S

pring into spring with rosemary, a heat-loving herb with fragrant, evergreen, needle-like leaves and white, pink, purple or blue flowers. A decorative plant often associated with the Mediterranean, rosemary needs no water (other than the humidity carried by the breeze) to live, making it an easy plant to grow and maintain. Now, I have no green thumb whatsoever. Actually, to be clear, never leave any plant or garden in my care unless you want a rather unfortunate outcome. Yet rosemary seems like it may just stand a chance against my non-existent gardening skills, but I’m not holding my breath! What I love most about rosemary is that its leaves, both fresh and dried, complement a wide variety of foods with its signature flavor. So, this week, in an effort to spare the life of an innocent rosemary plant, I ditched the gardening and decided to delve into remarkable rosemary masterpieces at the following Ono, You Know locations, where fare rich with rosemary always is in full bloom.

Romano’s Macaroni Grill With its exceptional Italian fare and honor system wine, Romano’s Macaroni Grill in Ala Moana Center’s Hookipa Terrace redefines your typical Italian classics by jazzing them up with top-of-the-line ingredients. Guests are treated like family amid a relaxing atmosphere, and some of the servers also take on the role of opera singers, making for an unforgettable dining experience. Chef Nawai Kekoolani is very detail-oriented when it comes to flavoring his creations, and in a couple of entrees, rosemary is the shining star, as far as the seasoning goes. First and foremost, Grilled Shrimp Spiedini ($17) presents robust rosemary flavors, as this dish features six zesty morsels of shrimp atop a medley of roasted vegetables doused in lemon oil. “Eggplant, zucchini, bell peppers and roasted potatoes are garnished with garlic, rosemary, extra-virgin olive oil, and salt and pepper,” explains Kekoolani, noting – See page 18

I

t all started back in December 1992 in a small hole-in-the-wall eatery on North School Street with savory morsels of garlic chicken cooking in a wok and a simple breakfast special, which nearly 20 years later catapulted Mitsu-Ken Okazu & Catering to the thriving local hot spot it is today. Best described by longtime patrons as a premier choice for bentos, combination plates and catering platters — all of which showcase the restaurant’s renowned Garlic Chicken — Mitsu-Ken is sans dining facility and only offers takeout. Yet, most recently, the eatery bid farewell to its original stomping grounds and relocated to new premises on North King Street (across from New City Nissan). “We’ve been busier than ever,” says owner Brad Kaneshiro. “We’re happy with our new location because we have lots of parking and more space — both of which were lacking before.” Open Tuesday through Saturday from 5 a.m. to 1 p.m., Mitsu-Ken may have a new look, but continues to offer quality fare at unbeatable values. Dining Out recently caught up with Brad and bookkeeper Sherri Kaneshiro after a busy day of putting together hundreds of bentos and plate lunches for eager diners. “I usually come in at 2:30

DO: Mitsu-Ken was in business for 20 years on North School Street, before relocating the restaurant to North King Street just last month. What has that experience been like? Sherri: It’s been a good move for us. At our prior location, we catered to a lot of the residential community and a lot of schools around the area, such as Kamehameha Schools and St. Theresa School. Parking was rather difficult — we only had two parking stalls on the side of our building and street parking. There were a lot of complaints from customers about the towaway zone. Brad: Here at our new location there’s plenty of parking, so that’s definitely an issue that we were able to resolve that I’m sure our customers are very happy about. We also have air conditioning in the restaurant and enough space to comfortably wait for your food.

DO: Wow! Looking back, can you believe it was these two items (garlic chicken and the breakfast special) that brought about this renowned restaurant that stands here today? Sherri: No way. We knew that our garlic chicken and breakfast special were good, but we didn’t know they were that good! Brad: Yeah, we didn’t think it would take off like that! DO: The food here is derived from recipes from close family and friends, and it’s no secret that Mitsu-Ken’s Garlic Chicken is the stand out item. What makes it so special? Sherri: There’s a lot of garlic chicken out there available at other places, but a lot of customers say that garlic chicken elsewhere is either too sweet or garlicky. But with our Garlic Chicken, they say it’s the perfect combination of sweet and garlic flavors, so they really like that. They’ve commented that ours is the best. Brad: It’s made from a

