appy Easter, Ono readers! Today’s the day when Easter baskets burst at the seams with sugarfilled goodies, and I can’t help but relish the boxes of neoncolored marshmallow Peeps and chocolate marshmallow rabbits that sit before me. The hard-boiled eggs are dyed in pastel hues perfect for spring, and have been hidden along with a variety of plastic eggs filled with candies. Get your baskets ready and let the hunting begin! But why not break away from tradition this year and do away with the anticipated sugar high? Instead, fill your Easter table with “eggs-travagant” selections centered around eggs. Sweet or savory, the following Ono, You Know establishments have just what you need to stir up “eggcitement” this Easter.

Located at Ala Moana Center, this immaculate pastry shop has perfected the recipe for success, as each sweet treat consists of equal parts French flavor and Japanese craftsmanship. Head chef Akiko Kimura utilizes premier ingredients, most of which are shipped directly from Japan, and it only takes one look into the pristine glass cases filled with cakes, pastries, drinks and more to know that these edible works of art are second to none. Take for instance, three “eggcellent” desserts, which are perfect for today and every day. Trust me, Choux a la Crème ($2.80), Tarte Aux Baies Sauvage ($4.85/slice) and Crème Caramel ($3.50) will take your sweetest cravings to new heights. t’s 8 a.m. at Nice Day Chinese Seafood Restaurant in Liliha Square Shopping Plaza and loyal patrons have already formed a line at the pick-up window outside the restaurant, all to get their hands on the restaurant’s impressive selection of dim sum dishes that are available for takeout daily.

Fast-forward to noon, and the buzz of boisterous chatter from eager diners has gravitated indoors and permeates the 150-seat establishment accented by Chinese lanterns hanging from the ceiling. Servers dressed in traditional Chinese-style blouses and black slacks roam the restaurant pushing carts filled with dim sum delicacies, such as Steamed Char Siu Buns, Look Funn Rolls, Har Gau, Shrimp Siu Mai, Custard Tarts and more. And that’s not all. Nice Day also boasts a menu that includes close to 200 a la carte options served family-style. “There’s more than 30 items on our dim sum menu,” confirms restaurant manager Shirley Cheng. “That’s what brings a lot of people in, but most customers order from the regular menu, too.” There’s proof in the belief that good food brings people together, and Nice Day Chinese Seafood Restaurant specializes in Cantonese-style fare, with some of the most highly requested items being Garlic Deep-Fried Chicken ($12.95), House Special Garlic Fried Rice ($10.95), Long Beans with Minced Pork ($9.95), Steamed White Fish with Ginger and Onion ($11.95) and Mixed Vegetables with Tofu ($8.95). “Everything is made fresh,” Cheng explains. “Garlic Deep-Fried Chicken is popular because people like the red pepper, diced green onion and crushed garlic chips that we sprinkle over the meat. It brings a lot of flavor to the dish. “Another tasty dish is Long Beans with Minced Pork that we stir-fry. It’s been a top-seller for a long time.”


According to Cheng, House Special Garlic Fried Rice also is considered a staple, and pairs well with an assortment of entrees. In House Special Garlic Fried Rice, morsels of char siu, shrimp, carrots, green peas, onions and egg are blended effortlessly into the tasty rice — always a perfect addition to any meal. And Steamed White Fish with Ginger and Green Onion seems to appear constantly on every table, so Dining Out asked Cheng the secret behind this dish’s popularity. “The meat is very tender,” she quickly responds. “And the seasoning is very good.” Quite simple actually, the fish is doused in a special shoyu sauce and garnished with fresh slivers of ginger and green onion, which give way to an enticing aroma and a treat for any palate. Nice Day Chinese Seafood Restaurant also appeals to every appetite, especially non-meat eaters, by offering vegetarian entrees such as Mixed Vegetables with Tofu, which features a myriad of vegetables (that can change daily) mixed with cubes of fried tofu. “We’ve been in business for almost five years, and we’re very fortunate that we’ve been consistently busy. We serve Chinese comfort food and a lot of locals enjoy it,” Cheng says with a smile. Despite the packed premises, the restaurant staff remains calm under pressure, unfazed by the full house. It seems as if they’ve got it down to a science. “Our staff is used to this. They work quickly,” Cheng adds. It’s evident that Cheng and the entire Nice Day ohana want to make sure that the dining experience lives up to the restaurant’s name. “We want our customers to always have a nice day,” she states. Nice Day Chinese Seafood Restaurant also is able to accommodate catering requests and large parties. “We have special dinner menus created especially for larger groups, and we have private rooms where guests can hold gatherings,” Cheng says.

