R

aised in a family with food-forward parents such as mine, who served dinners comprised of Caprese salad, ravioli, gnocchi, rack of lamb with rosemary and watercress soup, dishes such as macaroni and cheese seemed surprisingly exotic. I probably can count on one hand how many times my mom served this old-fashioned American classic. To be

honest, as a kid, macaroni and cheese made its rare appearance out of a box when, for some reason, my mom was on a business trip, and my dad and I were left to fend for ourselves (my dad possesses very few cooking skills, but I love him regardless). Yet, over the years, I’ve grown accustomed to this “comfort food,” especially during college. When dorming, Easy Mac kind

of became a staple. However, other than Easy Mac and macaroni and cheese out of a box, my palate knew no trace of authentic macaroni and cheese — that is, until recently. This week, forget the mac and cheese that includes powdered cheese and margarine. Instead, bring on dishes affluent with several beautiful cheeses, 100 percent real butter and even truffle oil and braised short ribs! Here at the following Ono, You Know locations, we have the Chanel and Prada of macaroni and cheese. My taste buds are in heaven … and I can get used to this! It’s a full-fledged “mac attack”!

Kissaten Coffee Bar The name says it all, for those addicted to coffee, Kissaten Coffee Bar, a contemporary 24-hour establishment located on Piikoi Street, can offer you your caffeine fix. It also presents its patrons with a chill spot — an escape from the hectic, on-the-go lifestyle. Vibrant orange hues plaster the walls and countertops, yet it’s the gorgeous array of fusion cuisine which permeates the menu that awakens my senses and excites my palate. food with a gourmet twist, encompassing Japanese, Italian and French culinary influences. Open for breakfast (6-11 a.m.), lunch (11a.m.-10 p.m.), dinner (11 a.m.10 p.m. and late-night dining (9 p.m.-6 a.m.), Kissaten is an early bird’s and night owl’s dream come true. My top-pick at Kissaten is easy! I’m all about Truffle Mac n Cheese ($10.75). Me, oh my! Who wouldn’t go absolutely crazy for this classically macaroni and feistily cheesy dish? Imagine a bowl full of al dente penne pasta covered in a homemade cheese sauce, which perfectly highlights the hearty taste of aged white Cheddar cheese. Pieces of tender chicken breast also complement the dish, which is topped with bread crumbs, bacon lardons and Parmesan cheese. A crispy exterior and gooey interior is the ultimate pairing! HEN NOTEWORTHY GUESTS, SUCH AS PRESIDENT BARACK OBAMA AND FIRST LADY MICHELLE OBAMA, AS WELL AS THE LATE KING OF POP, MICHAEL JACKSON, HAVE DINED AT SEAFOOD VILLAGE CHINESE CUISINE — AND ARE FANS OF THIS LEGENDARY RESTAURANT — YOU KNOW IT HAS TO BE GOOD. Located on the lower level of Hyatt Regency Waikiki Resort & Spa, Seafood Village is in a league of its own when it comes to Chinese fare, and has been enticing diners with its traditional Hong Kongstyle cuisine for the past 20 years. “We have a very broad customer base,” says manager Johnson Ma. “Our patrons come from as far as Australia, China, Japan, etc., and then we also have locals who don’t mind coming to Waikiki.” And for Hawaii residents, the restaurant’s kamaaina dinner — a local party prix-fixe menu — is good reason to pay a visit to the nostalgic landmark of diversity that is Waikiki. Priced at $24.95 per person (party of four or more required), this eight-course feast begins with a refreshing Duck Salad with Oriental Dressing, featuring a bed of salad adorned with meaty morsels of duck, won ton strips and bits of sweet tomato splashed with a

sweet and savory Oriental dressing. The dining experience then builds up with a decadent appetizer comprised of Shrimp and Scallop Wrapped in Bacon, followed by Live Dungeness Crab — Country Style, that’s doused in a sauce infused with pork, black bean

sauce, green peppers, round onion and egg. “One of the top local sellers is Honey Glazed Walnut Shrimp, along with Roasted Peking Duck served with pancakes or buns,” Ma continues, raving about these deserving entrees that steal the show. “Chef So has really per-


