H
appy Sunday, Ono readers! I just returned from a fantastic vacation in New York City full of Broadway shows (Kinky Boots and The Book of Mormon were my favorites), shopping, sightseeing … and, oh, did I mention eating as if there was no tomorrow? Well, yeah, that too — obviously! I loved being back in my favorite city, where everything goes and all so-called “diets” go out the window for a bit. Say “hello” to Buttercup Bake Shop cupcakes for breakfast (Devil Dog cupcakes are the best at this Second Avenue bakery, by the way), mile-high pastrami and corned beef sandwiches for lunch at Carnegie, authentically Italian homemade pasta for dinner, and can we say New York cheesecake for dessert every night? Of course! My oh my, this girl was in heaven and has returned 10 pounds heavier, mind you. Well, now that I’m back home, this week, it’s time to get back on track with relatively healthy eating. tercress fare to help cleanse my ever-indulgent palate. As the oldest known leaf consumed by humans, watercress is botanically related to garden cress, mustard and radish — all renowned for their peppery, tangy flavor. For many, watercress may be an acquired taste, but having grown up enjoying watercress soup made by my mom, this vegetable rich in iron, calcium and folic acid is right up my alley. I live by the saying, “Everything is best in moderation,” but now I must wean off the sugar and embrace all that is watercress!

pastry from Patisserie La Palme D’or isn’t just an indulgence for your taste buds. Each item is intricately and uniquely crafted. The mere act of sitting down at the table and looking at it — with your camera, if you are an avid fan of photographing memorable food experiences — becomes an act of pampering yourself. Which is why, with Mother’s Day quickly approaching, gifting a pastry (or a few) from La Palme D’or should seem the obvious — and delicious — answer to showing your appreciation for all your mother has done in your life. If you are new to the patisserie, this also is the perfect time to sample a few of its offerings. Two cakes will be available Saturday and Sunday on Mother’s Day weekend. It also is recommended that you order in advance, since your sweetest cravings will be created on a first-come, first-serve basis. Each cake comes topped with a “Happy Mother’s Day” decal, which also is transferrable to any of the other cakes La Palme D’or offers, if your mom already has a favorite. The first is Banana Nut Cake ($37 small, serves four to six; $26 extra-small, serves three to four; $4.95 a slice). This dessert makes its sea-

sonal debut for the Mother’s Day occasion, and is a new flavor executive chef Akiko Kimura experimented with. “I wanted to try a new taste,” she says. “Most people like banana — that’s why I wanted to incorporate banana.” Consisting of a bottom
layer of chocolate sponge cake and topped with a hazelnut mousse featuring hints of Maui Dark Rum, the subtle banana flavor adds an elegant twist to a feel-good classic. Like all desserts offered by La Palme D’or, it is topped with eye-catching adornments of

caramelized banana, walnuts and chocolate. The second cake is for the mother who thinks chocolate is the answer to everything. the bottom is made with less flour, making its texture extremely soft and fluffy, allowing it to blend nicely with the other two layers: milk chocolate blended with raspberries in the middle, and white chocolate with vanilla beans on top. It is then topped with strawberries, raspberries and thin, pink-marbled white chocolate circles, giving it a

contemporary flair. With a case full of singleserve decadence, you also may find it tempting to create a collage of desserts. You won’t have to worry about disappointing with any selection. The Parisian-inspired patisserie, which infuses Japanese flavors, is rooted in Kimura’s skilled dedication to honing her craft. “I start with the easy job, and then learn that first,” she says. “If I can do that (without any) mistakes, I can take the next step.” Kimura, who has been with La Palme D’or since 2009, says she practices multiple times with a variety of ingredients, and always thinks of taste first. Staring into the glass case, entranced by nearly 30
hand-crafted pastries is almost as good as eating it — but you’re going to want to eat them. Picking among nearly 30 single options is going to be both enthralling and challenging. But, we eat with our eyes, and in this case, everything is as good as it looks, so there are no bad choices. The blend of multiple flavors and textures found in Berry Cup ($3.85) is both visually pleasing, with its colorful mixture, and subtly sweet. A parfait of sorts, although certainly more sophisticated, it consists of cubes of New York cheesecake, a tropical fromage (mousse), gateau au fraise, raspberry jelly, crunchy white chocolate strawberry flakes topped with whipped cream

and fresh berries. Another selection to sample from La Palme D’or’s case of sugary goodies is Sweet Bliss ($4.95). It made its debut this past Valentine’s Day, but has remained on the menu. It is both memorable and easy to spot, with the petite macaroon on top that will undoubtedly catch your eye. Others you are going to want to try, or return for, are La Macha ($4.45) and Mont Blanc ($5). Of course, the best solution to solving the dilemma of narrowing it down to a few choices is to come back for more.

