hen life gives you lemons, make lemonade — and while you're at it, how about some Honey Glazed Lemon Chicken, Lemon Crepes and Lemonade Crabcake? They will all put a little zing in your step! This week, Ono readers, it's time to explore the culinary uses of lemon, a fruit from the evergreen tree. Best known for its sour taste (this can be attributed to the fact that lemon juice is about 5 to 6 percent citric acid), it's only right that I pay homage to my most beloved fruit as a toddler. Don't ask me why, but all my parents had to do was give me a slice of lemon and I was a happy camper, content for hours on end — in fact, the more sour, the better. I was a strange kid, I know. Here at the following Ono, You Know locations, you'll find lemon-inspired dishes bursting with flavor. It don't mean a thing if it ain't got that zing!

Priced at $8.95 per order, Honey Glazed Lemon Chicken consists of morsels of chicken breast battered and deep-fried to perfection, and topped off with an utterly irresistible lemon sauce along with thin slices of fresh lemon. The meat and savory batter combined with the decadent sauce make for a pristine pairing, to say the least. An emphasis on utilizing locally grown and produced ingredients has led to fresh takes on a host of island favorites. “If it grows here locally, we try to get it,” says Kapo Kealoha, chef de cuisine at Tropics Bar & Grill, who notes that 70 to 75 percent of the new menu is crafted with local ingredients. “That’s a huge priority for me. Basically, the menu is a breakdown of what I like to eat, and what ingredients we can get locally. If I couldn’t get the items necessary to make the ragu for the chicken locally, then we wouldn’t have it. If I couldn’t get the apple bananas that we use in the French toast locally, then there wouldn’t be apple bananas in there. That shows the importance of building the menu with local products.” Kealoha brings a wealth of experience to the kitchen, as the local boy has worked his way up the culinary ladder from dish-

Most of it includes items that I would eat,” Kealoha explains. “If I won’t eat it, it’s not going to go on the menu.” Diners already have discovered Bananas Foster Stuffed French Toast ($17), a creative combination of caramelized banana and cream cheese stuffing, Hawaiian cane sugar caramel sauce, Big Island vanilla bean ice cream and a piece of macadamia nut

Those looking to start the day on a healthy note can turn to Healthy Start Platter ($22), an assortment of Farmers Market egg white frittata, fresh fruit cup, daily smoothie shooter and a choice of mini acai berry bowl or mini oatmeal. available as a brand-new appetizer on both the lunch and dinner menus. The bite-size fritters mirror the taste and texture of fresh crab cakes, and include sweet Kahuku corn along with pineapple ponzu and Hawaiian chili aioli dipping sauces. Tropics Bar & Grill also reels in a unique take on a popular seafood staple with Bubu Arare & Aloha Lager Island Fish & Chips ($20, available at lunch and dinner). The dish features a fresh island catch coated with miniature rice crackers and battered with locally brewed Aloha Beer Company lager, along with malt vinegar, candied ginger remoulade and seasoned french fries. Seafood lovers will also clamor for Seared Island Catch ($32, available at dinner) as the day’s fresh local fish is accompanied by sesame potato gnocchi, warm Kahuku sea asparagus salad and a Lehua honey butter sauce. Another new dinner selection includes a savory swath of local flavors intertwined in Macadamia Nut Honey-Roasted Half Chicken ($29). The moist, juicy meat is presented beautifully with a roasted chicken jus, fingerling potato, Kahuku corn, Hamakua mushroom and edamame succotash. Spreading the love for nabe

hen Ichiriki Japanese Nabe Restaurant opened its first location in 2006, owners Issei Kazama and Riki Kobayashi promised to do their absolute best to make their customers happy. The Piikoi Street restaurant quickly became popular for its nabe or Japanese hot pot, including shabu shabu and sukiyaki, and attracting locals and tourists from all directions. Two years ago, it opened a second location in Aiea, and last month added a third location in Windward Oahu at the Kaneohe Bay Shopping Center. "A lot of our regular customers live out here (on the Windward side)," says assistant manager Andrew Doi. "And we're looking at continuing to expand."

