ood morning, Ono readers! For as long as I can remember, I’ve always been told to eat a good breakfast, and for the longest time, up until now, I've dismissed that notion and had a million excuses not to: there's no time to cook, no time to eat, no time to clean, and hundreds of emails to go through. However, in an effort to live a healthier lifestyle and boost my metabolism, I now make breakfast a priority. On a daily basis, my breakfast usually consists of a half cup of plain oatmeal and a fruit. However, when I’m lucky, I love to indulge in hearty breakfast foods that I’m not able to enjoy every day. This week, I bring to you a domination of breakfast wraps that reflect everything I could ever ask for in the morning. orn and raised in Laos, Luangkhot creates each and every dish through inspiration and experimentation with a wide variety of ingredients. Luangkhot made Hawaii his home about two decades ago and first opened JJ Bistro & French Pastry in Aiea in 1995, prior to relocating his restaurant in 1999 to its current home in Kaimuki. “JJ Bistro was primarily just a cafe where we were known for our desserts,” says Luangkhot, who has earned a grand reputation thanks to his famous Chocolate Pyramid. “Then in 2001, we added sandwiches, pastas and pizza to the menu because of the downturn in the economy following 9/11.” A prix-fixe menu soon followed, and in 2007, JJ Bistro underwent a major expansion because of its Four-Course Meal Special that reeled customers in like never before.

Priced at $24.70, this four-course feast begins with a soup or salad, be it Cream of Corn with Crab Soup or House Ginger Sesame Dressing. The meal continues with a Trio Appetizer, which features a Baked Lobster Avocado, Crab Rangoon and Shrimp Kataife. Then, engage your palate with an entree selection of your choice from an extensive list of edible masterpieces. “I highly recommend Baked Lamb Wellington (rack of lamb with red bell pepper and cheese wrapped in a flaky puff pastry and a side of mashed potatoes complemented by a black pepper cream sauce) or Lobster Pad Thai (stir-fried noodles with eggs and a citrus Xo sauce topped with Tristan lobster tail, which is world famous),” Luangkhot says, noting a $5 additional charge for these two dishes, along with Steak Brioche. Luangkhot says to take the opportunity to fill up on your four-course meal now, as a second dessert is added to the menu free of charge until April 15. And on the heels of the restaurant’s 14th anniversary, Luangkhot offers up more unbeatable deals, including half off the Seafood Combo ($53.80 for two, $107.60 for four, regular price) from March 18 to 24. Seafood Combo includes one pound of snow crab, mussels, clams and shrimp for two people, and two pounds for four people. “This special offer is part of our Hot Deals with Honolulu Star-Advertiser and we’d also like to thank our loyal customers for 14 years of support,” Lu-
angkhot explains. “In the past few months since we’ve started to serve an abundance of seafood, business has been great and the restaurant has been packed. Reservations are a must.” Earlier this year, Luangkhot debuted a Fishermen Feast menu, which plays up his seafood specialties — the main draw being lobster. “Lobster is one of the most popular seafood choices, and we have a great deal: You can purchase three tails for only $34.95. If you love oysters, you must try our Bake Oyster ($2.95 per piece, $14.95 for half dozen), a side dish, which features oysters with an avocado puree and chili mayonnaise. Melted mozzarella cheese also sits atop each oyster. Bake Oyster is a good choice for those who don’t like raw seafood,” he explains. Other highlights off the Fishermen Feast menu include Shrimp of De Day ($11.95 per pound), Let it Snow Crab (market price), Clam of De Sea ($12.95 per pound) and more. While the seafood shines on its own, Luangkhot takes pride in the sauces that accompany it. Diners may select from: World Classic (melted butter), Garlic Butter, Lemon Pepper and J’Jun Sauce (Cajun sauce made with chili, garlic and basil). “J’Jun sauce is very interesting and it’s my personal favorite,” Luangkhot says. “Fresh seafood is shipped in twice a week, mainly from Seattle, and we also get our lobster from Maine. We go through about 300 pounds of snow crab a week right now.” Although Luangkhot is the first to admit that continuity in high-quality cuisine is key, he also believes in the importance of change and variety. “We don’t want our customers to get bored, so we’re always thinking of new concepts, new dishes and ways to improve the menu here. Offering great deals and specials are ways in which I show my gratitude to my guests,” he says. In fact, a new special is Grilled Lobster Tails. This decadent dish is offered with the Four-Course menu only and costs $29.95 for one lobster tail and $39.95 for two. A rich and filling entree, grilled lobster tails are presented with a shiitake mushroom and garlic white wine beurre blanc sauce over fettuccine. “I love presenting new specials, but, of course, I must stay true to what started it all at JJ Bistro — the desserts. So, as another way to say thank you, all desserts will be 15 percent off from now until the end of April. This includes our cakes, too, but they must be ordered a day in advance.” Never in his wildest dreams did Luangkhot imagine his once petite cafe would now seat 120 patrons, and be at full capacity night after night. So, what’s in the works in the near future? “We will keep doing our best at JJ Bistro,” Luangkhot says with a smile. “I make every dish as if it was a signature dish. Everything we offer is from the heart — that’s the secret.”