Since meat is unlimited with every order, there’s no harm in going back for seconds, or thirds — or eighths! “We just keep coming back to the table until the customer says ‘no more,’� explains Da Silva. A host of sides — such as rice, black beans and fried bananas — accompanies each order. Available from 5 to 9:30 p.m., Tuesday through Sunday, Da Silva suggests making a reservation and noting that you’d like to try Brazilian Rodizio, so the kitchen can get the grill fired up.

hen Trigo Da Silva, one of Oahu’s latest restaurateurs, decided to open Adega Portuguesa on Smith Street last year, he wanted to share the culture and cuisine of other countries with Hawaii. The owner has since created a unique dining experience filled with traditional Portuguese and Brazilian fare as well as live music in a fun setting. It’s safe to say he’s achieved his goal — and then some. Originally from Lisbon, Portugal, Da Silva shares his culture through a range of authentic eats that give diners the opportunity to try Portuguese dishes beyond the realm of familiar classics we know and love in the Islands. He also puts Brazilian fare in the spotlight, just as it is in Portugal, where the two countries have been historically linked for centuries. “Back in Portugal, we have Brazilian restaurants everywhere. The two countries, the cultures are very close and they share the same language," says Da Silva.

apan has sushi, Mexicans have the taco, and the French, the crepe. For Koreans, or Korean food enthusiasts, it’s ssam. This month at Million Restaurant, ssam is one of the new specials. Translating to “wrapped,” ssam is made by wrapping leafy vegetables around meat, vegetables and condiments. It’s low carb with a crunch, satisfyingly savory and can be customized with condiments ranging from mild to spicy. Million offers a number of fixings in its JaeYook Gool BoSam: steamed sliced pork belly with the added option of raw and fresh-from-Korea oysters, house-pickled won bok (also known as napa cabbage, the common kim
chee veggie), pickled daikon and plenty of condiments (thinly-sliced raw garlic and hot green peppers, miso paste and shrimp sauce). It’s priced at $21.95 with pork, and $25.95 for both pork and raw oyster. Million manager, Kyung Sook Park, explains the best way to build the perfect ssam — literally a hands-on

experience. First create a foundation: lay the stalk end of a piece of won bok on your open palm, then place another from the leafy end on top at a right angle. This creates a substantial base, “so it doesn’t spill,” says Park. Next, choose your fillings: a piece of pork, a fresh oyster and a couple red strips of spicy, pickled daikon. Finally, select the condiments: slather on some miso paste for a hit of umami flavor, add a bright kick of fresh green pepper and pile on the gar-

In addition to the oyster, or gool, offered as part of the ssam dish, Oyster Jun ($15.95) also is at Million. The mollusk morsels are minimally seasoned, coated in flour and then dipped into egg before frying. This way, the egg, rather than the batter is prominent. Soak up some shoyu with added spices and green onions before popping one into your mouth.

fter developing a love for easy-to-make french fries and other tasty comfort food as a youngster, Paul Park decided to offer diners the same experience via his “Won of a Kind” fried won ton poppers. Park opened Paul’s Poppers three years ago at its convenient North King Street location near Honolulu Community College and Costco Iwilei, behind the Jiffy Lube in King’s Gate Plaza. While the culinary craftsman initially pursued an education in the field of biology, worldwide travels and experience in the restaurant business led him instead to open his own eatery. The restaurant specializes in bite-sized won ton creations known as poppers, which are crafted fresh by hand daily, and feature more than 20 flavor combinations. Customers are treated to a simple ordering system: select a flavor, and choose
from Half Order ($5 for six poppers), Fryer’s Dozen ($12 for 15 poppers), Fryer’s Delight ($30 for 40 poppers) and Tailgate Platter ($75 for 100 poppers). Some of the best-selling flavor concoctions include Spinach Artichoke, 3 Cheese Jalapeno, Pork Original with pork, jalapeno and Cheddar, and Mac and Cheese. And, don’t forget to indulge in the popular Dessert Poppers ($5 for three), such as Chocolate Peanut Butter Decadence and Strawberry Cheesecake. “I always thought I could make food better,” Park says of his tireless tinkering with flavor combinations and preparation techniques. “My girlfriend and I always liked the jalapeno cheese poppers lots of people are familiar with. Two years after creating my first popper, I had friends buying them from me 50 at a time. I started out with three flavors, and they’ve continued to grow from there.”

