G

rowing up with a father who’s a New Jersey native, I’ve spent many summers and Christmases in the Garden State visiting family. My father also is Italian, so, of course, every get-together always revolves around food! It’s the best! My grandmother cooks up homemade spaghetti and meatballs, and my uncle even puts bets on how much food I can eat. However, he seems to underestimate the enormity of my appetite, so I always walk away with an extra 20 bucks in my pocket. Cha-ching! Anyway, besides the authentic Italian grinds, New Jersey is the place to be for clams. In fact, it’s believed that New York and New Jersey harvest millions of pounds of hard clams a year. If you’re a clam connoisseur like myself, than this, my friends, is the jackpot! There’s nothing like a summer in New Jersey hitting up the clam bars. But, Ono readers, lucky for me, once you take this island girl out of N.J., the serious clam eating continues here at home as well. 53 By The Sea We all deserve to feel like royalty now and again, and 53 By The Sea is your palace. Step through the ceiling-high double doors, and stunning views of Diamond Head amid an elegantly vast dining room awaits. A grand staircase, crystal chandelier and a slew of other elaborate furnishings are superlative accents to the avantgarde dining experience that pays tribute to “New American Cuisine,” with an emphasis on local ingredients. Executive chef Thomas Ho’s distinct cooking style is Frenchrooted, so, it’s only fitting to find French culinary stylings as the basis of every dish. “McCully Shopping Center is a real melting pot here in Honolulu,” says McCully Shopping Center’s marketing director Terri Hansen, who adds that the center is now under new ownership by M Pocket Corporation. “We have so many restaurants representing different ethnicities, and the cuisines make the shopping center very inviting to everyone. The fare really complements our clientele.” Now through July 31, McCully Shopping Center is celebrating A World of Cuisines, an annual event showcasing the diverse fla-

vors that its restaurants have to offer, be it Japanese, Thai, Chinese, Vietnamese, fast food or local fare, in addition to refreshing smoothies, bubble teas and snow ice desserts that are perfect for summer. Participating restaurants include Fook Yuen Chinese Seafood Restaurant, Pho 777 Vietnamese Restaurant, Phuket Thai Restaurant, Regal Diner, Taco Bell, Hot Pot Heaven, Coffee or Tea?, Curry House, YottekoYa Ramen, and the two newest additions to the lineup, Maui Kitchen and Neco Grill & Bar. Most recently, Dining Out

brought our appetite to McCully Shopping Center to get a firsthand look at a slew of dishes patrons can revel in with A World of Cuisines. Our first stop was to Yotteko-Ya Ramen, where chef Kimihiko Sano whipped up a fabulous bowl of Paitan Chashu Ramen ($9.95) topped with five slices of homemade char siu pork. As the No. 1 recommended soup base, paitan is simmered for more than 10 hours with tender pieces of pork and chicken, along with an assortment of vegetables and spices. This meticulous process pro-


duces a thick, rich collagen stock, which is believed to help prevent aging. Open for lunch and dinner, Yotteko-Ya Ramen has been a favorite since its inception in June 2004. Then, in the mood for gourmet local grinds, we made our way to Maui Kitchen, which opened its doors this past April. Plates of Hamburger Steak Loco Moco, Boneless Deep Fried Pork Chops and Chicken Katsu easily work up appetites, but it’s the irresistible malasadas made by chef Virgilio Jore that draw in the crowd. Fill up on traditional Sugar Malasadas ($1.25) or specialty malasadas filled with Azuki Bean, Haupia Cream or Custard, priced at $1.65 each. If a spread of JapaneseIzakaya favorites is what you’re craving, Neco Grill & Bar, located on the lower level of the complex, features more than 30 alluring dishes such as Pork Kimchee ($9.50), Tomato Mozzarella appetizer ($8.50), Garlic Steak ($19.90) and Pork Katsu teishoku set served with rice, pickles, various side dishes and an ice cold Sapporo Draft beer or soft drink ($10, happy hour 5:30-7 p.m.). “Starting July 1, we will be offering different happy hour specials on weekdays. We also offer Japanesestyle open karaoke from 10 p.m. nightly for only $1 per song,” says Neco’s Thomas TJ Gannon, adding that the restaurant is open from 5:30 p.m. to 2 a.m. nightly. And, of course, Fook Yuen, a McCully Shopping Center mainstay, presents patrons with authentic Chinese cuisine, including house specialties Sauteed King Prawns with Honey Gazed Walnut ($16.50) and Pei-Pa Tofu with Spinach ($12.95). In business for more than 20 years, Fook Yuen knows

