expanded the menu greatly. Initially, Chinpei started out with just 10 menu items, but has grown to an expansive, varied list that includes nearly 30 different types of ramen. Another source of inspiration is Chinpei’s customers. “The customers request things to me,” he says.

here might be plenty of ramen places around town to choose from, but Chinpei Ramen in Moiliili has managed to set itself apart with a large menu and a range of influences. According to owner and chef Yoshi Hashigami, the result is a one-of-akind taste that he has not encountered elsewhere in the Islands. Hashigami says he draws on what he calls “Chinese food of Japan” as influences into his ramen dishes. “In Japan, there are plenty of Chinese restaurants,” he explains. “This is Chinese style with Japanese taste.” For starters, try some of Chinpei’s appetizers, including Harumaki

($4.50 for three pieces). These spring rolls are filled with cabbage, pork, shiitake mushrooms and green onion. Or start things off with Shu Mai ($9.80 for eight pieces), which features ground pork and onion. For a light supplement to any meal, Cold Tofu ($4.50) is one option. It features three pieces of tofu, each topped with a different flavoring: dried bonito fish flakes on one, ginger and green onion for another, and ground pork with miso on the third. Of course, while you’re at Chinpei Ramen, trying the ramen is basically mandatory. There are nearly

30 ramen options, so selecting one can be difficult. According to Hashigami, Tan Men ($10.80 for a large) is among the most popular with customers. The dish is swimming with bean sprouts, green onions, Chinese cabbage and pork. And what better complement to ramen than fried rice? Char Siu Pork Fried Rice ($6.90) is well-stocked with char siu pork, green onions and egg. Perhaps one of the best things about Chinpei is that all of its food can be enjoyed knowing that it does not contain any unnatural additives. “The soup is made to be all-natural,” Hashigami explains. “The broth is made with chicken, pork and vegetable. And we never use MSG.” The result is a base that will pair well with any of the restaurant’s many ramen offerings.
ear seafood lovers looking for the grill-to-you experience, Kobe Steakhouse & Sushi Bar is the place for you. “Here you have a personal chef,” explains longtime teppanyaki chef Lester Nishida. “You see your food before it’s cooked, so you know you have quality. And you get it hot — you cannot beat that.” At Kobe, meals are prepared teppanyaki-style on the grill in front of you. The high heat and quick cook times ensure that seafood stays at the optimum texture: tender and not too firm. “It’s moist inside and juicier,” explains Nishida. The minimal spices added (a special house blend of seasonings including garlic salt, paprika and cayenne) do not overpower the fresh flavors of the high-quality ingredients. Seafood Trio ($42.95) is one such specialty of the house. It offers a generous portion of seafood. The three amigos of Seafood Trio are a lobster, scallops and calamari. The lobster is a 4to 6-ounce Tristan lobster. It’s cooked, cut into bite-sized pieces then displayed back in the shell. The scallops are large Novia Scotia dry scallops containing no preservatives, which means their flavor is
purer and fresher. “These are the best scallops out there right now,” says Nishida. The calamari, from Mexico, is 4 to 5 ounces and thick and meaty “like a steak.” Accompanying the trio are Mexican white shrimp, sautéed bean sprouts, mushrooms, onion and zucchini. (If three is a crowd, then more is definitely a party.) Two dipping sauces also are offered: a ginger sauce made with fresh ginger, and a mustard sauce with Coleman’s spicy mustard and black sesame seeds. The ginger pairs well with the seafood and vegetables, and the mustard goes merrily with steak. Kobe’s focus is on more than the proper preparation of fine ingredients, it’s also on creating an enter-
taining experience. Nishida explains: “Everything is cooked on the grill in front of you — with a show, too. And if you are lucky, sometimes you get a little magic, sometimes you get a little singing. Each chef is different in their own way.” When asked if he normally offers up a song for his guests, Nishida says with a laugh, “Last time I sang everybody walked out, so I don’t sing no more.” Surely everyone at least stayed until they had finished their dinners. Another dish to stick around for is Garlic Fried Rice ($4). It’s made in front of you with mushrooms, green onion, egg, steak and, of course, lots of garlic. “Garlic is good for you, too,” says Nishida. “What makes Kobe different is that we try to give more food. Let’s take care of everyone and give them more.” Seafood Trio ($42.95) Rachel Breit photos

