W
hile a renovated kitchen equipped with top of the line appliances, including a double-door stainless steel refrigerator, a shiny stove of your dreams and a brand new microwave may be a fantasy for many, I have to say, all I need is a good old-fashioned wok to make me happy in the kitchen. Because we all know that’s where only the best
fried rice concoctions are conceived. I’ve been on a fried rice kick lately, and I’ve been having the time of my life throwing dayold, leftover rice into a wok and personalizing it with my favorite fried rice add-ins, including Spam, Portuguese sausage, eggs, peas, carrots, onions and a secret blend of sauces, to name a few. Then, the real magic happens when the stir-
frying begins. Fried rice is a one-pot meal that’s easy to make. And the beautiful thing about this comfort food is that its flavor is almost never the same. Depending on the chef, every fried rice creation has its own personal flair. So, in an effort to broaden my horizons, I ventured to the following Ono, You Know establishments in hope of finding some spectacular fried rice.
Lucky for me, I was met with a variety of entrees that made me say “Wow!” These restaurants don’t skimp on portion sizes either! It’s a party for your palate with bold flavors and textures. Eat on!

Max’s of Manila Extreme contentment is derived from the home-cooked comfort food at Max’s of Manila. I love coming to this Dillingham Boulevard restaurant, as well as the Waipahu establishment, where the friendly staff always treats its customers like family. And when dining at Max’s, be sure to come with an appetite equipped to handle the eatery’s epic portions — family-style dining is what it’s all about. While it’s typical to feast like there’s no tomorrow here, sometimes less is more. On my most recent visit to Max’s, I chose to keep my cravings for kare-kare, pork adobo and sinigang under control, and instead opted for Crabmeat Fried Rice ($8.95), a heaping portion of jasmine rice gener-

hat’s in a name? Apparently a lot, when it’s Chef Chai we speak of. Chef Chai is a relatively new restaurant, named after its sole creator, celebrity chef Chai Chaowasaree. Having opened its doors for business this past March at Pacifica Honolulu on Kapiolani Boulevard, Chef Chai greets patrons to a sophisticated and modern dining experience with an emphasis on Asian fusion. According to Chaowasaree, it was his mission to break away from his former establishment, Chai’s Island Bistro, at Aloha Tower Marketplace, which closed at the beginning of the year. He wanted to reinvent himself, and offer his new and loyal patrons a healthier approach to dining without sacrificing on taste. “I strongly believe that good cuisine doesn’t have to revolve around fats and butter. Food can be healthy and fresh, and taste amazing,” Chaowasaree says. Most recently, Dining Out sat down with Chaowasaree at his exquisitely sleek establishment and sampled a diverse spread of the restaurant’s must-haves. And in the
midst of it all, Chaowasaree shared the highlights of his guilt-free menu and his excitement for the journey that lies ahead. DO: You say that you’re trying to promote healthier ideas when it comes to dining out. How is that achieved at Chef Chai? Chaowasaree: We cook without butter (except for our desserts) and we use coconut milk instead of heavy cream, because coconut milk features good fat and good cholesterol. We also incorporate a lot of herbs, spices and olive oil into our cuisine. We serve the leanest cuts of meat, such as filet mignon, and when it comes to our chicken, we only serve chicken breast with no skin and no fat. As we get older, health becomes such an important issue, and a well-balanced diet is a priority for a healthy lifestyle. Moderation is key. We always tell our guests to enjoy what they’re eating, but to take a healthier approach when dining out, and that’s exactly what we offer at Chef Chai. Imagine if every chef removed butter from their food. I think if that was the
case, we’d see a much healthier Hawaii. DO: Being that you don’t use butter in your cuisine, what are some of your favorite ingredients to work with? Chaowasaree: Our food is Asian-fusion, so we use a lot of lemongrass, kaffir lime leaf and garlic. Garlic and onions always work for any type of cuisine. DO: Looking back on the opening day of the restaurant, what were your hopes for Chef Chai? Chaowasaree: First and foremost, I wanted to reinvent myself, I didn’t want Chef Chai to be a duplicate of Chai’s Island Bistro. So, looking back on opening day, I was really excited

about what this new restaurant had to offer, and I can’t wait to see where it goes from here. Everything at Chef Chai is more modern, from the cuisine to the ambiance. Designer Chuen Yee of MCYIA Interior Architecture and Design brought a beautiful contemporary feel to this 4,100-square-foot establishment, which comfortably seats up to 100 people in the dining room and 30 on our outdoor patio. We also have a private dining room that people can reserve for special occasions. The room seats up to 25 people and is equipped with its own audio/visual system and flatscreen TV. Reservations are highly recommended.

