could live off of crab drenched in butter, I’m sure! Yet, I’ve always had a soft spot for soft shell crab. For one, these little critters capture all the irresistible flavors of your everyday crab, but without the hassle. In other words, you don’t have to work for your food. The chore of prying the crab meat from its sharp, thick shell and making a mess of yourself — oh no,

there’s none of that! Secondly, soft shell crab is usually deepfried, and generally speaking, deep-fried anything is great! Soft shell crab is one of those foods which many categorize as restaurant fare. These regular crabs (generally blue crabs) can be difficult to come by, so if you can snag this prized possession, then you’re golden! Here’s the secret behind soft
shell crab. The crab has outgrown its shell and, in order for it to continue to grow, it has to shed its shell, so a bigger one can emerge. The crab forms a “coat” during the shedding process and then puffs itself up to break the current shell. It only takes a couple of hours for the coat to harden into a new shell, so this window of time is precious for soft shell crab preparation. Before the crab’s coat hardens into a full-fledged shell, that’s when chefs will batter, fry, grill or broil these crustaceans to perfection. So, this week, let’s put all crabbiness aside and indulge in soft shell crab bliss. Because, believe me, these soft shell crab masterpieces at the following Ono, You Know locations are definitely something to smile about!
Sushi King There’s something about latenight dining that reigns supreme in my book. Food tastes so much better after 11 p.m., and being that Sushi King continues to serve its sushi specialties and other authentic Japanese favorites until 2 a.m. on most days (the restaurant closes at 10 p.m. Tuesdays), it has become my go-to hot spot for feasting late into the night. Since opening its doors in 1992 at its South King Street location, Sushi King brings consistency to every dish. The establishment employs chefs who’ve gained culinary experience in Japan, and favorites of mine include Chirashi Deluxe, which features fresh – See page 18

Situated within Waikiki Park Heights Hotel, guests are greeted by managers and staff in suits, and it isn’t long before you’re whisked away to your anointed table in the grand dining room, which resembles that of a European men’s club, or to the upstairs dining area also known as the Art Deco Green Room. “Hy’s is very unique,” says general manager Bob
Panter. The restaurant first opened in Calgary, Canada, in the 1960s, and then the Hawaii location opened in 1976. “A lot of the carvings and archways you see in our restaurant come from the Baldwin Estate in Philadelphia, and Dutch and English artwork hang from the walls.” Peruse the menu, and spectacular cuts of filet

spectacular cuts of filet mignon, New York and ribeye catch the eye, and a slew of sides, appetizers, soups and salads make for an eclectic and vivacious dining experience. Show stealers, though, are the handful of filet mignon variations. Garlic Steak ($44.95) is a beautiful piece of dryaged USDA Prime-grade, 7-ounce filet mignon broiled over native Hawaiian kiawe wood. It arrives topped with Hamakua shimeji mushrooms, drizzled with a demi-glaze, beefed up with roasted garlic and then finished off with garlic chips. Steak Oscar is a mouthwatering rendition of the classic Oscar, in which a succulent filet is served glazed in meat drippings on a bed of steamed spinach. Yet, it’s the 3 ounces of Alaskan king crab meat sauteed with cloves of garlic, shallots, white wine, butter, salt and pepper that sits atop the morsel of meat that is truly captivating. For the surfand-turf enthusiast, this off-the-menu creation is a good bet. Finally, Filet Au Poivre ($46.95, off the menu) is presented in all its glory with its nicely charred exterior and medium-rare interior. The meat is kneaded with cracked black peppercorns, kiawe broiled and doused with a savory sauce composed of butter, shallots, a dash of white wine and whipping cream infused with a peppercorn medley.
All entrees are served with vegetables du jour and choice of baked potato, garlic mashed potatoes, potatoes O’Brien, steak fries or white/brown rice. “The filets here have always been so tender, that’s why we want to play it up and offer different options,” Panter explains. “We switched from choice to prime beef quite a few years ago, which kind of forced us to change the menu format. Also, back in the late ’70s, when we first opened, the steaks were served on cutting boards. Now, we’ve switched to china.” Executive chef Erwin Manzano is the man behind the magic — with more than 20 years of experience in the restaurant industry, he has built a longstanding relationship with Hy’s and has come full circle in his career. “I began working as a dishwasher at Hy’s back in 1988 and worked my way up the ladder. After 15 years (at Hy’s), I moved to Pacific Beach Hotel, where I stayed for 13 years, and now I’m happy to be back at Hy’s,” Manzano says. “Chef Erwin has a very good work ethic and he’s a great leader. He’s been creative with a lot of our signature steaks, and because of that we’re able to feature many specials,” Panter adds. Most recently, Hy’s debuted its monthly set menus. Priced at $49.95 per person, these prix-fixe menus are available Monday through Thursday and

