ast week, it was burgers that captivated my being, and truth be told, my meat cravings have not subsided. Nope. In fact, I’ve been grilling up a storm at my favorite yakiniku hot spots — seasoned beef, short ribs and ribeye are my top picks. However, during a recent conversation with my co-worker about our mutual love for meat, he suggested I try beef tongue to add some excitement to my dining adventures. “Really?,” I asked, unsure of

what to expect. Honestly, I didn’t know if I could stomach it. “Yes! You don’t know what you’re missing out on,” he replied. “I always order beef tongue.” So, this week, I thought, “Hey, why not?” Beef tongue is deemed a delicacy in some parts of the world, and for good reason! Beef tongue is the tongue of a cow, and is very high in fat content, thus making it extremely tender, intensely flavorful and

simply awesome! When cooked and seasoned perfectly, it’s one of best meats you’ll ever have. hen Portugal native Trigo Da Silva opened Adega Portuguesa in the heart of Chinatown last year, he did it with two goals in mind: To preserve the Portuguese culture and heritage, and present a myriad of Portuguese culinary flair on Oahu’s dining scene. “When I came to the Islands in 2007, I really missed the authentic Portuguese food from my hometown, and I couldn’t find anything comparable to that here in Hawaii,” Da Silva says. “So, with that, I opened my own restaurant.” Open daily for lunch and dinner, this Smith Street eatery offers a vast selection of Portuguese and Brazilian eats, made fresh in-house by executive chef Ruben Oliveira. “For a sampling of authentic Portuguese dishes from our chef's regular menu ($15 per person), Taste of Portugal happens every first Saturday of the month from 5 to 7 p.m.,” Da

Silva explains, noting that reservations are highly recommended. “There’s a lot of meat, rice, beans, spices and vinegar in Portuguese cuisine. Our meats are always fresh, never frozen.” Yet, Adega also caters to the seafood enthusiast with its Ameijoas a’Bolhao Pato ($14) appetizer, which presents patrons with a mound of littleneck clams steamed in white wine and savory garlic, then finished off with a bit of cilantro and a squeeze of lemon. Filets De Peixe Recheados ($19) is a popular seafood entree that showcases fresh flounder fillets stuffed with crab meat, baked and topped with a decadent tomato

cream sauce, and served with rice and sauteed mixed vegetables. “The flounder is extremely popular here. People love it,” says Da Silva. “Also, customers should take advantage of our daily lunch buffet ($12.99 per person) from 11:30 a.m. to 2:30 p.m.” And while Portuguese fare always has been the main draw at the restaurant, Da Silva recently highlighted Brazilian cuisine as well, with Brazilian Rodizio ($29), a feast fit for a carnivore. This dinnertime rotisserie features large-scale skewers filled with a variety of meats grilled to perfection and complemented

with glazed pineapple for a hint of sweetness. “Rodizio is popular all over the world,” Da Silva states. “I’m glad we included it on our menu because it’s brought in a lot of customers. Make your rodizio reservations so we’re ready for you!” Imagine selections of marinated pork loin (an original Rodizio recipe); mild and flavorful Brazilian sausage; lean, juicy turkey breast wrapped in bacon; chicken rich with herbs and a garlic base; beef brisket and more. A simple Rodizio favorite lies in Frango, succulent pieces of chicken lightly seasoned with salt and a special seasoning. Morsels of lamb also are prepared

the same way. Brazilian Rodizio is available Tuesday through Sunday from 5 to 9:30 p.m., and Da Silva recommends a large appetite, as diners are given unlimited access to these 12 types of stellar meats. “It’s important that we season the meat perfectly,” he adds, noting that a spread of rice, black beans, french fries, fried banana, farofa, special sauces and a vinaigrette complete the meal. Adega comes alive at night with its festive flavors, but it’s the occasional comedy acts and nightly live bands that bring the entertainment with humor and Brazilian bossa nova tunes. And the party only