Among the signature dinner dishes at Ichiriki is the Tomato Nabe ($21.95 single order/$45.95 for two; served in a paper pot) which is served with an array of vegetables, cherry tomatoes and USDA Choice beef, and has the flavor of a hearty tomato soup. One of the newest hot pots on the menu is the Angry Goma Nabe ($23.95 single order/$49.95 for two; served in a paper pot) which used to be made by special request but became so popular that it's been added to the menu permanently. It's a tasty, but spicy,
nabe made with fresh jalapeno and habanero peppers in a sesame base, and it’s paired with pork. Also popular are the Mushroom Medley ($6.95) featuring an assortment of seasonal mushrooms such as shiitake, enoki, shimeji and eryngii sauteed in butter, shoyu and green onion; and the Fried Garlic Shrimp ($9.95) which is battered and deep fried, tossed in a tasty sesame mayonnaise sauce and topped with
fried garlic. The lunch menu differs from the dinner menu. There also is happy hour from 2 to 6 p.m. and 9:30 p.m. to closing daily (at Kaneohe and Piikoi) with appetizer and drink specials, as well as a nabe special. New starters are ‘Shor’ to be a hit

hen you think “fast food,� sushi probably doesn’t immediately come to mind. But forgo a burger and fries for something a bit more healthconscious that you’ll be able to eat just as quickly from Kozo Sushi. “We try to serve the food as quickly as possible because we are, in essence, a fast-food restaurant,� shares employee George Roszko. “We do our best to provide what the customer wants.� You won’t only be able to satisfy your sushi cravings here either. The restaurant currently offers bentos and sushi sets as well. The Teriyaki Chicken Bento ($6.99) is one of the most popular bentos of four that are offered. Chicken is sliced into bite-size pieces and cooked with teriyaki sauce. It is served with soba noodles, as well as shinko maki (pickled radish sushi) and a salad with a simple mayo dressing. item is the Fried Chicken Bento ($6.99). Deep-fried chicken is placed on a bed of rice and topped with teriyaki sauce. three large, fresh East Coast scallops that are seared in clarified butter, and lightly seasoned with salt and pepper. A bed of local red sweet potatoes, drizzled with a house-made red curry sauce, and Nalo Farms micro basil completes the naturally sweet and slightly spicy dish. In addition to the supplied heat, the curry sauce adds creaminess to the scallops while serving as a gravy for the potatoes. Don't miss the micro basil, either. toasted panko that is served hot in a cast iron ramekin. A child's dish upgraded for advanced palates, the pupu maintains some childhood enthusiasm by being a bit challenging to initially eat. The macaroni protrudes from the dish so much that you're bound to spill some toasted brown panko, and a few pieces of pasta, onto the table. No big deal. Plus, you won't be the only one eating right off the table. And you should. The Mac n' Cheese is creamy without being heavy and the mixture of cheeses provides just the right amount of sharpness. f you’ve explored the nifty restaurant scene downtown, I’m sure you’ve already fallen madly in love with the rustic charm of Brasserie Du Vin. Its enchanting personality — visible in such details as a vintage upright piano nestled against the back wall or its cozy, tucked away lanai — is so reminiscent of eateries in Europe that dining at the Bethel Street spot is more like taking a mini vacation. Much of Du Vin’s Frenchinspired menu bears a local twist, thanks to executive chef Marco Elder, who uses traditional French preparations as a starting point to spawn innovative and utterly devourable creations. His talent is especially evident when it comes to seafood, and the current menu boasts a number of vibrant dishes perfect for a spring dining escape. Baked Scallops on the

