M

ention that one glorious word, pesto, and my mouth already begins to water. Perhaps, I have an affinity for this special sauce as I am part Italian, but there’s just something about this green stuff that’s just so saucy! Douse pesto on top of everything and it makes for one stellar meal. Pasta, steaks, sandwiches, you name it — when

paired with pesto, ordinary fare is elevated to a whole new level. So, what is it about this Italian condiment that makes it so special? Well, pesto is a sauce that originated in Genoa in Northern Italy, and its name is affiliated with the Geonese word pesta, which means to pound or to crush, referring to the original method of preparation. Today, pesto is ground, and traditionally consists of crushed garlic,

basil and pine nuts blended with olive oil, Parmigiano Reggiano and Fiore Sardo (cheese made from sheep’s milk), but no matter if it’s ground or pounded, pesto does wonders. This week, I visited the following Ono, You Know establishments for their take on pesto, and while there are many variations out there, one thing is certain, this beautiful basil creation always plays to superb taste.

Good to Grill Perfectly charred meats and seafood entice me at Good to Grill, where the chefs make magic, thanks to a kiawe-wood grill and an open kitchen. “What we have here is upscale food at reasonable prices,” says director of restaurant operations Patrick Comer. And while the plate lunches are topnotch, so are the pizzas, pastas, sandwiches and salads, not to mention the variety of ingredients that accent every dish. Drum roll, please, for pesto! If you love pasta, which I absolutely do, you’ll fall hard for the restaurant’s Cajun Salmon Pasta ($11.99), which features a bed of linguine topped with a pesto sauce — immaculate in every sense of the word. “Our pesto sauce is infused with macadamia nuts. Makino Chaya’s lunch buffet is available weekdays from 11:45 a.m. to 1:30 p.m. ($10.98 per person) and weekends from 11:30 a.m. to 2 p.m. ($18.98 per person). The dinner buffet is offered Monday through Thursday from 6:30 to 8:30 p.m. ($25.98 per person), Fridays from 6 to 9 p.m. ($25.98 per person), Saturdays from 5:30 to 9 p.m. ($27.98 per person) and Sundays from 5:30 to 8:30 p.m. ($27.98 per person). “One thing that a lot of people don’t realize about Makino Chaya is the fact that we don’t cook everything at once,” says Chris Mitchell, general manager of operations. “We serve a lot of food, but we cook as it goes. Shrimp tempura is something that we’re constantly making. We have two kitchen staff strictly working the deepfryer.” According to Mitchell, patrons come for the seafood first and foremost. In fact, Makino Chaya is currently in the midst of Crab Fest and offers up a plethora of mouth-watering seafood options, including Dungeness crab, snow crab, king crab and soft-shell crab (while supplies last). “Available for dinner, customers who love seafood can’t resist this. King crab and soft-shell crab have to

be ordered off the menu, but Dungeness crab and snow crab are part of the buffet,” Mitchell states. “We ordered 50,000 pounds of crab in one container and we go through about 300 to 400 pounds a night,” he adds, noting that snow crab seems to be the most popular choice. “The question I’m asked most often is what’s the difference between lunch and dinner, and I always answer that the higherquality items are always served at dinner. Lunch is just as good, but a lot more simple,” Mitchell says. Makino Chaya caters to both kamaaina and tourists alike with the ultimate goal of keeping its customers happy and satisfied with a variety of fare that won’t break the pocketbook. Most recently, the restaurant added melt-in-your-mouth sashimi to its repertoire, with

uni, unagi, hamachi and ahi claiming the top spots as proven favorites. “Ahi is the most popular, and we go through three times more ahi than anything else,” Mitchell says. “Not only do diners have complete access to the buffet line, but they also can order off the menu.” Among the most highly recommended menu items are Miso Butterfish, Katsu Curry, and Curry and rice. In addition to that, Makino Chaya’s teppanyaki grill constantly fires off morsels of meaty goodness at the request of its customers. “One thing you’ll notice about our restaurant is that even though we’re categorized as a ‘Japanese seafood establishment,’ we offer various ethnically diverse dishes that appeal to just about everyone,” Mitchell explains. “Our Seafood Dynamite — a mixture of lobster and crab

topped with cheese in a crab shell — is a hit, and don't forget about the desserts either!” Any dessert enthusiast will tell you that a meal is not complete unless it ends on the sweetest note. Enter the famous Chocolate Pyramid from JJ Bistro & French Pastry and ice cream pies from RB’s Ice Cream Desserts to the restaurant’s dessert station. RB’s ice cream pies (red velvet, green tea, Kona coffee and mango flavors) as well as JJ’s Chocolate Pyramid are priced at $1.99 per piece. And if you dine on your birthday, you’ll receive a free dessert courtesy of Makino Chaya. “Everyone is usually full after taking part in the allyou-can-eat buffet, so we allow our guests to take their dessert home with

