M

y ultimate weakness is sweets. I know, I know …

I sound like a broken record, but what can I say? No matter how much I try to resist, if it has sugar and constitutes as a dessert, this girl is all over it!

Don't believe me? Well, here’s proof: Let’s go back to Wednesday night when I downed three humungous pieces of red velvet ice cream pie — just me, myself and I! I can't eat just one.

They were delicious!

And since I was already on a sugar high this week, I decided why not continue and go all out with a Filipino favorite: halo-halo!

Say hello to this fun-filled dessert, which features a mixture of shave ice, evaporated milk, and various boiled sweet beans and fruit.

In Tagalog, the term halo-halo is translated to “mix-mix,” and the secret (no surprise) is in the mixing technique. The presentation of this dish is always eclectic, vibrant and massive, to say the least, but to experience halo-halo in its purist form, you need to take the time to stir all the colorful contents together with your spoon. It’s only

then that all the flavors and textures come together perfectly.

The ice cream is only the surface of the dessert, and as it melts and blends with the tropical fruits and beans underneath, you are left with the good stuff ready to be slurped up and enjoyed. Finally, sip every last drop of ice cream and milk, and you’ll be in halo-halo heaven!

oru Makino is a legend in the dining scene, both here at home and across the globe. He opened Todai Restaurant, an upscale international sushi and seafood buffet establishment, in December 1999 in Waikiki and later ended up selling the eatery. Most recently, Makino reclaimed ownership of Todai, along with his business partner Han Kim, and together they are eager to, once again, treat diners to an impeccable dining experience — one that is all-you-can-eat, by the way.

Dining Out recently paid a visit to this 450-seat restaurant and sat down with Makino and Todai’s executive chef Richard Lee among platters of prime rib, endless morsels of sweet and succulent shrimp, and so much more. It wasn’t long before we delved right into the endless and delicious possibil-

ities that are sure to entice all palates.

DO: Mr. Makino, now that you’ve returned to Todai, you're offering some unbeatable deals. Correct?

Makino: Yes! I’m excited to be back! Todai was very popular when it first opened back in 1999, and we hope to draw in crowds of locals and tourists like we did in the past. Our allyou-can-eat buffet appeals to everyone and we’ve rolled back the prices to what they were when we first opened the restaurant more than a decade ago. For a limited time, the cost for kamaaina during lunch is $10.98 (Monday-Friday) and $13.98 (Saturday and Sunday), and dinner is priced at $23.98.

We also have a special deal for keiki ages 10 and under, which is half off $23.98. During

lunchtime, seniors also only pay $8.98 when they bring in their Dining Out coupon. And if you dine on your birthday with a party of four or more, you receive a complimentary birthday meal (must present ID).

DO: The buffet spread is immaculate. With more than 100 items on the buffet line, what are some must-haves?

Makino: Everything here is very good, but we’re well known for our prime rib, Kauai shrimp and sweet shrimp.

Lee: I’ve worked with Mr. Makino for several years now, and I consider him to be a master chef. It’s an honor to be working with him as executive chef here at Todai. I have to agree with him, our prime rib is incredible. I go through about four to six prime ribs per day.

Prime Rib

The prime rib is slowroasted, seasoned with a special blend, extra-virgin olive oil, garlic, salt and pepper. The real trick, however, is in the roasting process. We blast the meat at a high temperature to develop that nice crust that prime rib should always have, and then we bring the temperature down and let it sit for up to three to four hours, that way it develops the texture and taste that makes our prime rib so delicious. It’s also important for us to support local, so that’s why we serve Kauai shrimp. It’s some of the best shrimp you’ll ever have.

Other top buffet items are, of course, snow crab — everyone comes here for that — as well as fresh, steamed clams. I can’t keep enough clams on the buffet line. It seems like every 15 minutes I’m putting out another couple hundred clams. Then, we have tempura from our tempura bar, which customers absolutely love. We average about 2,000 pieces a day and it’s Mr. Makino’s specialty. It’s made out of love straight from his heart. And if you’re a fan of sushi, we have more than 30 kinds of sushi to choose from.