fected these dishes.” Originally from Hong Kong, Seafood Village’s executive chef So Shu Chen relocated to the Islands in 1990, and has headed the kitchen at the restaurant for the last four years. “I was trained in Hong Kong in 1978 and learned everything from a famous chef there, who was ranked among the top 10 chefs in Hong Kong at the time,” Chen explains. “He was my mentor.” To add to this elaborate meal that’s available upon request for dinner and all day today (Mother’s Day) from 11 a.m. to 2 p.m. and from 5 to 10 p.m., Chef So also cooks up an assortment of sauteed seasonal vegetables and Chef So’s mouthwatering House Fried Rice, a signature family favorite mixed with pieces of pork, shrimp, egg, green onions and a slew of special

seasonings, which remain under wraps. Finally, take your time, cleanse your palate and tempt your sweet tooth with melt-in-your-mouth mango pudding that results in the sweetest of endings. So, just how did these upscale “comfort food” creations make their way onto this A-list menu when there’s an abundance of appetizers, salads, soups, seafood, stir-fry selections and sizzling platters to select from? Two words: universal appeal. These favorites have been an integral part of the local Chinese dining experience for generations. caters to every occasion. Currently, the restaurant is preparing to host an abundance of graduation parties. “About four years ago, we received recognition for dining excellence in Chinese cuisine by Chinese Restaurant News. We ranked top six out of 100 restaurants. We’re very proud,” Ma says.

In fact, until this day, Chef So proudly wears his medallions acknowledging this honor. “Everyone should give us a try,” Ma says. After all, Chinese food does bring people together and lends itself to a party-like atmosphere with its family-style dining concept.

Happy hour Chinese flair at Jade Dynasty

I

t’s not often people combine the ideas of Chinese food and happy hour, which is a shame. The very nature of many Chinese specialities make the cuisine a natural match for beer, wine and cocktails. If there is a traditional downside to the idea, it’s that many Chinese restaurants lack the full bars necessary to create such an option, at least that used to be the case. Jade Dynasty in Ala Moana Center is trying to change that notion with the creation of new signature drinks created by the staff at Southern Wine & Spirits. The cocktails match a menu that features items both new and familiar at reduced happy hour prices.

choice, though it would be difficult to find a better match with a cold after-work beer than Beef Tendon ($4.95). This new menu item features cuts of beef tendon that is braised for three hours, mixed in a sauce of vinegar, sesame oil, chili sauce and shoyu, and chilled before serving. The result is a spicy, chewy, mild beefflavored appetizer that is tasty, but not too filling, leaving room for more beer. Another good, and new, cocktail match is Lobster Crackers ($2.75). If you are thinking of pink, green and yellow shrimp chips — don’t. These actually have texture and flavor. The large, crunchy crackers are made with tapioca starch and mixed with eggs and lobster flavoring to produce a clean and simple flavor that won’t overpower any choice of beverage. If you’re not in the mood for the new menu items, the old standards still get the job done. Steamed Pork Dumplings ($2.75) are still moist and tasty, Salt and Pepper Fried Tofu ($2.75) is light and mild making it a good match for any of the new cocktails. If there is one favorite among the reduced priced appetizers it is Snow Mountain Char Siu Buns ($2.75). Sweet and savory, the mini baked manapua is soft and flaky with a tender dome supported by a firm crispy base. They come three to an order and if that’s not enough, you know what to do.

uccess in the restaurant business these days takes creative restaurateurs who truly understand their customers and are savvy about location without compromising their chefs’ culinary expertise and experience. At Sakura Restaurant, coowners Jun and his brother, chef Ryo Tsuchiya, who hail from Japan, knew instinctively that in order to please the palates of Hawaii’s diverse population and find their own niche, it made sense to offer something unique. The eatery not only presents exceptional authentic Japanese dishes, such as its mouthwatering Miso Tofu ($8), but adds a Western touch to its menu as well. Call it cultural crossover cuisine. ynonymous with summer and blushing with deep red, now is the time for strawberries. And Sean Santiago, general manager at Gyu-Kaku in Windward Mall, is excited to share them with you in the seasonal Homemade Strawberry Cream Pie ($6.50). “I’ve been waiting all year to bring it back,� says Santiago. The non-baked pie has a hand-pressed graham cracker crust filled with

marinated yakiniku-style meats and vegetables, finishing with the Strawberry Cream Pie will take you to cloud nine. “It’s a nice, cool, clean compliment to the meal because it does use fresh fruit, and when you do taste it there’s a lot of lemon juice and lemon zest and it just comes right off the tongue,� says Santiago. And you can take his word for it. “Between myself and the ownership group, we’ve got about 45 years of restaurant experience all

put together,� he adds. So Santiago knows how you’d like to end your meal. He and the other managers are the only staff who make the pies fresh. The recipe is a replication of (and improvement upon) a similar treat Gyu-Kaku’s owner delighted in while on vacation.