But before you place your order, be sure to look up at the chalkboard of about a dozen original, limited-time offerings. Among the recently added specials are Salt and Pepper Squid ($12.95), which is deep-fried for a crunchy exterior while the meat is nicely tender inside; and U-10 Scallop Mushroom Bok Choy ($17.95) consisting of super jumbo size scallops, shiitake mushrooms and baby bok choy in a creamy garlic and white wine sauce. There also is Duck Leg Ramen ($11.95) with Japanese ramen noodles and freshly-made fish broth, and served with mustard cabbage, shiitake mushrooms and a very tender and flavorful quarter-leg that has been roasted and braised for at least three hours. Little Village also recently started serving Shangri La, an award-winning freshly brewed flavored iced tea. With the Downtown business district just blocks away and late-night hours (including to midnight on Fridays and Saturdays), there’s a constant flow of customers ranging from business professionals to families and friends, as well as tourists who make the venture into Chinatown. The interior is not your typical Chinese restaurant, with guests walking through the door and stepping into a ‘little village’ complete with bridges and even sounds of birds chirping overhead. “I think the thing that separates us, besides the food, is our very friendly service and atmosphere,� notes company vice president David Chang. “For our longtime customers, please come back and rediscover the restaurant; and for new customers, come and give us a try.�

hen it comes to food, sometimes it just hits you in the face. No, not like a clown wielding a pie, but the reason we eat. We can go on and on about location, ambiance, service … but the reason we eat is quite simple: nourishment. It would serve us well if cooks and chefs would keep that fact top of mind.

I

t’s Wednesday, and the lunch rush has yet to explode into Ichiriki Japanese Nabe Restaurant on Piikoi Street, so I snag a corner booth near the window and consider it the perfect time to catch up with MMA fighter and multi-sport athlete Egan Inoue over pots of hot nabe and a bountiful selection of fresh appetizers. Best known for its nabe (a term referring to an array of Japanese steamboat or one-pot dishes), sukiyaki, shabu shabu and more, all of which center around healthy ingredients, Ichiriki promised a lunch full of everything a fitness enthusiast could ask for — protein, carbs and veggies! “I’ve been to Ichiriki before and my family loves it here. Nabe is always healthy and works well with my diet,” says Inoue, a two-time jiu-jitsu world champion, five-time MMA world cham-

pion and MMA bodyweight training expert. “To be honest, my diet is not that strict. I love sweets and I try to get those in before 2 p.m. so that I have the rest of the day to burn it off. As for carbohydrates and bigger meals, I usually eat those early on in the day as well.” With chopsticks in hand, Inoue was ready to tackle the interactive feast before him, as Ichiriki’s friendly staff presented Kami Ichiriki Nabe with Ribeye and Kobe Beef, Ginger Nabe, Avocado Maguro, Tofu Salad, Edamame, Mushroom Medley, Kimchi, Mozuku and Fried Garlic Shrimp. Served in a bowl fashioned from washi paper, Ichiriki Kami Nabe features a shio (salt) broth complemented by a platter of ingredients to add to the broth, such as enoki mushrooms, chives, bak choy, shrimp, salmon, chicken, aburage, tofu,

sausage and a bamboo tube of tsukune — a chicken-andpork paste scooped into meatballs — not to mention the tender beef. “The beef literally cooks in seconds, and I love to dip it in the ponzu sauce,” says Inoue, who wasn’t the least bit ashamed to enjoy every morsel of food — after all, he does burn thousands of calories each day. “I love everything here,” he continues. “The Garlic Shrimp is very tasty and it has a ton of garlic chips, which I love. Enoki mushrooms also are another favorite of mine, so the Mushroom Medley is great. This is a place you can eat at where it won't interfere with any diet.” As an athlete and entrepreneur, Inoue opened the doors to Egan’s Fit Body Bootcamp in September 2010 in Manoa Marketplace. tional locations later, Egan’s Fit Body Bootcamp continues to offer the most effective and innovative fitness program through 60-minute workouts held Monday through Saturday that has its participants seeing results in no time. “Bootcamp is doing very well; we’re very busy. I would say we have about 300 students at the moment, who range from all ages and fitness levels,� Inoue states. “I try to teach one class per month at each

location (Downtown, Manoa, Kailua and Waipio), and then every Wednesday I train the instructors. With a dish such as Steamed Manila Clams, which Imada says is complex in preparation and technique, he is able to intertwine a myriad of exotic ingredients and flavors, while keeping everything authentic.

