abuhay! Have you been to a Filipino gathering lately? Well, if not, you’re missing out — big time! Whether it be a birthday party or a dinner with family and friends, expect a feast. First and foremost, the spotlight shines on the cuisine, and that’s the only way to go about it! Culinary styles of China, Spain, Mexico and the U.S. have greatly influenced Filipino cuisine, and it’s the distinct sourness of Filipino fare that woos me, as I like to taste generous portions of vinegar and citrus juices in every bite — especially when it comes to adobo. You could say that adobo is the national dish of the Philippines, and to dispel a popular belief, adobo is a particular cooking method more than it is a dish. Meat, seafood, fruit or vegetables can be cooked adobo style in a mixture of vinegar, salt/soy sauce, bay leaves, black pepper and garlic. It’s said the earliest adobos were made with sea salt. There’s a popular saying by the Philippines Department of Tourism, “It’s more fun in the Philip2 | DINING OUT | JUNE 23-29, 2013
pines.” and while that may be true, coming from a food enthusiast standpoint, I like to say, “It’s also a feast in the Philippines!” However, thanks to the following Ono, You Know establishments, we can enjoy these Filipino feasts right here at home. Pass the adobo, please!

People’s Cafe People’s Cafe on Pali Highway brings power to the people with its superlative Hawaiian and Filipino fare. These ono grinds run the gamut from lau lau, kalua pig, corned beef, royal bibinka and more. Ah, yes, mouths are starting to water. t’s easy to see why Morton’s The Steakhouse is considered the classic American steakhouse. With locations that span the globe, this award-winning restaurant — which first opened its doors in Chicago in 1978 — has had years to perfect its recipes and procedures. The alluring aromas of grilled steaks emanate from Morton’s open kitchen and awaken your senses, while you are met with prompt and courteous customer service, and exceptional value. Most recently, Dining Out paid a visit to Morton’s The Steakhouse at Ala Moana Center and shared a feast with general manager Zyron Schoniwitz, who previously has received top honors as Morton’s general manager of the year. Amid porterhouse steak and filet mignon masterpieces, sumptuous bar bites and appetizers, and decadent desserts, we reveled in all that is Morton’s The Steakhouse. DO: Over the years, Morton’s The Steakhouse has been a staple on the international dining scene. What is the restaurant’s philosophy? Schoniwitz: Our philosophy is to provide guests with the ultimate dining experience. We specialize in USDA prime-aged beef, but the overall package we present to our guests — customer service, hospitality and the dining environment — is key

and all up to par with our acclaimed cuisine. DO: Who is Morton’s clientele? Schoniwitz: Our clientele is a broad range of people. On one table you can have a business group, and at the next table you can have a family celebrating a birthday, then at another table you can have a couple celebrating an anniversary. We cater to special occasions. For instance, for intimate anniversary dinners, we personalize the menus, decorate the table and our guests receive a complimentary souffle for dessert. We also have private dining rooms that can hold up to 72 people. However, we really like to focus on our kamaaina. It’s
nice to have that local touch. Here in Hawaii, we definitely possess the aloha spirit — everyone on our staff is very warm and friendly. We strongly believe in building relationships and taking care of our guests.
DO: Executive chef Jean Pierre Maharibatcha makes magic in the kitchen. When did he join the Morton’s ohana? Schoniwitz: Chef came on board about six months ago and has been a wonderful addition to our team. He’s an award-winning chef, classically trained in France and has more than 35 years of culinary experience.