Half Shell ($12), which features plump farm-raised scallops, is an amazing starter. Each scrumptious bite is dressed up in roasted pepper aioli and bits of pecan woodsmoked bacon. A sweet touch of Kahuku corn and sprinkle of Parmesan cheese round out the impactful flavors. “It’s lightly baked in the oven to where the scallops are still tender, so you get all the nice juices to
soak up with the bread,� explains Elder. The brasserie’s Grilled Shrimp Salad ($16) is a staple lunch item prepared with poached pears, avocado, pecan wood-smoked bacon, blue cheese crumbles and grilled tiger shrimp on a bed of Ma'o Farms sassy greens. The salad does bring attitude with its grape vinaigrette,
creatively made by blending fresh grape juice with whole grain mustard, salt, pepper, olive oil and a special white balsamic vinegar. “Its a very nice light, refreshing dish, but very filling� adds Elder. In keeping with the French tradition of maximizing local ingredients, Elder uses fresh Hawaii produce to enliven dishes whenever possible. “A lot of it is based on certain availability of ingredients,� the chef says. “Like in our Fish Du Jour (Fish of the day; market price), we’re using tatsoi, which is traditionally a very Asian
ingredient. But since we can get it nice and local, it’s something I wanted to incorporate into this dish.� Elder combines the tatsoi with baby carrots and local cherry tomatoes to accompany a moist filet of opah belly, which is sauteed in his tumeric beurre blanc (white butter sauce), lending an earthy feel and gorgeous golden color to the dish. House-made lilikoi creme fraiche (French-style sour cream) tops off this exquisite combination of flavors. “I’d rather bring something in that’s fresh, local and give it a little twist,� says Elder of his unscripted approach to cooking. “Then local people can really relate to it as well.� Now Serving

Who or what inspires you as a chef/manager/owner? I’m inspired every day by my customers. We have a number of regulars who come to eat here nearly every day. They are like extended family, and treat me and my children with such kindness. We celebrate birthdays and holidays together, and even buy each other gifts. Making sure every dish at Hifumi is the highest quality it can be is just one way to show how much we appreciate our great customers.

Is there a dish that you create that's not on your menu, but available upon request? There are plenty! When Hifumi first opened 45 years ago, it was strictly traditional Japanese cuisine. Even when I started working here almost 25 years ago, people would come to the restaurant knowing exactly what they would have when they got there: tonkatsu, tempura, sashimi, etc. But things have changed since then, and both Hawaii’s people and culture have become
What are your culinary goals? What do you hope to improve on? I would like to expand the menu a bit more, and try to attract more customers with different tastes. We also are currently open from 11 a.m., and I would love the chance to open earlier in the future and have a breakfast menu with good coffee and tea.

ith fresh ingredients and gourmet preparation techniques playing prominent roles in each dish, Blue Water Shrimp & Seafood continues to satisfy customers with a wide variety of delicious surf and turf options. Blue Water Shrimp & Seafood is conveniently located at the corner of Kapahulu and Kaimuki avenues, across the street from Crane Park and just up the road from Leonard’s Malasadas. The food truck has occupied its current location for close to six months, and customers may recognize the eatery from its previous locales at International Marketplace in Waikiki, as well as the Haleiwa and Schofield areas. Unlike most food trucks, where customers are forced to take their food to go because of a lack of eating space, Blue Water Shrimp & Seafood provides a large, covered eating area for its guests. The dining area is just steps away from the truck and provides room for more than 20 patrons to enjoy their meals in cool, shaded comfort. The food truck is open daily, and is quickly becoming known for its iconic Garlic Shrimp ($7.95 for six pieces, $10.95 for nine pieces), which includes juicy shrimp bathed in a zesty garlic butter sauce that is made-to-order at mild, medium or spicy heat increments. Shrimp Scampi ($9.95) takes the concept to the next level, as the plump shrimp are prepared in a white wine, butter and caper sauce along with tomatoes and served on a bed of linguine. Nearly every entrée plate at the eatery costs less than $10, and also includes two scoops of white or brown (add 50 cents) rice, corn and a choice

of potato salad or tossed green salad. “It’s our signature dish, and as soon as you open it up, you smell the garlic butter sauce — I can eat that sauce with anything, at every meal,” says Gilbert Sakaguchi II, who co-owns the truck with Lesly Goo. “We cook with love in our food, every plate. We make the food as if we were making it for ourselves to enjoy. Everything is made fresh to order, and we receive fresh seafood daily.” The eatery also offers a host of additional fresh seafood selections, including Mahi Mahi ($8.95) prepared in a lemon, butter and caper sauce and a large, juicy Lobster Tail ($14.95). The fresh lobster can also be included in special combo meals such as Lobster Tail and Salmon ($19.95). Such offerings as these would normally cost at least $10 more in a sit-down restaurant setting, but Blue Water Shrimp &