Leave room and experience the ying-yang balance achieved in this slice. It’s as nice as pie. The slight crunch of the crust holds up against the fluffy creaminess of the filling. Tangy lemon and crème fraise entice when paired with sweet cream cheese and strawberries. The balsamic vinegar, mellowed with caramel, adds complexity and spice to the whole. “You’d have a hard time sharing it, because you’d probably want to eat most of it,â€? says Santiago. f home is where the heart is, then, of course, there’s a special place in the hearts of many for Ocean House in Outrigger Reef on the Beach hotel in Waikiki, a homey oasis, where guests — visitors and locals alike — are encouraged to sit back, relax, relish in marvelous cuisine and enjoy picture-perfect oceanfront views. According to executive chef Aurelio Garcia, Ocean House’s Grilled Teriyaki Ahi Steak is the pinnacle of famous island fare, and is as healthy as it is delicious. Fresh, local watercress doused in a tamari sesame vinaigrette pairs nicely with the fish and tofu cakes. “Tamari is gluten-free, and it really attracts our guests who don’t or can’t eat gluten,” Garcia says.

Eight ounces of tender Yellow Fin Tuna is grilled and glazed with a special homemade teriyaki sauce infused with Aloha Shoyu, ginger, garlic, sake, green onion, a squeeze of lemon and a dash of sugar. Sesame seeds are sprinkled atop the fish for some added texture.

“Here you have one of our healthier menu selections, and we’ve noticed that many patrons are leaning more toward healthy options, which feature fresh, local ingredients. We’re happy to give them that choice,” Garcia says.

erving up a variety of Asian foods — primarily drawing on Chinese and Japanese influences — with a little local inspiration, Asian Mix has more than 70 dishes to choose from. We cover a lot of different things,” says Daniel Leung, who co-owns the restaurant with the head chef. “People come in and they may eat Chinese food, or a Japanese bento, or ramen, or maybe a local favorite lunch plate — you can get all of that here.” Asian Mix celebrated its one-year anniversary last week. Leung explains that the restaurant has spent the last year on a constant quest to stock the menu with quality items that are popular with customers. We continually work on changing the menu, and we keep adding on (more items),” he says. One item that is surely here to stay because of its immense popularity is Salmon Bento ($6.95), which features

salmon raised in Chile. “We tried many different salmon in the beginning, and it turned out that this is the best one, so we will stick to it,” he says. “The salmon is lightly salted and very soft,” he adds. “And it is the same quality every time we make it.” Leung says the bentos are especially convenient for customers who want to grab a quick, yet quality and filling meal to go. “They don’t have to really wait for the bento at all — they just pick up, pay and go,” he explains.

efore opening Asian Mix last year, owner Daniel Leung ran another restaurant — a more formal sit-down establishment — for years. But he wanted to create a place for people to get both quality and convenience. “We wanted to offer good-quality food to take home,” Leung says. “People are so busy, and here they don’t have to cook, they just stop by.” Leung first started working in the restaurant industry as a server, as a way to put himself through high school and college. While studying architecture in college, Leung’s friend asked him to help set up his restaurant and assist with some of the building plans. In time, Leung ended up becoming one of the shareholders of the restaurant. “It is hard work, but I enjoy it,” he says of the restaurant business. “You meet a lot of people every day.” Leung also enjoys the Owner Daniel Leung with Salmon Bento process of continually serving his customers — and designing his menu around what will please their palates. In the past year, Asian Mix already has revamped the menu a few times. “We keep trying to make things better and better,” Leung says. “You try to serve food to customers that you feel good about — and sell something you think everybody likes.”