DO: Everything is so delicious! How did the menu progress throughout the years? Brad: After our garlic chicken became very popular, the popularity of our bentos began kicking in. Back then, we only offered Mitsu-Ken Bento ($6.50)

with garlic chicken, teri beef, Spam, hot dog, egg omelet and rice with furikake, and Mini Bento ($4.50) with garlic chicken, hot dog, egg omelet and rice with furikake. Now, we have a couple more bentos on that list, as well as a variety of plate lunches, sushi, salad, pupu platters and a la carte items. Sherri: Just recently, we added Fried Saimin Bento ($6.25) to the menu, which includes fried saimin, garlic chicken, egg omelet, Portuguese sausage and rice. Our Sport Pack ($4) is simple, but good, and features fried chicken, hot dog and rice. As Brad was saying, we have many plate lunches. Top-sellers include Garlic Chicken ($7), of course, Kalbi ($7.50) and Teriyaki Pork ($7.50). Kalbi and Teriyaki Pork are new plate lunches on the menu, but they’ve been doing well. All plate lunches are

5 served with two scoops of rice and macaroni/potato salad. If you prefer tossed green salad, add on an additional 45 cents to your total. DO: Mitsu-Ken also offers catering services, and as a result has become a part of many special occa-

sions and events. Correct? Brad: Yes, we have a lot of different options that our patrons can take advantage of — from our Five-Course Basic Menu priced at $7.50 per person (assorted sushi, macaroni/potato salad, assorted tempura, fried saimin and garlic chicken)

to our Six-Course Menu with the addition of teriyaki meatballs, and our Seven-Course Menu with the addition of kalua pig and Chinese chicken salad. Sherri: Most of the time, we only do catering for lunch events, because we close at 1 p.m. If you want

to order for dinner, you still can, but you’re going to have to refrigerate it. DO: Mitsu-Ken opens at 5 a.m., so what can early risers expect for breakfast? Sherri: We have five options for breakfast. First of all, there’s our Breakfast

Special ($4.25), featuring two scoops of fried rice, two eggs (any style) and two strips of bacon. Then we have our Breakfast Combo ($6.25), which is our Breakfast Special with three pieces of garlic chicken, along with the Breakfast Pack ($3.25), Breakfast Deluxe ($5.75) and Breakfast Deluxe Combo ($7.75).

DO: What’s the secret behind Mitsu-Ken's continued success? Sherri: I guess we’re just lucky and we have great customers who are very loyal. We want to thank them for that, especially for being patient throughout the moving process. When we moved here to our new location, they followed. We’ve gained a lot of new customers, as well. Brad: I think our success is because we keep our prices affordable while still offering very big portions.

Starters defined by decadence

T

he word to best describe the appetizers at Beachhouse at Sheraton Moana Surfrider is “decadent.” Sure, fresh, light and flavorful all work as an accurate commentary on the menu, but none more accurately describes the richness and special nature of the chosen items. Beachhouse is a steakhouse with something extra. Set apart from its heavy wooded counterparts, Beachhouse is open and airy, and has a menu that embraces steakhouse tradition, but isn't afraid to try something new. “Since we are a steakhouse, the main entree portion of the menu is the classic ribeye, the New York and cuts like that,” says chef de cuisine William Chen. “Where we have leeway and where we

have our fun is with the appetizers and desserts, where we branch out with things that are more eclectic.” He’s succeeded. Foie Gras Toast ($25) begins with seared foie gras topped with caramelized cippolini onions with thyme. The combination is stacked on a toasted baguette and accompanied with a fresh parsley salad, toasted almonds, blackberries, pickled shallots, and finished with a blackberry jam puree. If you haven’t had much foie gras, blackberry sauce may seem like a strange pairing, but it’s a classic French presentation, and one that provides a sweet and even slightly acidic flavor that balances the richness of the foie gras. fore slightly rare, also adds to the special nature of the dish. Chen favors food that is simple in appearance, but maxes out in technique and the careful use of in6 | DINING OUT | APRIL 14-20, 2013