ith equal parts eclectic and savory, Kit n Kitchen absolutely slays it with the restaurant’s award-winning Eurasian cuisine. For the past 11 years, the husband-and-wife team of Kit and May Yiu have been cooking up the most delicious culinary works of art with an intense variety that appeals to everyone’s palate. May serves as executive chef of the restaurant and frequently debuts new items she’s inspired to create — one of the most recent being Moroccan Lamb Stew. The dish, according to the chef, can best be described as “spicy.” After much experimentation with a plethora of flavors and spices, May settled on the perfect ones to really heat things up.
Eight-ounce morsels of lamb are rubbed with a blend of spices, including cumin, paprika, cinnamon clove, coriander, black pepper and cayenne, before it’s grilled to perfection. The lamb is then placed in the stew for up to 48 hours until it’s tender and the flavors of the spices are absorbed. “The secret is in the spices. All great recipes begin with pure spice,” May says.
The stew is simmered and brought to life with a rich tomato base mixed with carrots and onions. The sauce, meanwhile, allows the flavor of the lamb to shine through.
A hint of sun-dried tomatoes and dried cranberries brings color to the dish and laces the stew with a hint of sweetness.
Jasmine rice completes the meal, its flavor and substance offering a bit of relief for those apprehensive about the intense spiciness of the stew.

A world-traveler, May was inspired to create this dish following a recent trip to India. “I really enjoy tasting all kinds of food from around the world and I’ve been loving spices. While in India, I visited a local family and had many dinners there. As a result, I learned new cooking techniques that I’m able to incorporate into the cuisine here at Kit n Kitchen. Moroccan Lamb Stew is an example of that.”

— a simple yet effective motto that sums up the mouth-watering food and friendly service provided daily at Molly’s. Formerly known as Molly’s Smokehouse, the Wahiawa mainstay is being rebranded as Molly’s BBQ and Seafood. Owner Molly Walker is in the process of passing the reins of the restaurant to her daughter, Aylia Tillman, after nearly 14 years at the helm. But customers need not worry, as Walker will continue to be present, helping in the kitchen and with daily operations amid the transition. “Now, my daughter is going to carry the business on,” Walker explains. “She told me, ‘If you can do it for 14 years, then I can do 20!’ And, I said ‘OK!’” Walker is confident that her loyal customers will keep the restaurant going strong, and cites examples in the past. She explains that her customer base, which includes a host of active duty military personnel who reside in the area, has dealt constantly with deployments overseas to help with foreign conflicts. But, through it all, upon their return to the Islands, they come back to Molly’s to enjoy authentic barbecue and country cooking. Molly’s barbecue dishes are cooked on wood fires, and one can often see — and smell — the sweet smoke wafting from the restaurant’s large smoker 28 | DINING OUT | MARCH 10-16, 2013

that you just can’t get anywhere else.” Dining Out readers are the first to find out about some new items available at Molly’s starting this week to coincide with the BBQ and Seafood brand. Hearty appetites are required when taking on BBQ and Seafood Dinner For Two (market price), as the bountiful platter includes catfish, barbecue chicken, baby back ribs and snow crab legs. Diners also may choose from a host of additional sides (prices vary), including barbecue baked beans, cowboy ranch beans, potato salad, mashed potatoes, collared greens, coleslaw, fried okra and macaroni and cheese. Those looking for fresh seafood also are encouraged to try the newly introduced New Orleans Style BBQ Shrimp ($15.99). The dish includes a dozen juicy, jumbo shrimp prepared in a Cajun spiced butter sauce — don’t worry, it’s perfectly acceptable to lick one’s fingers after digging into the flavorful shrimp. “It’s a Cajun-infused butter sauce that coats the shrimp, and the sauce goes perfectly with rice,” Walker explains. “You gotta get a little dirty with it. It’s all about the butter!” Blackened Catfish ($15.95) is another new offering that is catching on at Molly’s. The flavorful fish is served on a sizzling platter atop a bed of oven-fried potatoes and comes with a zesty roasted pepper butter sauce — the perfect acBBQ and Seafood Dinner for Two (market price) companiment for dipping. “I totally expect these new items to go over perched right outside the front door.