Royal Chinese fare in full bloom

rom when I was a little girl to now, Royal Garden Chinese Restaurant in Ala Moana Hotel continues to be one of my favorite Chinese restaurants. Minced Pork served in Lettuce Wrap ($15.95)

Known for its traditional Cantonese-, Hong Kong-style cooking, Royal Garden also has a reputation for serving food that is fresh, delicious, creative and beautifully presented. The restaurant itself is clean and spacious, and during lunch you can order dim sum from the many authentic dim sum carts rolling through. The extensive menu offers a great selection of soup, seafood, duck, chicken, beef, pork, casserole courses, fresh vegetables, sizzling platters, rice, noodles and more. My personal favorite is Pea-par Tofu with Vegetable ($17.95), which is a casserole-like dish with soft deep-fried tofu mixed with a shrimp paste and served over a bed of spinach. Also popular, and a specialty of the house, is Minced Pork served
in Lettuce Wrap ($15.95) with an original sauce. There also is a new dish available as a special called Gum Yun Dai Ji ($20.95), which translates to “gold and silver scallop.” This dish features both deep-fried, crispy jumbo scallops with sesame seeds and stir-fried scallops cooked with onion, ginger, carrots, straw mushrooms and broccoli. Also, because of popular demand, owner Calvin Wong has decided to extend its March special through the end of April — enjoy 50 percent off Baked Rock Salt Ranch Chicken (regularly priced at $45) or Stuffed Top Shell with Seafood (regularly priced at $6.95). Both items must be ordered at least one day in advance, and you are restricted to one discounted item per party.
Wong, who was born and raised in Hong Kong and came to Hawaii in 1971 as a student, opened Royal Garden 28 years ago along with his brothers and chefs Johnny Wong and King Man Wong. “I enjoy eating, and my brother enjoys cooking and is a good cook,” he says, noting that chef Johnny learned his culinary skills from one of Hong Kong’s most decorated chefs Wing Hui, who now works at MGM Grand in Las Vegas. “My brother only chooses good ingredients. He’s very strict about quality.” That same top quality is found not only in the food, but also in the service and overall dining experience. Open for lunch and dinner, Royal Garden Chinese Restaurant also offers special banquet menus, and has two private rooms — one that can seat 10 to 50 people and the other for up to 20 people.

f there's one word to describe what Sekiya’s Restaurant & Delicatessen is all about, it would have to be comfort. From the friendliness each staff member exudes to the coziness of a dish that feels like a homecooked meal, it’s no wonder the Kaimuki Street eatery has warmed up Hawaii diners since the 1930s. A menu that’s as comforting as Sekiya’s — stocked with tradi-

($12.95). Saucy in both flavor and consistency, the soup-like stew cooks away for several hours to achieve its richness, and features quality chuck eye beef, potatoes, carrots and celery. Diners also will feel homey with a bowl of Nabeyaki Udon ($13.95) in front of them, which Morihara describes as “a more traditional Japanese dish.” This satisfying creation is filled with chicken, shrimp tempura, vegetables, egg, watercress, shiitake mushrooms and more. It is usually served with udon, but customers may request saimin, soba or somen noodles instead. “It’s a whole meal in itself,” says Morihara. Patrons also can’t go wrong with a classic Oxtail Soup ($14.95), prepared local-style and served with rice, tsukemono and hot tea. It’s easy to see that there’s plenty of comfort to go around at Sekiya’s.

ring up the topic of Korean food among friends and fellow foodies and more times than not, what immediately comes to mind are the smells and sounds of sizzling, barbecued beef and pork atop a yakiniku grill. Although many would, and rightly so, associate Korean cuisine with meat, it would be a tragic fallacy to assume there are no good Korean vegetarian dishes.
Quite the contrary, Korean cuisine places extreme importance on fresh produce and Korean restaurant 678 Hawaii offers a plethora of tasty, meatless options, eagerly inviting vegetarians to take part in its culinary experience every day for lunch from 11 a.m. to 4 p.m. “Every single meal begins with eight to 10 wonderfully prepared vegetable dishes,” says Steve Song, manager of 678 Hawaii. “These