provide a slew of enticing options. This month’s menu features a first course with a choice of Arugula Salad with Prosciutto and Parmesan Cheese or Soup du Jour; then select from an entree course of Filet Mignon with Bordelaise Sauce and Truffle Compound Butter or Lobster Thermidor; and for dessert delve into Molten Chocolate Cake, Haagen-Dazs Vanilla Ice Cream or Haagen-Dazs Mango Sorbet. This menu cannot be combined with other specials or promotions. “This past Mother’s Day,
our chefs also served Caroline’s Lobster Salad ($45.95), which features lobster claws and lobster tail medallions paired with fresh ’Nalo greens, endive lettuce, shaved hearts of palm, avocado slices and blood orange segments with a tarragon vinaigrette,” Panter states, noting that the positive response from guests resulted in its continued offering. While palates are treated like royalty with five-star fare, musicians Audi Kimura and Wendell Au add to the premier Hy’s experience with weekly entertainment. Kimura performs Wednes-

about this award-winning establishment that has flourished for more than a quarter of a century. “Reservations are highly recommended,” Panter says. Life is good at Hy’s Steak House.

ucked inside, around the corner and next to the pool of the Waikiki Sand Villa Hotel is a hidden gem of a Japanese restaurant called Them Dining offering traditional Japanese food with a French twist. Finding “Them” can be tricky, but it’ll be well worth the effort. The place is small (seating about 20 people) and simple, but the food is huge on flavor and taste. With more than three decades of experience in the kitchen, chef Kazuo Shimada describes his food as Japanese-French fusion. Originally from Japan, he lived in Florida for three years before moving to Hawaii two years ago, just as Them Dining was opening its doors. Stop in during lunch and enjoy a variety of rice bowls, such as Seafood Bowl ($20), Ahi Shoyu Bowl ($20), Salmon & Ikura Bowl ($16) and Uni & Ikura Bowl ($25). A ‘Tail’ of Lobster Bliss
W
JJ BISTRO & FRENCH PASTRY WHERE 3447 Waialae Ave., Honolulu
hen in a bout of hunger, there’s nothing worse than salivating over a meal that you can’t quite get your utensils on. I recently experienced this after moving back home from Massachusetts, where I was spoiled with fresh Atlantic lobster for four years while attending Boston University. Even though I was more than elated to welcome Spam musubis and kalua pig back into my life, I hadn’t been able to kick my deep yearning for high-quality lobster. My lucky day came when I
stopped into JJ Bistro & French Pastry for one of its infamously delicious desserts, only to realize that the eatery’s lunch and dinner menu features numerous lobster dishes. After going to town on them, it’s safe to say my cravings have been completely satisfied. Located in Kaimuki, JJ’s is known for its Euro-Asian brand of cuisine rooted in a mixture of Western and South East Asian flavors. Much to my benefit, Lobster Tail Pad Thai ($18.95, one tail; $29.95, two tails) is a unique and utterly tantalizing incarnation of this cooking style.
The lobster itself is cooked in a house-made broth, which makes it beautifully tender. It is then placed on a bed of rice noodles and topped with a citrusy padthai sauce. “Our pad thai is very different from most other restaurants because we have a special sauce we call XO Citrus Sauce,” says owner and chef JJ Luangkhot. “It has dried shrimp paste with citrus,
and it’s really very tasty because you get a little tangy flavor.” When hit with such a bright burst, the pad thai is tasty without being overpowering. “We have our citrus sauce on top of the lobster so it brings more taste, but we don’t want to damage the flavor of the lobster itself, so we don’t put too much on it,” adds Luangkhot. Another dish that sent me into

noming bliss was Double J Lobster Tail with garlic white wine beurre blanc sauce ($18.95, one tail; $29.95, two tails; $39.95, part of four-course menu). You can’t go wrong with this one because it unites lobster with its soul mate — butter. In fact, JJ’s velvety butter-based sauce is accented with roasted garlic and white wine for a heavenly marriage of flavors. Fettuccine pasta and a vegetable medley complete the meal. According to Luangkhot, using premium lobster tails from Maine is a priority, and with every bite, the freshness of his seafood is apparent. What a relief, my food crisis has been averted!