gredients. Two fine ex3 amples of this are Hamachi Crudo ($15) and Roasted Bone Marrow ($14). Both dishes celebrate the quality of the ingredients. The sashimi-grade hamachi is simple and clean. Chen highlights the fish with a housemade white ponzu sauce, yuzu and a garnish of wasabi kazami (chopped wasabi stem), which seasons the hamachi without the traditional heat associated with the root. Topped with fresh rice crackers and herbs, it’s how a sashimi dish should be — simple, fresh and with a subtle surprise. Popular in gastropubs in the continental U.S. and Canada, bone marrow is just starting to make inroads into local restaurants. Rich and buttery in flavor and texture, the dish fits into Chef Chen’s food philosophy. It’s traditional, straightforward, rustic and, most importantly, tasty. The five-inch beef shanks are baked, seasoned with French sea salt, topped with a gremolata and served with a toasted baguette. That’s it, simple and delicious. Chen even has a suggestion about what to do with the marrow containers when finished: bone luging. Bone luging is done by pouring liquor, such as whiskey or tequila, into the bone cavity then sipping it out. The alcohol mixes with the fat of the marrow to create an entirely new flavor and the warm bones help to aerate the liquid. One final pupu to ponder is Lump Crab Cake ($19). This appetizer has Chef Chen written all over it. Maryland blue and Alaskan king crab are combined

with panko, Japanese mayo and chopped herbs then seared. The whole thing is presented with a red pep-

per rouille, a salad of fresh frisee and heart of palm, and garnished with an Asian-style guacamole. Chen says the goal was to match the East coast variety of crab cakes he grew up enjoying. Regarding the accuracy of the dish, I cannot say. But, if his goal was to make a naturally-flavored and moist crab cake free of unnecessary additives, he’s succeeded. Unlike so many others, you can actually identify the crab in Chef Chen’s crab cakes. The delicate meat isn’t beat up and smothered in some unflavorful binding agent, it’s handled gently and the care shows. Fabulous, like everything else here.

Jade Dynasty has been open for a little more than two years, serving fresh, quality Chinese food (as well as dim sum from 10:30 a.m. to 5 p.m. daily). The restaurant’s chefs regularly travel to Asia where they exchange ideas with other top chefs. According to general manager Gary Chan, the chefs are in Hong Kong and China this month learning some new styles of cooking, including Sichuan which has a bit of spice to it. Depending on the size of your party, there are different areas in the restaurant that can be sectioned off for privacy. The entire restaurant can seat 330 people, or you can reserve the open-middle portion which includes a stage for up to 130 people. There also are private rooms that can seat 12 to 60 people. Audio/visual equipment and a projector screen also are available, and there’s plenty of free parking at Ala Moana Center. Reservations should be made early, especially for large parties.

beer. Its German style is a bonus for pizza pairing; though light, it’s more hopped than its American counterparts. Tasting of citrus, spice and pine, it is the hops, like in the Lei ’O Mano IPA (which is more hoppy, yet not overly spicy), that cuts through the oils of the cheese and anchovies. These two beers provide the right amount of cleantasting refreshment and bubbles to cleanse your mouth between bites of fresh mozzarella; salty, savory anchovy; and sauce-

less, yet olive-oil doused dough. The delicate and floral Mango Wheat Ale, like a hefeweizen or Belgian white, has a low hop profile. Although hops may be good for refreshment, this ale’s more yeasty flavor and soft mouthfeel (less carbonation) mingle well with Inferno’s dough made from Italian-imported flour. The slight sweetness of the mango extinguishes the lingering fire of the jalapeno

and soothes your tongue in preparation for the next piquant bite. Similarly, the Macadamia Nut Brown Ale plays up the toasted flavors of the wood-fired dough with its — you guessed it — nutty, caramel flavors. Its maltiness also cools the pepper’s heat. As you can see (or taste), each beer complements the pizza’s ingredients in a different way. Find out which beer is the best pairing for your tastes.

J Bistro & French Pastry appeals to diverse palates with its array of Eurasian-inspired cuisine and sinfully sweet desserts. Owner and chef JJ Luangkhot first opened the restaurant in 1995 in Aiea, and then four years later relocated the establishment to Kaimuki, where it stands today.

The restaurant’s Four-Course Meal Specials are a big draw, as it consists of a soup or salad, appetizer, entree and dessert. Luangkhot says Grilled Lobster Tail Fettuccine ranks among the top entrees of the bunch, and for good reason.

Created by Luangkhot himself, this entree is a tribute to the signature Eurasian flair of JJ Bistro. Italian influences are brought forth with the fettuccine, shiitake mushrooms add an Asian twist, and the cream sauce is inspired by French culinary techniques. Maine lobster tails are shipped in once a week from Maine and are the show-stopper of the dish. The tails are flavored with garlic and butter prior to grilling, resulting in meat so tender, sweet and savory. “The lobster meat goes very well with the sauce and brings a nice texture to the dish. It doesn’t need a lot of seasoning because its taste is already wonderful as is,” says Luangkhot.

