D
o you want to win me over big time? Well, the way to my heart is through food (surprise, surprise!) — you name it, I love it. Pasta? Most definitely. Steak? Pass me the steak knife. Salad? Sure, I like to be healthy. Cake? Need you even ask? And ice cream? Now, I live for that sweet stuff. Yet, this week, you can push all of that aforementioned goodness aside, because all that matters is that I’m buttered up with butterfish! This Japanese staple is heaven sent, and thank goodness the following Ono, You Know hot spots know how to do it justice. Broiled, baked, steamed or pan-fried, I’m not picky. Forget the bells and whistles, butterfish shines through on its own. The meat is tender, rich, flavorful and moist — everything you could ask for. It’s like buttah, baby!

Located in Outrigger Reef Hotel, Ocean House resembles a charming plantation-style home and treats its guests like family as they enjoy American classics, including mouthwatering prime rib, and Pacific fusion fare, such as Lilikoi Miso Butterfish ($36.50). While everything on the menu is amazing, in my opinion, it’s Lilikoi Miso Butterfish that’s been reeling in my hearty appetite. Sometimes you have to indulge! Are you ready for this? Imagine a bed of warm sushi rice topped off with the most tender and moist lilikoi miso butterfish (Alaskan black cod) and adorned with wild mushrooms, green onions and Japanese pickled vegetables. “The lilikoi miso sauce is spectacular! It’s comprised of lilikoi, red and white miso and a little sake. It’s very tasty,” says general manager David Nagaishi. T
he high-paced, eclectic vibe of Kakaako’s city life is silenced for a bit at 53 By The Sea, an avant-garde, five-star establishment, vast in its regal presence and decadent cuisine. Located on Ahui Street, where the former John Dominis Restaurant once stood, 53 By The Sea welcomes diners into the lap of luxury as they enter through ceiling-high double doors, greeted by majestic views of Diamond Head, a grand staircase, crystal chandelier and other elaborate furnishings. A private din-
ing room plays host to 150 guests and live music provides an elegant backdrop for every dining experience, whether it be classical tunes emanating from the Fazioli piano, or acoustic sounds oozing from the guitar and ukulele. A full bar and lounge area stirs up a buzz of energy, and a wine collection of more than 160 selections from around the world complements the lavish “new American” cuisine recently unveiled earlier this week. “When we opened the doors to 53 By The Sea last

September, the focus was on Southern Italian cuisine. Now, we’ve decided to change things up and gear our menus toward what chef likes to call ‘New American cuisine,’ with a large emphasis on local ingredients. Chef’s cooking style is French-rooted, so that’s, of course, the underlying foundation,” says Connor Barbaree, who serves as the restaurant’s sommelier. The chef, who Barbaree speaks of, is executive chef Thomas Ho. Ho succeeds Chef Hiroshi Hayakawa and holds an extensive career to his name. He previously

served as chef de cuisine at Orchid’s at Halekulani Hotel, and prior to that held the role of chef de cuisine at Hoku’s at The Kahala Hotel & Resort. “I’ve kept some of chef Hayakawa’s signature dishes on the menu including Scampi Pesto, but instead of limiting our dishes to strictly Italian, I wanted to incorporate a handful of different culinary styles, concepts and ingredients into the mix,” he says. “I’m inspired to create new dishes out of curiosity and past travels, and I enjoy experimenting with different ingredients.” The restaurant’s new lunch menu launched in April with a positive response from patrons, and as a result, the dinner menu soon followed. “I’ve been working on the new dinner menu for about a month, and I’m glad that our guests finally have the chance to try it,” Ho says. Currently, Kona Maine Lobster & Filet Mignon ($80) have proven to be a guest favorite, as it features one pound of Kona butter poached whole lobster in a beurre blanc sauce nestled on a bed of mashed potatoes, accompanied by a 6ounce filet accented with a red wine reduction. Hints of asparagus, baby carrots, zucchini and yellow squash also play up the dish. “Our take on surf and turf is fantastic, but I love our ‘Surf & Surf,’” Ho exclaims. As Chef’s top choice, this highly acclaimed entree is a seafood enthusiast’s greatest foodie fantasy brought to life. ‘Surf & Surf’ ($39) presents four jumbo prawns marinated in herbs, garlic and olive oil, and butter-poached king crab served with brocollini and