DO: That's enough to make mouths water. And there’s more?

Makino: Yes. No one will leave here hungry. Todai also offers its patrons endless amounts of barbecue chicken, teppanyaki, beef sukiyaki, crab

cakes, orange chicken, spicy barbecue pork, poke, pizza and more. In addition, we also have a salad bar and an udon noodle station. We also have many draft beers to pair with your meal.

DO: What about dessert?

No meal is complete without a sweet treat.

Makino: We have a dessert bar that offers 10 decadent selections to choose from — the most popular being cheesecake. There also are crepes, tiramisu and a chocolate fountain, which the children really enjoy.

DO: Delicious! On top of that, there’s also nightly entertainment. Please explain.

Makino: Every night from 6 to 8 p.m., Makino Ring of Fire will perform for our patrons.

Makino Ring of Fire is a Polynesian dance troop, and they will most certainly add to the dining experience at Todai. Locals and tourists will love them!

DO: Chef Richard, you’ve worked with Mr. Makino for a number of years. What have you learned from him and what is something unique that you bring to Todai?

Lee: I’ve learned a lot from Mr. Makino, such as flavor enhancing tricks, skills to perfect my Japanese sushi making, as well as different Japanese culinary techniques. I also will bring more homemade-style

dishes to the restaurant. I’m introducing a Tofu Caprese, which is a unique twist on the traditional caprese, and I’ve also created a Furikake Caesar Salad and a few homemade dressings. I like rustic and vibrant cuisine. I want everyone to like our food and appreciate the passion that we have for Todai. We’re going to make things pop. No where else can you get such tasty food at such a great value.

DO: It sure seems like great things are in store for the restaurant. What are your thoughts on this new era for Todai?

Makino: I’m very happy! It’s nice to be back here! We’re already gearing up for Mother’s Day (May 12). The restaurant will be open all day from 10 a.m. to 10 p.m. and the buffet will be priced at $24.98 per person for lunch and dinner.

Parking also will be free for the first hour-and-a-half at the parking structure behind the restaurant.

Lee: Now that Mr. Makino is back, there are going to be a lot of nice improvements going on. Todai is his baby, and we’re going to run wild with some nice, new flavors and really update things around here.

A savory fusion of Chinese and local flavors

hen it comes to food, it’s always easy to get too comfortable with ordering the same dishes from the same restaurants. Luckily, Lung Fung Chinese Restaurant currently has three specials that will re-awaken your taste buds.

“I’m always thinking of ways to make things new … to make sure customers aren’t feeling bored,” says manager Eddie Ma. The restaurant has been open for more than 10 years (which Ma credits to the loyalty of its customers’ support) and continues to serve 90 percent authentic Cantonese food. The other 10 percent, Ma says, is a fusion with local food and other familiar flavors.

General Tso’s Chicken ($9.95) has been a special the restaurant has offered for about six months, after popular demand by many customers.

Cut chicken is deep-fried with flour and glazed with a sweetand-sour sauce with spicy chili to give it an extra kick.

“Customers were asking for a bread that was denser and heavier and I knew miche would fit the bill,� he explains. “It has a thin, crispy crust and a dense interior. It's excellent for sandwiches, such as pastrami or Italian meats, and also is very good with strong flavored cheeses such as aged bleus. And it has heavy sour dough accents.�

hey’re cooking up a storm at Monsoon India in Waikiki, where flavor is an understatement when it comes to the mouthwatering array of authentic appetizers, breads, soups, curries, biryanis and kababs, which are as exotic on the palate as their names imply.

And when it comes to satisfying those of us who

choose not to eat meat or fish, Indian food shines.

