M

any Honolulu restaurants are making a mark on the local dining scene with contemporary eats that are trendy, delicious and intricate in preparation and presentation. And while grown-ups may rave about these glamorous eats, they may not necessarily be kid magnets. Living in such a family-oriented community, we can’t forget about the keiki and what satisfies their tummies. So, this week, being a kid at heart, I ventured to some of my favorite Ono, You Know establishments that I know children will love and can’t wait to chow down at. These following eateries are sure to impress even the most finicky of eaters as these kids meals highlight everything from grilled cheese sandwiches and fries to spaghetti and meatballs, and even steak and shrimp. It’s time to indoctrinate the next generation of foodies with these kid-friendly favorites!

amper your palate at HASR Bistro when in the mood for superlative melt-inyour-mouth, country-style fare. Co-owner, wine purveyor and restaurateur, Terry Kakazu opened this restaurant on North Pauahi Street with awardwinning executive chef Rodney Uyehara last October, and business has been booming ever since. “We’re a country-style bistro that specializes in European-American cuisine with an ethnic twist. We offer comfort food made with passion,” says Kakazu, who’s always wanted to offer her guests quality, fine-dining favorites at affordable prices. Dining Out recently spoiled ourselves with a visit to HASR Bistro, where Kakazu and Uyehara dished about the bistro’s positive impact on Hawaii’s dining scene. DO: How did the partnership between you and Chef Rodney come about? Kakazu: I’ve known Rodney for a while, and when he left the Beachhouse I mentioned to him that we should open a restaurant and that I was looking at a space in Downtown Honolulu. At first he was skep-

STORY BY ALANA FO LEN tical about opening a restaurant downtown, but now he’s a believer. We purchased this space, which was previously owned by Grand Cafe, and the rest is history. DO: HASR Wine Co., which you also own, has been in business for almost eight years and is adjacent HASR Bistro. With the HASR name already branded and built, did HASR Wine Co. help to bring success to the restaurant? Kakazu: Yes, all the “who’s who” in the community already knew of us because of HASR Wine Co. My store has at least 500 different labels of wine from around the world, including Australia, New Zealand, Italy and France.

However, we also specialize in California wines because I love Napa Valley, and we are able to obtain highly allocated wines from small boutique wineries. HASR Bistro has the biggest wine cellar because you can go next door to purchase a bottle of wine and we don’t charge a corkage fee at the restaurant. Nowadays, the better wines are also more readily available. We have restaurant-only wines as well, but I recommend guests go next door for the best selections. We cater to a vast amount of wine dinners and pupu parties. DO: Terry, how did your


passion for fine wines come to be? Kakazu: My interest in wines began almost two decades ago in 1989, but my husband introduced me to elite wines in 1996. Then, a friend of mine really opened up my eyes to finer wines that were nearly impossible to obtain. These were wines that others could only dream of.

DO: HASR is an acronym for Highly Allocated Spoiled Rotten. What’s the meaning behind that? Kakazu: One day, I was told by some wine representatives that I was spoiled rotten because I had access to all of these highly allocated wines, so that’s how the acronym came to be. From there, I started a wine club called HASR Hawaii and we’d go on tours of Napa Valley every year. That led to HASR Wine Co. and now HASR Bistro. DO: Chef, tell us about your culinary background. What are a few of the standout dishes at HASR Bistro? Uyehara: I was trained at the Culinary Institute of America in Hyde Park, N.Y., and upon graduation I worked in New York City for three years before returning to Hawaii. My specialization is in AmericanFrench cuisine, and I incorporate a lot of European flavors with local ingredients that we have in Hawaii. Our signature dishes at HASR Bistro are Harris Farm New York Strip ($32 dinner) served with stroganoff egg noodles and a peppercorn demi; Grilled Australian Lamb Rack ($36 dinner) with ratatouille and pomegranate sauce; and Braised