The pork shank brings an Asian flair to the osso bucco, which is typically an Italian dish made with veal. However, this dish originated from my mother’s recipe back in Bangkok, Thailand. This is one of my all-time favorite dishes that my mom makes. The salmon also is a hit among diners as well. We marinate the fish overnight in a bit of soy, ginger, sesame and sake prior to grilling it. Finally, for dessert, we’re serving our guests White Chocolate Gelato Truffle, which features white chocolate gelato, strawberry sorbet and raspberry guava puree. As the executive chef for Hawaiian Airlines, I originally had created this dessert as a part of the flight menus, but because of its popularity, I included it on Chef Chai’s menu as well.

DO: As a celebrity chef who has received much recognition and praise throughout the years, your career has been a whirlwind experience. To what do you attribute your passion for cooking? Chaowasaree: I was born and raised in Thailand, and I practically grew up in the restaurant business. My parents owned their own restaurant, so since I was 8 years old I was always at the restaurant and going to the markets with my mom to buy the best produce. So, simply put, I received no formal culinary training. What I know now had been instilled in me at a young age and are things I’ve learned along the way. I’m constantly learning.

All the appetizers on the menu are half-priced and we offer Budweiser for $3, Singha beer for $4 and Kettle One Vodka for $5. What sets our happy hour apart from a lot of other restaurants is that although our appetizer prices are reduced, the portion sizes are always the same. It’s really a great deal. DO: Chef Chai also cur-
rently is offering an Early Bird Special Four-Course Dinner. It’s an immaculate feast for two priced at $40 per person. Please tell us about this. Chaowasaree: This early bird dinner is available to our patrons from 4 to 6 p.m. and is available on the patio only. The meal includes a starter of Chicken Sate with Thai Peanut Sauce, Cucumber Salad and Asian Flat Bread. The two skewers of lean chicken breast pair perfectly with the Thai peanut sauce on our flat bread, and our customers love the
cucumber salad, which is similar to a pickled cucumber namasu. Then, the first course, Combination Appetizer Platter, features a sample of appetizers great for sharing, including Fresh Ahi Katsu, Kataifi Jumbo Black Tiger Prawns, Gravlax Salmon Roulade, Roasted Butternut Squash and Lobster Bisque Shooter. As for the main course, guests receive two main entrees (with white or brown rice) of Braised Kurobuta Pork Osso Bucco with Asian Five Spices, and Grilled Fresh New Zealand King Salmon with Kabayaki Sauce. f mom-and-pop shops are synonymous with good food and good service, what should one expect from an eatery run by grandparents? Quite the same if we’re talking about Korean Hibiscus BBQ. “This is what we eat for our meals, so we want to serve this to our customers so they can enjoy it as well,” says owner and grandfather Raymond Kodani. Such a proclamation isn’t just typical restaurant talking points, there is a history
behind the recipes. One such example is Grandma Special, which includes stirfried barbecue beef, sweet potato noodles, carrots, white and green onions served with a choice of four Korean vegetables. “This was something we made for our four grandchildren. We didn’t think people would be interested in it, but I told my wife (Shirley, aka grandma) to give it a try. The interest was so strong that we had to put it on the regular menu.”