The foundation for this dish is found in just under a pound of fresh Manila clams steamed to perfection. According to Imada, Steamed Manila Clams have been on the menu since the restaurant’s inception and is well received by guests.

Thai basil, sambal and Sriracha chili sauce permeate the dish and give it an extra kick of intensity.

House-made fish fumet and a touch of butter round out the intense Thai flavors, making the dish more well-rounded to the general palate.

The dish incorporates a wide assortment of Thai-influenced flavors and ingredients, including Thai bird chili, kaffir lime leaves, lemongrass, shallots, garlic and cilantro. “These flavors combined with proper cooking techniques are what make up this incredibly flavored dish that’s always received outstanding reviews,” Imada says. or many locals, Waikiki has become an Atlantis of sorts, serving as “the lost city” for those who avoid its congested roads, parking problems and tourist sightings at all costs. habu Shabu House has spent nearly a decade providing a home for diners to enjoy healthy Japanese cooking, where hearty and satisfying menu selections are prepared right at the table. Conveniently located on Kapiolani Boulevard, Shabu Shabu House offers an assortment of fresh meats, including beef, pork, chicken, lamb and various seafood options in addition to fresh vegetables and satisfying side dishes. Customers prepare the food by submerging the thinly sliced meat or vegetables in a pot of boiling water flavored with seaweed, and swishing it back and forth several times. The term shabu shabu directly translates to “swish swish,” mimicking the sound one makes while cooking the food. Shabu Shabu House also allows customers to prepare their favorite items sukiyaki style, which involves cooking in a thicker shoyu-based sauce. Sukiyaki cooking provides more flavor to the broth, and was introduced to give diners additional freedom

Upon cooking the items, customers may dip their favorites in assorted savory sauces and eat them along with rice, which also helps to tie all the flavors together. Shabu Shabu House supervisor Grant Murata explains that the restaurant offers the traditional style of shabu shabu cooking, whereas some competitors call themselves shabu shabu while actually offering nabe-style

cooking, which utilizes different flavored broths. “Shabu Shabu House was the first to feature the idea of one person, one pot to cook the food in,” Murata says. “Usually, in the old days, shabu shabu came in one big pot and everybody shared. This style is different than “hot pot” cooking in that we use the traditional, simple broth — we try to stick with the original flavors and keep dishes healthy. The restaurant has evolved to take on

its own style, and while remaining traditional, people are able to determine what they enjoy as they experiment with all the flavors.” Shabu Shabu House continues to introduce new items for customers to enjoy, including Kurobuta Pork ($15.95 shabu shabu set at dinner and $11.95 lunch, and $18.95 for sukiyaki set at dinner and $14.95 lunch). very fatty and is lauded for being rich in vitamin B-1. “It’s higher quality pork, and we really wanted to bring out the flavor of it through shabu shabu,” Murata says. “All you need to season it is salt, pepper and sesame seed oil sauce. We found that you’re able to bring out the flavor of the pork that way without being overwhelmed by other seasonings. Though people may be afraid of eating pork, it’s actually healthier than beef, and that’s why we wanted to feature a

new, healthy pork dish on our menu.” Murata also explains that customers can look forward to enjoying Kobe Ribeye beef in the near future. General manager Kazuyo Makita recommends Kobe Set B ($34.95 at lunch and dinner, add $9 for larger portion). The dish features a platter of supreme tasting Kobe Style Beef “washugyu” along with additional plates of assorted vegetables, fresh tofu, arabiki sausage, udon noodles, three sauce choices

(ponzu, ginger and sesame seed oil), white or brown rice and a piece of mochi ice cream for dessert. Diners also may add assorted sides to their cooking creations, including Ito Konnyaku ($3.95), special Japanese noodles that are free of fat and cholesterol and aid in the digestion process. Customers also choose from additional favorites including Chinese cabbage, broccoli, red bell pepper, zucchini and pumpkin ($3.95 each). Shabu Shabu House fea-

tures new dessert selections, including mochi ice cream ($1.75 each piece) available in strawberry, mango and vanilla. Green Tea Ice Cream ($4.95) also is available, and the treat is specially made by Cold Stone Creamery with a unique recipe that features more green tea and a rich flavor, topped with azuki beans. first boiled, then baked with lemon butter for a flavor you can smell. The lobster is cooked in its shell to retain its juiciness, and accompanied by buttery deliciousness and a hint of lemon. The lobster is part of the buffet due to customers’ request and it’s the main feature for seafood lovers. If you’re a land-lover and seafood is not your thing, turn your sights on the prime rib. It’s marinated and baked fresh everyday, wrapped up with carrots, onion and basil. The long cook time and slow heat creates the perfect color and texture. It’s served with the typical

condiments such as au jus and horseradish and can be paired with items on the buffet line including mashed potatoes. Those travelling to Hawaii from Japan are treated to this American classic, since prime rib is not an item typically found there. But really, you can’t go wrong with any offering at Five Star International Buffet. All have been carefully selected to satisfy the tastes of its international and local clientele. The buffet is truly a culinary fusion; there is something for everyone. And everyone can appreciate the fresh, never frozen, ingredients.