Short Rib ($26 dinner), which also features pesto crusted bone marrow and Hamakua mushroom risotto. Tuesday, we will unveil a new lunch item, Fresh Big Island Baby Spinach Gnocchi ($16) served on a bed of turkey Bolognese drizzled with a balsamic reduction and a hint of fresh herbs. Other lunch favorites include Maryland Crab Reuben Sandwich ($17) and “HB Burger” ($15). I like creating dishes with a lot of bold flavors behind it. It comes down to serving what our customers want. Kakazu: Chef Rodney is the master of slow cooking and concocting great sauces. DO: HASR Bistro has such a refreshing atmosphere. It’s a total escape from the hustle and bustle of downtown, correct? Kakazu: Yes, when you’re enjoying a meal or a glass of wine at HASR Bistro, it doesn’t even feel like you’re downtown. Instead, it feels like you’re somewhere in Europe or Napa Valley. The atmosphere feels very romantic and comfortable — it’s a nice ambiance. We also have happy hour and featured entertainment that adds to the vibe. We have great local entertainers who perform in the courtyard, including TRK — The Rhythm Klub, Ben Vegas and Maila Gibson, Danny Couch, Pat “King” Koh Jazz Ensemble, Taste of Harmony, Roy Hamada and Adney Atabay and more. would say we mostly appeal to the young professionals and business professionals, along with families. We can seat 50 people in the dining room, 50 in the courtyard and 26 in the bistro room. We use the bistro room for private dinners. DO: What’s in the works at HASR Bistro? What

can diners look forward to? Kakazu: We’re going to expand the restaurant and also make a lounge where people can enjoy appetizers and listen to great music. We’re changing the menu this week as well. We like to keep things fresh and revamp the menu every three months or so.

nter into a world of refined elegance at 53 By The Sea, a five-star dining establishment set to captivate its guests in all regards. Located on Ahui Street, where the former John Dominis once stood, the restaurant resembles a grandiose European mansion accented by Mediterranean and local flair. Once the grand double doors open, patrons are transported into a luxurious oasis complete with an exquisite sweeping staircase, crystal chandelier and picturesque views of Waikiki and Diamond Head through ceiling-high windows. According to assistant general manager J.R. Hoffman, great attention to detail has been a priority ever since the restaurant’s inception last September. “The building's architecture was inspired by Iolani Palace, Kawaihao Church, and Alexander and Baldwin Building,” he says. “Then, when you look at the railings and artwork on the main doors, you’ll notice naupaka engravings. These details help to create a beautiful first impression. “We want our guests, both locals and tourists, to make lasting memories here, and the staircase offers many photo opportunities.” After appreciating the beauty of the entrance, friendly hosts escort you to your appointed table in the private dining room, which comfortably seats 150 guests. There, you’ll peruse the menu of New American fare created by

executive chef Thomas Ho, who previously served as chef de cuisine at Orchids at Halekulani Hotel. “Thomas is such an artist, presentation is so important for him and he brings so much beauty to each and every dish,” Hoffman explains. “New American fare doesn’t only capture one type of cuisine, instead it breaks the mold and highlights a variety of cuisines. There’s

a lot of focus on how a dish is put together — it’s very much artistic as it is tasteful.” Ho incorporates a symphony of culinary styles, concepts and local ingredients into his culinary craftsmanship, with entrees such as 53’s Mushroom Chicken ($35) and the Fresh Catch ($36) taking the spotlight. In fact, 53’s Mushroom Chicken — featuring chicken breast

and thigh, served with haricot vert, thyme polenta, oyster and cremini mushroom cream — was originally featured on the restaurant’s lunch menu, but because of popular demand it was quickly added to the dinner menu as well. “We focus on team service, meaning we always have servers present to cater to every need. I think we’re the only