them to enjoy later,” Mitchell says. A hot spot for celebrating special occasions, Mitchell adds that Makino Chaya already has been taking reservations for upcoming graduation parties. The restaurant seats 350 people comfortably, and reservations for larger parties are a must. “We recently began to offer catering services, which people have been liking. However, we don’t do on-site catering — you

have to come here and pick up the food. “We also make it a point to work within your budget,” Mitchell explains. restaurant’s food should match its dÊcor. Or is it the other way around? Either way, the pairing of ambiance and food sends an important message of uniformity and careful thought. The designers and chefs at Stage restaurant in Honolulu Design Center have figured it out. Just like the tables, lighting and artwork that accents the second floor eatery overlooking Kapiolani Boulevard, the food is modern, light, upscale yet approachable. In other words, it's delicious, Baked Mussels on the Half Shell ($11) are a great way to start off whatever culinary direction you choose from the main menu. The mussels are glazed with a chili aioli and coated with panko, thyme, parsley and olive oil. Baked until golden brown and served on Big Island baby romaine lettuce, the dish is outstanding. The first upfront flavor one experiences comes from the mussels themselves. This is followed by the lingering spicy notes of the herb crust and the very slight tang of the aioli. The crunch of the herb crust also adds a textural change that complements the soft mussels. Wonderful.

Lord knows I love a good soup. Now, I know how much I love the The Kona Lobster Bisque ($10). This wonderfully creamy soup begins with a lobster stock that is infused with cream, saffron and tomato paste. From there, crème fraiche is added along with Big Island hearts of palm, herb oil and butter-poached lobster. The result is a light and creamy soup that is fresh, slightly sweet and so well balanced that all the individual flavors come through. It’s outstanding. Fresh sashimi is one of the great pleasures of appetizer dining. Raw buttery fish, lightly

accompanied with salt, shoyu or a spring of fresh vegetable — its delicious simplicity at its best. Stage Sashimi ($15) is a good example. Not-so-thin sliced Hamachi (Japanese Yellowtail Tuna) is topped with orange and wasabi tobiko, and a shoyu gelee. The gelee is just fun and provides a cool and liquid counter to the crunchy and salty tobiko. Rolled and eaten as presented, it’s a delight. Add in pieces of the radish salad with kaiware sprouts and a wasabi ponzu sauce, and it just gets better. You can get summer rolls anywhere. The ingredients are generally universal as is the flavor. Island Summer Rolls ($10) are a bit different. Hirabara baby greens, local tomatoes, Big Island hearts of palm, basil and a cucumber mint relish are placed

into the soft rice wrapper, and topped with a spicy ponzu sauce and orange segments. If you haven’t yet combined sweet orange with fresh mint in your own cooking, do it. The two distinct flavors when combined with the plethora of fresh ingredients creates one of the most flavorful and unique starter rolls I’ve ever tried. It’s also a tremendous palate cleanser, which makes it a perfect choice when pairing with more bold-flavored items. Speaking of salads, Warm Goat Cheese Salad ($12) is amazing. Marcona almonds, beets, Island tomatoes, cucumber and Waimanalo mini Thai basil are topped with a wasabi lilikoi vinaigrette that by itself would be a delightful light dish. Add in the goat cheese that has been herb crusted and fried, and you have something truly special. The cucumbers are sweet, the tomatoes slightly citrusy and the goat cheese is mild, creamy and easily the best I have ever eaten. Wow.

Aki amazes with modern fare

J

apanese Restaurant Aki, located on the mauka side of the block between Ala Moana Center and Walmart, opened its doors last month offering delicious, modern Japanese cuisine in a welcoming, contemporary setting. As you walk in to the restaurant, to the right there’s a colorful floor-toceiling painting by Mirori Imai that brings a cheerful vibe to the place. The furniture is all brand-new from Japan, and at the front of the restaurant is a semi-private partitioned area for a table of four. The menu features a nice assortment of original yakitori, nabe and teppanyaki dishes, similar to what you would find in Japan today. In fact, the restaurant’s owner has 17 other eateries in Japan.

clectic in its fare, Anytime Cafe in Market City Shopping Center effortlessy melds an exquisite blend of East meets West with its renowned Eurasian cuisine. Having opened its doors in February 2010, this most-coveted restaurant is owned by the husband-and-wife team of Ken and Cindy Wong, who always strive to give their customers the best. Pork Chop Risotto is a favorite at this Hong Kong-style cafe, and has gained quite a following since it made its debut on the menu a year ago.