gets better Wednesday nights, when the restaurant offers $2 drinks and DJ Who’s Next brings the beat in until 2 a.m. “We know how to party, and we’re already preparing for our Brazilian Independence Block Party in September,” Da Silva exclaims. “We’ll celebrate with malasadas, capoeira, samba — and a lot of eating and drinking! “I love to throw parties, and I'm looking to jump on the catering bandwagon because there’s been many requests for us to cater birthday parties and weddings,” Da Silva says. Two perfectly fried eggs hold their yolks intact until broken by a spoon or fork so that their runny golden goodness seeps into the mix. Last but not least, the gravy is the crowning glory. Rich brown gravy with grilled onions smothers the dish down to the last bite, which is always a plus. For a Japanese-inspired twist, Asahi Grill offers a curry gravy that packs a punch of slightly sweet, slight spicy traditional Japanese curry that will warm your belly. ho among us have not ordered a pile of pupus as a main dish? Exactly. So, if appetizers can be a main course, why can't a main course begin a meal? We ask these sorts of questions so you don't have to. If you are going to begin in the middle, a big middle is in order. I'm talking a steakhouse-size entree with a mound of starch and sauteed veggies. In other words, Hy's Steak House. The landmark Waikiki eatery has been doing big before big was big. Confused? Me too. Quirky intros aside, Hy's kiawe wood broiler turns out enough charred and tender beef and pork options to forever change what an appetizer can be. Nothing says go big or stay home better than the 28-ounce Bone-In Ribeye Steak ($69.95). This massive cut of USDA Prime is broiled to order and served with vegetable du jour and a choice of starches, including rice, steak fries, garlic mashed potatoes, baked potato and potatoes O'Brien. You can't go wrong with any option, but there is something special about a big steak and a baked potato. If decadence is the goal, Filet Foie Gras ($63.95) should be your target. A large 7-ounce portion of tender filet is served in a modified Tournedos Rossini style. The filet is broiled, placed on a toasted crouton, topped with seared foie gras and, if that’s not enough, finished with sliced truffle. The whole thing is then topped with a Madeira wine sauce. In the land of the rising sushi

ure, there are plenty of Japanese restaurants to choose from in town, but none are quite as modern and hot as Japanese Restaurant Aki. Not only does it stand out as a cool spot with its contemporary vibe and large-scale original mural that brightens an entire wall inside, but the hip eatery has the delicious eats to back it up as well. Located on Makaloa Street, Japanese Restaurant Aki is situated where the former eatery Yoshi used to be, which Aki Hirose opened in December 2011. After it gained a solid reputation for its

yakitori and early bird specials, Hirose decided to hand over the space to a successful Japanese restauranteur. What many people don’t know, however, is that in addition to new menu items, the revamped establishment actually features the same great favorites that Yoshi dished out, and it continues to be under the management of Hirose himself. Open since February, Japanese Restaurant Aki makes diners feel as if they’re in a stylish bar in Tokyo. With a fresh start, it has developed a loyal base of patrons who love its diverse range of Japan-

ese fare, which includes yakitori and teppanyaki items, early bird specials, late-night dining and drink specials, as well as lessknown dishes that are hard to come by locally. “At least once a year I go to Japan and try all kinds of food,” says Hirose. “And then I see a lot of stuff that I don’t see in Hawaii.” Items such as tan tan nabe made with soy milk — not to be confused with tan tan ramen, which features a different broth — as well as okonomiyaki (savory pancake) are a few examples of the glorious grinds Hirose introduces to local diners.

What has the manager most excited, though, is the addition of sushi to the menu. “One of the good things about this new business is we brought a chef from Japan and he created a lot of things that people don’t know about,” says Hirose as he describes chef Shoichi Kosaka. “He wanted to add more specials, and he’s actually the sushi chef.” First on the bill of daily specials is the Sushi Set ($26), which presents a host of local favorites, perfect for sharing. Everything from maguro, ika, hotate (scallops) and salmon to tamago, shimebasa (seared mackerel), shrimp and a spicy tuna roll fill this platter.

Not only are the nigiri pieces fresh as can be to highlight each fish’s character, but the restaurant uses a pure form of wasabi on the side that has an exquisiteness that even nonwasabi lovers can appreciate. The spicy tuna also impresses with its silky spicy mayo sauce that blankets each chunk of ahi. Sushi-seekers also will enjoy California Rolls ($7), which are great for the youngsters, and Spicy Tuna Rolls ($8) prepared with a beautiful balance of rice, ahi and spicy flavors. Lucky for local patrons, this is just the beginning of Kosaka’s sushi adventures, as he plans to gradually unveil more exciting edibles.

