E
arlier this week, Tropical Storm Flossie spun through the Islands and put on a bit of a thunder-andlightning show. Accompanying the storm’s sights and sounds were the customary rain and heavy winds, which knocked out power in some parts of the state. While I won’t complain about the rain showers and gray skies, I will voice my displeasure about the humidity. Man, was that heat unbearable or what?! I felt as if I was in San Francisco, the fogfilled city by the bay, while simultaneously experiencing the monsoon season in Thailand. The lesson? Mother Nature really is a force to be reckoned with. To beat the heat, I decided to appease my growling stomach and make my way to the following Ono, You Know establishments for refreshing fare that soothes the taste buds. These hot spots really know how to cool you off on those days when you’re feeling a bit weighed down by the weather.

Yet, tucked away in the thriving metropolis of downtown Honolulu is Cafe Julia, located in the historic YWCA Laniakea building, which offers an essence of European culture here at home. On my most recent visit to this quaint eatery, it was nice to step out of the rain and humidity for a few moments and cool off with Cafe Julia’s best-selling Ahi Poke Tacos ($8 for two tacos, $14 for four). “I was on vacation in California, and I happened upon this restaurant in Newport Beach. Everyone there was ordering Tuna Poke Tacos, so I tried them and they were really good,” says Cafe Julia owner and president Emerson Ribao. “I decided to create my own version of these tacos and add more of an Asian flair.” The restaurant, which is named after YWCA Laniakea architect Julia Morgan, specializes in Mediterranean fare that also encompasses Pacific Rim and Eurasian influ-

Giant Moon Cake

la Moana Hotel is home to Royal Garden Chinese Restaurant, an oasis of superb cuisine centered around Hong Kong-style culinary craftsmanship. And from now through Sept. 19, Royal Garden is celebrating the Chinese holiday, affectionately termed Mid-Autumn Festival or Moon Festival, in which the positioning of the moon is key. It’s believed that during this time the moon is at its farthest point from the earth, making it appear perfectly vibrant and full. The holiday falls on the 15th day of the eighth month in the Asian lunar calendar and is a time for families to come together, for farmers to celebrate their successful harvest, and for everyone to count their blessings and honor generations past. Step into Royal Garden’s kitchen and you’ll find executive chef Johnny Wong, a veteran at the restaurant, effortlessly creating and shaping moon cakes especially for the Moon Festival (Sept. 19). “Chef Johnny started making moon cakes for his family years ago, then he made them for our kitchen staff and our customers.

Everyone said his moon cakes were so good and told him that he should sell them at the restaurant. We’ve been making moon cakes for more than a decade already,” says restaurant manager Ian Tam, who also notes that moon cakes are made daily to guarantee absolute freshness. At the center of a traditional moon cake is salted duck egg yolk, which is nestled between a filling of red bean or lotus paste, or a mixture of meat and nuts. The mixture is encased in a sweet pastry shell, perfectly shaped by a moon cake mold and embellished with the restaurant’s name in Chinese characters. “We use the best ingredients with absolutely no preservatives,” confirms owner Calvin Wong. “We only use vegetable oil and we use top-grade lotus seed paste. The lotus seed paste is from Hunan province in China — it’s the best lotus seed paste available. ” Royal Garden’s moon cake varieties include topsellers such as White Lotus Seed Paste with Double Egg Yolk ($25.95 for a box of four, $35.95 gift set), White Lotus Seed Paste with Single Egg Yolk ($23.95 for a box of four)

According to Tam, this dense pastry is meant to be shared and eaten with tea before or during the Moon Festival. The egg yolk represents the moon, so it’s best if the moon cake be cut into quarters so that each person receives part of the yolk. “During Moon Festival, everyone comes home to visit their family. The moon cake signifies the family sticking together,” Tam explains. “Everyone must have some.” “When I was a child we would celebrate the Moon Festival with lanterns that all the children would play with and enjoy,” Wong adds. “Besides moon cake, we would eat fruits such as star fruit and persimmon, as well as taro and peanuts.” Since moon cakes are only available during the time of the Moon Festival, they are considered to be
highly coveted treats, which Royal Garden’s chefs create with great precision and care. Each moon cake is also individually wrapped and boxed with the restaurant’s specially made gift boxes from Hong Kong. Royal Garden is also renowned for its Giant Moon Cake — on display at the entrance of the restaurant and made with topgrade white lotus seed paste. Tam says the ingredients needed for this super-sized creation are equivalent to 256 regularsized moon cakes. “Every year, we’ve noticed that the moon cakes become increasingly popular, so we have to start baking more and selling them earlier to keep up with the demand,” he states. “Moon cakes won’t be sold after the Moon Festival, so we advise that if people want to enjoy it in the following weeks after the festival that they refrigerate the moon cakes, which will last for two more weeks.” Royal Garden’s freshly made Moon Festival treats are only available while supplies last. If you plan on purchasing moon cakes Sept. 19, Tam recommends calling the restaurant ahead of time to check on the cakes’ availability.