exactly what its customers want. “A World of Cuisines is perfectly fitting for McCully Shopping Center,” Hansen says. “It’s a great way for our patrons to feature their specific cuisines. “As a part of A World of Cuisines, we’re also sending a lucky winner and his or her companion somewhere in the world. Makino also insists on trying his Prime Rib, which is slow roasted with garlic and seven types of pepper to

s I pull up to Molly’s BBQ and Seafood in Wahiawa, the wafting aroma of barbecue wood has my mouth watering before I even step inside. Formerly known as Molly’s Smokehouse, the restaurant has changed its name and expanded its offerings, but still serves up its famous delicious smoked meat and barbecue favorites, including beef brisket, pulled pork, baby back ribs, chicken and sausages. “Most of our dishes are carrying over,” says general manager Molly Walker. “We’re just trying to extend that arm for

Foods that were kind of next to nature for us. “The barbecues and crab boils are here, and we’re gonna move on and bring some more of the Southern fare. The other dish we’re doing is chicken fried steak, so that’s going to be on our new menu as well.” Known for its authentic Texas-style barbecue and country cooking, the family-owned-and-managed restaurant has been open for 14 years; and in addition to its name change has been undergoing major renovations, updating its interior including the counter top and restrooms. The restaurant's new sign is expected to go up today, and new menus are on its way. Among the new dishes, a definite must-try, is Cajun Crab Boil ($45) featuring a half pound of jumbo shrimp, half pound of crawfish, one pound of snow crab, white potato, corn on the cob and spicy sausage. meat and our signature barbecue sauces, and finding ways where we are able to make a menu more affordable, especially during lunch time,” explains Walker. There also are many great “soul” foods on the menu such as mac and cheese, blackened catfish, seafood gumbo and fried chicken. Walker adds that

they are looking into expanding their beverage options, including serving beer and wine. For now, customers can enjoy BYOB with a corkage fee of $10 per table of four. Restrictions apply, and customers can expect to be carded. “Our foods are so rare still in Hawaii,” adds Walker, noting the difficulty to pick just one item as the most popular. “You have customers who will come looking for catfish, and some for barbecue ribs. The beef brisket is really popular. This (new Chop BBQ) beef sandwich is going to go through the roof. I totally expect it to kick off. It’s very good.”

n 1989, when Waimalu Elementary School fifth-grader Jillian Tamashiro found out she had won the Tony Roma’s art contest, there was only one way the unsuspecting winner could aptly describe her emotions. “I felt like a little rock star,� says Tamashiro. Initially hesitant to the idea of applying, she received encouragement from her mother, who was a first-grade teacher at the time. “ As a kid, I had always been fond of doodling or sketching,� Tamashiro explains. Almost 25 years later, Tamashiro now works for the Department of Health. iss away the hunger pains at Kissaten Coffee Bar, a contemporary establishment that always has its doors open to patrons for breakfast, lunch, dinner and late-night dining. Conveniently located on Piikoi Street, Kissaten prides itself on classic comfort food with a gourmet twist, encompassing Japanese, Italian and French culinary influences. Just in time for summer, chef Edison Ching was inspired to create Summer Tomato Salad, a July special available for lunch and dinner.

Tapioca balls marinated in a balsamic vinaigrette burst with flavor. “At first glance, people think it’s caviar, but it’s my own unique creation. Besides flavor, it brings a nice texture to the dish.”

Hints of homemade goat cheese pesto are on point and takes the salad to another dimension — a welcomed fusion of Italian and local flair.

“This is a refreshing take on the traditional Caprese salad. I was inspired by the season. The key is to keep things light and fresh,” Ching says. Sliced radish, Japanese cucumber and Kamuela tomatoes complete the salad. The tomatoes are doused in a red wine vinaigrette and garnished with basil, oregano and thyme. “The red wine vinaigrette gives an acidic punch to the dish,” Ching says.

Bite-size pieces of local seedless watermelon add sweet sensations to the dish. Because what’s summer without watermelon? These juicy morsels of goodness pair perfectly with the acidic flavors of the red wine vinaigrette and balsamic vinaigrette.

tined to be impressed. “Everything’s pretty traditional as far as the recipes, but of course, we put the Macaroni Grill twist on the menu,” says Kekoolani. “Our guests have been happy with our food, and we’re doing all we can to bring them back with that ‘wow’ factor.” One may dive in to start a meal with Calamari Fritti ($12), an alluring appetizer featuring crisp-fried calamari coupled with bold pepperoncini peppers. The bite-size morsels are accompanied by a bold arrabbiata sauce that helps to kick-start the dining experience. Crisp, fresh lettuce invites diners to delve into Market Chop ($15), a chopped salad composed of roasted turkey, pepperoni, provolone cheese, artichoke, pumpkin seeds and a tasty balsamic vinaigrette dressing. hen Ho Ho C h i n e s e Cuisine director of sales Armando Bauzon describes what the restaurant can offer to customers, the appeal is obvious: “It’s an allyou-can-eat buffet, and you don’t have to spend that much.” Ho Ho serves up traditional Cantonese-style cuisine at its buffet and also offers dim sum, party trays and select a la carte items. Included in the buffet are a range of dishes that include Fried Rice, Fried Chicken Wings, Lo Mein and more. However, Bauzon says that one of the restaurant’s most noted dishes is Salt and Pepper Shrimp.