a smooth potato puree. “As soon as we made the shift to new American fare, we were able to greatly expand our variety of options,” Barbaree adds. Chef Ho notes that Diver Scallops and 53’s Mushroom Chicken are worth a try as well. Priced at $33, Diver Scallops are beautiful as is, but Ho creates a masterpiece with the addition of pickled shallots, eryngi mushrooms, asparagus and corn jus. “The asparagus and corn are locally grown,” Ho explains. “The corn jus is delicious, and consists of fresh corn juice, butter and mascarpone cheese. I added some fresh and edible pansies to the dish as decoration. “53’s Mushroom Chicken ($35) is one of those items that always does well at lunch, so we added it to our dinner menu,” Ho adds of this dish, which highlights chicken breast and thigh, served with haricot vert, thyme polenta, oyster and cremini mushroom cream. While it’s evident that these entrees are show stoppers, Ho says guests also should savor a unique and intricate appetizer of Lemonade Crab Cake ($19) to awaken their palates. This zestful starter features five pieces of breaded crab cake with a superlative lemon puree garnished with radish and frisee. “The lemon puree is a blending of lemon juice, sugar and salt. We blanch the lemon peel at least four times to get rid of the bitterness,” Ho says. “The puree is then finished off with mascarpone cheese.” The place to be for all festive occasions, 53 By The Sea invites larger groups into its multi-pur-

pose rooms on the second floor that can seat up to 55 people. “We are known for our wine pairings as well,” Barbaree adds, “and that’s something that is great for special events. They easily can be incorporated into our prix-fixe menus. With
the transition into lighter fare, we also are adding lighter selections to our wine menu. “The word has been spreading about 53 By The Sea, and it’s wonderful to see locals as well as visitors enjoying all that we have to offer,” Barbaree says.

What could be better? The liver is cleaned, then steamed and served with thinly-sliced cucumber, radish sprout, ohba leaf, grated daikon with chili and topped with ponzu sauce. it comes nicely displayed with a mix of bright colors and exquisite presentation. One final suggestion for grandpa, or anyone, is Dynamite ($14.50), which consists of white fish, salmon, hamachi, zucchini and onion layered in an abalone shell, and covered with crab, topped with a spicy mayo that is then baked to a crispy coating. The result is a fresh, tender appetizer that is really just fun to eat.

ince opening in the fall of 2008, Good to Grill has built a growing following of loyal customers, including familiar faces like football star Chad Owens. While home this past off-season, Owens who plays for the Toronto Argonauts in the Canadian Football League, became a fan of Good to Grill and teamed up with the Kapahulu restaurant to create a special Power Up! Menu by Chad Owens, which debuted last month. According to owner Jason Kim, the menu was inspired by Owens' diet, including his belief that the balance of lean proteins and carbohydrates is critical to optimizing your workout. Dishes include Kiawe Grilled Tofu Burger, Cajun Salmon, KiaweGrilled New York Steak, Mighty Mouse Wrap, CO2 Acai Bowl; and one of Owens' favorites, CO2 Surf and Turf ($12.99) featuring kiawe grilled salmon topped with sauteed spinach, kiawe grilled chicken breast, a baked sweet potato stuffed with cauliflower mash and a side salad of kale, spinach and acai berries.

Known for its kiawe wood-fired fine-dining quality food, but without the fine-dining prices, Good To Grill offers a great selection of local-style plate lunches, as well as sandwiches and pasta. Among the most popular dishes is Braised Short Ribs ($10.99 lunch, $11.99 dinner) consisting of boneless short ribs that are pleasantly tender and flavorful. It's braised in a very light teriyaki house sauce, and is served
with two sides (choices are white rice, brown rice, garlic mash potatoes, fries, potato salad, baby greens with balsamic vinaigrette and sauteed veggies). "We are a fast-casual restaurant," explains Pat Comer, director of operations. "We have really good prices. We try to
give the best service we can and we're just very proud of the food. "If you've never tried kiawe woodfired food, it's similar to mesquite. It's very flavorful and unique. or a modern take on sushi, Rakuen Lounge has it covered. This contemporary eatery in Honolulu’s Chinatown district has an artistic vibe that’s intriguing, but it’s the Japanese cuisine, and more importantly, the sushi rolls prepared by executive chef Ernie Gray that deserve a round of applause. According to Gray, Grand Sumo Roll is a top pick among customers. “I like creating different variations of sushi, and this one is definitely unique,” he says.
Fresh, local sashimi-grade ahi and Kahuku ogo (seaweed), along with green onions and masago are delicately placed atop the roll, adding a unique flair to the sushi. “Local ingredients are so flavorful and they really enhance the dish,” Gray says. “You'd be surprised, the ogo doesn’t have an ocean-like after-taste. It brings the right texture to the dish.”
Sushi rice and crisp nori help keep everything intact for a “no-mess” dining experience.
“I’m inspired by dishes that I like to eat, and then I incorporate that into a sushi roll. I love tempura, poke and ogo.”
The interior of this eclectic sushi roll features green onion and crab tempura deep-fried to perfection. Gray says the crab traces its origins to Japan and helps to balance out the many flavors associated with the dish.