restaurant in town that still includes white glove service,” Hoffman says, noting that live dinner and latenight music emanating from the Italian-made Fazioli piano always adds a classy touch to every dining experience. Open daily for lunch and dinner, anytime is the perfect opportunity to pay a visit to this renowned restaurant; especially on weekends, as a dose of 53 By The Sea is all you need to relax and unwind from a hectic work week. “Our guests enjoy coming here for special occasions such as birthdays and anniversaries,” Hoffman says. “We also always invite everyone to our T’s at 53 Bar before they’re seated to have a cocktail or a glass of champagne. This week, Dining Out gets the inside scoops from Mitsu-Ken’s manager Sherri Kaneshiro, who gives us a little taste of Mitsu-Ken and shares just what fuels her culinary drive.

Who or what inspires you as a manager? Mitsu-Ken is the creation and dream of my brother-in-law Brad Kaneshiro. Twenty years ago, he dreamed of opening his own okazu, being his own boss and serving the foods he loved. Brad and I always got along very well and realized how well we work together, so when he decided to go for it and make it happen, we de-

cided that I would be the one to run the business operations and give him more time to focus on making incredible food. He and my family are my inspiration. They keep me going and keep me dedicated to Mitsu-Ken every day. What is your favorite dish on the menu? Why? Definitely Fried Saimin — I love noodles! When we first

opened we didn’t have a noodle dish on the menu. One night, we were at another restaurant and they had a bento similar to ours with fried saimin that was so good. I turned to Brad and I told him that we had to get a noodle dish on the menu. Now we serve Fried Saimin every day! Our Fried Saimin has all of the classic ingredients, but what really makes it awesome is Brad’s special sauce. What is your favorite ingredient to work with? Why?

The noodles! Every day I can smell when the kitchen is cooking up Fried Saimin, and I get excited knowing a fresh batch is about to come out. Is there a dish that you create that’s not on your menu, but available upon request? We currently don’t have Chicken Katsu or Pork Shoyu on the daily menu, but if you call far enough in advance, Brad can make these items for you.

ith a simple menu chock-full of Italian favorites, Just Pasta is Oahu’s new home for great-tasting pasta dishes at appetizing prices. Just Pasta made its debut a few weeks ago after being cooked up by the same culinary team that brought the popular Magoo’s Pizza and Blue Water Shrimp & Seafood food trucks to fruition. With fresh ingredients and gourmet preparation techniques playing prominent roles in each dish, Just Pasta satisfies customers with a wide variety of delicious Italian-influenced options supplemented with local flair. Chef Magdy Elzoheiry brings more than 15 years of experience to the kitchen, and the Kapiolani Community College Culinary Arts graduate also honed his craft in Las Vegas and New York before returning to Honolulu. “Not only does the food look great — that’s the first impression that the customer gets — but they can expect the best quality,” says Elzoheiry of the dishes that he has mastered throughout his extensive culinary career. “We use fresh produce, and get our fish fresh from the auction every day. Our ingredients are the best you can get locally, and the technique we use to cook our pastas is authentically Italian.” Just Pasta is conveniently located at the corner of Kapahulu and Kaimuki Avenues, across the street from Crane Park and just up the road from Leonard’s Malasadas. Unlike most takeout establishments, where customers are forced to take their

food to go due to a lack of eating space, Just Pasta provides a large, covered eating area for its guests. The dining area is just steps away from the takeout window and adjacent Blue Water Shrimp & Seafood truck, and provides room for more than 20 patrons to enjoy their meals in cool, shaded comfort. Shrimp Scampi ($9.95) has emerged as an early customer favorite, and features plump, juicy shrimp prepared in a white wine, garlic, butter and caper sauce along with diced tomatoes and served on a bed of linguine. Nearly every entrée plate at Just Pasta costs less than $10, adding value to the extraordinary taste and ample portions. As Elzoheiry explains, restaurants typically include 6 ounces of pasta with each dish, while Just Pasta rewards customers with 8- to 9-ounce portions. “We make an effort to give our customers more food and better value, so that’s what they can expect from us,” Elzoheiry says. “Just Pasta is all about quality, quantity and everything in between.” Just Pasta also features Grilled Salmon ($13.95), another extremely popular dish that includes fresh