The Cowboy Rib Eye ($56) is wet-aged for 28 days — a process that involves sealing the meat in an airtight Cryovac bag to break down the enzymes and tenderize the meat. It is broiled at 1800 degrees Fahrenheit. It is then transferred to a 500-degree plate atop sizzling butter and sprinkled with chopped parsley. Another dish to consider — Sweet Potato Casserole ($11) is listed as a “side” but also can double as dessert (ask for a scoop of vanilla ice cream). Mashed sweet potatoes are placed in a dish, and once ordered, a mixture of pecans, brown sugar and butter is placed on top before it gets put under the broiler until golden brown. For fine dining on a budget, Ruth’s Chris currently offers a Sizzlin’ Prime Time Menu from 5 to 6 p.m. daily. It comes with a choice of a starter, entree, side and dessert. Depending on the entree chosen (which comes from two different lists, one with smaller cuts of meat and the other for larger appetites), the price is a very attractive $44.95 or $55.95. Stop in daily from 5 to 7 p.m. to indulge in Happy Hour specials in the restaurant’s lounge, or make a reservation (highly recommended) for Wednesday nights where you can enjoy a bottle of wine for 25 percent off.

hether you’re looking for a relaxing lunch break or a place to host a banquet party, The Mandalay is the perfect place to go. Located on Alakea Street, the restaurant serves up traditional Hong Kong and Cantonese food in an elegant setting. During lunchtime, dim sum is a popular option. “All of our dim sum actually is cooked to order,” explains Linda Chan, who coowns the restaurant with husband Larry. Many restaurants pre-cook their dim sum dishes and showcase them around the restaurant in carts. But the Chans chose to stray from this path.

The two formerly owned Chinese food chain Eastern Garden, which had locations in Aiea, Kaimuki, Kaneohe and Waikiki. “As we were getting older, we just wanted to concentrate on one,” Linda says. The two had a long path to become the successful restauranteurs they are today. “My husband and I were born and raised in Hong Kong,” Chan says. “When we came here, we had limited English-speaking skills, so we both ended up working in restaurants.” Both Linda and Larry were employed as wait staff in local restaurants, working their way up the chain before startOi Ling with ing the successful Eastern Sauteed Seafood Garden venture. in Taro Basket The Mandalay provides an elegant venue that is perfect to play host to any of your special events. It has two floors — the main dining room downstairs can seat about 190 people, and the second floor can seat approximately 130. There is validated parking available across the street from the restaurant at Bishop Square MondayFriday after 5 p.m. or Saturdays and Sunday all day. During business hours, guests also can park at Alii Place for a fee.

“We found that if the dim sum is cooked to order, it is a lot fresher than if it were sitting in the cart,” she says. “We believe that when cooked to order, the quality of the dim sum is better. “Dim sum means 'touch the heart,'” she says. “The reason why they say that is because all the dim sum, every piece, is handmade.” Some dim sum options include Baked BBQ Pork Pastry ($3.50), Baked Egg Tarts ($2.50), Deep Fried Vegetarian Spring Rolls ($3.50), Steamed BBQ Pork Bun ($3.50) and Deep Fried Dried Shrimp Puff ($3.50). Other than dim sum, Chan says that Peking Duck with Bun ($32; $16.50 for half) is the one the most popular dishes. “We roast it and we serve it with the skin, with the bun, and with plum sauce and cilantro,” she says. “We can either chop it up and serve as a whole duck,

Who or what inspires you as a chef/manager/owner? The first thing that inspires me is having the guests choose our restaurant as the place to eat, because there are many options out there. Then, ultimately they have the most enjoyable dining experience — meaning that our team exceeded all of their expectations. My second inspiration is my 4year-old daughter, Makayla. When we sit down at the dinner table, having all distractions temporarily off to encourage conversation, she always asks, “How was work today? What did you do at work today?” I look forward to being able to give her a great answer.