Shiitake mushrooms, sweet peas, red bell peppers, carrots and asparagus play up the dish nicely, adding to the exquisite presentation, at which Luangkhot is known for succeeding in each one of his creations.

A mound of fettuccine is the canvas for this dish. It’s cooked al dente and topped with a creamy white wine (Chardonnay) sauce infused with fresh garlic and tarragon, which makes for an alluring aroma.

A best-seller at the restaurant, this dish made its debut on Valentine’s Day. It received such rave reviews from guests that it quickly made its way onto the regular menu.

f you’ve been to Good to Grill in Kapahulu, you’re quite aware that it’s pretty much all about the meat — or it was. It’s time to take another look, veggie lovers. Pat Comer, director of restaurant operations there, has had an idea simmering

on the back burner of his mind for a while, and a visit by Dining Out was just the incentive he needed. "I’m looking to add a vegetarian dish," he reveals. "I would like to open up that niche." Talk about perfect timing. So, without further ado,

"If you put the protein from the quinoa with the vitamins from the vegetables, it's an all-encompassing dish," explains Comer, who notes that about 99 percent of the produce served at the restaurant is locally grown. The Keeaumoku Street eatery, which opened in Chinatown nine years ago before moving to its current locale in 2011, specializes in Cantonese cuisine, which hails from the Southern region of China and tends to be healthy and mild in flavor. “Chinese people love our food,” says manager Peng Gong. “They say it’s the best in town because it’s not chopsuey style, mixed with local food. It tastes just like in China.” On any given day, you 2 can walk into the restaurant and find a slew of regulars, many of whom are part of the Chinese community’s older generation, who appreciate Canton Seafood’s traditional menu. According to Gong, chef Sou Kueng Wong’s background as a chef in China helps him bring authentic flavors to life in the kitchen. fter 14 years of running Korean Hibiscus BBQ in Aina Haina, the husband-and-wife team of Raymond and Shirley Kodani decided to take some time off to spend with family, including their young grandchildren. However, customers are pleased to learn that the co-owners are back in business after reopening their popular Korean food takeout restaurant 4.2 miles away at Kaimuki Shopping Center on Waialae Avenue — conveniently located on the lower level next to Times. The “Head Kim Chees,” as they’re affectionately known opened the eatery’s new location in January of last year, and encourage both loyal patrons and new customers to experience the reincarnation.

The menu features 19 lunch and dinner plates, as well as noodle and soup dishes, and side orders. A total of 50 combination plates also are available based on the various menu items that can be paired, and the restaurant’s menu is clearly marked to denote which items fall into the different combo categories. Spicy BBQ Chicken and Zucchini Jun ($10.75) is one of the popular “Jun Combo” plates, and includes juicy chicken basted with a special spicy sauce. Customers also rave about the combination of Meat Jun and Fried Man Doo ($10.75), which includes pan-fried, eggbattered marinated beef ribeye

coupled with tasty dumplings. The man doo includes beef and vegetables, not pork, as some diners may be accustomed to. The dumplings are prepared to order, and offer a crispy texture encompassing the scrumptious filling. Popular Kal Bi short rib plates and combinations also are available, including Kal Bi and BBQ Chicken ($11.50). Regular plates are served with two scoops of rice and a choice of four Korean-style vegetables, while mini plates include a scoop of rice and two vegetable selections. In an effort to meet customer demands for healthier plates, Korean Hibiscus BBQ now serves its rice “hapa” style, with

a 50-50 mix of white and brown rice. While some customers initially may balk at the healthier option, Kodani explains that the rice is washed twice and prepared in an industrial-strength cooker, which allows for higher, evenly spread heat that makes the rice softer. He jokes that one customer initially had complained to his wife about having to eat brown rice, but after she explained to him that the plate he enjoyed the previous week had contained the hapa rice, too, he ate his words as well as devoured the meal. The restaurant also introduces new menu items to complement the existing selections, and as Kodani explains, the “Grandma’s Special” has been very popular with diners. The current special of BBQ Beef Stir-Fry Plate ($10.50) includes marinated beef ribeye stir-fried with sweet potato noodles, car-

rots, round and green onions, and like the traditional plates, are served on a bed of hapa rice with a choice of four Koreanstyle vegetable sides. Korean Hibiscus BBQ also offers local plate lunch selections including Hamburger Steak ($7.50 mini, $8.25 regular) and Garlic Chicken ($7.75 mini, $9.25 regular). While the hamburger steak and garlic chicken aren’t normally included when one thinks