A drizzle of kukui nut pesto is the “it factor.” Comprised of kukui nuts, basil and sesame oil, this sauce offers a multitude of flavor. “You don't need soy sauce with this roll,” Gray explains. “The kukui nut pesto does the trick!”

vegetables, meat and seafood, so we make it as healthy as it can be.” Just as important to Park is the fact that the eatery is MSG-free. “MSG is not good for your health, especially your brain, and it makes you thirsty. But our food doesn’t make you thirsty and people can safely drink the broth.” Similar to other shabushabu dining establishments, individual portions of meats, seafood, vegetables and noodles are available at Dipping Pot.com for patrons to customize thier meals. Park suggests trying the eatery’s unique Set Menu, which offers a worry-free, well-rounded blend of ingredients for customers to enjoy. Another flavorful bird to pick up at Asian Mix is Roast Duck Hong Kong Style, one of the eatery’s signature dishes. The luxury dish is easily attained priced at $22 for a whole, $11.50 for a half and $5.75 for a quarter, a portion just right for one person. Highgrade ducks from the Mainland are carefully chosen and prepared to result in tender meat, a golden skin, and flavor you can taste “from the inside, out,� explains Leung. Ducks are prepared fresh daily and often sell out in the afternoon, so Asian Mix welcomes phone orders. Decide which duck you want — they are presented whole — or the staff at Asian Mix will select the largest one for you. Roast duck also is available as a plate lunch. The preparation of the roast duck is so detailed and involved that Asian Mix places the responsibility solely on expert chef Ruan Qing, who has worked with Leung since his first day on the island. The duck is marinated for 24 hours so that the marinade seeps inside; the meat is washed of oils and the skin brushed with a vinegar mix to create the golden brown color. Roasting at the proper temperature for the correct amount of time is a delicate matter; the meat needs to cook to tenderness without burning the skin.

And since we’re talking butterfish, 3660’s Soy Sake Fillet of Butterfish ($29.50) is a dish to behold. “This dish is special because we marinate it in a light soy sake marinade, as opposed to a heavy miso paste,” says chef de cuisine Lydell Leong. “The sauce complements the fish because it’s light and doesn’t overpower the other flavors of the dish.” Soy Sake Fillet of Butterfish also is served with fire-roasted bak choy and miso ginger dashi nage. According to Leong, this alluring dish is the one if you are watching portion sizes, because you don’t have to eat a large amount to feel satisfied. “The taste is very rich,” he explains, adding, “Butterfish is a great fish that our local clientele can identify with and is familiar with. Those who try it for the first

Bring on Seafood Dynamite, neverending crab legs, zesty curry and more! I always do damage when it comes to the buffet — say hello to fourth and fifth helpings! However, this Japanese seafood restaurant in Aiea’s Westridge Shopping Center also boasts fabulous bentos, including the top seller — Misoyaki Butterfish Bento. Priced at $4.97, this bento dominates
with its epic array of California rolls, inari sushi, shrimp tempura and more, along with a bed of fluffy white rice and one piece of misoyaki butterfish. Hand me the chopsticks, please, because it’s time to get down and dirty with my personal bento favorite. issaten Coffee Bar makes sure its sweet treats are perfect for any meal of the day. That means the dishes are not only relatively healthy, but they’re also delicious through and through. The Homemade Oat Cake ($2.75) is made up of rolled oats, cranberries, brown sugar and almonds. Its flower shape comes from partner Jon Ishimi’s sister, who also created the original recipe. “It was a nice touch,” explains partner Neysa Taba of the unique shape. “We just stuck with her take on it. “A lot of people like it because it keeps well,” Taba continues. “People will order more than one and take one home.” Also on the dessert menu is Kissaten’s Seasonal Berry Parfait ($4), which features homemade granola, strawberry yogurt, strawberry sauce, oats, almonds, honey and brown sugar. “We also have slices of strawberries and blueberries in there,” Taba says. “If we get something else that’s in season we’ll put that in, too.” The Homemade Oat Cake and Seasonal Berry Parfait are available throughout the day, even on the breakfast menu (served from 6 to 11 a.m.). Kissaten makes sure its

