here are a couple of things you should know before you venture to Waialae Avenue for a taste of some excellent Mediterranean food — the first is that there is no fat Greek. While a good number of dishes are popular Greek staples — Souvlaki, Gyros and Greek Salad, to name but a few — many of the dishes represent the colorful, olive oil-infused, fragrant, healthful foods of the entire Mediterranean region. From Chicken Alexander ($12.95) to Lamb Shanks ($14.95), to the Levantine-inspired Babaganoush ($6) to Merguez sausage popular in North African cuisine, Fat Greek owner Francois Provenza succeeds in bringing fresh, healthy food to enthusiastic patrons. Provenza, with his loud laugh, enormous personality and unbridled passion for good food, is an impressive host, and just the kind of character you might expect to find at the center of this bustling, Mediterranean-inspired city spot. Jo McGarry: Ever since you opened The Fat Greek, you’ve built a reputation for great food and fair prices. Did you expect that people would like your cooking as much as they do?
JM: How we eat in Europe is really influenced by dozens of different cultures, don’t you think?
FP: Yes, yes, just look at the Greeks. We traveled all over, from Africa to Sicily, to India … and they brought home lots of good stuff … lots of different foods. FP: Yes. On Tuesdays we have Chicken Alexander — chicken with the spices and vegetables and rice and salad. On Wednesday nights we have Kabob, grilled lamb or chicken and vegetable kabob served with basmati rice and salad. And on Thursday we have our Lamb Shank. It’s sautéed with vegetables and spices and simmered in our special sauce. And on Friday we make Moussaka. It’s a very good moussaka. On Saturdays and Sundays we do chef’s specials, so really anything we want to. Sometimes it’s fish, sometimes lamb stew, sometimes shrimp. JM: What would you suggest people order when they’re coming for the first time? FP: Oh, there’s so much — the fresh salmon is popular, and the salads and the appetizer platter with hummus and babaganoush and dolmades, merguez sausage, feta cheese, olives, Greek fries, spanakopita. FP: To be honest with you, I don’t see why they should pay. We give them glasses — what should they pay for? They bring their own wines, their own beer, they’re welcome to do that. JM: Are you tired of people coming in and asking to see the fat Greek? FP: (laughs) No, but they do sometimes come and look in the kitchen to see if there is a fat Greek in there, or they look at me and they say ‘hey, you lost weight!’ It’s all good. As long as people are having a good time, enjoying the food, that’s what we want.

Anytime Cafe is part trendy bistro, part American Coffee shop — and always good
I
first met Anytime Café owner Ken Wong at Hong Kong Orchid Café when the Asian café concept was just beginning to become popular. Fast forward eight years or so, and Wong is still hard at work incorporating a contemporary taste of Hong Kong with current favorites in Honolulu. “It’s a type of food that people in Hawaii really like,” says Wong, who has remained committed to keeping prices low and food quality high throughout his restaurant career. “Right now, especially,” he says, “we know that people are looking for good value. We want to give them that in a menu that has many different choices.” You’ll find Anytime Café in Market City Shopping Center. With a modest exterior and a large, cool, contemporary dining room, Anytime Café makes for a casually elegant

destination that’s part trendy bistro, part American coffee shop. Open from morning until late evening, there’s an opportunity to eat almost anything at almost anytime. “We serve breakfast all day and night,” says Ken, “and we have everything: American food, Chinese, Western, pizza, East meets West — lots of choices.” Go for the noodles if you’re a fan of shrimp won ton and clear, complex broths. The won ton pi and a variety of noodles are flown in from Canada, 1 where the flour used resembles the kind used in Hong Kong. The result is a more delicate, less starchy noodle that allows diners to see that shrimp dumplings at Anytime are fat and juicy. “We use the big shrimp, the 21-25 count,” says co owner Cindy Wong, “and then we cut them into three pieces and put one in each dumpling. You can see the shrimp inside the wrapper. Many restaurants use mostly pork with their won ton — our policy is more shrimp, less pork.” Importing noodles along with Arborio rice and dried pasta adds to the cost of ingredients, but it’s a price that the Wongs feel is worth
paying. “The difference in the imported ingredients is all about quality,” says Ken. “We use very good ingredients because we know that it’s important to our customers.” Despite ever-increasing costs, the menu at Anytime offers surprisingly low prices, and dishes that incorporate local-style favorites Loco Moco ($9.50) and Salted Pepper Pork Chop ($6.95). Order the Shrimp Wonton Soup ($6.95) and you’ll notice immediately the delicate, near translucent noodles, or choose from a variety of noodles, dumplings or rice

broths, which include Fish Ball Noodle in Broth ($7.95), Beef Brisket and Tendon ($9.50) or Boneless Chicken Rice Soup ($6.95). A house specialty well worth trying is the Thai style Pork Cheek with Dipping Sauce, where tender slices of pork cheeks are marinated then sautéed and served with a sweet-and-sour blend of Thai spices, lemon grass and chili peppers. The spicy dip complements the melting luxuriousness that belongs purely to fatty pork. “We cook it in the Thai style,” says Cindy, “and it takes a little longer to cook because we make every dish to order.” It’s well worth the short (10- to 15-minute ) wait. Anytime also offers the kind of large-portion pasta combination dishes you’d expect to find in an Asian fusion restaurant: Baked Chicken and Mushroom with Spaghetti ($10.50), Baked Seafood with Spaghetti ($11.95), and Baked Pork Chop with Fried Rice ($11.95) are examples of dishes that come with sides of soup or salad and garlic bread. The portions are more than enough for one hearty appetite with lots left over to take home. There’s a long list of Vietnamese and Hong Kong-style iced coffees, tea and jelly drinks, and a simple dessert menu that includes the newest sensation from Japan: snow ice.
And for those who miss the Italian-style specialties of risotto and pasta that were favorites at Anytime’s previous incarnation, Banana Leaf Italian Bistro, there’s good news. “We kept the chef because he makes such good Italian dishes,” says Ken. “Now we offer Chinese, fusion, Italian and American food from breakfast through dinner.” N a t u r a l l y, they offer them anytime.

From a story in the Sept. 26, 2010, issue of Dining Out, readers got the impression that the highly popular Ducky’s Korean BBQ restaurant at 2955 E. Manoa Road, phone number 9889809, had closed down. No way — the restaurant is thriving thanks to the wonderful food,
personal service and overall comfortable atmosphere. We’re sure Manoa residents would like to keep it their little secret, but the entire island should enjoy this unique family-style restaurant serving authentic Korean cuisine. Dining Out regrets the error.
Ingredients: • 2 racks of lamb, cut into double chops • 3 tablespoons chopped green onion (prefer the white part) • 1 tablespoon whiskey • 1 tablespoon sesame oil • 1 tablespoon toasted sesame seeds • 1 1/2 tablespoons hoisin sauce • Pinch black pepper • 4 cups mashed potatoes • 4 cups sauteed vegetables
Preparation: • Cut and trim fat from the lamb rack and then cut into double chops; set aside. • In a bowl, add green onion, whiskey, sesame seed, sesame oil, hoisin and pepper and mix together. With your hands, squeeze the green

Use as a marinade. • Put the lamb into the bowl and rub the marinade over the lamb evenly. Let it sit for an hour minimum or you can let it sit overnight • On medium heat, grill your lamb for a minute on each side. Put in a preheated oven at 350 degrees for about three to five minutes or longer, depending on how you like your lamb cooked. • To plate the dish, put one scoop of mashed potatoes and vegetables.