of traditional Korean favorites, Kodani explains that the items were featured because the restaurant’s previous tenants served them, and it allowed the Kodanis to offer some continuity during the transition. However, they improved the recipes, and, for example, now utilize fresh 4-ounce ground beef steak patties that are charbroiled and topped with gravy. Kodani explains that family

plays a big role in the restaurant, including everything from input he received on the menu items and recipes from his late mother-in-law to suggestions for new offerings based on his granddaughter’s preferences— she really enjoys the hamburger steak, by the way. “You’ve got to try it out. This is what we eat, so we’re making items that we serve to our family,” Kodani says.

ocated just steps away from Ala Moana Center on the corner of Piikoi and Waimanu Streets, Kissaten Coffee Bar is a convenient place to enjoy every meal from an on-the-go breakfast to a late-night treat. And even more convenient, it’s open 24 hours a day to accommodate a wide range of your needs ― from business meetings to meeting up with friends after a night out. Not only is it open any time of the day, but with its varied menu, it also has something for everyone. “It is American comfort food with a fresh twist. We like to throw in influ-

ences from all over the world ― Italian, French, Japanese, Chinese,” explains Kissaten senior partner Neysa Taba, who co-founded the restaurant with cousins Jon Ishimi and Sean Ishizaki. “The food is pretty much keeping with the theme of Hawaii ― a melting pot of everything.” Since opening about two years ago, Kissaten has attracted a number of regular customers, who keep coming back for the food, as well as for the cozy atmosphere and the friendly staff. And Kissaten assures that the regulars will always have something new to look forward to. Lately, the restaurant has been introducing more daily

Initially, they conceived the idea for Kissaten Coffee Bar as a haven for people in the service industry like themselves. “We decided that Hawaii was missing a 24-hour spot,” Taba says. “We thought it would be really cool to do a café with made-to-order gourmet food, but with quick service.” These days, in addition to being a late-night gathering spot, Kissaten is a convenient, comfortable place to grab a meal any time of the day. With its dedication to quality food, Kissaten utilizes local produce when it is available. Additionally, many of its sauces and dressings are made in-house. As of last month, customers can enjoy a different kind of Kissaten at its new Kissaten Ramen, which is open from 11 a.m. to 7 p.m. “It is a traditional Japanese noodle house,” Taba says. “We have ramen, fried rice and gyoza is coming soon.” You can find the new shop in the basement level of Waikiki Shopping Plaza, the entrance to which is on Royal Hawaiian Avenue.

It is comprised of tomatoes, red onions, cilantro and a variety of spices. “It is really popular,” Taba says. “A lot of people ask for seconds of the salsa.” Another special gracing the menu this week is Chicken and Tofu Salad ($9.50), which features mixed greens, chicken breast, cucumbers, tomatoes,

onions and avocado ― all with a homemade soy wasabi vinaigrette dressing. Another weekly special not to be missed is Ultimate BLT ($9). With iceberg lettuce, tomato, bacon, a fried egg and mustard aioli on toasted white bread, the dish is a hearty twist on the standard sandwich. To top it all off, a selection from Kissaten's ice cream parlor, such as Brownie Sundae ($5.50), is a good way to go. The decadent dessert features a whole brownie with a big scoop of ice cream, choice of topping, whipped cream, cherry, and a choice of nuts or sprinkles. While the chefs created

these special offerings with their regular customers in mind, creating new items seems to be a symbiotic relationship for Kissaten and its patrons. “We take into consideration customer requests,” Taba explains. “And our chef is just very good. He is always looking around for inspiration. He has worked at a bunch of places and with all kinds of different cuisines. Chef Chai The gods have answered my prayers with the opening of Chef Chai, a contemporary restaurant owned and operated by award-winning chef Chai Chaowasaree. The restaurant, located on the ground level of Pacifica Honolulu Building on Kapiolani Boulevard, features an avant-garde ambiance with fine Swarovski crystal pendants and glass bubbles, chandeliers and textured stone, and boasts a variety of island-fusion cuisine that is healthy. “We use quality products. All ingredients are fresh and flavorful, and butter isn’t one of them,” says Chaowasaree, who also serves as executive chef for Hawaiian