Many of Asian Mix’s meals provide quick dining options without comprising quality. Chicken Katsu ($7.95; mini size for $5.95), which is served with rice and macaroni salad, is a perfect example of that. “That is one of the best-selling items here,” Leung says. “It is a generous portion.” With the summer months on the way, parties and potlucks are fast approaching, too. Asian Mix offers a variety of party trays, including Lo Mein ($18 per tray), which features Japanese yakisoba. Customers can order the tray vegetarian style, which features cabbage and green onion, with the option of adding additional vegetables by request. Or, customers can choose to add meat from a selection of chicken, barbecue pork or beef. “We have found that the Japanese

yakisoba is best made with lo mein for a party tray,” Leung says. “The texture — even when it gets cold — doesn’t change. It is always nice and soft.” For another convenient party option, BBQ Pork ($9.50 per pound) provides a ready-to-go dish that makes a good addition to any meal. The honey-roasted pork is served a la carte, and customers also can choose to add a side of rice for $1. For a sweet ending to your meal, Asian Mix offers various puddings for dessert. “Mango Pudding is really popular,” Leung says. “We have been serving a lot every day.” Also available are Almond Pudding and Coffee Pudding — all cost $2 each and are flavored with cream.

ith great-tasting food and stellar customer service served up at every visit, customers at Pho Mai Han are continually bowled over by the enjoyable experience coupled with flavorful pho and Vietnamese-inspired fare. Pho Mai Han opened its doors last June in Waipahu’s Westgate Center, and in the months since, diners have enjoyed innovative offerings that fuse cooking techniques and flavor profiles from around the Pacific Rim. Owner and Chef Mai Han blends traditional Vietnamese cuisine with popular local and Asian flavors such as those found in Japanese and Filipino cooking. “I really like to cook and share my food with other people as well,” Han says. “I always want to find out what 4 people like best. When customers tell me what they want to see on the menu, I’ll consider adding those items.” Han first learned to cook at age 10 alongside her mother in Vietnam. The budding entrepreneur moved to Hawaii in 1992 and kept alive the hope of opening her own restaurant while honing her craft as a cook. Pho Mai Han is known for authentic home-style cooking. She encourages both new customers and those that may not have been to the restaurant to come and try her food, as the menu is continually freshened with new offerings.

Customers rave about Seafood Pho ($7.50 for medium, $8.50 for large and $11.50 for extra large), which includes shrimp, calamari and fish cake. it n Kitchen’s menu has been well received for the numerous dishes that adorn its pages, and there also is an array of desserts to choose from. The best part about the restaurant’s great selection of desserts is that Kit n Kitchen is open until midnight daily. This means you can satisfy your sweet tooth late into the night. The restaurant’s Crème Brulee ($4.95) is the perfect ending to any meal. “It’s all homemade, and we created a lighter one that’s still tasty,” explains owner Kit Yiu. “Some crème brulee is kind of heavy.” Yiu explains that the crème brulee is served a la carte and also is available with the fourcourse meal. Sun Tan Banana ($4.95; add ice cream for $1.50) puts a new spin on bananas foster and features crispy banana with whipped cream. “We had this for more than 12 years,” Yiu says. “Everybody loves it. It’s crispy on the outside, and it’s not too heavy.” He says it’s a popular dish because it’s refreshing, yet

crunchy, and it goes well with vanilla ice cream. Crepes Suzette ($6.95) features flambé crepes with caramelized sugar, zests of orange and Grand Marnier. “It’s a new hit now,” Yiu says. “Once a customer tries it they have to come back and order it. They always leave room for Crepes Suzette. 1

“We light the Grand Marnier in front of customers, so it burns off the alcohol, and it gives flavor to the crepes.” Kit n Kitchen also prepares a homemade syrup for this dish, made with orange, sugar and butter. Other crepes on the establishment’s dessert menu include Banana Crepes ($6.95), Strawberry Crepes ($6.95), Sweet Peanut ($6.95), Crepes Tiramisu ($7.95) and Princess Chocolate ($7.95). s any fan of yakiniku cuisine will tell you, both Japan and Korea have strong traditions in the distinct style of dining in which customers grill their own meats and vegetables at the table. Luckily for Hawaii’s hungry consumers, Heijouen has combined the two savory traditions into one ultimate yakiniku experience. Located on Kapahulu Avenue, the eatery is the first American venture for Heijouen, a popular chain of restaurants in Japan, which offers a unique blend of Japanese and Korean dishes. “Yakiniku’s already a popular thing in Japan … so (the owners) wanted to find a way to make it their own,” says manager Hiroshi Shimada. Diners may sizzle things up with a slew of grilling options, not the least of which is a sumptuous selection of meat. Beef