mier cuts of beef, succulent seafood, classic steakhouse sides and desserts. What dishes are making mouths water? Schoniwitz: Currently, we are offering a Steak and Seafood Special ($59.99 per guest) that our patrons love. It’s a set menu, which features a choice of salad (Caesar Salad, Chopped Spinach Salad, Morton’s Salad), entree (Filet Mignon), choice of seafood (Broiled Sea Scallops, Jumbo Shrimp Alexander, Jumbo Lump Crab Cake, 5-ounce Canadian Lobster Tail), choice of side item (asparagus, broccoli, baked or mashed potatoes, french fries, etc.), choice of dessert (Morton's Legendary Hot Chocolate Cake, Key Lime Pie or crème Brulee). It’s an unbeatable value. A prelude to any meal often begins with an appetizer, and I recommend Prosciutto Wrapped Mozzarella ($14) served atop a bed of watercress salad and accented with a balsamic glazed and grated Parmesan cheese. Top dinner items include Porterhouse Steak ($61), a 24-ounce USDA prime, which is the best of both worlds — filet mignon and New York steak — and is very tender and juicy; Cajun Ribeye Steak ($51) coated with Cajun spices and marinated in a light oil for 24 to 48 hours; and Center-Cut Filet Mignon, a summer favorite that’s very lean, tender and extremely flavorful. DO: Stellar desserts complete a spectacular meal. What sweet sensations do you recommend? Schoniwitz: Definitely Morton’s Legendary Hot Chocolate Cake ($14.50), which oozes with a warm liquid center of rich chocolate.

The cake is topped with powdered sugar and morsels of raspberries. Another renowned dessert is New York Cheesecake ($12) topped with caramelized sugar and paired with sliced strawberries. DO: Delicious! Happy Hour attracts diners here as well, correct? We’ve heard great things about the bar bites! Schoniwitz: Yes. Happy hour runs from 4:45 to 6:30 p.m. and from 9 p.m. to closing every day except Saturday. Our bar bites are a big draw, especially favorites such as Prime Cheeseburgers ($15 regular, $7 happy hour), three mini cheeseburgers each served with 3-ounce beef patties, topped with melted Cheddar cheese, onion, lettuce and tomatoes on freshly toasted buns; Parmesan Truffle Matchstick Fries ($13 regular, $6 happy hour), Tuna Tacos ($14 regular, $7 happy hour) and Steak Tacos ($14 regular, $7 happy hour). We also have a fully stocked bar with a wide variety of beer, wines, cocktails and martinis. We always want to personalize every dining experience, so some of our regular guests even have their very own wine lockers.
DO: What sets Morton’s apart from other steakhouses? Schoniwitz: Two things: quality and consistency. The quality of our products is the finest available, and there’s a great attention to detail in everything that we do. We always start with the best, highest quality product, and that’s USDA prime aged beef, grain-fed and aged twoand-a half to three weeks. Then, we have a special cooking process, in which our steaks are lightly seasoned with our special blend of seasonings and then cooked to perfection in our 1,100- to 1,300-degree oven. When you start with the best-quality beef, the end result is likely to be amazing as well. We finish it off with our house au jus. When you have high-quality beef, you don't want to do too much to it — the beef speaks for itself. We also really focus on value, we give our guests a compelling reason to come back. Our goal is to ensure that our guests are totally happy. It takes a team to run a successful restaurant, and I love the excitement and energy of working at Morton’s.

here are two types of diners: Those who look at a menu and mentally calculate calories, and those like me, who look at a menu with unrestrained anticipation at the prospect of ordering anything and everything. Because really, at the end of the day, “Who’s counting?” Sometimes, these moments of pure indulgence are better left for the end of a brutal work day. Other times, a little pick-me-up lunch is exactly what you need to re-focus and recharge. Conveniently, Blue Water Shrimp & Seafood is open for breakfast, lunch and dinner, ready whenever you are. Located on Kapahulu Avenue, the easy-to-spot blue truck has been cooking up seafood favorites for the past seven years. “We always get fresh fish from the auction,” says chef Magdy Elzoheiry. One friendly suggestion: You’re going to want to try the Lobster Plate ($14.95). “We’re famous for our