“It’s the dish that made us well-known,” he says. While this may be a common dish in any number of Chinese restaurants, Bauzon says that Ho Ho has perfected its recipe to give the shrimp just the perfect flavor with a little bit of kick. The buffet hours and prices are Monday-Friday:

With that kind of dedication to customer service, the restaurant even revamped its whole setup in response to feedback. “It started with a la carte options,” Bauzon explains. “And then after a year, we converted to a buffet. And we kept getting more and more patrons.” Shortly after, customers began asking if the restaurant also could accommodate parties, so they tried that out, too. These days, Ho Ho Chinese Cuisine is a popular party destination that can accommodate up to 200 people.

estaurants can be much like television shows. The best programs make no distinction between the stars and the secondary characters, blending both to create stronger and more entertaining story lines. Restaurants can be the same way. At lesser eateries, appetizers are simple snacks, secondary players to the main course. Yet,

the ones that do it right put as much care into the beginning of the meal as they do any other part. Ocean House at Outrigger Reef on the Beach is of the latter — a restaurant that knows a meal cannot be of true quality unless each part is well made. Edamame Hummus ($11.50) is a rock star dish with way too much flavor for something so basic. Seasoned soy beans are pureed, and served with crispy tofu cakes and a balsamic vinegar emulsion. The creaminess and freshness are just wonderful and everything on the dish is light and flavorful. Another too-goodto-be-an-appetizer appetizer is Escargot in Puff Pastry ($11.50). An insanely good mix of snails and mushrooms, the tender ingredients are sauteed in a white wine garlic butter cream sauce, topped with melted brie cheese and served between two light and crunchy puff pastries. What could be a heavy 3 and rich dish is instead

light, creamy and tender with the bottom pastry acting as a receptor of all the carefully blended flavors. The more I eat sashimi, the more I appreciate this buttery fish. Ocean House has an outstanding version of the traditional pupu dish called Sizzling Ahi Carpaccio ($14.50). The tender ahi is served with Hawaiian sea salt, togarashi, Maui onions and radish sprouts. Just before serving, the fish is topped with a sizzling combination of sesame and peanut oil, which lightly cooks the exterior while imparting new flavors to the dish. Combined with the crunchy sprouts, and the thick and spicy chili sauce, the delicate fish provides a mix of flavors, textures and temperature levels. One final recommendation is Coconut Lobster Skewers ($14.50), served on a wedge of Maui Gold Pineapple. Made with slipper lobster tail that is brought in fresh daily, the sweet and tender meat is covered in a coconut breading and served with a sweet chili lime dipping sauce. Try one, or try them all.

id you know the clinical term for “funny bone” is the olecranon? Random factoids aside: make no bones about it, Mitsu-Ken Okazu & Catering’s following is anything but trivial. If the line of restaurant

fanatics and their rave reviews don’t convince you, then try the food yourself. As a one-stop box with an assortment of comforting local favorites, bentos are the way to go on a lunch break.

“Our bentos have a variety, a little of everything, and, obviously, the most important thing is the garlic chicken in there,” explains Sherri Kaneshiro, Mitsu-ken’s bookkeeper and office manager. The most popular of the bentos is the Mitsu-Ken Bento ($6.50), which includes three pieces of garlic chicken, gingery and tender teri beef, seasoned Spam, hot dog cooked in shoyu, omelet with green onions and fish cake, and rice with a sprinkle of furikake and a pinch of ginger. All the seasonings are exclusive to Mitsu-Ken and enhance the flavors. The special sauce the Spam receives before frying, for example, adds sweetness and cuts down saltiness. The