Seafood is able to provide quality dishes at affordable prices — much to the delight of customers. “If customers thought our food was fresh, look at us now,” says Sakaguchi, who mentions that his skilled staff procures the finest fish available daily from the fish market early each morning. The fresh haul allows Blue Water Shrimp & Seafood to offer rotating specials such as Ono, Opah and Monchong — a white fish that can be grilled or sautéed to perfection. Blue Water Shrimp & Seafood also serves up a slew of “turf” to complement its “surf” options, including Pulehu Ribs ($9.95), which are flame broiled to perfection and so tender that

BBQ Pork Ribs ($9.95) are also a hit with diners, and feature a special barbecue sauce made of chili sauce, brown sugar, lemon and a variety of spices that are slathered all over the tender, juicy ribs. “The menu is seafood-driven, but we also cater to the local customers who want their meat and their steaks,” explains Sakaguchi, who recently graduated from Kapiolani Community College’s Culinary Arts program prior to taking the helm at the restaurant. “We try to keep our prices low and keep our customers coming back. The majority of our customers, we see them two or three times a week.” The restaurant also offers a host of breakfast selections from 7 to 11 a.m.

As a way to service its growing Japanese customer base, Blue Water Shrimp & Seafood currently has two locations in Japan (Odaiba and Yokohama), and is looking to expand in the market. ittle Village Noodle House stands out among Chinatown restaurants for its modern take on Chinese fare presented in a fun, upscale setting. While the eatery has been located on Smith Street for 12 years, owner and chef Kenneth Chan brings more than 30 years of restaurant experience to the table. With a never-ending fusion of flavors that represents multiple regions of Chinese cuisine, there’s something on the menu for everyone to enjoy. When it comes to the establishment’s Northern-style dishes, Hot and Sour Soup is in a league of its own. Loaded with healthy components and bursting flavor, this dish comes together with a keen balance of ingredients.
Black fungus, also known as dried fungus, is a commonly used ingredient in Chinese cooking, renowned for its crunchy texture and mild flavor, which is perfect for absorbing all the hot and sour goodness. It is said to have many health benefits as well, including improving circulation.
The soup base is the secret to this dish’s success. Derived from three different soy sauces as well as rice vinegar, the broth is unique to Little Village. It also features pepper extract to give it a spicy kick, and a touch of sesame oil is added right before serving.
Green onion, bamboo shoots and shiitake mushrooms diversify the flavor of the soup and give it a fresh, healthy spin.
According to Chan, Little Village’s Hot and Sour Soup is a traditional dish made with a special touch that stems from an old family recipe. You won’t find this distinct flavor anywhere else, so it’s no surprise that the dish is one of the most popular items, and by far the most popular soup.

woop up these golden wings. Voted “best poultry” at the 2005 Taste of Honolulu, where they made their debut, The Mandalay’s Deep Fried Harm Ha Chicken Wings ($9.95) are still winners. Locals were so taken by the lightly battered and golden-fried wings served at Taste of Honolulu that they flocked to The Mandalay, prompting the restaurant to permanently add the wings to the menu. While they may look ordinary, these aren’t your typical wings. What’s special about them is the traditional Chinese shrimp paste, harm ha. Combined with and marinated in Chi-