But, after fielding multiple requests from his growing customer base over the years, Hashigami has expanded the menu, which now features more than 80 Japanese-inspired dishes. Chinpei Ramen currently offers a vast array of items made from scratch daily, and utilizes all-natural soups and broths in its ramen selections. The restaurant also has multiple vegetarian options, offers glutenfree rice ramen noodles when local supply allows, and its dishes are free of MSG. His father, who operated a restaurant in Japan for 55 years, had such a tremen-

opens for dinner at 5 p.m. Upon visiting, diners are encouraged to offer up ideas for new menu items, and one should not be surprised if Hashigami ends up adding the dishes to his collection so that others may enjoy them, too.

using local influences and flavors into its sushi dishes, Genki Sushi has been a go-to spot in the Islands for years. Genki, which has 13 locations statewide, serves up kaiten sushi, or sushi served on a revolving conveyor belt. While this has become a popular concept these days, Genki Sushi consistently is providing its customers with new items. Genki is constantly making an effort to see what its customers like ― and changing the menu accordingly. “For people who come often, of course they are going to have their favorites,” says director of purchasing David Moon, “but we also will provide them with something different to try. “We try to change the menu at least once or twice a year,” Moon adds. “That way, it keeps things fresh.” He assures, however, that customer favorites are not going anywhere. One of these menu changes took place May 1, and now Genki has 13 new

One thing they found, for example, is that diners love fried items. So, to please palates, the new menu includes a variety of fried creations. These include Chicken Wing ($3.80) and Ahi Kabob ($4.80). Another new one is Fried Tamago ($2.20). According to Moon, children love the regular Tamago, so this one should be a hit with kids. Another new fried dish is Ika Karaage ($2.80), which features perfectly breaded squid that will please even squid skeptics. It is marinated with ginger and deep-fried for a tender, flavorful result. And for another ika delight, try Ika Gesso ($1.50), which features two pieces of tender squid.
In a simple tweak on a classic dish, Genki has created California Tempura Roll ($2.80), which takes the California Roll and dips it in tempura batter, covered in a slightly sweet sauce. And for another crab dish, Spicy Crab ($2.20) packs just the right amount of kick with tender bits of crab. One thing Genki has been doing recently is trying out different desserts. Its latests addition is Sweet Potato Cinnamon Puffs ($2.80), a bitesize, melt-in-your mouth treat. quick word of advice: If ever someone utters a sentence containing the words “Himalayan Kitchen,” don’t wait for the inevitable conclusion regarding your interest in a Nepali and Indian lunch or dinner. It'll just cut into your appetizer time. In this case,