Monsoon India's extensive menu has a whole section devoted to “Vegetarian Dishes,� and there are meatless delicacies scattered across the rest of the menu, so there’s plenty to choose from here, and co-owner Imran Khan recommends a couple of his favorites to Dining Out readers.

“Our roasted eggplant is very popular,� says Khan, referring to Baingan Bartha ($15.95). “It’s fire-roasted, we cook it in a clay oven, then we cook it with onions and tomatoes.� The result is so rich in flavor that you’ll be tempted to lick the plate clean. It’s richly spiced but not too hot, so if you like it fiery, just tell your server. “One of the most healthy dishes on our vegetarian menu is Sookhi Sabzi ($14.95),� says Khan, who notes that sookhi translates to “dry,� but that only means there’s no

apanese Restaurant Aki is a relatively new dining oasis that is both relaxed and contemporary. Located on the mauka side of the block between Ala Moana Center and Walmart on Makaloa Street, the establishment opened its doors to the public in February and specializes in modern Japanese fare.

Manager Aki Hirose says the restaurant is bustling during dinnertime, with a number of diners ordering the famous Tan Tan Nabe. This hot pot dish loaded with a variety of meat and vegetables cooks on a tabletop burner, and is popular among both locals and tourists.

King mushrooms, shiitake mushrooms, enoki mushrooms, bean sprouts, tofu and cabbage are a fresh addition to the nabe and absorb the flavors of the broth.

The nabe’s main source of protein is derived from tender strips of pork belly and ground pork, which Hirose says are locally sourced.

At the end of the meal, patrons are presented with a choice of rice ($3) or ramen ($4) to enjoy with the leftover nabe broth.

“Many restaurants serve nabe, but I think we’re the only place that offers Tan Tan Nabe,” says Hirose. “Nabe is very popular now, and because of that we were inspired to offer this dish.”

It’s all in the broth. According to Hirose, the tan tan broth is thick in consistency, as it brings the majority of flavor to the dish. It’s comprised of sesame oil and a blend of secret spices, which results in a taste that perfectly portrays sweet and spicy.

Exquisite sake pairings add new dimensions to Tan Tan Nabe. “For the ladies, I recommend Yama Yuzu Shibori Premium Sake. It has a sweet flavor. Guys typically enjoy a dry sake, such as Hakkaisan Tokubetsu Junmai,” Hirose says.

n the heart of Stadium Mall in Salt Lake sits Yakiniku Camellia Buffet, a do-ityourself carnivore lover’s experience. The location has proved perfect for those living on the Leeward side, as well as town dwellers.

Normally one would think that meat dominates the menu, but, according to manager Kris Kim, patrons stay for the sweets at the end.

After a hearty meal at Korean restaurants, they serve sikhye, a Korean rice dessert drink.

“This is one of the traditional Korean desserts for after the meal,” Kim says. “It’s sweet, but there’s a cinnamon flavor, and customers love it.”

The sikhye is used to complement the self-serve ice cream and contains bits of rice kernels that add texture to the liquid. While the cinnamon adds great flavor to the sikhye, it also aides in the digestion process. Perfect after a heavy meal.

“People make ice cream floats, and they use this to make the float Korean style,”

Kim explains.

Another dessert addition that pairs well with the ice cream is the azuki bean and mochi treat. The azuki beans add a hint of sweetness with the added texture of the mochi balls. And it’s been said that azuki beans also aide in digestion and heart health.

And atop ice cream, the creamy texture of the beans pairs well with the dairy dessert.

The azuki bean mixture and sikhye are popular during lunch, and dinner comes with the addition of fresh fruit and Jell-O. “The fresh fruit always changes,” Kim says. “But we always serve pineapple. People love to cook it after they finish yakiniku. It pairs well with sake.”