Craving a bite of the chicken that’s ‘just right’ BY RACHEL BREIT
I
t’s 4:30 a.m., are you already standing in line for Mitsu-Ken? Do you have their phone number programmed in your cell phone and call them more than your mother? Is Mitsu-ken your first stop after landing home from the airport? Did you freeze a stockpile of garlic chicken to take to college? If you answered yes to any of these questions, you may have a case of Mitsuken madness! But fear not, you are not alone. Others have uttered: “Oh my gosh, I need chicken.” “It’s like an obsession,” explains Sherri Kaneshiro, Mitsu-ken’s bookkeeper and office manager. Made of secret ingredients, it’s the Goldilocks of fried gar-
lic chicken: not too sweet, too salty or garlicky. “Everybody says, yours is just right,” Kaneshiro says. The chicken is tender with a crispy batter, coated in a teriyaki-like garlic sauce. And for $2.10 for three pieces a la carte or $7 plus tax for a whole plate, it’s affordable, too. The plate lunch comes with two scoops rice, one scoop macaroni potato salad or tossed salad and six pieces of chicken. But you can pretty much get garlic chicken with everything; in bentos and even for breakfast. If you are a fiend for the sauce, for rice or the additional dunk, order extra on the side for an additional cost. Saucy morsels of chicken are scarfed in cars in the parking lot, as there

is no seating at the eatery. But patrons are happy do their devouring away from the prying, jealous stink eye of those standing in line still waiting for their turn. Actually, the line moves quickly. When the “Oh my gosh, I need chicken” patrons can’t get what they crave, then it becomes a problem. But Mitsu-ken has a solution for this: Freeze it! “When college students’ parents go and visit them on the Mainland, we have a
lot of orders,” says Kaneshiro. Frozen chicken can be microwaved and the special flavor remains intact. Also, it’s best to pre-order garlic chicken so you can get your fix. “Sometimes we do sell out. And we try to accommodate everyone,” she adds. Preorders are highly recommended for Thursday through Saturday. “If you know tomorrow that you want a bento, for example, just call it in.” This ensures you get what you want and also helps you avoid the line of hungry patrons — just walk up to the cashier at the phone-order pick-up line. On the menu and similarly obsession-worthy is the tender kalbi, again, made with secret ingredients. Kaneshiro reveals, “I have a customer who comes in three or four times a week to order it.” Its ginger, shoyu sauce can be drizzled over the rice for an added enjoyment. The plate lunch costs $7.50 plus tax. Mitsu-Ken madness is in full effect!

ith more than 180 menu items to choose from and a clean, warm atmosphere inviting guests to dine in comfort, Canton Seafood Restaurant sets the tone for a flavorful experience. After initially opening in Chinatown nine years ago, the restaurant currently resides at 923 Keeaumoku St. Manager Peng Gong explains that the Cantonese cuisine emanates from the southern region of China, and features healthy preparation techniques coupled with fresh ingredients. Gong credits executive chef Sou Keung Wong with designing and executing the flavorful menu selections available at Canton Seafood Restaurant. The skilled chef has honed his craft for nearly 30 years since starting as a kitchen helper at Dynasty Chinese Restaurant in Waikiki. Gong lauds Wong for creating a good sense of teamwork within
the staff while also emphasizing quality control to make sure each guest enjoys a tasty meal time and time again. “He brings authentic, healthy items to our menu, and uses less oil and salt in the preparation,” says Gong, when describing Wong’s extensive experience in the field. “He’s very concerned with the continuity and quality of our food to ensure freshness in the various meats and vegetables.” In addition to the wide array of favorites included on the standard menu, Canton Seafood Restaurant also features a bounty of lunch and late-night specials available daily from 10 a.m. to 2 p.m. and again from 9 p.m. to closing. With lunch and latenight specials ranging from $5.99 to $7.99, the eatery is poised to satisfy diners with wide-ranging tastes and budgets. To sweeten the deal, lunch specials also include rice and soup.

