Its Kalbi Fried Rice ($11.95) comes with three pieces of mouth-watering ribs, a scoop of fried rice, mixed veggies and unlimited access to the all-you-caneat salad bar. “We marinate the kalbi a day in advance in our special sauce with lemon, garlic, shoyu, ginger and sesame seed oil,” says general manager Kenton Tom. The result: Meat so tender and juicy, it will leave you begging for more. The flavor of the sesame seed oil and shoyu mixed with special seasonings is a heavenly combination, and you can be sure that you’ll be picking every last piece of meat off the bone. The char siu fried rice, consist-

ing of egg, char siu, green peas, onions, carrots, oyster sauce and shoyu, complements the dish perfectly. You also can substitute the fried rice for baked potato, rice or French fries. “It’s a popular item here and people mostly order it for lunch or dinner, but you can order it any time of the day,” Tom adds. es to lofty heights. I don’t believe there is a better example of this soup in Hawaii, although by now Uyehara is tired of my ongoing enthusiasm for the dish. “I think that one will follow me around forever,” he says, smiling. There are, of course, more sophisticated appetizers on the Beachhouse menu: Blackened Ahi ($14), Steak Tartare ($15), and an impressive Raw Bar ($42) for two that features king crab, lobster tail, sashimi, tiger prawns and Northwest oysters. Still, there’s nothing that speaks

as simply to the timelessness of European cuisine or showcases Uyehara’s understated mastery of classics than this soup. Beachhouse is primarily a steak house, where the beef comes from an Amish community farm in Pennsylvania. “We searched the country for the best beef we could find,” says Uyehara of the artisan raised Moyer beef, “and this is it.” And while the steaks are succulent, of high quality and cooked by a team that thankfully knows the difference between rare and ruined, you should look beyond the steak on the menu to find delicious dishes such as Kurobuta Pork Shank ($28), Hawaiian Style Half Chicken ($28) and Australian Lamb Chops ($38). hen the Beachhouse at the Moana was transformed from Sunday Brunch Central into an elegant steak house, there were those who thought the ambitious transition might not work. Changing not just a room but a staff and a style of cooking, too, was not an easy task. Good thing Rodney Uyehara was in charge of the minor yet required culinary revolution.

Three years on, you’d be hardpressed to think of Waikiki’s most elegant dining room as anything other than a steak house with gracious style, unrivaled ambience and breathtaking beachside views. The change in the kitchen, under Uyehara’s guidance, has helped the Beachhouse garner a welldeserved reputation for fine food and high-quality ingredients.

Uyehara is a local chef who trained at the prestigious Culinary Institute in New York and who finds comfort in classic dishes infused with local flair. His French Onion soup — a rich, shimmering, double consommé redolent with sweet Maui onions, topped with toasted baguette slices and melting gruyere cheese — is a perfect example of his ability to elevate simple dish-

I

n case it may have slipped your mind, it’s National Grandparents Day today. At Wailana Coffee House, however, the owners and employees haven’t forgotten as they’re ready to welcome all generations in a celebration of family and good value food. Located on the corner of Ala Moana Boulevard and Ena Road (directly opposite Hilton Hawaiian Village), the coffee house is known for exceptional value — particularly during special events — 24-hour breakfasts and an all-you-can-eat salad bar that accompanies every entrée. “All of the holidays are very popular,” says co-owner and general manager Kenton Tom, “but Grandparents Day is a really special day here. Our restaurant is very family friendly and we have a nice, relaxed atmosphere.” And while that ambiance is hard to beat, it’s even more difficult to find prices that offer better value. At Wailana, a Grandparents Day special menu features complete meals that include salad bar, corn on the cob and a choice of baked or mashed potatoes, french fries, rice or dinner rolls. Dessert, coffee, tea or a soft drink also are included. Featured special meals include Roasted Tom Turkey with Smoked Ham — a gargantuan plate of house-roasted turkey with Wailana’s own macadamia nut stuffing, old-fashioned giblet gravy and cranberry sauce for just $12.25. families is definitely the value of our meals,” Tom says. “And we’re known as a place where people can get local food like oxtail soup, fried rice, kalbi and teri chicken, and a lot of American-style dishes like New York steak, sandwiches and fried chicken. There’s something for 1 2 - 1 8 ,

everyone here.” The oxtail soup is the kind of dish that has regulars beating a path to the coffee house door. Every Thursday for 20 years, bowls of steaming hot oxtail soup, complete with peanut, cilantro and rice on the side, emerge from the kitchen and make their way to the waiting tables of devoted customers. “It’s certainly one of our most popular dishes,” Tom says. But don’t be fooled into thinking that every dish has remained unchanged on the menu these past decades. The Wailana crew is proud of the fact that the restaurant’s menu has changed with the times. “We’ve always updated the menu,” says Tom. “We listen to what customers want and to what they like, and over the years we’ve adapted the menu to suit our customers and their changing tastes.” There’s a catch of the day, for

Mixologists Converge on Halekulani T

here’s an outstanding assembly of talent at Halekulani next weekend, as professional bartenders and mixologists from around the country come together as part of Halekulani’s Connoisseur series. The Art of the Cocktail showcases the talents of industry legend Dale DeGroff, universally acknowledged as the world’s premier mixologist. Hot Pot, Green Papaya: A Winning Combo By Sarah Pacheco