lobster,” says Elzoheiry. The lobster is sautéed in a garlic butter sauce, making the meat tender, but flavorful. Once it is cooked, it is served with more (yes, more) garlic butter sauce. This plate lunch, like all others also is served with rice, corn and a tossed green salad. Another newly welcomed, but not unfamiliar, item that regular customers might rejoice over is the Fresh Hawaiian Poke Bowl ($7.95). The food truck stopped serving its Poke Bowls for a while, but is bringing it back. Currently, there are three types to choose from. The first option is ahi onion, which features Hawaiian salt, chili flakes, green onions, Maui onions, sesame seeds and sesame oil with a special mix. The
second choice is rooted in Japanese flavors with tobiko and wasabi. The last option is a shoyu poke, which includes shoyu, green onion, ogo (seaweed) and Maui onion. Finally, the dish that defines everything you could ever hope for when you’re in the mood to pig out: the Triple Combo Plate ($13.95). Why stop with one entrée when you can have three packed into one plate? And they don’t skimp on the portions either. All you have to do is choose three items from the menu. For a little surfand-turf, try the steak, ahi and shrimp combo. “People are going to be happy when they come and try us for the first time,” says Elzoheiry. “For our regular customers, we are going to make sure they are extra happy and take the food to the next level.”

This week, Dining Out gets the inside scoops from Hee Hing Restaurant general manager David Koc, who gives us a little taste of Hee Hing and shares just what fuels his culinary drive.

Who or what inspires you as a chef/manager/owner? As the general manager, I am inspired by seeing our customers happy with the food, service and their entire dining experience. Our goal is to have satisfied, happy customers. Throughout our 50 years in business, we have served almost three generations of families who come to eat at our restaurant. Many of our customers are like members of our family. What is your favorite dish on the menu? Why? I love Peipa Tofu, a dish of golden, fried, minced shrimp and tofu mousse on a bed of fresh garlic

spinach, topped with light brown gravy. It’s delicious, healthy and so good with hot rice. I also love our Baked Char Siu Manapua. I honestly believe that we serve the best manapua in the Islands. It is very light and not doughy. The ratio of char siu to bun is perfect, and you get char siu with every bite. We use real char siu, which we roast and chop ourselves. It’s indescribably delicious. What is your favorite ingredient to work with? Why? I love working with garlic and ginger. They are incredibly aromatic and add bold flavor to all dishes.

he joys of Northern Chinese food are many. Bold, clean flavors are simply prepared and wonderfully presented to look as good as they taste. Such flavors are what earned the Asian nation's cuisine the honorary title of “America's ethnic food,” at least according to some barely remembered Food Network program. It does makes sense. Chinese food has always been popular because it can be nearly anything you want. It is both unique and familiar — much like the food at

Little Village Noodle House in Chinatown. The Smith Street eatery has been satisfying customers for more than 12 years because it holds to the earlier described ethos, and makes food that is simple, satisfying and tasty. A good example is the humble Pot Sticker. Priced at $7.95 for eight pieces and $4.95 for four, the tender and juicy combination of protein and herbs is delicious. Available in four configurations — chicken and chives, tender pork, and tofu and chives — the appetizer pockets are stuffed, steamed, pan-fried crispy and served hot, sweet, tangy and crunchy. A simple recipe that’s simply tasty. Another favorite is Lettuce Wrap ($8.95). The savory combination of minced chicken breast, chives, shiitake mushrooms, bean
sprouts and chestnuts are stir-fried, topped with candied walnuts and served with crisp iceberg lettuce and hoisin sauce. Again, simple. The fresh ingredients give the dish its substance while the chestnuts provide crunch, and the walnuts are a sweet addition that is a nice, unexpected flavor enhancer. One appetizer that breaks away from the usual is Green Onion Pancakes ($4.25). Familiar in content, but unique in design, the crunchy half moon-style pockets are rolled out, coiled pastry style and cut. Before being pan-fried, the light appetizer is given a twist to create the familiar shape and then finally fried a golden brown. Now, I'm not a guy who likes onions — I pretty much eliminate it from all of my cooking — but this is an onion dish I enjoy. The green onions are superb in taste and texture, and their natural moisture keeps the interior soft, as the exterior is turned into a flaky, crunchy outer layer. Very good. Check it out.