The entire menu is a mix of local favorites, Korean staples and a combination of both. All told, the choices include 50 combination plates (starting at $10.75), 15 prime entrees, four specialty items, eight soups and 14 vegetables. One of three seafood options is Saba Fillet ($9). The fresh fish is slow charbroiled to maintain its natural juiciness and comes with veggies (two for the mini and four for the regular plate) and the restaurant’s classic hapa rice — a mix of white and brown rice that undergoes a 24hour preparation process to ensure a tender product. In other words, Korean Hibiscus BBQ is a celebration of all things surf and turf.

n celebration of National Sandwich Month in August, Kissaten serves up a special menu of tasty sandwiches available now through the end of August. The specials, created by executive chef Edison Ching, includes a light and refreshing Caprese Panini with pesto aioli, fresh Italian basil, mozzarella cheese

and Kamuela tomatoes on ciabatta bread and a side salad ($8.50), or upgrade the salad to Kissaten’s signature Tomato Bisque ($12). There also is a Hot Ham and Mushroom Panini with whole grain mustard aioli, roasted mushrooms, provolone cheese and caramelized onions on sourdough bread ($9.50 with salad or $14 with soup of the day); and smoky, sweet and tangy BBQ Pulled Pork Sliders with cole slaw, grainy mustard, barbecue sauce and smoked gouda in three mini hamburger buns ($9.50 served with a choice of salad or chips). The bread is delivered fresh daily from JJ French Pastry, and local ingredients are used as much as possible, such as avocados, Kamuela tomatoes, mushrooms and Italian basil. Kissaten, located on the corner of Piikoi and Waimanu Streets in the same building as KHON2 News across from Ala Moana Center, opened in December 2010 and is a
contemporary 24-hour cafe offering gourmet made-to-order food that is an eclectic mix of American comfort food with international influences. A second location opened in Waikiki earlier this year (hours are 11 a.m. to 7 p.m. daily), and they are in negotiations for a third location, also in town, and targeted to open in November. Among the popular regular menu items are Pho, Ramen, Kissaten Melt (made with pastrami, mozzarella, caramelized onions and whole grain mustard aioli on sourdough bread) and Grilled Cheese Sandwich (with smoked gouda, Cheddar, bacon and Fuji apples). Breakfast is served from 6 to 11 a.m., lunch and dinner from 11 a.m. to 10 p.m. and a latenight menu featuring the restaurant’s top items from 10 p.m. to 6 a.m. There also is an extensive coffee and beverage menu, along with an ice cream parlor and milkshakes available
24 hours. Customers also can bring their own beer or wine (lunch through dinner), and glassware is provided. According to Neysa Taba, who co-owns the cafe with cousins Jon Ishimi and Sean Ishizaki, Kissaten is fashioned after popular modern-day cafes found throughout Japan. "We are local Japanese
born in Hawaii," says Taba. "And we saw this as a good opportunity to get more in touch with our culture. We went to Japan and Seattle, and we always pick up ideas from traveling, watching TV and things we see online — always trying to look for what’s new and hip, and incorporating it into what we have to improve on.
“We’re also trying to participate as much as possible in charitable events, such as the recent Honolulu Japanese Junior Chamber of Commerce event at Bishop Museum and the Honolulu Professionals Foundation R.E.A.C.H. Out fundraising event. So, we’re looking at getting out there more and giving back.� 3 Whether it’s a power lunch, brunch with friends or a family dinner, Kissaten provides a casual, comfortable setting with food that is sure to please any palate. It also recently joined Room Service in Paradise allowing customers to have their order delivered, and Open Table where customers can make reservations for breakfast, lunch or dinner.