W

hen you arrive at Green Papaya and Hot Pot Shabu Shabu, conveniently located across from Walgreens and kitty-corner to Walmart on Keeaumoku Street, the smell of barbecue and the promise of a delicious, hearty meal welcomes you even before you step inside the dual restaurant space. Once you do cross the threshold into either eatery, the promise seems fulfilled with one glance at the colorful, photo-filled menus. The only dilemma is, which item to choose? At newly opened Hot Pot, customers don’t have to limit their decisions — or their portions — if they dine shabu shabu. The idea is simple: Order a broth, pick out some fixings, and cook it all to your liking at the table. The combination possibilities are endless. To start, the menu features nine different broths made from either a chicken or beef base that is cooked for 24 hours so that the flavors are richly infused. Most people start with the Original Shabu Shabu broth, but if you like things spicier there is a Vietnamese Spicy Shabu Shabu, Indian Curry Shabu Shabu, Thai Spicy Shabu Shabu, Kimchee Shabu Shabu and 4 King Shabu Shabu. Other interesting flavors include Bean Curd, Volcano Pineapple and Vegetarian. Each bowl of broth is $4.95, and right now there is a special where if you buy one, you get the second half off. The more soup the better, because there are dozens of meat, seafood, vegetable and noodle items to enrich to your meal. There are more than 30 different meat and seafood options alone, and generous helpings at that. Some tasty examples of what’s in store include chicken breast, beef tenderloin, lamb steak, pork, sea bass fillet, baby octopus and shrimp. Each meat plate is $4.95, and seafood is $6.50.

Add in heaping platters of mixed vegetables ($2.95), noodles ($1.75) and mixed mushrooms ($2.95) and you have the beginnings of a satisfying meal. “We like to say that this is for family and friends to enjoy together,” says owner Bill Trang. “It’s good to have lots of people to share, and most people like shabu shabu at dinner.” Trang opened Hot Pot Shabu Shabu about three months ago to offer loyal Green Papaya customers something new. He and wife Heidi started the casual Vietnamese cafe 15 years ago, and in honor of many prosperous years, everything on the Green Papaya menu is 10 percent off through the end of the month. That gives eaters the chance to sample from the vast and quite-thick menu of Fried Noodles, Fried Rice, Thai Soup ($9.95), King Pho ($8.95) and barbecue. But what Green Papaya is best known for is its wide selection of meatless dishes, including Spring Rolls with Shiitake Mushrooms, Taro and Carrots ($8.95); Long Rice Tofu Soup ($7.95); Green Papaya Salad with Fried Garlic Tofu ($8.95); Spicy Lemon Grass Tofu with Rice Noodles ($9.50); and Yellow Curry with Tofu, Sweet Potato and Taro ($9.95). Pansit Noodles, Filipino-style Noodles by Chef Chai Chaowasaree

Ingredients: • 1/2 pack pancit bihon noodles • 1/2 pound shrimp, peeled and deveined • 1 cooked chicken breast, shredded • 2 cups chicken broth • 1/4 cabbage, sliced into strips • 1 onion, peeled and sliced • 3 cloves garlic, crushed and minced

• 1/3 cup scallions, cut into pieces • 1 carrot, sliced into strips • 2 tablespoons cooking oil • 3/4 cup diced celery • 3 tablespoons soy sauce • 2 tablespoons oyster sauce • Salt and pepper, to taste • 5 pieces of calamansi or 1 lemon, sliced

Preparation: • Soak the bihon noodles for 10 minutes to soften • In a non-stick sauté pan, add vegetable oil, onions and garlic; cook for one minute. • Add shrimp and cook for another minute; add chicken broth, shredded chicken breast and all vegetables until cooked. • Mix in bihon noodles and add soy sauce. Cook for about 5 minutes or until the noodles are soft. • Season with salt and pepper to taste, and garnish with calamansi or lemon on the side.

Camellia Buffet For the past 25 years, this yakiniku-style restaurant, located on McCully Street, has been offering locals a top-notch all-you-caneat Korean buffet. Need I say more? Imagine all the kalbi, Bul Go Gi, chicken, spicy pork, kimchi, taegu and rice you could ever want right at your fingertips. With more than 50 items to choose from, ranging from main dishes to sides, you’d better come ready to grind! As one of my favorite buffets, I always work up an appetite at least a couple days prior to dining here because there’s just so much to take in (digestively speaking). And although you have to cook your own food tabletop — it’s all worth it. The kalbi is juicy and savory in flavor as it’s marinated for 24 hours in a rich concoction of shoyu, sugar, garlic, ginger and a plethora of other secret ingredients. The Beef Rib-Eye is not one to pass up either, along with the sirloin steak and the various selections of kimchi made inhouse. Lunch buffet costs $14.95 and the dinner buffet is $21.95. Frog House Restaurant Ono for some fabulous Korean food at an affordable price? The Frog House Restaurant serves up great portions of some of the best Korean cuisine in town. Whether you’re in the mood for a plate lunch or traditional yakiniku flair, owner Jeannie Oh says they do it all. “We have the yakiniku option that people love because they can make their own lettuce wraps, but locals really prefer ordering the plate — especially the Kal-bi plate,” she says. “It’s really good and it’s a pretty popular item.” Kal-bi served yakinikustyle ($24.95) consists of two ribs marinated overnight in a tasty sauce of shoyu, sugar, garlic, sesame seed oil, ginger and more. Cook it up to your liking and enjoy the eight side dishes included with the meal. “The sides differ from day to day and we have three different kinds of kimchi,” Oh explains. However, if cooking is not your