Shrimp with Egg Chow Funn ($7.99) is just one of more than nearly 40 specially priced dishes, and includes a bed of rice noodles topped with shrimp, peas and a light egg sauce that ties all the flavors together. “The specials are very reasonably priced, and other restaurants can’t compete when compared to the quality we offer as well,” Gong says. Canton Seafood Restaurant also offers a couple of additional ongoing specials for diners to take advantage of. House Crispy Chicken is available in a half-order for just
$4.99, a huge savings compared to the regular price of $12.99. Fried Flounder with Seasoning Herbs also is available all day for $9.99, a great deal compared to the regular price of $15.99. Deep Fried Flounder ($17.99) serves as another popular seafood creation, as the chef carefully removes the tender meat, prepares it in a zesty garlic sauce and serves the succulent morsels, so diners don’t need to wrangle with bones or other parts of the fish. The dish is perfect for young children or elderly diners who may struggle with cutting meat off a whole fish. Steamed Fresh Whole Fish ($18.99) is another popular selection, and Canton Seafood has recently utilized uhu, a fish that yields tender, white meat that soaks up all the rich flavors included in the accompanying sauce. Gong explains that a full vegetarian menu is available for those with lighter options in mind. The extensive menu includes Law Hon Jai ($7.99), a mixture of vegetables including mushrooms and carrots coupled with long rice and tofu in a savory sauce. Just in time for graduation season, Canton Seafood has diners and their families covered when it comes to cooking for large parties. Whether celebrating a birthday or other special occasion, the restaurant offers multiple packages that are de-
signed to serve 10 to 12 people while taking the stress and hassle out of ordering. For just $188, groups can enjoy Seafood with Fish Maw Soup, Peking Duck (whole), Live Lobster with Ginger and Onion (two orders), Shrimp Walnuts with Mayonnaise, Tenderloin Steak, Crispy Garlic Chicken (whole), Chinese Broccoli with Dried Fish, Fried Rice “Young Chow Style” and a Dessert of the Day. For those interested in more seafood selections, a $238 menu also is available and includes many of the aforementioned choices, as well as Live Crab with Crispy Garlic (two), Sautéed Mixed Seafood with Broccoli and Steamed Fresh Whole Fish with Ginger and Green Onions. Diners are encouraged to keep an eye out for another stellar dining opportunity as the management team at Canton Seafood Restaurant will soon open Canton Dim Sum in Kaimuki’s Market City Shopping Center. Gong also hints that some of the new dim sum creations may find their way onto the menu at Canton Seafood, as well. Guests at Canton Seafood Restaurant are treated to free parking behind the eatery, and also may park in the Maui Diver’s lot adjacent to the restaurant anytime after 5:30 p.m. Reservations are recommended for larger parties to ensure table space is available.

lthough the restaurant already boasts more than 110 items on its breakfast menu alone, Eggs ‘n Things never seems to stop wanting to create new dishes. The restaurant, which has long been regarded as a go-to breakfast spot, often offers a set of specials in addition to its regular menu in an effort to provide even more variety. Eggs ‘n Things breakfast dishes are offered all day — and they include standby classics such as the famous
fluffy pancakes — but that is no reason to miss out on its other meal offerings. And with some recent additions to the specials list that include a number of lunch and dinner items, now is your chance to expand your horizons. A new dish that made its appearance on the specials board just about a week ago is Island Style Fried Saimin ($12.95), which is a mixture of vegetables, Spam, fish cake and green onion — all topped with two eggs. hat Eggs ‘n Things manager Robby Takahashi says about the restaurant when it was founded in 1974 by Jan and Jerry Fukunaga Waiter could easily apply today: “They Eddie had a passion for cooking, and Cavett providing quality products and great service.” The modern-day Eggs ‘n Things still has all of those qualities — and now with even more menu options and larger venues. “They started a small eighttable restaurant and it grew from there,” Takahashi explains of the eatery's origins. With lines often stretching around the corner at the initial location, the Fukunagas soon expanded to a larger site before seeking an even larger location — where it still stands, on Saratoga Road in Waikiki. “Shortly after that, there were a lot of suggestions and comments from our guests about being able to do takeout,” Takahashi explains. With that in mind, Eggs ‘n Things opened up the Waikiki Beach Eggspress location on Kalakaua Avenue. “The setup of the restaurant is a little different — it provides quicker service, and we feature takeout pretty much nonstop throughout the entire day,” he says. The Ala Moana location was born out of customers' desires to have an Eggs ‘n Things that was more convenient and accessible to locals. Opened last November, the Ala Moana location has proven to be just that. The Piikoi Street restaurant is not only centrally located, but also Eggs ‘n Things customers can park anywhere in Ala Moana Center. Although Eggs ‘n Things has a rich history in the Islands, don’t expect the popular eatery to stay stagnant. Eggs ‘n Things patrons always will have new specials to look forward to — some of which are created based on customer suggestions. “We are constantly tinkering with new menu items, and looking to improve and grow,” says Takahashi.