And everyone knows that pineapple pairs well with ice cream, as well.

he menu at Asahi Grill covers a lot of ground. From local favorites including loco moco, to American breakfast classics such as Banana Hotcakes and Japanese donburi, Asahi Grill truly has something for everyone.

sahi Grill opened in 2007 on Ward Avenue, and just in that short amount of time, it has managed to garner a strong base of regular customers.

“I love the restaurant business because of the people I meet,” says Asahi manager Victoria Sayno, who has been working in the industry for more than 20 years. “And (here) especially, we know a lot of our regular customers.”

It seems, then, that Sayno has found the perfect work environment at Asahi Grill, as the restaurant attracts a number of customers from all over the world.

Those regular customers include tourists from the Mainland, as well as from countries such as China, Japan, Taiwan and Canada.

Sayno says that many international customers who frequently stay in the Islands always make sure to include time for Asahi Grill on their travel itinerary.

“The word is spreading,” Sayno says. “It’s pretty amazing.”

The restaurant, of course, is a favorite among locals, too. Sayno says that a lot of downtown workers stop by for a quick breakfast or lunch. And many locals tell their visiting friends and family that Asahi Grill is the place to go for quality local eats.

Sayno enjoys introducing new flavors to her customers from afar.

Many customers from Canada, for example, have tried Oxtail Soup — and loved it.

“They eat it, and they go, ‘Where have I been? I have never tasted this food before,’ ” Sayno says.

“I hope everyone will come and try our food.”

“Our oxtail recipe is originally from China,” Sayno says. “It is really special. The broth is filled with peanuts, celery and Chinese herbs.

And we boil the soup for a long time.”

For more signature Asahi creations, try the eatery’s Bulgogi Don ($9.75). While this teriyaki beef dish might be standard fare for Korean restaurants, the creative chefs at Asahi have added their own signature flair to the sauce.

“It is a secret sauce that the chef created,” she says. Sayno was adamant about keeping the recipe a secret — so you’re just going to have to try the dish to experience the creation.

Asahi seems to be an expert at taking a classic dish and adding its own taste — and another example of that is Steamed Fish Fillet (Basa) ($9.95), which is flavored with ginger and a savory sauce.

Open for breakfast, lunch and dinner, Asahi Grill has a good way for diners to start their day: The Asahi Breakfast ($9.95), which comes with your choice of mahi mahi, salmon, saba, opakapaka or steak, with tossed salad, rice, miso soup, and one egg.

With all of these options, it likely will be difficult to choose just one dish. Thanks to the Combination Lunch ($15.95), you can have two items from a list that includes Spicy Chicken, Garlic Chicken, Teriyaki Chicken, Kalbi, Shrimp Tempura, Grilled Salmon, Grilled Saba, or Butterfish. These items range from about $9 to $14 individually, so you’re getting a good deal.

“We just want to make our customers happy,” Sayno says.

t’s not easy being the chef, cook or server at Wolfgang’s Steakhouse.

The long history of outstanding food and fine service has created a level of expectation that demands nothing but a first rate dining experience. This is true whether ordering from the main, bar or appetizer menu.

If it says “Wolfgang’s” it has to be delicious, and it is.

The Happy Hour menu at the famed steakhouse would be a bargain regardless of quality, that the dishes are served with owner Wolfgang Zwiener’s and executive chef James Donahue's high standards make it an even more remarkable deal.

A great steakhouse has to have a great burger and Hamburger Sliders ($7) are made from finely chopped 100 percent Prime Black Angus beef. The two 3.5 ounce patties are seared crispy in their 1600 degree infrared ovens, are wonderfully juicy and so concentrated with flavor you’d think Wolfgang’s staff simply put a bun on one of their aged New York steaks. Each burger is served on a sweet roll and topped

with pickles and a Russian dressing made of relish, onion, tarragon, ketchup, mayo and red peppers. It’s a perfect combination. The cool and slightly acidic dressing is a nice complement to the hearty beef flavor, which is tied together with the sweetness of the bun. Served with blanched, fried and lightly salted shoestring potatoes, the dish is simply outstanding.