Diners may also choose from white rice or the restaurant’s signature multigrain variety, which boasts 14 healthy grains of rice. Poke Bowls ($7.50) with just one choice of poke and rice or half-sized Mini Poke Bowls ($5.25) are waiting to be devoured as well. When it comes to wonderfully savory, yet utterly convenient meals, Mamaya’s homemade grinds are the way to go. Conveniently located in Downtown Honolulu, People’s Cafe serves an extensive menu of homestyle favorites bursting with local flavors that will leave you wanting more. Plus, its welcoming atmosphere will make you feel right at home. “People can look forward to good food and a friendly environment,” says chef and co-owner Thomas Ventura. Currently, the restaurant is offering two specials that allow you to sample more than one item, all in one dish. Six different components make up Short Rib Pipikaula Style with Poke and Kalua Pig ($13.95) — yes, six. Pipikaula-style spare ribs are the star of
the dish, deliciously marinated with Ventura’s special sauce. And that’s only one aspect of the dish. You’ll probably find it difficult to pick a favorite item. Also part of the meal is fresh ahi poke. Ventura goes to the fish auction daily, and orders close to 60 pounds of fish weekly. Cubes of ahi are topped with ogo, onion, green onion, sesame oil and sesame seeds. Homemade kalua pig, lomi salmon and a slice of haupia complete this dish, along with a serving of poi. Combo Shrimp, Lau Lau, Teri Short Ribs ($13.95) features a variety of protein. Enjoy shrimp that is grilled and seasoned with lemon, pepper and garlic salt, as well as short ribs that are marinated overnight in a teriyaki sauce. The dish also includes the restaurant’s handmade lau lau. People’s Cafe makes 150 lau lau at a time and often sells out. Dig into

So, when Tae Im took over ownership of the longtime local favorite New Eagle Cafe last November, he decided to keep the restaurant’s longtime customers happy by continuing to offer many of the same original menu items. “About 90 percent of it is the same,� says Im. “And we added a few new items.� Located in Nimitz Center (1130 N. sian Mix captures a blend of Chinese, Japanese and local influences in its cuisine, and it’s this melting pot of flavors that entices customers with each and every bite. And although the restaurant may be geared toward on-the-go dining where you can order, build your plate and go in a matter of minutes, co-owner Daniel Leung makes it a point to utilize high-quality ingredients and always works to offer his customers something new. This week, Asian Mix spices things up with Meat Sauce Won Ton Noodle, a new Chinese special that is sure to hit the spot.
“I tried this particular dish in Guangzhou, China, and I really liked it. Of course, I wanted to recreate it so that people in Hawaii can also enjoy it,” Leung says. “I think Asian Mix is the only local restaurant to offer it.”
A highlight of the dish is eight pieces of Hong Kong-style shrimp and pork won ton, made by hand.
Thick Chinese noodles are boiled to perfection and act as the foundation of the dish. “In northern China, noodles are the main form of starch, which is why you’ll notice that the noodle is thicker,” Leung says.
Before digging in, stir all the ingredients together to round out the flavors. Your taste buds will thank you.
Meat sauce is poured atop the won ton and noodles. It features a savory concoction of sweet bean sauce, peppers, shoyu, chili sauce and bits of ground pork. “The meat sauce is mild in spice, but the hint of spice really helps to add to the taste.”

and I decided to open the restaurant so that I can share that passion with my customers.” Freshly-baked French bread, which is gently toasted so the bread remains soft on the inside and crunchy on the outside, and buttery croissants set the stage for the more than 20 sandwich varieties available at Hi Sandwich & Drink. The restaurant has developed a loyal following for its freshlymade sandwiches, including BBQ Chicken Sandwich on French Bread and Smoked Ham Sandwich on Croissant Bread. All sandwich selections, including the aforementioned favorites, start at $6 and vegetarian options are also available. The Vietnamese Special Sandwich ($6.75, noted on the menu as the Hi Special) brings together pate, char siu pork and steamed pork that are then topped with vegetables. Other sandwich varieties include Meat Ball, Tuna, Ham & Cheese, Turkey Cheese and Turkey Breast ($6 each). Nguyen explains that she utilizes fresh vegetables in her sandwiches, including cucumber, carrots, white onions and Chinese parsley. The veggies are prepared with a special blend of seasonings to enhance all the flavors. The restaurant also specializes in fresh fruit smoothies, and features 22 varieties of the flavorful beverages. With each selection, including Honeydew Smoothie and Thai Tea Smoothie ($4.95 apiece), diners may also add their