but instead of the usual long rice noodles, it’s served on top of regular soft noodles or look funn noodles. Or for $1 more, you can substitute the noodles for cake noodle or Hong Kong crispy noodle. You won’t find these new plates on the menu, but it can be ordered anytime. As for dishes that are on the menu, there are many of the typical favorites you’d expect at any Chinese restaurant, but Ma says it’s a mix of authentic with local flavors. “We also have updated a lot of items to be healthier,� he adds. “We’re using less oil, and we don’t add MSG.� Ma also recently designed special menus for groups of four or six, consisting of the restaurant’s most popular dishes (such as Lobster with Garlic Chili, Orange Chicken and Steamed Fish Fillet with Ginger Onion) and at a great value. There also are lunch specials from 11 a.m. to 3:30 p.m. (available for takeout or dine-in) and a full-service bar, however, customers have the option to bring their own beverage ($1.50 corkage fee per person). “We have a lot of the same customers who come all the time,� says Ma. “So, we’re always trying to make new things for them to try.�

atisserie La Palme D’or is the definition of sweet. In 2006, owner Hiromi Tanaka opened the doors to her Ala Moana Center dessert haven, and thanks to head pastry chef Akiko Kimura and the rest of the staff, La Palme D’or has been thriving ever since. Within the pristine glass show cases, you’ll find

exquisite pastries, desserts, cakes and more. Treat Dad to La Palme D’or’s Chocolat Cake, a decadent must-have on Father’s Day. Available on a first-come-first-serve basis, this is a chocoholics dream come true, as Chocolat Cake features unique chocolate variations with every layer.

The cake is accented with morsels of fresh strawberries, blueberries, raspberries and blackberries. For Kimura, final presentation is top priority — all desserts have to look as good as they taste.

“Many would assume this cake to be really rich because of all the chocolate, but it really isn’t,” Kimura says. “It’s perfect for the family — young children included — this Father's Day.”

Chocolate sponge cake is the underlying foundation of this sweet masterpiece. According to Kimura, it’s light and fluffy, and offsets the creamy parts of the cake. Who or what inspires you as a chef/manager/owner? My brother and I have always enjoyed eating and cooking, so we thought to open our own restaurant and introduce a real Hong Kong-style of cooking to Hawaii. What’s your most popular dish? We have many popular dishes. ommy and Lien Dang have worked diligently for decades to bring delicious fare from their homeland to Hawaii’s people at affordable prices, and satisfied diners continue to reap the rewards. Pho My Lien serves up fresh and fulfilling Vietnamese cuisine to its constantly growing legion of loyal customers. The husband-and-wife duo have offered their popular home-style dishes since initially opening the doors at their previous Waikiki locale in 1999, and relocating to Aiea 10 years ago to their current home in Westridge Shopping Center adjacent to Pearlridge. “Everything we serve includes fresh ingredients and vegetables that are de-

livered daily,” says Walter James, a longtime friend of Tommy and Lien and financial adviser to the couple. “What you see every day is freshness on each plate. We’ve been serving these dishes for about 14 years now. We’re a family-style restaurant with great prices.” Pho My Lien draws its name from the traditional noodle soup, which Vietnamese rely on as a daily elixir that clears the head and warms the heart. Pho ($7.95 for large) is served with herbs, mint leaves, bean sprouts, chili pepper, lemon wedges and multiple sauces so diners can craft the soup to their liking. 4 “We give you about a half-pound of noodles with this dish, and you can see that the bowl is so big, you could probably serve two or three people,” says James when describing the vermicelli bowl. Pho My Lien’s extensive menu also features sautéed dishes and customer favorites such as Hot Spicy Lemongrass Stir-Fry ($7.95). The zesty dish comes with a choice of chicken, pork, beef, shrimp or tofu, and as James explains, diners have the option of ordering the creation mild or spicy, depending on their desired level of heat. Shrimp Fried Rice ($10.50) also stands out