rots, spinach, tomatoes ...," explains general manager Michael Skedeleski. "It’s actually a large portion." And it’s served with homemade salsa on the side. "It’s not very hot," he says, "but it adds a lot of flavor." The dish also comes with your choice of brown rice, potatoes or pancakes, so you won’t
go away hungry. If you’re looking for something cool, fresh and naturally sweet, the Hawaiian Acai Bowl ($7.45) is a big hit with customers. "We sell a lot of acai bowls," says Skedeleski. And no wonder. The acai berries are blended with 100 percent fruit juice, re-
sulting in a sorbet-like texture, topped with strawberries, pineapple, bananas, blueberries and organic hemp granola, and garnished with chopped macadamia nuts (optional) and honey. Or try the new Kona Red Bowl ($7.45, available at the Saratoga Road cafe only), which features Kona Red coffee

or any business, repeat customers are always a good sign that you’re doing something right. At Korean Hibiscus BBQ in Kaimuki, some of the oldtimers I met said they come back for the good food and friendly service. I agree, The food tastes fresh, the flavors are orignal and customer service is No. 1. Originally located in Aina Haina Shopping Center for 14 years, co-owners Shirley and Raymond Kodani closed their popular Korean takeout restaurant after their lease was not renewed
in 2010. In Jan. 2012, they reopened at Kaimuki Shopping Center. It’s been a yearand-a-half, and according to Raymond, many regular customers from the old location have found their way to the new restaurant slightly hidden on the lower level of the shopping center next to Times Super Market. The menu features many of the same tasty dishes from before, as well as some new items, such as Spicy BBQ Pork with Kim Chi Stir-fry ($10.50), which you won’t see on the menu
but is available by request. The dish, which is known as Jayook Pokum in Korea, consists of pork stir-fried with a sour kim chi, and served with four choices of vegetables and two scoops of hapa rice (a mix of brown and white rice). Also new is Grandma’s Special Bulgogi Pokum Plate ($10.50) which is what Shirley makes for her grandchildren consisting of marinated beef ribeye stir-fried with sweet potato noodles, carrot, and round and green onion.

A popular dish on the regular menu is the alltime local favorite Chicken Katsu ($7.75 mini, $9.25 regular). “We marinate the chicken first in a (family recipe) barbecue sauce,� notes Raymond. “And then we flour it, panko it and deep-fry it.� There’s also Stir-Fried Squid ($9), which can be ordered at any level of spiciness. Regular lunch and dinner plates are served with four choices of vegetables and two scoops of hapa rice. The vegetable choices are the standard selection you would find at a Korean restaurant, however, Raymond notes that as much as possible many of the vegetables they use come from local farmers, such as cabbage, choy sum, daikon, bean sprouts, cucumbers and won bok. Many customers order takeout, but there are some chairs inside for those who want to dine-in. There’s also plenty of free parking, and be sure to bring cash as they accept cash only.