choice of black jelly pearls, grass jelly or colored fruity jelly. Customers may also add an additional jelly flavor to the 24-ounce smoothie for just 35 cents more. Hi Sandwich & Drink recently introduced Lychee Poppers, as an alternative to the jelly pearls, that can be included in any smoothie or bubble tea selection. The poppers burst with flavor and are very soft, making them easier to chew, especially for elderly customers and young children. “Before I opened this restaurant, I visited some other places that served smoothies using powdered flavoring,” explains Nguyen

of her flavorful beverage selections. “I wanted to use real fruit, because it tastes much better and is healthier for you.” The vast beverage menu at Hi Sandwich & Drink also
includes Bubble Teas ($4.95 for each 24 ounce serving), which are available in a host of flavors such as Vanilla, Strawberry, Green Apple and Mocha Coffee. The Bubble Tea selections are crafted with a blend of black and green tea. efore moving to the Islands and opening Sushi King in 1992, owner and manager Shu-Lee Kondo already had made a name for herself in the restaurant industry in San Francisco. “I have always been in the restaurant business,” she says, adding that she owned a string of establishments in California. And while Kondo says that Sushi King serves up traditional Japanese food, make no mistake — there is nothing static about its cuisine. Instead, the chefs are always coming up with new ideas and finding inspiration from everywhere, including its patrons. “Just being in this kind of business for more than 20 years, you

f anything makes Sushi King the true king of sushi, it’s the restaurant’s ability to continually reinvent itself and push the limits of its dishes. Just recently, for example, the restaurant unveiled a new item, Kamikaze Roll ($18.50), which features jumbo red Alaskan king crab leg, cucumber, avocado, lettuce
and tomago, and topped with fish egg. Crab lovers are in for a treat, as the crab is both inside and on top of the roll. “I custom order the crab from Washington,” owner and manager Shu-Lee Kondo explains. “This crab leg you will only find here. I wanted to do something special, and you can’t find

this anywhere else.” Another popular item is Karei Karaage ($14.50), which is a deep-fried flounder that is accented with spicy, grated radish and ponzu sauce. Oyster Shooter with Uni and Ikura ($9.50) is the restaurant’s take on this dish, as it combines an oyster with sea urchin, salmon egg, grated yam, fish egg and 4 pickled radish — all topped with a shrimp and ponzu sauce. Chef Edgar San Juan says that his inspiration for the dish came from Sushi King customers. “We hear requests from our regular customers,” he explains. “They ask us to make a certain dish. I say, ‘OK, what do you want inside?’ And we create it from there.” Another aspect of what helps Sushi King retain its royal status is its hours. The eatery is open until 2 a.m. every night except Tuesday, ensuring a quality way to satisfy those late-night cravings.

luten-free ramen is a unicorn in the food world. But luckily, it doesn’t have to be an oxymoron. This is great news for those of you with food sensitivities. At Chinpei Ramen, owner Yoshi Hashigami offers three delicious options, yam, rice and corn noodles, imported from Japan and gluten free. So, the next lunch break when you’re ravenous for ramen, instead of calling around trying to spoon down a seemingly mythical bowl, just head to Chinpei Ramen. And don’t forget to bring your coworkers — with almost 30 types of ramen and other items to choose from, there’s something to make everyone happy. If you have other food allergies, meals can be custom prepared for you. Hashigami hails from Osaka, the foodie capital of Japan, and his authentic cooking is approved by Japanese-born patrons. According to these patrons, Hashigami’s ramen elicits feelings of home and is the most authentic around town. “I want to bottle the soup and take it with me,” one patron proclaims. While meat has its place on the menu, lighter, vegetable-rich fair also has a strong presence. Vegetarian