hile it bears a new name, GoKo Steak & Salad Bar continues to offer local diners great value and exceptional tastes via a revamped menu. The former Sizzler franchisees re-branded the eatery in May, and have continued the restaurant’s mission of offering quality steak selections, bountiful salad bar offerings and enticing entrees presented along with GoKo’s stellar customer service. Managing partner Clinton Goo explains that GoKo features fresh-cut, choice beef — not frozen — and that the iconic salad bar is still a best-seller thanks to its vast variety of offerings. The Salad Bar ($14.99 Monday through Saturday until 4 p.m., $17.99 after 4 p.m. and Sunday all day) features assorted greens and vegetables, many of which are grown and harvested locally, as well as various hot items, soups, a taco bar and dessert selections. Diners may also add a trip to the salad bar to any entrée for just $7.99 more. “We pride ourselves on having a fresh salad bar, and whenever possible, we include local produce as well — from tomatoes and cucumbers to watermelon, honeydew melon and cantaloupe,” Goo says. “We also feature choy sum at the salad bar, a locally grown cabbage. Feeling the aloha? Grilled tofu is the go-to meat substitute here. It’s so versatile, it can swim right into fish dishes, such as Kahuku Sea Asparagus and Brown Ogo Poke (appetizer portion, $15). The grilled tofu is mixed with Maui onion, scallions, sesame oil, Hamakua tomato and kukui nut, which is quite satisfying as the tender texture of the tofu contrasts deliciously with fresh tomato, crisp onions and crunchy nuts.

If you have a favorite Chinese dish in the lunch buffet line and are considering ordering a plate a la carte, director of sales Armando Bauzon says for $10.95, you can have your favorite dish and eat it too — an all-youcan-eat host of items are available on the buffet. So devise your buffet strategy (we all have one, right?), mix and match and don’t forget dessert. Here are some of the key deliverables. Orange Chicken is a popular choice for all, “a local delicacy,” he says. The bite-size pieces of crispy fried chicken dripping with sweet, citrusy glaze are irresistible. What sets this orange chicken apart from others is the noticeable flavor of real orange zest. “You can really taste the orange,” explains Bauzon. Cold Ginger Chicken is another favorite from the buffet line. The chicken thighs are simply boiled, chilled, cut up and served with ginger sauce. The potent sauce packs a punch with ginger, green onion and more, and is the perfect topping for the plain chicken. Ho Ho’s sauce is dominated by fresh herbs rather than oil.

“Ours is not too oily,” 1 says Bauzon. “You can tell from looks alone — it’s so green.” Fish lovers don’t have to go fishing far for Black Bean Fish Filet, as it’s always available. “Its meat is soft and tender,” says owner James Ching. The steamed sea bass swims in a shoyu-based black bean gravy with bell peppers and onions that received a quick stir around the wok. How could you go wrong with a buffet for lunch? Cheer up a drab day with a feast for your senses that’s instantly available. The quiet, peaceful dining room is full of window light and happy diners piling up and digging into personalized plates of Chinese delights. Items in the buffet line are cooked to order and constantly replenished with fresh servings, one small pan at a time. “You’re eating fresh,” ensures Bauzon. Leave room for dessert; almond cookies and mochi balls, among others, are 2 house-made. And the icing on the cake: “You can call us for lunch meetings or even retirement parties,” explains Bauzon.

The new salad selection is served with a zesty chili lime dressing. “We wanted to offer our customers something different, another option and something refreshing,” explains Mamiya-Kalahiki when describing the fresh salad options. “The seasonal salads change every two months, so we can provide freshness to our menu.” Generations of diners have flocked to Zippy’s in pursuit of delectable desserts, and the eatery
has created yet another masterpiece in Haupia Chocolate Waffle ($6.85 at dine-in restaurants only). Through July and August, customers can enjoy this local spin on a traditional breakfast favorite as the dish includes a scoop of ice cream atop a crisp Belgian waffle along with haupia sauce, chocolate syrup and whipped cream. While the sweet treat is great to share with friends and family gathered around the table, it is understandable if one chooses to fly solo and polish off the entire serving. In addition to offering summer savings, Zippy’s Restaurants is lending support to Blood Bank of Hawaii, a nonprofit organization dedicated to providing a safe and adequate supply of blood, blood products and related transfusion services to patients in the Islands. Customers may help the vital cause by
picking up a Kokua Pac ($8.08 fast-food, $9.30 dine-in restaurant), from which 25 cents will be donated to the Blood Bank of Hawaii’s effort to raise funds for a new Bloodmobile. Additionally, customers may purchase a special donation circle for $1, or make an additional monetary donation at designated boxes at all Zippy’s locations. Diners in the 50th state soon will be able to visit a 25th Zippy’s Restaurant, as Hilo prepares to open the doors to the Big Island’s first establishment Aug. 1. The new location supplements Zippy’s collection of 23 Oahu eateries and Kahului, Maui, restaurant — many of which are open 24 hours to meet the dining desires of any consumer. n addition to pleasing the palates of its patrons, L&L aims to bring joy to the community in other ways. Last week, the restaurant delivered food to 50 local families in need at the Keeaumoku Walmart L&L. The families, which were chosen by Institute for Human Services, were treated to some of L&L’s most popular items, including Chicken Katsu, Hamburger Steak and Kalua Pork. The community outreach effort was the brainchild of franchise owner Eddie Flores. “This is something that Eddie really wanted to do,” marketing director