aikiki possesses an energy like no other. A vast melting pot, the streets are filled with locals and visitors from across the globe exploring the sights and sounds of paradise. Yet, here at Il Lupino Trattoria & Wine Bar in Royal Hawaiian Center, guests are transported into the lap of luxury, whether dining indoors or in the garden terrace. And ready to experience traditional Italian cuisine in its purist form is Hawaii’s own Yasmin Dar. You may remember waking up to this half Filipina-half Pakistani beauty every morning, as she previously served as morning traffic anchor and social media reporter for KITV 4 News This Morning. However, most recently, Dar's life has been a whirlwind. Last August, she made the move from Hawaii to Eugene, Ore., to join the KVAL news team as evening anchor of the 5, 6 and 11 p.m. news.
Then, fast-forward to December, when 28-year-old Dar married her longtime love, Sal Fasi, ready to begin a new journey together. Lucky for us, during her recent visit home, Dar carved out some time in her busy schedule to sit down with us for lunch. But then again, who can say no to fabulous eats at Il Lupino? “I love coming home, and I’m super excited to be home right now,” Dar says, as she takes in the intoxicating aroma of the spread presented before us. There’s Salmon al Crudo ($32), Cotoletta Capricciosa (pan-fried veal rib chop, $41), La Florentina (grilled porterhouse steak, $98) and Caprese appetizer ($13). “I haven’t been to Il Lupino before, but I’ve been wanting to try it for a while. As soon as I walked in, I liked the relaxing ambiance and I love Italian food,” Dar exclaims. “I love to eat! There are so

many amazing foods that I’ve been opened up to, and my husband, Sal, is a huge foodie. He really got me to appreciate food and freshness. It doesn’t have to be fancy, I just appreciate the simplicity of really good ingredients.” And with each bite of Il Lupino cuisine, it’s the best of both worlds — superb quality along with the finest ingredients. “The Caprese is fresh! The mozzarella is fantastic and I love fresh basil on everything,” Dar says of this starter, which features fresh Hauula vine-ripe tomatoes, imported mozzarella di bufala and fresh basil drizzled with extra virgin olive oil and balsamic caviar. Pam-Fried Veal Rib Chop Milanese style, topped with arugula salad, local vine-ripe tomatoes, fresh mozzarella and Nicoise olives is next, along with a massive 32-ounce grilled porterhouse steak along with pan-fried rose-
mary potatoes, and panroasted king salmon with a medley of fresh local tomato relish, capers and Nicoise olives. “The veal is so good,” Dar gushes. “The olives give it a nice salty flavor, the arugula adds some spice and I love how the panfried exterior gives the dish a nice texture. The porterhouse steak is cooked perfectly and it has the right amount of fat to keep it juicy and moist. “I love the crispy skin of the salmon. I feel like I can eat the whole thing and not feel guilty,” she adds. A real go-getter, Dar holds a master's degree in communications from UH Manoa and also has taught a course in communications at Hawaii Pacific University. In between bites, Dar gives us a peek into her life on and off the camera in Eugene. “It was nerve-wracking going from a traffic anchor here at home to an evening
anchor in Oregon. The backstory is my current news director was actually here in Hawaii on vacation, and he and his wife saw me on the morning news. He emailed me a few days later, and I asked my manager, Nancy Bernal, to follow up. I flew to Oregon, did a read and the rest is history. “But I definitely prepared myself for this job. I would watch major networks and see how they presented themselves on air and how they delivered the news. I also had a speech coach here who was helping me a lot,” Dar states. Yet, it’s obvious that this gal didn’t need much coaching, as the camera naturally loves her. Dar also is a professional actress and model, claiming principal roles in film and television shows including Lost, Off The Map, Hawaii Five-0 and Soul Surfer. Her modeling credits include a campaign for Royal Hawaiian Center, Trump Towers and more.
“I love working in news! Every day is different and it’s so exciting, you never know what to expect.” Dar says, adding that she likes to unwind with power yoga sessions, exploring the outdoors, volunteering at an animal shelter and cooking at home with her husband. Together, they’ve started to grow vegetables on their lanai. Soaking in the final bites of her meal and the last few days of paradise, Dar reflects, “Everything at Il Lupino is so fantastic. The special menu also includes French bread along with oil and vinegar. Elder has been a part of Brasserie Du Vin’s heart of the house staff for five years, and was elevated to
lead the kitchen roughly two years ago. The skilled culinary artist tantalizes diners’ taste buds with a wide array of French-inspired offerings and traditional favorites. “We offer a fun dining experience, and we’re all about encouraging that laid-back, relaxed community feel. It was a dream,” says Ron Ige of owning his own restaurant a dream that he achieved when he opened Ige’s Restaurant and 19th Puka several years ago. After all, Ige grew up in the restaurant industry. His mother had worked in a series of restaurants before eventually opening up her own place at the Ige home. “The kitchen was behind our house, so we used to wake up every morning and just help her. When I finished college, I ended up helping her and just got dragged into it somehow,” he jokes.

