Soup’s on in McCully F
ans of the Korean tofu soup, Soondooboo, know that an excellent source is So Gong Dong at McCully Shopping Center. Here, owner Steve Lee makes the beef stock from scratch before adding silken tofu. “People come from all over to taste our Soondooboo original,” says Lee of the soup, a combination of beef and pork. “There’s no one that can make this taste the way we do.” The secret may be in the stock or in the ingredients themselves (kim chee and pork, clams, dried seaweed and beef

Rising Above it All
Once thought to be on its way out of town, Sarento’s, the beautiful rooftop restaurant, is doing booming business these days
T
here’s a buzz about Sarento’s Top of the I these days that’s almost palpable. Maybe it’s because of the enthusiasm and culinary expertise of executive chef Maka Kwon. Or maybe, it’s the fresh paint, new furniture and general optimism surrounding the beautiful restaurant at the top of the Ilikai. Certainly things have changed from just over a year ago, when Sarento’s owner Aaron Placourakis decided to keep the establishment open despite Ilikai Hotel’s financial woes. “In the end, it was a great gamble,” says Placourakis, the longtime restaurateur. Taking in the newly carpeted, freshly painted restaurant, and tasting the perfectly executed dishes coming out of the kitchen, it’s easy to see why Placourakis’ gamble is about to pay off. The CEO of Tri Star Restaurants (owners of Nick’s Fishmarket, Son’z and Sarento’s on the Beach on Maui) always said he was here for the long haul, even though many thought the restaurant would close along with the hotel. “We’re committed to our guys; we always have been,” he says. “Was it tough when the hotel got all the negative publicity? Sure it was. But we always had our guys and our sense of the community in mind.” And while business at Sarento’s is booming again, everyone’s breathing a sigh of relief that a tough year is finally behind them. “Even my aunty thought we
closed,” says Kwon with a grin. “And I work here!” Kwon is spooning melted butter over a double cut pork chop, tenderly encouraging the outer edges of the meat to turn golden brown. He’s an instinctive chef
who darts around the kitchen making dishes as he talks, tastes and creates beautiful plates of food. “This is a great place to be

right now,” he says. “Not just with the refurbishment of the restaurant and the new look of the hotel, but there’s also so much going on in our kitchens, with our menu, with local produce and great ingredients.” The Mediterranean-inspired Sarento’s, named for Placourakis’ Italian grandfather, has always prided itself on the use of fresh, high-quality ingredients. “Everybody appreciates locally farmed produce nowadays,” says Placourakis. “What we’re doing at Sarento’s is simply allowing that food to be the star of the show. The less we do to it, the better it becomes.” Dishes like Grilled Ahi Mignon ($32), Tagliatelle Ai Funghi ($24), Grilled Rack of Lamb ($38) and Double Pork Chop ($29) are proof. “We serve single-cut lamb chops in such a sim-

ple way,” explains Kwon. “They were inspired by Aaron and the way he cooks at home.” Simply seasoned, rubbed with herbs and served with feta cheese, olives and tzatziki, the lamb is cooked to a perfect medium rare. Kurobuta pork gets the same unpretentious treatment. The double-cut pork is stuffed with Fontina and prosciutto, drizzled with a mushroom sauce and served with butter-whipped potatoes. “The food here is Mediterranean-inspired,” says Kwon, “but we use so many local ingredients and we’re focusing on keeping things simple and beautiful.” There’s nothing that speaks more loudly of simplicity than freshly made pasta. At Sarento’s, they make it by hand every day — along with house-made sausages and filet mignon meatballs. “One of the most popular 1 1 - 1 7,

dishes on the menu is a simple, fresh pasta with mushrooms and prosciutto,” Kwon says. Sarento’s dining rooms offer guests a variety of seating arrangements. One large dining room, in fact, dominates the major part of the restaurant with a series of booths, tables and a private dining room perfectly situated to best utilize extraordinary panoramic views across the city. Once known as a specialoccasion restaurant, Sarento’s boasts a more casually elegant ambience today and welcomes all. “We’ve been here for 18 years,” says general manager Jarred Jones. “In that time we’ve gone from wearing tuxedos and being known as a fine-dining restaurant to becoming the more relaxed restaurant we are today. The dress code has changed, but none of the service has.” Perhaps the main differ-
ence today about Sarento’s is the reasonably priced menu. A nightly three-course pasta menu for under $20, (served until 6:30 p.m.) is offered to encourage local diners to experience the menu and take in the stunning view. “We have handmade pasta and a menu that offers incredible value for guests who want to eat early and take in the
view,” says Jones. “We’re pretty much a place that people are rediscovering. Local people know they can come and dine causally. “Basically, this restaurant is a lot of fun,” he adds. Whether you go for the undeniably great value of the sunset pasta dinner, for appetizers like Sarento’s Smoked Salmon ($12) or Bocconcini ($9),
entrees of Ossobuco ($34), Fresh Island Catch or Penne Calabrese ($24), or just want to sample some pupu and a glass of wine at the bar, there’s never been a better time to get reacquainted with Sarento’s. “Today, we’re a place where you can celebrate something special or come just to enjoy a pasta dinner and a glass of wine,” Placourakis says.

Bangkok Chef Expands Operations Once a spot known only to the foodie “in crowd,” Bangkok Chef has grown into the place to be for authentic Thai food. The menu features nearly 40 dishes (nothing is priced over $10), and ingredients are purchased fresh daily from local farmers and friends. e found Karen and Steven Kondo, with daughter Lorriann, at Tropics Bar and Grill at Hilton Hawaiian Village. We asked them what they’d recommend from the casual beach bar restaurant menu.
Karen: “We’re having a ‘staycation’ here in August with our two grandkids, so we came today to check out the hotel, the property and the restaurant. We’re very impressed so far. “It’s a huge property and we love the idea that we can do pool and beach activities. The menu here at

Tropics is very varied — there are a lot of interesting choices, and we heard that there’s a lot of local produce, too. So far, we’re enjoying everything!” Steven: “I’m having my favorite — hamburger. I always order hamburger wherever I go. I have my favorite places to go and eat hamburger and I’m hoping that this one measures up. So far, so good.” Lorriann: “I’ve heard so much about the food here. Today is my first visit.
I’ve ordered the fish sandwich, which looks great. But the burger looks so good too. I could easily have ordered one of their salads, too. There are really a lot of choices on the menu.”

Dear DM. I believe the reason you’re presented with the charge slip is that it would be too expensive and inconvenient for a restaurant to have two separate slips — one with tip space, one without. Restaurants simply use a standardized receipt. I’m sure, however, that there are many people who feel the pull of nagging guilt when faced with a blank space beneath their total, and go ahead and leave a gratuity anyway. Unless your takeout service is exceptional, you shouldn’t feel obliged to tip.

ason Miyasaki, the executive chef at d.k’s Steak House in Waikiki, has created a mid-week menu that features 1 1/4 pounds of Maine lobster and wine pairings by master sommelier Chuck Furuya. The lobster entrée (which comes with drawn butter, vegetables and a choice of potatoes or white rice) is paired with a CF Riesling. Additionally, a steak house salad is paired with Muller Thurgau, crafted by Paul Furst of Franconia, between courses. Here’s what’s on the Wednesday night steak house menu (fourcourse dinner) for just $39.