love L&L's local flavors. “(The restaurant) was actually bought as a gift from (owner) Eddie Flores to his mom,” explains director of marketing Brandon Dela Cruz. “But when his mom didn't want to run the restaurant anymore, he took it back.” After that, Flores teamed up with business partner Johnson Kam and the pair decided to expand L&L. “They brought the restaurant from one to almost 200 locations throughout the world,” Dela Cruz explains. Today, the restaurant can be found in Japan, New Zealand and China, as well as in states, including California, Washington, Nevada, Oregon and Colorado. With its ever-growing franchise and global popularity, L&L continues to grow here in the Islands, too. Just a couple of weeks ago, L&L opened its newest Oahu store in Mililani Mauka. At the new location,
you can find L&L favorites like BBQ Chicken (prices vary based on location). And like all of the restaurant's plate lunches, the dish comes with two scoops of rice and one scoop of macaroni salad. “This features our special L&L Hawaiian barbecue marinade,” Dela Cruz says, adding that the sauce is sweet and salty. According to Dela Cruz, another customer favorite is BBQ Short Ribs (prices vary), which also is bathed in the same sweet and salty sauce. Of course, L&L also offers local creations such as Spam Musubi (prices vary) and Saimin (prices vary), which features noodles swimming in L&L's broth, along with a choice of meat including Spam, chicken or beef. Open for just four months, the third location offers original favorites with its familiar welcoming and chic atmosphere. It is something the restaurant strives for with its servers, who undergo extensive training. “(It is) to make sure they’re attentive and they’re thoughtful in the way they cater to the customers, making sure the customers feel at home and that they’re being treated well as a guest,” says general manager Min Kim. So, sit back and relax while you dine on Japanese comfort food. Stop in for happy hour, and enjoy the 5-ounce Kobe Shabu Shabu ($16.95; $28.95, regular price). It comes with rice, ramen noodles, and 5 ounces of Kobe beef. It also is served with two dipping sauces — ponzu and goma — along with daikon and green onions. we’re the only hot pot restaurant on the island that features so many different flavors of broth,” says assistant manager Andrew Doi. Also offered during happy hour are Kirin Draft beer ($2 for 16 ounces, $4 for 32 ounces, $8 for a 64ounce pitcher).
For dessert, Ichiriki is serving up a special offthe-menu option worth indulging in. Introducing the “Fuji Uji” ($11.90) — a more than generous serving of shave ice topped with matcha flavoring, azuki beans, condensed milk, mochi balls and Lappert’s ice cream. To give you a better idea of its size, it comfortably serves eight to 10 people. With its cool and sweet flavors, it is the perfect end to a hot pot meal. If you are dining with a smaller group, the regular Ujikintoki ($5.95) serves around four people. Reservations are highly recommended and large groups are welcome — the restaurant recently accommodated a 65-party wedding reception.