Fine Kalbi ($9.80) and Beef Fine Outside Skirt ($9.80), for example, present premium cuts of short rib and skirt steak, respectively. Each portion is hand-selected by head chefs Toukairin Masamoto and Junya Ya-

mamoto, who pay attention to details such as marbleization and freshness for a flavorful and juicy piece — every time. Thick Cut Beef Tongue ($10.80) also is a must, as it’s marinated in a shio sauce with salt, pepper and sesame oil. Unlike other yakiniku establishments, Heijouen is known for its substantial slices of meat, and beef tongue is no exception. Shimada suggests savoring the chewy, yet tender, dish with lemon dipping sauce, a perfect complement to the salt-based seasoning. Masamoto and Yamamoto,

who have both worked at Heijouen locations in Japan, are masters at finding subtle ingredients to pair excellently with the meat’s natural flavors. A sweeter, soy-based tare marinade or spicy miso sauce bring each fillet to life on the grill, while lemon and tare dipping sauces are mandatory for dunking before each bite. In addition to grill-able grinds, the menu is full of a la carte items to round out your meal. Among the most popular are Assorted Kimchi ($7.80), made with cabbage cucumber and daikon, or Choregi Salad ($7.80), topped with a slightly spicy, Korean-style dressing. Heijouen Chige ($9.80) — a Korean stew made with tofu, kimchi, shishito (sweet pepper), shrimp, egg and more — is a traditional way to end your meal. “With the Japanese style, how it normally works is you have your appetizers, then the tongue and other meats. Then you usually end with either a soup, or a noodle dish such as ramen,” explains Shimada. “So this is something that would come out toward the end.” In true Heijouen form, you’ll salivate over the best of both Japanese and Korean eats.

After immigrating to Hawaii, Kakazu’s mother, Young Ok Oh, opened her own restaurant, Young’s House of Fine Foods, the first of many to come. anniversary of her newest culinary venture, HASR Bistro, a quaint country-style bistro in downtown Honolulu. “We offer fine dining quality and dishes but in a casual setting with reasonable prices,” says Kakazu. After the opening of her thriving wine store HASR Wine Company in 2005, Kakazu decided to dedicate her restaurant with the same name, which stems from an acronym meaning “highly allocated, spoiled rotten,” Kakazu explains, “People would call me that because they knew I could get access to certain wines that nobody else could.” The bistro features an array of traditional European dishes, from risotto to pasta to slow-cooked meats and seafood. ney Uyehara, HASR Bistro utilizes rich, concentrated sauces to provide bold flavors. “We grow our own herb garden right outside the restaurant,” says Uyehara. “So, at any given time, we have unlimited access to culinary gems such as chives, thyme, tarragon, rosemary and fresh mint.” Standout dishes include Osso Buco ($18) lunch entree, a dish composed of braised Wisconsin veal cheeks with a Hamakua mushroom risotto in a natural glaze sauce. For dinner, the chef recommends ordering Braised Short Rib ($26) entree, which features a similar risotto alongside a pestocrusted bone marrow. Seafood lovers will appreciate the restaurant’s daily specials, which oftentimes feature a special catch of the day. For something year-round, the bistro’s Seafood Pan Roast ($28) offers scallop, prawn, crab, calamari, mussels, clams and fish in a chili saffron tomato cream broth. “We cook everything a la minute, meaning to order,” says Uyehara. “Instead of pre-making certain parts of the dish, we begin the process as soon as the order comes in, which allows for vastly better quality of food and multi-layered flavors.” In addition to lunch and dinner,

HASR Bistro also offers appetizers and small plates from 2:30 to 5:30 p.m. The restaurant regularly hosts complimentary wine tasting events, as well as live music by entertainers such as Dave Toma and Gail Mack Duo. Diners may purchase any wine from HASR Wine Company and bring it to the bistro with no corkage fee. Although located in the heart of downtown Honolulu, HASR Bistro promises diners a completely new dining experience. “When you come here, you momentarily forget where you are and get transported to another European country or Napa Valley,” says Kakazu. “It’s comfort food at its absolute best.”