The meat lover was the inspiration behind this dish. According to Wong, the majority of risotto dishes at the establishment features chicken and vegetables. She felt the need to add on a meatier, heartier option to the risotto portion of the menu. “I’m glad I did because people love the pork chops. This is a best-seller.”

Boneless pork chops add a lot of savory to the dish, as they are marinated overnight with a dash of salt, bean curd sauce, cornstarch, five spice powder, minced garlic and a hint of ginger. Once the flavor is perfected, the meat is pan-fried and baked.

The foundation for this dish is the risotto, which Wong prefers over rice. “The risotto is imported from Italy, so it’s the best there is. Risotto has a chewy texture about it and easily soaks up all the flavors,” she says.

The risotto is simmered in a light tomato broth and accompanied by fresh vegetables, including red and green bell peppers, onion and button mushrooms. Diced morsels of boneless pork loin also are mixed into the risotto for additional flair, and Wong discloses melted Parmesan cheese as a special ingredient.

Who or what inspires you as a chef/manager/owner? People celebrate their greatest moments with food and beverage, and as a manager, I help create memories and experiences for those people. It could be a wedding, anniversary, even a first date; it is a great feeling to help them celebrate. What is the biggest compliment you’ve ever received as a chef/manager/owner? It is not about me, really. Usually guests want to speak to the manager about what’s not going so well. or more than two decades, Sushi King has occupied its throne as the go-to place for traditional, authentic Japanese cuisine — whether it’s for lunch, dinner or late-night cravings. Since opening its doors in 1992 at the convenient South King Street location just east of University Avenue, Sushi King has continued to add popular favorites to its menu. All the chefs at the eatery bring experience from working in Japan to each dish prepared for their local customers, and the friendly, knowledgeable staff completes the dining experience. “Consistency in the food and our staff are key; we really haven’t changed much,” says Shu-Lee Kondo, Sushi King’s owner and manager. Customers have grown fond of Sushi Deluxe

($22.95), a beautifully arranged platter featuring 10 pieces of sushi — including maguro, hamachi, salmon, shrimp, white fish, cooked egg and squid — along with an ahi and cucumber roll. Requests continue to roll in for Chirashi Deluxe ($24.95), which features fresh seafood such as maguro, hamachi, salmon, tako, cooked shrimp, salmon eggs as well as cooked mushroom and sweetened gourd atop a bed of sushi rice. “The Sushi Deluxe and Chirashi Deluxe are two of our most popular items,” Kondo explains. Sushi King also has added new menu items that are growing in popularity, including Fresh Kona Abalone ($12.50, dinner only) prepared cooked or sashimi-style, and Karei Karaage ($14.50, served at dinner, but available at lunch with advance notice),

a deep-fried flounder served with ponzu sauce and grated radish with chili. Diners also may choose from new pupu-style offerings such as Bacon Wrapped Enoki Mushrooms, Ebi Mayo with Chili Sauce and Bacon Wrapped Asparagus ($5.50 each for two skewers, available for dinner). “I’m sure customers will enjoy these new items,” Kondo says. “I look at it as if I was the customer: ‘Am I happy with this product and the price?’ They’re all items that I enjoy.” New menu items are born via requests from customers, and Kondo and her skilled staff do their best to bring the suggestions to fruition. On the same note, loyal customers asked for live entertainment, and Sushi King responded by offering live music every Tuesday from 7:30 to 9:30 p.m.

Customers also asked for butterfish, and thanks to the demand, Sushi King now offers a Broiled Miso Glazed Butterfish ($9.50 a la carte), which also can be included as a combination meal item. “There’s a lot of loyalty here, and our repeat customers often give us lots of suggestions to work with,” Kondo says. “We plan on adding more menu items as soon as our skilled chefs continue to create them.” The idea of instituting a special lunch and “midnight” menu came to Kondo after she went to a popular local eatery late one evening and observed customers enjoying local comfort food. The line to

get in to the establishment was sprawling out the door, and she decided to mirror the concept and offer the late-night menu to appease her customers, many of whom work in the restaurant industry and come to unwind after a tough shift. Sushi King offers a host of special items available at lunch, from 11:30 a.m. to 2 p.m. and again from 10:30 p.m. to closing, designed to provide stellar selections at a great value. The eatery features special platters for $11.45 each that include rice, salad, soup and a choice of California Roll (six pieces), Cone Sushi (three pieces) or Spicy Tuna (six pieces, limited availability). The pop-