on Ige and his family have been serving up local favorites at various locales around the island for years. But just recently, Ige’s Restaurant and 19th Puka in Aiea — the joint that Ron owns — began offering lunch items in addition to dinner. As a sort of homage to Ige’s Lunchwagon, there is no table service during lunch hours. Instead, diners line up at the counter to place their orders. Once you have your food, you can settle down in the restaurant’s expansive dining room. This type of lunch setup is perfect for the diner on the go. “A lot of people will think that they don’t have time for lunch,” Ige says.
But here, Ige estimates that diners could have their food within 5 to 10 minutes. And if you are really pressed for time, Ige’s also has an express menu that includes items such as spare ribs, stew and more. Lunch items include Swordfish Shutome ($11), which is doused in seasoned flour and grilled. The fish is accented with a creamy garlic cilantro aioli. Another lunch favorite is Teriyaki Flap Meat ($10), which Ige says is one of the most popular dishes. “This is made with our own original teriyaki sauce,” he explains. Stepping into the restaurant is like stepping into another world altogether. Colorful koi swim in a pond around the grounds, which is set against a beautiful waterfall and shrubbery. It’s the perfect place to kick back, relax, and eat your weight in glorious desserts. Executive chef Jason Takemura highlights two famous desserts on Pagoda’s menu just for Dining Out readers. While desserts are on the buffet menus, they also are available a la carte for very reasonable prices. Macadamia Nut Tart ($5) sits beneath a helping of vanilla ice cream. The cold and warm temperatures combine for a perfectly sweet experience. “This is our take on a pecan pie,” explains Takemura of the dish. The beloved Cinnamon White Chocolate Bread Pudding ($5) also is a winner with locals and tourists who walk through the doors. This dish is featured in many of Pagoda’s buffets, and Takemura says that guests take mounds of the dessert. “It’s one of our signature items,” he says. “It’s our spin on bread pudding. It’s
custardy, soft, and it has pockets of white chocolate inside.” The best part of the desserts at Pagoda (besides the fact that they’re delicious)? They’re served daily for breakfast, lunch and dinner. Takemura notes that Cinnamon White Chocolate

Say hello to kare-kare, lumpiang Shanghai, Max’s famous fried chicken, pancit bihon, sago’t gulaman, leche flan and … drum roll, please, … pork and chicken adobo! Max’s Classic Chicken Adobo ($9.95) is a Filipino take on chicken stew. Morsels of chicken are richly marinated in soy sauce and vinegar, enhanced with flavors of garlic, bay leaves and whole peppercorns, and garnished with green onions and egg. If pork is more to your liking, save your appetite for Pinatuyong Adobo ($11.95), which features marinated pork chunks braised in vinegar and a soy sauce reduction. Garlic, bay leaves and whole peppercorn also accentuate the dish, while it’s finally garnished with green onions and served with diced tomatoes and onions. According to chef Warlie Aguarin, perfect preparation of adobo is priority. “We marinate the pieces of pork for two 6 hours in a blend of vinegar, soy sauce, fish sauce and garlic. We braise it until its tender, and then garnish it with onions and bay leaves.” The result: Melt-in-your mouth goodness! ince the 1970s, a trip to L&L Hawaiian Barbecue has been one of Hawaii’s favorite pastimes. The local franchise chain of eateries boasts an assortment of comforting classics that are made fresh, priced reasonably and fuse Hawaiian and Asian-American flavors, all of which have earned it an irreplaceable spot in countless patrons’ hearts. For many local diners — both living in the Islands and elsewhere — a plate lunch indulgence from L&L is sweetly reminiscent of home. That’s why the mainstay has been successful not only in Hawaii, but with a slew of Mainland locations as well. “People love L&L!” says director of marketing Brandon Dela Cruz. “We have local transplants who drive miles just to enjoy L&L’s signature brand of plate lunches/Hawaiian barbecue.” Now the establishment is taking this concept one step further by opening international branches as part of its plight to share Hawaii’s cuisine with people across the globe. “L&L’s mission is to spread the aloha throughout the world, one plate lunch at a time,” explains Dela Cruz. “The expansion means that the cui-