nese wine, salt and pepper, it’s what provides the flavor for the succulent wings and makes sauce unnecessary. “Americans created the Buffalo chicken wing; What’s special there is the sauce, but ours is marinated — the sauce is in the chicken,” Linda Chan, owner and manager of The Mandalay, explains. The wings, not traditionally Chinese but a unique
creation of The Mandalay’s chef, appeal to all. “Because it’s a deep-fried chicken wing, American people recognize them, but also Chinese people like them because we add the harm ha sauce to them,” says Chan. Eggs 'n Things Get a sweet start to your day with a dessert-like breakfast option. Enter Eggs 'n Things' Sour Cream Lemon Crepe ($12.75) and Fresh Lemon Crepe ($11.25). I've been on a crepe kick for the past week, so when Robby Takahashi, manager of the restaurant's Piikoi location, presented me with these outstanding creations, it felt like Christmas morning in April! Amen to that!
“Our crepes are made from a secret recipe, but I can tell you that the flavors of cinnamon and nutmeg are rather prominent. When the kitchen staff makes crepes, the entire kitchen smells like Christmas,” Takahashi explains. As for the Sour Cream Lemon Crepe (my personal favorite), here you have three wonderful crepes, as the foundation of this dish, filled with sour cream and topped with more drizzles of sour cream, fresh lemon and a dash of powdered sugar. Unique? Yes. Big enough for sharing? Definitely. Can you have some of mine? I think not. It's way too good to share. You'll have to get your own. Yet, if sour cream isn't your cup of tea, opt for Fresh Lemon Crepe, which features three original crepes garnished with fresh lemon for squeezing. And you'll have to adorn both crepe creations with citrus syrup comprised of orange rind, sugar,

pineapple and lemon juice. Spread a hint of this good stuff on your crepes, and you'll be praising the breakfast gods. “These crepes are available all day,” Takahashi says. “They're perfect if you're craving a lighter dish.” On another note, Eggs 'n Things' Piikoi establishment recently began to offer a few alcoholic beverages, including beer, wine and champagne. 53 By The Sea A palace of elegance and luxury is 53 By The Sea. Enter through ceiling-high double doors, where a grand staircase and an equally impressive dining experience awaits you, not to mention picturesque views of the South Shore and Diamond Head seen through the
floor-to-ceiling windows. The cuisine here offers flavors of Southern Italy, Hawaii and Japan, and fresh, locally grown produce is a priority. Upon my most recent visit to the establishment, executive chef Thomas Ho presented an alluring appetizer of Lemonade Crab Cake ($19), featuring five pieces of breaded crabcake with a sumptuous lemon puree garnished with radish and frisee. Trust me when I say that the puree has a strong resemblance to lemonade. “The lemon puree is a blending of lemon juice, sugar and salt. We blanch the lemon peel at least four times to get rid of the bitterness,” Ho says. “The puree is then finished off with mascarpone cheese.” “Lemonade” never tasted this good! 53 By The Sea 53 Ahui St. 536-5353

Stage’s most popular dessert, the Very Decadent Cake ($10), is just that. Decadence is the highlight of this dish — and it's perfect for all chocolate lovers. “The ice cream on this dish
is a butter popcorn ice cream, and the bottom is Nutella powder with salted caramel sauce (fleur de sel caramel),” Sabey says. “The Very Decadent Cake is similar to eating a truffle. It's really rich, but to me, if I do something with dark chocolate, I just go all out.” While the dark chocolate maintains its iconic rich flavor, the texture is light. Sabey pairs this dish with comet-like
pieces of dark chocolate, which add to the aesthetics of the dish. Other desserts on the menu also include the Lilikoi Creamsicle ($10), Warm Pineapple Crisp ($9), Vietnamese Style Coffee Flan ($9) and Ginger Spiced Carrot Cake ($9). Stop in for delicious food, excellent drinks and stay for the desserts. 1

tage Restaurant in the Honolulu Design Center has a grand finale of desserts to choose from, and each dessert will not only please your palate, but your eyes as well. The Brown Butter Banana Tart ($9) is a melting pot of textures with an amaretto streusel topped with maple-glazed pecans. “I really like to pair bananas and also vanilla bean (creme anglaise), which is the sauce,” says pastry chef Cainan Sabey. Sabey also puts his own spin on the wellknown peanut butter cup with Stage's Chocolate Peanut Butter Cup ($9). “I use maltodextrin, a starch, to turn peanut butter into a powder (peanut butter sesame powder), and the bottom is panna cotta with organic milk chocolate,” he explains. And it's not just chocolate that highlights this dish. Sabey also includes