ular platters are available in Chicken Teriyaki, Beef Teriyaki, Shrimp and Vegetable Tempura, Calamari and Vegetable Tempura, Salmon Katsu, Eel Teriyaki and Ahi Cutlet. The special menu also features “Curry Rice” combination plates, which include salad, house soup and pickles, and a hearty portion of rice covered in a savory curry for $11.45. The special dishes include main choices of Ahi Katsu, Chicken Katsu, Pork Katsu, Salmon Katsu, Oyster Katsu or Ebi Fry. hen People’s Café temporarily closed its doors last year, some customers were reeling, unsure where they would go for their fix of Hawaiian food. Luckily, it reopened last September, after taking a few months to complete a number of renovations. Customers can find new décor, which

eople’s Café on Pali Highway has been serving up local food for more than 70 years. Current co-owner Tomas Ventura says that many of the older customers remember coming to the restaurant during their youth. Ventura himself has a long history with the eatery — he has been working at People’s Café since he was 17. “The owner before us, he hired me as a part-time cook,” Ventura explains. “And from here, I learned everything from the original owner.” Working under the previous owner, Ventura learned to cook and has been honing his culinary skills ever since. Many of the recipes have remained the same throughout the years. There is, however, one significant change across the board; Ventura does not use any MSG. “All the food we serve here has no MSG,” he confirms. Another big change over the years has been the addition of Filipino food to the menu. After reopening its doors last September since completing renovations, People’s Café welcomes a new co-owner, Conrad Valdriz. He has been involved in the food industry for years, previously running a chocolate macadamia nut factory, a sausage factory and various restaurants. “I have known (Tomas) for a long time,” Valdriz explains. “And I used to come and eat here. “The customers who come here, we know almost everybody,” he says. The staff at People’s Café is so friendly and inviting that you’ll feel right at home the minute you step in the door.

Ventura, adding that all the food is made in-house. If it is Filipino favorites that you’re after, Ventura says that Crispy Pata ($14.60) and Pork Guisantes ($9.50, $6.50 for a mini) are top sellers. Crispy Pata is a giant pork leg that has been boiled for up to four hours to create tenderness and then deep-fried. Customers like the dish so much that, despite its impressive size, some can eat the whole thing on their own, according to Ventura. Pork Guisantes is a colorful dish with green and red bell peppers, onions and beets. “It is a popular Filipino dish,” Ventura explains.

Other menu options include Garlic Shrimp ($9.50), a dish that features large, flavorful local shrimp complemented with garlic. Local favorites include dishes such as Oxtail Soup ($10.50), which is swimming with cabbage and parsley. More changes are on the way for People’s Café. “We are planning to change the menu again in May,” Ventura says. “We are going to put new items like Garlic Chicken and Pipikauloa Short Ribs Style.” He estimates that the menu expansion will include six to eight new items. And with the renovations that recently took place, People’s Café now has a fryer — so customers can expect the addition of more fried goods to the menu. Ventura derives culinary inspiration from a variety of sources — from sampling other fare to discussing food with friends and customers. “I go out to eat with my family, and I look to see what is popular,” he explains. t’s got a little crunchiness, but this thick, sweetened sauce …” Steven Matsuno, executive general manager of Seafood Village, couldn’t even finish his sentence. He was overtaken by a bite of the Kalua Short Ribs ($18.95) he was describing. “The sauce is sweet and tangy,” he continues. “The short ribs are fried crunchy and then sautéed in this special sauce. Basically it’s a sweet and sour sauce with honey added.” That’s the winning formula for bite-sized morsels that beg to be eaten with your fingers and salivated over.

“They are very popular.” Matsuno’s declaration seems to state the obvious. Martin Yan is to be thanked partially for the success of the dish. “Our chefs go back to Hong Kong every once and a while, and we have relationships with some celebrity chefs that we collaborate with.” Yan, most notably famous for his award-winning cooking show, Yan Can Cook, is one of those chefs. “Chinese food automatically lends itself to eating with family and friends,” says Matsuno. Seafood Village is the perfect place to gather friends and family for a special occasion, but you don’t always need one. Right now, Seafood Village is offering a Kamaaina Lunch Party Menu from 11 a.m. to 2 p.m. for parties of 10 or more. And at $10.95 per person, you can’t go wrong, especially since Kalua Short Ribs are included on the menu. Another dish that’s a catch is Tea