salmon cooked to perfection atop pasta with a light butter and caper sauce. Them Dining ups the ante with local favorites

y now you may know that Them Dining is an establishment tucked away in Waikiki Sand Villa Hotel that serves highly regarded cuisine to those who have managed to seek out its nearly hidden location. What you probably don’t know is that the father and son duo of Kazuo and Yushi Shimada are doing such good work in a space most would find small. Them Dining (a rough translation of Zem Dining,

which means Dream Here) features a mixture of French and Japanese cooking techniques, with a splash of local influence as well. You’re not likely to find a hamburger steak in either Tokyo or Paris, which is too bad, because here at Them Dining, this local lunch favorite is much more than cheap meat and brown gravy. The tender steak is fried, then baked to maintain its natural juices. Covered with

mushrooms and a red wine demi-glace, the Hamburger Steak Set ($14.50) is smoky with a slight onion finish. The demi-glace is deep in color and rich in flavor making it a perfect complement to the tangy mixed green salad with shoestring beets that accompany each dish. The order comes with rice and a spaghetti salad that is similar to the typical mac salad we are used to, only better.

For fans of the other white meat, the Pork Saute with Japanese Sauce ($14.50) is a recommended option. The pork is thin, moist and pan-fried to a golden brown, but it is the sauce that really makes the dish unique. Made of shoyu, green onion, shallots, apple and myoga (a Japanese ginger), the topping is very bright and fresh, yet light enough not to overpower the accompanying protein. The sauce is strong enough to add a distinct flavor that really shows off the mix of cooking cultures Them employs.

And to take your preferred cut of steak to the next level, Maharibatcha recommends upgrading it to Oscar style — a classic take on surf and turf.

Traditionally veal was the choice cut of meat prepared Oscar style, and it’s said that the dish is attributed to Sweden’s King Oscar II (1829-1907), who was very fond of the combination of veal, white asparagus, lobster and bernaise sauce. Sometimes this dish is made with chicken or crab as well.

A 12-ounce center-cut fillet mignon is the foundation of this dish. USDA prime aged beef is grain-fed and aged two-and-a-half to three weeks. All steaks are seasoned with a special proprietary blend and broiled at about 1,000 degrees, which quickly sears the exterior of the beef and seals in the juices. “The flavor is extraordinary,” Schoniwitz says.

A creamy bernaise sauce, which can easily be described as a hollandaise sauce with a taragon reduction and a splash of lemon zest, is drizzled atop the masterpiece.

According to Schoniwitz, Beringer Alluviun (2007), a meritage wine, goes exceptionally well with the Oscar-style fillet.

“Fillet Oscar Style is just another option for those who love their surf and turf,” says executive chef Jean Pierre Maharibatcha.

“Oscar style is for the traditionalist. It’s fit for royalty and it’s the ultimate treat,” adds Morton’s general manager Zyron Schoniwitz, adding that even fish can be prepared Oscar style.

tarting today, JJ Bistro French Pastry in Kaimuki debuts a new Fishermen Feast menu along with a Snow in Summer promotion through the end of August, offering 15 percent off its Fishermen Feast seafood items. The menu is in addition to the original menu which also has been updated with a few new dishes, such as the popular Lobster Pad Thai ($18.95) consisting of stir-fried pho noodles with eggs, special citrus XO sauce and topped with Maine lobster tail. “Most pad Thai is on the sweet side, but for me, I like citrus flavors,” says chef JJ Luangkhot. “So, our pad Thai is ‘citrusy’ and tangy, and not spicy.” Also new on the menu are Grilled New York Steak Brioche ($18.95) served on a mini French butter roll with a mushroom black pepper sauce, and Poached Lobster Tail Double ($28.95). For appetizers, try the Chef’s Tasting ($8.95) which is not on the menu but is available anytime. The dish has one-piece each of Crab Rangoon (crab meat with cream cheese, house seasonings, red bell pepper and onion baked in the shape of a mini pot pie), Shrimp Kataifi (sauteed with a sweet chili sauce and served over a bed of filo noodles) and Baked Lobster Avocado (served on French bread with a sweet chili mayo sauce and mozzarella cheese).