customers can get their sweet tooth fix any time of the day. For an extra hearty dessert, Homemade Bread Pudding ($3 regular flavor; $4 special flavor) is the way to go. The
traditional flavor option pairs cinnamon and cranberry, while specialty flavors are offered on a daily basis. “We’ve done anything from haupia to chocolate pecan,” Taba explains. “We also do strawberry cream cheese, blueberry cream cheese, banana white chocolate — anything the cooks want to do.” And the establishment brings back popular flavors, such as Nutella. Gone are the days of mushy bread pudding. Kissaten’s Homemade Bread Pudding is firm, which likens it to a cake or pie. There is no shortage of sweetness at this 24-hour establishment, and with healthy dessert options on the menu you don’t have to feel guilty about indulging.

Located conveniently on bustling Kalakaua Avenue amid a unique shopping destination, kamaaina can catch some of Waikiki’s freshest seafood and succulent steak selections as fresh island flavors served with aloha allow diners to truly rediscover Waikiki. As its name suggests, Atlantis is a hidden treasure surrounded by numerous retail establishments such as Ross, Victoria’s Secret, the Apple Store and more soon to come that help make the trip into Waikiki worth the while. According to restaurant manager Yolanda Millare, “We’re smack dab in the middle of Waikiki. It’s right in our front yard, and it’s an awesome place. Come on down and check it out!” Whether one chooses to relax along the restaurant’s open-air lanai overlooking
Waikiki’s busiest thoroughfare, or elects to dine in cool comfort amid the restaurant’s beautiful aquatic-themed décor, Atlantis’ ambiance sets the tone for a memorable dining experience. When starting one’s Atlantis experience, diners are encouraged to dive in and try one of the menu’s new creations in California Shrimp Sandwich ($14.95). The brand-new addition features fresh, whole shrimp cooked to perfection and served on a sweet bun with crisp lettuce, cucumber and onions along with avocado and a tangy mango salsa that ties all the flavors together. A crown jewel of Atlantis’ bountiful menu also happens to be one of the better deals around town — both above and below the sea. The eatery offers up

While you can’t catch a movie here anymore, you can catch some excellent, fresh seafood and steak.” If venturing into Waikiki conjures up bad memories of past parking problems, fear not, as Atlantis offers three hours of free, validated parking by ProPark at Waikiki Parking Garage located conveniently behind the restaurant. The parking garage’s entrance
is accessible off Seaside Avenue next to the new Ross location. Atlantis Seafood & Steak also serves as a perfect venue in which to host a party or special event. ig City Diner opened its first restaurant in the late 1990s in Kaimuki. It was such a hit that the Kailua restaurant opened a couple years later, followed by Ward, Waipio and then Pearlridge. Out of the Pearlridge location, the restaurant also conducts catering business. And its expansion is not stopping there. Another one is planned to tentatively open later this year on the Windward side, exact location to be announced. Senior executive chef Dennis Franks started out in the restaurant industry at 14 years old, when he began washing dishes at an Italian restaurant. But he didn’t stay by the sink long. “I became interested in the cooking aspect and in the food that was being served,” he recalls. “So I started inquiring the cooks and just doing stuff in the kitchen. And it kind of ended up being natural for me. I was able to put out the food with the quality and the speed that was expected, and I started cooking from there.” He honed his cooking skills by learning from the chefs at the restaurant and took the initiative to perfect his craft outside of work. “After I realized that that is what I loved to do, I just researched a lot on my own and just experimented by myself,” he says. Franks was a kitchen supervisor by the time he was 16. After working his way up at other restaurants, he joined Big City Diner about 12 years ago. “Overall, I think my passion for cooking started with creativity — understating the flavors and the textures of the ingredients and putting it together,” he says. He also loves when he gets to have other people enjoy his cooking, something he gets to do often at Big City Diner. “In the end, that is what I really like, preparing food that people enjoy,” he says.