as a go-to rice plate, and features fresh shrimp and vegetables blended together with a large plateful of perfectly seasoned rice. “You get great value for your money,” James says. “We’re conveniently located right across from Pearlridge Center, and offer plenty of free parking.” Pho My Lien is open for lunch and dinner daily, and also offers a 10 percent military discount. This dish was created in an effort to cater to its vegetarian customers. “We notice that even though yakiniku is known for meat, we have some vegetarians coming in,” Kim says. “Also, children love Fried Noodles.” To top it all off, the restaurant has soft-serve ice cream as a part of the buffet. The restaurant boasts some of the best buffet deals around: Lunch is served from 11 a.m. to 3 p.m. and costs $14.95; $7.95 for children 5-11. Dinner is priced at $24.95; $12.95 for children 5-11. t’s difficult to drive through Chinatown on King Street and not notice Golden Palace Seafood Restaurant. Its regal red columns with golden dragons dancing toward the ceiling are certainly eye-catching. Step through Golden Palace’s door, and find yourself met with a feast fit for a king, or queen — without the price tag. “We want to keep the prices low and keep the people coming in,” says manager Gary Lam. Currently back by popular demand is Golden Pumpkin Braised with Spare Ribs ($7.95). The pumpkin is first steamed, which softens it to a perfect texture without allowing the pumpkin to lose its shape. It is then stir fried with spare ribs in a brown sauce with garlic. Lamb Stew Casserole ($7.95) features lamb that is marinated and then simmered with ginger. Then it is stewed for three to four hours with two types of bean curd paste. Stewing the lamb removes the gamey taste and also allows it to tenderize without falling apart. Once it has stewed, it is cooked over a bed of cabbage, and other flavors and spices are added before being served. To complete your meal, indulge in dessert that won’t leave you feeling like you over-ate. ithin the walls of The Kahala Hotel & Resort sits Hoku’s, which features Hawaiian, Asian and European fusions that delight guests and locals alike. These fusions are evident in dessert items that Michael Moorhouse, executive pastry chef for The Kahala, created. Thai Basil Panna Cotta ($12) features traditional panna cotta infused with Thai basil leaves topped with ruby grapefruit granita and coconut sorbet. “It’s also served with a little chip that is made with coconut rice pudding,” explains Moorhouse. The rice pudding is made from risotto rice cooked in coconut milk. “This is a really unusual flavor combination, but it works well,” he continues. “I was shocked the first time I tasted

the basil, grapefruit and coconut all together, but it’s a very pleasing dish. It’s one of my favorite 2 flavor combinations.” Moorhouse says the coconut flavor provides a base for the granita and basil flavor. Haupia Katsu ($12) is inspired by one of Moorhouse’s favorite foods: katsu don. “Before I moved to Hawaii, I never was exposed to a lot of Japanese food,” he explains. “I like haupia, I like frying things, so we decided to combine panko (Japanese bread crumbs) and fry it. We tried it one day as an experiment and it was really tasty.” The fried pieces of haupia are served with a tropical fruit minestrone of papaya, mango and pineapple dressed with lime juice, as well as mango sorbet. “It’s hot and cold, and

many people do the molten chocolate cake — I wanted to try something new. But it’s something that our regular guests request all the time. Rather than fight it, I embraced it.” And this is one dessert that Hoku’s absolutely has to keep on the menu.

I

n a political sense, countries may be at war with one another, but in the culinary world, diners are noticing the intermingling of many different food cultures and flavors. Residents living in the Kakaako area can find such synergy at Mimasuya Italiano of Kyoto, a relatively new restaurant that infuses traditional Italian cuisine with the bold flavors and flair of Japan. Mimasuya Italiano is the first restaurant — owned by accomplished Japanese entrepreneur Misaki Hibi — to open in the United States, joining the ranks of seven others in Kyoto, Japan. Since its grand opening almost seven months ago, the restaurant has mastered the art of incorporating a Japanese-style presentation in its dishes, utilizing bold colors and eyecatching garnish palettes. Although vastly different from one another, the Italian and Japanese flavor pro-

files allow for both a visually stunning and uniquely tasting menu. “The two worlds really fit well together,” says Shintaro Yano, general manager of Mimasuya Italiano. “Italian food is all about rich, comfort food with big portions, and Japanese cuisine is very conscientious about beautiful presentation, so with our food you get the best of both.” Diners looking for a quintessential Italian meal will be pleasantly surprised at the subtle, yet impactful differences Mimasuya Italiano’s dishes present to give it a Japanese edge. One of the restaurant’s most popular dishes is Diablo Chicken Pepperoncinos ($26), a roasted medley of tender chicken, potatoes and sansyo peppers, an ingredient typically not associated with Italian food. “The sansyo peppers give the roasted chicken a slight heat that makes the overall dish very tasty,” says Yano.

To start, the chef recommends Assorted Appetizers ($28), which comes with 10 different flavorful and beautifully plated dishes ranging from duck breast to tuna carpaccio. Pasta fans can choose from a plethora of dishes ranging from the creamy, egg-based Carbonara ($17) to the popular Chilled Fedelini ($16), a cold tomato-based pasta with grilled eggplant, prosciutto and tomatoes. For a truly all-encompassing taste of what Mimasuya Italiano has to offer, the

restaurant features a daily Prix Fixe Dinner Menu ($50 regular, $38 with the mention of this Dining Out article). The meal comes with six dishes: an appetizer, salad, soup, pasta, main entrée and dessert. “Everything on our menu is handcrafted based on taste and visual appeal,” says Michael Lopez, bar manager for Mimasuya Italiano. “It’s a fine dining experience without the fine dining prices.” In addition, Mimasuya Italiano offers a full-service bar as well as free parking.