haste is a virtue. The four-year old Kaimuki restaurant is a must for anyone who likes fresh, spicy and flavorful cuisine. And don't let the word spicy cause fear. It's a relative term that chef and owner Suman Basnet is more than happy to customize for individual taste. Of course, that's easy to say for a confirmed fire eater, but I have the heat tolerance of a four-year old, and the combination of seasoning and spices was both tempting and tolerable. Seriously, if you haven't been here, go! Everything is made fresh in house including the yogurt, cheese, bread and spices. On a recent visit, yours truly and his trusted photographer side kick shared Chicken Tikka Salad ($9.95), Hemp Spicy Chicken Strips ($6.95), Everest Choeela ($7.95), Himalayan Saag Dip ($8.95) and Jalapeno Garlic Naan ($4.95). We put a hurtin’ on those pupus and even spent enough play time mixing appe-
tizer ingredients to create who knows how many new flavors. Chicken Tikka Salad is a cool, fresh mix of lettuce, mint, tomato, cucumber, cashews, raisins and tandoori chicken served with two dressings — a mustard vinaigrette and a house green chutney and cilantro dressing. The refreshing salad is not only tasty, but makes an excellent palate cleanser for what is about to come next. In fact, if you also like playing with your food, mix the salad with the Everest Choeela. A cold-served mix of tandoori chicken, cumin, coriander, tumeric, tomato, onion, jalapeno and lemon juice, Everest Choeela is so full of flavor and surprisingly light you'll wonder why you haven't tried it before. Each bite is fresh, crunchy and popping with flavor. The pool of juices also makes a good repository for the naan, or crunchy segments of bread that come with the Himalayan Saag Dip. Figuring out which to dip isn't an easy assign-
ment. Himalayan offers 14 different types of bread that includes the traditional soft leavened flat bread and mix and match combinations guaranteed to never become repetitive. I recommend trying a few as the Himalayan Saag Dip is plentiful enough for experimentation. The spinach and cream cheese dip is mixed with a blend of house-ground spices that produces a spread flavorful enough to “edibilize” a shoe. Even an old shoe worn too long by a coworker enthralled with “petable” rodents. Yes, it's that good. The Himalayan Saag Dip comes with tandoori naan that is baked and deep-fried to create crunchy platforms of dipping implements, but feel free to try it with any number of the other offered starches. One final note on the Hemp Spicy Chicken Strips — they are hot! But, like anything else, can be dialed down. The bite-sized pieces of chicken are marinated in a combination of spices and grilled in the tandoori oven, resulting in a flavorful and moist appetizer that is sure to please.

W
hen Rakuen Lounge first opened in Honolulu’s famed Chinatown district almost two years ago, it was the only sushi restaurant in the area. Since then, although similar establishments have come and gone, Rakuen Lounge still remains at the top of its game. While a good majority of the dishes follows a contemporary style, the menu also offers a variety of traditional Japanese nigiri and sashimi. “We offer the staple Japanese dishes, but also recognize that newer generations appreciate more contemporary sushi combinations,” says Anthony Carll, owner of Rakuen Lounge. “Our rolls are creative, colorful, but most of all delicious.” Popular rolls include Mr. Miyagi ($15), a savory combination of California roll, spicy tuna, avocado, togarashi aioli and unagi tare. Hamachi Jalapeno ($15) consists of a crab base with hamachi, jalapeno, yuzu pepper and ponzu sauce. For something vegetarian, Bonsai Tree ($10) includes avocado, shiso, daikon tsuma and ’Nalo greens with an ume shiso vinaigrette. “Our customers appreciate that the food is consistently fresh and generous in portion,” says Carll. “Everything comes straight from the fish auction and is never frozen.”

Rakuen Lounge’s executive chef Ernie Gray, formerly at New York City’s Nobu and downtown’s Uncle’s Fish Market & Grill, brings his experience and artistic ability to the sushi scene. “Ernie is an artist at heart, and combined with his culinary skill, puts out some amazing dishes,” says Carll. In harmony with the restaurant’s dedication to high-quality ingredients, Rakuen Lounge only uses Hawaiigrown ingredients. “We are proud to say we only use Waimanalo baby greens and try to use organic as much as we can,” Carll ex-

ond Tuesday of each month, the lounge features Taco Tuesday, when diners can order any ingredient in a won ton taco shell. Several days of the week, the restaurant hosts DJs, as well as live entertainment, including famed blues musician Rico Waltz Thursday nights. Not to be forgotten is the lounge’s much-celebrated happy hour, which is available from 3:30 to 7 p.m. and 9:30 p.m. to midnight. Diners may choose from a number of rolls and shareable appetizers along with almost 20 different bottles of sake and beers on tap. While customers are usually first drawn to Rakuen Lounge for its bold, flavorful dishes and entertaining dining atmosphere, they return because of the restaurant’s welcoming attitude and customer service. “In a sense, Rakuen is kind of like Cheers because we know everyone’s names and what they like to drink and eat,” says Carll. “At the end of the day, this place is for people to relax, have a good time and enjoy delicious food.”