KITCHEN INSIDER ver wonder what goes on behind the scenes at your favorite restaurant? Well, much credit goes to the many chefs, owners and managers who work diligently day in and day out to make sure Hawaii’s diners have a top-notch dining experience. This week, Dining Out gets the inside scoops from Pagoda Floating Restaurant’s executive chef and partner Jason Takemura, who gives us a little taste of Pagoda and shares just what fuels his culinary drive.
What are your culinary goals? What do you hope to improve on? My goals are to continue to be able to grow not only as a chef, but as a teacher. There are a lot of people that get so caught up in the stress and day-to-day operations that they forget about letting their staff grow as individ-

Who or what inspires you as a chef/manager/owner? What inspires me most as a chef/owner is the people we serve. The reason why I love being a chef is because I get to see the smiles on our customers faces when they eat one of our creations. If a customer has a special request or wants a dish modified to his or her liking, I am more than happy to do so. Without them, we have no job. I don’t know what I would do if I wasn’t a chef. What is your favorite dish on the menu? Why? My favorite item on the menu is our surf and turf: Sake Soy Braised Big Island Beef Short Ribs and Seared Jumbo Sea Scallops with Uni Butter. It’s served with grilled vegetables and wasabi mashed potatoes. Braised Short Ribs, when done right, are one of my favorite meats, and scallops are by far my favorite seafood. When I go out for sushi, you can guarantee that I will be eating uni to finish off my meal. This plate has it all. That’s why I chose those flavors. What is your favorite ingredient to work with? Why? For the past few years, I have been very into working with fresh fish. Depending on what type of fish you have, it can be prepared in many different
ways — from raw to marinated, grilled, steamed, poached, seared, etc. Not only can you prepare fish in many different ways, but you also can pair it up with an unlimited combination of different flavors that help to complement the fish, rather than overpower it. That takes a lot of skill to do it right. On our A la Carte dinner menu, we have nine or 10 fresh fish dishes using all of the above preparations. We try to showcase different local fish with different preparations and flavors. No two fish dishes on the menu will be alike.

Is there a dish that you create that’s not on your menu, but available upon request? At Pagoda, we just started our new a la carte menu this past week. So the answer to that at Pagoda, is no. But at Hukilau Honolulu, where I also oversee the kitchen, we do it on a regular basis. We have so many regular diners that come in on a weekly basis. We have to be able to accommodate them in that way. It’s not uncommon to have someone email me that they are coming in for lunch and want something special that is not on the menu. Normally after a while, those items actually make it onto our menu.

arked on the corner of Kapahulu and Kaimuki avenues is Blue Water Shrimp and Seafood Company, a food truck that pushes the boundaries when it comes to seafood. Known for its fresh fish and seafood plates at affordable prices, Blue Water Shrimp and Seafood Company is open daily for breakfast, lunch and dinner. And while Blue Water Shrimp and Seafood Company may not initially catch the attention of vegetarians, owner Gilbert Sakaguchi says the eatery's Vegetarian Omelette is geared especially toward non-meat eaters and the health conscious, with an emphasis on local. This is a top-pick, guilt-free breakfast delight.
Blueberries accent the dish and are considered a premier fruit as they have the highest antioxidant capacity of all fresh fruit, aid in reducing belly fat, help promote urinary tract health and neutralize free radicals in the body.
Low in calories and a safeguard against cancer, mushrooms provide an abundance of flavor and an added texture to the dish. According to Sakaguchi, the mushrooms are grown in the Islands.
Nutrient and energy dense, this three-egg omelette features locally sourced eggs packed with vitamins, proteins and fat. Choline and selenium are just a couple of the important nutrients found in egg. Choline is necessary for healthy cell membranes within the body and beneficial for good mental function and memory. Selenium is an essential mineral for a strong immune system and it is a powerful antioxidant.
Spinach aids in digestion, prevents constipation, maintains low blood sugar and curbs overeating. Rich in antioxidants, this veggie also helps to combat the onset of osteoporosis and high blood pressure.