It features breaded chicken breast with brown gravy, sautéed mushrooms and onions, and your choice of rice, potatoes, pancakes, d green salad or potato salad. f “The Chicken Cutlet has been on the menu for about two weeks, and we have had a lot of positive comments,” says manager Robby Takahashi. Another item from the current specials board that is not to be missed is Ahi Salad ($13.90; $8.95 without ahi), $ which features tender slices of seared ahi accented with a Cajun coating. The

ong before food trucks became a fad, one mobile-based eatery staked its claim on Honolulu’s food scene: Magoo’s Pizza. Family-operated since it first opened in 1967, Magoo’s Pizza recently opened its newest location on Kapahulu Avenue. You’re more than welcome to create your own pizza. Consider, however, the notion of simply selecting from a list of public-approved favorites, and eliminating the need to hem and haw over toppings. Magoo’s Famous Combination ($14.50, small; $19.95, medium; $25.95, large; $29.95, giant) is popular among customers — for good reason, too. Pepperoni, mushrooms, pork

salad also includes cucumbers and carrots — all topped with a poke ranch dressing. For a dessert or a latenight treat, try Deep Fried Banana Split ($11.95, add $3 for a la mode), which makes interesting use of the restaurant’s pancake batter: Two full bananas are dipped in the batter and fried. The eatery now has three locations — two in Waikiki and a recent addition on Piikoi Street. And just a few weeks ago, Eggs ‘n Things acquired its liquor license, and already is taking full advantage of it by offering a range of beers, champagnes and wines. For great deals, stop in for happy hour from 4 to 6 p.m. “People have to try the Pineapple or Guava Hibiscus Mimosa ($11 each or $9 during happy hour),” Takahashi says. If you prefer beer, order up a Kona Longboard ($4.95 or $3.50 during happy hour). “A lot of the wines and the items that we picked go well
sausage, bell peppers and olives are tucked perfectly between melted mozzarella, Cheddar and Parmesan cheese. A second gourmet option is Magoo’s Special Gourmet ($14.50, small; $19.95, medium; $25.95, large; $29.95, giant) — this one is recommended for garlic lovers. Slices of ham are accompanied by mushrooms, tomatoes, capers, red and green bell peppers, and roasted garlic. “It’s actual gourmet pizza,” he says. “We’re not a fast-food
chain; it takes time, it takes care for our pizza.” Of course, the secret to Magoo’s success is in its sauce. And there are only two people who know the recipe — Sakaguchi hasn’t been let in on that particular family secret just yet. A little preview of things in store for Magoo’s enthusiasts: In two weeks the family plans to open 50 Tacos on its same Kapahulu property for fans of Mexican eats. Expect anywhere between five and 10 different taco options daily for under $3.

with pretty much everything on the menu,” he says. “We were very selective on the items that we chose.” While there are a lot of new things to look forward to at Eggs ‘n Things, a lot of what has made it famous is here to stay. “Some of our signature items that have been with us since the beginning are Spinach, Bacon and Cheese Omelet, Strawberry Whip Cream Pancakes with Macadamia Nuts, and our Loco Moco,” Takahashi says. op-grade, avant-garde cuisine is Il Lupino Trattoria & Wine Bar’s specialty. Guests are invited to dine amid a serene garden setting or indoors where pizza, pastas, freshly carved cured meats and Italian cheeses are deliciously at your fingertips. Those begging for breakfast will fall head-over-heels for Il Lupino’s Acai Bowl, which manager Olga Brandao proclaims is her morning favorite. Simple pizazz is what it’s all about.
“There’s no match when it comes to our Acai Bowl,” Brandao says. “It’s sinfully delicious, like a dessert, but it’s good for you! We don’t use any harsh ingredients.” Acai berries, with no added sugar, are blended with ice into a lusciously smooth puree, perfect for those warm spring days. “Added sugar can oftentimes ruin the natural benefits of acai, so we keep this dish as pure and simple as possible. Also, our acai is not watered down, it’s very dense,” Brandao says.
Organic honey is drizzled atop the dish for an added sweetness, which pairs well with the tartness of the acai.
IL LUPINO TRATTORIA & WINE BAR Freshly sliced bananas, strawberries and blueberries accent the dish with an explosion of color and great nutritional value.