f the idea of pancakes, crepes, omelets and eggs has your mouth watering, then Eggs ‘n Things is a definite go-to hot spot. In case you haven’t noticed, word has spread, and the restaurant’s popularity has drawn in hungry diners from across the globe. With three locations situated throughout Waikiki — one on Saratoga Road, Waikiki Beach Eggspress on Kalakaua Avenue, and the newest eatery on Piikoi Street next to Ala Moana Center — it’s easy to fulfill that breakfast craving any time of the day and night. However, Eggs ‘n Things’ decadent desserts also take the cake, especially Deep-Fried Banana Split a la Mode. Available after 4 p.m., this end-of-themeal hurrah is not like the traditional dessert. Instead, it’s a deconstructed banana split without the mess, and ideal for those who would rather pick and choose their toppings.
A mound of homemade whipped cream is piled high on the plate and sprinkled with macadamia nuts that are toasted to perfection and chopped in-house. According to Takahashi, the restaurant goes through 100 to 150 pounds of this good stuff per day.
It wouldn't be a banana split without a luscious scoop of locally made vanilla bean ice cream. Its, oh, so creamy texture is irresistible. You gotta love it!
Good old Hershey’s chocolate syrup is the perfect condiment for any chocoholic and dessert fanatic. Go ahead and dip a piece of banana in this liquid decadence.

“This dish was a collaboration of all of our managers and some of the kitchen staff,” explains Robby Takahashi, manager of the restaurant’s Piikoi location. “One day we were experimenting with our pancake mix and we decided to deep-fry a banana in the pancake mix. Our staff loved it, so from there we featured it as a special and it received such positive feedback, it then made it onto our regular menu.”

Masarap (delicious)! For added flavor, I also pour a bit of the gravy over the fried rice. You know you’ll love it! My photographer and I shared this meal, and with only two dishes we were stuffed to the max (pun intended … Yes, I just had to go there)! “The fried rice can easily serve two to three people,” Joven says with a smile. It’s 9 a.m. and Asahi Grill on Ward Avenue is whipping up breakfast galore like it's nobody’s business. The restaurant is renowned for its ono local grinds and American classics, and with a global audience as its fan base, Asahi Grill is set to impress. How can you not fall absolutely in love with the restaurant’s Lup Cheong Fried Rice and Kim Chee Fried Rice? Priced at $7.50 for a regular portion and $5.95 for a small, these two delectable entrees offer an explosion of flavors with every bite. Lup Cheong Fried Rice features a grandiose blend of Chinese sausage, Portuguese sausage, green onions and a splash of shoyu with heaping scoops of rice. Two eggs (any style) are placed atop the entree as the finishing touch. I prefer my eggs over easy, as the yolk just soaks into the rice. Then, for a little kick to your step, Kim Chee Fried Rice is the No. 1 choice! Homemade kimchee, along with chopped Portuguese sausage, green onions, a drizzle of shoyu and more, plays up the fried rice nicely. “Kim Chee Fried Rice has always been a customer favorite,” says restaurant manager Victoria Sayno. “We make our own kim chee twice a
diced char siu, diced roast duck, shrimp and scrambled eggs stir-fried together with two kinds of rice, which Chang will keep under wraps. Sugar, salt and shoyu also are included for additional flavor. However, Chang makes it clear that the cuisine here is MSG-free. Then, The Mother of All Fried Rice ($9.50) is just that. This dish lives up to its name, and diners are presented with salted fish with minced chicken, and a blend of ginger and garlic spices According to Chang, the secret to the best fried rice lies in the cooking technique. “You have to cook the salted fish the right way,” he explains. “If not, it ends up being extremely fishy. When it comes to fried rice, it’s important to balance out the spices and ingredients.” So, the next time you find yourself at Little Village Noodle House, take the time to sample the fried rice options. hen talking about Pacific Rim dining in Hawaii, 3660 On The Rise is undoubtedly part of the conversation. Since 1992, executive chef and owner Russel Siu, with help from chef de cuisine Lydell Leong, has been at the forefront of creating fusion-filled eats that blend local produce, seasonal ingredients and a healthy dose of Euro-Asian flair. While the establishment is known for a host of Island classics, Siu and Leong are constantly collaborating on new items to keep their menu fresh. With summer in full swing, the eatery has a slew of bright, enlivening dishes perfect for the season. Here, Leong shares some of 3660’s most summery bites. For starters, nothing beats the heat like a colorful salad, and the restaurant’s Tomato and Mozzarella Salad ($12) is no exception. The dish combines indulgent slices of house-made truffled mozzarella with Prosciutto di’Parma for a base of sophisticated flavors. Local tomatoes and Dry Land Nursery micro basil bring the garden right to the table, while truffle oil, Kona sea salt and a smoked balsamic reduction finish off