Mini Bento ($4.50), a scaled-down version of the previous bento, with garlic chicken, hot dog, omelet and rice with furikake, is perfect for those with smaller appetites. Fried Saimin Bento ($6.25) is another hot item. It contains fried saimin, garlic chicken, omelet, Portuguese sausage and rice. Why is this combination so perfect? There is no logical explanation other than, “Portuguese sausage and fried saimin are just really, really good together,” says Kaneshiro. In fact, it was Kaneshiro who had the idea to put saimin on the menu. “I love saimin; it’s my favorite,” she says. The saimin is fried with lunch meat, green onions, cabbage, fish cake and sea-

sonings, which all meld together and result in a comforting mix. Kaneshiro suggests taking a bite of the sausage with the saimin for extra bento delight. Each bento is made to order and despite the line, things move quickly at Mitsu-Ken. Service is brisk, yet friendly and the wait is usually around five to 10 minutes. Since Mitsu-Ken is a first-come, first-serve type of place, they do run out of food. Order a day, or even months, in advance if you’d like to order a round of bentos for the office, or even if you’d just like one for yourself. Call, leave a message with your order and pick up time and Kaneshiro will contact you by the end of the day to confirm.

arole Thirakoun brings more than 30 years of culinary experience and mastery of Thai cuisine to the table as the owner of Thai Valley Cuisine, which has served as “Hawaii Kai’s Neighborhood Thai Restaurant” for 20 years at the entrance to Kalama Valley. Thirakoun has developed a loyal following, in great part due to her delicious curries that she crafts fresh daily. Using fresh vegetables and spices, many of which come from her own garden, the culinary wizard

uses fresh green chilies, turmeric (for yellow curry), kafal fruit and leaves, red onion, garlic, lemongrass, Chinese parsley root, kalangka, kachai and red chili peppers (for the medium and hot curry choices) to build the colorful curries. “The customers come looking for great tasting, healthy food with a lot of flavor,” Thirakoun says. “I learn from what my customers like to eat, and I can accommodate their needs by making my own curry paste. Some people shy away from Thai food because they think it’s always hot and spicy, but I can create mild variations, too.”

Thirakoun recommends Green Curry ($10.95 with chicken, beef or pork, $9.95 with vegetables, $11.95 with shrimp, calamari or fish, and $13.95 for seafood), which also includes potatoes, carrots and onions along with bamboo, eggplant and hints of basil. Red Curry with Seafood ($13.95) features a tasty mix of shrimp, calamari and fish coupled with tasty eggplant, bamboo and basil. Seafood enthusiasts also enjoy Snow Crab Curry ($17.95), as the rich and tender crab meat soaks up the flavors re-

leased by one’s choice of green, yellow or red curry. All curry dishes are made to order, and can be prepared at various spice levels, from mild to tongue-torching hot. iven the success of YuZu’s Ala Moana Hotel location, it was only a matter of time before diners in West Oahu would gain access to the restaurant’s innovative, izakaya-style sushi. After much pleading from loyal fans, YuZu now welcomes the launch of its second location in Ko Olina, Sushi YuZu.

Run by husband-and-wife duo Isamu and Moco Kubato, Sushi YuZu offers a unique twist on traditional Japanese cuisine through the creative usage of bold ingredients and cooking techniques. As implied by the restaurant’s name, the yuzu fruit is a core and ever-present part of the eatery’s menu. “Most sushi restaurants use a rice vinegar with refined sugar that is not healthy,” says Isamu. “We have our own special sushi vinegar with yuzu juice, Hawaiian salt and organic cane sugar.” Completely free of any MSG or refined sugar, Sushi YuZu’s unique sushi vinegar maintains a subtle, yet deeply influential flavor that works well with sashimi and rice. “With normal rice vinegar, sushi can taste dry,” explains Moco. “Our yuzu vinegar took a long time to perfect, but

everything is the perfect ratio and it goes down very smoothly.” To start, the Kubatos recommend any of the menu’s uniquely prepared appetizers, such as Heart of Palm Tempura ($10.95), a tempura-style fried heart of palm with homemade sauce and daikon radish sprinkled with yuzu sea salt. Ideal for meat lovers is Australian Wagyu Lemon Beef ($35.95), which comes with Maui onions and a yuzu sauce. For a slightly lighter, yet still filling meal, YuZu Somen ($10.95) with tomato and cucumbers is refreshing and a favorite among locals. The Ko Olina location also offers two styles of omakase, a chef’s choice meal of several types of sushi and sides. Omakase Hawaii ($29.95) comes with ahi poke as well as three types of sushi rolls: Shrimp Tempura Roll with Spicy Tuna, Seafood Dynamite Roll and Ko Olina Roll. For a more traditional menu, Omakase Japan ($39.50) features a collection of sashimi, including Hawaiian ahi, Japanese yellowtail, king salmon, ikura, scallop and a snow crab hand roll. With the addition of Sushi YuZu, the owners hope to reach those from all sides of the island. “We are very excited about being in Ko Olina,” says Moco. “The beautiful and relaxing environment makes it the perfect complement to our fresh, creative dishes.”