It’s not easy to forgo your all-time favorites and switch to a diet with less fat, salt and all those other things that may make the food taste great, but consuming too much of them just isn’t that good for you. Kudos to Kenny’s Restaurant for helping us out. "We’re trying to push healthier alternatives," says John Fujieki, owner of the longtime Kalihi family restaurant to which local folks have been flocking for decades. So, with thanks to John and his daughter Courtney, who’s also quite knowledgeable about the eatery’s offerings, here are a few of Kenny’s "healthier alternatives," which are marked on the menu with a heart-shaped logo for your convenience. Sandwiches are favorite lunchtime fare, but this is one you’ll want to order up any time of day. Kenny’s offers a grilled Vegetable Panini ($14.69) that’s

n the fast-paced, everchanging world we live in, it is rare to come across something truly timeless. Many long for “the good old days” when people were nicer and life was simpler. Thankfully, Tony Roma’s is an exception to the rule. Since the restaurant first opened its doors in 1972, Tony Roma’s has been serving quality cuisine for families to enjoy. More than 20 years ago, the business kicked off an art contest and invited elementary students to help illustrate the keiki menu. “We started the art contest to help families come together and celebrate the local community,” says Lawrence Chun, director of operations for Tony Roma’s. “We have always tailored our restaurant to embrace a family friendly environment.” Although the contest may have ended long ago, its legacy still lives on today, and we need your help. Take a look at the featured illustration, submit-
ted in 1989 by the talented Jill Tamashiro, who was a fifth grader in Mrs. Watari’s class at Waimalu Elementary School. Do you recognize the name? Or better yet, are you the talented artist herself? If so, Tony Roma’s would like to hear from you. Most likely the contest winners are now well into adulthood, possibly with children of their own. “By calling the contest winners back, we are really coming full circle,” says Chun. “Hopefully their children have become acquainted with Tony Roma’s through their good memories.” From childhood to

Sushi King’s Soft Shell Crab Tempura ($12.50)

maguro, hamachi, salmon, tako, cooked shrimp, salmon eggs, cooked mushroom and sweetened gourd exquisitely placed atop a bed of sushi rice; and anything soft shell crab. Shall I delve into just how much I adore the soft shell crab masterpieces at Sushi King? Yes, I believe I shall! First, there’s Soft Shell Crab Salad ($14.50). This dynamite of salads presents a vegetable medley of lettuce, radish, kaiware sprouts, onions, carrots and tomato, but the star of this dish is the gigantic piece of soft shell crab — easy to eat and deep-fried gorgeousness. A sprinkle of sesame seeds complete the dish, and a side dressing flourishing with hints of ginger, soy, sesame and garlic is a nice accompaniment. Then, soft shell crab connoisseurs will relish in one particular item that’s not on the menu, but available upon request — Soft Shell Crab Tempura. Priced at $12.50, pieces of crispy, deepfried zucchini, broccoli, carrot and eggplant tempura, along with a luscious piece of soft shell crab tempura adorn the plate; each morsel of goodness just waiting to be submerged into the sweet and savory dipping sauce and enjoyed. Don’t miss out on this Sushi King specialty. And finally, I can’t get enough of the eatery’s oh, so famous Spider Roll ($12.50). This Sushi King original is easily a best-seller on the menu, and for good reason. This edible work of art is beautifully presented, and features an insideout sushi roll comprised of soft shell crab, cucumber and avocado. The plate is glazed with a flavorful unagi sauce, and bits of kaiware sprouts, zesty ginger and wasabi add the finishing touches. Sushi King 2700 S. King St. 947-2836