bination of ingredients, this main course is perfectly crafted to play off, and highlight, the salmon itself. “When we’re trying to think of what will go with what, we let the main ingredient speak for itself, first and foremost, and try to keep it simple,” says Leong. To balance the salmon’s robustness, Leong uses a roasted lemon garlic butter sauce. “Because the salmon is little bit oilier, we thought a lemon type of butter sauce, or beurre
blanc, would go good … I wanted a warmer type of acid so I roasted the lemon. And so it kind of caramelized the lemons and brought out a lot of color, too,” he says. Leong then crafts a relish from juicy local tomatoes, Kahuku corn and shiitake mushrooms before adding some of his sweet soy drizzle to the dish. “It gives a little sweet to offset the acid or the fat, as well as the brightness from the lemon,” he says.

The Copper River King Salmon’s finishing touch lies in a combination of micro greens, which Leong designed himself, To give the dish a final burst of flavor, Dry Land Nursery micro shiso, bull’s blood (deep red beet leaves) and micro amaranth add a refreshing bite and give the entree a gorgeous presentation. Be sure to save room for
a zesty summertime dessert, such as warm Lemon Pudding Cake ($8.50) served with vanilla ice cream, fresh berries and the restaurant’s own lemon-scented wafer cookies. “It’s very light and airy,” adds Leong. It’s the perfect time of year for a spirited fusion of flavors at 3660 On The Rise.

ost likely you have driven past Restaurant Ko many times, perhaps even hundreds of times without realizing the culinary magnificence that lies behind its crisp, white walls. Replacing what was formerly Ninniku-Ya in Kaimuki, Restaurant Ko successfully elevates traditional Japanese kaiseki with a modern panache. Dating back to centuries ago, kaiseki offers a traditional Japanese dining experience, consisting of a series of dishes meticulously and thoughtfully put together. While still remaining true to authentic Japanese-style fare, Restaurant Ko’s delectable menu also boasts hints of European fusion. “Where I come from in Osaka as well as in other parts of Japan, people are embracing foods from other lands,” says Nariaki Nakano, executive chef at Restaurant Ko. Diners looking to experience Nakano’s contemporary take on kaiseki may choose from either the Ko Course ($55) or the Asahi Course ($40). Similar in style, the Ko Course offers eight to nine dishes comprised of a number of popular menu items. The Ahi Carpaccio ($11)

courses, which vary slightly from month to month, utilize fresh seafood from both Hawaii’s local fish market as well as the famed Tsukiji market in Japan. Included in the course menu is Lotus Root Manju ($7), which features sliced lotus root with ginko nuts and savory crab gravy generously seasoned on top. Customers also frequently order Salmon and Ikura Kamameshi ($12) and Unagi Kamameshi ($13), which are beautifully set atop a steaming bowl of kettle rice. “Instead of using an electric rice cooker, we cook all of our rice using an iron pot,” explains Nakano. “It allows the rice to be juicier and hold more flavor.” In addition to plentiful seafood and vegetable options, diners also will enjoy Restaurant Ko’s unique Ko Course (pictured with Snow Crab, Salmon and Ikura, and Unagi Kamameshi)
take on meat dishes. The popular Prime Beef Steak ($18) infuses the meat overnight with a fermented rice mix of shoyu and koji, a traditional seasoning that allows the meat to stay tender when grilled. By utilizing European-style cooking components with his Japanese-influenced expertise, Chef Nakano successfully blends the two cultures. The much praised Ahi Carpaccio ($11), which features slices of fresh ahi soaked in a mix of shoyu, wasabi, dashi and sesame oil, is a prime example. “It looks like an Italian dish, but the flavors are very true to authentic Japanese custom,” he says. “We like to employ different, more out-of-the-box cooking techniques that really add depth of flavor to the ingredients.” Restaurant Ko is also available for large parties, both indoors as well as outside, on its picturesque lanai space.