sine that local people love is now available beyond Hawaii and the Mainland U.S.” The most recent addition to the L&L family resides in Fumen, China, where a branch opened this past weekend. Another restaurant is set to debut in New Zealand next month as well. Here at home, L&L continues to grow with plans for a Mililani Mauka shop to open in the next few months. The uniting factor in all of the establishment’s locations is an epic dose of glorious local grinds. While some of the menus cater to regional tastes depending on where a particular shop is situated, there are a handful of core items — such as Chicken Katsu, Loco Mocos and BBQ Mixed Plates — that you’ll find at every single L&L. Dela Cruz suggests going for a Loco Moco (prices vary) first, which features two specially made L&L signature beef patties layered on top of

a bed of rice. The dish is topped with an egg and generously smothered in all the richness of the restaurant’s special brown gravy. Then you can ease your way into the mother of all plate lunches — a BBQ Mixed Plate (prices vary). This heap of smoldering, grilled goodness presents a sampling of some of L&L’s most beloved items with its triad of savory L&L BBQ Beef, Chicken and Short Ribs. To complete the classic, two scoops of white
rice and a mound of creamy mac salad are served on the side. “(It’s) a full plate of L&L’s best!” says Dela Cruz, who adds that both the Loco Moco and BBQ Mixed Plate are cooked to order and generously portioned for the heartiest of appetites. A
t first attempt, Them Dining may be difficult to find, but like most hidden gems, once found, diners never again have trouble getting there. Carefully tucked away within the walls of Waikiki Sand Villa Hotel, the JapaneseFrench fusion restaurant may very well be Waikiki’s best-kept secret. Since the restaurant first opened almost two years ago, Them Dining has masterfully combined Japanese and French-inspired cuisine under the culinary direction of fatherson chefs Kazuo and Yushi Shimada, respectively. “The two worlds complement each other well,” explains Kazuo. “These days, as diners
become more adventurous and accustomed to eating many kinds of food, our customers enjoy being able to dine on meals that incorporate both Asian and European flavors.” Having recently launched a revised menu, the restaurant utilizes innovative cooking techniques to ensure every dish possesses a deep, multi-layered type of flavor. The muchbeloved Beef Curry (starting at $9) remains a public favorite. “We braise the beef for four hours until it is the perfect level of tenderness,” Kazuo adds. “The meat comes in a rich, slightly spicy demi-glace sauce with cooked onions, apples and tomatoes.” While many of the entrée

meals come with a salad as well as rice, diners frequently opt to try the refreshing “Them Dining” Special Salad ($9.50), an appetizing symphony of mixed greens, red onions, tomatoes, cucumbers and prosciutto with a savory soy sauce-based dressing. All produce, along with the restaurant’s meat and seafood, is never frozen. True to Japanese custom, the restaurant also offers the Chef’s Course ($40), an omakase meal of five to six courses chosen by the chef specifically for that night. Those interested in the Chef’s Course must reserve it at least 24 hours prior. Aside from the regular menu, the restaurant also fea-

tures a rotating special menu, which varies from day to day. Diners may choose from a number of dishes such as Spicy Cod Roe Pasta ($10.50), as well as a slew of others.

The quaint, cozy restaurant, which comfortably seats 20 to 25 customers, also may be reserved for private parties. Complimentary valet parking as well as meter parking are available.