As for the new Fishermen Feast menu, seafood choices are Baked Oyster ($14.95 for half dozen), Crawfish ($12.95 per pound), Manila Clams ($12.95 per pound), New Zealand Mussel ($13.95 per pound), Shrimp of de Day ($13.95 per pound),

ore than 40 years after Kozo Sushi first opened in Osaka, Japan, the restaurant’s fresh take on fast-food continues to delight diners as they fulfill their cravings for sushi. Kozo Sushi has grown to include six convenient locations, including Moiliili at 2334 S. King St., and as owner Mika explains, “The fact that we started out in Japan helps to set us apart from the competition. Also, in recent years we have started to sell high quality bentos and noodle dishes.” Just in time for the rapidly approaching tailgate party season, as well as those looking to cater family gatherings and business functions, Kozo Sushi offers a host of Party Plates designed to please attendees at any event. hen co-owners Gilbert Sakaguchi II and Lesly Goo come in for a shift at Blue Water Shrimp and Seafood, they may be working alongside several family members at any given time. The Kapahulu food truck, which also has locations in Haleiwa and Waikiki at International Marketplace, is a familyowned business that first opened in 2005 in Kahuku. The truck came to Kapahulu last fall. We have everybody in the family working — aunties, uncles, brothers, sisters,” Sakaguchi says, whose family founded Blue Water and also owns another restaurant.

hen asked to describe the type of food that Blue Water Shrimp and Seafood serves, coowner Gilbert Sakaguchi II quickly sums it up in one word: Fresh. “It’s also simple and has more natural flavors,” he says. In order to ensure that the restaurant is getting the freshest fish available, Blue Water sends a fish buyer to the auction every morning. “He gets there early — at about 4 a.m. — trying to get the freshest fish he can get, from ahi to opah, mahi mahi and opelu,” Sakaguchi adds. One example of these fresh caught items is Fresh Caught Opelu ($8.95). Another popular dish is Mahi Mahi with Lemon Caper Butter Sauce ($9.95), which features tomatoes, cream and Blue Water’s signature seafood stock and its signature garlic butter. “We pan-sear it and we cook it in its own juices, and add our own stocks and

sauces,” Sakaguchi explains. But Blue Water isn’t just seafood. BBQ Pork Ribs ($10.95) is also a hit among customers. The dish is bathed in an aromatic, savory barbecue sauce that is Blue Water’s own signature creation. “We make all of our own sauces,” Sakaguchi says. “The barbecue sauce is tomato-based. It’s smoky and zesty.” We are actually known

“I remember working in restaurants since I was 13 years old,” Sakaguchi says. Much of what the restaurant serves has been passed down from generations. According to Sakaguchi, his father and uncle are the geniuses behind the restaurant’s tasty creations. These days, Sakaguchi, who graduated from KCC’s culinary arts program, has a hand in much of Blue Water’s cooking as one of its main chefs. Blue Water Shrimp and Seafood’s cuisine is proving to have worldwide appeal as well. It recently opened two locations in Japan — one in Yokohama and one in Tokyo. A third is on the way. its name, you are probably going to want to try the shrimp. Sakaguchi says Garlic Shrimp ($10.95 for nine pieces, and $7.95 for six pieces) is a good way to go. “That is our signature dish. That is what we are known for. “We add a lot into the shrimp. There are 10 different ingredients in our garlic butter alone,” he says. The side dishes are a draw in themselves. Each plate comes with two scoops of rice (white or brown), and tossed salad or potato salad. “It is homemade potato salad — a lot of people come for that,” Sakaguchi says. In addition to these items, Blue Water Seafood and Shrimp also rolls out new specials each day. From clams to lobsters, the specials board may include whatever fresh catch is available that day. Specials change frequently in order to provide regular customers with a variety of dishes.