Leaves Smoked Jumbo “Kahuku” Prawns ($23.95). Fresh from the North Shore and presented in a thatched bamboo basket that harkens back to old-style fishing, the prawns are cooked in their skins to lock in the flavor. Slices of garlic

cloves and what looks like nori accompany the prawns. “That’s a tea leaf!” Matsuno explains. Fresh oolong tea leaves are deep-fried to release their aromas; the prawns are sautéed into them. The leaves are crispy and salty (like green potato chips) and the prawns burst with local flavor. “This isn’t your grandma’s Waikiki anymore,” says Matsuno, referring to all of Waikiki’s new attractions. “It’s a great opportunity to come check out Waikiki again.” And Seafood Village is the right place to stop for a bite (or two) to eat.

suring a “crunch� when you bite in. Five-spice seasoning is used to provide rich flavors in the chicken. And don’t be deceived by its name — the shrimp isn’t seasoned with your ordinary salt and pepper. Instead, the restaurant uses hot chili pepper and sea salt. Another item off the menu that will leave you feeling refreshed is Cold Ginger Onion Chicken. After the chicken is steamed, it is cooled down and served with a ginger-onion sauce. Of course, it being a buffet, those aren’t the only items to choose from. Also included is an oriental salad bar, a pupu section (with items such as egg rolls and won ton), a starch section that

Surfers know the Hawaiian scale of wave measurement: the actual wave height is almost twice as what’s quoted. At Tsunami, it’s no different. The flavors are maximized. “Before, we used to offer bar-style food,� Rick Shibasaki, manager of Tsunami explains. “Now we have a much more refined menu.� With chef Wade Ueoka at the helm of the menu, the restaurant is dishing up Hawaiian regional cuisine with a twist. The eatery experiments with fresh, local produce and meticulously prepares each dish to bring out the unique flavors, such as Tonkatsu ($16), which is slow-roasted before frying and served with braised cabbage and a mustard katsu sauce. ou don’t have to travel all the way to New York to enjoy an authentic steakhouse. In fact, at Wolfgang’s Steakhouse on the third floor of Royal Hawaiian Center, everything from prime USDA Black Angus meat to an elegant decor scheme is exactly as you’d find it at any of founder Wolfgang Zwiener’s four steakhouses in the Big Apple. It’s just that in Waikiki — you can chomp away on a sumptuous filet while gazing out of expansive windows that overlook breezy Kalakaua Avenue with its tall, rustling palms. Ever since Zwiener opened his Waikiki location in 2009, patrons have been awed by thoughtfully prepared and carefully executed meals of supreme quality. A beautiful example is Porterhouse steak for two ($104.95). “It’s a specific cut from the short loin,” says executive chef James Donahue, who grew up on the Winward side and traveled to NYC for three months to learn the establishment’s culinary secrets. “It has to measure at least two inches outward from the bone to the end of the filet.” This 32-ounce piece of exquisite meat — often hand selected by Zwiener himself — then goes through a renowned dry-aging process, in which it is kept in a chilled 35-36 degree room for 28 days. “We age on site,” explains Donahue. “We really want to seal the meat so all the flavor stays inside, and it intensifies the flavor even more.” The resulting beef dons a gorgeous marbleization, which hints at its flawless flavor. No fancy seasoning or elaborate marinades are needed, just the true essence of the beef, which is best highlighted with a straightforward char and broil. Once it’s brought to your table, sizzling in its own juices, you’ll truly understand the meaning of tenderness and juiciness. The steakhouse’s appetizer menu also is full of sophisticated eats. Wolfgang’s Salad ($16.95) features generous chunks of bacon mixed with shrimp, roasted red peppers, green string beans, onions and tomatoes in a red wine vinaigrette. Then there’s Wolfgang’s Crabcake ($22.95), prepared with jumbo lump crab meat as well as mixed greens and house-made tarter on the side. the meat comes out so much more tender,” says Khan. “We marinate all food overnight so that the spices can dissolve completely into the meat and vegetables, allowing for better cooking.” Another signature dish is Chicken Kadhai ($18.95), a savory symphony of tender chicken with sautéed onions, tomatoes and bell peppers. When it comes to spices, Monsoon India believes that less is more if applied carefully. “Indian cooking is all about the timing and not just about the spices,” explains Khan. “Using fewer spices with accurate timing results in much better taste and quality of food.” Vegetable dishes also are an important part of the menu, such as Baingan Bharta ($18.95), which incorporates roasted eggplant with spiced tomatoes and onions. Additionally, the restaurant features an impressive array of homemade desserts, such as Gulab Jamun ($5.95), a sweet confection of deep-fried doughnuts in a honey sauce. Monsoon India is BYOB and carries no corkage fee. The staff encourages those who are interested to visit the downstairs liquor store, which sells an impressive variety of wines and beers, including various brands of Indian beer.