ith a menu that serves up smoked meats, ribs, chicken, pork and brisket and more, Molly's BBQ and Seafood has always been a meat lover's dream come true. “All of our meats are cooked within direct heat using wood,� owner Margaret “Molly� Walker explains. But there are some big, exciting changes coming to Molly's, and it's not just in the restaurant's name. You may know the eatery by its former name, Molly's Smokehouse. But about a year ago, it changed to Molly's BBQ and Seafood to reflect the changes it is undergoing. “We are not just barbecue any longer,� Walker

We have country food, and we like it country good,� says Molly's BBQ and Seafood owner Margaret “Molly� Walker of her Wahiawa eatery. Walker first had the idea to open a barbecue joint shortly after moving to the Islands in the 1990s. Walker, originally from Texas, moved to Hawaii with her husband from California for their jobs with the military. Walker says that while they liked the food in the Islands, it was an adjustment initially. When they first came here, there were not many restaurants that they recognized, and they missed certain foods. She says that she heard a similar longing for barbecue foods among others she knew here and decided to take matters into her own hands. “Those kinds of foods just were not available,� Walker says. “We brought a concept of barbecue that was not existing here in Hawaii at the time,� she says. “This is smoked meat, which is the way they do it in Texas. “Coming from Texas, barbecue is like plate lunch here in Hawaii,� Walker adds. “You get it on every corner, every place and everywhere.� Walker started out by taking her food around to various community fairs. “We were just really testing the market to see if our concept of barbecue would be accepted and successful here in Hawaii,� she says. “And it turns out that it was.� Walker opened the restaurant a couple of years later. More recently, the restaurant has been expanding its menu and now, customers certainly will find more than just barbecue. And Walker says that another thing that sets her restaurant apart is the fact that everything is cooked in-store. “We like to use natural ingredients and local if we can find it,� she says, adding that its ingredients include Ewa sweet onions and other local produce.

throughout May and June. As a Mother’s Day special, Molly’s will combine two of its popular dishes to create the Blackened Catfish and the New Orleans Shrimp ($25), which is served with a roasted potato and a salad. “The catfish is grilled Cajun-style and it is topped with a roasted pepper butter,� Walker says, noting that it is a possibility that the combination will become a permanent addition to the menu. For a good way to complement Molly's new cuisine, Walker recommends the Mexican Shrimp Cocktail ($10.50), which is accented with a variety of spices and served with a

side of chips. Walker says it is a great foray into the new “Tex-Mex� offerings at the restaurant. “We are going to continue to expand on those
types of food,� she adds. “We are trying to give customers more options for what they can experience at Molly's.� Those aren't all the changes coming up for Molly's. In addition to expanding its menu, it also is set to undergo remodeling soon. After that, Walker hopes to be able to serve beer and wine. “Just stay tuned,� she says. “We are working on a lot of things. We are changing and expanding.�

Located on the second floor of Dole Cannery, the Pomaika’i Ballrooms is the most recent venture of FCH Enterprises, the powerhouse that manages Zippy’s Restaurants, Napoleon’s Bakery and A Catered Experience. After undergoing an extensive six-month renovation, the facility now boasts more than 18,000 square feet, making it the ideal venue for everything from small, intimate gatherings to large-scale events. Fully staffed with seasoned veterans from the hotel industry, the ballrooms offer a warm and elegant ambiance with catering and entertainment capabilities.

“We tailor our services accordingly to the client’s needs and offer special packages for almost any public event from weddings to graduation parties to corporate meetings,” says Jeff Marcello, general manager of Pomaika’i Ballrooms. “Our downtown location and affordable prices make the ballrooms the perfect venue for any occasion.” Under the oversight of executive chef Freddie Billena, the Pomaika’i Ballrooms offers an impressive menu complete with breakfast, lunch and dinner options. The Buffet Medley Lunch (starting at $26 per person) allows customers to choose four salads, two entrees, one hot vegetable and one starch dish.