atisserie La Palme D’Or has quickly become a treasure chest for those who like to indulge their sweet tooth. It’s hard to resist when its glass case of sugary confections tastes just as good as it looks. Right in time for summer, executive chef Akiko Kimura has recreated some seasonal fruity favorites. “I like to use fresh fruits to top off the desserts,” she says. Of course, summer in Hawaii wouldn’t be quite the same without mangoes. The mango-themed desserts La Palme is serving are made with locally grown, 100 percent organic mangoes, straight from a customer’s back yard. Triple Mango ($4.40) features three harmonious layers of different textures all made with mango. The first is a mango mousse, followed by a mango jelly and topped with fresh cut mangoes and a dollop of cream. Another mango option is Mango Tarte ($4.25). A tart shell on the bottom is filled with almond cream. It is

then baked and topped with fresh mangoes. Sweet Cherry Tarte ($4.45) is similar to the Mango Tarte, but instead utilizes fresh American cherries. Before the tart is baked, Kimura adds a cherry in the middle and cherries also circle a mound of vanilla crème, which is topped with a thin circle of chocolate. Kimura’s favorite, Melon Cup ($3.80). “I think most people like honeydew,” says Kimura. It is made with refreshing flavors of fresh melon and almond milk mousse. The mousse is something Kimura creates herself, blending the skin of fresh almonds with milk, which eventually becomes the mousse. The cup is also filled with vanilla sponge cake and topped with jelly that has a hint of lemon and orange, and chunks of honeydew melons. You’re not going to want to wait until you have a craving to satisfy to make a visit to La Palme, as these are seasonal items. Here’s a tip: pay a visit to La Palme and order all four before they’re no longer available. Share them (or not) and enjoy.

From smoldering brick oven pizzas to piles of pasta, the family-style eatery boasts all the classics you could hope for, each of which is jazzed up with the restaurant’s special culinary touches. The secret to these extra doses of amore, according to executive chef Nawai Kekoolani, is carefully selecting high-quality ingredients that will make every dish pop. “Being able to give really fresh flavors is important to us,” says the chef, who adds that great customer service is just as imperative to ensuring patrons enjoy their meal. “I always listen to what the guests want and we try to accommodate as much as possible.” Some of the eatery’s most popular items brilliantly showcase

Kekoolani’s keen attention to detail. Pasta di Mare ($22), for example, presents a gorgeous seafood medley of scallops, mussels and shrimp tossed with tagliolini (part of the fettuccine family of pasta) in a garlicky white wine, tomato and butter sauce. “With seafood, you have to be really careful,” says Kekoolani. “You want

to make sure it’s fresh and not overcooked. Especially scallops, you want to make sure they’re nice and moist.” Alongside Pasta di Mare’s plump, succulent seafood, Roasted Chicken and Arugula Flatbread ($16) brings bursting flavors to the table. Crispy and thin flatbread is loaded with herb chicken, roasted peppers and mozzarella, then fired up in the restaurant’s brick oven. Before it is served, a zesty burst of fresh, lemon-oil tossed 1

baby arugula is piled on top of the dish along with fresh Parmesan shavings. “You get a little peppery flavor, you get a little bit of that refreshing lemon — so it’s real robust flavors,” describes Kekoolani. The flatbread wouldn’t be complete without Romano’s unique caramelized onion pesto made with arugula instead of traditional basil. This sweet-and-savory spread lends a richness to the dish, blends beautifully with the melted cheese and you won’t find it anywhere else. Kekoolani also recommends devouring Eggplant Parmesan ($16). This vegetarian classic is prepared with capellini pomodoro, or angel hair pasta dressed with tomato sauce, as well as mozzarella and Parmesan cheeses. The restaurant uses ever-flaky panko breadcrumbs to encrust its eggplant, giving the vegetable an extra crisp shell of goodness. With Italian favorites that always have a little something extra, you can’t go wrong at Romano’s Macaroni Grill.