Ramen with yam noodles ($12.80 for a small) is a steaming bowl of vegetable broth (not made with shoyu, which is fortunate for those avoiding gluten) that hosts a medley of produce, including cabbage, shiitake mushroom, carrot and corn. The yam noodles soak up the flavors of the broth, are high in fiber, and like Hashigami says, have no calories — score one for the team. Other vegetarian-friendly dishes include Tofu Salad ($9 for small), which comes with mixed greens, soft tofu, grated onions, cucumbers and tomato, and the housemade shoyu dressing, flavored with vinegar and
sesame oil, or Thousand Island. And you won’t miss the meat in the hearty Vegetarian Gyoza ($4.40). Hashigami stuffs the doughy pillows with cabbage, green onion, soybeans and long rice, and suggests dunking them in the zesty gyoza sauce. Finally, no meal is complete without garnishes. Spicy-Shoyu Pickled Cucumber ($2.20) awakens and cleanses the palate between bites. It’s brined with vinegar, shoyu and chili pepper for a day to yield a tangy crunch. Zasai pickled ($2.50), another type of pickle on the menu, is deeper and earthier in flavor. Chinpei Ramen is equipped to host lunch meetings, and Hashigami suggests calling and making a reservation for larger parties. Parking in the front of the restaurant is free.

A
t age 11 and with no strings attached, Aidan James is taking the world by storm one strum at a time. Regarded as an ukulele virtuoso and “the Led Zeppelin of ukulele,” this hapa-haole superstar was born with an innate ability to string pleasing notes together. At the age of 4, he began taking ukulele lessons at Roy Sakuma Ukulele Studios in Honolulu. Four years later, little Aidan was already a YouTube sensation, as a video of him performing Train’s Hey, Soul Sister went viral, earning more than 20 million views to date. You can say the rest is history. Currently, Aidan is enjoying his summer like most kids his age, although he’s also spending time learning from other local musical talents and mentors such as Jeremy Cheng and Johnny Helm, practicing ukulele and performing at numerous gigs across the state and abroad with drummer and friend Ian Wacksman. Lucky for us,
this rising star most recently joined us for lunch and brought his appetite to Wolfgang’s Steakhouse for this week’s Dining with the Stars. Famous for its superb steaks, this fine-dining establishment on the third level of Waikiki’s Royal Hawaiian Center in Building C, appeals to keiki, too. Just ask Aidan, whose Wolfgang favorites include Lobster Macaroni and Cheese ($15.95, dinner; available as a side with the purchase of an entree for lunch) sans lobster, Steamed Broccoli ($10.95) and Sizzling Canadian Bacon ($4.95). “We come to Wolfgang’s Steakhouse for special occasions like Mother's Day,” says Aidan as he automatically takes a bite of sizzling bacon — all prepared extra thick. “This is really good! I like bacon a lot!” he says. Soon, a bowl full of hearty macaroni and cheese is placed before him. Aidan doesn’t waste any time digging in. The macaroni is prepared al dente and soaks up the

flavors of the five cheeses — Gruyere, Fontina, White Vermont Cheddar, Parmesan and mozzarella — to create ooey-gooey goodness that is very much Aidan-approved. “I like to eat a lot, and I love macaroni and cheese. It’s so cheesy,” he confirms, before biting into a piece of broccoli, his vegetable of choice. Thoroughly enjoying his meal, this soon-to-be heartbreaker, who’s sporting hipster Ray Ban spectacles and a glorified fauxhawk, has a legitimate sense of style that can’t go unnoticed. It might help that he’s also sponsored by 88 Tees. Aidan recently performed at Kakaako Night Market’s Music Fest and the 43rd annual Ukulele Festival. “Aidan learns by hearing. He has a unique strumming style that can’t be taught and his rhythm is on point for someone his age. Also, it’s very rare for a kid to sing and play ukulele at the same time,” says Aidan’s
mother, Angela Laprete, associate producer for Hawaii Five-0. “I like to play pop and folk music,” Aidan adds, noting that Hawaii-born Bruno Mars is his inspiration. “I don’t get nervous when I perform. It’s pretty exciting!” Throughout his blooming career, Aidan has opened up the Keiki Stage at Jack Johnson’s 2010 Kokua Festival and has performed with HAPA, Jake Shimabukuro, Mick Fleetwood and Train’s lead singer Pat Monahan, to name a few. Aidan has also travelled to California, Oregon, New York and Japan, and plays every so often at Hard Rock Cafe in Waikiki. “I hope to one day go on tour and write more music,” he says. “I also love performing for the kids at Kapiolani Medical Center. It’s awesome because I get to put a smile on their faces.” When he’s not wooing audiences with his musical
abilities and charismatic charm, Aidan is a technology and social media enthusiast, connecting with his fans via Twitter, Instagram, Facebook and YouTube. He also enjoys producing and starring in his own films. “Since he was a baby, he’s acted in TV shows and commercials, and modeled for print campaigns, including Italy’s Elle magazine. It comes naturally for him,” Laprete explains. “He’s appeared on
Hawaii Five-0 and Train’s music video, Mermaid.” Yet, despite his fleeting success, Aidan continues to be a kid at heart, who has an infinite love for sweets. No matter how stuffed he is with macaroni and cheese, bacon and broccoli, there’s always room for dessert! The Mandalay While the areas surrounding The Mandalay on Alakea Street may be a lot cooler than what The Mandalay in Las Vegas has to put up with this time of year, that’s not to say that Hawaii’s humid weather can’t be a drag. But once you step through the doors of The Mandalay, located in the heart of downtown, you’re met with air conditioned comfort and tempting Hong Kongstyle cuisine. Owners and husband-andwife team Larry and Linda Chan know the best way to cool off this summer is with Cold Ginger Chicken and Cold Jellyfish.
Cold Ginger Chicken ($30 for whole chicken, $16.50 for half) is a traditional Chinese entree that’s perfect for summer. And make no bones about it, this dish is to die for. “We boil a pot of water and soak the chicken in it three times, which helps makes the skin crispy,” Linda says. “Then, we let the chicken boil for 45 more minutes and run it through ice cold water. “It’s best to serve it with ginger onion sauce on the side. It’s very good,” she adds. I can attest to that, but Cold Jellyfish ($8.95 per order) also draws in those seeking relief from the heat. The jellyfish is marinated in salt, rinsed, and seasoned with sesame oil, sugar, salt, pepper, Chinese five spice and a touch of vinegar. “When you bite into the jellyfish, it’s crunchy,” Linda explains. “The slight taste of vinegar also really comes through.” Both dishes are party pleasers, so fulfill all your cravings with The Mandalay’s topnotch Chinese fare. This week, Dining Out gets the inside scoops from Kahai Street Kitchen’s chef David Yamamoto, who gives us a little taste of Kahai Street Kitchen and shares just what fuels his culinary drive.