Airlines. “We have to use butter for our desserts, but you won’t find it in any other dish.” When asked about incorporation of rosemary into his cooking, Chaowasaree points out the dish fitting for all rosemary enthusiasts — Rosemary Garlic Pork Tenderloin with Chinese Bau Buns, Hoisin and Scallions ($13). This starter can be prepared without hoisin for gluten-free guests, and is delicious in all regards. I love the pork tenderloin, a lean meat marinated in rosemary and garlic. And to get the best deal, order these Chinese bau buns during happy hour from 9 to 11 p.m. for only $7. “Rosemary is a great herb to work with,” Chaowasaree says, as he also reveals the benefits of rosemary, especially if you have a cold and can’t get rid of that pesky cough. “The eucalyptus in this aromatic herb is proven to loosen chest congestion, making phlegm easier to expel,” he explains. “Rosemary also is rich in anti-inflammatory tannins, which soothe a sore throat.”

Bread Pudding ($9) is made in traditional bread pudding-style and includes cream, as well as rum raisins and macadamia nuts — and yes, it comes with vanilla bean ice cream. It’s evident why fruits adorn the dessert menu at Ocean House, when taking a bite out of creations such as Apple and Blueberry Walnut Cobbler ($10). Apple cobbler is topped with walnuts and also includes blueberries and rum raisins. The perfect fruit dessert to satisfy your sweet tooth. Ocean House also features

a Warm Banana Crumb Cake ($10). But keep in mind this is no ordinary crumb cake. It’s soy- and gluten-free. Yes, you read correctly. “It is so good, too, that you’d never know it was soyand gluten-free,” Nagaishi says. “A lot of people who eat gluten-free cannot eat a lot of desserts, but we do our best to cater to them. They definitely won’t go hungry.” The crumb cake is served with vanilla bean ice cream and a strawberry coulis. Enjoying these sweet treats while watching the waves fall back and forth over the shore — it doesn’t get much better than that.

ake traditional Japanese yakiniku and add some of Korea’s favorite home-cooked dishes, and the result is Heijouen, one of the newest additions to Hawaii’s dining scene. Part of a chain of restaurants, Heijouen is the first one of its kind to open in the United States. Currently, the restaurant-powerhouse has more than 20 locations in and around Tokyo, Japan. Featuring both Japanese and Korean cuisine, Heijouen by default appeals to Hawaii’s demographic. “The island is such a melting pot of cultures and appetites,” says Hiroshi Shimada, manager of Heijouen. “It made total sense to have our first American location be in Honolulu.” In recent years, Japan has welcomed many new restaurants of varying food types and styles. “You can walk in Japan and see so many Italian, Mexican, Chinese and Indian restaurants,” says Shimada. “Oftentimes, Japanese chefs will study abroad and bring new dishes and cooking techniques back to Japan.” At Heijouen, residents and tourists alike can expect to receive an effortless fusion of Japanese and Korean dishes. “Above all, food quality is of utmost importance,” explains Shimada. “We aim to provide the best quality meats and dishes for an affordable price.” To receive the quintessential Heijouen experience, ordering yakiniku is highly recommended. Diners may choose from a variety of meats including Pork Thigh ($6.80), Pork Ribs ($6.80), Chicken ($6.80) and Grilled Shrimp ($9.80). The meat comes raw on a platter, which customers can cook atop the table’s private grill. Premium or “fine” meats, as Heijouen refers to them, also are available. Rather than using a meat cutter like

most restaurants, the chefs at Heijouen hand cut all meat, which allows for a significantly higher quality and better marbling. One of Heijouen’s most popular menu items, Thick Cut Beef Tongue ($10.80), offers a unique alternative for diners, as most Japanese restaurants only offer thinly sliced beef tongue. To maintain maximum taste, the chef meticulously cuts small slits in the meat to allow it to absorb flavor. Such a cooking technique enables the meat to remain tender and juicy. In addition, Heijouen uses a variety of sauces designated for each dish. For instance, the “Tare” is a sweet sauce that is made completely from scratch in-house, typically paired with Fine Beef Kalbi. Another popular sauce is the Shio sauce, which carries a hint of salt and sesame seed oil, often meant for seafood dishes. In order to balance the heavily meat-oriented meal, diners also may choose from a variety of refreshing salads. Heijouen’s unique Choregi Salad ($7.80) incorporates fresh greens with a spicy sweet dressing. Other options include the popular Sesame Salad ($7.80) and simple Salt Salad ($7.80).