hen vegetarians profess to loving sushi, their pescatarian counterparts are often surprised. After all, sushi is all about fresh fish, right? Historically, yes, seafood is a key ingredient, but the primary, can’tdo-without, base ingredient is rice, often wrapped in nori. Today, sushi has kept with the health trend favoring vegetable offer-

ings by housing numerous varieties and mixes of fresh veggies in the center of the rice rolls. Though sushi is ubiquitous on our sea-soaked Islands, one place stands out. Todai Waikiki is a veritable heaven for sushi lovers. By buffet opening time, a packed line trails out the front door, waiting to sample the endless selection that spreads from one end of the room to the other. This isn’t the typical countertop sushi shop, nor kaiten, or conveyor belt, sit down dining. Todai offers something much more elaborate, boasting a huge variety at several substantial sushi stations. The area serving Custom Hand Rolls ― adjacent to a salad bar and a separate salad station with prepared salads ― presents glass trays on ice, loaded with sushi selections. Vegetarian

It’s very airy, very delicate. It’s very good after a steak.” The Devil’s Food Cake ($7) is Simulinas’ “baby”

and is served with burnt caramel mousse and chocolate ganache (with a touch of gold dust atop). Don’t be fooled by the seemingly dense texture. The Devil’s Food Cake is light and fluffy — everything you want in a mini cake and more. The only thing devilish about it is its sinfully addictive flavor. Vanilla Bean Crème

Brulee ($8) is a classic French dessert that features vanilla custard sprinkled with a bit of sugar and torched at the very end. We have continued this concept and by popular demand actually added a Child Teppan Shrimp dinner (seven pieces, $18.95).” Original entrees specifically for children also include Child Hibachi Steak (5-ounce top sirloin, $16.95) and Child Teri Chicken (4-ounce portion, $13.95). No matter what your child’s dinner preference is, each meal also comes with a grilled shrimp appetizer, shabu shabu soup, teppan vegetables and ice cream for dessert. “Child Steak and Child Shrimp Dinner are enjoyable for the kids,” Nakamura says. harcuterie is a buzzword you should get to know. Though foreign in origin, the word is used to describe something that is probably already near and dear to your heart. We’re talking about the craft of preserving meat: cooking, curing or smoking it. And at Pagoda Restaurant, it’s only a sandwich away. Inspired by visits to New York City delis and his own hobby of smoking meat, Pagoda’s executive chef Jason Takemura puts his own spin on the classic, loveable Reuben ($12). While a Reuben sandwich may not be the first thing that comes to mind when you think of local comfort food, it’s the local ingredients, down to the grass-fed Big Island beef briskets, that make this sandwich crave-worthy. Takemura brines the briskets in house for 10 to 12 days, then smokes and slices them thinly — his own take on old-school pastrami. The sauerkraut, Russian dressing and horseradish aioli are also made in house, and the marbled rye is sourced locally. The sandwich is grilled till the Swiss cheese melts, and served with your choice of sides such as sweet potato fries, onion rings or ’Nalo Farms salad. It’s a bite of the Big Apple at home.

From the sea comes another taste of local comfort: Furikake Opah with Sizzling Garlic ginger Sauce ($12). The fur i k a ke - e n c r u s t e d fresh catch is served on a bed of Asian stir-fried vegetables (baby bok choi, won bok and red bell pepper) and topped with sizzling sauce. The sesame oil-based sauce and furikake combine and take the fresh fish to new heights, without weighing it down.