If you could serve food to a celebrity, who would it be and why? What dish would you serve? I guess I have to say Guy Fieri of Diners, Drive Ins & Dives, because he hasn’t put Big City Diner on his show yet. I would probably make him baby back ribs with our mango guava barbecue sauce, along with some fried rice. I think that would hit some taste buds. I would then finish it off with some

Fried rice because it’s just so versatile. The original way is always satisfying with or without extra eggs. Then, we have our famous Kim Chee Fried Rice that you can have without meat and without vegetables, if you like, and you can add other stuff like tofu, chicken, steak — the possibilities are endless. Is there a dish that you create that’s not on your menu, but available upon request? Not really, but we do have a rotation of weekly specials and we do try our best to accommodate all requests, at any time. However, in our catering department, we can create almost anything that is requested. We do everything that’s on our menu plus many more requests. I would say about 60 percent of our catering options is not on any regular menu.

Buko Pandan ($4.25), Max’s of Manila’s second most-popular dessert, might be a lesser-known dessert, but after one bite you’ll realize what all the

fuss is about. Also perfect for Easter, Buko Pandan comes in a light shade of green that incorporates coconut mixed with pandan leaf (screwpine) gelatin and tapioca. Stir that in with a hearty helping of fluffy cream sauce, macapuno ice cream and rice flakes, and this dessert is ready to go — straight into your mouth, that is. “We get the flavor from the pandan, and that’s basically the flavor of the gelatin mixed with the young coconut meat, and we mix it with a little cream and milk,” San Luis says. “This is not too sweet compared to Halo-halo.” Max’s puts its own spin on turon, better known as Banana Lumpia ($4.75). It features saba banana and jackfruit in a crispy spring roll-type wrap, which is covered with brown sugar and sesame seeds. Add in some ube and macapuno ice cream, and this dessert will have you singing its praise once you’re done eating it.

“I love to cook what I like to eat,” says Brian Chan, regarding what inspires the menu at his eatery, Restaurant Epic. As the chef and owner, Chan takes pride in meticulously hand-picking each menu item. Interestingly, however, what diners find on the menu one day may vary the next time they visit. Unlike most restaurants, Restaurant Epic typically changes its menu every four months. “I have something I like to call ‘food ADD,’” says Chan. “My

tastes and culinary interests are all over the board and are constantly evolving, so I like my menu to reflect that trend as well.” Such versatility and adventurism are what make up Restaurant Epic’s core identity. “There is no real one genre of food here,” explains Chan. “It is pretty much whatever I feel like my cus-

tomers will enjoy and appreciate.” That being said, in recent years, the cuisine at Restaurant Epic has incorporated many Southernstyle types of cooking. “I like the flavors of Southern comfort food,” says Chan. “Its big flavors, long cooking processes and the simplicity of the cuisine are what draw me.” While Restaurant Epic’s menu does include some Asian dishes, such as Miso Glazed Wild Salmon ($20) and Mongolian Grilled Pork ($16), much of the dishes are Southern-influenced, oftentimes with a slight unique twist. “I don’t like to burden my plate with 20 different ingredients,” says Chan. “My goal is to have the food be simple, but tasty.” Rather than have its diners stick to one main course the entire meal, Restaurant Epic encourages a sharing dining experience. The menu is divided into two sections: small tapas and large entrée dishes. “What we are seeing lately is a lot more sharing between diners,” says Chan. “To get the full Restaurant Epic experience, it’s ideal to order your own dish and share a few small plates or just order a variety of small plates.” One such popular item is Escargot Poppers ($8), a small plate of sautéed escargot in garlic butter, chopped mushrooms, red wine and fresh herbs inside a baked puff pastry. Another noteworthy dish is Berkshire Pork Belly Confit ($9), cured pork belly, which is cooked in pork fat for 12 hours and served on a bed of apple cider

and bacon braised collard greens with a bourbon maple syrup drizzle. Those with a sweet tooth will appreciate the restaurant’s many unique dessert items. One of the most popular desserts is Baked Stuffed French Toast ($8), which combines Hawaiian sweet bread with mascarpone cheese, Nutella spread, strawberries and toasted macadamia nuts.

Diners also may choose to indulge in any one of Restaurant Epic’s signature cocktails. “We do a lot of infusions in house with unique ingredients like basil or bacon,” says Chan. Favorite drinks include Bacon Bloody Mary ($9), Sparkling Sangria ($11) and “Epic Mojito” ($7), a refreshing mix of mango rum, lime juice, muddled mint and club soda. The restaurant also features an impressive happy hour menu, which includes a plethora of shareable items such as Kalua Pork Spring Rolls ($4), Crispy Short Rib Ravioli ($5) and Lemongrass Steamed Clams ($7).