ucked away in Manoa Marketplace sits a bakery that has locals coming from all over the island. Fendu Boulangerie has been praised for its wonderful breads and sandwiches, as well as the many pastries that sit behind glass cases. While the pastries might look too good to eat, you’ll definitely want to try one (or two, if your sweet tooth inspires you to do so). Owner and chef Niel Koep is a master of sweet treats, and his Zucatto ($5.75) is a testament of that. This island-style Italian dessert features fresh bananas boiled down with brown sugar and a bit of cinnamon, which makes the filling. “The outer layer is a hazelnut milk chocolate mousse,” Koep explains. “It’s kind of like a buttercream mousse, and the bottom layer is comprised of flourless chocolate cake with a dark chocolate cookie on the bottom.” Each Zucatto is topped with a caramel gelee and a tinge of edible gold for culinary bling.
With so many flavors and textures, Fendu Boulangerie’s Zucatto will be a hit at any special occasion. Lemon Strawberry Cremeux ($5.75) has a bottom layer made with a pistachio chocolate chunk sponge cake. The next layer is a strawberry cremeux (“creamy” in French) with a layer of vanilla chiffon and one more layer of lemon cremeux. One bite will send an array of flavors across your taste buds.
Lilikoi Cheesecake ($4.50) is one of Fendu Boulangerie’s best-selling desserts. “It’s the opposite of a New York Cheesecake,” Koep says. “It’s not dense, it’s very light. “We blend cream cheese and mascarpone cheese, and we add lilikoi puree to it.” The cheesecake is topped with lilikoi glaze, and the bottom layer consists of an almond crust. Pastries at Fendu Boulangerie feature all-natural ingredients — no chemicals added — and Valrhona chocolate. There are so many desserts to choose from at Fendu Boulangerie. Hawaii’s Favorite Plate Lunch STORY BY MICHELLE LEE • PHOTOS BY LAWRENCE TABUDLO
W
ith graduation season upon us, many are quickly their calendars to attend ceremonies and celebratory gatherings galore. To help ease the food-planning process, one of Hawaii’s most cherished eateries, L&L Hawaiian Barbecue, invites all to take advantage of its catering service. For parties both large and small, L&L Hawaiian Barbecue offers a wide variety of party-friendly appetizers and dishes. Over the course of the past 40 years, the diner has accumulated a loyal fan base of new and loyal customers. “Some of our customers have been dining with us for more than three decades,” says Brandon Dela Cruz, director of marketing at L&L Hawaiian Barbecue. “Our chefs have been using the traditional L&L recipes ever since the start, so over time our food has really become an island staple.” Those looking to cater food for a gathering can choose from any item on the regular L&L Hawaiian Barbecue menu. Party packs come in small, medium and large sizes. Local favorites include BBQ Short Ribs (starting at $39.99), Chicken Katsu (starting at $22.99) and Kalua Pork (starting at $34.99). In addition to consistency and quality, accessibility is also one of L&L Hawaiian Barbecue’s most prominent advantages as a catering service. “From any point on the island, there is always

at least one L&L within 15 minutes or less,” explains Dela Cruz. “Depending on the location, some places also offer delivery service.” Aloha-spirited and hardworking, the staff at L&L Hawaiian Barbecue understands good customer service. “A lot of our locations are run by families,” says
Dela Cruz. “They view the restaurant as more than just a place of work.” With each L&L Hawaiian Barbecue location, customers can expect various discounts and specials to get even more out of the flavorful menu selection. “Some of the locations are very generous about adding extra sides to a minimum purchase order, such as free rice,” says Dela Cruz. In addition, currently on all catering orders of $100 or more, customers will receive a free gift pack of L&L Hawaiian Barbecue logo items, valued at $50. The eatery’s delectable fusion of Asian and American flavors is not unique to Hawaii. “The growth we have experienced in just the last couple of years has been tremendous,” says Dela Cruz. A testament of its success, L&L Hawaiian Barbecue has stores in cities all across the nation, including Las Vegas, New York City, Dallas and Los Angeles, with international locations in Japan and America Samoa. Soon, the restaurant also will open a franchise in Guangdong, China. Once the graduation parties and celebrations have come to a close, customers can Corporate Executive Chef look forward to taking part in L&L Hawaiian Raymond Cheng with Chicken Barbecue’s famed “76 Cent Plate Lunch” proKatsu and Kalua Pork plates motion June 13. Stay tuned for more details.