Perhaps even better, depending on your preference, is Ahi Tartar ($7). Sashimi grade ahi is tenderly diced and tossed with Maui sweet onions, chives and a ginger wine vinaigrette dressing. The combination is served on a beef steak tomato with diced cucumber and topped with fresh avocado. Hungry yet?

The best way to encounter this fantastic dish is to pile the ahi, crisp cucumber and juicy tomatoes on the toasted crostini and enjoy. Each bite is incredible. The slightly spicy ginger vinaigrette is a perfect

complement to the buttery ahi. Not only flavorful, but the dish is a definite palate cleanser for the next recommendation: the Taste of New York combo.

At $34.95 the dish is outside the price point of the other happy hour offerings, but is no less of a bargain.

Big enough for two, the sizzling 12-ounce New York steak comes with mashed potatoes, creamed spinach and a slice of the world famous Junior’s Cheesecake.

Wolfgang’s dry-aging technique improves marbling by breaking down the interior fats while concentrating the flavors and producing a wonderfully tender cut of meat.

The potatoes, made with half-and-half, are creamy without being heavy, while the spinach provides a nice vegetable pairing to the starch. And the cheesecake?

Forget about it. There is a reason tourists and displaced New Yorkers stock up on this amazing dessert before heading elsewhere, Junior’s Cheesecake is amazing!

Magoo’s Pizza Legacy Continues

W

hen Gilbert Sakaguchi opened his first Magoo’s pizzeria on the famous Waikiki strip more than 40 years ago, he had no idea what success the business would bring.

“Even for a small space, they would sometimes do more than 400 deliveries in one day,” says Marshall Sakaguchi, son of the business owner.

Today, longtime and new customers alike can enjoy Magoo’s gourmet, brick oven pizza at its new food truck of the same name.

“We decided to utilize a food truck in order to keep overhead costs low,” says Sakaguchi. “It allows us to focus more on maintaining high quality ingredients and maximizing the flavor of every dish.”

Since opening last month, Magoo’s already has cultivated an impressive fan base.

“People come up all the time and comment on how they used to order pizza from the original location back in the 1970s,” says Marshall. “Eating here brings back a nostalgia that other businesses can’t reproduce.”

Favorite pizzas include Magoo’s “Famous Combination” Pizza (starting at $9.50), a sizzling symphony of pepperoni, mushroom, pork sausage, bell peppers and black olives. For those looking

to satisfy varying tastes, Magoo’s Potpourri Pizza (starting at $9.50) is a tasty option, as each quarter of the pizza offers different toppings.

One of Magoo’s most valuable trade secrets is the pizzeria’s homemade sauce.

“Our pizza sauce is completely made from scratch and consists of almost 20 different spices,” explains Marshall. “Only my father and uncle know the exact recipe.”

Diners also will notice Magoo’s pizza crusts are never too thick or paper-thin.

“We make it a point to always prepare fresh dough for each day and never freeze it,” he says. “Because of that, the pizza crust always has the perfect thickness — a medium between thin and hand-tossed.”

The food truck also boasts an impressive array of hot and cold sandwiches.

Stand-out choices include Hot Ham and Mushroom Sandwich (starting at $7.95), as well as the famous Pastrami Sandwich (starting at $7.85).

“Our ingredients are all fresh and individually prepped,” Marshall says. “Even our meat, including the pastrami, is of a higher grade and has just the right amount of fattiness to give it that smoky, rich flavor.”

In the coming weeks, Magoo’s also will be serving a number of comfort food dinner options, such as the classic Chicken Dinner ($9.50), a dry-rub, oven-roasted chicken with a choice of rice or french fries, as well as a potato salad made with crab, olives and

red potatoes. Another popular dinner option is Fish and Chips Dinner ($9.50), which includes a rustically prepared white fish with homemade tartar sauce.