h, the pupus at Hee Hing. Tender pockets of goodness swimming in light sauces, fresh vegetables in crispy coats, sweet shrimp in crunchy pockets and dim sum. Oh, yes, the dim sum — dozens of types all for the ready. The Dim Sum Combo ($9.25) includes four shrimp dumplings, four pieces of pork shumai and three half moon cakes. Each is fresh, flavorful and, fortunately, plentiful. Another very tasty appetizer option is Mandarin Pot Stickers ($5.25). Outstanding. A mixture of pork, mushrooms and more comes together to form a wonderfully moist pocket of food. Dip into the ginger vinegar sauce and it gets even better. A couple of crunchy options, if that's what
you desire, are Shrimp Pouch ($4.50) and Crispy Kau Chee ($4.25). The pouch is an incredibly crispy yet light. The shrimp is naturally sweet and moist, and the mayo relish dip provides a creamy element that matches well with the crunchy exterior. Crispy Kau Chee is a similar dish, but with chopped pork and onion, and a sweet and sour dipping sauce. Which to chose is a matter of taste. Fortunately,
onion with a light hoisin base. It's sweet, crunchy and a great way to play with your food without parental harassment. Two more appetizers to note. Golden Fried Spring Rolls ($4.95) are a nice vegetarian option for diners. Mushrooms, cabbage and long rice in a crispy shell are dipped into a sweet and sour sauce to
create a snack even a carnivore would appreciate. Finally, Salt and Pepper Shrimp ($14.95) is coated in salt and pepper, deepfried, then quickly sauteed. The result is a juicy and slightly spicy starter that also allows for plenty of finger play. It's a bit messier than the chicken wrap so parental discretion is advised.

ust like the melting pot of cultures that Hawaii embodies, Asian Mix incorporates flavors from around the Pacific Rim as customers are treated to a vast array of Chinese and Japanese cuisine infused with local favorites. Located conveniently at the corner of Beretania and Piikoi streets on the ground level of the new Safeway building, Asian Mix serves up quality cuisine at affordable prices without the long waiting time usually associated with typical sit-down restaurants. The eatery opened its doors last May under the ownership of Daniel Leung, and his skilled chef and staff — the same team that operated Panda Cuisine near Ala Moana for 20 years. “We’ve been running a sit-down restaurant for 200 people until we decided to simplify things a bit,” says Leung when asked about the motivation for launching Asian Mix. “Whatever we’ve done before, including preparing upscale Chinese food, we do the exact same thing here — ex12 | DINING OUT | MARCH 17-23, 2013
cept that we’re trying to do it in a fastfood environment. But you still get to enjoy quality food.” While the majority of Asian Mix diners order items to go, the restaurant offers plenty of clean seats and tables outside for customers to enjoy a delicious meal before heading home or to work. “The idea is that people can come — there is plenty of free parking — and pick something up before they get on the freeway to go home, or head back through town,” says Leung. “We believe that we’re the most reasonable place in town.” Upon entering Asian Mix, customers immediately notice the large display of freshly prepared Roast Duck Hong Kong Style ($22 whole, $11.50 half). Leung makes sure to utilize the best ducks available in order to provide more meat, and the birds’ crispy golden skin and alluring aroma satiate the senses. “Local Flavors” plate lunches highlight the restaurant’s eclectic menu, which fea-

The katsu features two large pieces of the succulent chicken along with a homemade dipping sauce, while the large, juicy shrimp are cooked to order in a signature garlic butter sauce. “We have a chef who prepares each Garlic Shrimp order as it comes in, and pan-fries the shrimp so they don’t dry out