Who or what inspires you as a chef? Roy Yamaguchi inspired me 15 years ago. I was working at Roy’s in Kahana and then transferred to the Hawaii Kai location that same year and was able to meet him twice. It was the way that he blended so many cuisines and flavors together so
successfully that made me begin to think about what I was capable of creating. What is your favorite dish on the menu? Why? I’d have to say my favorite dish on the menu is Ahi Rolls, because I like to use fresh ahi in many different ways. Ahi is such a good vehicle

ometimes, having to pick just one or two dishes from an entire menu can seem like the hardest decision. For the variety-loving palate, dim sum offers a sumptuously appropriate dining experience. Starting this week, the newly opened Canton Dim Sum welcomes all to try its delicious Chinese spread, among an endless array of amazing creations. Conveniently located in Market City Shopping Center, Canton Dim Sum offers a plethora of traditional dim sum dishes that have been prospering in the Guangdong province of China for centuries. “Our recipes are authentic and truly represent the flavors of a proper dim sum meal,” says He Gong, manager of Canton Dim Sum. Run by the same owner as the famed Canton Seafood Restaurant, Canton Dim
Sum is Gong’s latest culinary venture. “Our staff is very passionate about bringing the best out of every dish and quality control by using highest-grade ingredients from local markets,” says Gong. “Being that Hawaii residents are generally quite familiar with many types of cuisine, we work hard to appeal to the local customer in terms of flavor, freshness and portion size.” Dim sum is priced per piece and includes everything from dumplings to braised meats and rice cakes. Diners will enjoy unique dishes such as Steamed Fish Cake with Corn (79 cents each), which features a generous portion of sea bass that is marinated in fresh chicken stock for several days prior. “We do not use any water, but rely on the natural juices of the steamed chicken, so it is very flavorful and healthy,” says Gong. “You cannot find this par-
ticular dish anywhere else on the island.” Other popular choices include Steamed Pork Hash with Shrimp (79 cents each), Steamed Seafood Dumpling (99 cents each) and Mochi Filled with Pork in Tea Leaf (99 cents each). The restaurant’s famous Chicken Mochi Rice in Lotus Leaf ($1.49 each) combines soft mochi rice with seasoned chicken, pork and mushroom, which is steamed within the confines of a lotus leaf wrap. “By utilizing the lotus leaf, it keeps all the flavors inside the rice and leaves a nice aromatic quality,” Gong explains. Those craving a dessert can rejoice with Canton Dim Sum’s various sweet offerings, such as Golden Egg Custard Tart (99 cents each) and Pan-fried Red Bean Sweet Pancakes ($3.99). Canton Dim Sum also features a series of reasonably priced breakfast, lunch and dinner specials starting at $3.99 throughout the week. Currently, the restaurant is BYOB and also offers a takeout menu.