hile Big City Diner may serve up island-style comfort food at its five locations around the island, don’t expect its kitchen staff to get too comfortable. Dennis Franks, who loves experimenting in the kitchen, gets to showcase his culinary prowess as senior executive chef at Big City Diner. He says that the restaurant’s menu has evolved throughout the years, and that they also run a range of weekly specials. “We try to have dishes that we rotate on a regular basis for our regular guests, so that they can have something different,” he says. This is, after all, the same restaurant that has brought diners its take on a classic dish, Baby Back Ribs ($22.99). BCD’s version of ribs are bathed in a mango guava barbecue sauce and served with gar-
lic mashed potatoes. The sauce, which is made inhouse, adds a distinctly local flavor to the ribs, and Franks says that it’s one of their most popular dishes. For a tasty appetizer, Franks recommends Calamari Tempura Strips ($9.99), which are breaded and fried until goldenbrown and served with a garlic wasabi aioli. If you’re after some diner classics, Big City has that covered as well. The Club Sandwich ($10.99) is filled with generous portions of smoked turkey, crispy bacon, lettuce, tomatoes, avocado, jack cheese and Cheddar cheese, and served with fries. And Cobb Salad ($12.99) features turkey, ham, tomato, red onion, olives, roasted corn, Cheddar and jack cheese, and avocado. Big City Diner is so creative, in fact, that it even takes a dessert as classic as Apple Pie ($7.49) and puts its own twist on it.

t the root of every meal are the shared experiences we enjoy when eating with friends and family. Here in Hawaii, communal dining is what we thrive on. People’s Café is not only serving delicious local Hawaiian and Filipino dishes, but also an atmosphere that beckons to families and those dining in groups. “We serve good food and have a friendly atmosphere,” says coowner and chef Thomas Ventura. On the a la carte menu, one of the most popular items is Ahi Poke (market price). Cucumbers, red and white onions, ogo (seaweed) and chili peppers accompany this 2
“It is a little different than normal apple pie. We have our pastry on the top and the bottom, and in between our two pieces of crust is our apple filling,” Franks explains. “But it does come with a scoop of Bubbies’ real vanilla bean ice cream and whipped cream drizzled with caramel.” Currently Big City Diner is tweaking its menu again. Always looking to keep things exciting, the restaurant plans to add new items soon. Other than getting creative in the kitchen, Franks says that customer feedback is a huge consideration at Big City. “That is the kind of stuff we feed off of — positive and negative feedback,” he says. From its Filipino menu, be sure to order Pork Guisantes ($8.95), which is served with red and green bell peppers, green peas and a sauce made with vinegar, oil, garlic and pepper. Another Filipino favorite is Lechon Kawali ($9.50). Bite into the crispy, deep-fried outer layer of the pork before reaching the center that miraculously manages to stay supple and tasty — thanks in part to it being boiled before fried. It is served with tomatoes and onions. If you’re not in the mood to share, or just want a little bit of everything, the Hawaiian Plate ($12.50) has lau lau, kalua pig, chicken long rice or squid luau, lomi salmon, poi or rice, and a slice of haupia.

Considered national treasures, desserts such as the malasada, cream puff and pumpkin crunch sell out of bakeries every day. Now, joining the ranks are the whimsically fun cake doughnuts at Regal Bakery, soon to celebrate its third National Donut Day, this Friday, June 7. Since its first location opened in 2007, the doughnut shop has amassed high praise for its moist, sugary confections.

“Most bakeries in Hawaii only offer yeast doughnuts,” says Jessie Salvador, general manager of Regal Bakery. “Our line of doughnuts use homemade cake batter and can be personalized with any kind of topping.” Every day, customers at Regal Bakery can order from a wide assortment of specialty doughnuts. Popular flavors include Red Velvet, Rocky Road and Pumpkin Spice. Diners also can enjoy unique creations such as Almond Chocolate Donut, a chocolate cake doughnut topped with caramel icing and homemade almond butter toffee. “We try to have as much fun as possible with the different flavors,” says

Able to seat approximately 80 customers, Regal Bakery’s newest endeavor features a modern-style dining space equipped with television screens, free wi-fi and a plethora of Walnut ($1.05), electrical outlets for those looking to Cinnamon Struesel ($1.05), sit and work or socialize with friends. Powdered Sugar The café also offers an all-day break($1.05) fast menu with morning staples such as waffles, pancakes and a special inhouse coffee blend. “In addition to our delicious doughnuts, customers can now enjoy a hearty breakfast at any point in the day,” says Salvador. “Additionally, because the new shop has three display cases, we have the leeway to experiment and create more doughnut recipes.” For all visiting patrons this Friday, Regal Bakery will be giving away one free doughnut, no initial purchase required. Members of Salvation Army, the organization responsible for founding National Donut Day, will join Regal Bakery as part of the event. “Eventually, we would like to get every bakery in Hawaii to participate in the event,” says Salvador. “It’s important for us to be able to give back to the community.”