Customers also may choose to build their own Asian Mix Plate with a choice of side dish and varieties of entrees ($5.75 for one choice, $7.45 for two choices and $8.95 for three choices). Leung notes that eight to nine choices are available each day for mix plate selections, and customers are able to order and go in a matter of minutes. Asian Mix offers much more than just entrée plate selections, including an array of soup and ramen choices. Special Won Ton Noodle ($5.95) soup features diced pork and shrimp prepared fresh along with vegetables, barbecue pork and special noodles imported from Los Angeles. Customers also like Miso Ramen ($8.50), which includes char siu pork and a miso base that are both imported from Japan. The authentic ingredients and classic flavors meld perfectly to satisfy diners with each hearty spoonful and slurp. “The won ton filling includes shrimp and
pork that are hand-chopped, so you can notice the texture compared to some places that just use a meat grinder,” Leung says. “We also have located the exact same noodles that they serve in Hong Kong, and the price is the best in town.” Asian Mix also offers party trays in regular (12 or more people) and large (20 or more people) varieties for catering all sorts of events. Customers may choose from sides ($22 regular and $32 large) including Chow Fun, Gon Lo Mein and Fried Rice, as well as popular entrees ($25 regular and $35 large) such as Sweet & Sour Pork, Orange Chicken, Tofu with Vegetables and Zucchini Chicken & Mushroom. Most orders can be fulfilled in less than an hour, but with orders for more than 50 people, Leung asks for at least one day’s notice. It’s what Chen describes as a loaded omelette wrapped in a tortilla. So, wrap your head around this: Imagine fluffy scrambled eggs paired with applewood smoked bacon, Swiss, American and Cheddar cheeses, onions, bell peppers and mushrooms nestled in a spinach tortilla, and complemented by a homemade salsa and a side of skilletbrowned potatoes and fresh ’Nalo greens. “When we were conceptualizing this dish, we definitely wanted to offer something that would speak to the Westin guest, which is why we use a spinach tortilla and a lot of fresh vegetables. It’s a healthier option,” Chen says. “This is one of the most popular items on our breakfast menu. People love wraps, and this breakfast wrap is actually an original item here at Beachhouse, and it’s still here — that’s because people keep asking for it,

This 24-hour coffee shop caters to all patrons regardless of schedules and diverse appetites. With breakfast, lunch, dinner and late-night options, there’s always something available for you. On my most recent mid-morning visit to Kissaten, I wanted nothing more than a hearty breakfast that I could really sink my teeth into, thus making way for Kissaten’s Breakfast Burrito ($8.25). “We offer a lot of fast, on-the-go dishes, such as our homemade granola, but our Breakfast Burrito is a heartier option,” says Kissaten’s senior partner Neysa Taba. “We’ve had it on the menu since we
opened two years ago and it remains a favorite.” Peek into this breakfast favorite and unwrap a myriad of flavors, which permeate from the spinach tortilla wrap filled with scrambled eggs, breakfast sausage, mushrooms, spinach and tomatoes. I’m in love with this wrap, as it is a healthy alternative and provides a multitude of nutrients. Organic mixed greens splashed with the eatery’s signature balsamic soy vinaigrette accompanies the dish along with servings of sour cream and pico de gallo, composed of fresh tomatoes, red onions and lemon juice. “People like to spread these toppings onto their burrito, and the pico de gallo is very refreshing,” Taba adds. But Jade Dynasty in Ala Moana Shopping Center offers Chinese-inspired desserts that are light, tasty and prove to be the perfect ending to your meal. Each dessert is served dim sum-style, which means a perfect sharing opportunity and perfect portions each time. Walnut Mochi Cake ($2.95) features three rectangular mochi pieces topped with a sugared walnut. While previously a specialty item, Walnut Mochi Cake was so popular with guests that general manager, Gary Chan, decided to add it to the regular menu. response was from the locals.” And it’s been a big hit since then. Silken Tofu with Ginger Nectar ($2.95) is a traditional Chinese dish that is not only tasty, but also very good for you. “It’s a roadside dessert,” Chan says. “I remember when I was small, people used to push carts selling it.” The tofu is cooked in a container and served in a bowl for individual servings when the tofu is the right texture. And another great thing is that the tofu is made inhouse. Ginger nectar sauce is poured into the bowl on top of the tofu. The lightness of the tofu makes even a full tummy relax, and the ginger nectar sauce aids in digestion and calms your stomach down. Mochi is a common theme for many dim sum desserts at Jade Dynasty, but really, who’s complaining? Spring Mountain Coconut Buns ($2.95) have a flaky mochi exterior with coconut and haupia sweetness on the inside, and it’s also easy to eat with your fingers! There are so many menu choices at Jade Dynasty when it comes to dessert, and most are only $2.95. So go ahead and try as many as you like!

iolet’s Grill has been a go-to spot for local Japanese favorites for more than 60 years. Joey Suehisa and her sister Cindy took over the restaurant in 1998. “My aunty was here first, and then my brother took over, and then we bought it from him,” Joey explains. “My aunty needed help, so we decided to come and help her. And after that, we just stayed. We like it here.” From cooking the food to serving customers, the sisters are busy in all aspects of the kitchen. “Cindy and I — we do everything,” Joey says. The two learned to cook from the chefs that were here when their aunt owned the Server Stephanie restaurant. Chang with Joey and Cindy also are Furikake Salmon responsible for creating new dishes at the restaurant. But Joey admits that they have a little help with that, as they draw inspiration and take suggestions from restaurant employees and family members. “We get ideas from other people that tell us about (dishes),” she says. “When they tell us about something that sounds good, we will try it out.”