“We always try to center our menu around fresh fish,” explains Takemura. Those with a large lunchtime appetite can thank Mr. Park for his contribution to the menu. Mr. Park’s Oxtail Ramen ($14) is a steaming bowl of Pagoda’s famous oxtail soup with the addition of ramen and shrimpshiitake dumplings. Mr. Park, a loyal regular at the eatery (“He was here this morning,” says Take-

mura), wanted a way to get the most out of the star anise and gingerspiced soup broth. With the addition of fresh ramen noodles, the dish was born. fter establishing success with Lobster King and King’s Shabu Shabu, and building a legion of loyal customers along the way, restaurant owners June Kim and Jay Chen have added another crown jewel to their collection of popular dining establishments. The dynamic duo, along with managing partner Tony Lai, present Cajun King with today’s grand opening at the restaurant’s convenient Waimalu Shopping Center locale in Aiea. Cajun King offer customers a vast array of fresh seafood selections — never frozen — and Cajunstyle dishes and Combo No. 3 combos that truly kick the dining experience up another notch. The restaurant features a bright and inviting dining area with tables that can be moved and combined to accommodate groups of all sizes. In all, 28 tables can host 112 customers, and the restaurant also features a private dining area for large parties. Cajun King offers an assortment of fresh seafood selections, including the highest quality Fresh Oysters ($14 for six and $28 for 12) and Clams ($8 for six and $16 for 12) flown in live from Canada, along with Abalone prepared sashimi style or with garlic ($8). Diners may also reel in other fresh seafood favorites including Lobster ($17 each), Dungeness Crab ($32 each), King Crab Legs ($25 per pound), Snow Crab Legs ($15 per pound), Shrimp ($10 per pound), Clams ($12 per pound), Crawfish ($10 per pound) and Mussels ($11 per pound) — many of which can be prepared salt-and-pepper

style if one desires. The selections also come with a choice of seasoning, including Cajun Style, Garlic Butter, Plain and Simple and Cajun/Garlic Butter, as well as heat levels ranging from no heat to mild, medium and volcanic — Kim advises customers to “please be careful with this one!” The seafood, seasonings and spices are served in a large bag, allowing customers to shake and mix their desired recipe until each fresh bite is full of flavor. Fried Baskets serve as great pupu options, and include Hot Wings ($9) ($55)

seasoned with salt or Cajun spice, Popcorn Chicken ($9, subject to availability) and Fried Oysters ($13, subject to availability). The baskets also come with a choice of regular or Cajun-style french fries. And, what better way to enjoy a meal than with a soft drink with free refills ($2.99) or Domestic ($1.99) and Imported and Premium ($2.99) beers — incredible deals fit for a delicious meal. Cajun King also offers up signature Special Combos, which are prepared by the restaurant’s skilled and

friendly staff and brought directly to the table. Various combination platters include Combo No. 1 ($48) with Lobster, Crawfish, Mussels, Shrimp and Clams as well as Combo No. 3 ($55) with King Crab Legs, Crawfish, Mussels, Shrimp and Clams. These bountiful platters include customers’ choice of sauce, and also come with potatoes, two corns on the cob, four sausages and rice. “I noticed that Cajun-style dining is very popular, so we decided to open Cajun King,” Kim says. “We’re dealing with fresh, live seafood — that’s what helped make Lobster King so popular.” Cajun King is open daily from 11 a.m. to 10 p.m., and customers can look forward to catering menu options at a later date. Lunch Specials are available from 11 a.m. to 3 p.m., and include flavorful combos such as Half Salt and Pepper Lobster with Grilled New York Steak ($12.99) and Half Salt and Pepper Lobster with Salt and Pepper Shrimp ($12.99). As a special scoop for Dining Out readers, all Cajun King customers receive the Grand Opening Special good for two complimentary beverages — two domestic beers, two sodas, or a domestic beer and soda — with every Special Combo order.