The restaurant serves up local favorites with a strong influence of Japanese and Okinawan cuisine. “The Japanese and Okinawan foods are really popular with our customers,” Joey says. For a taste of these flavors, she recommends Pig Feet Soup ($14.95), which is flavored with mustard cabbage and daikon. And one dish that has garnered rave reviews is Nakami Chanpuru ($13.95), a pork stir-fry that features a combination of mustard cabbage, carrots, ginger and garlic. The fish dishes at Violet’s Grill also are among the most popular. Customers can’t go wrong with the Furikake Salmon ($16.95), which is served with rice and tsukemono. Or try Steamed Opakapaka ($16.95). The dish is bursting with flavor, as it is seasoned with sesame oil, shoyu, ginger, parsley and green onion. Joey says that the restaurant has a steady following of regular customers. And for these regulars, nothing will keep them away. The entire shopping center has been undergoing renovations for the last couple of months, but many still frequent the eatery for their favorite dishes. But, along with the exterior renovations, customers also can expect some changes inside Violet's Grill, too. “We are trying to fix up our menu,” she says. “We do have several newer items that we will put out.”
e all know that Hawaii is a melting pot of different cultures, so it’s no wonder that Italian restaurant Il Lupino decided to take a famous local breakfast classic and put an Italian spin on it. While it may look like your typical Loco Moco, this one is quite different. The burger patty is not actually a burger, but a meatball patty. It’s made with the same veal, pork, beef and Italian seasonings that go into Il Lupino’s special meatballs. The gravy is not the traditional brown gravy, either. It’s made from marsala wine and Hamakua-grown mushrooms: shiitake and what appear to be pioppini, both meaty and robust with a hint of smokiness, which

aving recently undergone various kitchen renovations and adopted a new menu, Tsunami is a crossroad between relaxed casual and sophisticated contemporary. The bar and lounge aims to serve the highest quality Hawaiian regional cuisine with a fresh, contemporary twist. “Before, we used to offer primarily just bar-style food,” says Rich Shibasaki, manager of Tsunami. “Now we have a much more refined menu.” Along with a new menu, the revamped Tsunami kitchen now falls under the jurisdiction of newly appointed chef Wade Ueoka. Formerly the chef at Alan Wong’s for 17 years, Ueoka has hand-crafted a delectable new menu for diners to enjoy while keeping the theme of comfort bar and lounge food. “Eventually I would like to open up my own restaurant,” explains Ueoka. “Tsunami agreed to give me the great opportunity to create my own menu and experiment Beer and Nuts ($12)

with different dishes to maximize unique flavors.” Since launching the new menu and venue last January, Tsunami actively experiments with new weekly specials such as natto and uni pasta, which highlight the plethora of farm-fresh produce available in Hawaii. To continually deliver beloved local favorites with a creative, contemporary flair, Ueoka encourages the use of local farmers for fresh produce and other ingredients. “Using healthier, better quality ingredients and cooking techniques is what I am used to,” says Ueoka. “Our customers really have embraced the new menu because they recognize what those elements will do for their dining experience.” One such standout dish is Ueoka’s very own take on Tonkatsu ($16), which is meticulously and lovingly slow-roasted before fried to ensure the meat is tender and juicy. The dish also supports local produce by incorporating braised cabbage as well as a unique mustard katsu sauce. Another menu favorite is Grilled Kalbi Shortribs ($18), which comes with succulent grilled eggplant and a refreshing kimchi potato salad. For the vegetarian, Tsunami offers a tasty meatless option with Ho Farm Vegetable Poke ($8), which uses fresh produce items such as okra, long beans, tomato, long squash and cucumbers intermingled in a sweet shoyu vinaigrette. “We pride ourselves in supporting the local farmers and businesses,” says Ueoka. “All of our ingredients have come straight

from the source unlike imports which have had to travel long distances from the Mainland.” In addition, Tsunami also boasts a specially made, in-house beer called “Hi Beer.” Diners not only enjoy the beer as a refreshment, but Chef Ueoka and his team often use the hearty brew as a cooking ingredient to braise pork belly and other meats. As the night progresses, diners will notice the music grow slightly louder and the atmosphere more relaxed. “Tsunami is great for anyone from business professionals to those in the older crowd,” says Shibasaki. “It really is a place for anyone who enjoys good food and a nice ambiance.” March 20 through 27, Tsunami will feature a Hot Deals Hawaii offer at StarAdvertier.com.
